WHAT WE LOVE = WHO WE ARE R

ecently, a transplant from the Midwest offered an observation that stuck with me. He said, “We’ve realized pretty quickly that Lakeland is a ‘Best of…’ kind of place, where people don’t just want to say they’re part of something good, they want to be part of what is the very best.”

I wanted to refute the claim because at first it made us sound haughty or selfconsumed. I wanted to attempt to verbally build up the collective character of the many characters in our city as “generous” and “collaborative” and “innovative.”

But much like simple math, I realized the sum of those adjectives and many others often adds up to greatness that is easy to take for granted in a community where we have so much to be proud of—and that’s actually something to celebrate.

As we analyzed the results of 67,095 votes by 4,498 voters for our second annual Lakelander’s Choice Awards, it became clear to me that what constitutes the “best” in the minds of Lakelanders is not necessarily the ascension of heroes or people who stand alone in their trade or space, it is more an acknowledgement that we believe team work does make the dream work and we love when solid foundations turn into sustainable businesses that can strive to build rich heritages for generations.

We like the best schools with the best technologies and the best teachers and leaders so our kids and grandkids can become the best version of themselves. But Rome wasn’t built in a day, nor will any beacon of education and development, so the pursuit of the “best” is ongoing and reliant on all of us.

Locals vote with their wallet, and through Google reviews, for restaurants that not only cook up delicious dishes and craft memorable cocktails, they affirm places that are the most consistent, with the friendliest staff and who make them feel like their presence is appreciated.

We turn toward professionals who treat us more like family, whether it’s with our health, our home or our money. Sure we

appreciate impressive academic degrees and accomplishments, but more than anything we want to know people are with us, for us, and can navigate situations we can’t take on alone.

This issue, thanks to the way Lakelanders voted, feels more like an ode to sustained excellence than a reveal of surprising announcements.

If you’ve lived in Polk County for a while the Strawbridge, Munchel and Scarpa family names are probably familiar to you.

One of our writers joked there might be more homes in Lakeland that someone in the Strawbridge family has worked on than homes that they have not touched.

The Munchel family has been curating timeless pieces of jewelry for Lakelanders for more than 40 years, before lab-grown diamonds were even popular, yet they were happy to jump on board with that evolution when they found out their customers appreciated the affordability and customization of lab-grown jewels.

Katy was born and raised in South Bend, Indiana, but she has been living in Lakeland for the past three years while attending Southeastern University. She is pursuing a degree in communication and is passionate about studying mass communication media–film, television, magazines, and social media–and how it affects humanity. The 14,000 square foot food hall will be home to seven restaurants, a full bar and event spaces. It is slated to open in early 2025 in downtown Mulberry.

For many years, locals have had to think far too hard about how to answer the question,

“Where is downtown Mulberry?”

Pretty soon, the answer will be clear.

With the steady stream of traffic expected, the laughter that will be present and the mouthwatering smells that will soon be the norm at 303 NW 1st Ave, an industrial aesthetic food hall is attempting to become the epicenter of modern Mulberry.

An ambitious project spearheaded by the Mulberry Community Redevelopment Agency (CRA), Depot 303 will feature seven restaurants, a bar and accommodating rental areas in a 14,000 square foot industrial space that was once a Badcock Furniture warehouse.

The construction by Rodda Construction on the facility designed by Straughn Trout Architects is expected to be completed in early 2025. Depot 303 will be managed by Jon Bucklew—a familiar name in the food and service industry who is known for opening and operating

Bucklew is visibly excited about the prospect of helping reinvigorate the city

directly south of Lakeland that has already seen the fruits of the recent remodel of the Gem Theatre and the momentum generated by the approved construction of a brand new municipal complex that will include a sheriff’s office substation, civic center, museum and more.

“We are building this place to be ‘foodie forward,’ design forward and to be a place that brings value to the businesses and community around us,” Bucklew says. “There’s not much here, and that’s kind of the point. With [State Road] 37 intersecting [State Road] 60, this is just a vacuum right here, and I’m a firm believer that the rising tide lifts all ships. And really, Mulberry is Greater Lakeland.”

The details of Depot 303 have been unfolding since Mulberry City Manager Rick Johnson shared the vision for the revitalization project in 2022. The key questions soon-to-be patrons have are, “When is it going to open?” and “What kind of food will be offered?”

The food hall is scheduled to open the first quarter of 2025.

In terms of the restaurants who will bring the new space to life, Bucklew is delighted to share some of the lineup he has curated.

Fat Maggie’s, a beloved food truck and catering vendor who once had a permanent location where Good Thyme is now located, is re-entering the brick and mortar business.

Known for its backyard style burgers, southern barbecue and truffle fries, Dustin and Heather Olson are excited for the next iteration of their restaurant, which is named after their beloved English Bulldog.

“We are most excited to see all our old regulars again and to rejoin the growing Polk county food scene,” Heather Olson says. “People can expect classic

Maggie’s dishes and some new southern inspired favorites like a grouper nugget po boy and smash burgers.”

Joining Fat Maggie’s are Ling’s—a restaurant known for its authentic, handcrafted dumplings that has a location in Armature Works in Downtown Tampa—and Tilaw, a Filipino Fusion spot that will be operated by Florencio Dobrea, the founder of Pinoy Cravings.

And as Bucklew puts it: what’s a food hall without a good pizza spot? Pizza Odyssey will fill that gap. With fresh dough that is handmade daily, fun flavors and wings and subs, the joint that has built a strong customer base at its Lake Morton location will expand to Depot 303.

Also, keep your eyes open for an official announcement on a new concept from Nineteen61 that will be part of Depot 303.

“This is chef focused, and we are bringing in restaurants that are really about different types of food that are really great and cater to a lot of different people,” Bucklew says.

Bringing in the food entrepreneur, who also is the founder of custom furniture company Seventeen20, was a strategic move to bring industry insider experience to a project that the CRA will have poured nearly $3.5 million into by the time it is complete.

“It’s really a great use of redevelopment funds because we are taking a space and truly developing it to become an essential part of the community, to create jobs and to help Mulberry be known for something,” Bucklew says. “Parks are nice, but it’s not another park—it’s something that is

really money being put into something that can make a huge difference, especially alongside what has already been done to the Gem Theatre and the other projects in the works.”

Bucklew and city leaders are ecstatic to bring 90 to 110 jobs to the area that will provide Mulberry High School students and other job seekers opportunities for growth.

Depot 303 will include an indoor and outdoor space that can be rented for private parties, celebrations of life, corporate meetings, etc.

Unlikely Journey of One of Lakeland’s Finest Chefs

Agreat restaurant can feel like a precious stone waiting to be unearthed. Many, though, have excavated culinary treasures dispersed along the quasi-strip mall landscape that runs the entirety of Edgewood Drive in the center of town. At Scarpa’s Italian, the local community has found a jewel, regularly filling seats and reservation lists for the Lakeland staple.

Chef Andrew Kippley of Scarpa’s being voted Best Chef by Lakelanders came as a surprise to him, but the fact the restaurant has long been beloved can’t be disputed. In fact, speak with many long-time Lakelanders, and they will evoke loving nostalgia for Mario’s Restaurant, which sat in the same location more than 15 years ago, owned by the Scarpa family—yes, the same Scarpa family behind the restaurant that is still thriving today.

For the chef who has run the kitchen for most of this iteration, it was still shocking for him to be voted “Best Chef” by Lakelanders. He doesn’t fit into the mold of a traditional chef as far as training goes. He does not look for the spotlight, shows a great deal of humility, and does not outwardly promote the restaurant on social outlets to excess. That does not mean a deep passion for the community and its culture is missing.

In conversation, the 38-year-old chef speaks candidly on his personal background, his influences, life before food paid the bills, his roles in the kitchen, and the family-owned nature of the business he is immersed in.

This conversation has been edited for length and clarity. THE LAKELANDER

It was hard to find a lot of information on you to get a sense of your path to becoming a head chef before we spoke, so share a little bit about yourself.

ANDREW KIPPLEY

It’s kind of a funny story, honestly. I started out as a landscaper and had a 4-year degree. I was stuck doing lawns for 12 years. The thing is, I always loved cooking my entire life, but it was always on the back burner. For most of my 20s I wasn’t a good cook. And then it just clicked one day for me. I worked at a Steak ‘n Shake for a bit and then at an Italian deli after that before moving to Lakeland. One day (13 years ago), I literally answered a Craigslist ad, as they were looking for part-time work at the restaurant for their opening. I joke with Glenn (Scarpa) that I was the last great Craigslist hire.

TL Were you hired right off the street as head chef?

KIPPLEY

No, but I moved right up the ranks, starting as a parttimer working 20 hours a week watching the oven, making sure the bread didn’t burn, and the cheese was nice and brown. Through the years, people left; I moved up, learning the different station positions, waiting out some time

working and learning a lot from the other great chefs that came before me to get where I am. And here I am today as the head chef.

TL Going back to your landscaping days and, even prior to that, is there a specific person or something else that influenced your culinary point of view?

KIPPLEY

It was absolutely my mother. I don’t care if Gordon Ramsay came in to cook me dinner—I would rather have my mother’s cooking. She was always very caring. Even when I would make horrible anniversary dinners as a kid, she would always smile, always eat whatever it was, however bad it was, and be supportive of my cooking. I also used to watch Julia Childs on PBS and “Iron Chef” when it was still only in Japanese with subtitles.

TL

Part of a restaurant’s appeal is in the quality of ingredients. Scarpa’s is well known for their fresh-made pasta. Was knowing how to make pasta a prerequisite for getting the gig?

KIPPLEY

Most of the staff already knew how to make that Grandma-style pasta with flour and eggs in a well, mixing the dough by hand. But making pasta fresh was incorporated

a few years in, in efforts to not only stay relevant but also to keep us moving forward as cooks. We make it in small batches to give the freshest product possible. While we enjoy innovating by creating new experiences, sometimes new means taking a step back and bringing people to the roots of cooking.

TL Is the kitchen at this point in a place where everyone has their own dedicated roles and stations, and you oversee, not needing to cook day in and day out?

KIPPLEY

No, no. I am literally still right on the line with my team in the thick of it all, 5 days a week, and I love it. I’m on the sauté section today; I’ll be cooking next to all these great cooks. That might be one of the reasons why maybe people don’t know what I look like? I personally am usually in the back. Being a family-run place, I’m not in a position where I can go out, don the clean chef’s jacket, and shake hands when you’re in the thick of it every night.

TL I like to think Scarpa’s has more of a family dynamic, which adds to keeping expectations high as a diner; I feel that is why Scarpa’s has such firm staying power, and it could be what Lakeland needs more of. Do you agree?

KIPPLEY

A personal investment certainly adds to consistency in the restaurant. Having hands-on owners who really care about the customer experience and, on top of that, close-knit staff. To tell you the truth, most of the staff over the years has been the same; even over the last 20 or 30 years, they’ve gone from working for Glenn’s father at Mario’s to working for Glenn here in the same location. Not only are they going to recognize you, remember your name, and the kitchen staff will call out what you will order before you even look at a menu, or your waiter may offer that bottle of wine you enjoy regularly, but you will also start to recognize the staff as you come in more often, creating that extended family feel.

TL Since you’ve been with the restaurant for a good amount of time, you have since developed a trust with the owners; thinking about those early times when they first started giving you leeway with the menu, do you remember one of those early recipes you developed?

KIPPLEY

One of the first things I made for the restaurant on my own was when we had just lost our head chef. He was an unbelievable chef. I remember staying late one night after service and coming up with a sort of mango Swiss cake roll with a meringue outer shell. And I can remember Glenn and Ashley Scarpa calling me on my phone because they knew I was working late, asking what I was up to, and I said, ‘This is what I

want to do; we need to keep this going.’ I would say that was the first time I felt like they trusted me enough to allow the reins to be taken off. From there, I was determined that if I was going to create something, it wouldn’t suck. It was the turning point of my career.

TL When I look at the menu, it’s put together very well; it’s got a lot of the greatest hits, in my opinion. But if you could re-purpose something on the current menu, how would you reinvent it?

KIPPLEY

I’ve actually done this dish a few times when I make a seafood lasagna. We’ve sold this before, and it goes over really well. It’s a béchamel-based sauce instead of a marinara, with a bunch of different seafood in there, then seasoned with some tarragon.

TL Are you able to find things from Florida to make their way onto the menu?

KIPPLEY

We used a lot of the local fish, shrimp, and produce. If we use lobster in a dish, we will use a Florida spiny lobster.

We don’t get lobsters from Maine. Anything we can get our hands on that’s locally sourced, per se, from the area or in the Gulf, we try to obtain that over anything else.

TL In an effort to spark controversy, do you prefer the Caribbean Spiny Lobster or a New England Clawed Lobster?

KIPPLEY

Even though I grew up initially in the Northeast in Syracuse, NY, I have to go with Spiny Lobster. I think they have a better flavor.

TL You were awarded best head chef, which means that the people in Lakeland, you know, they seem to like you. How are you endearing yourself to the people here?

KIPPLEY

I connect to them by food. I don’t do a lot of promotion by any means. It surprised me that anyone even knew my name to vote for me. I was really taken aback when Ashley (Scarpa) called and gave me the news. It was truly touching because, when you don’t think anyone even knows who you are, because I’m just a chef. Then I learned what happened, that I was a write-in and won when I didn’t even know that

there was voting going on. So, winning this award for me is a great accomplishment I can add to my career.

TL I have to imagine winning an award for something you didn’t know you were nominated for is so much more rewarding than trying to win by influencing a vote.

KIPPLEY

Especially when it comes to someone enjoying your cooking. It’s personal and creative, but it’s also about individual preference. It’s not like you’re running for office. And when the majority of people like what you do, it’s a really great feeling. And the fact that they like my food makes me feel even better.

TL I know this is a pretty generic question, but it’s one I like hearing the answer to. What’s the one dish that you enjoy making or think is best, but is more slept on by your guests?

KIPPLEY

I think the linguine & clams with the white wine sauce is the most slept-on thing in our restaurant. I think it has some of the best flavor out of all our dishes. It has a white wine butter sauce we incorporate the clam juice in, with our own special blend of herbs and lots of garlic.

Vince Strawbridge and Nathan Baggett became friends 10 years ago but for five of those years, Nathan was trying to convince his pal they should go into business together. When, in his own words, Vince finally got “smart enough” to listen to Nathan, the two created Strawbridge Renovations, a kitchen, bathroom, and full home remodeling business that also designs and sells cabinetry. Baggett, who may not be a Strawbridge by name but is certainly part of the family, said it was a “no brainer” to name the company after the Strawbridges, thanks to the rich legacy that they have in Lakeland.

Vince Strawbridge has lived in Lakeland his entire life, and is a third generation contractor who grew up learning the trades from his father, grandfather and several of his uncles. He jokes he has been on construction sites since he was in diapers and, like many kids, he wanted to grow up to be just like his dad. The knowledge passed down from his family combined with 20 years of experience has prepared him to now run his own company.

Nathan Baggett is not a native Lakelander (though his hometown of Lake Wales isn’t too far away) but he also has a heart for helping the people of this city. As the son of a carpenter, he grew up watching his dad do a job that he

genuinely loved because of the craft and because of the people he served. Nathan was originally drawn to cabinetry because of the creative aspect of designing shelving and implementing the designs into the final product.

Strawbridge Renovations is a family business at its core. Both Vince, with four daughters, and Nathan, a father to two girls, are quite confident that some of their children, who are already showing interest in the design aspect of the job, will eventually join them in the business. Both men also noted the support of their wives is essential to their success. Nathan’s wife, Keri, works in the business as a cabinet designer and office manager.

Thanks to Nathan’s background in cabinetry, Strawbridge Renovations offers unique and custom cabinet designs. At Strawbridge Renovations, the designers work with clients to create 3-D renderings that match their preferred vision and design style. Whether a client wants a classic look or a completely custom build, their cabinets will be designed to match their vision.

“I think it’s nice that we do have full service here,” said Summer Strawbridge, Selections and Marketing Specialist. “You don’t have to necessarily have a decorator because we can walk [you] through the process…and make your vision come to life without having to hire somebody else.”

of practical experience in construction before starting the business. Because of this, Vince and Nathan do not see themselves as “above” any job that needs to be done, whether that is sweeping up debris at a site or unloading a semi-truck full of building materials.

One of the biggest misconceptions that customers tend to have about the business, according to Vince, is “that it can be done in 30 minutes with commercial breaks.” The reality is, due to the many moving parts in a renovation, it can take longer than people expect. Other misconceptions, like thinking that all cabinetry is the same, are cleared up with the customers before a job even starts.

“There are no sales tactics,” Nathan pointed out. “We inform [our customers] of exactly what they’re getting and we’re upfront with them.”

The company’s approach to customer relationships is something that Vince learned from his dad.

“Due to the nature of remodels, you’re building relationships with a customer [because] you’re in their home,” he explained. “It’s not just another job, it’s actually somebody you’re working for. If you’ve done work for Mrs. Johnson and you go to Publix and see her in the aisle, you should be able to walk up and say, how are you? How’s your family?”

Recently, the team took on one of their biggest projects yet: a 4,000 square foot full home renovation. Vince was quick to say ‘Yes’ to the project, but it wasn’t until he began talking with the original homeowner that he learned the home was originally built by one of his uncles in the 90s. This project was a special one for the team not only because of the family ties but because when it came to solutions for the challenges that naturally arose during the process, Nathan and Vince were on the same page—as usual.

They also had excellent things to say about the collaboration process with their customers.

“[They] had great ideas and did an excellent job with their selections which really helped produce a beautiful product,” Vince said.

Customers aren’t the only ones invited into the Strawbridge family. Vince and Nathan recognize that their subcontractors—experts hired to complete distinct aspects of the remodel, such as plumbers, painters, and electricians—are essential and valuable members of the team. The business owners prioritize personal relationships with these subcontractors and, at the end of the year, everyone is invited to the company Christmas party at Vince’s home where he cooks a meal for the team.

Strawbridge Renovations plans on continuing to grow by adding several new employees to the team and taking on more full home renovations. Eventually, they would like to add home construction to their list of services. In the midst of the growth, however, it is important to Nathan and Vince that the company stays small enough that the owners can always have personal relationships with their customers and have their hands on every project.

The renovation company recently moved to a new office space at 625 Schoolhouse Road, Suite 1. The space is complete with a conference room, cabinets, cabinet handle displays, bathroom tile materials, and other hands-on examples of elements that customers can have in their homes. Ironically, the office space that they are occupying was built by Vince’s father years before and across the street is the front yard of the home that his grandparents used to live in. For Vince, it seems like it’s harder to find a building in Lakeland that wasn’t built by a Strawbridge than one that was.
