Cool Down with a Watermelon Jalapeño Margarita

What better way to enjoy those hot Summer days than with a refreshing drink full of flavour to spoil your taste buds? This sweet and spicy Watermelon Jalapeño Margarita is a favourite for this time of the year and I can’t wait to share it with you!

SERVINGS:

4 Margaritas

Ingredients

Juice of 3 limes

3 cups of cubed watermelon

3 jalapeños

1 tbsp agave

4 oz of tequila

1 cup ice

A healthy pinch of Himalayan salt

DIRECTIONS:

1. Cut jalapeños in half, toss in olive oil, and place them in your oven at 350 degrees Fahrenheit on a baking sheet lined with parchment paper. Roast until the jalapeños have softened and are slightly charred. Set aside and let cool.

2. Once your jalapeños are cooled, remove the seeds and the skin.

3. Add cubed watermelon, lime juice, agave, tequila, a pinch of Himalayan salt and ice to a blender and blend until fairly smooth.

4. Start adding in your roasted jalapeños to the blender. Add half a jalapeño, blend, and taste test. Add more depending on your preferred spice level.

5. Once you’re happy with the flavour of your margarita, rim your glasses with Himalayan salt and pour evenly into 4 margarita glasses. Garnish with a slice of watermelon or lime and enjoy!
