A GEM OF A COMMUNITY

(Re: In the Middle of a Midbar, Issue 344) When visiting Casa Grande this winter, I was amazed at the community. When I went to shop at the grocery, I found it fully stocked with a variety of every kosher item I needed. For Shabbos, I purchased challah from a local housewife, and it tasted just like mine! On Motzei Shabbos a melaveh malkah was held for the women, and it was unbelievable to see the way the entire community is like family. Everyone chipped in somehow. One hosted, one set up the place, another cleaned up, and everyone contributed with food.

I’d never been on such a peaceful vacation before. The streets are so clean and quiet, and the housing is gorgeous. And the air tops it all off, so pure and fresh.

(Re: Snatching a Yeshuah, Issue 344) It was truly special to read the story about the Imrei Chaim and the couple who was zoche to a child even without stealing the afikomen.

It brought back such heartwarming and beautiful memories and was especially meaningful to me, since this couple would stay at my parents’ home when they’d come to spend time with the Imrei Chaim in Williamsburg. In fact, I still remember that the mother (the grandmother of the author) once brought along a beautiful piece of fabric as a hostess gift, and my mother sewed dresses with it for my sister and myself.

I was very young when I heard a sequel to this story. When the

parents were discussing the naming of their child born after the Pesach story you featured, they consulted with the Imrei Chaim.

The father of the child did not yet have anyone named for his father, who’d passed away during the war; the maternal grandfather, on the other hand, did have a namesake in another descendant’s family. And so the Imrei Chaim encouraged the child’s mother to allow her husband to name the child after his father, even though the mother is generally the first to give a name after her side.

He said, with a twinkle in his eye, “Zuhl ehr geben de numen noch zein tatte; ihr vet och im yirtze Hashem zoche zein tzu geben a numen noch eiyer tatte.”

And so it was; they were zoche to two more children, one of whom was named after her father.

A GLEAMING COLLECTION

(Re: A Diamond for Everyone, Issue 343) My grandmother has had a passion for Swarovski crystals ever since I can remember. She takes real good care of her collection; I never saw any dust collecting on any of them!

One Shavuos we surprised her with a Swarovski flower vase instead of live flowers since we knew she would appreciate it a lot, and she did. Now it was really nice to read about how it came about.

PARSHAS ACHAREI MOS Top Priority

In this week’s parsha, Hakadosh Baruch Hu reminds Klal Yisroel to follow in His ways and keep the Torah and mitzvos (Vayikra 18:4–5).

Here, two pesukim in a row both deliver what seem to be the same message.

The second pasuk concludes, “V’chai bahem — And you shall live by them.”

Quoting Chazal, Rashi explains what each word teaches us. Which other message can we take from these potent words?

DR. MOSHE WALLACH was a legend in his day. He founded and managed Shaarei Tzedek Hospital in Yerushalayim with devotion, dedication and more than a touch of yiras Shamayim. Patients felt his sincere quest to provide quality service and compassionate care, all while running the institution in adherence to the highest standard of ehrlichkeit.

Once, while visiting Shaarei Tzedek, Rav Yitzchak Hutner witnessed a remarkable sight. He saw how Dr. Wallach, who besides for his role as hospital direction serves as a physician, went over to a patient just before he was wheeled into surgery.

“Reb Yid,” he said, “what is your full name? And what is your mother’s name?”

Clearly, the doctor wished to daven for his patient before the procedure began.

Amazed, Rav Hutner repeated this incident to one of the gedolim, who exclaimed, “Oh, how we should envy a Yid like him! He has such a great opportunity to serve as a vehicle for k’vod Shamayim — and he actually capitalizes on it!”

Indeed, there are many doctors and other experts in their field who are successful at what they do. They restore life, yet they don’t recognize that they were given the power of healing to serve a spiritual purpose, and to bring about a

kiddush Hashem.

But that was Dr. Wallach’s essence. He went above and beyond his duties in leading the hospital, yet he never forgot that every life he saved, every patient whose situation he eased, was simply another opportunity to fulfill his spiritual role in life.

For Dr. Wallach, this was true on the day-to-day and even in extenuating circumstances.

As war raged in Eretz Yisroel in 1948, Dr. Wallach opened the doors of his hospital to an unlikely guest: Rav Yosef Tzvi Dushinsky, zt”l, the Ga’avad of the Eidah Chareidis of Yerushalayim.

Rav Dushinsky was well and did not require medical care; the reason Dr. Wallach invited the Rav was because he lived in a neighborhood that bordered the Arabs. Gunfire and cannon shots rained over the area, and it was frightening and dangerous to remain there. Thus, the hospital would provide ample respite until the conflict calmed down.

Dr. Wallach kindly made sure that the Rav had all of his needs met, and he emptied two rooms for the use of the Rav, his wife and his son.

Clearly, the doctor wished to daven for his patient before the procedure began.

Rav Dushinsky’s talmidim came to the hospital every Shabbos to be with their Rav. There, in that strange location, the Rav led a “tisch.” They sang, shared divrei Torah and mussar, and strengthened their emunah together.

Once, as the talmidim were sitting together and listening to the words of their Rebbi, Dr. Wallach suddenly passed by. From a few feet away, you could hear the clang of his heavy ring of keys jingling; he carried the keys to all hospital rooms on his belt.

Rav Yosef Tzvi called out to him with a big smile, “Reb Moshe! With these keys, the gates of Gan Eden will be opened for you!”

“K’vod haRav!” Dr. Wallach replied in perfect German, without missing a beat. “Give me one of your keys of Torah, and I will gladly give you all the keys in my hand…”

Indeed, the legendary doctor was a paradigm of one who lived for the sake of Heaven alone. * * * * * The Sfas Emes explains a pshat in the words “v’chai bahem.” A person should place his “ikar hachayus,” his main energy and verve in life, into Torah and mitzvos. His main will to live should be so that he can acquire more Torah and mitzvos. After all, Torah and mitzvos are our life; they should be the primary focus, not take second place.

Avodas Hashem is meant to be handled with cheshek, until the person reaches the level of feeling that it is the essence of his very being — and without it he cannot exist.

Did You Know?

Parshas Acharei Mos describes the avodah of Yom Kippur in great detail. As the Kohen Gadol entered the Kodesh Kadashim, he was accompanied by the Shechinah, but only a Kohen Gadol of sufficient caliber was able to perceive it.

After Yom Kippur one year, Shimon Hatzaddik, who had been Kohen Gadol for 40 years, foretold that he would pass away that very year. He explained that every Yom Kippur, he would sense an elderly man in white garments accompanying him into the Kodesh Kadashim. Usually, the man would enter and exit with him, but that year, although Shimon Hatzaddik did sense the man entering with him, he did not join him on his way out.

Questions Abound as Federal Judge Nixes Mask Mandate A federal judge in Florida struck down the nationwide mask mandate on the first day of chol hamoed, paving the way for travelers both in the sky and on the ground to finally go maskless, at least in some places.

The Associated Press reported that U.S. district Judge Kathryn Kimball Mizelle ruled that the Centers for Disease Control and Prevention had not justified its decision earlier this month to extend the mask mandate until May 3 and had also failed to follow proper rulemaking procedures, errors that rendered the decision irrevocably flawed. The only solution, explained Mizelle, was to completely strike down the national mask mandate, bringing relief to travelers who have been covering their faces for the past two years.

Over the next 24 hours, many passengers and even flight crews cheered as they took to the skies, although others chose to continue keeping their faces covered. Most major American carriers immediately announced that masks would be optional for travelers and their flight crews on domestic flights, while policies varied at area airports, with the mask mandate enforced in JFK and in LaGuardia but not at nearby Newark Liberty. CNET reported that as of this week, international carriers Norwegian Air, British Airways, SAS, Virgin Atlantic, Icelandair, EasyJet, Jet2 and Tui had eliminated the requirement on some or all of their flights.

Even as those flying into New York City were given the green light to ditch their masks, bus and train travelers in the five boroughs weren’t granted the same freedom. The Metropolitan Transportation Authority, which operates the city’s buses and subways as well as Metro-North and the Long Island Rail Road, is continuing to follow the CDC’s masking recommendations.

Florida Governor Ron DeSantis, who has made headlines for fighting back against many COVID-related measures, praised Mizelle’s ruling.

“Great to see a federal judge in Florida follow the law and reject the Biden transportation mask mandate,” wrote DeSantis. “Both airline employees and passengers deserve to have this misery end.”

The White House acknowledged that, at least for now, the mask mandate is no longer in place. The Department of Justice has said that it will appeal Mizelle’s decision, a move that could potentially restore the mask mandate. But with a legal battle potentially taking months, the mask mandate may fall away on its own on May 3 as originally scheduled, barring further extensions by the CDC, reported ABC News. Still, others were uneasy with the move — particularly those who are immunocompromised — and according to the Associated Press, airlines have said that they will allow customers who are uncomfortable flying under the new realities to reschedule their 118

flights, or in some cases, obtain refunds.

But perhaps the bigger concern for some is the fact that Mizelle’s decision trumped a CDC ruling, with the courts and Congress dialing back the agency’s regulatory powers, reported NPR. “It is stunning, the extent to which the courts are reading federal statutes in the most cramped, narrow way possible to sharply limit the powers that the federal government can exercise now or in response to future emergencies,” said Lindsay Wiley, a professor of health law at University of California, Los Angeles.

While the CDC has acknowledged that its approach to the pandemic has been less than stellar, restraining its regulatory powers could potentially backfire.

“When the next threat hits us, everybody is going to turn right back to the CDC and say, ‘What are you doing about this?

How are you responding?’” said James Hodge, a professor of health law at Arizona State University.

No Relief in Sight as Avian Flu Sends Egg and Poultry Prices Soaring Get ready to pay even more for eggs, chicken and turkey in the weeks ahead as an infectious bird flu continues to spread, forcing farmers to kill off their flocks in order to prevent the virus from spreading.

The Washington Post reported that outbreaks of bird flu have been identified in 27 states as of Erev Pesach. The virus was first detected more than two months ago and has affected 1.3% of the entire United States chicken flock and approximately 6% of the nation’s turkeys, with nearly 27 million infected to date. That reality has sent egg prices through the roof, with the cost of a dozen nearly tripling since November.

Grady Ferguson, a senior research analyst for the Gro Intelligence agricultural data platform, said that the current outbreak is far worse than one that took place in 2015, which had a detrimental effect on egg prices for years. He predicted that in addition to paying more for eggs, consumers will also see rising prices for baked goods and processed foods that are made out of eggs.

“Restaurants are going to have a harder time justifying why they should give you a three-egg omelet for a dollar, and on the chicken-meat side, the situation is also worse this time than it was last time,” said Ferguson.

A new wave of bird flu has been reported across New York State, according to the Department of Environmental Conservation. Recent cases have been identified in captive chickens, pheasants and ducks in Dutchess and Ulster counties, among others, as well as in wild birds in Nassau and several other counties. The Centers for Disease Control said that the virus does not pose an immediate concern to humans, reported Ra-

mapo Daily Voice.

Chicken farmers have been upping their biosecurity protocols in order to prevent the spread of infection, with workers showering as they enter and leave a facility and trucks undergoing antiseptic tire baths.

But Emily Metz, president of the American Egg Board, took a brighter view of the situation, saying that lessons learned during the 2015 outbreak and new high-tech measures should prove helpful. Metz noted that egg prices have been more affected by rising farming costs than by avian flu.

“It is alarming, and I share the concern about affordability,” said Metz. “But eggs are still one of the most affordable proteins, bar none.”

Painfully High Pump Prices Prompts Rockland To Cap Gas Tax Filling up your gas tank at a local pump will be a little less painful, as drivers will be seeing breaks in local taxes on both the state and the county level.

New York State will be suspending part of its gasoline taxes, an initiative that will save drivers 16 cents per gallon. Additionally, Rockland County Executive Ed Day announced last week that local gas taxes would only be applied to the first $2 of the purchase price of each gallon of gas, a move that should have drivers seeing a savings of another 8 cents per gallon.

Both the state and the county programs will begin on June 1, with the state program running through the end of the year, while Rocklanders will continue to recognize savings through February 28, 2023.

A plan to eliminate the county gas tax entirely for the eightmonth duration of the program could not be implemented without creating a major deficit in Rockland’s yearly budget.

County officials said that they hoped that the measure would bring some relief to residents, and Day noted that high inflation, rising gas prices and the pandemic had all created tremendous financial hardships.

“Sticker shock is a harsh reality for many Rockland County families as prices for so many basics — eggs, meat, gas — have soared,” said County Legislature Chairman Jay Hood Jr. “It’s part of County government’s job to recognize the needs of people and to act, and bringing some relief at the gas pump is an important way we can help.”

reasons why baby formula has suddenly become a hot commodity. The problem has been exacerbated by a major baby formula recall that took place this winter, with price hikes of as much as 18% over the past year creating further headaches for parents.

Major retailers have instituted purchase limits, with Target restricting customers to just four baby formula items, while CVS and Walgreens allow just three. ABC 7 Chicago reported that Abbott Labs, maker of Similac products, has been prioritizing production and is bringing in daily shipments from an FDA-registered facility in Ireland to ease the shortage.

A mid-March analysis of more than 11,000 stores showed that 29% of the country’s top-selling baby formulas were out of stock at stores across the country. That number reflects an 11% increase since November.

“We’ve been tracking it over time, and it’s going up dramatically,” said Ben Reich, CEO of Datasembly. “We see this category is being affected by economic conditions more dramatically than others.”

The worst shortages are being seen in Minnesota, where 54% of the baby formula products are out of stock. Connecticut, Hawaii, Iowa, Louisiana, Maryland, North Dakota, Rhode Island, South Dakota and Texas are all seeing shortages of at least 40% of its baby formulas.

Parents are being asked not to stockpile baby formula in an effort to give more people access to existing supplies. Children’s Hospital of Philadelphia pediatrician Dr. Katie Lockwood had several ways to address the problem, suggesting that parents turn to their doctors for help and try switching to a different brand’s equivalent formulation. Parents are also warned not to try to make their own baby formula at home or to water down their baby formula, both of which can potentially cause serious health issues.

In an era where big box retailers are finding themselves with limited supplies, Lockwood had one final piece of advice for worried parents — shop local.

“Sometimes smaller mom and pop stores carry formula,” said Lockwood. “Think about places that might not have their

shelves wiped out, like family-owned pharmacies and convenience stores.”

New Card Provides Welcome Relief to Crohn’s and Colitis Sufferers

New Area Code Approved for Hudson Valley

Crohn’s and colitis sufferers who have often found themselves hard-pressed to explain their legal right to use employee-only restrooms in public businesses will have an extra weapon in their arsenals, now that the New York State Department of Health has made a printable identification card available on its website.

State Senator Simcha Felder and Assemblywoman Amy Paulin sponsored the Crohn’s and Colitis Fairness Act in 2017.

The bill was signed into law in 2021, giving the 1.6 million Americans afflicted with the gastrointestinal condition access to business restrooms, a significant accommodation in locations where no public restrooms are available. The New York State Crohn’s and Colitis ID Card was developed to provide those with gastrointestinal issues a simple and recognizable way to verify their medical conditions. It is designed to be signed by a licensed health care provider and makes clear the bearer’s right under state law to gain immediate entry to a restroom.

Yoely Drummer, founder and executive director of the Jewish Crohn’s and Colitis Support Group, said that those with gastrointestinal issues can face these problems multiple times over the course of a month.

“Only a few years ago the topic of Crohn’s and colitis was taboo,” said Drummer. “Nobody talked about it and people who were diagnosed felt like they suffered alone. Today, thanks to a lot of outreach and advocacy, things have changed drastically, and members of our support group number in the thousands.”

A new area code will be debuting in the Hudson Valley as of the third quarter of 2023, now that the New York State Public Service Commission has approved a second three-digit prefix for all newly assigned phone numbers in the region.

The request for an additional area code was first announced in February, as reported by The Monsey View. While the North American Numbering Plan Administrator had initially projected that the 845 area code would run out of numbers somewhere between late 2023 and the end of 2024, the PSC has determined that its supply of 845 numbers will be depleted sooner than expected due to a rise in demand for new lines.

“As the economy continues to grow and the need for more cellular service becomes apparent, there is a greater need for an additional telephone area code number,” said Rory Christian, chairman of the PSC. “I am confident that this new area code overlay will be able to address the needs of expanded telecommunication services in the mid-Hudson region in the years ahead.”

In addition to Rockland, the new area code will be used in all or portions of Columbia, Delaware, Dutchess, Greene, Orange, Putnam, Sullivan, Orange and Westchester counties.

Adding a second area code to the region was determined to be a less expensive and disruptive option than transferring existing customers in some locations to a new area code as was done when Rockland was shifted from 914 to 845 in June 2000.

The new area code, 329, is expected to create enough new phone numbers to meet demand in the region for the next 28 years.

CHAPTER 7 RECAP: Zach meets with Rabbi Ginzburg and Izzy. The two ask Zach to travel to Poland in order to claim the Rebbe’s manuscript. Busy as he is, Zach refuses. He can’t spare the time, especially for a manuscript he has no interest in in the first place.

o what now?” Izzy asked bitterly as he and his brother tramped through the snow back to their car.

“I don’t know.” Chaim Simcha opened the door and slid into the driver’s seat. “There has to be some way to deal with it. We’ll ask the Poles if they’ll accept someone else representing Zach. Maybe a power of attorney kind of thing?”

They wouldn’t, Izzy knew. He shook his head darkly. “They should’ve let him handle it at the embassy l’chatchilah. Why do you think we’re being asked to jump through hoops like this? Because they want to make a big deal out of handing it over, a media event. If so, they’re not gonna take a power of attorney.”

He thought for a moment. “Or maybe they were hoping for a situation just like this. It’s too difficult to come out there, we can’t be bothered. And so they keep the manuscript

Chaim Simcha considered. “I suppose we can sue them in international court, if it comes to that.” He started the car and backed down the long drive.

“Don’t hold your breath.”

Chaim Simcha raised both eyebrows.

“Aren’t you just a breath of fresh air.”

Izzy grunted. “I’m just saying. This feels like a fool’s errand.”

“It’s all min haShamayim somehow.”

They drove on in silence, Izzy brooding as he watched the streetlights speed by in a blur.

“Did you finish those bookshelves in the end?” Chaim Simcha asked after a bit.

“Yeah. While you were at the funeral. They came out real nice.”

“That’s good.” Chaim Simcha glanced down at his instruments. “We need to get gas.”

“Now I know what you’ll do with that win-

ning lottery ticket.”

Chaim Simcha smiled. “Funny.

There’s an old story about that.”

Izzy looked up. “Yeah?”

They pulled to an offramp. “Two poor, old Yerushalmim were sitting together,” Chaim Simcha began. “One asks the other, ‘What would you do with a million dollars?’ The other guy looks up in wonder. ‘A million dollars?

Wow!’ He stares off into space. ‘I’d start paying off my debt…’ He’s quiet for a while, so the first guy asks, ‘And what about the rest of it?’ So the second guy shrugs, and says, ‘Nu, nu. Just like I davened for this, I’ll daven for the rest!’”

Izzy chuckled. “You just made that up.”

They cruised into a gas station, and Chaim Simcha grinned. “Nope.

Heard it years ago. But it does make you think, right? What would you really want to do? Y’know, if you had the money.” He gestured to Izzy. “What would you do?”

They stopped in front of a pump.

“Me?” Izzy unbuckled his seat belt. “I’d spring for gas. But for the moment, you’re filling your own tank. Gimme a credit card, I’ll pump.”

He took Chaim Simcha’s card and stepped out into the cold. A few moments later, his brother joined him.

“I’m going to grab a soda. You want anything?”

Izzy fished a dollar out of his wallet.

“The same, please.”

Chaim Simcha returned with the drinks just as the pump clicked itself off. Izzy cracked the top, made a Shehakol, and closed his eyes as the freezing cold liquid sliced through his body. He stamped his feet to restore circulation and ducked back into the car.

“Start her up,” he commanded.

“I’m freezing my eyebrows off!”

Chaim Simcha dutifully slid the key into the ignition and turned.

Nothing happened.

Izzy stared at the key in horror.

“Uh, Chaim?”

“I don’t know. I’ve been having some trouble with it lately. But it always starts eventually.” He turned the key again, pumped the gas.

Nothing happened.

“Gam zu l’tovah,” Chaim Simcha muttered under his breath. He tried

again and again, but the car refused to start. Finally, he turned to his brother.

“Geit nisht. Listen, you’re good with your hands. Do you know cars?”

“Not really,” Izzy said. “Just bits and pieces of things I picked up from my mechanic. I wouldn’t know where to start.”

Chaim Simcha gave him an incredulous look. “But you built those bookshelves! You’ve always been good with electrical stuff, and plumbing…”

Izzy laughed thinly. “No shaichus to this. Machines are a completely different animal. I can change a tire, check the oil. If I had to guess, I’d say your spark plugs are messed up, but I wouldn’t know how to check them. Or even know where they are.”

Chaim Simcha nodded. “Gam zu l’tovah,” he repeated softly. He tried the key a few more times without success.

“We might have to call for help…” * * * * *

A few scattered snowflakes began to drift down at them. Izzy looked at the sky and frowned. “Gonna be a snowstorm soon, Chaim,” he warned.

Chaim Simcha followed his gaze and made a snap decision. “You know what? Don’t come. It’s snowing already. If you’re here and then they close the roads, we’ll all be stuck out here. No, it’s fine, mamash fine. Izzy and I will camp out in the motel, and we’ll figure things out in the morning.

Yeah. No, trust me, it’s fine. Let me talk to the kids.”

While Chaim Simcha said goodnight to his children, Izzy wandered over to Frank the mechanic. He’d just finished hitching the car up.

“You guys coming?” Frank asked.

Frank gave him a confused look.

“You don’t know?”

The rabbi shrugged. “The reason we thought we had for coming didn’t work out. So we’re obviously here for something else. We don’t know why yet, but G-d didn’t just dump us here for the night for nothing.”

Frank smiled. “I like the way you think, Rabbi.”

Five minutes later, they pulled into an old motel at the edge of town. It was a row of three buildings arranged around a faded parking lot. Izzy peeked in a window and took a look at the front desk, where a tired twenty-something fellow sat reading a magazine in studied distraction. The man, the threadbare carpet, the old wood panels on the walls… everything gave off the same aura of dusty mediocrity.

Izzy made a face. “This is the motel?”

“Beggars can’t be choosers,” Chaim Simcha reminded him with a smile. “Besides, we’ve had it worse.

Remember Camp Gevaldig?”

Camp Gevaldig was a sleepaway camp the two had attended as children. All in all, it had been a great experience. But the facilities were awful, lumpy beds stuffed into tiny rooms full of cobwebs and enormous spiders.

Izzy grinned. “Sure I remember!

Izzy laughed.

They turned to Frank and thanked him for the ride, Chaim Simcha added a mazel tov for his nephew’s wedding, and the two headed through the doors of the Oak Forest Motel. * * * * *

Zach Ganz arrived home late after a long evening of speeches and handshakes. He was dead tired, and he had a busy day tomorrow.

But he needed to relax before he fell asleep. He poured a glass of wine, a half-sweet red that was aged to perfection, fetched his guitar, and let his mind wander as he played chords almost at random, his fingers picking out half-forgotten melodies that drifted away through the empty kitchen.

He took a sip of wine, savored the flavor, and ran through a complex jazz progression, enjoying the workout but stopping suddenly midway through. Then he switched gears and began a slow, sad song, allowing its melancholy notes to clash weirdly with his tired but essentially happy mood. His eyes began to drift.

Now he could go to sleep.

He finished his wine, put the guitar away, and headed upstairs.

It had been a good day, he thought to himself. He was right about announcing the campaign. He was always right. Marty wanted him to wait, but Marty was a career worrier. This was the perfect time, and everything would be fine.

With that happy thought, he slid into bed, only to be startled alert by the insistent shriek of a telephone.

He picked the thing up, glanced blearily at the number, and then, shocked, at the clock glowing in the corner.

“Marty,” he said, “it’s almost one in the morning! What’s wrong?”

“What’s wrong?!” Marty shouted. “We’re in big trouble!” There was a brief pause, almost a sob.

“What have you done, Zach?”

1. Beat the egg whites on high speed until they’re stiff. Add the sugar gradually, and continue to mix until combined.

2. With the mixer on low speed, add the yolks, one at a time. Mix gently.

3. Add the rest of the ingredients (besides the marble mixture) and mix again. Do not overmix.

4. Pour the batter into a sprayed 10x16” pan, leaving approximately 1 cup of batter in the mixer.

5. For the marble mix, dilute the coffee and cocoa in the hot water. Add oil and sugar. Combine this with the remaining batter in the mixing bowl, then swirl it into the cake to create a marbleized effect.

6. Bake the cake at 350° for 1 hour, or until a toothpick inserted into the center comes out clean.

It's one of those days. It’s right before Purim, after Purim, before Pesach, or after you moved and had a baby, and someone has midterms and someone else has the flu, and the wedding was tomorrow — or wait, will it be yesterday? — kind of days.

“What's for dinner?”

Dinner?

Deep breath.

“Pasta!”

Good, loyal, pasta comes to the rescue every time. It’s a staple in our lives, everyone loves it (everyone besides your one picky eater, we know, we know), and it makes for a quick, easy, tasty dinner, lunch or snack. Even breakfast, in desperate times. Well, there’s a reason it has stuck around for hundreds of years. No one’s eating grass, are they?

The Beginnings of Pasta Rumor has it that pasta was introduced to the western world in thirteenth century Europe when Marco Polo brought it from China back home to Italy. As cool as that story sounds, most historians agree that pasta was already in Europe before that, and that what Polo had in China was most likely noodles, not pasta.

Asians had already been enjoying noodles for a while at that point, and it’s unclear exactly how they got to Europe. What we do know is that once noodles got to the West, they were refined, creating the pasta we know and love.

Pasta got to America in the late nineteenth century, when a large group of Italian immigrants came over to these beautiful shores and did us the great favor of bringing pasta recipes (no pre-packaged pasta then) along with them. Interestingly, Thomas Jefferson is credited with popularizing the recipe for mac and cheese in the States after he served it at state dinners while he was president. He was enamored with macaroni after visiting Italy as an ambassador, and later had a macaroni maker made at his estate, Monticello, in Charlottesville, Virginia. Thank you, Mr. President, from all of us.

Noodles vs. Pasta So what exactly is the difference between noodles and pasta? The secret lies in the ingredients, which affect the texture. The Chinese created noodles mostly from rice flour or unleavened wheat flour. Therefore, noodles are light and thin and not as coarse as pasta (think ramen or egg noodles). What sets pasta apart is that it’s made from durum wheat, which has a specific kind of high-gluten content and gives it a thicker, stickier consistency. Pastas like macaroni, spaghetti, and penne are thick and heavier than noodles. Imagine macaroni in your chicken soup.

heavier will slide off too easily. When you have wider, longer pastas like fettuccine or linguini, however, you can make a creamier sauce since there’s more surface area for the sauce to hold onto.

The Perfect Pasta

answer: no. Different shapes and textures of pasta are used for different things and go best with different kinds of sauces.

Then there’s a whole different level of yum in stuffed pastas like ravioli or tortellini. These are small pasta pockets that can be filled with a variety of fillings. In fact, there’s a possibility that kreplach were inspired by ravioli; both were first documented in fourteenth century Europe. Lasagna is considered pasta too, since it’s made with the same ingredients and methods.

The weird thing is that tomatoes didn’t even get to Italy before the sixteenth century! For two hundred years they were eating pasta without tomatoes, ketchup or marinara sauce. That's just sad.

Speaking of sauces, let's explore which ones pair best with which kinds of pasta.

Short, hollow pastas like penne, ziti or rigatoni are your best bet for creamy, heavy sauces. The larger the tube, the more sauce it can hold. If the pasta’s name includes “rigate,” it means the pasta has ridges on its surface, which makes it an even better choice for thick sauces like pesto.

Long, thin pastas like spaghetti or angel hair go best with lighter sauces and flavoring, like thin tomato sauce, oil, garlic and diced fresh herbs. Since they’re very thin and long, anything 158

Dan Pashman, a popular food podcast host, came up with three qualities by which to score pasta: sauceabilty, forkability and toothsinkability.

(They say he’s not super creative when it comes to naming things.) In other words, he scored pasta based on how well the shape holds sauce, how easy it is to pick up with a fork, and how satisfying it is to bite into.

The conclusion Pashman came to was that no pasta scored high on all three. The obvious next step was to set out to create the perfect pasta. He called it “Mission ImPASTAble” (his naming skills improved over time) and teamed up with New York–based pasta company Sfoglini. Together, they spent three years researching and designing the perfect pasta.

Their final product is called the cascatelli, which is Italian for waterfall (questionable naming, but still an improvement — at least it sounds fancy!). The cascatelli is a bit longer than the average penne or ziti, which gives it optimal forkability. It has a slight curve, which makes it fit perfectly into your mouth, hence a high score for toothsinkability.

And finally, the edges are slightly raised scallops, which makes a perfect little ledge for sauce to hold onto, rounding it out with a high sauceability score.

Kosher pasta companies: This is something I didn’t know we need, but now we’re hungry and waiting.

Popular Pastas and Their Real Names

Ever wondered what the real names are for some of your favorite pastas? You’re welcome.

Bow-Tie Pasta The Italian name for bow-tie pasta is farfalle. Pronounced far-fa-lay, farfalle is Italian for butterfly. Sounds sophisticated, huh?

Curly/Spiral/Whateverelse-you-call-it Pasta There are actually two kinds of spiral pasta: fusilli and rotini. They differ

slightly in how they’re shaped. Fusilli looks like tight, corkscrew peyos, and rotini is more twisted than spiraled, with a loose curl to it.

Wheel Pasta Rotelle, pronounced roy-telle, is Italian for small wheel.

Penne We’ve all been there. You’re at the restaurant, and you’ve been eyeing the penne a la vodka on the menu since you sat down. But you’re not sure how it’s pronounced and need to quickly decide if you should just go for the salmon or mumble your way through it. Well, no need to pretend you’re on a diet anymore! Penne, meaning pen or quill in Italian, is pronounced pen-aye, with the stress on the first half of the word. This long cylinder shape with angled edges was inspired by a quill, which is where it got its name.

Elbow Pasta You’re probably familiar with the real name for elbow pasta, which is macaroni. Macaroni is the English word for the Italian “maccheroni,” which, in turn, was derived from the Greek “makaria,” which means “food made from barley.”

The Italians use this to describe a variety of short, hollow pasta.

Yankee Doodle and the Macaroni Club In eighteenth century Britain, the word macaroni was satirical slang for wannabe, fashionable people. It started when young hotshots would travel to Italy and became familiar with macaroni pasta, which wasn’t around in Britain at the time. Since everything in Italy is considered the height of sophistication, when they went back to England, they would call anything fashionable or modish “very macaroni.” For this reason, the young hoity-toity men were soon called the “Macaroni Club.”

In the classic “Yankee Doodle Went to Town” song, the English were poking fun at the American Yankees, whom they considered woefully unsophisticated. Thus, they ridiculed the Yankee who oh-so-foolishly “stuck a feather in his cap and called it macaroni.” Essentially, they were mocking the Yankee who thought that by putting a feather in his cap, he was now a totally cool “macaroni.”

Writing and cooking have a lot in common. The most obvious attribute they share is that both can be performed passably by following some basic formulas, but REACHING that next level requires instinct, improvisation, and yes, occasionally breaking an egg or rule here and there. Then there’s the stubborn fact that you can’t mask bad ingredients, the beautiful reality that both can be a great joy to create and to consume, and that there is literally nothing you can do to advance these passions except to practice, practice, practice.

Many of you know yours truly only as a writer, but when I’m not forming thoughts into written words, and sometimes even while I am, you are most likely to find me playing around in the kitchen or talking about doing so.

Somehow, it’s taken all these years for me to write my first food feature, and I am nervously excited to present this piping hot column of … oh wait, we’re doing healthy pasta alternatives? Meh. Not so fast!

We all find pasta to be delicious, filling and even comforting, but unfortunately, the only things that love pasta more than our taste buds are our fat-storing cells (adipocytes) and our waistlines. If there is a way to get most of what pasta offers and none of the unhealthy side effects, we could be well on our way to eating better.

In this article, we will discuss some healthy alternatives to the pasta we’ve all grown up on. It should be noted that, no, these products don’t actually taste just like pasta. If you eat them side by side with real pasta, you will be left disappointed. But if you’re eating clean and watching your health, you will be pleasantly surprised by how well they replace the notso-good-for-you stuff you’ve long been hooked on.

Ok, enough chitter-chatter.

Spaghetti Squash A low-calorie member of the squash family, spaghetti squash has got to be the numberone pasta alternative. If you wouldn’t see it in its natural state, you’d be hard-pressed to believe that nature somehow provided us with something that looks so similar to processed spaghetti in color and appearance. Somehow, it has a fraction of the carbs and calories of pasta, while being packed with vitamins that span the alphabet and serving as a remarkable stand-in for the real thing.

Raw, this vegetable is hard and boring.

Once cooked, however, its flesh turns stringy and soft and can easily be separated with a fork into strands that closely resemble spaghetti noodles. It is a winter squash, but can be widely found in any supermarket all year round.

Notes: You may find significant variation in taste and texture when preparing spaghetti squash. If you don’t like it at first, I suggest trying a squash from a different vegetable producer or selecting another size, shape or color before giving up. I’ve found that the darker yellow or slightly orangish squashes are generally more tasty than their paler peers.

Spaghetti squash is very hard when raw and you can really hurt yourself trying to cut it in half. Here are a couple of different methods you can employ to protect yourself: M e t h o d

Use a towel to stabilize the roundy squash on your countertop. Make some guiding marks lengthwise with the edge of a sharp knife, and then carefully slice in half. You can skip trying to cut through the stem as it is very difficult; just cut off one side before the stem.

Bake in the oven at 400° for 15 minutes. Allow to cool before slicing in half. IMPORTANT: Poke some holes in the squash beforehand to allow steam to evaporate.

Take it from me, you do NOT want this thing exploding in there.

Microwave for 3 to 4 minutes (again, poke some holes prior to doing so) to soften it up.

After cutting the squash open, use a spoon to scrape out all the seeds. Drizzle some oil on the open sides, lightly salt them, and place into a pan in the oven at 400° for 45 to 60 minutes. You can leave the cut side facing up or down; either works.

Once done, use a fork to pull the flesh out of the squash. It will start shredding into thin long strands resembling spaghetti. Use it as a base for meatballs, mix into salads, or use it almost any way you would regular pasta.

Notes: Zoodles (zucchini noodles)

Made from thinly cut strips of zucchini, zoodles are another popular pasta alternative offering crunch, flavor and lots of nutrition. Since zucchini is over 95% water, it can be a bit tricky to keep them firm enough to properly stand in for al dente spaghetti. But read on; I’m here to help.

There are a couple of ways to turn a zucchini squash into raw zoodles. Spiralizers are the first option, whether they are of the standalone variety or connected to a mixer. A julienne peeler is another great option, and if you’ve got a mandoline (careful with those blades!), that’ll work great as well. Leave the peels on to better hold the pieces together and to enjoy the additional nutritional benefit. There is also, of course, every lazy home cook’s preferred method: buying ready zoodles off the grocery shelf.

While nearly every dish needs to be salted before serving, zoodles are a notable exception. Salt will extract all moisture from your zoodles in minutes, leaving you with a sad and limp, mushy mess.

Did you know? Zucchini can be eaten raw. In fact, it is preferred so in the case of zoodles. You can use it to make a cold pasta salad with a fraction of the calories, or you can pour hot meat or sauce over it to warm it up as it is being served.

If you do wish to cook your zoodles, remember that less is more. We want them to remain firm and slightly crunchy, which means they can’t be exposed to heat for long. You can sauté them with a drop of oil in a pot, constantly stirring so that moisture doesn’t pool and each strand is directly sautéed by the hot pan. Alternatively, you can boil them in hot water briefly or microwave them for a minute or so until warmed through.

Zoodles can be used in place of pasta everywhere. However, note that they get soggy fairly quickly so take that into consideration when preparing and serving. Dry and cold zucchini, however, will hold in the fridge for a few days, so feel free to plan ahead.

Shirataki Noodles

(also known as miracle or wonder noodles) Among the many reasons why people cut pasta out of their diets, the top ones are undoubtedly that it has lots of calories, lots of carbs, and lots of gluten. Imagine a form of pasta that has zero of the above; wouldn’t that be something?

Well, it is! Shirataki noodles have exploded in popularity in the Western world and are now even available in many kosher supermarkets.

The noodles, which hail from Japan, are made from the fiber of the konjac plant, a root vegetable from the potato family that has long been used in Asian countries.

The reason these noodles have no calories or carbs is that they consist of nothing but water and fiber. As many of you (at least those still reading) are aware, fiber is a type of carbohydrate that our bodies can’t digest or break down into sugar (that is why the nutrition fact labels place the dietary fiber under the carbohydrates section, with a higher ratio of fiber generally indicating that it is more nutritious and contains fewer “net carbs”).

Fiber, whether in the form of shirataki noodles or any other high-fiber products, fills you up without your body taking on any calories, and it provides a wide range of crucial health benefits, making it a key component of any healthy eating plan.

Notes: There are a couple of kosher brands selling shirataki noodles under different names and with slightly different variations.

Some are sold refrigerated and others can be found in the regular pasta aisle.

The noodles come soaked in water and ready to be drained, rinsed and served. The liquid it comes in often gives off an unpleasant aroma so rinsing it is important. While they do not need to be recooked, the chances of enjoying them go up significantly if they are boiled in water for a few minutes and then dried out in a hot sauté pan until much of the moisture has evaporated. Only then should it be reintroduced to be cooked in the sauce it will be served with.

Do not eat too much of these noodles as it may cause some gastrointestinal discomfort, such as bloating or gas, especially if you’re not used to a high-fiber diet. If it does happen, do not fret. It is temporary.

The taste and texture will be different than traditional pasta, but I’ve found that it works very well as a safety ramp to leaving pasta-eating behind. You’ll get a large chunk of pasta’s positive attributes and none of its negative side effects.

Today’s market boasts a wide range of pastas that, while still heavy on the calories, also provide nutritional value and keep you feeling full and feeling good. At this point, our children are already very adept at spotting hidden items and objects beginning with certain letters, and observing every color of their surroundings.

Cue the I Spy bottle, a hands-on I Spy game where kids find little trinkets hidden among filler items. So many ways to make them, and so many ways to play! Make a basic bottle for solitary sensory play, or create a number of them for multi-player games. The possibilities are endless. And the best part? Children can easily create their very own bottles, using their imagination and favorite prizes. And the very best part for parents? This requires no trip to the store and no unnecessary spending; from start to finish, these bottles can be filled with pantry staples and anything you find around the house — or outdoors.

I Spy bottles have three main components: • Bottle • Filler • Trinkets

FIRST THINGS FIRST: THE FILLER. For this project, I used mini bowtie pasta. But you can use many different fillers such as raw rice, beans, popcorn kernels, fuse beads, or even sand. You can choose to dye the pasta to match your theme or just for a brighter, more vibrant look.

To dye the pasta, follow these steps: • Use about ¼ to ⅓ cup rubbing alcohol to an average bag of pasta (about 2 to 3 cups). If you want to create multiple colors, divide the pasta accordingly (accuracy is not a must; it’s an approximate value).

• Pour the alcohol into a freezer Ziploc bag (or bags, for multiple colors), and add a few drops of food coloring.

The more food coloring you add, the bolder the colors will be. Seal the bag and squish the liquid around until the alcohol is evenly colored.

Add pasta to the bag, seal, and shake until the pasta is uniformly covered. Allow the pasta to soak for about an hour, shaking the bag every few minutes to ensure good coverage.

• Drain the liquid from the bags, and place the pasta flat on parchment paper or foil. Allow the pasta to dry completely before handling.

NOW FOR THE EXCITING PART: THE TRINKETS. Have your child collect their favorite knickknacks or whatever catches their interest. Or collect an assortment of objects according to your theme.

Or use mini erasers, like the ones pictured here. (Toys 4 U has some in their dollar aisle.)

Next, arrange the trinkets and take a picture of all of them together for reference when playing. Print the picture. Alternatively, for older children, write down a list of items used.

To assemble the bottle, ensure that the bottle is completely dry, and then add some filler to the dry bottle. If the bottle opening is narrow, use a funnel or create one with a paper.

Add two or three trinkets, then another layer of filler. Alternate between filler and trinkets until all the trinkets are in the bottle, then add filler until the bottle is nearly full. Don’t fill the bottle completely; leave some empty space to allow the items to move around freely.

I SPY BOTTLE IDEAS: • Educational — Hide shapes, colors, letters (fridge magnets, scrabble letters) in the bottle.

• Scavenger Hunt — Go on a scavenger hunt, and have your children collect items for their personal bottles.

• Bingo — Create two or more identical bottles, and arrange pictures of the trinkets in random fashion on multiple bingo boards.

• Expert Level — Use trinkets of one color and camouflage them by dyeing the filler the same color.

TRINKET IDEAS:

Screw the lid on well. I personally prefer not to seal the bottle, so that we can switch things around every once in a while. But for little children, lids should be glued on since the trinkets could pose a choking hazard. In that case, use hot glue or super glue to seal the lid.

Laminate the reference paper, or use tape for at-home lamination. Alternatively, print your photo properly on photo paper. You can use a hole puncher and ribbon to tie the paper around the cap, or simply use a rubber band over the bottle to keep the paper handy. I prefer printing the picture in a size small enough to be glued onto the lid (I printed a wallet-sized print to fit a Voss lid). Use the method that works best for you.

What’s in that cup that makes consumers crave it? How bad is it for you, and is there some good among those curlies, too?

Cup Noodle Cravings It’s the go-to staple for many a young person, while camping, pre-test cramming or traveling.

There’s just something so soothing in the slurpable noodles and salty broth; it’s, like, addictive! Blame the infamous MSG for that factor. This additive can trigger the pleasure centers of the brain, teasing you to reach for the next cuppa.

Instant noodles are also chock-full of sodium, an excess of which is linked to a host of serious conditions such as high blood pressure, stroke, heart failure, kidney stones and stomach cancer.

But seekers of positivity will always triumph. Despite being low in fiber and protein, instant noodles in some places do contain several micronutrients — iron, manganese, folate and B vitamins — which come with their own list of health benefits. So if you live in Indonesia, where half of all instant noodles are fortified with the above health perks, you’re fine.

Noodle Nostalgia “Use your noodle” means “use your head.” No real allusion to noodles, except for the inference that people who aren’t thinking straight would have floppy heads.

Instant noodles were prefaced by noodles themselves, of course. Noodles are actually among the oldest known foods, though the word “noodle” was first used in 1765.

And if you use your noodle and hark back in history, the oldest recorded appearance of noodles dates back to Chinese legend around 2000 B.C.E. It was not the Chinaman, but another Asian player who invented the first instant ramen noodle. In fact, the Japanese believe their best invention of the 20th century is not the Walkman, Nintendo, or Pokemon, but instant ramen!

And yes, necessity is invention’s mother. Momofuku Ando, founder of Nissin Food, spent a full year researching and tweaking his flash-frying method in an effort to alleviate the food shortage in post-war Japan. After some try-and-fail, he produced Chikin Ramen in 1958.

Sold at six times the price of regular noodles at the time, this instant ramen was at first considered a luxury item — imagine that.

But times have changed, and the coveted noodles are available to all.

Now known as Cup Noodles — the official brand by Nissin, the Japanese informally call it gakusei ryori — student cuisine.

To Slurp or Not To Slurp?

The answer to that is actually reliant on geography. While Western culture deeply frowns upon any noise produced while eating, most Asians consider slurping their noodles an enhancement to the taste of their dish, and gracious compliments to the hovering cook as well! So if you take your noodles too seriously and find yourself being chased off by an irate neighbor at the table, you can hustle off to China and slurp all you like!

To Your Health!

Noodle soup fans, remember this: Most things can be enjoyed in moderation, and you can even make your occasional indulgence healthy! Ish. • Choose low-sodium noodles.

• Use ramen noodles as a base, and top them with some protein to fix yourself a more well-rounded meal.

• Throw in veggies (no, not the dehydrated ones in the packet!) to up the nutrition value.

While too much ramen can lead to all manner of adverse health effects, you can definitely enjoy your noodle soup as an occasional addition to an otherwise well-rounded diet.

Did You Know?

• The word ramen means Japanese noodle soup.

• Cup Noodles rose to fame during a hostage crisis in 1972, when in a tenday standoff between the Japanese police and the United Red Army, the Japanese cops subsisted mainly on instant noodles.

• Ramen noodles’ yellowish color and firm texture are credited to kansui, an alkaline mineral water. This lends the ramen its chewy texture and keeps it from absorbing too much stock.

• Ramen noodles do expire.

They last two to twelve months.

• Yes, you can eat them raw.

Actually, they’re not raw.

They’re cooked and blowdried and completely safe to eat out of the bag. In fact, that’s just what the Japanese and Koreans like to do: sprinkle the seasoning over the noodles, crush the block of pasta into small chunks, shake the bag and enjoy it as a snack.
