MARLEY was dead: to begin with. There is no doubt whatever about that. The register of his burial was signed by the clergyman, the clerk, the undertaker, and the chief mourner. Scrooge signed it. Old Marley was as dead as a door-nail. This must be understood, or nothing wonderful can come of the story I am going to relate. Scrooge never painted out Old Marley’s name. The firm was known as Scrooge and Marley. Sometimes people called Scrooge Scrooge, and sometimes Marley, but he answered to both names. It was all the same to him. Oh! But he was a squeezing, grasping, scraping old sinner! The cold within him froze his features, nipped his pointed nose, made his eyes red, his thin lips blue. And he didn’t thaw one degree at Christmas. Once upon a time, on a dark Christmas Eve, old Scrooge sat busy in his counting-house. It was biting weather, and the fog poured in at every chink and keyhole. The door was open that he might keep his eye upon his clerk, who was copying letters. Scrooge had a very small fire. But the clerk’s poor fire looked like one little coal.
“A merry Christmas, uncle! God save you!” cried a cheerful voice. It was Scrooge’s nephew, come into the room. “Bah!” said Scrooge, “Humbug!” This nephew’s breath smoked in the cold. “Christmas a humbug, uncle!” he said. “You don’t mean that?” “If I could work my will,” said Scrooge indignantly, “every idiot who goes about with ‘Merry Christmas’ on his lips, should be boiled with his own pudding, and buried with a stake of holly through his heart!” The nephew answered, “Don’t be angry, uncle. Come! Dine with us tomorrow.” “Bah, humbug!” “But why?” cried Scrooge’s nephew. “Why cannot we be friends? Merry Christmas, uncle!” “Good afternoon!” said Scrooge. “And a Happy New Year!” “Good afternoon!” said Scrooge. His nephew even stopped at the outer door to wish season’s greetings on the clerk. “There’s another fellow,” muttered Scrooge; who overheard him: “my clerk, fifteen shillings a week, and a wife and family, talking about a merry Christmas. Humbug!” Scrooge’s nephew had let two other people in. They bowed to him. “Mr. Scrooge, or Mr. Marley?” said one of the gentlemen, referring to his list. “Mr. Marley has been dead these seven years,” Scrooge replied. “He died seven years ago, this very night.” “Mr. Scrooge,” said the gentleman,
taking up a pen, “a few of us are endeavouring to buy the Poor some meat and drink, and means of warmth. What shall I put you down for?” “Nothing,” said Scrooge. “I don’t make merry myself at Christmas and I can’t afford to make idle people merry. They can go to debtors’ prisons.” “Many would rather die.” “If they would rather die,” said Scrooge, “they had better do it, and decrease the surplus population. Good afternoon, gentlemen!” Seeing that it was useless, the gentlemen withdrew. Scrooge went back to his work. Meanwhile the fog and darkness and biting cold thickened. One cold young boy stooped down at Scrooge’s keyhole to regale him with a Christmas carol: but at the first sound of “God bless you, merry gentleman! May nothing you dismay!” Scrooge seized the ruler with such energy, that the singer fled in terror, leaving the keyhole to the fog. At length the hour of shutting up arrived. Scrooge nodded to the clerk, who instantly snuffed his candle out, and put on his hat. “You’ll want all day to-morrow, I suppose?” said Scrooge. The clerk observed that it was only once a year. “A poor excuse for picking a man’s pocket every twenty-fifth of December!” said Scrooge. “Be here all the earlier next
morning.” The clerk promised that he would; and Scrooge walked out with a growl. The office was closed, and the clerk ran home as hard as he could. Scrooge took his melancholy dinner in his usual melancholy tavern; and having read all the newspapers, and studied his banker’s-book, went home to his gloomy house. The yard was dark and the fog and frost hung about the house. Now, the knocker on the door was very large. Scrooge had seen it every night and morning. But tonight Scrooge, having his key in the lock of the door, saw in the knocker, not a knocker, but Marley’s face. Marley’s face. The eyes were wide open, and its grayish colour made it horrible. As Scrooge looked, it became a knocker. But he did look cautiously before he shut the door. There was nothing behind the door, so he said “Pooh, pooh!” and closed it with a bang. He walked through his rooms to see that all was right. Sitting-room, bedroom, all as they should be. Nobody under the table, or under the sofa. Nobody under the bed or in the closet. He closed his door and double-locked himself in. He put on his dressing-gown and slippers, and his nightcap; and sat See Carol, 3B

Rustic Minestrone 3 tablespoons Bertolli Extra Virgin Olive Oil, divided 1 small zucchini, sliced in 1/2-inch half moons 2 cups tightly packed, thinly sliced Tuscan kale leaves 1 jar (23 ounces) Bertolli Rustic Cut Three Cheese with Aged Asiago, Romano and Parmesan Sauce 1 carton (32 ounces) vegetable broth 1 can (15 ounces) cannellini beans, rinsed 1/3 cup shaved Parmigiano Reggiano cheese In 6-quart pot over medium-high heat, heat 2 teaspoons oil. Add zucchini and kale; cook, stirring frequently, about 1-2 minutes, or until kale begins to wilt. Reduce heat to medium; add sauce, broth and beans. Simmer 5-7 minutes, or until heated. Top with shaved cheese before serving. Tips: Substitute garbanzo beans, kidney beans, pinto beans or tri-bean blend for cannellini beans. He glanced upon a disused bell, that hung in the room. As he looked, this bell began to swing, softly at first; but soon it rang out loudly, and so did every bell in the house. It seemed an hour. The bells ceased, and he heard a clanking noise, deep down below; as if some person were dragging a heavy chain. The cellar-door flew open with a booming sound, and then he heard the noise coming up the stairs; then straight towards his door. “Humbug!” said Scrooge. It came on through the heavy door, and passed into the room before his eyes. The same face: the very same. Marley. The chain Marley pulled was long, and wound about him like a tail; and it was made of cash-boxes, keys, padlocks, and heavy purses wrought in steel. His body was transparent; so that Scrooge could see the two buttons on his coat behind. “What do you want with me?” said Scrooge. “Who are you?” “In life I was your partner, Jacob Marley.” The ghost sat down inside the fireplace, as if he were quite used to it. “You don’t believe in me,” observed the Ghost. “Humbug, I tell you! humbug!” At this the spirit raised a frightful cry, and shook its

chain. Scrooge fell upon his knees, and clasped his hands before his face. Asked the Ghost, “Do you believe in me or not?” “I do,” said Scrooge. “I must. But why do spirits walk the earth, and why do they come to me?” “It is required of every man,” the Ghost returned, “that the spirit within him should walk abroad among his fellowmen, and travel far and wide; and if that spirit goes not forth in life, it is condemned to do so after death. It is doomed to witness what it might have shared on earth, and turned to happiness!” “You are fettered,” said Scrooge, trembling. “Tell me why?” “I wear the chain I forged in life,” replied the Ghost. “I made it link by link, and yard by yard; and of my own free will I wore it.” Scrooge trembled more and more. “Would you know,” pursued the Ghost, “that the
chain you bear yourself was full as heavy as this, seven Christmas Eves ago? You have made it longer, since.” Scrooge glanced about him on the floor, but he could see nothing. “Tell me more,” he said, imploringly. “Speak comfort to me, Jacob!” “I have none to give,” the Ghost replied. “But you were always a good man of business, Jacob,” faltered Scrooge. “Business!” cried the Ghost, wringing its hands again. “Mankind was my business. The common welfare was my business; charity, mercy, and benevolence were all my business!” “I am here to-night to warn you,” pursued the Ghost, “that you have yet a hope of escaping my fate, Ebenezer. You will be haunted by Three Spirits.” “I—I think I’d rather not,” said Scrooge. “Expect the first tomorrow,” said the Ghost, “when the bell tolls One.”
“Expect the second on the next night at the same hour. The third upon the next night when the last stroke of Twelve has ceased to vibrate.” When it had said these words, the window raised itself a little. The spectre floated out upon the bleak, dark night. Scrooge looked out. The air was filled with phantoms, wandering hither and thither, and moaning as they went. Every one of them wore chains like Marley’s Ghost. They and their spirit voices faded away. Scrooge closed the window, and examined the door by which the Ghost had entered. It was double-locked, as he had locked it with his own hands, and the bolts were undisturbed. He tried to say “Humbug!” but stopped at the first syllable. And he went straight to bed, without undressing, and fell asleep upon the instant.

Chocolate Chunk Banana Bread Recipe courtesy of Justin Schuble on behalf of Bertolli Olive Oil 3/4 cup Bertolli Olive Oil, plus additional for coating pan 3 ripe medium bananas, divided 1/2 cup applesauce 1 large egg 1 large egg white 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 cup sugar 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 cup semi-sweet chocolate chunks or chips 1/4 cup nut spread Heat oven to 350 F. Coat 9-by-5-inch loaf pan with olive oil. In mixing bowl, mash 2 bananas. Add applesauce, egg, egg white and vanilla to bananas and whisk. In separate bowl, combine flour, sugar, baking soda, salt and cinnamon. Slowly add wet ingredients to dry ingredients and mix. Add olive oil slowly and mix until combined. Fold in chocolate chunks. Pour batter into loaf pan. Heat nut spread in microwave until it reaches pourable consistency. Swirl spread into top of batter. Thinly slice long, flat strips of banana. Add slices to top of batter for decoration. Place loaf pan in oven and bake 1 hour. Remove bread and cool before slicing.
1 quart water 6 bay leaves 2 tablespoons whole black peppercorns 1 tablespoon mustard seeds 1 1/2 cups kosher salt 1 bottle (750 milliliters) Riesling wine 2 large shallots, thinly sliced, divided 8 cloves garlic, crushed but left in skins 1 bunch fresh thyme, divided 2 cups fresh cranberries, slightly crushed, divided 1 turkey (16 pounds), giblet package and neck removed ice water, for covering turkey 1/2 cup Bertolli Mild Olive Oil salt, to taste pepper, to taste In pot, bring water, bay leaves, peppercorns, mustard seeds and kosher salt to boil. Stir until salt is dissolved. Cool to room temperature. Pour brine into 5-gallon stock pot or container. Pour in wine then add one shallot, garlic, thyme (reserving some for stuffing turkey) and 1 cup cranberries. Slowly lower in turkey. Pour ice water into pot to cover turkey. Place lid on pot and refrigerate at least 24 hours. Heat oven to 500 F. Remove turkey from brine, pat dry and stuff with reserved shallot, thyme and cranberries. Place turkey in roasting pan. Generously massage olive oil into skin of turkey. Sprinkle with salt and pepper, to taste. Use kitchen twine to tie legs together so turkey will keep its shape. Place in roasting pan and roast 20 minutes. Lightly brush skin again with olive oil, reduce heat to 350 F and roast until internal temperature reaches 155-160 F on meat thermometer. Allow turkey to rest, loosely covered with foil, 30 minutes before carving.

WHEN Scrooge awoke, it was dark. The chimes of a neighbouring church struck and Scrooge remembered, on a sudden, that the Ghost had warned him of a visitation when the bell tolled one. The hour bell sounded, with a deep, dull, hollow, melancholy ONE. Light flashed up in the room upon the instant, and the curtains of his bed were drawn. The curtains of his bed were drawn aside, I tell you, by a hand. And Scrooge found himself face to face with the unearthly visitor who drew them: as close to it as I am now to you. It was a strange figure—like a child, or like an old man, diminished to a child’s proportions. Its white hair hung about its neck and down its back, and yet the face had not a wrinkle in it. Its legs and feet were bare. It wore a tunic of the purest white; and round its waist was bound a lustrous belt. It held a branch of fresh green holly in its hand; and had its dress trimmed with summer flowers “Are you the Spirit, sir, whose coming was foretold to me?” asked Scrooge. “I am!” The voice was soft and gentle. “I am the Ghost of Christmas Past.” “Long Past?” inquired Scrooge. “No. Your past.” Scrooge asked what business brought him there. It put out its strong hand and clasped him gently by the arm. “Rise! and walk with me!” It would have been in vain for Scrooge to plead that the weather was bad and the bed was warm. The grasp, though gentle as a woman’s hand, was not to be resisted. They passed through the wall, and stood upon an open country road, with
fields on either hand. The city had entirely vanished. Now it was a clear, cold, winter day, with snow upon the ground. “Good Heaven!” said Scrooge, clasping his hands together, as he looked about him. “I was a boy in this place!” He was conscious of a thousand thoughts, and hopes, and joys, and cares long, long, forgotten! Scrooge wiped away a tear and begged the Ghost to lead him where he would. “You recollect the way?” inquired the Spirit. “Remember it!” cried Scrooge. “I could walk it blindfold.” “Strange to have forgotten it for so many years!” observed the Ghost. “Let us go on.” They walked along the road, Scrooge recognizing every gate, and post, and tree; until a little market-town appeared in the distance, with its bridge, its church, and winding river. Some shaggy ponies trotted towards them with boys upon their backs. All these boys were in great spirits, and shouted to each other, until the broad fields were full of merry music. “These are but shadows of the things that have been,” said the Ghost. “They have no consciousness of us.” The jocund travellers came on; and as they came, Scrooge knew and named them every one. But why was he filled with gladness when he heard them give each other Merry Christmas, as they parted! What was Merry Christmas to Scrooge? What good had it ever done to him? “The school is not quite deserted,” said the Ghost. “A solitary child, neglected by his friends, is left there still.” Scrooge said he knew it. And he sobbed. They soon approached a large house, its windows broken, and the many rooms poorly furnished, cold, and bare of food. They went, the Ghost and Scrooge, to the back of the house, and a long, bare room, with lines of desks. At one of these a lonely boy was reading near a feeble fire; and Scrooge sat down, and wept to see his poor forgotten self as he used to be. He said “Poor boy!” and cried again.
“I wish,” Scrooge muttered, looking about him, after drying his eyes with his cuff: “but it’s too late now.” “What is the matter?” asked the Spirit. “Nothing,” said Scrooge. “Nothing. There was a boy singing a Christmas Carol at my door last night. I should like to have given him something: that’s all.” The Ghost smiled thoughtfully, and waved its hand: saying as it did so, “Let us see another Christmas!” Scrooge’s former self grew larger at the words, and the room became a little darker and more dirty. And there he was, alone again, when all the other boys had gone home for the holidays. He was not reading now, but walking up and down despairingly. The door opened; and a little girl, much younger than the boy, came darting in, and put her arms about his neck. “I have come to bring you home, dear brother!” said the child, clapping her tiny hands, and bending down to laugh. “To bring you home, home, home!” “Father is so much kinder than he used to be, that home’s like Heaven! Pan-Roasted Pork Tenderloin with Roasted Vegetables and Apples Recipe courtesy of Chris Scott on behalf of Anolon Cookware Yield: 4 servings Anolon Accolade Saute Pan 1 tablespoon olive oil 1 pork tenderloin (8 ounces), cleaned salt, to taste pepper, to taste 3 carrots, peeled and cut into pieces 2 apples, cut into wedges 4 baby bliss potatoes, halved 1 leek, cleaned and halved 3 cups apple cider 1/4 cup apple cider vinegar 1/4 cup brown sugar Heat oven to 400 F. Heat saute pan over medium-high heat; add olive oil. Season pork tenderloin with salt and pepper, to taste, and sear on all sides until brown. In same pan, add carrots, apples, potatoes and leek. Reduce heat to medium and cook 3 minutes until vegetables have some color. Deglaze pan with apple cider, apple cider vinegar and brown sugar. Put pan in oven and cook 15 minutes. Remove pan from oven. Remove pork from pan and let rest on cutting board. Put saute pan with vegetables and liquid back in oven 3 minutes until liquid is reduced and syrupy. Vegetables should be well glazed when finished. Slice pork and plate. To serve, place glazed vegetables and pan drippings over meat.
Filling: 1/4 cup butter, softened 2 tablespoons ground cinnamon 1/2 cup sugar 1 cup dried cranberries 1 cup chopped pecans To make Cinnamon Rolls: In saucepan, combine milk, water, butter, cornmeal and salt; bring to boil, stirring frequently. Set aside to cool to 120-130 F. In separate bowl, combine 2 cups flour and yeast. Add cooled cornmeal mixture and, using mixer, beat on low until smooth. Add eggs and 1 cup flour; mix 1 minute. Stir in remaining flour, as necessary, to form soft dough. Turn dough onto floured surface; knead until smooth and elastic. Place in greased bowl, cover and let rise until doubled in size, about 1 hour.
To make Topping: In saucepan, combine brown sugar, butter and milk; bring to boil, stirring occasionally. Pour into greased baking pan. Sprinkle with pecans; set aside. Heat oven to 375 F. To make Filling: Punch dough down, divide in half. Roll each half into rectangle; spread with softened butter. Combine cinnamon and sugar; sprinkle heavily over butter. Sprinkle cranberries and pecans over top. Roll up dough from one side. Pinch seams and turn ends under. Cut each roll into 12 slices. Place slices cut-side down in baking pan. Cover and let rise until nearly doubled in size, about 30 minutes. Bake 25 minutes, or until golden brown. Remove from oven and let cool about 1 minute. Invert onto serving platter.

“Why, it’s old Fezziwig! Bless his heart; it’s Fezziwig alive again!” Old Fezziwig laid down his pen, and looked up at the clock, which pointed to the hour of seven. He rubbed his hands and called out in a, rich, jovial voice: “Yo ho, there! Ebenezer! Dick!” Scrooge’s former self, now grown a young man, came briskly in, accompanied by his fellow-’prentice. “Yo ho, my boys!” said Fezziwig. “No more work to-night. Christmas Eve, Dick. Christmas, Ebenezer!” cried old Fezziwig, skipping down from the high desk. “Clear away, my lads, and let’s have lots of room here!” It was done in a minute. The floor was swept, the lamps were trimmed, fuel was heaped upon the fire; and the warehouse became a snug, warm, and bright ballroom. In came a fiddler with a music-book. In came Mrs. Fezziwig, and the three Miss Fezziwigs, beaming and lovable. In came all the young men and women employed in the business, the housemaid, the baker, the cook, the milkman. Away they all went, twenty couples at once! There were dances, and games, and more dances, and there was cake, and there was a great piece of Cold Roast Beef, and there were mince-pies, and plenty of ale. When the clock struck eleven, this domestic ball broke up. Mr. and Mrs. Fezziwig took their stations, one on either side of the door, and shaking hands with every person individually as he or she went out, wished him or her a Merry Christmas. During the whole of this time, Scrooge had acted like a man out of his wits. He remembered everything, enjoyed everything. It was not until now that he remembered the Ghost, and became conscious that it was looking full upon him. “A small matter,” said the Ghost, “to make these silly folks so full of gratitude.” “Small!” echoed Scrooge.
The Spirit signed to him to listen to the two apprentices, who were pouring out their hearts in praise of Fezziwig: and when he had done so, said, “Why! Is it not? He has spent but a few pounds of your mortal money: three or four perhaps. Is that so much that he deserves this praise?” “It isn’t that,” said Scrooge, heated by the remark, and speaking unconsciously like his former, not his latter, self. “It isn’t that, Spirit. He has the power to make our work a pleasure or a toil. The happiness he gives, is quite as great as if it cost a fortune.” He felt the Spirit’s glance, and stopped. “What is the matter?” asked the Ghost. “Nothing particular,” said Scrooge. “Something, I think?” the Ghost insisted. “No,” said Scrooge, “No. I should like to be able to say a word or two to my clerk just now. That’s all.” Scrooge and the Ghost again stood side by side in the open air. “My time grows short,” observed the Spirit. “Quick!” This was not addressed to Scrooge, or to any one whom he could see, but it produced an immediate effect. For again Scrooge saw himself. He was older now; a man in the prime of life. His face had not the harsh lines of later years; but there was an eager, greedy, restless motion in the eye. He was not alone, but sat by a fair young girl in a mourning-dress: in her eyes there were tears. “It matters little,” she said, softly. “To you, very little. Another idol has displaced me. It is a golden one. May you be happy in the life you have chosen!” She left him, and they parted. “Spirit!” said Scrooge, “show me no more! Conduct me home. Why do you delight to torture me? I cannot bear it! Leave me! Take me back. Haunt me no longer!” He was conscious of being exhausted, and of being in his own bedroom. He had barely time to reel to bed, before he sank into a heavy sleep.

1 cup roasted butternut squash, diced 1 tablespoon fresh chopped sage Wash and thoroughly dry cauliflower; remove all greens. Use box grater and grate into “rice.” Using skillet, heat butter until melted and beginning to become toasty. Add cauliflower rice and cook until soft, constantly stirring. Add black eyed peas, Cajun seasoning and parsley; stir and cover with lid. Reduce heat to low and cook 5 minutes. Add dried cranberries, roasted butternut squash and sage.

Butternut Squash and Pear Soup Recipe courtesy of Atkins Prep time: 20 minutes Cook time: 30 minutes Servings: 6 1 tablespoon unsalted butter 1 medium (2 1/2-inch diameter) onion, chopped 2 pounds butternut winter squash, cubed 1 medium pear, sliced, plus additional, for garnish (optional) 1 teaspoon curry powder 1/2 teaspoon salt 1/4 teaspoon ground white pepper 5 cups chicken broth

1 teaspoon vanilla extract 2 large eggs 1/4 cup water Heat oven to 350 F. Line large baking sheet with parchment paper, coat with olive oil spray and set aside. In large bowl, mix together protein powder, sunflower or pumpkin seeds, pecans, coconut, chia seeds or flaxseeds, stevia, cinnamon and turmeric. In large skillet, combine coconut oil, peanut butter and vanilla extract; melt completely then stir in nut mixture. Turn heat off and add eggs and water, tossing well. Transfer to prepared baking sheet and spread mixture in layer about 1/2-inch thick. Bake 10-15 minutes until mixture starts to brown and clumps together to make clusters. Cool completely on baking sheet then store in airtight container, refrigerated, up to 1 week.
1 teaspoon fresh lemon juice 1/2 cup heavy cream nutmeg (optional) In large pot over medium heat, melt butter. Add onions and saute until translucent, about 6 minutes. Add squash, pear, curry powder, salt and white pepper; saute 3 minutes. Increase heat to high and add chicken broth. Bring to boil then reduce heat to low; simmer 20-25 minutes, uncovered, until cubed squash is very tender. Allow to cool about 10-15 minutes. In blender or food processor, puree soup in batches until smooth. Return pureed soup to pot and add lemon juice and heavy cream. Stir soup over low heat until hot. Garnish with additional sliced pears and sprinkle of nutmeg, if desired.

Scrooge waited the bell again. Now, when the Bell struck One, a quarter of an hour went by, yet nothing came. At last, he began to notice a ghostly light coming from the adjoining room. He shuffled in his slippers to the door. A strange voice called him by his name, and bade him enter. It was his own room. But the walls and ceiling were hung with berries, holly, mistletoe, and ivy, and a mighty blaze went roaring up the chimney. Heaped up on the floor, to form a kind of throne, were turkeys, geese, sausages, mincepies, plum-puddings, red-hot chestnuts, apples, oranges, pears, cakes, and seething bowls of punch. Upon this food couch, there sat a jolly Giant, who bore a glowing torch, and held it high up, to shed its light on Scrooge, as he came peeping round the door. “Come in!” exclaimed the Ghost. “Come in! and know me better, man!” Scrooge entered timidly, and hung his head. Though the Spirit’s eyes were clear and kind, he did not like to meet them.
“I am the Ghost of Christmas Present,” said the Spirit. “Look upon me!” Scrooge reverently did so. It was clothed in a simple green robe, bordered with white fur. Its feet were bare; and on its head it wore a holly wreath, set here and there with shining icicles. Its dark brown curls were long and free as its cheery voice, and its joyful air. “You have never seen the like of me before!” exclaimed the Spirit. “Spirit,” said Scrooge, “conduct me where you will. I went forth last night and I learnt a lesson which is working now. To-night, if you have aught to teach me, let me profit by it.” “Touch my robe!” Scrooge did as he was told, and held it fast. Feast, fire, room all vanished instantly and they stood in the city streets on a snowy Christmas morning. The sky was gloomy, and yet was there an air of cheerfulness abroad like a summer day. Soon the steeples called good people all, to church and chapel, and away they came, flocking through the streets in their best clothes, and with their gayest faces. They went on, invisible, as they had been before, into the suburbs of the town. The good Spirit led him straight to Scrooge’s

And now two smaller Cratchits danced about the table. “What has ever got your precious father then?” said Mrs. Cratchit. “And your brother, Tiny Tim.” In came Bob, the father, with his threadbare clothes darned up and brushed, to look seasonable; and Tiny Tim upon his shoulder. Alas for Tiny Tim, he bore a little crutch! “And how did little Tim behave?” asked Mrs. Cratchit. “As good as gold,” said Bob. “He told me, that he hoped the people saw him
in the church, because he was a cripple, and it might be pleasant to them to remember upon Christmas Day, who made lame beggars walk, and blind men see.” His active little crutch was heard upon the floor, and back came Tiny Tim. At last the dishes were set on, and grace was said. Bob said he didn’t believe there ever was such a goose cooked. Eked out by apple-sauce and mashed potatoes, it was a sufficient dinner for the whole family. Mrs. Cratchit left the room to bring the pudding, like a speckled cannon-ball, blazing in ignited brandy, and with Christmas holly stuck into the top. A wonderful pudding! At last the dinner was all done, all the Cratchit family drew round the hearth, and Bob proposed a toast: “A Merry Christmas to

Prep time: 20 minutes Cook time: 8 minutes Servings: 24 3 cups flour 2 teaspoons McCormick Ground Ginger 1 teaspoon McCormick Ground Cinnamon 1 teaspoon baking soda 1/4 teaspoon McCormick Ground Nutmeg 1/4 teaspoon salt 3/4 cup (1 1/2 sticks) butter, softened 3/4 cup firmly packed brown sugar 1/2 cup molasses 1 egg 1 teaspoon McCormick Pure Vanilla Extract
In large bowl, mix flour, ginger, cinnamon, baking soda, nutmeg and salt. Set aside. In separate large bowl, using electric mixer on medium speed, beat butter and brown sugar until light and fluffy. Add molasses, egg and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Press dough into thick, flat disk. Wrap in plastic wrap. Refrigerate 4 hours or overnight. Heat oven to 350 F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes with 5-inch cookie cutter. Place 1 inch apart on ungreased baking sheets. Bake 8-10 minutes, or until edges of cookies are set and just begin to brown. Cool on baking sheets 1-2 minutes. Remove to wire racks; cool completely. Decorate as desired.

Triple Chocolate Gingerbread Prep time: 10 minutes Cook time: 50 minutes Servings: 16 1 package (2-layer size) chocolate cake mix 1 package (4-serving size) chocolate instant pudding mix 4 eggs 1 tablespoon McCormick Ground Ginger 1 teaspoon McCormick Ground Cinnamon 1/2 teaspoon McCormick Ground Allspice 1/2 cup sour cream 1/2 cup vegetable oil 1/2 cup molasses 1/2 cup water
1 cup miniature chocolate chips nonstick baking spray with flour Heat oven to 350 F. In large bowl, using electric mixer on low speed, beat cake mix, pudding mix, eggs, ginger, cinnamon, allspice, sour cream, vegetable oil, molasses and water until moistened, scraping sides of bowl frequently. Beat on medium speed 2 minutes until well blended. Stir in chocolate chips. Pour into 10-cup Bundt pan prepared with nonstick spray. Bake 50 minutes, or until cake pulls away from sides of pan and springs back when touched lightly. Cool in pan 15 minutes. Invert cake onto wire rack. Cool completely.

In the bright sprinklings of the Spirit’s torch at parting, Scrooge had his eye upon them, and especially on Tiny Tim, until the last. By this time it was getting dark, and snowing pretty heavily; and as Scrooge and the Spirit went along the streets. And now, without a word of warning from the Ghost, they stood upon a bleak and desert moor. “What place is this?” asked Scrooge. “A place where Miners live, who labour in the bowels of the earth,” returned the Spirit. “But they know me. See!” Passing through the wall of mud and stone, they found an old, old man and woman, with their children and their children’s children, all decked out gaily in their holiday attire. The old man was singing them a Christmas song and from time to time they all joined in the chorus. Again the Ghost sped on, above a black and heaving sea—on, on— until, being far away from any shore, they lighted on a ship. They stood beside the helmsman, the lookout, the officers on watch; every man among them hummed a Christmas tune, or had a Christmas thought. And every man on board, waking or sleeping, good or bad, had had a kinder word for another on that day than on any day in the year. It was a great surprise to Scrooge, while listening to the moaning of the wind, to hear a hearty
laugh and to recognise it as his own nephew’s. He found himself in a bright, dry, gleaming room, with the Spirit standing smiling by his side. “Ha, ha!” laughed Scrooge’s nephew. “He said that Christmas was a humbug, as I live! He believed it too!” “More shame for him, Fred!” said Scrooge’s niece, indignantly. “He’s a comical old fellow,” said Scrooge’s nephew, “that’s the truth: and not so pleasant as he might be. However, his offences carry their own punishment, and I am sorry for him; I couldn’t be angry with him if I tried. Who suffers by his ill whims! Himself, always.” After tea, they had some music and played at games; for it is good to be children sometimes, and never better than at Christmas. There might have been twenty people there, young and old, but they all played and sang, and so did Scrooge; forgetting that his voice made no sound in their ears, he sometimes came out with his singing quite loud. The Ghost was greatly pleased to find him in this mood, and looked upon him with such favour, that he begged like a boy to be allowed to stay until the guests departed. But this the Spirit said could not be done. Much they saw, and far they went, and everywhere the Spirit went he left his blessing. It was a long night, and Scrooge noticed that the Ghost grew older, clearly older, and he noticed that its hair was grey. “Are spirits’ lives so short?” asked Scrooge. “My life upon this globe, is very brief,” replied the Ghost. “It ends to-night at midnight. Hark! The time is drawing near.” The bell struck twelve. And the Spirit disappeared. As the last stroke ceased to vibrate, he remembered the prediction of old Jacob Marley, and lifting up his eyes, beheld a solemn Phantom, draped and hooded, coming, like a mist along the ground, towards him.

Peppermint Filling: 5 cups confectioners’ sugar 14 tablespoons butter, melted 2 tablespoons heavy cream 1 teaspoon McCormick Pure Peppermint Extract 1/8 teaspoon McCormick Food Color & Egg Dye, Red Chocolate Glaze: 12 ounces semi-sweet baking chocolate, coarsely chopped 1/2 cup (1 stick) butter crushed peppermint candies (optional)
To make Brownies: Heat oven to 350 F. Prepare brownie mix according to package instructions. Spread on greased, foil-lined, 15-by-10-by-1inch baking pan. Bake 15 minutes, or until toothpick inserted in center comes out almost clean. Cool in pan on wire rack. To make Peppermint Filling: In large bowl, using electric mixer on medium speed, beat confectioners’ sugar, melted butter, cream, peppermint extract and food coloring until well blended and smooth. Spread evenly over cooled brownies. Refrigerate 30 minutes. To make Chocolate Glaze: In large, microwavable bowl, microwave chocolate and butter on high 2 minutes, until butter is melted. Stir until chocolate is completely melted. Spread over top of chilled brownies. Sprinkle with crushed peppermint candies, if desired. Cut into bars.

Cinnamon Caramel Swirl Bars Prep time: 25 minutes Cook time: 35 minutes Servings: 24 1 1/2 cups flour 2 teaspoons baking powder 2 teaspoons McCormick Ground Cinnamon 1/4 teaspoon salt 1 1/2 cups firmly packed brown sugar 1/2 cup (1 stick) butter, melted 2 eggs 1 tablespoon McCormick Pure Vanilla Extract 1 cup coarsely chopped pecans 1 package (14 ounces) caramels, unwrapped 1/4 cup milk
Heat oven to 350 F. In medium bowl, mix peanuts, sugar, butter and 1/2 teaspoon cinnamon. Remove 1/4 cup and spread on small baking sheet. Divide remaining peanut mixture among four (4-inch) tart pans with removable bottoms. Press firmly onto bottom and sides of each pan. Bake tart crusts and peanut mixture together 8 minutes. Cool on wire racks. In medium microwavable bowl, microwave chocolate milk on high 45 seconds. Add chocolate; stir until completely melted and smooth. Set aside. In large bowl, using electric mixer on medium speed, beat peanut butter, sweetened condensed milk, vanilla and remaining cinnamon until smooth. Add heavy cream; beat until soft peaks form. Spread in prepared tart crusts. Spread chocolate mixture over top. Refrigerate at least 1 hour, or until ready to serve. Cut each tart in half. Sprinkle with toasted peanut crumble.
Heat oven to 350 F. In medium bowl, mix flour, baking powder, cinnamon and salt. Set aside. In large bowl, mix brown sugar, butter, eggs, vanilla and pecans until well blended. Add flour mixture; mix well. Reserve 1 cup batter. Spread remaining batter into lightly greased, foil-lined, 13-by-9-inch baking pan. Bake 15 minutes, or until firm. In microwavable bowl, microwave caramels and milk on high 2-3 minutes, or until caramels are completely melted, stirring after each minute. Cool 5 minutes, or until slightly thickened. Pour over baked layer in pan, spreading to within 1/2 inch of edges. Drop reserved batter by spoonfuls over caramel layer. With knife, cut through batter several times for marble effect. Bake 15-20 minutes, or until center is set. Cool in pan on wire rack. Lift from pan. Cut into bars.

THE Phantom slowly, gravely, silently, approached. It was shrouded in a deep black garment, which left nothing of it visible save one outstretched hand. “I am in the presence of the Ghost of Christmas Yet To Come?” said Scrooge. The Spirit pointed onward with its hand. “You are about to show me shadows of the things that will happen,” Scrooge pursued. “Is that so, Spirit?” Scrooge feared this silent shape so much that his legs trembled beneath him. “Ghost of the Future!” he exclaimed, “I fear you more than any spectre I have seen. But as I know your purpose is to do me good, and I am prepared to bear you company, and do it with a thankful heart. Will you not speak to me?” It gave him no reply. The hand was pointed straight before them. “Lead on!” said Scrooge. “Lead on! The night is precious time to me, I know. Lead on, Spirit!” The Phantom moved away. There they were, in the heart of the city; amongst the merchants; who hurried up and down, and chinked the money in their pockets, as Scrooge had seen them often. The Spirit stopped beside one little knot of business men, pointing to them, Scrooge advanced to listen to their talk. “No,” said a great fat man with a monstrous chin, “I don’t know much about it. I only know he’s dead.” “When did he die?” inquired another. “Last night, I believe.” “Why, what was the matter with him?” asked a third. “God knows,” said the first, with a yawn. “What has he done with his money?”
asked a red-faced gentleman. “I haven’t heard,” said the man with the large chin, yawning. “It’s likely to be a very cheap funeral, for I don’t know of anybody to go to it. Suppose we make up a party and go?” “I don’t mind going if a lunch is provided,” observed one gentleman. Scrooge knew the men, and looked towards the Spirit for an explanation. Quiet and dark, beside him stood the Phantom, with its outstretched hand. Scrooge fancied that the Unseen Eyes were looking at him keenly. It made him shudder, and feel very cold. They went into an obscure part of the town, where the shops and houses reeked with crime, with filth, and misery. There was a shop where iron, old rags, bottles, bones, and greasy junk, were bought. Scrooge and the Phantom came into this shop, just as two women and a man carried in bundles. They all three burst into a laugh. The first woman threw her bundle on the floor. But the man produced his plunder first. A pencil-case, sleeve-buttons, and a brooch of no great value, were all. They were examined and appraised by old Joe, who chalked the sums for each, upon the wall, and added them up into a total. “That’s your account,” said Joe. “Who’s next?” Mrs. Dilber was next. Sheets and towels, two old-fashioned silver teaspoons, a pair of sugar-tongs, and a few boots. Her account was stated on the wall in the same manner. “And now undo my bundle, Joe,” said the first woman. Joe dragged out a large and heavy roll of some dark stuff. “Bed-curtains!” said Joe. “You don’t mean to say you took ’em down, rings and all, with him lying there?” “Yes I do,” replied the woman. “Why not?” “His blankets too?” asked Joe.

To make Roasted Leg of Lamb: Heat oven to 400 F. In bowl, whisk olive oil, raspberry balsamic glaze, rosemary and mustard; set aside. Make small incisions in lamb and insert garlic slices. Rub olive oil mixture over lamb. Sprinkle with salt and pepper. Transfer to roasting pan fitted with rack. Add onions; pour water into bottom of pan. Roast 80-90 minutes, or until internal temperature reaches 145 F for mediumrare, adding water to pan as needed to avoid scorching and onions drying out. Filling: 3/4 cup chopped bittersweet chocolate 1 tablespoon Filippo Berio Classic Balsamic Glaze 3 packages (8 ounces each) brick-style cream cheese, room temperature 1 cup granulated sugar 3 eggs 1 cup sour cream 1 teaspoon vanilla Cherry Topping: 3 cups frozen cherries 3/4 cup packed brown sugar 1 tablespoon Filippo Berio Olive Oil 1/2 cup water, plus 2 tablespoons, divided 2 tablespoons cornstarch 2 tablespoons Filippo Berio Classic Balsamic Glaze
To make Crust: Heat oven to 350 F. Mix graham wafer crumbs, oil and sugar; press into bottom of 9-inch springform pan. Bake 8 minutes; let cool. Reduce oven temperature to 325 F. To make Filling: In heatproof bowl set over saucepan of hot (not boiling) water, melt chocolate, stirring until smooth. Remove from heat and stir in balsamic glaze. Let cool slightly. Using electric mixer, beat together cream cheese, sugar and melted chocolate mixture until light and fluffy. Beat in eggs, one at a time. Beat in sour cream and vanilla; pour over crust. Wrap outside of springform pan in heavy-duty foil. Set inside roasting pan and pour in boiling water until halfway up sides of springform pan. Bake 90-100 minutes, or until sides are set and center is still slightly jiggly; cool 5 minutes. Run knife between cheesecake and pan; cool completely. Refrigerate 24 hours. To make Cherry Topping: In small saucepan over medium heat, bring cherries, sugar, olive oil and 1/2 cup water to boil. Reduce heat and simmer 5-6 minutes, or until sugar dissolves. Whisk cornstarch with remaining water; whisk into mixture. Cook about 3 minutes, or until thickened. Transfer to bowl; cover and refrigerate at least 2 hours or up to one day. Spoon over cheesecake; drizzle with balsamic glaze.

am past all hope!” For the first time the hand appeared to shake. “Good Spirit,” he pursued, “I will honour Christmas in my heart, and try to keep it all the year. I will live in the Past, the Present, and the Future. The Spirits of all Three shall strive within me. I will not shut out the lessons that they teach. Oh, tell me I may sponge away the writing on this stone!” In his agony, he caught the spectral hand. The Phantom’s hood and dress shrunk, collapsed, and dwindled down into a bedpost.

Oh Jacob Marley! Heaven, and the Christmas Time be praised for this! I say it on my knees, old Jacob; on my knees!” His face was wet with tears. “They are not torn down,” cried Scrooge, folding one of his bedcurtains in his arms, “they are not torn down, rings and all. They are here—I am here—the shadows of the things that would have been, may be dispelled. They will be. I know they will!” “I don’t know what to do!” cried Scrooge, laughing and crying in the same breath. “I am as light as a feather, I am as happy as an angel, I am as merry as a schoolboy. I am as giddy as a drunken man. A merry Christmas to everybody! A happy New Year to all the world.” He had frisked into the sitting-room, and was now standing there: perfectly winded. “There’s the door, by which the Ghost of Jacob Marley entered!” cried Scrooge, starting off again, and going round the fireplace. “There’s the corner where the Ghost of Christmas Present, sat! There’s the window where I saw the wandering Spirits! It’s all right, it’s all true, it all happened. Ha ha ha!” Really, for a man who had been out of practice for so many years, it was a splendid laugh. “I don’t know what day of the month it is!” said Scrooge. “I don’t know
how long I’ve been among the Spirits. I don’t know anything. I’m quite a baby. Never mind. I don’t care. I’d rather be a baby.” The churches began ringing out the lustiest peals he had ever heard. Clash, clang, hammer; ding, dong, bell. Oh, glorious, glorious! Running to the window, he opened it, and put out his head. No fog, no mist; clear, bright, cold. Golden sunlight; Heavenly sky; sweet fresh air; merry bells. Oh, glorious! Glorious! “What’s to-day!” cried Scrooge, calling downward to a boy in Sunday clothes. “EH?” returned the boy. “What’s to-day, my fine fellow?” said Scrooge. “To-day!” replied the boy. “Why, CHRISTMAS DAY.” “It’s Christmas Day!” said Scrooge to himself. “I haven’t missed it. The Spirits have done it all in one night. They can do anything they like. Of course they can. Of course they can. Hallo, my fine fellow!” “Hallo!” returned the boy. “Do you know the poultry shop, in the next street, at the corner?” Scrooge inquired. “I should hope I did,” replied the lad. “An intelligent boy!” said Scrooge. “A remarkable boy! Do you know whether they’ve sold the prize Turkey that was hanging up there?—Not the little prize Turkey: the big one?” “What, the one as big as me?” returned the boy. “What a delightful boy!” said Scrooge. “Yes, yes!” “It’s hanging there now,” replied the boy. “Is it?” said Scrooge. “Go and buy it.” “What!” exclaimed the boy. “I am in earnest,” said Scrooge. “Go and tell ’em to bring it here, that I may give them the direction where to take it. Come back with the man, and I’ll give you a shilling. Come back with him in less than five minutes and I’ll give you half-acrown!” The boy was off like a
shot. “I’ll send it to Bob Cratchit’s!” whispered Scrooge, rubbing his hands, and splitting with a laugh. “He sha’n’t know who sends it. It’s twice the size of Tiny Tim!” He wrote the address somehow, and went down-stairs to open the street door, ready for the coming of the poulterer’s man. As he stood there, waiting his arrival, the knocker caught his eye. “I shall love it, as long as I live!” cried Scrooge, patting it with his hand. “It’s a wonderful knocker!—Here’s the Turkey! How are you! Merry Christmas!” It was a Turkey! “Why, it’s impossible to carry that to Camden Town,” said Scrooge. “You must have a cab.” The chuckle with which he said this, and the chuckle with which he paid for the Turkey, and the chuckle with which he paid for the cab, and the chuckle with which he recompensed the boy, were only to be exceeded by the chuckle with which he sat down breathless in his chair again, and chuckled till he cried. He dressed himself “all in his best,” and at last got out into the streets. The people were by this time pouring forth, as he had seen them with the Ghost of Christmas Present; and Scrooge regarded every one with a delighted smile. Three or four goodhumoured fellows said, “Good morning, sir! A merry Christmas to you!” And Scrooge said often afterwards, that of all the
happy sounds he had ever heard, those were the happiest in his ears. He had not gone far, when coming on towards him he beheld the gentleman, who had walked into his counting-house the day before. It sent a pang across his heart to think how this old gentleman would look upon him when they met; but he knew what path lay straight before him, and he took it. “My dear sir,” said Scrooge, quickening his pace, and taking the old gentleman by both his hands. “How do you do? I hope you succeeded yesterday. It was very kind of you. A merry Christmas to you, sir! Allow me to ask your pardon. And will you have the goodness to allow me to give you”— here Scrooge whispered in his ear. “Lord bless me!” cried the gentleman, as if his breath were taken away. “My dear Mr. Scrooge, are you serious?” “If you please,” said Scrooge. “Not a farthing less. A great many backpayments are included in it, I assure you. Will you do me that favour?” “My dear sir,” said the other, shaking hands with him. “I don’t know what to say—” “Don’t say anything, please,” retorted Scrooge. “Will you come and see me?” “I will!” cried the old gentleman. 2 tablespoons Simply Nature 100% Pure Avocado Oil 3 large yellow onions, sliced 5 ounces Happy Farms Preferred Blue Cheese Crumbles 8 ounces Happy Farms Cream Cheese Stonemill Ground Black Pepper, to taste 1 cup Friendly Farms Heavy Whipping Cream
8 ounces Southern Grove Chopped Walnuts, divided 5 cucumbers, thinly sliced In large pan, heat oil and saute onions until brown and caramelized. In food processor, combine blue cheese crumbles and cream cheese. Process until smooth. Season with pepper, to taste. In medium bowl, using hand mixer, whisk cream until soft peaks form. Fold in cheese mixture and 4 ounces chopped walnuts. Top cucumber slices with mousse, caramelized onions and remaining chopped walnuts. Finish by grinding black pepper over top for garnish. Pair each serving with glass of La Rue Cotes de Provence Rosé. Tip: Mousse can also be served as a dip with baguette slices.

He did it all, and infinitely more; and to Tiny Tim, who did NOT die, he was a second father. He became as good a friend, as good a master, and as good a man, as the good old city knew, or any other good old city, town, or borough, in the good old world. Some people laughed to see the alteration in him, but he let them laugh. His own heart laughed: and that was quite enough for him. He had no further meetings with Spirits ever afterwards; and it was always said of him, that he knew how to keep Christmas well, if any man alive possessed the knowledge. One of the reasons I love this time of year is because the air always seems to be permeated with a variety of rich aromatic scents and this is such a wonderful time to enjoy these holiday herbs and spices. My very favorite spice and aroma is cinnamon. In my view, this is the champion of all spices.
