INTERVIEW
Let the food do the talking 20
Rachel Harris is head chef at Fawlsey Hall Hotel in Northamptonshire, where she’s been creating the mouth-wateringly delicious menu for the last nine years. She recently took some time out of the kitchen to chat food with us‌
INTERVIEW What made you want to be a chef and how long have you been doing it? A passion for cooking from a very early age meant becoming a chef was an obvious and logical choice, and I’ve now been doing it for 20 years. What do you look for when you create a new dish or menu? What’s your main considerations? Pleasing the guest is my top priority. Classic dishes prepared and presented in a modern way is a great concept. Consistency is also important. A dish must be delivered the same, whether we have 20 or 200 guests. What’s proving to be the most popular dish on your menu this month and why do you think that is? Caramel Custard, Honeycomb, Banana Sorbet, Coffee Soil. This dessert has classic flavour combinations that work really well. I think a guest can easily envision the hmmmm factor when they see this on the menu!
The #shelfie - a chef’s five must have herbs and spices always available on the shelf! What are yours and why? Cardamom because it’s wonderfully fragrant and has in-depth flavour that works very well with chocolate. Vanilla, of course, for its flavoursome simplicity. Thyme and Basil as they’re versatile herbs that lend themselves perfectly to fruit. Salt! A seasoning essential! Do any celebrity chefs inspire you? Marco Pierre White, The Roux Brothers and Raymond Blanc were all very inspirational early in my career. Rather than resembling a peer perhaps we as chefs share a collective ethos for passion, hard work and great food.
What’s your favourite cuisine and why? Impossible to pick just one. Although sushi is a firm favourite with its fresh, clean, bold flavours. Pickled Ginger, Wasabi, Soya, Toasted Sesame – in a word, heaven! Which famous person, dead or alive, would you love to cook for and what would you serve them? I love cooking for anyone. Great tasty food, in the moment!
If you were stranded on a desert island and allowed one item or ingredient from your kitchen, what would it be and why? A large heavy duty chef’s knife. Hopefully to enhance the preparation of local produce like fish and coconuts! When you go home, who does the cooking? Are you territorial in the kitchen!? Sharing the cooking is a treat! You’re sharing a recipe with our readers today, why did you choose this one? It’s our Caramel Custard because it’s versatile, easy to prepare and a firm favourite with our guests. To enjoy more of Rachel’s menu and discover the delights of a stay at Fawsley Hall Hotel click here >> @FawlseyHall

A POSTCARD FROM...
Bournemouth Discover. Experience. Be inspired. #LoveBournemouth.
With seven miles of golden sands and sparkling sea, Victorian architecture, a buzzing night life and endless countryside with beautiful award-winning gardens and water sports, it’s easy to fall in love with Bournemouth! Step back in time with a visit to the Russell-Cotes Art Gallery and Museum, one of the country’s most fascinating historic houses, which was once home to two Victorian collectors and travel enthusiasts, Sir Merton and Lady Annie Russell-Cotes. Works from Russia, Australia, New Zealand and a world-renowned Japanese collection plus Victorian and Pre-Raphaelite art make this one of Bournemouth’s most intriguing visitor attractions. Once you’re done inside, take some time to appreciate the stunning cliff top views, serene garden and the stylish café.
22
Add some two-wheeler thrills to your stay and hire a bicycle. A sunset cycle along the promenade or an off-road adventure combining scenic flats and strenuous hills, whichever route you decide to take, there’s plenty of bicycle hire shops ready to fuel your journey.
A POSTCARD FROM... You can fall head over flippers in love at Oceanarium The Bournemouth Aquarian with life above and below the waves! Come face to face with sharks, sea turtles, stingrays, dwarf crocodiles, clownfish and an otter family, take part in feeding time and enjoy informative and knowledgeable talks on the creatures and conservation.
Hengistbury Head Outdoor Education Centre offers a safe and supervised environment to learn a new sport or to improve your skills. Paddle sports, windsurfing, sailing, rowing and power-boating are all available, along with action packed multi-activity days.
Situated on the sand bank at Hengistbury Head, the licensed Beach House Café can only be reached by boat, land train or foot. Savour panoramic views across Christchurch harbour while relaxing with a chilled Pinot or Prosecco and enjoying the locally caught catch of the day.
The Lower Gardens, Central Gardens and Upper Gardens create a one and a half mile walk from the seafront to the town centre. Retaining much of their Victorian charm, the Grade II listed gardens are a feast to the senses with brilliant colours, textures and scents.
You can’t possibly go to Bournemouth and ignore The New Forest. Created as the hunting ground of William the Conqueror, the ancient forest is ideal for walkers, cyclists and horse riders and is famous for its ponies which freely roam around with cattle, and the forest’s picturesque villages.

CHEF’S CORNER

By Rachel Harris Serves one
CHEF’S CORNER GROUP
Caramel Custard Ingredients
Depending on your oven, this could be between 20 and 30 minutes.
10 egg yolks 500g double cream 170g whipping cream 100g castor sugar 70g white chocolate
Carefully remove from the water bath and allow to cool, ideally overnight is best. The custard can be lifted easily from the dish and cut into your desired shapes using a hot knife.
Method
For a lovely crunchy caramelized top sprinkle lightly with castor sugar and glaze gently with a blow torch.
Place the sugar and 30g of water in a pan. Bring to the boil watching constantly. The colour of strong tea is required. Remove from heat and gently add the cream, being careful to pour away from yourself because the mix is likely to bubble and splatter.
Delicious paired with banana, chocolate and honeycomb flavours.
To enjoy all of Rachel’s dishes, book a stay at Fawsley Hall Hotel >>
Return to a medium heat, stirring until the caramel has dissolved and simmering has occurred. In a heat proof bowl whisk the yolks until just combined. Very slowly pour in the caramel cream whisking constantly. Add the white chocolate and stir until melted. Pass the mix through a fine sieve. Line an oven dish approx. 22cm square and 5cm deep with a double layer of foil. Pour in the custard mix and place in a second larger heat proof dish. Fill half way with cold water thus creating a water bath. Cook at 110C until the custard is no longer liquid but has the slightest wobble. 31
