Dear Reader, This is the second issue of Lakeshore Living and I’m proud that it is larger and better than the first. The issue is loaded with great reading – from a spectacular reno by celebrity designer Ramsin Khachi of Oakville to an incredible California getaway offer by the Napa Valley Crush Co-op. If you like Californian wines, you will want to hear what the Napa Valley Co-op has to offer, and get in on a fantastic wine tasting event the Co-op has organized with Budds’ BMW. Crescent Hill Gallery will also have some exquisite artwork displayed during this tasting event, so it promises to be a highly entertaining and enlightening evening. Details about the wines, the Co-op and the tasting event are inside. I also want to thank my good friend Matt Dunigan for taking time out of his busy schedule to allow us to profile him in our celebrity feature. A celebrated CFL quarterback, hall-of-famer and TSN panelist, Matt is also a great guy. Window Treatments Help Set the Mood for a Room All too often accessories take centre stage for a room and while accessories are important to help set the mood for a room, many forget factoring in the right window treatment. It’s important to spend time at the beginning of any room redesign project developing your complete colour palette. Many homeowners choose neutral drapery, believing that the drapery should blend in to the overall room décor. What should be considered is that great room inspiration could stem from the drapery fabric – acting as the rooms jumping off point. inVU Drapery Co. brings together style and function for fabulous drapery. “There is more

to choosing the right window treatment than meets the eye,” Lisa says, President of inVU Drapery Co.. She explains “fabric, colour, pattern and hardware all make a statement that can create the right balance in any room.” There are a plethora of options available to suit any style preference. The proper window treatment can add another layer of interest to a room. Even the rod itself has an impact, so making the appropriate choice is critical to the overall look of the room, and the flow of the drapery. Unfortunately, drapery hardware is often an afterthought, and yet it can be a critical aspect of the room’s design. “Hardware to drapery is like shoes to a dress,” says Lisa. It
may seem to be an incidental component, yet it can have a very significant impact. Lisa points to a nickel rod in the dining room. The bracket and finial are one piece, so there’s nothing interfering with the flow of the drapery. The style is traditional however the nickel finish gives it a more modern feel, complementing the room’s decor without overpowering the room’s overall design. The drapery in this room is a darker colour, which draws attention by contrasting against the light walls making the room appear larger. In this room, using two liners was a must. The first liner maintains the integrity of the fabric

A pattern provides interest and style; a dim-out liner protects t h e d r a p e s f ro m fading, but allows sunlight to flood the room, giving it an airy and light mood. KITCHEN

The panels are hung on hooks, which makes exchanging them in the summer months easy. “Interchanging your window coverings is a trend that is growing in popularity. Such a practice keeps the room interesting – and reduces the wear on the drapes so your investment lasts longer.” Says Lisa. The door is at once modern and traditionally elegant. It’s weight, colour, hardware and customdesigned and manufactured transomed side windows set the stage. Entering the stone courtyard, walking the steps and crossing the threshold you know you’ve reached your destination: Home. And, in quintessential Khachi style, it all seems so effortlessly natural.

Greeting me for the first time with a warm smile others generally reserve for long held friends, Ramsin Khachi welcomes me into his most recent creation. Nestled on a quaint street off of Oakville’s Lakeshore, this home is a far cry from the house Khachi first laid eyes on 14 months ago. “When I bought this house it was covered in mould and falling apart. And it was

only 23 years old,” Khachi explains. But, walking in he saw what it could be, if he stripped it back and allowed himself the opportunity to put his over 20 years of expertise in designing, building and decorating to work. Unencumbered by the restrictions of client work, Khachi approached this project with a what would be ideal attitude. “In each room of the house I thought of everything that I’d want, or what bothers me in those rooms traditionally, or what doesn’t normally work, and I fixed it.”
And while the home literally has it all – think biometric locks, radiant heating at the outdoor cooking area, a motion-sensor activated hot water recycling system and a safe room, to name only a few features – it remains a comfortable and inviting family home. This balance of modern and traditional, formally elegant yet family functioning is something Khachi strives for on all projects. “It’s tough to achieve; tough to find the right

balance,” he admits. “I do it every day with clients, because often I’m working with two people and fusing their styles together to achieve a balance of suiting both tastes. In this house, it was all me, but I still had to find a balance. I had to keep my hand on it so the pendulum wouldn’t swing too far either way. I pushed the envelope; more classic in the formal rooms. Then I pushed it again making it more modern in the transitional spaces, like the hallways. You’re always walking that balance.”
WHO IS RAMSIN KHACHI Ramsin Khachi is an established designer and builder as well as a popular industry expert and television personality. He dispenses incredible design ideas that transform into sophisticated residential and commercial spaces. For over 20 years, his firm has become renowned for generating creative solutions to problems facing the modern-day client.
He has been spreading his wisdom in design construction and decor on the Marilyn Denis Show on CTV, during many public appearances and has been a regular on CityTv’s, CityLine as the program’s in-house design expert for over a decade. Known for his vivacious personality and distinctive style, he educates the viewers on design trends, innovative products and the latest in techie gadgets.
A true believer in giving back to his community, Khachi contributes to several different charities, including the Make-A-Wish Foundation for which he has designed room makeovers for children struggling with life threatening illnesses.

Some ways this balance was achieved was through theme and variations. Take the custom-designed plaster mouldings in the formal living room. These were inspired by a piece of glass Khachi found while travelling and used in the main upstairs bathroom, flanking the mirror. This pattern is also repeated in the formal dining room’s medallion, although in a unique and different way. Another example is the Cambria quartz. A fan of the functionality and variations this material provides, Khachi used it in the
countertops of almost all the rooms – including the garage worktop. Working with a palate of greys and whites, the Cambria quartz allows for a flow throughout the home. But to achieve the right look, Khachi had to overcome one challenge. “I love Calcutta marble, and I used it in the formal living room around the fireplace,” Khachi explains. This was repeated in the family room as well. But Khachi wanted Cambria quartz in

the kitchen – and they didn’t have a colour that flowed with Calcutta the way he wanted it to. “So I worked with Cambria,” he continues. “The countertops in the kitchen were inspired by Calcutta marble, designed by Cambria quartz and myself. I love this new product.” Beyond his custom Cambria Calcutta-inspired quartz, there are so many elements that make this home distinctly Khachi. “If you ask my staff they’ll say there are so many elements in this
home that make it ‘Khachi’,” he begins. “The attention to detail, the design aspect; every single little thing is picked by me. My inspirations came from many elements: the Hans Grohe faucets, the imported tiles and even my travels. Nothing was done dismissively. I had something to say about everything.” As he guides me through all six stories of this home – including the decadent master suite,

S ince 20 0 8 , Don Parans and the Concept Lighting team have provided tailored customer care. A retail and builder/renovator veteran, Parans discovered a void in the décor market: that of stunningly beautiful, high quality lighting. Coupled with this hole was a lack of knowledgeable staff.

Each of these stores boasts two things: great products and exceptional staff. “Lighting is not a self-service industry,” Parans explains. “You need to consider scale, room size, ceiling height, lighting requirements and have an understanding of electrical design and installation suitability. That’s what we provide: Our expert staff, all with a strong décor background, helps select the best lighting possible and guide the home decorator through the process.”

Parans’ background in sales combined with his strong design aesthetic has led him to expand Concept Lighting to include Concept Flooring at the Oakville location, and Concept Kitchens and Baths, to be launched at the Burlington location’s grand opening. “We’re servicing people in the renovation industry. Lighting was an obvious void, but there was also a need for quality flooring and plumbing products.” Seeing this need, Parans set about filling it, in the same manner as with the lighting: With quality products, and expert staff. “Our Burlington location will include 3000 square feet of kitchen and bath. We’re also introducing natural wool area rugs in all stores. We keep providing what our customers are looking for. And this means our customers keep coming back.” The quality, service and expertise of the Concept Lighting experience has made an impact not just locally, but internationally as well. To date, Parans and his team have done projects across the GTA as well as in Miami, Chicago and Coral Gables. They possess the passion to create limited production artisanal wines that garner high praise from wine critics as well as loyalty from their devoted customers who anxiously await each release. Access to these exceptional wines is limited simply because they are produced in such miniscule quantities – a few hundred to a few thousand cases. This means they won’t be found in wine shops or other retail outlets. These wines can only be purchased directly at the winery or shipped to a select number of customers lucky enough to be on the winery’s subscription list.

Restrictive import laws and lofty LCBO markups make it almost impossible to receive shipments directly from a Napa Valley winery. Your only hope of savouring these special wines is to travel to Napa Valley. Until now…
Some of the famous “cult” wineries, such as Screaming Eagle and Harlan Estate, have significant waiting lists that result in years of delay before you receive your first shipment.
The story begins with celebrated winemaker Ryan Waugh and his wife Crystal, who produce only 3,000 cases of vintage wine each year under his label Waugh Cellars. Almost all of this wine is sold directly to his fervent fans, with a small amount being sold to a few favoured high-end restaurants in Texas and Florida.
Of course, few of these wines ever make their way to Ontario. These wineries are simply too small to rate a listing with the LCBO.
Waugh’s life was changed forever when, as a student, a friend’s father offered him a glass from a special bottle of Napa Valley Cabernet
Sauvignon. This fateful glass sparked an intense passion for wine and steered him onto the path of starting his own winery. Waugh learned the basics of winemaking at the Savannah Channelle. The experience instilled in him the philosophy of carefully nurturing the grapes while in the vineyard and then making wines with minimal interaction once they go in the barrel. This creates wines that are a true representation of their varietal and which exhibit unique flavours and structural depth. These characteristics have been a hallmark of the wines made by Waugh.
It is here that he spends time with customers old and new and shares with them his experiences in winemaking and connects them through the unique joys of wine drinking.
In 2001, Waugh founded Waugh Cellars, which produces award-winning wines that include a Russian River Chardonnay, A Napa Valley Cabernet Sauvignon, and a Zinfandel from the Dry Creek region of Sonoma. Waugh also makes a second, even more exclusive, wine brand called “Six Degrees” which sells for more than $80 per bottle exclusively on allocation to his wine club members.
of wine each year for scores of winemaking clients. Waugh wanted something different – a completely unique winery that would provide a collegial environment and stateof-the-art equipment for a few handpicked winemakers whose vision and winemaking passion matched that of Waugh himself.

Of course, Waugh intends to make his Waugh Cellars wine at the facility as well. With plans in place for the new winery, Waugh’s next challenges were to finance the project and then to take this innovative concept and open new markets for his wine. His dream was turned into reality through a fateful meeting with Stephen Elliott, a retired lawyer from Toronto. Elliott and his wife Barbara had just purchased a vacation home in the famed Napa resort called The Carneros Inn. The Elliotts had been bitten by the Napa winemaking bug and they formed a partnership with Waugh to finance the construction of his dream project.
This vision has resulted in the creation of a project called “The Caves At Soda Canyon.” Waugh purchased the site and navigated the tortuous process of getting the necessary environmental approvals from Napa County to realize the dream of this winery. Rather than being located in an impersonal industrial park, Waugh secured a spectacular mountaintop site, 900 feet above the floor of the Napa Valley, on the Palisades of Stag’s Leap. From this perch, visitors can survey the whole of the Napa Valley, from the towers of San Francisco and north to Calistoga. The winery is being constructed wholly underground in 20,000 square feet of caves, tunneled into the side of the mountain. Construction was started in 2008 with completion being scheduled for the harvest of 2012. Four years after founding Waugh Cellars, the then twenty-something winemaker conceived the idea of building a winery that would be unlike anything existing in California. This winery would provide custom crush winemaking services to a select few high-end boutique Napa winemakers in an incomparable setting. Most of the artisanal “virtual wineries” utilize the services of a custom crush facility for making their wine. Typically these facilities are located in industrial park settings and are able to process millions of cases
Almost from the moment of announcing the project, Waugh was flooded with inquiries from winemakers who wanted a home to make their wine. He interviewed dozens of winemakers until he found the select few who met his exacting standards of winemaking. Waugh finally selected two other winemakers who shared his passion for high quality winemaking – the Buoncristiani Family Winery and famed consulting winemaker Craig MacLean. Both of these winemakers have earned numerous awards for producing exceptional Napa
Elliott was not content with just being a partner in what would surely prove to be one of the most unique and prestigious wineries in the Napa Valley. Elliott had a mission to find a method for Ontario residents to enjoy these unobtainable Napa wines, without having to travel to Napa. This meant navigating the shoals of regulations from the LCBO and the Canadian Border Services Agency. After many attempts, Elliott finally realized that the solution was to form an Ontario co-operative corporation. A co-op is a special type of corporation that operates under its own set of rules. In April of 2011, The Napa Valley Crush Co-operative Ltd. was formed, with Elliott as founder and president. This was to be the very first wine consumption co-operative ever formed in Canada.

Co-ops are intended to provide goods, services, or employment to their members on the most favourable terms possible. The Wine Co-op was formed to supply the highest quality, artisanal Napa Valley wines to its members at a cost that reflects only the actual direct costs of winemaking. The Co-op can do this by making its own wine in the Caves At Soda Canyon in Napa. The Co-op has appointed Waugh as the winemaker for the Co-op wines. He will select premium grapes from prime vineyard sources in the Napa Valley and will oversee every step of the winemaking process in the Caves At Soda Canyon. The result will be superb Napa wines that will match some of the most expensive wines in the Napa Valley. Best of all, these wines will be available exclusively to members of the Co-op. The difference for Co-op members is that instead of paying the usual sky high prices for Napa wine, they will be able to enjoy it at a price that is 90 percent below what would otherwise be paid for wines of this stature. This is possible only through the Co-op structure where the wine is made exclusively for
members without the indirect costs of overheads, distribution and importation costs that can represent up to 90 percent of the cost of a premium bottle of Napa Wine. Traditionally, the main roadblock to the enjoyment of Napa wines here in Ontario is in the form of the taxes and markups imposed by the LCBO and the federal government. If you attempt to import a case of Waugh’s Six Degrees Cabernet Sauvignon into Ontario, you would be saddled with paying upwards of $100 per bottle in taxes and LCBO markups, on top of the $80 retail cost of the wine at the winery. A member of the Napa Valley Crush Co-op will be able to import their custom wine into Ontario by paying the applicable taxes based upon the Co-op’s “winery cost.” This means that the taxes to bring the wine into Ontario will amount to only a few dollars a bottle. The Co-op will take care of all of the paperwork for each member and the wine can be shipped either directly to the member’s home
or office, or to a warehouse facility in Buffalo at the Canadian border for even greater cost savings. By joining the Wine Co-op, a member is granted the opportunity to enter into a WineShare Agreement. This provides that, for a one-time payment, a member will receive a five-case allocation of Napa wine every year for 25 years. Co-op members are assured their allocation of Napa wine each year regardless of how high the retail wine prices may go in the future. At the present time, the Wine Co-op is accepting a limited number of applications for membership. Because these wines will be limited production, membership is being closed at a total of 450 members. When Matt Dunigan returned to the GTA four years ago, he put the same kind of work ethic into choosing a hometown, and a home, as he did during HIS Hallof-Fame playing career through two decades in the Canadian Football League. “We looked all around the Toronto area,” the TSN analyst and Road Grill host said. “And I mean all around.” See, he approached the home hunt in the same way he studied opponents as a Grey Cup winner. Football is 95 percent preparation and perspiration and five percent execution, Dunigan explains. So he did his homework and came back to Oakville, his home in the early 1990s when he led the Toronto Argos and Hamilton Tiger-Cats. “Oakville is really about comfort, but I also wanted to submerge my kids in stimulus. There were all kinds of opportunities and activities. It filled all the requirements for a family – a great community feel and atmosphere and schools. We’re pleased with the way things transpired.”
He stressed that anyone who has raised teenagers knows the importance of engaging them and that’s what Oakville has been – a comfort zone that allowed his kids to prosper. Many former pro athletes disengage after their careers, but Dunigan said he embraced the chance to contribute in his adopted hometown. “I’m a big believer in giving where you live. I was able to work with Big Brothers Big Sisters of Halton and that was important for me, to try to make a difference in the community.” Dunigan, who was humble as a pro (even after several years as a CFL quarterback he used to greet media with a ‘Hi, I’m Matt Dunigan’) helped high school programs and individuals without looking for media recognition. “You can’t just live in a community. You have to give of yourself. You want to make your community better.” Indeed, his resume of community engagement across Canada is stellar. In 1989, Dunigan won the Tom Pate Memorial Award for his off-field involvement.

Science on the Brain It wasn’t enough that Matt Dunigan gave his body to football. He’s given his brain to science too. He lives every day with some kind of post-concussion syndrome since he was slammed into the turf in a CFL game 15 years ago. So he says it only make sense that what has happened to him should be examined someday to hopefully shed more light on a subject that is still not well understood. Dunigan is also a spokesman for the ThinkFirst Foundation, which is devoted the study of concussions and programs to raise public awareness. But the echoes of his concussion problems reverberated very close to home when his teenage son Dolan suffered three concussions in a short period in 2007. Dolan had all the size Matt lacked (he played at 5-10, 180 pounds while his son was 6-5, 217 pounds), but as the sports world has slowly learned, size is no guarantee against brain injury. “I had to take the dog out of the fight,” Matt says of the tough, but realistic decision the family arrived at. Dolan agreed to quit football and pursued baseball. The father knows only too well the legacy of too many hits to the head. “You get symptoms all the time and you just try to plow through them.”

He’s unsure where that side of his working life is going but has a long-term deal with TSN following 12 years with the network. The halftime panel in particular provides something of a second childhood for him. “It is a blast. It’s both a haven and a release. We can act on that show in ways we never can in normal life.”
Moreover, he chaired and organized three charity golf tournaments: The Matt Dunigan Crimestoppers Classic, The Silver Arrow Mercedes Matt Dunigan Quarterback Classic and The Matt Dunigan Superstar Extravaganza. The tournaments generated in excess of $150,000 for local charities. He has also been a regular participant in the Dan Cooper Celebrity Invitational Golf Tournament at Glen Abbey for Big Brothers Big Sisters of Halton.
The exchanges are often sharp and funny as he joins Burlington native Chris Schultz and Jock Climie with host Dave Randorf. The hits are of the verbal kind, a blessing after Dunigan’s 14 CFL seasons as a classic gridiron warrior. He was a player who wouldn’t take shortcuts.
The kids, Dane, Madison & Dolan have flown the coop and Dunigan and wife Kathy leave many good memories behind as they leave their Oakville home to return to Texas, where Matt spent some of his early life. The move is to be closer to other family members but Dunigan will continue to serve as analyst and colour commentator on TSN’s CFL broadcasts. And he hopes to continue in the food forum with the production company which worked on Road Grill. The two seasons of the energetic show are still in reruns and Dunigan is looking for a new vehicle. His Food Network show was launched in his backyard on Monks Passage in Glen Abbey.

CFL fans will recall Dunigan’s 1991 Grey Cup victory. Played in the bitter cold, with a broken collarbone, he still iced the game with a 36-yard touchdown pass. “The Food Network was advertising open auditions for a grill show and my wife Kathy kept saying I should submit a tape. ‘OK’ I said, ‘get the video camera out.’ “ The audition featured Dunigan’s trademark enthusiasm and southern U.S. drawl, a winning combination. Does he know barbeque? “Hey, I’m a Texas guy.” Still, he makes it clear. He’s a grill man, not a chef. Dunigan, who looks as buffed as his playing days, said he couldn’t get by on celebrity. “I had a lot to learn and studied to pick up everything I could.”
But in 1996 his unrelenting style caught up with him. Playing for Hamilton, he was flattened in a game that year and never played again. This was long before concussions were widely discussed in sports circles and those who got them were supposed to suck it up, strap on the helmet and go out on the field. After that hit, however, Dunigan knew something was seriously wrong and that has led to his key role as an advocate for Think First. (See sidebar story Science on the Brain.) “I don’t dwell on that time, I try to look forward,” he says. In fact, he’s not sure what lies ahead. “I don’t know if I’ve really found what L I want to do.” L

Honey Mustard Chicken Drumstick Ingredients
q 1/2 cup liquid honey q 2 tablespoons olive oil q 1/4 cup Dijon mustard q Salt and pepper to taste q 1 teaspoon mustard seeds q Oil for brushing q 2 teaspoons chopped garlic q 12 Fresh chicken q Juice and zest of 1 lemon drumsticks skin on
Directions In a medium bowl, whisk together all marinade ingredients. Reserve ¼ cup (60ml) for basting later.
Rinse chicken and pat dry. Place rinsed chicken in a large sealable plastic bag.
Pour the marinade over the chicken, seal the bag and toss to ensure the legs are evenly coated. Marinate 4 hours in the refrigerator. Once chicken has marinated, prepare barbeque for indirect medium heat (350°F/175°C) leaving one side on and one side off. Oil the grill to prevent sticking. Place chicken on the grill over the side with no heat (indirect medium heat). Turn chicken every 3-4 minutes, brushing with the reserved marinade. Cook for approximately 15-20 minutes or until chicken is crispy and cooked through. Chicken is done when the juices run clear. Courtesy of the Food Network

For the past several years I have been encouraging area citizens to get involved; to help make this community an even better place in which to live. Charity begins at home. Whether we give money, time or both, it is imperative to help those less fortunate than ourselves. “Give where you live” is not just a catchy phrase; it is a philosophy to live by. I’m proud that The Dan Cooper Team has supported many worthy causes – everything from minor sports to major campaigns. A community is more than bricks and mortar – the character of a place is defined by the caring and generosity of its citizens. I’m proud to live in such a caring community and prouder that The Dan Cooper Team can be counted as one of the area’s generous corporate citizens.
