MORE ON MRSA

I know there’s been a lot said on MRSA already, but I recently listened to a lecture by a dermatologist who said something very interesting, and I wanted to share it. He said that atopics — people with the trio of asthma, eczema, and allergies — don’t really contract MRSA. These people, he says, have a special antibody that protects them from the infection. While I don’t have the medical experience to back up his statement, it is interesting to note that the three “atops” in my family haven’t gotten MRSA, but the other two are currently struggling with it. So, I guess that’s good news for atopics!

Reading Sun on Stone, I feel bad for Malkala. No, I don’t feel bad for Malkala in the story as she is a fictitious character, but I do feel bad for all the other “Malkalas” — men and women, traveling for hours, collecting for days. I understand that the author is trying to convey to the readers that Israeli meshaluchim are real people with real feelings. However, Malkala in the story is portrayed as a not-very-stable woman who listens to no reasoning. She

Your Voice him down for a nap, but I found his linen covered in strawberry compote! Compote? In the crib?! It didn’t end there. Every room was a disaster, and of course, the floor was still covered in sticky gobs of Simchas Torah candy. In one of the kitchen cabinets I found six bottles of honey; four of them empty. The rest of the cabinets were turned upside-down in disorder. There was ketchup splashed across my kitchen blinds, my dustpan was missing, and every single negel vasser cup was coated in some sort of black slime. Then there were two bottles of shoe polish splattered over all of my laundry room walls, shmattes were piled up all over the house, and the bag that I usually keep those shmattes in was full of random toys. Every single game we own had the pieces mixed with other games, and even my china closet had clearly been used as plaything for the renters’ children. This ordeal was very frustrating (and somewhat comical to see what people can come up with!), and I learned something valuable: Get a lot of really good references before letting someone rent your house! And if you are guest, please leave the place pristine! S.S.

Sneezin’ season? Let’s wage war against the allergy season! Smiling Herbs Allergy Relief™ is the key to a sniffle-free experience.

It was time to purchase a high riser. The morning I was planning to buy one, I put it on my To-Do list for later in the day. First I sat down to eat breakfast and read the ads in a magazine. To my amazement, listed as a free giveaway was a high riser. I called the number, sure that someone had already taken it. The woman said that I was the first call she received. There had been a typo, and the first three numbers of her phone number had mistakenly not been printed. I had automatically dialed the numbers as I expected them to be, not realizing that they were listed differently. So the wrong number became the right number! The lady had a top high riser that was 39 inches and the bottom part was 33 inches. It worked out well for me, since my mother had once given me a top part of a high riser that was 33 inches. I figured I would pair up the two 33-inch high risers and leave the 39 inch out like a regular bed. This only went to prove that the high riser was just waiting for me to claim it!

A Yeshiva Life of Torah and Health By: Tanya Rosen, M.S CAI CPT

When I was a teen, I had never heard of a protein. I thought that potatoes were vegetables and that ice cream milk shakes with strawberry flavoring were fruits. However, many years have passed since then and times have changed. My kids can read a simple food label by age five and they certainly can tell you examples of proteins, starches, and different food types. (And no, this is not because their mother is a nutritionist!) It used to be unheard of to talk to kids about health and nutrition, whereas now it is completely acceptable and even encouraged! In my practice, we see children as young as five years old, and I find that every age group and each gender has its own challenges. One specific age group that has their own unique challenges are teenage boys. These boys have a very long day and eat a few, if not all, of their meals in yeshiva. So that’s where I step in. In this new column, we’re going to focus on bochurim, and teach them how to shape up while sticking to their rigorous yeshiva schedules. If you’ve got teenage boys that need to better their health, follow along and institute the diet and exercise plans. All bochurim who participate in the program over the following weeks will be entered into a raffle to win $100! So let’s start. I’ll give you tips to help your bochur make good decisions, eat optimally for health and energy, and I’ll give you practical suggestions for his everyday food intake and physical activity. Of course, please consult your pediatrician before beginning this or any diet program.

LET’S TALK LUNCH We’re going to start slow, this week focusing on

how to eat healthy, waist-friendly lunches in yeshiva. Next week, we’ll add in breakfast and supper. Lunch is challenging because it is eaten in yeshiva and not all boys are comfortable bringing their own food, so I’ll give some suggestions for how your son can manage with what yeshiva has to offer. I like for people to have a very balanced and filling lunch, which consists of a starch, a protein, a healthy fat, and vegetables. So, what about yeshiva

VEGETABLES: I allow unlimited vegetables on my plan anytime of the day, whether with a meal or in between, but I always want it to be part of lunch and dinner. Starchy vegetables, though, should be limited to two tablespoons a day (examples: corn, peas, butternut squash, etc.) and are not “free.” If your yeshiva boy is not interested in coming to school with a salad bowl (can you blame him?), send along easyto-munch-on cut-up vegetables like cherry tomatoes, cucumber sticks, baby carrots, celery sticks, etc. Incorporate the fat either as a dip, a dressing, or on the bread. Next week we’ll talk about the other meals and what your son should be eating at each of them.

He had colored the walls of his bedroom with his crayons that morning, and she must have discovered his “artwork.” Should he go to her? If he went, he knew she would reprimand him for what he had done. She would likely punish him as well. Perhaps she would take away his crayons for the rest of the week. Surely she would make him help scrub the walls. Maybe he would even be placed in a timeout as well. But none of these consequences frightened Moishy as much as the angry scolding his mother would give. “Moishy, I know you can hear me! Get in here now or it will only be worse for you!” Moishy trembled harder. Not listening to his mother when she called would indeed make matters worse for him, but try as he might, Moishy could not bring himself to go to his room and face his mother’s wrath. He was rooted to the spot.

In this week’s Parsha, Hashem commands Noach to bring the animals into the teiva, but the instructions Hashem gives him and the language Hashem uses appears to change. In one place, Hashem commands Noach, “Meiha’of l’mineihu umin hab’heimah l’minah mikol remes ha’adamah l’mineihu sh’nayim mikol yavo’u eilecha l’hachayos

mate…” (Bereishis 7:2) Rashi explains that these seven pairs were to be brought along so that Noach could bring them as korbanos after the mabul would subside. Why in one place are the animals to be pairs of all animals, whereas elsewhere the animals are to be seven pairs of only kosher animals? And why in one posuk does it say that the animals would come on their own, but in the other posuk it says Noach should take them? The Ramban explains that only those animals that were destined to survive would come on their own, but those animals that were coming into the teiva only to be shechted as korbanos would have to be captured and taken in. Hashem would not cause these animals to come on their own. (Ramban on Bereishis 7:8-9) The Ramban does not explain further, but one can see the amazing chesed of the Ribono Shel Olam, for it would be a bit cruel to cause an animal to lead itself to its own death. We can take a great parenting lesson from this. If so much care was taken not to be cruel

When the cookies are ready, call the children to you. When it is time to leave on a trip, call the children to you. But if you intend to punish a child, go and get him; do not call him to you.

– From each bird according to its kind, and from each animal according to its kind, and from each creeping thing according to its kind, two of each shall come to you to stay alive.” (Bereishis 6:20) A little bit further on, we see a similar command given, but with a few changes: “Mikol hab’heimah hat’horah tikach l’cha shivah shivah, ish v’ishto… – Of every clean animal take for yourself seven pairs, a male and its

by calling an animal to its own harm, how much more so should we take care not to call a person into an unpleasant situation. When the cookies are ready, call the children to you. When it is time to leave on a trip, call the children to you. But if you intend to punish a child, go and get him; do not call him to you. Returning to the story of Moishy and his mother, imagine if Moishy’s mother only called him for pleasant things, such as cookies, or a trip in the car. Moishy would not fear running to her when she called. But when Moishy misbehaved, his mother would come to him, and he knew she meant business. It is not always realistic for a parent to do this, especially when there are other children at home, but it is worthwhile keeping this lesson in mind and trying to implement it as often as possible. Besides avoiding cruelty, this method is also more realistic. Asking a child to come to you for punishment is asking the child to go against his nature. Every creature on earth is born with an instinct to protect itself and avoid pain, so calling a child to punishment is asking the child to be stronger than his instincts and his very nature. May we always have the wisdom and the strength to parent our children with love and sensitivity.

Possible Name Change for Ramapo Central School District? Hoping to disassociate itself from the troubled East Ramapo School District, the Ramapo Central School District is exploring the possibility of a name change. Theresa DiFalco, president of the RCSD, said that the district’s request was submitted because the similarity of the two names often results in mix-ups between the two adjacent districts, reported The Journal News. “We receive inquiries from the media, from members of the public and from other school districts that are actually intended for East Ramapo,” said DiFalco. DiFalco said that even Google confuses the two districts, giving information about East Ramapo instead of Ramapo Central approximately 40 percent of the time. If the request is approved by the state, the new district would be known as the Suffern Central School District.

The district, which has a population of approximately 4,800 students, encompasses Suffern, Airmont, Montebello, Hillburn, Sloatsburg, and parts of Monsey. “By naming ourselves the Suffern Central School District there will no longer be any confusion as to our identity and we will clearly be distinguished from our neighboring school district,” said DiFalco. Historically, the two districts shared the same name for approximately 20 years until the East Ramapo name was created in 1973. Reaction to the request for a name change to the RCSD was mixed, with some residents hoping to distance themselves from the difficulties that plague East Ramapo while others saying that there was no real need for the change. Assembly Seat in 98th District Is Hottest Local Race

With just days left until Election Day, one local race is almost as hotly contested as the battle for the Oval Office, as the chasidic Rockland County Legislator (Reb) Aron Wieder faces off against incumbent Assemblyman Karl Brabenec in a fight for the Assembly Seat in the 98th District. In addition to running on the Democratic, Independence, Women's Equality, Green, and Reform lines, Wieder (known to the heimishe community as Reb Benzion Wieder) has managed to wrangle the Conservative line away from Brabenec, a Republican also running on the Tax Cuts Now line. Among the areas in the 98th District are parts of Spring Valley, Montebello, Wesley Hills, Monsey, Kaser, Monroe, and Kiryas Joel. When it comes to the thorny issue of the East Ramapo School District, Wieder noted that while tremendous strides have been made recently in the ERSD, the district is being unfairly underfunded by the state, which

46

/ T HE MONS E Y V IE W

considers East Ramapo to be a wealthy district based on local property taxes. Wieder has observed that while extra funding allotted to the district has been helpful, those monies are only in place for the current school year, leaving East Ramapo with an uncertain future. Wieder's mission is to continue fighting for more funds. Brabenec supported a bill that called for greater oversight and funding for the district and would give the state comptroller the authority to make recommendations that could only be overridden by a supermajority of the school board. Wieder has voiced support for Hillary Clinton in the presidential race, saying that she proved her worth during her time as a senator. Brabenec is endorsing Donald Trump, saying that the billionaire businessman would use his business acumen to create jobs, lower spending, and replace Obamacare with a healthcare system that would encourage competition, a move that would benefit consumers.

ELECTION NEWS

By Ruchel Lebovits

FBI REOPENS CLINTON INVESTIGATION On Friday, October 28th, FBI Director James Comey sent a letter to congress to advise them that he had reopened the investigation into Hillary Clinton’s emails, having received new data while investigating the computer belonging to former congressman Anthony Weiner and his wife Huma Abedin, who is a close aide to Clinton, on unrelated charges. The Clinton campaign was immediately up in arms, calling the move “unprecedented” and “deeply troubling,” and demanding the FBI release the emails to show that there was no new information present in those emails that hadn’t been seen by the public already. The FBI responded by saying there are some 165,000 emails, and it could take them weeks to review them all. Whether or not this will ultimately affect the election results, this new development just added another twist to a roller coaster election season that has seen poll numbers swing wildly from one candidate to another from week to week.

OBAMACARE PREMIUMS HURTING AMERICAN POCKETBOOKS AND HILLARY CLINTON In the past couple of weeks, many insurance companies under the Affordable Healthcare Act, better known as Obamacare, have sent out letters to policyholders detailing the new premiums for the upcoming year. And overwhelmingly, they have been significantly higher than existing premiums. Some states have been hit harder than others. For example, in the state of Arizona, premiums are going up by an average of 116%! And where the multiple scandals failed to affect poll numbers for either candidate, the pain in their pockets seemed to have given many Americans pause. Hillary Clinton, who had a sizable lead over Donald Trump just two weeks ago, slipped below Donald Trump in the latest polls in Arizona. And these numbers have been re-

flecting in other important battleground states too, as well as nationally. It reaffirms, once again, that while voters might turn a blind eye to a candidate’s personality or past, they will certainly take their financial future into consideration when casting their vote.

THREE BRANCHES OF GOVERNMENT UP FOR ELECTION While next Tuesday’s election will determine who will reside in the White House, it is not limited to the executive branch. As always in an election year, all members of the House of Representatives as well as a third of the Senate are up for reelection. And this year, with the vacancy left by the death of Justice Antonin Scalia in the Supreme Court, as well as the advanced age of some of the other sitting justices, the party elected to the White House and Senate will also determine the face of the judicial branch for many years to come. As many of you know, the U.S. Federal Government is divided into three branches. The executive branch is headed by the president and vice president, who are voted in by the Electoral College every four years, and includes the Presidential Cabinet. The executive branch is currently controlled by the Democrats. The legislative branch is made up of the two houses of Congress, the House of Representatives, the lower house, which is divided according to state population size and is reelected every two years, and the Senate, the higher house, which has an equal number of two representatives per state and has a rotating voting system where a third of the House gets voted for every two years. The Republicans currently have the majority in both houses of Congress. The third branch is the Supreme Court, to which nine justices are appointed for life-long terms, selected by the president and approved by the Senate. Justices are generally not affiliated with political parties, but will have strong views about how to interpret the law. More conservative justices will look to the Framers’ intent when writing the Constitution and will

hand out rulings accordingly. The more liberal justices believe that the Constitution is a living, breathing document that should be interpreted according to the times. The court is currently divided evenly, with four justices holding conservative views and four liberal. The justice that will replace Scalia will be the tie-breaker. Here is how the election results will affect the branches of government: Scenario 1: Hillary wins and Democrats gain control of the Senate. That would mean that the newly appointed justice will be with a liberal leaning and will give the Democrats control of all three houses. CHAPTER 13

Sun on

Stone By Chany Rosengarten Recap: Malka’la wakes up very sick. Gella doesn’t hear from her guest all day, and finally, when it’s night, she unlocks the guest room and finds an immobile Malka’la. Malka’la was hot. Very hot, a pot of broth left to warm in a hot towel. Baruch Hashem, she wasn’t cold. She is burning up. She is sick. The obvious, the shocking, was often harder to perceive, to take in. She… got sick. Now she was feverish. Her unresponsiveness, her temperature, the tortured rigidity of her body even in her sleep, terribly alarming. So that was the dark slime on the floor. And the smell. And the soundlessness of Malka’la. Gella shook the frail woman “Can you hear me?” Malka’la was so thin, she could be rattled effortlessly; even the marrow in her bones might weigh less than another’s. But Malka’la merely moved a facial nerve, did not respond. Gella ran a towel under the sink, placed it on the woman’s small forehead. She was helpless in the face of illness. One of the first things Hitler took from her mother, who couldn’t pass it on, was the traditions of heal-

ing, the wisdom of natural medicine, passed from grandmother to mother to daughter, generations of secrets for how things work. But water, she knew. And Tylenol; they had done enough marketing to replace all insight with a magic white button. The timing was right, for a generation that was left bereft of other, more intuitive solutions. The wet towel warmed up on Malka’la’s head, and Gella removed it again, to rinse it. The smell was making her gag, and she would have loved to close the door on Malka’la and the helplessness and leave it for Natasha to clean tomorrow morning, but she would never sleep knowing her house was absorbing more of it, and it couldn’t be good for Malka’la either, to be inhaling this unpleasantness. So she brought a rag with soap and water. She also brought a Tylenol tablet and parted Malka’la’s lips, and forced it between the woman’s teeth. She bent down, and tried very hard

not to breathe, not to think, but to swipe and collect and unhook gunk from between the carpet hairs, and to wash it away with the lemony soap, and when it was all collected, she washed the carpet again, with a hard-bristled scrub brush, so no vestige of dirt remained. She clenched her teeth and scrubbed, as she would for her own child, and when she poured the foul water down the toilet, she finally allowed herself to gag. The room was straightened up, Malka’la was still asleep. “Malka’la, wake up.” It was midnight. She should let her sleep. But she hadn’t heard movement all day. The woman looked possessed by the fever. Gella felt fear. She draped a wet towel over Malka’la’s feet, noting that the woman had never even changed out of the clothing she had arrived in. Was the clothing wet? Was that what caused the illness? Or maybe it was the going out in the freezing cold, for

over an hour, in a sweater! She should have never let her. She should have told her, insisted, admonished… But now, what could she do? Malka’la shivered, the Tylenol drooling out of her mouth in a half-dissolved white mess. “Eibishter, I really can’t take this. Make her okay,” Gella begged. She couldn’t live with the re-

sponsibility. It was only a fever. People got sick once in a while. But this woman was so thin. And so unused to the cold, and the illnesses on this continent. And so vulnerable. Who knew what it was; her lungs, her brain, it could be anything. She wasn’t taking chances. “Wake up. Wake up.” She ran up the stairs, and woke her husband. “She’s unresponsive,” she babbled. “I tried waking her and she’s hot and she wasn’t out of bed the entire day and—” “Gella, call the ambulance. She’s going to the emergency room.” Her eyes grew rounder. Her own hysteria was one thing. Having Zalman, usually collected in matters of importance,

order an ambulance, sobered her up to the fact that this was potentially dangerous. “Don’t forget she has no insurance. The emergency room will have a doctor for her, free.” “Is that why you think she should go?” “She doesn’t have insurance. You said she needs a doctor.” “I meant Doctor Zussman.” Men! To place pragmatism in a painful situation was to cheapen it into mere calculations. “She can’t be schlepped. She needs… care.” She was so… thin. Like a butterfly captured by pudgy hands. “A house call is what she needs.” “It’s the middle of the night. And she doesn’t have insurance. You said she needed emergency care. I can take her to the hospital.” “I don’t know.” They’d have to wait for hours before anyone looked at them. Malka’la would have to sit there, and in her current state… Gella had really wanted reassurance from

wasn’t responding. “Mama?” Gella tried. Malka’la stirred. She shifted in her bed. Her eyes were barely open and she pulled the blanket higher unto herself. But she was still a mother. Gella placed a newly moistened towel on her head. Malka’la murmured something incomprehensible. It was the middle of the night. It didn’t make sense

Now, safety came before privacy; she needed to remember that, always. Safety before privacy. her husband. Not being spit out into a busy hospital corridor. But if the situation was serious enough then… but no. She had to go downstairs to check. Maybe it was just a cold. Or even pneumonia. Everything was healable. She opened Malka’la’s door again, gingerly, lest Malka’la be up, and if she was, this was a real intrusion on her privacy, but now, safety came before privacy; she needed to remember that, always. Safety before privacy. The room was clean now, and everything was completely untouched since Malka’la had arrived, aside from the suitcase she’d stashed in the closet, and hadn’t even opened yet. “Malka’la?” she asked gently. She was breathing, but she

to wake her and drag her out in the cold. Tomorrow, she would call the doctor, who would come check on her, and prescribe something. She would buy it, in cash; it was worth it, it needed to be done. In the meantime, she sat on the other bed, keeping vigil. The night passed like clouds, wisps of sleep and awareness moving through at a rapid and slow pace. In the morning, the doctor came. He prescribed strong antibiotics. Gella used her womanly powers and Zalman paid. A week went by. Gella nursed Malka’la back to health with consistent dedication, feeding her chicken soup every night, and farina every

morning. One day, Malka’la was strong enough to stand up and walk around, and Gella found Malka’la sitting at the desk, eating a yogurt. “You’re eating farina. I’m cutting you a salad. You are not eating cold yogurt.” “I can’t eat too much. And you said I should come to supper. I’ll come to supper,” Malka’la said. Gella laughed. “That was… before. So much has changed since then. Please allow me to cook breakfast for you.” Malka’la came out to the kitchen. She still felt faint if she walked for too long, so she held onto the wall. Her appetite was returning, and she was hungry. She sat at the kitchen table. From the bay window, the snowy backyard was an expanse of calm, not the whipping beast it was when she confronted it. “I’m here for over a week. And I have nothing to show for it.” She ate, and for the first time, she tasted. The food was warm, good, sweet — indulgent. She felt a wave of nausea rise. “You were in danger. And you’re not going out now.” “I can’t. I can hardly walk… But how can I not?” To be continued... Chany Rosengarten authors columns and serialized novels in leading publications. Community Outreach Center Launches

“Keep our Community Clean” Initiative It is with great excitement and anticipation that we announce our latest public initiative: “Keep our Community Clean”. Having launched the extremely successful recycling initiative over two years ago, Community Outreach Center, in conjunction with the Town of Ramapo and the Interstate Waste Services, has designed its new project in response to the many letters and photos submitted by area residents depicting the garbage strewn streets and sidewalks in our area. It’s hard to believe the deplorable conditions actually exist in our once beautiful and unspoiled surroundings. We want those days back! The initiative will be focusing on several phases of re-beautifying our town. The initial phase will target public education as to the proper handling of garbage, beginning with a strong statement that garbage cans and recycling bins do not belong at the curb all week long! They must be kept near the garage door or house or in a specially designed enclosed area only, at all times except for pick up days. Only the evening before garbage pick-ups can the cans be brought to the street, and they must be removed from the curb as soon as the garbage is removed.

2012 Ramapo’s Annual Community-Wide Chometz Burning “Keeping Ramapo clean has always been a priority of mine,” said Town Supervisor Christopher St. Lawrence. “I’m excited to launch this initiative in conjunction with Community Outreach Center to make Ramapo a more pleasant place to live and visit.”

Rabbi Hersh Horowitz, Executive Director Community Outreach Center, said, “This Supervisor Christopher P.ofSt. Lawrence campaign will create a great Kiddush Hashem, and we’re hopeful that the community will respond and participate enthusiastically.” Deputy Supervisor Frances M. Hunter

We are truly hopeful that residents will follow the directives, as cooperation will definitely resultBoard: in a cleaner town, and no one will miss the paperJ.and wrappers flying around on Town Yitzchok Ullman, Patrick Withers, windy days. on or around a full garbage receptacle. If your garbage can is overflowing, it is time to get an additional container. In addition all garbage cans must have a lid, and the lid must be closed on collection day.

FRIDAY, APRIL 6, 2012 And of course, we are hopeful that code enforcement officers will not need to issue penalties going forward. However, the code enforcement units will aggressively patrol and those who will not abide by the rules will face harsh penalties.

After weeks of preparing, cooking, and assembling festive meals, we all deserve a break. That said, most baal habustas still aim to have a nourishing meal ready to serve their families. Oven-baked suppers are the perfect solution. Although they are not a super-quick fix, cleanup is a cinch. Enjoy!

66

/ THE MONS E Y V IE W

Have supper ready on time, using this simple countdown:

Start preparing chicken at 2:15.

Place in oven at 2:30.

Proceed with apples, and at 2:40 they’ll be ready to join the chicken in the oven.

Prepare zucchini in the pan, and set aside.

Chop peppers and check rice, and set aside.

Be ready at 3:00 for the bus arrivals.

At 4:00, remove apples from oven and start baking rice and zucchini.

At 5:30, your supper will be ready to be served.

This supper serves six adults, or two adults and eight children.

HONEY GARLIC CHICKEN A moist chicken with a twist of flavor

6 chicken quarters 3 T. honey 2 T. lemon juice 3 cloves garlic, crushed, or frozen garlic cubes 3 T. oil or mayonnaise 1 tsp. paprika ½ tsp. salt ½ tsp. black pepper

68

/ T HE MONS E Y V IE W

1. Mix all ingredients, and baste chicken, reaching under skin to allow chicken to absorb flavor. Make sure chicken is well coated. 2. Place in a 9x13” pan. 3. Bake, covered, for 2-3 hours on 350°. For crispier chicken, uncover for the last half hour. 4. Spoon gravy over chicken before serving.

BAKED CONFETTI RICE

The pepper in this rice adds both flavor and color. Feel free to omit if your kids don’t do the veggie thingie.

1 ½ cups Uncle Ben’s white rice 3 oz. oil 1 garlic, crushed, or a frozen garlic cube ½ yellow pepper, finely diced ½ red pepper, finely diced 1 T. kosher salt ½ tsp. sugar 1/4 tsp. white pepper

70

/ T HE MONS E Y V IE W

Make sure you have boiling water on hand. Using hot water to bake your rice will result in a fluffier, less pasty dish.

1. Place vegetables and oil in pan. Allow to bake uncovered for ten minutes. 2. Add rice and continue toasting another 10-15 minutes. 3. Add three cups boiling water along with spices. Cover pan with foil. 4. Bake for 45 minutes on 350°. 5. Remove from oven. Allow to stand for five minutes, and fluff with fork.

ZUCCHINI SPEARS This dish adds a touch of pizzazz to the simplest menu.

You can also do this recipe with peeled zucchini.

2 medium zucchini, approximately 8 inches long 1 T. light olive oil 1 tsp. dried basil 1 tsp. salt Âź tsp. white pepper

1. Cut zucchini in half lengthwise. Cut each half into three strips lengthwise. Cut each strip in half. For larger zucchini, cut into approximately 4-inch spears. 2. Place in parchment paper lined 9x13 pan, and spread oil and spices over zucchini. 3. Bake covered on 350° for 40 minutes. 4. If your oven has a top broiler, uncover and broil for 5-7 minutes before serving. Otherwise, put your oven on highest setting and bake for ten minutes.

BAKED APPLES

November is peak season for winter apples and cranberries. Take advantage of our local Cortland variety. They bake beautifully and permeate the house with a homey aroma.

1. Wash unpeeled apples and core. 2. Drop 4-5 cranberries into each cavity.

6 medium Cortland apples 1/3 cup fresh or frozen cranberries 2 T. brown sugar ½ cup grape juice

3. Sprinkle 1 tsp. brown sugar for each apple over cranberries. 4. Pour grape juice over apples. 5. Bake, uncovered, for 1 hour and 20 minutes on 350°. 6. Spoon syrupy sauce over apples before serving at room temperature.

• Cranberries are tart. For a sweeter filling, drop 1 tsp. of your favorite jam into each apple cavity. The jam will probably leak out but it will flavor the apple. • If you don’t have an apple corer, do it like my mother did it. Wash apples, place into pan, prick with fork, and pour filling ingredients over apple. • Even young children can prepare this dessert from start to finish.

the past, the season of fall was a time to harvest and preserve as much foodstuff as possible before the cold weather set in. Families would spend many long hours during this season, cooking, pickling, drying, and canning, as their year-round access to food depended on it. With the advent of refrigerators, freezers, and readily available fresh, canned, frozen, and packaged foods, we no longer scramble to stockpile for the winter during this season. Today’s impatient mentality that needs customer service lines and supermarkets available at all hours just doesn’t appreciate the painstaking process of preserving food at home. Yet, many homemakers do opt for the time-honored methods of food preservation, tapping into the preservative-free, natural, and quality-control benefits that are in the fruits of their own labor. So which foods work with canning? Anything, really, if done right.

FRUIT PRESERVES

Although in this day and age, many summer fruits are a common sight in the fruit stores and supermarkets around the year, some fruits have a short domestic season. Even though you may find them in supermarkets when they aren’t being harvested locally (due to specialized storage techniques and importation), their prime flavors peak during certain months. Fruit preserves allow you to enjoy those flavors throughout the year. I N S E A S O N N OW :

CRANBERRIES: can be cooked and sweetened to make cranberry preserves, a delicious combination of tart and sweet flavors that enhances many dishes. APPLES: Late-season or win ter apples are great for cooking (and also last a long time in the fridge). Among the late-season varieties is Cortland — applesauce’s best friend. Cook alone or with plums, peaches, pears, or frozen strawberries for delicious flavor. While the domestic blueberry season already wrapped up late September, the fresh blueberries on the store shelves imported from Chile and Argentina are just as good as the local summer varieties. Create BLUEBERRY JAM with them. They are delicious with blintzes, pancakes, and just about anything.

SHABBOS FOOD The first time I watched a soup being taken out of the freezer, I was afraid to taste it. Growing up, our freezer was used for challos, slabs of marble cake (double wrapped), raw poultry, meat, flounder fish, and the occasional tub of ice cream. Vegetable soups, chicken soups, and definitely fish and kugel were prepared fresh, the day they were served. And fruit compotes of all colors were lined up on the kitchen counter in assorted sizes Ball jars. And then life (and attendance at meals), became unpredictable, with couples popping in without notice, and families canceling

wo scenarios: First, you notice your baby is rubbing his ear. He's fussy, too, with a runny nose, and a temperature of 101 ° F. Otherwise, he seems fine.

Second scenario: He's pulling on his ear and crying. You're having trouble soothing him. He's not playing, and his fever's been hovering around 103 ° F for two days. Should you take him to the doctor? It's probably a good idea. Though its important to understand how it occurs and if you can prevent them. There is a tiny tube called the Eustachian tube that runs from the middle ear to the throat. Every time you swallow, this tube adjusts the pressure in your ear and drains the accumulating fluids; this is the reason your ears “pop” when changing elevation and why it can be painful to fly when your nose is all stuffed up. When you have a cold, your ears accumulate fluid just like your nose, but if the Eustachian tube becomes blocked, the ear cannot drain, and fluids becomes trapped. You feel pressure and don't hear as well. In infants and young children, the Eustachian tube is shorter and more horizontal than in adults, making it harder to drain and easier for bacteria from the nose and throat to reach the ear. When a child gets an upper respiratory infection, inflammation causes the Eustachian tube to swell shut and trap the fluid, and possibly bacteria, in the middle ear. The first scenario described previously is called otitis media with effusion (OME). This is the medical term for a buildup of fluid in the middle ear. It is most often caused by

at the last minute. The pot of soup was sometimes so vast and endless, and at other times, the end was near, yet the plates not full. That is when my mother decided that she could do with extra ready food on hand — and a means of storing the surplus. The freezer, as wonderful as an invention it is, just does something to the texture of food. The extra moisture it collects and chemical changes it undergoes leave their effects. It just wouldn’t do for my mother. But why wouldn’t a Mason jar do the trick? When one of the kids canceled on Thursday, while the fish was already cooking, the experiment began. While the fish was still piping hot, four slices of salmon were transferred to a Ball jar. It took a few nearburns, and some bruising to the slices, but eventually they were laid out in the jar together with a chunk of gefilte fish. The hot fish sauce was poured in to fill the jar, the rim was dried completely, a new lid was placed on top and the ring screwed over the lid. A few minutes later, the domed seal status indicator showed that the vacuum was created and the jar was properly sealed. Two weeks later, when there were no guests for Shabbos, cooking fish slipped off my mother’s list. On Shabbos, she opened the sealed jar of fish. It tasted fresh and delicious, as good as two weeks earlier. In search of a method that will not break the fish, the experiment is ongoing. Sometimes the fish is transferred to the jar once it has cooled, and reheated in a water bath — in a pot of water over a flame — until the jar is properly sealed. Once, the fish was placed into the jar while still raw and then cooked in a water bath. When canning just two slices of salmon, the widemouth cans which come only until the 1-pint size can be used, which allows the fish to go in smoothly. At other times, the salmon slices can be wrapped in a piece of parchment paper, so they can easily be slipped in and out of the jar. Chicken soup is much simpler to can. The vegetables and chicken are not quite as delicate and the broth can be poured in hot. And when the time of use arrives, no defrosting is necessary — just pop the jar open and heat. The same can be done with any type of fruit or vegetable soup.

viral upper respiratory infections or allergies. The second scenario describes another type of childhood ear infection called acute otitis media (AOM). This is the medical term for the rapid onset of inflammation in the middle ear, which usually causes pain, redness of the eardrum, and fever. There are certain signs that suggest an ear infection, such as: The ear canal is red, swollen, or filled with pus; the eardrum is red and bulging; or there is a hole in the eardrum. Older children pull on the affected ear, and infants become very irritable. Severe AOM occurs when there is moderate to severe ear pain and a fever of 102.2 ° F or higher. Many physicians will prescribe an antibiotic for severe AOM. If you decide to give your child the antibiotic, make sure you give it for the full amount of time on the label. Stopping the treatment midway can lead to the development of resistant strains of bacteria and make the next infection more difficult to treat. And any time your child takes antibiotics, make sure to supplement with probiotics both during treatment and for at least six to eight weeks afterward. The American Academy of Pediatrics (AAP) now recommends giving parents the option of waiting 48 to 72 hours to see if symptoms resolve on their own before using an antibiotic. This is because roughly two-thirds of kids with AOM will get better without them. and also because antibiotics are overprescribed, particularly in children, leading to resistant bacteria and infections that are difficult to treat. Antibiotics are prescribed if a child worsens or fails to improve in two to three days. The AAP recommends offering over-the-counter pain relievers, such as children's acetaminophen or ibuprofen, and monitoring a child's temperature, they are fine for short-term use (two to four days). When the pain is under control, children are more likely to eat, drink, and sleep, all of which help them heal. Treating an Acute Ear Infection naturally Ÿ

Nasal irrigation. One of the most important things you can do to prevent and/ or treat an ear infection is to keep the nasal passages as clear as possible if there are any signs of a cold or upper respiratory infection. This will help the Eustachian tube stay open, and reduce the number of bacteria in the nose and throat.

Ÿ

Immune support. echinacea & goldenseal drops are one of many ways to give the immune system a boost.

Ÿ

Zinc and vitamin C. Because most ear infections are associated with upper respiratory infections, using zinc lozenges for children old enough to suck on them, and giving extra vitamin C (250 milligrams 2 to 3 times a day) will help with both.

Ÿ

Ear oil. There are many excellent ear oils on our shelves. these oils are typically made with mullein flowers, garlic, and/ or St. John's wort, and can help ease ear pain.

CANNING CANS AND CAN’TS:

CANNING FOR T R AV E L :

When traveling, glass is highly impractical and unsafe to use. Whether your destination is one without kosher food options or you have other reasons to bring your own meals, you have the option of vacuum sealing your food in aluminum cans. (The importance of using these less fragile containers was highlighted when a family member of mine went to the baggage claim upon her arrival to see that one of her suitcases had split open and cans were rolling all over, clanking and banging as they bounced down the conveyor belt. And they were still intact and edible after the adventure.) There are various types of can sealers, the most affordable of them being the Hand Crank Can Sealers, which start at about $300. They are fairly easy to use and the job doesn’t take long.

MEAL IDEAS FOR CANNING:

• Meatballs and spaghetti • Sloppy joe mix • Cream of chicken soup or vegetable soup with chicken • Beef and potato stew

84

/ T HE MONS E Y V IE W

• While the bands on Ball jars are reusable, the lids are intended for single use when canning. The lids get deformed when pried open, which can prevent them from sealing properly. • There are wide-mouthed canning jars that can be used for freezing. Don’t use the jars with shoulders, as these jars will break due to the expansion that happens when food is frozen. Kerr and Ball jars are marked with a freeze fill line that’s about an inch below the rim. • When home canning with Mason jars, once cooled, the band should be removed to prevent residual water between the jar threads and the lid from rusting the band. • Be careful with glass and extreme temperatures. As glass expands as it heats up and shrinks as it cools, glass can crack when suddenly cooled or heated. Don’t pour hot liquid into a cold jar; let the warm vapor warm up the jar before pouring heated food into it. Don’t try cooling off a jar with hot food by letting it run over cold water or placing it into the fridge or freezer. • With the two-piece lids, screw the band fingertip tight, and do not use force to tighten further. In order to create a vacuum, hot air must be able to escape the jar, and buckled lids will get deformed if the air tries to force its way out, and they may not seal properly.

Esrog Preserves By P. Samuels

86

/ T HE MONS E Y V IE W

Other than cholent, I do not know of any food that has as many varieties as esrog, whether you use it for compote, jelly, preserves, or eingemacht. My mother, a”h, made hers dry — the drier the better. (Imagine how many rolls of paper towels were used in the days when I still cooked forty or fifty esrogim as per her method!) My mother-inlaw’s recipe is for a jelly-like concoction, adding one lemon to two or three esrogim. Two of my daughters-in-law (who happen to share a grandmother) make a type of compote with quinces. My process of making esrog eingemacht starts before Sukkos. I have a beautiful mesh basket that I like to fill with esrogim to hang in my sukkah. On Erev Yom Tov, my sons go to their favorite esrog dealer and bring me some of his leftover stock: mostly posul ones that he couldn’t sell. One year they brought me more than a hundred esrogim. Being the good mother-in-law that I am reputed to be, I very generously shared the largess with their wives. One of the cardinal rules of cooking esrog is to remove all the pits, as they are said to add an unpleasant bitterness to the final product. My husband uses a Yaneva (Geneva) esrog, which is full of pits, and I have no choice but to painstakingly remove each one. But I did put my foot down on the posul esrogim. Please bring me Moroccan esrogim exclusively, which are pitless. Only after spending a few hours removing pits,

can you appreciate the difference. The first step in cooking esrogim is soaking them, and changing the water every day. When anyone asks how long to soak the esrogim for, I answer, “Either when one esrog becomes moldy, or when the bucket sitting on your counter makes you nervous and you want to get rid of it.” To peel or not to peel is the next question. Again, that depends on the recipe and technique you are following. Then comes the process of cooking, changing the water (to avoid bitterness), and finally adding the sugar. Is it two cups of sugar to three esrogim or three cups to two? Enjoy the wonderful fruity, citrusy esrog aroma while you are working. How to store is the next issue. Freezer containers and ball jars both serve the purpose. My nephews love esrog in any form. It doesn’t matter if it’s a Hungarian, Polish, or Sephardi recipe. If it’s esrog, they will eat it. My sister makes huge batches, and then she tries to hide some for Tu B’shvat. She even resorted to disguising the containers. She thought she had found the solution, until once, her son, then a teenager, told her, with a wry smile “Mommy, the parve vegetable soup you had in the freezer was absolutely delicious.” So now, while your esrogim are still holding up, is prime time to preserve them for Tu B’shvat, when you will enjoy the fruits of your labor.

Esrog Jelly • 3 esrogim • 2 cups sugar • 2 lemons 1. Peel esrogim and lemons. Slice thinly and remove pits. 2. Cover esrogim with water and bring to a boil. As soon as it boils, pour off water and replace with fresh, cold water. Change the water this way three or four times. This removes the bitterness from the esrogim. 3. After the final change, cook on a small flame until soft enough to mash slightly with a fork (approximately ¾ to one hour). Pour off water, and lay esrog on paper towels to dry slightly. Return to pot and add sugar, cooking on low flame and stirring often. After fifteen minutes, while the esrog is still a light gold, add the lemons. Then, continue to cook on a low flame and stirring until it turns to a medium to dark golden color.

A JARRING HISTORY • Way back in the 1700s, Napoleon had a major problem: His forces were fighting in far-flung locations, and food spoilage presented an issue. He offered a reward of 12,000 francs to anyone who could come up with a solution. Fourteen years after the contest began, a young Nicolas Appert stepped forward to claim the prize. His method? The new technique of jarring.

• Though not the most common pastime, home canning still has a following today — though, really, it should be calling “home jarring,” as most people use glass Mason jars to preserve their food.

• Appert’s jarring method used champagne bottles that were sealed closed with a mixture of cheese and lime.

• To get started canning, you’ll need basic supplies like Mason jars, boiling water for sterilization and general heating of the jars, and for sealing them tightly shut in a water bath. And food, of course.

• Several years after jarring was introduced to the world, tin was substituted in place of the breakable champagne bottles, creating the first batches of canned food.

• There are several methods to canning, some of which include cooking the food inside the jars, while other methods involve transferring already cooked food into the jars.

• Unfortunately, can openers weren’t yet in existence, even though canned food quickly became the primary way to preserve food in the army. In order to open the cans, soldiers had to figure out how to smash them open with a bayonet or stone — each and every time they wanted to dine. • Canning/jarring quickly spread to the general populace, and during wartime, canning always saw an upsurge, as homemakers turned to preserving local produce. Nowadays, canned and jarred foods are par for the course, though most people buy their products from the grocery store.

ARE YOU A FAN OF THE CAN?

• So, how does the canning method preserve food? Heating food to high temperatures and removing air from the jar inhibits dangerous microorganism growth. The specific temperatures that food must be heated to varies according to the pH (acidity) level of the food. • Foods high in acid, or that have acid added to them (like pickled vegetables), are able to be canned through regular boiling methods. Low acidic foods — like meats, dairy products, and many vegetables — must have the cans sealed inside of a pressure cooker to inhibit microorganism growth.

YOU CAN CAN — BUT SHOULD YOU? Jarred or canned food can be considered either one of the safest methods of food preservation, or one of the most unhealthy, depending on various factors involved. Here’s a few:

Food preserved in metal cans can last anywhere from one to five years without turning rancid. In fact, food can often last even longer than the expiration date. The oldest known canned food determined safe to eat was 109-year-old canned food culled from a shipwreck. After all that time, there was no trace of dangerous microorganism growth.

Bulging can? Throw it out! Incorrectly processed canned food can contain deadly spores of C. botulinum, a bacteria that causes the paralyzing illness called botulism. Those affected by this condition experience severe muscle weakness and other symptoms, sometimes even fatal respiratory tract compromise.

Naysayers of canning say that the vitamin content of canned vegetables is greatly depleted. Others, however, point out that this is only in regards to specific vitamins, like C. With proper handling, many vitamins can be preserved during canning/jarring.

Some foods are cooked directly in cans or jars, causing migration of potentially toxic components of the container into the food. BPA is commonly found in canned food and certain brands of glass jars. It can cause disruption of the endocrine system, leading to hormonal imbalance. For this reason, food in metal cans should not be consumed often, and canners should buy BPAfree jars for home use.

Non-acidic foods that are jarred without use of the high temperatures found in a pressure cooker can contain deadly microorganisms. Home canners must be wellversed in food pH levels before jarring, and know the correct temperatures and lengths of cooking/ sealing times for various foods.

Of course, fresh is best, but when properly preserved, canned food can be a valuable resource!

The Income Factor in Mortgage Approval the last two years. Stability of employment is a factor, as well as whether there have been gaps of employment and large increases or decreases in salary. Technically, if you get a new job, we would need a letter of employment and the first paystub. We ultimately will need the complete one month, even post-closing.

by Ann Zeilingold Is equity, or even liquid assets, enough to get approved for a mortgage? The answer is a resounding “No!” for the conventional mortgage loan, which is the typical loan for a regular borrower looking to get a purchase mortgage or even to refinance. Even when refinancing, sometimes people may be lowering their monthly payment, and they may have never been late, and they may have liquid assets in the bank, but notwithstanding, the rules are the rules and even common sense does not prevail. If you cannot show the proper amount of income, demonstrating the ability to repay the mortgage loan even in a refinance situation, the loan will be denied. Many questions come up when it comes to income, and while some of them are easier than others to answer, because some are basic guideline questions, others are gray, and the answers are determined by underwriter discretion. What is underwriter discretion? An underwriter is the individual employed by the lender who makes a determination whether a loan should be approved or denied. It goes without saying that every file has to initially be approved through an automatic computergenerated approval, and only after that basic requirement is met is the file reviewed by a human underwriter. And besides for the file qualifying strictly on ratios and assets, they have to make a decision if the employment seems stable, likely to continue, and if the credit, income, and general stability of the file is one that should be approved or not. Let’s try to answer some of the questions often asked: What happens if I get a new job? We would have to review the entire income history, usually over

112

/ THE MO NS E Y V IE W

What happens if I get a raise at work? We use the current income, even if you recently got a raise. The problem is that an excessive increase of income can raise a “red flag” and further clarification may be required, such as a written explanation from the employer.

The rules are the rules, and even common sense does not prevail.

What happens if I am leaving my job and starting a new one in a few weeks? We would need a contract of employment with the new job in order to close your loan. Again, the underwriter will review it, and we take a common sense approach. What happens if I am purchasing a home and go on maternity leave? Some programs will allow you to close while on mater-

nity leave if the employer puts in writing that you will have your job back and when you are coming back. Otherwise, you would have to wait until you have the first pay stub once you go back to work. What happens if I change professions? This falls under the category of stability of employment. If you have gone to school or another form of training for the new position that can be documented, then it is most likely okay. Again, we use a common sense approach. What happens if I get a new second or additional job? If you have never had a second job before, the income cannot be used. If you have had a second job continuously over the last two years, we will average the income earned.

have to document a two-year history of employment or training for work. We will document schooling, internships etc. What if I work for a familyowned business? You would need to have filed at least one tax return with the income received before we can use the income. Because the answers to the above questions are not always clear cut, they can’t always be answered succinctly. This is precisely why it is so important to work with an experienced and skilled mortgage loan originator. The guidance that is offered is unparalleled, and it could make the difference between getting an approval or a denial.
