Italian Holiday Traditions for a Festive Feast
Buon Natale! The holiday season is the perfect time to embrace the warmth, joy and traditions of Italian classic cuisine. Christmas in Italy is all about gathering around the table to share meals that are passed down through generations.
Ensalata di Mare is a classic and beloved Christmas Tradition in Italy, particularly as part of the Feast of the Seven Fishes or La Vigilia di Natale celebrated on Christmas Eve. One of the most beautiful aspects of this salad is that it can be served in a large platter for sharing, making it a perfect dish to start the holiday celebration. This simple yet flavorful dish encapsulates the spirit of Christmas in Italy as a time for family, sharing, and savoring the bounty of the seas.
Classic Lasagna alla Bolognese: A Holiday Comfort Food Tradition
Classic Lasagna alla Bolognese is a rich holiday Italian tradition found on holiday tables around the world. In Italy, meals are more than just food, they are about family, love and tradition. Layers of fresh pasta, savory Bolognese ragu, béchamel sauce and parmesan cheese create the ultimate comfort food.
1. Make the Bolognese Sauce
2. Prepare the Bechamel
3. Assemble the Lasagna
Tip: Let the lasagna rest for 15-20 minutes after baking and before slicing to help the layers set and allows the flavors to meld.
Traditionally panettone, persimmons, cactus pears and nuts are served as dessert to finish the meal.
For that extra special touch use Christmas inspired colors for table settings. Themed table runners, centerpieces and napkins will bring that holiday spirit to your diners. The use of floral accents for example holly and poinsettias makes spectacular center pieces.
Bright white string lights, wreaths, and scented candles will give that warm festive touch of your own home and that cozy holiday meal. A few red bows throughout will give that pop of color to any dining room.
Bolognese Sauce
Yield : 1.5 gallons Prep time : 10 minutes Total : 2.5 hours
Ingredients:
5 lb ground beef, pork, and veal blend
.75 lb onion
.50 lb celery
.50 lb carrot
1 cup red wine
1 cup milk
1 #10 can Italian plum tomatoes
10 leaves fresh basil
2 tablespoon vegetable oil
Salt and pepper
Directions:
Use a food processor to chop celery, carrots, and onions into a small dice size.
Open tomatoes and puree till smooth.
Heat a thick bottom pot, add oil and meat. Brown the meat then remove it.
Use the rendered fat to sweat out the celery, carrots, and onions. When translucent add the red wine and reduce by half.
Then add the milk and reduce by half.
Add tomato and slowly simmer for approximately one hour and 45 minutes.
Season and add the basil then taste.
Bechamel
Yield : 2.25 quarts Prep time : 5 minutes Total : 40 minutes
Ingredients:
.25 lb unsalted butter
.50 cup small diced Spanish onion
.25 lb all-purpose flour
Half gallon whole milk
.25 teaspoon nutmeg
Salt and pepper to taste
Directions:
Add butter and onion to a thick bottom pot and sauté till golden.
Then add flour and incorporate together. Let it cook for 2 minutes and then slowly add milk in stages whisking so lumps don’t form.
When all the milk is added keep on low heat and continue to stir.
Bring to a simmer until flour is cooked out, about 10 minutes.
Season with nutmeg, salt, and pepper then taste.
Fresh Egg Pasta
Yield : 1.25 lb Prep time : 10 minutes Total : 1.5 hours
Ingredients:
2 cups all-purpose flour
2 whole eggs
3 egg yolks
1 teaspoon salt
Directions:
Place flour and salt on a table and make a well.
Add eggs to flour and incorporate. Knead dough for 5 minutes until it is very smooth.
Let rest for 1 hour and then roll out and cut into a shape of your choice.
Lasagna Bolgnese
Yield : 1half pan Prep time : 5 minutes Total : 40 minutes
Ingredients:
1.25 quarts bechamel
1.25 quarts Bolognese sauce
1 cup grated parmigiano cheese
8 sheets fresh pasta
1 lb sliced fresh mozzarella loaf
.50 lb shredded fontina cheese
Half size catering pan
Directions:
Roll pasta dough into sheets matching the length of half pan.
Place a pot on the stove, add water and salt bringing it to a boil.
Have all the ingredients on your counter ready to build your lasagna.
Cook 2 sheets of pasta. Add 8oz of Bolognese sauce to pan spreading it all over the pan. Add pasta sheets then top with 8oz of each sauce. Add some sliced fresh mozzarella, grated parmigiano, and fontina.
Repeat this process until you have four layers that are complete and the top is covered with sauce an cheese.
Bake in a preheated oven at 350°F for approximately one hour.
Remove from the oven and allow to set for twenty minutes before cutting.
Pandoro Tower
Yield : 1 Prep time : 10 minutes
Ingredients:
2lb Country Brand ricotta
1 cup heavy cream
.50 cup 10x sugar
2 tablespoon vanilla extract
1 Pandoro
Shaker with 10x sugar
Chocolate sauce to garnish
Directions:
Whip the heavy cream with the half cup of 10x sugar till stiff peaks then add in vanilla.
Fold the whipped cream into the ricotta and place it into a piping bag with a star tip.
Cut the pandoro horizontally into 1.5-inch-thick slices.
Place the large bottom piece on a plate and pipe some of the ricotta filling on it covering the layer. Continue until the tower is complete. Then dust with 10x sugar and drizzle with chocolate sauce.

Directions
1. In a saucepan, heat 1/3 cup of olive oil over medium-high heat.

4. Cook the mxture for 10-15 minutes, until tomatoes are tender and the sauce has thickened.

TOMATO, BURRATA, AND BASIL Summer Recipes
1 l b De Cecco Spaghetti no.12
8 oz. Tomato Purée
4 oz. Cherry tomatoes
1 clove garlic, minced
De Cecco Spaghetti is gently sautéed in a sauce of poached cherry tomatoes, olive oil, garlic, and tomato purée. served with a garnish of burrata cheese and basil
Cook pasta, drain and reserve 2 oz. cooking water.
Heat garlic in a pan with olive oil.
Meanwhile, poach cherry tomatoes in boiling water for 30 seconds, remove and cool in ice water, then peel using a small knife.
Add cherry tomatoes to garlic and olive oil, pour tomato purée over, add salt, and bring to a gentle boil.
Add reserved cooking water to sauce and sauté.
Toss cooked pasta with sauce, garnish with burrata cheese and basil leaf, and serve.
