It's not Christmas without the taste of sherry on my tongue and the bite of a mince pie afore bed on Christmas Eve as my wife lays a trail of chocolate coins, excited for the children to wake in a few hours’ time.

It's not Christmas without Mum getting a bit emotional about Freddie Mercury still being dead. And I must admit, when 'Who Wants To Live Forever' comes on I do get a bit of a lump in my throat. Could be a stubborn piece of turkey gristle, mind you.

It's not Christmas without sneaking downstairs to put the satsuma from the stocking back into the fruit bowl.

It's not Christmas without a cousin's new baby; kissing; snowfall, snowblind(er), sludge. Spotting the first tree going up in November, the advent calendars coming oot in October, the countdown beginning in September, the mulled wine . . . I'll hold off tae December.

a tale of

two cinderellas

If you love the story of the glass slipper, you're in luck: Edinburgh and Glasgow both have their own takes on the classic fairy tale. Gareth K Vile finds out what's in store

Since Dominic Hill has been directing the Citizens’ annual Christmas show, he has aligned it with the distinctive style that runs through his other productions, finding both joy and darkness in familiar stories. With his regular collaborator Nikola Kodjabashia composing the music, and a script that draws on the moral ambiguity of the Grimms’ fairy tale, this year’s Cinderella is more than a sentimental confection. Actor Peter Collins returns for a third time in the Citizens’ festive offering, and is happy to be back on the team. ‘I live locally and I have a young family, and it’s nice to be at home for Christmas,’ he laughs, before explaining the special nature of working with Hill. ‘I like working with Dominic, and the idea of a Christmas show that is slightly different: it’s not quite a pantomime, it’s not quite a play. It’s got a bit of everything in it!’ This eclecticism is what makes Hill’s approach unique. As Collins adds, ‘I don’t think Dominic would be doing it if there wasn’t a bit of darkness in it. Someone described his previous Christmas show, A Christmas Carol, as the darkest feelgood show in town, which I quite liked.’ Rather than following the pantomime style, Hill’s direction deliberately evokes a self-conscious theatricality. ‘Everything is declared, you see how it all works,’ says Collins. ‘It’s a celebration of the illusion and complicity with the audience.’ Instead of a thoughtless romp through the tale of one woman’s oppression and liberation through marriage to royalty, this Cinderella is unafraid of digging into the dark themes and the psychology of the characters. Nevertheless, Cinderella remains a family show that refuses to ignore the potential of theatre to contrast hope and fulfilment with doubt and adventure. Hill is an intelligent director, but never denies the power of a spectacle, with an innovative musical score that combines fun, virtuosity and dramatic tension. Citizens Theatre, Glasgow, Tue 28 Nov–Sun 31 Dec.

Cinderella – produced by the national company Qdos, but with its own Scottish flavour – promises an old-fashioned comedy experience. While Edinburgh King’s pantomime is an annual celebration of traditional festive fun – fairy tale stories, dames, slapstick, melodramatic baddies and a happy ending with a wedding – it has been creating traditions of its own. Allan Stewart (the dame), Andy Gray and panto villain/villainess Grant Stott are now entering their 13th year as the core cast. Stott, however, sees an additional character as key to the team’s success. ‘The other part is the audience,’ he says. ‘We’re absolutely all in it together. They know us and we know them.’ As Stott prepares to become the wicked stepmother (‘probably the ultimate villain,’ he laughs), he recognises the importance of keeping the audience coming back for more. ‘Our production levels have gone through the roof over the last five years; lights, sound and special effects are all of the standard you’d expect to see in a West End show. No expense is spared. We work all year round on the script and routines: we never take this show for granted.’ The combination of production values and the performers’ willingness to respect the pantomime, lends Cinderella a polish without losing its playfulness. During Stott’s career, he’s witnessed the revival of the Scottish pantomime – in the 1990s, he notes, it wasn’t attracting audiences – and while the chemistry between Stewart, Gray and Stott keeps the show popular, he’s not resting on his laurels. ‘The key ingredient to a great Scottish panto has to be a Scottish cast and script,’ he observes. ‘We always try and raise the bar. If the audience have had enough of you, they'll let you know by not coming back. Hopefully that won’t happen anytime soon!’ King's Theatre, Edinburgh, Sat 2 Dec–Sun 21 Jan. 2017 WISHLIST 13

Johnny McKnight continues his reign as Scotland’s most dynamic contemporary pantomime maker. glasgow Glasgow’s shopping district hosts the Style Mile Carnival (Sun 26 Nov), with a procession of music and dance led by street performers and Christmas characters from time gone by. The carnival begins at St Enoch Centre around 2.30pm, making its way to the retail mecca of the city’s Style Mile to mark the beginning of the festive shopping season. If you’ve already had your fair share of mince pies by Sun 10 Dec, sign the family up for Glasgow’s Santa Dash 5K fun run. Don your Santa suit and help raise money for the Beatson Cancer Charity. Pay a visit to Santa and his reindeer at M&D’s Magical Wonderland (Sat 18 Nov–Sun 24 Dec), the largest grotto in Scotland. Once you’ve picked up your gift, head to the open-air ice rink or watch Elfie and Kevin in their Christmas show. The Harry Potter Concert Series comes to Glasgow on Sat 9 Dec, screening The Chamber of Secrets with a live symphony orchestra. Edinburgh’s Christmas opens on Fri 17 Nov, but Light Night (Sun 19 Nov) officially marks the beginning of the festive season in the capital. Twenty thousand people gather to listen to choirs from across the country and watch as the Mound’s Christmas tree is lit from top to toe. Of course, you can also visit Santa’s Grotto, go ice skating in St Andrew Square, or watch a number of familyfriendly shows, including Baby Loves Silent Light Night Disco and Shark in the Park. Christmas at the Botanics (Sat 4 Nov–Sat 30 Dec) gives you the chance to wander the gardens by night, following a one mile-long illuminated trail. Enjoy the sounds of the Choir of Trees, walk through the crystal lawn lit by a thousand spheres of light and keep an eye out for Santa and his elves. There’s also spiced cider, mulled wine or hot chocolate to warm you up. Over at the Traverse Theatre, Kevin Quantum, David Blanco, Paul Dabek and other stars of magic gather for four days of festive wonder at MagicFest’s Christmas Special (Wed 27 Dec–Sat 30 Dec). But if you’d prefer to stick to the outdoors, join the Christmas Charity Festival (Sat 2 & Sun 3 Dec) in their Santa Parade, which marches through the heart of Stockbridge with a team of elves, reindeer, pipe bands and more. It’s a great way to get yourself and your guests back in the festive groove. Run a lemon slice around the rim of your glass, then roll the rim through a mix of cinnamon and crushed peppercorns. Add all other ingredients to the glass with cubed ice and stir. Garnish with a cinnamon stick and a lemon twist.

New York is that winter wonderland of our childhood, made such by the music and films we grew up on. Home Alone, Miracle on 34th Street and the Fairytale of New York – New York is where the magic of Christmas is saved. Dry shake your ingredients to aerate the egg. Add ice and shake again, then single strain into a rocks glass over ice. Add the final festive touch and float 12.5ml of port on top by gently pouring it over a teaspoon.

Keep on a low heat and serve in heat proof glasses or mugs. Garnish with a cinnamon stick or dehydrated apple slice.

The festive thinking behind this one goes back to my school days. I love apple and rhubarb crumble and it used to be a staple pudding at school during the winter months.

A cousin to the negroni, but with whisky instead of gin, we've infused the whisky with figs by soaking the fruit in the spirit for a few weeks to give a festive note to the drink.

60ml maple or date syrup 1 tbsp brandy (optional)

Muddle rhubarb and lime wedges in the bottom of your chosen vessel (a copper cup is traditional for a mule.) Add crushed or cubed ice, ginger beer and cloudy apple juice. Garnish this with a lime wheel and shaved ginger.

MULLED WINE

FOR THE FILLING: 80g almonds 80g walnuts 80g dried cranberries, very finely chopped

3ltr red grape juice zest of 2 oranges 1 blood orange 1 tsp ground mixed spice 2 star anise

Stir all the ingredients together in a mixing glass along with ice for around 100 rotations, or until you have your desired dilution. Then strain into a rocks glass over a single large block of ice and garnish with a fig or orange zest.

Recipe supplied by Hamilton’s, Edinburgh, hamiltonsedinburgh.co.uk Christmas wouldn’t be Christmas without mulled wine, and this non-alcoholic version uses seasonal blood orange to add a bit of depth to the grape juice. Pierce the rind of the blood orange with the cloves before putting all your ingredients in a saucepan. Bring everything to a simmer, do not boil, and keep on a low heat. To serve, simply ladle into a mug and garnish with a wedge or dehydrated slice of blood orange.

Combine the orange juice with the syrup in a pan and simmer for 10 minutes, adding the brandy at the end, if using. Remove from the heat and allow to cool slightly. Preheat oven to 180°C and brush a baking tin with oil. Grind the nuts together in a food processor to fine crumb. Mix in the cranberries, orange zest and spices and bind with a tablespoon of the syrup. Take one sheet of filo and brush with oil. Cover the rest with a damp tea towel to prevent drying. Place a generous 2 tablespoons of the mix along the bottom of the short end of the sheet and roll into a sausage shape. Cut each roll into thumb size cigars and place seam side down in the tin. Bake for about 25 mins or until golden brown. As soon as they come out of the oven, brush with the cooled syrup and sprinkle with crushed pistachios. Christmas Baklava

INDIAN SPICED KALE, ONION AND NUTMEG BHAJIS 2 eggs 2 large onions, sliced 3 spring onions, sliced 70g kale, finely chopped 120g plain flour 1 tsp ground coriander ½ tsp of nutmeg 1 tsp hot chilli powder 1 tsp cumin seeds 3 tbsp vegetable oil, plus extra if required for deep fat frying raita or mango chutney to serve Beat the eggs in a bowl and add the sliced onions and kale before mixing well. Add the flour, ground coriander, hot chilli powder and cumin seeds and stir well into the mixture. Heat the oil in a deep-sided frying pan over a medium heat. When hot, add a large spoonful of the bhaji mixture and fry for 30–45 seconds, until golden brown. Turn the bhaji over and fry for a further 30 seconds, until crisp and golden brown all over. Remove and drain on greaseproof paper. Repeat with the remaining bhaji mixture, replenishing the oil in the pan if it runs low and allowing it to heat up again after a new addition. Serve up with raita or mango chutney and a masala chai for an extra festive feel.

Oatcakes with smoked trout and crème fraîche

traditional OATCAKES WITH SMOKED TROUT AND CRÈME FRAÎCHE FOR THE OATCAKES: 500g pinhead oats FOR THE TOPPING: 100g porridge oats a few slices of smoked trout 40g plain flour crème fraîche 1 teaspoon bicarbonate of soda a few cornichons, or pickled cucumbers 150g bacon fat, lard or butter, melted a few chives 30g sugar 15g salt approximately 500ml water, or buttermilk, which makes for a really rich oatcake

Mix all the oatcake ingredients together and trickle in the water, or buttermilk, a little at a time. If you are using a mixer or food processor, combine until you have a good dough. Roll the dough into four sausage shapes, about

the width of a £2 coin, then wrap in cling film and store in the fridge until firm. Then slice into ½ cmthick discs using a very sharp, serrated knife. Cook on a preheated girdle, or heavy-based frying pan, rubbed with a little lard or butter, for a couple of minutes on each side. Finish cooking them in a low oven (125°C) for about 30 to 40 minutes, or until golden and crisp. To serve, top each oatcake with a few flakes of smoked trout, a slice of cornichon or pickled cucumber, a dollop of crème fraîche and snipped chives. Perfect!
