oth deckel • 1 beef brisket, first-cut (4-5 lb.) with such as chuckrib. or top of the • Extra-virgin olive oil • 1 tablespoon kosher salt, plus more for seasoning • Coarsely ground black pepper • 3 large carrots, cut into chunks • 1 onion, halved • 2 celery stalks, cut into chunks • 1 head garlic, cut in 1/2 • 1 (28-ounce) can whole tomatoes, hand-crushed • 3/4 bottle dry red wine • 1 bay leaves • 1/4 bunch fresh thyme, leaves only • 4 sprigs fresh rosemary, leaves only • 1 handful fresh flat-leaf parsley
Directions
Preheat the oven to 325. Drizzle brisket liberally with olive oil then season the meat on both sides with salt and pepper. Place a large pot over medium-high heat and add olive oil. Place the brisket in the pot and sear on both sides to form a nice brown crust. Remove from pot and set aside before adding carrots, onion and celery. Brown vegetables, then add the garlic, tomatoes, red wine, bay leaf, thyme, rosemary, and parsley. Place browned vegetables and brisket in pan, cover and roast in the oven for 3 hours until the brisket is fork tender. Remove the brisket to a cutting board and let it rest for 15 minutes. Slice brisket across the grain and serve with vegetables.

Last year a Canada Goose made her nest upon our metal awning. She laid six eggs and five goslings hatched one Shabbos morning in the springtime. This year, as is common with animals, she returned to establish her nest yet again. Rain or snow, she worked to pile as many branches, leaves and other materials together to build another nest this year. After its completion, she laid five eggs. Each morning my family and I would look outside and see her sitting on top of her nest, warming her eggs. Occasionally she would wander away in search of food, and my children enjoyed leaving food outside for her, greatly anticipating the day the goslings would hatch and peek out of their eggs. Unfortunately, to our great dismay, one afternoon when we were out on a family trip, a group of children came and not only disturbed the goose, but smashed her eggs as well, killing the premature goslings. The next morning, when my children peeked outside of the window expecting to find the mother sitting on her eggs, they were greeted with the sight of dead goslings, torn out of their eggs. Instead of celebrating life and nature with my young children, I had to teach them about animal cruelty and destruction. I have been deeply hurt by what occurred on my property. I’m hurt because my children cried, because it pains me to see the mother goose vocalizing and looking around for her offspring, because nature was so disrespected, and because there is not enough awareness of the beauty of Hashem’s creations. Please remember and teach your children that Hashem created each and every creature, and that it is a mitzvah to appreciate and respect nature and wildlife. A Distraught Mother

REFLECTOR REMINDER I’d like to remind the Monsey community about the importance of wearing reflectors in the evening if one will be walking outside. Last week I was witness to a traumatic event in which a driver hit a man that was crossing the street. It was just starting to turn dark and the man was wearing all black. He was virtually invisible. Even after I heard the screech of tires and a “thump,” I was barely able to make out the man lying on the road. I thought he was a damaged garbage can. Only when I overheard the driver saying into his phone, “I hit a man!” did I realize what happened and ran to call Hatzolah. Watching them work on the unresponsive man really made the message hit home: it nevers pays to take chances near the road. Not with kids out playing, and not with adults out walking. Please watch your kids and wear reflectors! A Traumatized Community Member
SOME PERM ADVICE FOR DIYERS Thank you for your feature on perms. It was very charming and interesting to read. As someone who’s been doing perms for years, I’d like to point out two things that your readers might find helpful. I find that using less rollers results in a more natural curl. I generally use three rollers and the hair doesn’t frizz up and falls more naturally than when I use more rollers. Also, when curling the payos as part of the morning routine, I find that using the middle finger as opposed to the index finger to curl the payos around, makes the payos curl at a straighter angle and it is also easier to pull out the finger in this manner. IT WAS LATE THURSDAY NIGHT and just as I was headed off to sleep, my phone started to ring. I went to check it and saw that my friend from Lakewood was calling. With great excitement, she told me she had found a worm while checking her barley. She knew I would appreciate her call because I had called her a few months before to tell her about my finding a worm in a dried apricot I had checked. We had spoken about how even though it is unpleasant to find a worm, it feels good to know there is a reason for checking our food. She said she’d put the barley on her counter and at first, the worm was curled up so she had almost missed it. She felt it was pure hashgacha pratis that she saw the worm. Then, out of curiosity, she put the barley with the worm in a container and filled it with water (the way I was taught to check). To her surprise, the worm did not float up to the top of the water. That next Shabbos, I changed the way I checked my barley!

Becoming Weigh Smarter High-Protein Smoothies to Try This Spring THESE DAYS, IT SEEMS LIKE HIGH-PROTEIN DIETS are more popular than ever. If you visit your local grocery store, you will likely find an assortment of protein-enriched cereals, bars and even oatmeal. Protein is a very important nutrient. Of course, one of the best ways to meet your daily protein requirements is by eating solid foods like fish, chicken, meat, eggs and dairy. That said, we all have days when we’re running around, and there’s simply no time to sit down for a meal. That’s where high-protein smoothies come in. Another time protein smoothies are beneficial is right after a workout. HIGH-PROTEIN SMOOTHIES: PROS While you exercise, your muscles get tiny tears in the tissue — and it’s up to you to help heal those micro-tears after your workout. Because solid foods take more time to digest and break down the protein before sending it to your muscles, it is best to consume a protein shake immediately after your workout. Protein shakes only take about 30 minutes to reach the muscles after ingestion. I definitely see the advantages of consuming a shake after a workout. HIGH-PROTEIN SMOOTHIES: CONS One reason I don’t like protein shakes is because they’re overused, and that many people treat them like a substitute for solid foods. Some believe that protein shakes are actual meal replacements, and a number of companies approve of this practice — but here’s the catch: Most people I talk to don’t stay satisfied for long after drinking a smoothie instead of eating, say, chicken or fish. In addition, if you want to burn fat, then it’s best to eat ingredients that take a long time to digest, such as traditional high-protein foods and vegetables. Isn’t it nice to burn calories simply because your digestive system is working? A portion of chicken will re-

For this reason, I don’t encourage protein shakes or smoothies as regular meal replacements, nor would I want your body to get so used to liquids that you’ll have a hard time digesting solids. I’ve heard countless stories about people living on protein shakes, but in reality it’s simply not a sustainable dietary practice. Most people will start overeating and gain back all their weight, or put on more than they lost in the first place. I think you get my point — drinking a single shake after a workout is highly recommended, but it’s important to still consume regular meals. And when time is an issue — in the morning when you’re catching the bus, or in the afternoon between lunch and dinner — the occasional protein shake is a great option. Another thing to consider is to prepare (or purchase) only pure, allnatural protein shakes and smoothies. I highly recommend organic ones, but the drawback is that it can be difficult to find organic options that taste good. I often drink organic smoothies for their health benefits, but I don’t love every variety I try. In addition, you can consume protein shakes made from whey, which are dairy. Some whey protein shakes practically taste like milk-

Correspondingly, I would like to share a few different ways you can make your protein shake into a delicious smoothie. You can always purchase a shaker cup from a health food store, fill it with water or milk, add a scoop of powder, shake it up and drink your smoothie straight out of the cup. However, if you have a good blender and you want to treat yourself, try one of these three options: CINNAMON ROLL VANILLA SHAKE • 1 cup unsweetened vanilla almond milk • 1 scoop vanilla whey protein • 2 packets stevia • ¼ teaspoon vanilla extract
• ½ teaspoon cinnamon • 1 cup ice Add these ingredients in the order they are listed. Blend well and enjoy with a cinnamon stick, which can be used as a straw while providing a delicious flavor! COFFEE MILKSHAKE • 1 cup unsweetened chocolate almond milk • 1 scoop vanilla whey protein • 2 packets stevia • ½ cup water • ½ teaspoon coffee • 1 cup ice Add these ingredients in the order they are listed. Blend well and enjoy. FRUIT SMOOTHIE • 1 cup unsweetened vanilla almond milk • 2 packets stevia • 5 frozen strawberries (or any
berries of your choice) • 1 cup ice Blend well. The above three smoothie recipes are what I usually prepare for myself. However, there are no bounds when it comes to shakes and smoothies! Note that these are all low-carb protein shakes. If you add milk, bananas or higher-carb fruits, the carbohydrate count will automatically increase. If your weight is a not an issue, or if you’re preparing smoothies for kids who don’t need to watch their weight, then the carb amount can be higher. I hope you enjoy these smoothies, and that they encourage you to hit the gym more frequently!

Pay Attention, Distracted Drivers; The Textalyzer May Be Coming to New York DRIVERS WHO CAN’T put down their cell phones may soon find themselves out of luck if lawmakers in Albany pass a bill that would equip New York State police officers with equipment that would let them see exactly how a phone had been used in moments prior to an accident. The device, known as a textalyzer, is currently under development and would allow police officers to see which programs were open on a phone by using a cable to attach the driver’s phone to the textalyzer. No data would be downloaded from the driver’s phone and the textalyzer would show if a phone was being used in hands-free mode, which is legal in New York, as reported by VIN News. The textalyzer was developed by Westchester resident Ben Lieberman, whose 19-year-old son Evan was killed in a car accident in which he was a passenger in 2011. Months after his son’s death, Lieberman discovered that despite the teenage driver’s insistence that he had fallen asleep while driving, he had actually been texting
just before the fatal Orange County crash. Hoping to spare other parents the grief his family had suffered, Lieberman began working with a technology company to develop a device that would show recent cell phone activity, complete with a time stamp. Senator Terrence Murphy, whose district includes parts of Westchester, Putnam and Dutchess counties, is sponsoring the bill in the Senate, with a similar bill being introduced in the Assembly. Murphy said that he believes that like breathalyzers, which can prove whether or not a driver has consumed alcohol, the textalyzer can be a lifesaver, not just in New York, but throughout the United States. “We did a really good job of making drinking and driving a national effort; this needs to be a national effort,” said Murphy. Several other states are also looking into the use of textalyzers.

But it couldn’t be true. Surely this was just the fruit of bored, cherry-pitting minds. She had to see for herself. She held Faivel closer to her chest, and he squirmed his plump body away from her and onto the floor of the van. She bent down to retrieve him, sighing. He cried. What if it was really true? What would her friend look like? The buildings were now nearer, towering, blocking out things like sunshine, sky, clouds, even air, if they could. Their metal jaws spit and swallowed people in and out, in a hungry stream. The van lurched to a standstill, traffic. Bored, stressed people in yellow jackets directed traffic with a baton and a placard. The city. She missed it differently now. She missed it while missing also what it was the opposite of, the shtetl, the song of the Creator, not drowned out by human shouting. The air smelled of other people’s food, treif hamburgers roasting on the sidewalk carts, dog fur, the heady mix of the widely available chemicals of selfdestruction — coffee, cigars, sugar. Into the hospital they stepped, mother and baby sticking to each other with heat and sweat. The walls washed with anti-

Faivel was sleeping, and heavy. Henya clutched him to herself. Here was the room, 611. Here was the bed, draped in white. Twin hills were Bianca’s feet. Here was Bianca’s face, her eyes shut tightly. “Bianca?” Bianca’s eyes closed even more tightly, so that her long, dark lashes were nearly invisible between the folds of her skin. She was closing the window shades to self, tucking them closer to the window, when a friend is looking up to find her. “Bianca. Can you hear me? It’s… me. Henya.” Nothing moved. “And Faivel. We came.” “I shouldn’t wake you. I don’t deserve you,” she said sadly. It was true. It was really true. Is this what Henya wanted to see? She’d traveled in for this, to make the long sojourn back into what she had lost? She sat down on a visitor’s chair. The room was silent. The hall was silent. She sat, waited. Maybe her friend’s features would relax, fall into forgiveness or sleep. From down the hall came a growl, deep, like a hungry lion, ferociously human. She looked over at Bianca. Unresponsive. “Do you want me to leave?” The question hung in the still air. Reverberating around the room, answerless, a dove without a place to land in a world flooded, awash. “I should have never left you. I had no choice.” An excuse. No, a reason. No, an excuse. Was she the source of her friend’s angst? It couldn’t be solely up to her. So, a reason. But what was the point arguing with herself. Here was her friend. What had happened to her?

Merging the special flavors of long-time Shavuos classics, strawberry shortcake and cheesecake, this mousse is the ultimate dairy treat.
Shortcake Ingredients: 1 pound butter 2 2/3 cups sugar
10 eggs 1 T. vanilla sugar 1 tsp. salt
4 cups flour 1 T. poppy seeds (optional)
Strawberry Mousse Ingredients: 1½ cups D’vash heavy cream or non-dairy whip topping 1 T. cornstarch 12 oz. non-whipped cream cheese ½ cup sour cream 1 T. vanilla sugar 1½ cups confectioners sugar 1 Bakers’ Choice strawberry pastry filling
Directions: 1. Preheat oven to 350°. 2. Beat butter and sugar well. Add eggs and rest of ingredients. 3. Divide batter into two 9” round pans and bake for approximately one hour until toothpick inserted in center remains clean. 4. Beat heavy cream or whip on high speed until stiff. Add cornstarch and set aside. 5. Beat cream cheese, sugars and sour cream well. Add strawberry pastry filling and mix well. Slowly add whip until well combined. Assembly 1. Incidental aging of cheese in its packaging, when the aging has no impact on the cheese, can be disregarded. many of us are stumped by this all. “We wait six hours after meat — but after dairy?!” Yes, the Rema in Shulchan Aruch (Yoreh Deah 89:2) rules that one should not eat meat after eating hard cheese, and the commentaries on Shulchan Aruch explain that one should wait after eating certain cheeses, before then partaking of meat, the same amount of time that one waits after meat before dairy. What is the basis for this practice? Early poskim elaborate that the directive of the Rema — which actually originates from the Maharam and is recorded in the Mordechai (Chullin 687) and the Beis Yosef (Orach Chaim 173) — is directly connected to the reasons we need to wait after eating meat before consuming dairy. These same reasons apply to the case of eating certain cheeses before meat: According to Rashi (Chullin 105A d.h. “Assur”), one must wait after eating meat before partaking of milk due to the residual aftertaste of meat left in one’s mouth as a result of the meat’s fattiness (“meshichas ta’am”). Similar to meat, some cheeses leave a quite potent or noticeable aftertaste, and one should not eat meat after consuming these cheeses until first waiting six hours (or whatever amount of time one waits between meat and milk). But according to the Rambam (Hilchos Ma’achalos Asuros 9:28), the rationale for waiting after meat before dairy is due to the likelihood of meat being stuck in one’s teeth (“basar bein ha-shinayim”); any such meat requires time to dislodge or disintegrate before one subsequently may consume dairy food. Hence, after eating certain cheeses — those which are harder to chew and would likely adhere to the teeth — one should wait (six hours, or whatever one’s custom is between meat and dairy)

Based on this, it turns out that there are two categories of cheese after which one should wait before eating meat: (1) cheese with a noticeably potent aftertaste, and (2) cheese that is more difficult to eat and tends to stick to one’s teeth. Translated into real terms, poskim explain that cheeses which are quite pungent — such as bleu cheese, Limburger cheese and Camembert — should necessitate waiting (irrespective of these cheeses’ age). So too after cheeses aged approximately six months (Shach s.k. 16, on Yoreh Deah ibid.), which thereby acquire a hard and perhaps even a brittle texture, should one wait. How does cheese acquire a pungent taste or a very firm texture? The precise flavor of every cheese is the direct result of the cheese’s protein and fat being broken down. Specific bacterial cultures (healthy bacteria — don’t worry!), added to the cheese vat toward the beginning of every production, accomplish this task. The type of cultures and level of heat during production determine exactly how a cheese’s protein and fat will be impacted. As cheese ages (even for far less than six months), the cultures in the cheese continue their work and endow each variety of cheese with its unique taste. Unless a cheese is exposed to very high temperatures during production (high heat kills the cultures), the cultures are able to continue to operate on the cheese literally until it is eaten, engendering an even more potent flavor. (Once cheese is cooled and packaged, the effect of cultures at that point is generally lessened.) Cheese attains a firm texture solely through aging, for when cheese ages, it loses its moisture and hardens. That is why very aged cheese (such as Parmigiano Reggiano, aged 1-3 years, and extra sharp cheddar, sometimes aged up to 5–7 years) cannot be sliced and is exceedingly hard to chew, as these cheeses are dry as as bone. The more aged a cheese is, the more rigid and dry it is. RAV CHAIM YISROEL BELSKY ZT”L presented to me a few important parameters regarding the practical application of waiting after cheese: 1. There are some cheeses which are clearly pungent, such as Limberger (which is not currently available as a kosher cheese in the U.S. — but Rav Belsky re-

lated nostalgically how his father took him to the Lower East Side when Rav Belsky was a boy, where they purchased “the smelliest [kosher] Limburger cheese you can imagine” — or something to that effect). However, some cheeses may be less clear in terms of pungency, for our purposes, and the consumer needs to determine how potent these cheeses’ taste is in order to ascertain if waiting is needed. Rav Belsky discussed Danish Bleu (“Danablu”) cheese as an example of this. 2. Although there are different opinions in poskim, Rav Belsky, as well as Rav Hershel Schachter, ruled that only cheeses which must be aged approximately six months in order to develop into that specific type of cheese require waiting. 1 American cheese is legally called “processed cheese food,” and is not allowed to be labeled simply as “cheese.” The reason is that American cheese is made from varieties of cheddar, which are melted, mixed with emulsifiers, oils and colorings, and then hardened into blocks and sliced. The cheddar varieties used in regular American cheese are not aged long (certainly nowhere near 6 months), as they are typically of lower quality, whereas aged

I can zoom through the aisles and get what I need in record time. Accompanied by kids or husband? It’s a full-day trip… b. As long as it takes to write a list of 43 items. Phone orders are the best service known to mankind! c. You don’t want to know… There are so many variations of flavors, brands and prices! I mean, it takes me 15 minutes just to decide what type of yogurts to buy for the kids each week! One minute. Why are you even buying yogurt? Don’t you know you can make the most delicious versions in your very own kitchen for a fraction of the price? The process is super simple and your kids will feel mighty proud eating yogurt that Mommy made herself! Of course you’ll get all the health benefits of real, live, fresh
probiotics to boost your family’s overall wellness. Feeling intimidated in unchartered territory? It’s as simple as: • heating up milk • cooling it off • adding a bit of culture • pouring it into jars • letting jars sit warm for several hours Ta-da! You’ve got yogurt! Want some more details? Sure! Stock up on a gallon of milk, a cooking thermometer, and four quart-sized Ball jars. Feel free to halve the quantity if you worry you won’t be able to use all four quarts within a month.
Step 1: Heating the Milk In order to get the culture going, you’ll need to work with warm milk. When choosing your milk, keep in mind the type you use will affect the outcome of the yogurt. Goat milk will yield a thinner yogurt than cow’s milk, and raw milk will make the healthiest yogurt, but consistency will be very unpredictable. Whole milk makes a thicker, creamier yogurt than its low-fat counterpart. Take that gallon of choice and pour it into a heavy-bottomed pot to avoid burning and sticking. Cook milk on medium heat until the cooking thermometer inserted in the milk reaches 180 degrees.
Step 2: Cooling It Off 180 degrees is the desired temperature for making rich yogurt, but it’s still a bit too hot for the culture to thrive. Allow it to cool on the counter or in a sink filled with cool water until the thermometer drops to 115–120 degrees. (No,

you don’t need to babysit it. Go read a book. Or write a grocery list.)
Step 3: Adding the Culture The culture is good bacteria that spreads throughout the milk and turns it into, well, yogurt! If this is your first time making yogurt, add a cup of plain storebought yogurt to the milk (not vanilla, fruit flavored or with choco bits). If you’ve made yogurt already, you can use a cup from your previous batch to make a new one. Stir lightly so that the yogurt culture is spread throughout the whole gallon. Then, pour the milk into your quart jars and twist lids on.
you like your yogurt very thick and Greek-like, you can strain it through a cheesecloth to get rid of excess liquid (called whey).
Optional Step 5: Adding Your Personal Touch If you’ve never tasted plain yogurt before, you may be put off by the first lick. Adjust it to your preference by adding a bunch of goodies. Try drizzling honey or date syrup for a natural healthy sweetener, or add a handful of granola for extra crunch. You can add a variety of chopped or blended fruit like strawberries, blueberries, mangoes, bananas, etc. FEELING CONFIDENT with your yogurt-making skills? Maybe it’s time to cut out another item from your
Step 4: Incubating the Yogurt You’ll want to make sure the jars are nice and warm for a few hours to let the culture do its job. You can try one of these options: A) If you have a cooler, place the jars inside and fill ¾ way up with water that’s 120 degrees. Shut the cooler and leave it for three hours. B) Place jars onto the rack in the oven and close the door. No need to get the oven going! Simply put the oven light on (ideally 60 watts to keep temperature at approximately 110–115 degrees) and allow to sit overnight. C) Simply wrap the jars in a warm, thick blanket and leave it on the counter overnight. With any method, keep in mind that the longer it incubates, the tangier the taste will be. Transfer jars to refrigerator. The yogurt should be fairly firm at this point. It will firm up more in the fridge, though, so don’t panic if it’s still a little sloshy. If

grocery list. Try your hand at cream cheese! This first version is so easy to do, you’ll wonder why you ever bothered buying cream cheese before. Add a bit of salt to your homemade yogurt and pour it into a large cheesecloth or thin cotton cloth. Tie a knot on top to form a bag, and hang it overnight to dry. (You can tie it to cabinet knobs.) Make sure to put a bowl under the bag to catch all whey drippings. In the morning you’ll have a delicious creamy cheese waiting to be slathered over crusty bread! (This will yield a slightly tangy cheese, similar to sour cream.) This second version, a simple and easy farmer-style cheese, comes together quickly and is an excellent way to use up extra milk. Pour a gallon of milk into a heavy-bottomed pot and bring to a boil. When boiling, immediately reduce the heat to low, and stir in ½ cup vinegar. You will see it separating into curds and whey. Pour the mixture into a colander lined with cheesecloth and rinse curds gently with cool water. Sprinkle 2 teaspoons fine sea salt over the curds and tie it up into a bag. Hang for 1–2 hours, then open it up and chop it coarsely. It will last in the fridge for up to a week. Now, use the time saved on grocery shopping and make a cheesecake!

FOR ONE WHOSE PROWESS LIES IN THE KITCHEN, SHAVUOS IS THE IDEAL YOM TOV TO WHIP UP A STORM. WHEN IT COMES TO FOOD, each yom tov really has its own personality. Sukkos has us shlepping all the food outside to contend with fluctuating temperatures, raindrops falling into the soup and bees buzzing around the desserts — sending all the children, and even a few adults, running out of the sukkah, screaming in terror. And not only does Pesach require tons of preparations, it also involves a complete kitchen changeover, a limited ingredient list and somewhat daunting food restrictions. But Shavuos? Shavuos is when we get to relax and have fun serving (and enjoying!) the fruits of our labor. Not only is it not an overwhelming yom tov for the hostess because it only lasts two days, it is the only time where we have license to serve milchigs foods to our families without feeling guilty about calories. Besides, how can you not love cooking for a yom tov that has cheesecake as its centerpiece? While many of us revel in our cheeses and cheese products over Shavuos, there are plenty of others who forgo cheese for a variety of reasons. While some have dairy allergies that preclude eating cheese, others choose to avoid cheese because it is high in calories, saturated fat and cholesterol, and can cause weight gain and may lead to

increased risk of developing particular diseases. According to Dr. Neal Barnard, author of The Cheese Trap and president of the Physicians Committee for Responsible Medicine, cheese consumption has been linked to a variety of ills including heart attacks, Alzheimer’s disease, asthma, migraines and inflammatory conditions and an interview with Dr. Mehmet Oz, Dr. Barnard described cheese as “the biggest source of bad fat in the diet.” Thankfully, we live in a world where foodies keep looking to raise the culinary bar, which means that even those who have given up cheese can still enjoy the taste and texture of cheese in more ways than ever before. Fake cheeses, also known as cheese analogues, have become a big business, with analysts at the Mintel Group pointing to triple digit gains in vegan cheese sales from 2012 to 2014. Possibly the earliest pioneer in the kosher pareve cheese business was David Mintz, CEO of Tofutti brands which has been using tofu as the basis for a full line of Kof-K kosher certified dairy substitutes for decades. While Mintz first made a name for himself with Tofutti, a completely pareve, dairy-free ice cream substitute, over the years his product line has expanded to
include imitation ricotta cheese, American cheese and six different non-dairy cream cheeses. Former Monsey resident and Mishpacha magazine contributor Miriam Pascal incorporates pareve soy-based cream cheese into many of her dessert recipes as a way to add an element of richness to cakes and cookies. Dairy-free recipes for fabulous tasting cinnamon buns, rugelach, cheesecakes and mousses in her hugely popular Something Sweet cookbook all feature soy-based cream cheese as a key ingredient, and Pascal said that she finds that adding pareve cream cheese to a container of frozen non-dairy whip significantly ups the flavor quotient. “It really adds a milchig-like quality to the whipped cream,” said Pascal. For those looking to go beyond American cheese, there are other kosher certified brands of imitation hard cheeses. While some are soy based, others are based on tapioca and arrowroot and are available in a veritable rainbow of cheesy varieties including mozzarella, cheddar, pepper jack, Monterey jack, smoked gouda and jalapeno havarti. Naturally savory nutritional yeast is another great way to add cheesy flavor to your food without introducing any dairy content at all.
According to Bon Appetit magazine, nutritional yeast is regular baker’s yeast that has been dried out through pasteurization. The yeast breaks down into small flakes as it dries out, making it a very realistic substitute for grated cheese, and with its bright yellow color it even has a cheese-like appearance. Sodium-free, packed with protein and weighing in at a very svelte 20 calories, nutritional yeast offers authentic cheesy flavor that is completely dairy-free and best of all, can last for up to two years when properly stored. It seems hard to believe that cashews can make a good cheese substitute, but cashew cheese has been getting a lot of good press in recent months. Full of protein, B vitamins, calcium, magnesium and vitamin E, cashew cheese is made by soaking raw cashews in water for two to 24 hours before pureeing it in the blender or food processor with nutritional yeast, lemon juice, water and spices or herbs. By varying the amount of water in the cashew cheese you can create cheeses of different consistencies, with creamier cheeses working well in pastas and sauces, medium cheeses which can be used as dips or spreads, or even a thicker textured cheese that could be used as a stand in for cut-up hard cheeses. It is important to remember that cheese substitutes are exactly that, substitutes, and like so many other items that try to take the place of a certain food, some achieve that goal better than others. Some of the mock cheeses out there may yield a fairly close approximation of the particular flavor of a specific cheese but they may not do as good of a job of capturing the cheese’s texture. Others might get the texture exactly right but may fall short when it comes to flavor. My best advice? Head to the stores and see what is out there, or grab a bag of cashews and your blender and whip up a batch in your very own kitchen. The most expensive pizza was created by restaurateur Domenico Crolla to raise funds for curing blindness. It included an assortment of expensive toppings, among them sunblush-tomato sauce, Scottish smoked salmon and edible gold, and sold for $2,745.00.
We know pizza has its roots in Italy, but they don’t let just any counterfeit cover up as their bona fide product. The Italians go to such great lengths to safeguard their traditional pizza, that there is a bill before Parliament that specifies permissible ingredients and methods that must be implemented for a pizza to be called “traditional Italian pizza.” Frozen pizza doesn’t cut it, and will never get that title.
Pizza slowly made its way to Spain, France, England and the United States via Italian immigrants. It didn’t gain popularity until after World War II, though, when soldiers returning home wanted a taste of the food they had grown to love while fighting overseas. Here’s about the explosive introduction of this popular food! The world’s first pizza shop, name Port’Alba, was opened in Naples in 1830. Exercise is not only for weight loss. Exercise builds our energy levels. Usually, when people join my classes, they at first insist they can’t do more than eight jumping jacks, but week by week they see major changes in their fitness levels, and soon they’re keeping up with the class. These hesitant members are the ones who tell me after a while, “Wow, I was able to carry up my grocery boxes,” or “I raced my daughter, and I won.” Exercise is not just body work; it’s brain work, too. My motto, “Strong Body, Strong mind” is reiterated often in my class; there’s a lot of coordination involved in exercise, which strengthens the brain. Girls sometimes use testing seasons as an excuse to miss classes, when in reality it’s the best thing they can do for increased energy and brainpower. Your digestive system, lymphatic system, circulatory sytem, mus-
cular system, bone density all benefit from regular exercise. How can I motivate my teenager who’s struggling with weight to do her exercise?
The reality is that we can’t make our kids do anything. We can encourage them by being a good example, though. If your daughter is social, you can encourage her to exercise with friends. I often have groups formed by girls on their own, where they get to choose the class type, like: kangoo, interval training, and if it’s high or low intensity. Often the trick is to encourage your daughter to try it out for a short period of time, and she’ll learn to love it. Like I tell my participants, “Within the walls of our gym, nobody really cares how you look, and you’re not getting marked, so just keep moving, smiling and giving it all you’ve got.” When do you recommend private one-on-one sessions versus an aerobics group?
When starting out in our gym, I always at first recommend a private session for learning the movements and proper alignment before joining the fast-paced class. There are also those who benefit from individualized times, like seniors, people struggling with obesity or who went through surgery or other physical trauma. Then there are some goal-oriented women who want to work on specific areas in a short time period for whom one-on-one sessions are advantageous. Can exercise be harmful?
If exercise is not done properly, it can be harmful, or at least not good for you. That is why I strongly recommend an initial personal training session before starting regular exercise. As a rule, exercise should be challenging but not painful and should not be felt in the joints (knees, neck, back, wrist, etc.). I desperately need to lose weight, but it’s too difficult for me to make major dietary changes at this point. Can exercise itself do the trick?
it’s followed by a trip to the ice cream store or a high-calorie meal, while you may definitely gain other positive results, you won’t lose weight. The good news is that many who join an exercise class find that over time, they start making healthy lifestyle changes, and these positive habits (like drinking more water and eating healthier) together with the exercise make you feel better and also drop the pounds. If I’d like to work on just one part of my body, is it possible to tone that area or do I need the cardio?
While you cannot necessarily “spot reduce,” you can make sure that you work out in a way that goes into fat-burning zone versus just calorie burn. The best way to achieve that is through interval training, in which you are changing your intensity level as you go along while including toning, targeting that spot you want to reduce. I have been exercising a few weeks now and although I feel much better, the scale has not moved. Why is that?
Exercise can help you slim down and reshape your body by decreasing fat and increasing muscle. It can help you burn calories that you have consumed during meals, and some exercises can even rev up your metabolism that it’ll burn calories for you way after you finished your exercise routine. Exercise builds up your muscle tissue and helps combat muscle loss that can occur when you lose weight, It’ll surely help you stay with that “healthy look.” I know exercise is good for me but I can’t seem to put it into my busy schedule. Any ideas?
We all have time to do what we want to or need to do; it all depends how high on your list of priorities the particular thing is. DO YOU KNOW SOMEONE WHO’S ON A DIET? Sorry, I phrased that wrong. Corrected version: Do you know someone who’s not on a diet? Nowhere is there such controversy and confusion as on the subject of dieting. There are various opinions as to what should be omitted and consumed on any given weight-loss protocol. But diet is so much more than watching numbers go down on a scale. As I started learning about gut-healing foods, and those that hinder the progress, I was amazed how eating real, nutritious food can have such a drastic impact on a person’s health. While not leading the most health-conscious lifestyle, I always thought that I knew what it took to eat healthy. Delving into my research, I was shocked by all the things I hadn’t known about nutrition! So what makes the GAPS diet unique? The GAPS Diet is a temporary diet, which eliminates hard-todigest carbohydrates, harmful food addi-
tives, and foods that are difficult to absorb so the gut can seal and heal. It starts with a very restrictive, but intensely healing Introduction Diet, and then moves on to the Full GAPS diet with many healthy, nourishing food options. Fanatic attention to detail needs to be applied on the diet, and even a tiny cheat, especially in the introductory stage, can completely reverse any progress that has been made. Many who have tried dieting cannot bear to hear this. For close to a year you can’t ever give in to a craving? Well, you might have a hard time believing it, but after only a week or two, I completely lost my yearning for any craving or need to cheat. I had absolutely no desire to go back to my
previous eating habits! I was feeling so amazingly wonderful, and we were seeing so many positive changes in Shiffy and myself, that my husband asked me a few weeks later if he can join the club! Being on the GAPS diet, though super challenging in the first few days, was the most rewarding feeling we had ever experienced. (At one point my mother nearly had a panic attack when I told her I’d love to stay on it for life…) Okay, you’re saying, quit the rambling and cut to the chase. What exactly did you have to avoid? First and foremost, even before learning about different categories of foods and how they are absorbed by the digestive system, it was very clear to me that no processed food was allowed on GAPS! Let’s be honest here. In the era we live in, that’s almost asking for the impossible. We live in the age of ready-made convenience foods, which are highly processed. priate…) is one of boxed, canned, packaged and prepared foods, ready to go and be consumed at a moment’s notice. Apart from losing its nutritional value, all that processing causes food to lose taste, flavor and color, too. To compensate for that, various chemicals are added: flavor enhancers, colors, additives, preservatives. Food gets subjected to extreme heat, pressure, enzymes, solvents and other chemicals. Fats get hydrogenated and proteins get denatured. Natural foods get changed into a chemical concoction which is then packaged nicely and presented as “food.” Many of these chemicals have been conclusively shown to contribute to hyperactivity, learning disabilities, psychiatric disorders and other health problems. In a GAPS gut, especially, these chemicals further aggravate the issues and prevent proper healing. It disturbed me greatly to get such a gloomy picture on the entire processed food industry. The more I researched, probed and investigated, the worse were the facts that emerged. The climax came through amazing hashgacha pratis when we had the privilege of getting to know a man who had previously worked for the FDA. Upon leaving his position, he has made it his life’s goal to educate people and blow the whistle on the horrific fraud that is taking place in one of America’s most powerful agencies. It is a most corrupt system, with its main goal being to make more and more money! We were utterly shocked by the information, complete with live proof, of the money-hungry schemers, the lies and the lengths the FDA goes to cover up the truth. He showed us some hair-raising examples, proving that if something stands to give them fortune they will make anything legal no matter how deadly or unhealthy it may be. I’d like to share with you some of his words: “You may be under the illusion that the Food and Drug Administration employs officers and directors whose sole passion in life is to ensure safety for the benefit of mankind. When the curtain is pulled back, we see outrageously politically influential people whose greed and insatiable desire to make money is startling. “After years in the system all I have to say is this: If man made it, don’t eat it! What you put into your mouth should be as close to how nature intended it as possible. This rule applies to packaged foodstuff as well as fresh produce. Virtually everything you put into your mouth has pesticides, herbicides, chemical fertilizers, growth hormones, genetically altered material or chemical food additives. The same conditions apply to the meat and dairy industries.

Growth hormones, antibiotics and unfit feed come along with every byproduct of farmed animals. Even farmed fish have highly toxic feed to make them grow unnaturally fast to unnaturally large sizes. Everything we call food has been dramatically depleted of its nutritious value, giving our bodies way less than its needed sustenance. “If you read the labels of everything you put into your mouth, you would see the name of various unpronounceable ingredients. These are all dangerous man-made chemicals. If one were to ingest a large amount at one time, the effects would probably be fatal. These chemicals are produced in secret laboratories that have tighter security measures than Fort Knox! “Take MSG for example. It is an excitotoxin. (Excitotoxins are a class of chemicals that overstimulate neuron receptors. Neuron receptors allow brain cells to communicate with each other, but when they’re exposed to excitotoxins, they fire impulses at such a rapid rate that they become exhausted.). It makes you fat, causes all types of medical problems, affects mood and can cause depression. It is also physically addicting and makes you hungrier. Unfortunately, the food industry has lobbied Congress to pass laws allowing monosodium glutamate into food and not always be listed on the label. Dozens of words cover up for it, like spices, yeast extract,

artificial flavoring, hydrolyzed vegetable protein, etc. They are in fact MSG in disguise. MSG is also in all fast food, including pizza. And it’s not just MSG! Hiding dangerous ingredients behind innocent-sounding names fools consumers into thinking they‘re safe. The highly carcinogenic ingredient sodium nitrite, for example, sounds perfectly innocent, but it is well documented to cause brain tumors, pancreatic cancer, colon cancer and many other cancers. There are over 1,500 (!) ingredients that are allowed to be added to food without being listed on the label! Hundreds of people with severe allergies have had flareups and break-outs after eating innocent-looking items only to find out through rigorous investigation that it had contained trace amounts of the allergen without being listed on the label.” I didn’t know where to put myself hearing such information. Why is it being done and what interest does the FDA have in allowing these chemicals to pass inspection? The former FDA officer answered my questions very simply: “Manufacturers and food companies bribe the officials and lobby Congress to let them do as they please. They need these chemicals in the food. Remember, it’s all about the money. They need to produce food cheaply, quickly, make it last on the shelf to minimize spoilage, and have people buy lots of it constantly. In order to achieve that, food companies will have to preserve the food

along with the taste and texture. Many of these chemicals make you hungry and are extremely addictive, a surefire way to get the consumer to keep on buying more. The bigger the food manufacturer and the more popular the name brand, the higher the chance that it’s loaded with chemicals that aren’t listed.” In an ideal world, we’d be making all our food in our own kitchens. Or live on a farm. But that’s not always realistic. So, I ask, what can we do? “A good rule of thumb,” he answered, “is to read the label. If ingredients are not something you would have in your kitchen or if the food is not something you could make yourself, stay away. If you can’t pronounce the word, don’t buy it!” For me, that was all I still needed to hear. I dove into the diet and set up camp in my kitchen. All the allowed foods on the protocol were prepared from scratch, with love, in my own kitchen. From ketchup and condiments to bread and pickles, and everything in between. Ah, the pure deliciousness of real, pure, organic food! (This from the girl who would eat BBQ corn chips by the case…) It is impossible to be off processed foods and not feel a tremendous overall difference immediately! Yes, it was a huge undertaking, and quite a task to upkeep, but once I got the wheels in motion, I just settled into my new routine. It’s amazing how it’s all a matter of getting used to. But more than anything, a matter of true willpower. And this was just the beginning…

Real Estate Underwater Mortgages WHAT IS AN “UNDERWATER MORTGAGE”? And if a family finds itself in this position what are their options? Simply put, being underwater on a mortgage means the balance of the mortgage loan is greater than the fair market value of the home. This can happen when there’s a housing market downturn or an outright crash (as there was in 2008) that causes property values to plummet. For example, say one bought a home in 2007 for $400,000. Maybe by now, depending on the mortgage loan, the balance on the loan is $320,000, but if they tried to sell the home in the current market they may only be able to get $310,000. That would leave the seller still owing $10,000 on the mortgage with no down payment for their next home. Often, the best thing to do is sit tight and wait it out. But what if one can’t? What if their family is outgrowing the current home and they really do need to move on sooner than later? UNDERWATER MORTGAGE OPTIONS Basically, a lot of the options for getting out of an underwater mortgage hurt one way or another, even if one has great credit. Below are five paths one can take to get back on the road to financial stability. SHORT SALE: One could try a short sale, but that will show up in one’s credit history. Most lenders will not provide a mortgage loan commitment if one had a short sale within the last two to four years. Therefore one would need to wait to buy again until after the waiting period has passed. Clearly that would defeat the purpose if one is trying to find a new home as soon as possible. DIP INTO SAVINGS: Some people have savings and could cash out retirement funds or use other savings to make up the difference, but that could leave them with nothing (or close to nothing) for a down payment on their next home. Still, in that case, there are some very low down payment mortgage programs that may be an option. RENT OUT THE HOME: Perhaps the best option is renting out the home. Then a new home can be rented or purchased that

They didn’t have the equity in their home to sell and buy a new one, but they desperately needed two more bedrooms. They had seven kids in two bedrooms and it was affecting the whole family’s wellbeing. We used the “future value” to give them the funds needed for the renovation, and it is underway as this article goes to print. GOVERNMENT HAMP AND HARP PROGRAMS, are programs designed to modify or refinance a home that is underwater. If one is in this situation, they should speak to a team of professionals to get advice. Firstly, speak to a realtor to find out what the value actually is. House prices have gone up; it’s possible the loan is no longer underwater. Speak to a mortgage professional: What are the options in purchasing or refinancing? Speak to a real estate, foreclosure or bankruptcy attorney. One may need expert legal advice. In Issue #101, we will go into the options of the owner of a home with an underwater mortgage, who is not paying their loan and is facing foreclosure.
