In May 2013, the state implemented the Iowa Nutrient Reduction Strategy, a program that all but admitted the state’s ag runoff was a growing problem that required joint attention from farmers, local communities and the state. tions in nitrate runoff and the nitrates continue to flow into the Raccoon to Des Moines. In late January, it said its 25-year-old nitrate treatment equipment would soon need an $80-$100 million upgrade if the “trend in source water does not reverse.”

Part of the built-in dysfunction of the 2013 Strategy can be traced to the Iowa Environmental Protection Commission, a self-described “panel of nine citizens who provide policy oversight over Iowa’s environmental protection efforts.” A majority five members are either farmers, livestock producers or ag biz professionals, giving each an inherent conflict of interest in any state rule that affects ag runoff.

All were appointed by Gov. Terry Branstad, a sixterm Republican incumbent, who called the threatened lawsuit to fight nitrates in the water he drinks in the Governor’s Mansion the equivalent of “Des Moines declaring war on rural Iowa.”

It’s not war. It is simply the DMWW asking a court to assign blame for an increasingly expensive, increasingly dangerous public health problem affecting a half million Iowans that the state and its farmers have failed to fix.

Both still can.

So the choice today is simple: fix the problem now or fix it later. Either way, with or without farmers, it will get fixed.

A life remembered: Sue Peterson, in her own words the importance of supportive family and community, and the presence of God in our lives and our nation.

Sue died Jan. 16 in Wells, Minn. She was 70 years old.

Her yield for The Land was nearly 34 years of often very personal columns, in which she connected the moments of her ordinary, everyday life — joys and sorrows,

the silly and the struggles — to her deep faith. This resonated strongly with many of our readers, who made “The Yield” one of our most-read columns, year after year.

With that, we’ll allow Sue to speak for herself through a selection of her columns, on this page and the next. She will be greatly missed by everyone at The Land. Her yield was abundant.

The Yield, by Sue Peterson — Jan. 22, 1988 Our toboggan ride through the snow was noisy. Snow pelted our faces as it flew over the toboggan’s curved dash.

Sarah’s screams pierced the air. The snow cracked and groaned as we coasted over it. When the sled stopped, everything was silent and still. I leaned back on my daughter’s lap, and we laughed.

“That dip was really a bouncer,” I said. My hands still clutched the ropes. I let go to rub my back. Then, clumsy with snow gear and big boots, we rolled off the toboggan and looked to the top of the hill. It seemed like a great distance. Wade and Larry silhouettted the ridge.

“Look at me, Mom!” cried my son. Larry gave our son a solid push, and he stormed over the edge. The sled veered to the left. I tumbled over and Wade rolled off. He laughed and yelled all the way down the hill.

I love the out-of-doors; most of Wade’s happy screams are free from rebukes. No winter-tight walls at home confined his noise, which sometimes irritated the rest of the family.

I was certain the heavens received those happy sounds with glee. So did I.

I trudged up the hill. An idea a friend had shared was exciting to me; the brilliance of this winter day brought it to mind again. She shared how we have personalities that reflect our favorite season. It seems even the popular colors of a season reflect our tastes. I love fall because of the reds, burnt oranges, and warm colors of fall. Fall was made for reflection.

My gentle husband enjoys spring. He smiles as he heads for the field, ready to plant and then nurture the crops.

Our son is intense in his living, likes sharp contrasts like a cold snap in January contrasted with a January thaw.

Wade works hard and rests well. He tolerates winter temperatures.

Sarah, who plays it cool and steady, enjoys growing things, like plants and kittens. The water and mud in the summer greenhouse is perfect for her temperament of nurturing plants. She loves summer, and the color of lovely flowers.

Families are unique. God made us different, as different as the seasons. We complement each other just as seasons praise the oncoming time of year.

The sun began casting golden gleams on the blue-white snow. Soon it would be dark. Cold, tired and happy, we headed for the warmth of home. ❖

A life remembered: Sue Peterson

Love makes the garden grow The Yield, by Sue Peterson — July 31, 1992 The lawn mower groaned as it twisted among the trees in the orchard. I welcomed the monotony of a straight swatch as I guided the mower away from the apple trees.

The mower’s noise brings isolation, a private time to dream. In my dreams, I can re-paper the utility room, take a vacation, write a book, make plans for Sarah’s graduation, think about friends, and remember God’s goodness.

The blades swept close to the flowers as grass whirred away from their bright and soft colors. Seeing their beauty, it’s a joy remembering my garden had once been this lawn mower’s dream. Actually, it was a collection of dreams. Walks in my mother-in-law’s garden and books inspired the visions of my gardens.

Brilliant flowers blossom, and the birds take pleasure there. Small toads and frogs live among the rocks and relax next to the goldfish pond. Bees enjoy the nectar from the flowers.

Through the snowy months, Ruth begins her plants under florescent lights. She transplants the young plantlets. When all danger of frost is past, she’s busy planting the strong but delicate seedlings.

The Minnesota Arboretum at Chanhassen is another peaceful place for me. One can spend a day following paths leading to rose gardens, herb gardens, waterfalls and large boulders.

The beauty is wonderful. To me, a small gardener, the work seems overwhelming.

CONCRETE HOG SLAT

In Mankato, I discovered a much smaller garden, more my size. The Hubbard House garden has brick paths lined with perennial flowers. There are small, round flowerbeds as well as square beds. There are sunny gardens with towering lilies and cool shady beds with lush hostas.

The flower garden dream at our farm became a reality. Each season, I added something new. “When do you have time to rest?” my father-in-law asked with a twinkle in his eye one afternoon.

I followed his sweeping gaze of my collection of swings, garden benches and wrought-iron chairs.

They were tucked among petunias, impatiens and gnome statuary. The invitation to rest is visible, but the greatest rest for me is puttering and digging.

That evening, when we finished mowing, Larry and I walked around the alert, freshly cut grass. The setting sun raced across the lawn. We sat in the swing, the scent of alyssum heavy in the damp night air.

“This reminds me of the story of the farmer who had a model field of corn,” Larry said. “A neighbor told the farmer, ‘That sure is a nice field the Lord has there.’ ‘You should have seen it when it was just the Lord’s,’ the neighbor replied.”

The story is special to me. It reminds me of how interdependent we are with God. He’s valuable to me, and I’m valuable to him. When Larry and I sit in our garden, God is very close.

Then the Lord God planted a garden in Eden. He made all kinds of beautiful trees to grow there. They produced good fruit. A stream flowed in Eden. Then the Lord God placed man in the garden to cultivate and guard it. then the Lord said, ‘It is not good for man to live alone. I will make a suitable companion to help him.’ Gensesis 2:8-9 ❖

Lessons learned dealing with death The Yield, by Sue Peterson — Nov. 9, 2001 The cold sterile room took on the ebb and tide of family, medical personnel, and friends coming and crowding, leaving and emptying. Yet a few constants remained: my dad on his death bed with Mom and my sister at his side. Jesus’ presence and love were in the eyes of those speaking their good-byes, the hands touching, and the wordless smiles, prayers, thank-you notes, and memories offered.

Our family will make a dramatic change soon. Dad was diagnosed with cancer almost two months ago, and the doctors gave their prognosis concerning his time left. One month to a year quickly amended to three months, and then was reduced to a few weeks, which are now squeezed into a few days.

“Sue, you and Larry better come,” my brother-in-law urgently pressed over the phone. “Your dad might not make it through the night.” The nurse shook her head as we hurried past the station. Mom and Dad’s pastor greeted us at the door, and other family members acknowledged us with their tears and hugs. Then Dad rallied.

My sister Deb laughed and said, “Leave it to Dad to have a trial run. He always makes sure we get it right.”

Humor has been a godsend through the pain and agony. Dad’s quips to nurses make them smile, and the healthy wit from a weakening body made family and friends love him all the more.

God blessed Dad with a big family. My sister Leslie, a nurse from Texas, came to help our father die in comfort. I watched her blossom as she performed her nursing duties and then slipped into the role of daughter, each at the appropriate time.

“Oh, Dad, I forgot to brush your teeth,” she chided herself. Then in the next breath, redeemed herself, saying “We did get your morning devotions done.”

His blue eyes twinkled. A raspy voice laughed.

“You’re slacking,” he said. They laughed together.

Dad honored God by having family devotions. Yet it has been a difficult time helping him to die. We are letting him move away from us. He gradually lets go of the world that holds us all captive. Even though no one can do it for him, he is able to make the passage of death with the knowledge that he is surrounded by a safe love and will be welcomed by loved ones and Jesus on the other side.

As he dies, I am more aware of a future plan without him. I let go of his entertaining nature. He will not be a part of the fulfillment of my teaching, intellectual stimulation, and emotion support. I’ll miss how he aided me especially with my spiritual growth.

I must not cling to these things as if they are an integral component of existence, as though they were my God. Only as I die to them can I discover the true freedom my heart most desires, dying and moving into heaven with Jesus. I cannot do it alone, but with the love of God and those sent to me, I am able to lose the fear of death and I am guided into a deeper relationship with life in the Lord. ❖

This is the premise of the Living Snow Fence program, which dates back 15 years, and has proven to be a successful way to reduce icing and drifting.

Across Minnesota, 43 farmers participated in the program, said Dan Gullickson, Living Snow Fence coordi-

nator for Minnesota Department of Transportation. The program took on renewed interest this winter due to the drifting issues of last winter.

“We have farmers along the I-94 corridor up near Crookston all the way down to the Iowa border. We have over 16 miles of standing corn rows protecting our highways,” said Gullickson.

The minimum requirement is at least six rows of standing corn; abut 12 rows are often left standing and that works even better in capturing more snow and increasing the standability

of the corn.

MnDOT pays farmers to keep their corn stands up. Payment this year ranged from $175 to $700 per acre.

However, several farmers instead let a local 4-H or FFA club harvest the corn, often in the fall before that first snow fall. Effort was required because the kids hand-picked those rows of corn.

Then the farmer makes a cash donation to the participating youth group.

With safety always a concern of highway travelers and MnDOT, Gullickson pointed out that the living snow fences

improve visibility during windy conditions.

Gullickson recommended that farmers contact him as soon as possible so they can better plan the location of their particular living snow fence areas. Planning should be done before planting.

Climatologist: Expect better spring planting in 2015

By MARIE WOOD The Land Associate Editor MANKATO, Minn. — Spring planting should be better — earlier and warmer in 2015 than 2014 — according to South Dakota state climatologist Dennis Todey. This was good news for about 1,400 farmers who attended the Linder Farm Network 2015 Agricultural Outlook meetings across Minnesota in January.

Long-range outlooks for April through June show above-average temperatures for spring, but these higher temperatures will not persist through summer, said Todey.

“More heat units starting off in the spring time should put us in good shape,” he said.

From Oct. 1, 2014, to Jan. 10, Minnesota had 50 to 70 percent less precipitation than average. Current soil moisture models indicate dryness, but bigger precipitation comes later in the winter so it may balance out, Todey explained.

“Nationwide per-acre yield is not going to be repeated,” he said. “When it’s cool up here, the rest of the corn belt does really well.”

As for the rest of the winter, Todey predicted continued up-and-down temperatures.

“We don’t see any protracted cold for the rest of the winter,” he said. “Right now, we don’t see any big winter storms either.”

The Mankato audience of roughly 275 farmers had lots of questions, such as: “What happened to El Niño?” Todey replied that El Niño is marginally there, but it’s a “screwball” that hasn’t affected weather a whole lot.

Global warming Todey tackled climate change by outlining weather trends and addressing contradictions such as how we can have global warming when we have cooler summer days and more precipitation. Todey can explain.

The period from 2001 to 2012 was warmer than any previous decade in any region.

Interestingly, northern summers are warming, but the trend is driven by higher overnight lows rather than higher daytime temperatures. With higher overnight lows, crops and livestock get stressed and crop diseases seems to be a bigger issue, said Todey.

“One of our problems right now is extremes and large precipitation events,” he said.

While other parts of the United States are experiencing drought, not so in Minnesota.

“You’re getting wetter,” said Todey.

The upper Midwest and Northern Plains have seen increases of over 15 percent in the last century. Average precipitation changes increased from 27-28 inches in 1900 to 32 inches today. The biggest increases are in the spring and fall which impacts planting and harvest, he said.

Meanwhile, precipitation in July is flat and trending down, he reported. At the Southwest Research and Outreach Center in Lamberton, Minn., Todey said scientists are researching how to maintain water in soil, get excess water out, and reintroduce water when it’s needed.

“Make sure you’re taking care of your soils appropriately,” he said, “so you have good water capacity for those times when you need it. I think high variability is going to stick with us.”

By MARIE WOOD The Land Associate Editor Hop, the flower that adds the bitter and aroma to beer, is an emerging crop in Minnesota due to a high demand for locally-grown hops from a booming $741.9 million craft brewery industry, according to 2013 statistics from the Brewers Association. With local breweries from Bemidji to Red Wing, Minnesota boasted 63 craft breweries in 2014, up from 52 in 2013.

Growers like John Brach, president of the Minnesota Hop Growers Association, founded in March 2013, are working to build a hops industry in the Upper Midwest. According to the University of Minnesota Extension Service there are only about 20 acres of hops being grown in the state. Many of these acres were established in 2013 and 2014.

provide a reliable source of hops for the Minnesota brewers,” said Brach.

“The demand is so much bigger than the supply right now. It’s not even funny.”

In less than two years, membership in the growers association jumped from 35 to 135 members. The industry needs infrastructure including grower cooperatives to harvest, process and store hops for marketing. Wisconsin already has several hops co-ops, said Brach.

For Brach, a retired engineer from the Natural Resources Conservation Service, growing hops is his retirement gig. As a home brewer, Brach chose hops for his small place, called Stone Hill Farm, near Stillwater, Minn.

Similar to grapes, hops are a perennial crop that grow on a woody vine called a bine. Growers create an elaborate trellis system that can be 16-20 feet high using telephone poles, cables and earth stakes. Cables are strung between the poles, and the plants climb up strings hanging from the cables. Hops require two years of cultivation before they can be used commercially.

A common estimate to establish a hop yard is $10,000 per acre, said Brach.

“It depends so much on how much you do yourself and how resourceful you are,” he said.

Growers start with root cuttings called rhizome. Only the female plants are grown. After the cone-like flower is harvested, it must be dried immediately. Every year, the vines must be pruned; with proper management, the hops vine can last 15 to 20 years.

“They don’t like wet feet, but they do require a lot of water. Water use and nitrogen is essentially the same as growing corn,” said Brach.

Brach is growing one-third acre and may expand to an acre, at most, in order to keep his hop yard chemicalfree.

He has sold hops to Pitchfork Brewing in Hudson, Wis., and Lift Bridge Brewing Company in Stillwater.

“What I’m trying to do is to sell to breweries as close to me as possible.

I’m trying to provide the opportunity for these breweries, if they wanted to, to bring customers out to the farm to see where the hops are grown,” he said.

Equipment is needed to harvest and process hops. There are only a few harvest machines in use in Minnesota, and Brach has one.

“The friends-and-family plan works for only one year,” he said.

When drying hops, the big guys out west often dry at temperatures above 140 F, some in the 160 to 180 F range, which degrades the oil in the hops. Small growers can keep the heat low and use a lot of air, said Brach.

“We can’t compete with growers on price, but we can compete on quality if we harvest and dry them properly we can end up with a better quality product than growers out west,” he said.

“In Michigan, it’s a lot of apple and cherry farmers moving into hops. There are a lot of these small growers across the upper Midwest with a half-acre here and there and hoping to expand from that,” he said.

A home brewer for over 12 years, Rohwer is committed to growing a high quality product to ensure that brewers are satisfied with the quality of hops grown in Minnesota. The state has unique pest challenges including leaf hoppers, corn borers and Japanese beetles. In addition, he said the conditions for downy mildew is more favorable here.

Rohwer described Minnesota growers as “all over the map” — from those who have never grown anything before, to corn and soybean farmers interested in diversifying. Some breweries are even growing their own hops.

Despite market demand, he warned that growing hops requires a large amount of labor and money before a hop yard is profitable.

“I hope the ‘U’ can help play a role in the expansion of the industry for sure,” said Rohwer.

Grain prices are effective cash close on Feb. 3. The price index chart compares an average of most recently reported local cash prices with the same average for a year ago. *Cash grain price change represents a two-week period.

The month of January has brought about a negative psychology to the livestock markets. Both cattle and hog prices have tumbled since the beginning of the month and it does not appear that this negative atmosphere surrounding the markets will likely not change significantly in the near future.

The cattle market led by the futures market, has seen a near collapse in prices in recent days. The futures market led these falling prices under heavy liquidation by the funds that have been the significant longs in the market all fall and winter. This selloff in futures spilled over into the cash trade, which culminated in the collapse in prices in both cash and futures in the last few weeks.

For months the short supply of cattle had dominated the psychology of the market which drove the prices higher due to a lack of supply. It appears that the demand has now JOE TEALE retracted enough to offset the lower supply and thus the corBroker rective price action.

As the supply and demand become more in line with each other, the price decline should begin to subside and prices should stabilize. However, it does appear that a significant top has been reached in the cattle market and will not likely be challenged for quite some time.

On January 23, the U.S. Department of Agriculture released the Monthly Cattle on Feed report. The findings were as follows: On feed, 101 percent; Placements, 92 percent; and Marketed, 95 percent. The report was seen as friendly since the placement number was lower than anticipated.

With the market oversold heading into this report, the expectation would be for a positive response in the futures market which in turn will add a positive attitude in the cash trade in the short-term. With competitive meats in the expansion mode, the availability of cheaper sources of protein, beef prices will likely find considerable resistance at the retail level. This could keep cattle prices from any significant rallies. Therefore, producers are urged to monitor the market and use recovery rallies to protect inventories.

January has been nothing more than a continuation of lower prices in hogs in both the futures and cash markets. Hog numbers have been more than adequate to meet packer needs, causing the weakness in prices. The fact that the U.S. dollar has been strong against foreign currencies has hurt the export market which

On Jan. 12, the U.S. Department of Agriculture started the new year by reporting what is widely believed to be the final estimate of acreage, yield and production information for most major crops.

In addition to the production reports, the USDA supplydemand balance sheet was updated to reflect the current usage estimates and important ending inventories for most major crops. The January report has the potential to move the market because it solidifies the production estimates and sets the tone for the demand in the new year.

The ending national corn yield was reported at 2.4 bushels less than the November estimate. U.S. corn production was reported as 171 bushels per acre. The record crop was reduced slightly because of marginally lower production in some areas, dropping the marketing year-end carryout down GLENN WACHTLER to 1.877 billion bushels. The market will try to digest this information in the next several days.

Exports, currency values, political risk and weather in the southern hemisphere will also impact on old crop prices. But as is the cyclical nature of our industry, attention will soon be focused on the March 31 planting intentions, and the battle for acres between corn, soybeans and wheat will be on trader’s minds in the near future.

It will take collaboration and cooperation, and also entrepreneurship and innovation. But I am confident we will succeed if we take steps together.”

An NMPF press release states that a bipartisan group of legislators is reestablishing the six-year-old congressional Dairy Farmer Caucus, and NMPF expects the new group to be even larger than the Dairy Farmer Caucus in the 113th Congress.

“The 85-member caucus in 2013-14 was nearly one-fifth of the House,” said NMPF Vice President for Government Relations John Hollay. “We expect the 2015 caucus will be at least that large.” Hollay added that the dairy group is one of the most bipartisan and regionally diverse of the many caucuses in Congress.

The Dairy Farmer Caucus educates House members on dairy industry issues and helps build consensus on legislation impacting milk producers and processors.

“Engaging the consumer is a must, and innovation is key,” Tipton said, “but many impediments and hurdles still exist. Whether they are milk pricing, product standards of identity or restrictive labeling requirements, they all add up to a straightjacket on innovation and marketing, which we can ill afford in today’s dynamic global marketplace. Deregulation would help to spawn greater competition, innovation and consumer choice.”

She charged that “While global demand is a boon to the dairy industry, the U.S. federal milk pricing system in particular continues to have a chilling effect on some sectors. Now is the time to move away from our domestic pricing system. And now is the time to allow milk to flow to its highest value use dictated by market forces, not regulations.”

She noted that IDFA boards of directors have taken the first step by adopting a policy to promote market-based pricing rather than regulated pricing but warned it will take more work for the industry to embrace and work toward this goal.

In most areas of the Midwest, corn base acres tend to offer higher maximum payment potential, and greater payment likelihood in 2014, and possibly 2015, than soybeans, wheat or other likely base acre crops. However, the program payment levels and likelihood of payments may be different in other areas of the United States, which have lower corn yield levels, or may have other alternative program crops to consider.

Question No. 10 — How are MYA prices calculated?

The Market Year Average price for a given crop year is used to calculate any potential payments for the PLC, ARCCO, and ARC-IC programs. The historical MYA prices are also used to determine the benchmark revenues for both the ARC-CO and ARC-IC program options. The MYA price for a given commodity is not based on the Chicago Board of Trade commodity prices, or any specific local or terminal grain prices. The MYA price is the 12-month national average price for a commodity, based on the average market price received at the first point of sale by farm operators across the United States. The USDA National Agricultural Statistics Service collects grain sales data on a monthly basis, which is then weighted at the end of the year, based on the volume of bushels sold in each month. The 12-month marketing year for corn and soybeans begins on Sept. 1 in the year that a crop is har-

vested, and continues until Aug. 31 the following year. For wheat, oats, barley, and small grain crops, the 12-month marketing year begins on June 1 in the year of harvest, and continues until May 31 the following year.

Question No. 11 — Where can I find updated MYA price information?

USDA publishes monthly and seasonaverage estimated market prices for various commodities, which are available on the FSA farm program website.

These average prices are also updated each month in the USDA Supply and Demand Report, which is usually released around the middle of each month. Some universities also update projected MYA prices on a monthly basis for selected crops. Kansas State University offers one of the best monthly updates of MYA prices for corn, soybeans, and wheat. Question No. 12 — Why do some experts recommend ARC-CO and others recommend PLC? There are several reasons for the difference in recommendations between ARC-CO and PLC for corn and soybeans. The biggest reason is probably future MYA price expectations, along with declining payment potential in future years with ARC-CO in scenarios with lower price expectations. If the average MYA price for corn from 201518 is consistently below about $3.20 per bushel, total PLC payments for 2014-18 for many Midwest corn producers could likely exceed total ARCCO payments. The situation is similar with soybeans, if the MYA price from 2015-18 is below about $7.20 per bushel. However, one must remember that there are no PLC payments for corn, if the MYA price is $3.70 per bushel or higher, or for soybeans, if the MYA price is $8.40 per bushel or higher.

In most counties in the southern twothirds of Minnesota, and adjoining areas of other states, the 2014 ARC-CO payment for corn will be near the maximum payment level for the county ($60-$80 per corn base acre in many counties), if the 2014 average county yield was at or below the benchmark county yield. There is also very good 2014 ARC-CO payment potential for soybeans in most Minnesota counties.

This allows them to capture some of the benefits of both the ARCCO program and PLC program, without sacrificing significant payment potential. Also, with PLC, farm operators can opt for the Supplemental Crop Option crop insurance alternative, which is not subject to farm program payment limits. Enrollment in the SCO insurance is done an annual basis through crop insurance agents.

Question No. 16 — What are the best resources for farm program information?

The USDA Farm Service Agency has created a website with up-to-date information and resources on base acre reallocation, updating payment yields, plug yields, ARC-CO yields, updated MYA prices, etc. Visit www.fsa.usda.gov/arc-plc for more information. The benefits of exercise for people with diabetes can be quite substantial.

With both forms of diabetes, type 1 and type 2 (insulin dependent and noninsulin dependent respectively), exercise can play a vital role in the prevention of costly, uncomfortable and sometimes fatal complications.

First, exercise can help control blood glucose and insulin sensitivity. In type 2 patients, consistent exercise can completely control glucose and carbohydrate metabolism. Many people are concerned that since type 2 runs in their family, they will inevitably get it as well. Regular exercise can protect you from ever developing this common metabolic disease by helping to fight insulin resistance and obesity.

While complete glycemic control in type 1 patients is not possible, and insulin must still be utilized, they can often decrease the amount used. A second reason for exercise is the prevention of coronary problems. Cardiovascular disease is the leading cause of death for people with diabetes. Regular exercise can improve heart and lung function, cholesterol, blood pressure, and help improve circulation.

Special care needs to be taken when designing an exercise program for the person with diabetes. First and foremost, consult your care recipient’s

physician for an examination. Special attention will be given to heart, blood vessels, eyes, kidneys and nervous system. A foot examination will also be needed as many patients experience loss of the protective sensations in the feet.

Often times, the primary caregiver will be asked to perform regular foot exams for sores and blisters. If your loved one does not have a problem with mobility, you may be asked to help make selections in quality athletic shoes and socks as well. Comfort and fit, not style is what matters. Foot care is of paramount concern in active diabetics.

Cardiovascular training should be the foundation of the exercise program.

Aim for at least 20 minutes of sustained activity three to five days per week. If one suffers from loss of sensitivity in the feet, avoid exercises such as prolonged walking, jogging or step exercises.

Better choices for cardiovascular exercise would be swimming, bicycling, rowing, chair exercises and other nonweight bearing activities. Fluid intake is important during exercise, and especially so with cardiovascular activity and the diabetic exerciser. Consider a

By SARAH JOHNSON The Land Correspondent In the early days of “scientific” cookery, when folks started writing down measurements and cook times and methods and whatnot, cookbooks could be a bit complicated.

Take, for example, a recipe/advice column from 1924’s The Country Gentleman magazine where a saintly-looking Mrs. King explains how she puts together her “best one-piece dinner,” meant to be “little trouble to prepare.”

First you get a wood plank that’ll fit in your stove and chisel a groove into it. Then you grind your own hamburger, using beef, pork and suet, and cook it on the plank. You add homemade mashed potatoes and baked onions (or green peppers, or heck, why not both?) stuffed with breadcrumbs.

Garnish with tiny radishes from your extensive backyard garden.

Serve a green salad with homemade 12-ingredient dressing after the main course (as was the custom back then, for better digestion and to cleanse the

palate). Don’t forget an elaborate dessert and perhaps a selection of fruits and cheeses. Not to mention a bevy of beverages.

Not exactly a “one-piece” dinner, was it? Another publication, “The Country Kitchen Cookbook,” aimed to remedy those difficulties with recipes that were actually reasonable to produce.

“The trouble with most cookbooks is that they are not practical, everyday affairs,” bemoaned the editors. “The demand among farmers’ wives is for a simple, common-sense recipe book.”

It’s a formula that has worked for two dozen reprintings since its first edition in 1894, making it a classic among vintage cookbooks. Try these recipes that have stood up surprisingly well to the tests of time.

Resistance training has been shown an effective way to help promote circulation and control obesity in people with diabetes. Find a comfortable weight with which one can perform two to three sets of 10-12 repetitions with good form.

Unlike cardiovascular exercise, weight training should only be done every other day. You may also want to keep a high carbohydrate food handy or some fruit juice available during lifting to keep blood sugar up.

Finish off each exercise session with some light stretching exercises. These can also aid in enhancing circulation.

It is also a great way to cool-down after exercise Some items to address when designing a diabetic exercise program include: • Avoid exercise if fasting glucose levels are >250 mg/dl.

• Be sure to check the blood sugar

before, and after exercise, regularly.

Consider checking it one hour before, as well as immediately before exercise, so you can tell which way your sugar is heading.

• If your exercise will occur a long time after a meal, be sure to have a snack that’s high in carbohydrates before starting the exercise. Ingest added carbohydrates if glucose levels are less than 100 mg/dl.

• Carry some carbohydrate food with you while exercising, in case you feel like you’re starting to “crash.”

• Though it may not be realistic for most people, it’s best if you can exercise at the same time every day.

When caring for diabetics, realize that they can lead full and active lives with a few modifications. In fact, many people with diabetes have competed at the professional level of sports. The benefits of exercise are many. With a little attention to detail, these benefits can belong to all of us.

Using the principles of good scale, proportion, color and balance to achieve a harmonious design is important in making these wee little gardens. The first item to pick is the container. Low bowls, baskets or small wood boxes make good containers.

Cattle fitting career started with 4-H project FITTER, from pg. 27 cows, which is much different from working with a beef animal.

“With dairy, we want our cows to be streamlined and feminine. We want that hard top with a tall, angular conformation and a flat bone appearance.

The beef cows emphasize a heavier bone and a more compact, wider and balanced frame,” explained Heeren.

Holstein hot shot For three years, Heeren has been the cattle fitter for the fall and spring sales of the Minnesota Holstein Association. The spring sale is at the Rochester Fairgrounds.

“I really enjoy these two sales because facilities are so good, both for the cattle and the people who come to the sale. My crew also enjoys working these events because housing, bedding, milking facilities, and overall comfort is just tremendous at both locations,” said Heeren.

Heeren works “with every breed known to man,” but Holsteins predominantly because there are so many more Holsteins in the genetic makeup of the dairy industry.

“The Holsteins are probably the easiest in terms of getting everything to blend. For shows, for example, we clip and give each animal a really fancy

Heeren explained that they change color as you clip them. Their skin is a different color than their hair so it becomes challenging to blend those physical characteristics. Heeren is precise when working that top line.

“It’s for overall general appearance. We’ll blow dry that hair so it stands straight up; then we’ll use a clipper and level it off so there’s a neat, nice look to the entire animal,” he said.

His trade secret is proper animal care.

“There’s more to getting an animal ready than just a fancy hair cut. You’ve got to know how to totally prep that animal,” said Heeren. “How to feed them so they are properly conditioned to the eye. I tell young kids that’s more important than a pretty hair cut.”

To make the animal glisten, Heeren uses Clear Magic finishing ointment, which he describes as a heavy duty hair spray.

“At a show we’ll use a nice shine to condition the hair prior to going into the sale ring,” said Heeren.

Prepping for these state sales in super facilities is a good gig; fitting cattle for a sale where cattle aren’t used to being clipped or haltered makes for some long days.

“Pat Heeren is at the top of the ranks. This is a profession that demands people with the right disposition, an understanding temperament and knowledge of how to feed cattle being prepped for a sale,” said Conrad Kvamme, quality assurance consultant, Minnesota Beef Council. “Doing the best job is talent at work. Pat’s a specialist. He trains his own help in the same manner.”

Fitting career At 30 years old, Heeren has already been a professional fitter for 10 years.

“I started in 4-H as a young kid clipping my own 4H animals. As time went on I was asked by one dairy farmer to clip his animals; then a few more started asking and I could see this could be a career. And so it is,” said Heeren.

Heeren grew up in town in Glencoe, but his Granddad milked cows when he was a kid.

“I always loved going out there and working with my granddad’s animals. I was always in 4-H and

FFA. Showing animals at the county fair is the root stock of my career choice. That got nursed along with summer work at a prominent dairy herd in southern Minnesota,” said Heeren.

Heeren’s business requires tools and gear for feeding, watering and more. He pulls a good-sized trailer behind his pickup that’s “full to the ceiling” with all his equipment.

“If you’re going to clip all day the Aesculap made in Germany and costing $559 is my choice. Throw a pair of blades in there and you’re looking at $600,” said Heeren, who sharpens his own blades.

“I have $15,000 to $20,000 invested in tools and equipment. Both trailer and pickup truck are loaded when I travel,” said Heeren.

Heeren is hired out by the day. No written contracts — just a firm handshake with payment from each dairy farmer when the job is finished. If he’s doing special prep work for a bull stud that wants some young sires photographed for their marketing program, he charges mileage plus a set fee for each animal prepped “I put 30-40,000 miles on my truck each year. I have a fairly high status with Delta Airlines,” he said with a chuckle.

March through December is the busiest time frame for Heeren and his crew who could be working seven days a week if they wished.

Heeren is not aware of any special cattle fitting short course training at the University of Minnesota or elsewhere. It’s on-the-job self learning.

A couple of times each year, he works with the Gopher Dairy Club to put on camps for 4-H and FFA kids. Heeren and a few fitters teach and show the kids how to clip a calf.

“I volunteer because I like working with these kids.

I’ve done a few clinics locally. I like taking the time to show them how to do it, even showing and explaining my trimmers and clippers,” said Heeren.

Travel required His work in Mexico dates back to the National Dairy Expo in Madison, Wis., which was frequented

by Mexican dairy farmers, especially dairy breeding operations.

“They’d buy these special show cows at the Wisconsin event, then semi transport them to Mexico. Commercial heifers in the bottom pod and the special cows in the top deck. I would travel with the truck and take care of the cows as needed. That means I’d be feeding, watering, and milking while en route to Mexico,” said Heeren.

Twice a year, Heeren goes to Legend Dairy in southern California to prep cows for photos in the dairy’s sales brochure of breeding stock. Legend Dairy claims to have the largest milking herd of Belted Galloways in the world — 800 of them. Each trip, he clips, washes and trims eight to 10 Belted Galloways until they are picture perfect.

His January Australian trip is a two-and-a-half week junket prepping dairy animals for major shows and sales. He’s not clipping dairy goats, but he does answer questions from a mate with a goat herd. ❖

n outdoor mural in downtown Cold Spring, Minn., on the side of the Cleaning Center Laundromat, uses a rich and complex design to tell the story of that Stearns County community and the coming together of the different cultures that make up the community. The mural was completed by community members under the guidance of Saint Benedict College art student Shannon McEvoy. McEvoy, with the co-sponsorship of Cold Spring’s Casa Guadalupe Multicultural Center, interviewed community members in English and Spanish. She also toured the town and studied its history under the guidance of the historical society director.

“I am interested in stories and I love to listen” McEvoy said. “Public art (murals) can be an especially effective method of communication.”

The story of the area’s 1870s grasshopper plague is represented by a group of grasshoppers in the lower

corner of the large painting. There are also a number of historic Cold Spring buildings represented in the mural.

The major images of the mural however are what McEvoy calls “two spirit women of the past.” A dark-skinned woman represents a Latina woman as well as the moon. A light skinned blue-eyed woman represents the German and caucasian culture of the area. She is wearing a blue veil

that represents the sky. While volunteers and community members were painting the mural many people asked her about the swirls and bubbles coming out of the spirit women’s mouths.

“The swirls are the Aztec symbol of speech, as I learned from my friend Gustavo Lira,” McEvoy said. “The bubbles, while they refer to the soda pop factory of the early 1900s, for me

also evoke the idea of speech bubbles.

Having the bubbles and swirls intermingling suggests communication and conversation between cultures.”

The painting of the two women also merges as their long hair, dark and light, braids together to form the Sauk River which flows through Cold Spring and is central to its history.

It seems as if the two women are blessing the activities of the people who came after them: planting, harvesting, playing, learning, and walking into a future represented by a rising sun.

On the mural’s right, Cesar Chavez, through an open book, says in Spanish and English: “We cannot seek achievement for ourselves and forget about progress and prosperity for our community.”

The very far right of the mural contains the handprints and signatures of the many painters. ❖
