The Business of Wine & Food Tourism Conference, now in its third year is set to take place at the Spier wine estate in Stellenbosch on 17 October 2018 with an impressive panel of local and international speakers that will centre their respective topics on the theme of innovation. “The Western Cape has a distinct advantage in Southern Africa. Not only does it feature breathtaking sea- and mountainscapes, but a vibrant culinary and social scene that celebrates and reflects its very special environment,” says seasoned tourism specialist Margi Biggs, convenor of the conference. “The wine and food scene here in the Cape, together with its interesting combination of people - tourists and locals from all levels of society - provide such a healthy environment for cultivating tourism, and now is the perfect time to explore the theme of innovation and its various facets and impact points.” Continue Reading Page 2

Woolworths - Ditching Its Wasteful Plastic Packaging Woolworths is the first retailer in South Africa to announce its vision of zero packaging waste to landfill. This means that the retailer aims to have none of its packaging end up in landfills, which will requires 100% recyclable materials and a supportive recycling infrastructure. AIR ACCESS BOOSTS ECONOMIC GROWTH!
RETIREMENT Page 7
Photo: Cape Town International Airport - Photo Credit: Cape Town Air Access/Wesgro
The project was born out of adversity when Cape Town International Airport (CTIA) lost two significant international airlines. Recognising that international connectivity and accessibility is a key enabler of economic prosperity and job creation in the province and city, the Western Cape Provincial Government and City of Cape Town, together with partners Cape Town Tourism and Airports Company South Africa, mandated Wesgro in 2015 to set up a division that would focus exclusively on international route development for the CTIA. The success of the project speaks for itself.
First Solar Powered
Desalination Plant Launched In South Africa The first highly cost-effective solar powered desalination plant in South Africa will be commissioned by the end of October 2018 at Witsand, Hessequa Municipality, Western Cape.
REALTY Page 9
The project was initiated by Prof. Erwin Schwella, Professor of Public Leadership at Stellenbosch and Tilburg Universities with the Municipality of Hessequa. This project is co-funded by the Western Cape Government through the drought relief fund, and by the French Treasury, through a fund dedicated to the implementation of innovative green technologies. In this Municipality 250km east of Cape Town, several coastal villages are suffering from a structural water deficit, even outside of drought periods. A site, part of Witsand village suffering from critical water shortages, was designated for the implementation of this first solar powered desalination unit. The plant will produce 100kl of fresh water per day powered by the solar energy only, to address the normal local water requirement. The plant offers the possibility to supply drinking water besides sunlight hours through the connection to the local electricity grid.

US-based big data wine specialist, Cathy Huyghe, is the head-line speaker this year. This will be the first visit to South Africa for Huyghe, who is also a wine columnist for Forbes and who has written for the Harvard Business Review. “We are also thrilled to have the talented Wandile Mabaso, a young and internationally travelled Soweto-born, Frenchinspired chef, who is currently disrupting the culinary scene in Johannesburg, confirmed as speaker. He’s also known as South Africa’s French cuisine ambassador, having worked alongside many famous French chefs, like the legendary Alain Ducasse who holds an incredible 21 Michelin stars,” Biggs states. Biggs elaborates: “Wandile is passionate about sharing the skills he’d learned while working as chef across the globe, from the Mediterranean, to Miami, New York and Paris, as well as during his time back here in South Africa. Conference delegates can look forward to an energetic presentation from him. He’s sure to disrupt and challenge entrenched ideas so we can open our minds and allow for innovative thinking.” Other speakers at this year’s conference include online story-teller Chris Joubert, and Spicer de Villiers, who owns A Single Thread, a boutique communications agency that is active in local wine; Dr Donovan Kirkwood, an ecologist and biodiversity conservation specialist; as well as chef and Photo: Cathy Huyghe Photo: Margi Biggs foraging specialist Kobus van der Merwe, who with his intensely local and seasonal focus has developed a cuisine that completely embodies and evokes the wild and dry West Coast.

Cape Town Air Access is an outstanding example of a government and public sector collaboration that works.
Delegates will hear from South African innovation thought-leader, Peter Greenwall, who actively works on advancing ‘innovation IQ’. He is a successful author and entrepreneur - a natural educator with an innate ability to navigate through nonsense and clutter to create lightbulb moments in creativity. Greenwall explains: “I will be teaching attendees how to create a culture of innovation that permeates all aspects of their tourism-related businesses, and discuss the five stages of what we refer to the ‘innovation cycle’.

8-Year Old Capetonian Golf Star Swings Into Top 10 At European Champs Eight-year-old Athlone golfing phenomenon Traigh Pathon competed in his first European Kids Golf Championship in Scotland recently, coming in tied with 9th place, an overall of 1 under par for the 3-day tournament and only 6 shots from 1st place. Turkish Airlines sponsored Traigh and his father / caddie to the Euro Champs in Scotland. Turkish Airlines Cape Town General Manager, Kenan Ince said, “We are delighted by Traigh’s outstanding performance and are proud to have played a role in ensuring he could compete at this prestigious event.” Traigh hit his first golf ball when he was only 14 months old, he appeared in his first ever television advertisement at 18 months, and he played his first ever round of golf at the tender age of four. Traigh is the youngest member of the prestigious Royal Cape Golf Club in Cape Town.

Woolworths - Ditching Its Wasteful Plastic Packaging
(Continue From Page 1)
“The announcement follows extensive customer research and engagement, both formally and through social media channels that shed light on both customer recycling habits and entrenched customer perceptions. We know that many of our customers fully support our zero packaging waste to landfill journey and they want to see it happen as fast as possible. But this is not a path that we can walk alone. To succeed, we need our customers, our suppliers and the South African recycling industry to work with us,” said Zyda Rylands, Woolworths South Africa CEO. Critical to the success of these ambitious goals is the continued commitment to partner with government and industry (recyclers, packaging convertors, producer responsibility organisations) to develop technically and commercially viable solutions to recycling different plastics. Rylands said that several in-store trials are currently underway at selected Woolworths stores in order to engage customers on the new plastic reduction efforts, including: Wooden cutlery and paper straws are being rolled out in NowNow and WCafes with a view to phase out plastic cutlery and straws completely; Plastic straws are no longer available for purchase in store; Paper-stemmed earbuds will be on the shelves by the end of October and plastic ear buds will no longer be sold in store; A pilot coffee cup recycling programme is currently underway in NowNow stores, with a view to rolling out nationally; The retailer is trialling reverse recycling vending machines, where customers can bring in their recyclables and put them into the vending machine so that they can be recycled; and Woolworths is also trialling a new range of affordable reusable shopping bags. Many key milestones have already been reached in this plastic reduction and recycling journey: Woolworths has already successfully light-weighted and reduced their packaging by almost 700 tonnes to date; Woolworths was also the first retailer in SA to launch On Pack Recycling Labelling that clearly communicated the recyclability of the packaging; Woolworths was the first retailer in South Africa to launch a plant-based plastic milk bottle in 2016; Woolworths was the first major
South African retailer to use recycled PET (rPET) in juice bottles and to incorporate recycled PET bottles into their packaging; Woolworths uses up to 50% post-consumer recycled content in more than 600 products lines; and Woolworths was the first major retailer in South Africa to remove all plastic micro-beads from own-brand beauty and bath products. After working closely with recyclers, Woolworths recently successfully trialed recycling their PET salad trays into fabric for the automobile industry. This is a great example of where Woolworths is striving to ensure a circular economy. “Sustainability and our Good Business Journey are at the heart of everything that we do. That’s why these commitments are a natural next step on our journey to ensuring that we play our part in creating shared value within our communities and protecting our planet for future generations,” concludes Rylands.

Prominent Orthopaedic Surgeon Brings Relief To Somerset West Worker Being a patient that is reliant on the state, Tembelani was on a waiting list for surgery for a while and his condition was being managed with pain medication. Until this procedure, he had never been to hospital, making the life changing experience one of many firsts. On Monday, 28 May, Tembelani Njonga underwent an arthroscopic rotator cuff repair for a muscle tear. According to Dr van den Berg, he was expected to spend one night in hospital before being discharged, after which he will need to wear a supportive sling for six weeks. His rehabilitation will then require a physiotherapy programme with expected full shoulder function in 6 – 9 months. Tembelani’s job as a general worker at a local church is physically demanding and the pain from the injury was proving a constant challenge to his livelihood.
Dr Charl van den Berg, a prominent surgeon at Mediclinic Vergelegen, has been practicing as an orthopaedic surgeon for 14 years and has a special interest in shoulder surgery. He has also been involved with the charitable Agape foundation (NG Helderberg) for 18 months, where he takes on a few pro bono patients identified by local GPs. Recently Tembelani Njonga, a general worker from the Nomzamo informal settlement, underwent surgery with Dr Charl van den Berg under the auspices of the Agape foundation.
“I would like to thank Dr Owen Hodges, anaesthesiologist, and Dr Leon van der Spuy, who assisted in theatre, as both performed their work pro bono. Orthomedix sponsored much of the equipment required for the surgery, and together we have been able to achieve a collaborative effort to assist Tembelani. Mediclinic Vergelegen was able to support Dr van den Berg with the surgery, by providing the theatre access for the patient as part of its contribution to the community,” says Dr van den Berg. “I have been blessed with a talent that allows me to help others,” says Dr van den Berg. Being involved in such initiatives is always humbling and rewarding. I am able to watch my patients receive relief from pain while also regaining their quality of life.” Photo and article supplied by Mediclinic Southern Africa
The Test Kitchen Is Back On The World's 50 Best Restaurant List! 19 June 2018 saw a gathering of the world’s greatest chefs in Bilboa, arguably one of the globe’s greatest culinary destinations, for the annual “The World’s 50 Best Restaurant Awards sponsored by S.Pellegrino & Acqua Panna”. The Test Kitchen of chef Luke Dale Roberts was placed at 50th at the awards and no. 1 on the African Continent, once again a phenomenal achievement. Dale Roberts is ecstatic about the award, saying: “My team and I have taken some risks over the last year and worked extremely hard to evolve The Test Kitchen to what it is today. It’s thrilling that it has paid off. I am so proud of what we have achieved with The Test Kitchen and that it has a well-deserved spot on the world food stage.” Previously, The Test Kitchen was placed at 22 and named the Best Restaurant in Africa in the World’s Best Restaurants Awards in 2016.
In 2017 Dale Roberts took a gamble to completely reimagine the restaurant, resulting in the dramatic Dark Room and Light Room concept which has been applauded both locally and internationally. Both spaces are finely in tune with the industrial aesthetic of The Test Kitchen’s location, The Old Biscuit Mill in Woodstock in Cape Town, a repurposed factory setting in a gritty yet hip area of the city. This year Dale Roberts pushed culinary boundaries by introducing The Drought Kitchen by The Test Kitchen, in response to the severe drought that Cape Town is experiencing. This six-course reducedwater dining experience ran from April to June 2018, and with this project, Dale Roberts focussed his creative energy on coming up with a solution to the problem of using less water in the kitchen. This ground-breaking concept has set the tone for an innovative approach in the local restaurant scene, while still delivPhoto: Luke Dale Roberts Photo Credit: Andy Lund ering exceptional gourmet fare. By all accounts, The Drought Kitchen has already made a resonating statement: local media were quick to give it the thumbs up not only for its social savvy, but also still delivering an exquisite, and even more thought-provoking dining experience. While Cape Town was busy with The Drought Kitchen, half the staff of The Test Kitchen, from chefs to front-of-house, joined Dale Roberts in Mauritius for one of the most exciting restaurant pop-ups ever. The Test Kitchen Mauritius at Shangri-La Le Touessrok Resort & Spa ran for six weeks and was met with great enthusiasm, from media and diners alike with its refined style of food with the addition of exotic Mauritian spices and ingredients. Recently, The Test Kitchen was also placed 46 in the Elite Traveler’s 100 Best Restaurants in the World 2018. These restaurants are voted for by the readers of Elite Traveler, a luxury lifestyle magazine. It is the only restaurant in Africa to be awarded, and one of only six in the southern hemisphere. The Test Kitchen has consistently been placed in The “World’s 50 Best Restaurant Awards sponsored by S.Pellegrino & Acqua Panna” since its opening at the end of 2010: number 74 in 2012; number 61 in 2013 and number 48 in 2014; followed by a massive jump to number 28 in 2015 then the highest yet as number 22 in 2016. It received the Cacao Barry One to Watch Award and it was also named Best Restaurant in Africa in 2015 and 2016. Locally, The Test Kitchen rakes in the awards year after year with the groundbreaking gourmet experiences it offers. In 2017 it was named Restaurant of the Year in the Eat Out Mercedes-Benz Restaurant Awards for an unprecedented sixth year running. In 2016, Sommelier Tinashe Nyamudoka of The Test Kitchen also won the Eat Out Wine Service Award. Other local awards include the Best Tasting Menu at the Gourmet Restaurant Awards, and a three plate award at the JHP Gourmet Guide awards. One thing is sure for the years to come, The Test Kitchen and Luke Dale Roberts will be sure to break new ground, keep innovating and surprise and delight gourmet-lovers around the world.

ENVIRONMENT
THE NEWSPAPER
A REMINDER OF POSITIVE CHANGE
There is a real physical shift in climate as winter settles in. Gone are the days of early morning dew and instead we are greeted with a dawn frost in our gardens. Staying warm is at the forefront of our minds, so the last thing we think about is the natural environment. During the month of June we celebrated World Environment Day, World Oceans Day as well as a World Day to combat Desertification and Drought. All of this in one month, so it was aptly dubbed World Environment Month. We have World Environment Day, World Oceans Day as well as a World Day to combat Desertification and Drought. All of this in one month, so it was aptly dubbed World Environment Month. This year’s theme was Beat Plastic Pollution, and most newspaper and magazine articles as well as TV shows are painted a doom and gloom picture. Scientists say that we are drowning in the stuff with eight billion tons of plastic on the planet. The ocean is choking and by 2050 plastic will outweigh the fish in the seas. Imagine that! Being an environmental journalist, I guess I’ve always been aware of plastic’s impact, but it was during a story I did for the SABC where my eyes were really opened. A sea turtle washed up on the beach near Durban and a group of marine biologists decided to dissect the turtle to determine the cause of death. When they opened the stomach the first thing I saw was a piece of a plastic bag followed by a bottle top lid and then a balloon. Not what you’d expect to see inside an ocean creature. But jellyfish, plastic bags and balloons all look like food to a hungry sea turtle. And even if they could tell the difference, once they’ve taken a bite they can’t spit it out because of their ‘thorny’ throat. Turtles’ throats are lined with spiny projections all the way down to their stomachs which protect them from jellyfish stings. (I can’t resist getting a mention of rhinos
I was still a teenager when that happened but it must have been an incredible story to report on. Another great turn-around, probably the greatest of all, was the ozone hole revelation. Al Gore, in his documentary An Inconvenient Truth, highlights it as the reason why we can positively reduce and maybe even stop climate change. Both events happened some time ago, but it’s important to note that they worked because at the heart of it, people came together to force a positive reversal. Either in the form of volunteers in the MV Treasure Oil Spill or in the form of countries and companies phasing out chemicals used in refrigerators, aircons and aerosol cans. So if we look at our track-record we can certainly do the same with plastic. I always feel overwhelmed and most of all guilty when I read the long lists out there of how to live a better life for the planet. It’s so daunting and I end up not implementing anything. That is the last thing I want when you’ve finished reading this article, so I’m going to make it very simple and actually doable, because even I do them. Plastic is part of our everyday life and I think it is unrealistic to think that we can do without it completely, but we can definitely close the tap to single use plastics. I am sure most of us are comfortable buying and using plastic because it’s recyclable but what we’re finding out is that a lot of plastic isn’t actually recyclable and that if we do have plastic in our lives, to use them as many times as we can before we throw them away.
in somewhere, and these projections are made from keratin, the same protein substance in our hair and nails and in a rhino’s horn.) Ultimately, it’s not just about the animals however, and having a proper functioning ocean is also critical to our survival. The breath you’re taking right now actually comes from the ocean. Scientists have agreed that there’s oxygen from ocean plants in every breath we take, with the ocean supplying 70 percent of the world’s oxygen. Enough statistics to make us depressed for a while, but it’s obvious that we need to change our actions, not just for life under the ocean but for all life on earth ... ours included. Eighteen years ago, we had our worst environmental disaster right here on our coastline. The MV Treasure oil spill occurred on 23 June 2000, when the ship sank nine kilometres off the coast of South Africa - between Robben Island and Dassen Island - while transporting iron ore from China to Brazil. The ship was carrying an estimated 1,300 tons of fuel oil, some of which spilled into the ocean, threatening the world’s largest African penguin colony. But the spill resulted in one of the biggest bird rescue missions ever undertaken. Volunteers came from all over to help and 90 percent of the oiled birds were cleaned, rehabilitated and released. What an incredible story of turning something truly disastrous around!
Straws are taking the heat right now - even the Queen has banned them on all her properties - and that makes sense as they get used once and then thrown away. While there are bamboo options out there, I must be honest, that’s going to be tough for me to carry around, rewash and remember it for my next smoothie at the gym. I am choosing to take my own cup to the gym and get my drink that way. It doesn’t seem like much, but it certainly makes me think of the turtles when I do it. Another practice we should all change is how we use plastic bags. I used to pay for plastic bags when doing grocery shopping and to make myself feel better, I’d wash them out and try to reuse them for something else. Then I discovered the reusable bag being sold at check-out points and I now have a collection of various wildlife themed ones that I use for a whole lot of other things and not just grocery shopping. They’re especially handy on a film shoot when I need to have something close by when we’re on the run! These small changes may not seem like much and it always feels like we should be doing a lot more and a lot bigger things to save the planet. But doing a little goes a long way, and who knows, you may find your own way of kicking the plastic habit that you can share with others and start a trend or talking point. Bonné de Bod is an award winning wildlife and environmental television presenter and filmmaker. Her Rhino Blog series airs daily on DStv’s People’s Weather. She is currently in edit on a four-year feature documentary on the rhino poaching crisis called STROOP (Poached), due for release in 2018. Article by Bonné de Bod

RWANDAIR REACHING MILESTONES On the 16 May 2018 the Rwandan national carrier, RwandAir successfully launched their first flight from Cape Town International Airport direct to Harare, linking the Western Cape with Zimbabwe, with a stop-over in the country’s capital. This new stop-over will therefore assist in boosting travel between Zimbabwe and the Cape significantly. The flight has been operated by a Bombardier CRJ-900 next generation, but due to high demand, the airline will be flying the Boeing 737-800 Next Generation / B737-700 on the Cape Town route until the end of August 2018. RwandAir is currently the only airline to fly from Cape Town to Harare direct 4 times a week on a Monday, Wednesday, Friday and Sunday and continues to Kigali, Rwanda and then further connects to Nairobi, Dar es Salaam, Entebbe, Dubai, Kilimanjaro and Mumbai.

HOME IMPROVEMENT PROJECT CREATES LOCAL ENTREPRENEURS Heinrich Cleophas, local resident of Hopefield, always dreamed of owning his own business. This is a dream that he has achieved through the support provided by Umoya Energy. Cleophas attended the Umoya Energy funded training programme during 2014 and is now using these skills to benefit local Hopefield residents, through his own company, Cleo Construction. “I believe that every person deserves the chance to build a career. With the Home Improvement Project I was able to go to college and find a job, build my career and even start my own business,” said Heinrich Cleophas. He is one of nineteen previously unemployed local Hopefield residents that completed skills training courses, designed by Northlink College. They were provided with electrical, plumbing and carpentry training and the project offered the chance of employment to make use of these practical skills. The training is coupled with an Entrepreneurship Incubation Programme that provides mentorship and business skills.
“This is yet another big milestone for RwandAir as we continue to expand our network. Our aim is to provide to our customers seamless and better connections on the continent and beyond. Abuja and Cape Town come in as a boost to the different economies in terms of tourism and trade on one hand, and enhance bilateral partnership between our countries on the other hand”.Rwandair, “ said Chance Ndagano, RwandAir CEO. The Cape Town Air Access initiative, a partnership between Wesgro, the City of Cape Town, the Western Cape Government, Airports Company South Africa, Cape Town Tourism and South African Tourism, agrees that this will greatly assist in boosting tourism, trade and investment between the Cape and Rwanda. According to Wesgro’s IQ unit, the 5 top Western Cape exports to Rwanda in 2016 included: Refined petroleum at R13,7 million; Wine at R11 million, recording a 100% growth; Insecticides, R6.6 million; Engine parts, R3,8 million and Undenatured ethyl alcohol at R1,8 million.
Cleophas previously worked as a plumbing artisan on this programme. Having gained both the work experience, together with the business mentoring provided, he successfully bid for the carpentry contract. He is more than adequately qualified and supported to manage his own business, which is able to provide jobs to others in the area.
Wesgro CEO, Tim Harris said that this was an exciting move that will help grow trade further, and assist land FDI from Rwanda’s growing economy into the Western Cape. “Cape Town and the Western Cape are not only open for business, but through better linkages, are also becoming the gateway to the rest of Africa. Improved Air Access with the continent, will not only boost tourism, but also help bring more investors to our respective countries, and help facilitate businessto-business engagements that result in important trade deals. We are extremely grateful for the confidence that RwandAir has shown in us, and our team is ready to provide support to them so that this route maintains itself well into the future.”
A recent study measuring the social impact of the Home Improvement Project, which has benefited around 3 000 community residents within the Saldanha Bay Local Municipality, confirmed the success of the project. It conclusively showed that this project has been effective in improving living conditions of residents living in low cost homes, with 99% of the study’s residents affirming this.
“We are so pleased to be able to share Heinrich’s story, which demonstrates the unique attributes of the Home Improvement Project, which transitions and grows artisans into entrepreneurs,” said Veronique Isaacs, Regional Community Operations Manager for Umoya Energy.
MONTESSORI EDUCATION UNDER THE MICROSCOPE “Following the child does not mean raising self-centred, narcissistic young people who think that the world revolves around them,” said Green, a graduate of Stellenbosch University who spent 12 years in the UK where he completed his MA in Education and became Assistant Headteacher at Jubilee High School, Surrey. One of the concerns parents have about Montessori is the perception of too much freedom. “Children learn best through self-directed learning, so Montessori children are given more freedom of choice than in traditional settings,” said Green. “But Montessori schools also have structure, with specific materials and activities where teachers prepare the learning environment and provide the necessary structure, support and feedback.”
In the current knowledge economy, the focus of education needs to shift from acquisition of information to application: problem-solving, collaboration, creativity and application of concepts in various contexts. “We must not teach what to think; we must teach how to think,” says Alistair Green, principal of Newberry House, a Montessori school for ages 18 months to 18 years in Somerset West. “There are a myriad jobs today that didn’t exist five years ago, with so many more to come within the next few years. The question is, how do we prepare tomorrow’s generation today?” asked Green. “What if I told you that one of the best ways to prepare our children for tomorrow lies in an educational model that is 110 years old.” Green is referring to Maria Montessori developing a revolutionary new type of education model over a century ago which, instead of having children sitting down and listening to an adult telling them what to learn, flipped the system on its head and followed the child.
One of the unique characteristics of a Montessori is the multi-age classrooms, which consist of three-year age ranges. “Children learn to collaborate with learners older and younger than themselves and to respect each other’s strengths, ideas and points of view,” explained Green. “Older children grow in confidence by acting as mentors, and younger children are very receptive to learning from their older peers.” The Montessori model even extends to the sports field. “We are very grateful to have been selected as one of 6 schools worldwide to pilot the first ever Montessori Sports programme, which forms part of our curriculum,” said Green. The programme is being developed in collaboration with Cruyff Football (an initiative of the late great Dutch football master Johan Cruyff). Many people associate Montessori with pre and junior schools. But that is changing, and Newberry House is an accredited Cambridge International Assessment Centre. “Our High School students follow the Cambridge curriculum, accepted by top universities worldwide. There is a great synergy between Montessori and Cambridge, especially with regards to active learning and independent thinking,” said Green. For more information visit www.newberryhouse.com

EXHIBITIONS
THE ORIGIN OF EARLY SAPIENS BEHAVIOUR BECOME ACQUAINTED WITH YOUR ANCESTORS
The Origins of Early Sapiens Behaviour exhibition, currently at the Old Wine Cellar, is a multimedia compilation of displays and artefacts offering extraordinary insights into our early human ancestors, Homo sapiens. Presented by the Evolutionary Studies Institute of the University of the Witwatersrand and the Centre for Early Sapiens Behaviour (SapienCE), University of Bergen, the exhibition showcases the archaeological research conducted along the southern Cape’s coastline over the past 25 years by Professor Christopher Henshilwood, Dr Karen van Niekerk and their teams. Cabinets display carefully crafted replicas of the archaeological artefacts discovered at Blombos Cave and Klipdrift Shelter. The exhibit displays panels illustrating the scientific work of archaeologists as well as films of scenes which recreate the rich daily life of early humans. Celebrating our common ancestry, the exhibition portrays genetic evidence that our human ancestors originated in Africa. One of the most exciting finds discovered at Blombos Cave is an ochre-processing toolkit – showing that Homo sapiens living on the southern Cape coast 100 000 years ago were behaviourally modern. This group of artefacts provides evidence that these people had a recipe to manufacture a red ochre-rich paint, in effect an early chemistry kit, that was mixed and stored in abalone shells providing evidence for the first known use of containers. These finds represent some of the biggest breakthroughs in the manufacture and use of symbolic material culture in our own species, Homo sapiens. View these – and many other fascinating finds relating to our shared African ancestors – at the Spier Old Wine Cellar until 31 August. Admission is free.

FARMING
WINTER RHYTHMS OF THE FOOD GARDEN FARMER NEIL SHARES THE SECRETS OF OUR FOOD GARDEN
Every season has a different role to play to ensure the flourishing of our food garden. After a hot, dry summer, winter is the time for us to add rich compost and manure – returning nutrients to the soil for the next growing season. On sunny days, we prune fruit trees and trim back any plants that have grown wild. We hope for plenty of rain because this spurs growth of winter grasses, which boost the soil’s carbon content. Rains also encourage the leafy greens we’ve planted to prosper – including cabbages, broccoli, kale and fennel. Our root crops such as beetroot, carrots and onions also thrive at this time of year. Crop rotation and companion planting is important to enhance different nutrients and scare away pests. We like to plant cabbages, broccoli and kale after beans.
In between these, we plant marigolds (to distract bugs) and spring onions (which protect the soil from disease). Carrots and peas grow very well together. Radishes and lettuces give a quick crop and complement each other in a garden salad. Strong-smelling herbs such as origanum and thyme planted in and around the vegetables add a lovely flavour to meals and help keep pests out. We return any parts of the vegetables we don’t use to our worm farm so that it can become rich compost. All weeds (there are plenty this time of year!) are put in a big drum and filled with water to ferment for a week or two. This will break down into strong plant food. The weeds are trying to repair any nutrients that may be out of balance, so it is important they are composted and returned to the garden.
Learning to grow Meet our farming students
Meet Khotso and Lonwabo. These two young men have joined Spier’s farming team as students enrolled in a two-year course on the holistic growing of food that is offered by the Biodynamic Agricultural Association of South Africa (BDAASA). Supporting young people to become successful natural food growers is one of the ways we are contributing to the socioeconomic development of our communities. Khotso grew up in the Eastern Cape with little knowledge of farming. “Biodynamics teaches you a lot about caring for the planet, food security, local farming and focusing on people to know what they are eating,” he says.
PAGE 3
“MY COURSE IS MAKING ME AWARE OF THE FOOD WE EAT: WHERE IS IT COMING FROM, HOW WAS IT GROWN, AND IS IT HEALTHY FOR US?” Lonwabo co-founded an urban farming project in Khayelitsha and has five years’ experience of organic food production. “The only inheritance I received from my family is farming knowledge,” he says. “That is why I am so passionate about farming: I believe that the spirits of my ancestors are very happy when I touch the soil for farming purposes. So, Spier is part of my spiritual journey.”

ACCLAIM FOR SPIER’S 21 GABLES RANGE HONOURING THE CAPE’S RICH WINEMAKING HERITAGE
2018 has seen acclaim both at home and abroad for Spier 21 Gables. The flagship range honours Spier’s pioneering contribution to South Africa’s rich winemaking history – which dates all the way back to the 1700s. At the Top 100 SA Wines in May, the 21 Gables Cabernet Sauvignon 2014 won Double Platinum and (along with the Spier Woolworths Private Collection Cabernet Sauvignon 2015) was the most highly rated red wine in the competition. Internationally, the wine received Platinum at the Decanter World Wine Awards and Gold at the Concours Mondial de Bruxelle. The 21 Gables Chenin Blanc 2016 also continues to excel. In 2017 it was featured in the Standard Bank Top 10 Chenin Blanc Challenge and won Double Gold at the Veritas Wine Awards. This year, the wine received Double Platinum at the Top 100 SA Wines. At the Old Mutual Trophy Wine Show in May it received the Harold Eedes Trophy for Best Chenin Blanc and was also given the Old Mutual Trophy for Best White Wine Overall.
“BALANCE & ELEGANCE ARE WOVEN THROUGH EACH OF THESE COMPLEX, COMPLETE AND SUBTLE WINES,” says Spier’s cellar master Frans Smit. “We are delighted with these accolades because they recognise our passionate commitment to crafting quality wines that embody the Cape’s winemaking heritage.”

RECIPE
ROASTED PORK BELLY WITH BAKED APPLES THE PERFECT PARTNER TO OUR RHÔNE-STYLE BLEND, CREATIVE BLOCK 3
A simple cut of pork belly can become a show-stopping centerpiece if you cook it just right: meltingly soft meat topped with the crispiest golden crackling. Simplicity is key – serve it with baked apples and you have a meal fit for a king. The key to really crisp crackling is that the skin side must be absolutely dry before cooking. Keep it open (skin side up) in your fridge for a few hours, or overnight, to dry out before seasoning/cooking it. Ingredients: (serves 4 – 6)
· about 2 kg boneless pork belly with scored skin (choose one with a relatively thin fat layer) · 15-30 ml (1-2 tablespoons) olive oil · 10 ml (2 teaspoons) salt flakes (or 5 ml fine salt) · 1 large or 2 medium onions, sliced into rounds · 10 ml (2 teaspoons) fennel seeds · 10 ml (2 teaspoons) smoked paprika · 375 ml (1,5 cups) apple juice · 30 ml (2 tablespoons) balsamic vinegar · 3 apples, halved
About Creative Block 3
This Rhône-inspired wine is not only a blend of grape varieties but also combines grapes from various vineyard blocks from two coastal regions. The Stellenbosch Shiraz provides the backbone, sourced from a vineyard in the Helderberg situated at 200-300m above sea level and just 7km from the ocean. Shiraz from Groenekloof in Darling complements this structure and offers generous fruits, feminine notes and silky tannins. Mourvèdre from the Helderberg adds a dried coriander note and a savoury undertone, balancing the Shiraz’s effortless sweet fruit. Finally, a dash of Viognier provides floral nuance and a spicy edge. The 2015 vintage won Double Platinum at the 2018 Top 100 SA Wines. Buy this wine online: https://store.spierwines. co.za/
Method:
1. Make sure the skin of the belly is dry by placing it on a rack in the fridge for a few hours or overnight. If the skin is not scored, use a very sharp blade to score lines into the skin side about 1 cm apart. 2. Preheat oven to 240°C and set your oven rack to one setting above the middle. 3. Rub the belly all over with oil and season with salt on both sides. Sprinkle with fennel seeds and paprika on the meat side. In a medium sized roasting tray (just bigger than the belly), arrange a layer of sliced onions, add the apple juice & balsamic vinegar over the onions, then place the belly skin-side-up on top of the onions. 4. Place the roasting tray in the oven for 20 – 25 minutes or until the skin side has bubbled up all over and turned golden brown. Now turn down the temperature to 160 and roast for three hours or until very tender, adding a little water if the roasting tray looks too dry at the bottom. Add the halved apples to the roasting tray for the last 45 minutes of the roasting time. 5. Serve hot, sliced, with the baked apples, slivers of onion and some pan juices.

This year’s Mini Chefs workshops are not only fun, but they provide a greater emphasis on real life learning top open children’s eyes to the wonder of food and exciting cooking techniques. In the monthly workshops, young aspiring chefs aged between 6 and 12 years will get to grips with using sustainable and organic produce, and responsible cooking concepts. We go back to basics to teach our young chefs about cooking for good health and environmental sustainability, as well safety in the kitchen,” says Sarah Prins, the PR Manager at The Table Bay.

Slow Food & Wine Festival Good things take time. Michelangelo’s ceiling fresco in the Sistine Chapel, the La Sagrada Familia in Barcelona, the Grand Canyon in Arizona - whether painted by candlelight over a matter of years by a single artist, crafted over decades by bands of builders, or hewn from stone over centuries by Mother Nature herself, these time-honoured examples of unflinching beauty made their way into the world in the same way - slowly. The 12th annual Slow Food & Wine Festival will take place from 3 - 5 August 2018, there is no better way for the producers of the much-loved Robertson Wine Valley to share their belief in a slow way of life with food and wine enthusiasts who want to savour immersive experiences and prefer to encounter the countryside at a leisurely pace.
What makes this wine so unique, beyond its exquisite coral hue, is that it is a 100% Cabernet Franc Rosé. This is exceptionally rare as Cabernet Franc usually forms part of blends and Rosé is often made up of two or more varietals. This dry Rosé reveals strawberry and raspberry flavours to the attuned nose and is sure to delight even those who do not generally find rosé appealing.
Tell me more! - By now, you’ll know that the Robertson Wine Valley along the famed Route 62 is one of the best spots in South Africa to find truly excellent wines, epic scenery and farm-to-fork eateries. However, when you’re blitzing through this fascinating region en route to another destination, you’re bound to miss out on the good stuff.
Dashing winemaker, Yves Musfeld, told us how he came to make the Onderkloof Bottleneck Rosé “quite by accident”. The farm had a larger yield of cabernet franc grapes than anticipated. This resulted in a bottleneck in the cellar due to lack of space. The only space available was the press and so began the creation of the aptly named Onderkloof Bottleneck Rosé. Your social calendar is incomplete without a visit to one of the chic events at Onderkloof Wine Estate so be sure to like their Facebook page and follow them on Instagram and Twitter for updates. That’s why the valley’s forward-thinking producers decided to stop, collaborate and create a platform for visitors who want to take a peek behind the curtain, meet the makers, slow things right down and enjoy a 360° experience that takes them into the thick of things in Ashton, Bonnievale, McGregor and Robertson. Super, but what does it mean? - For one weekend during the heart of winter each year, the valley’s best-loved winemakers, food purveyors and experience providers push out the boat to welcome you into the fold. This includes everything from fireside dinners in the homes of the valley’s winemakers to wine and dine evenings in underground cellars, single vineyard tastings, food and wine pairings as well as game drives, horse outings and boat rides. If it’s tasty, inspiring, invigorating or just downright fun, you’ll find it on the line-up. When & how do I book? - Book your tickets soon – the festival may be slow by name, but the foodie grapevine is quick as a whip! Each experience may be booked individually, so you can tailor make your festival experience exactly to your liking. The Family Market on the Sunday is free of charge, so feel free to pull in with the whole family. The rest of the 2018 festival encounters may be booked online. Where should I stay? - The valley is magical in wintertime, and you’re going to want to get out there and explore.

Have a clear indication of where the user is - The website’s visitor should always have a clear indication of which site page they are on and how they got there, thus making navigation easier. URL should be easy to remember - One of the most common mistakes in websites is choosing a proper domain name for your company. Your domain name should be easy to remember and easy to spell. Website should be easy to find - Although, once upon a time, the ‘if you build it, they will come’ mantra worked for websites – it no longer does. Due to the fact that there are millions of websites on the Internet, it becomes important for you to ensure that your website ranks high in search engine results and is easy to find. Website should work on multiple browsers - Gone are the days where the only Internet browser that everybody used was Netscape. Today, there are various Internet browsers that people prefer to use. Thus, it becomes imperative that your website will be able to load on any browser – whether that you are using Internet Explorer, Firefox, Safari or Google Chrome. Content should be updated often - The real factor that drives a website towards becoming successful is the content. If content is not updated often, visitors of the website have no reason to visit the site often. Layout consistency is Key - It is important for all your website pages to follow a certain layout in order to maintain a theme and uniformity. If the layout of your website pages is not consistent with one another, your website will look untidy and disorganized, thus not properly reflecting your image online. Eliminate Clutter - Another common mistake that many people make is placing as much content as they can, on one page. Often, many people place so much information together that the visitor has an information overload. Layout consistency is key because it allows the website designer to then organize how the content will be laid out in the website.

Website should be quick to download In today’s fast paced world, patience is slowly becoming a thing of the past. Website visitors want the website to load fast and want to be able to look at photos, articles, and watch videos immediately. When a website has too many large images within it, it will take longer to load. This leads to frustrated visitors who end up leaving your site. GISELLE - PRESENTED BY CAPE TOWN CITY BALLET The Cape Town City Ballet (CTCB) presents Giselle, a popular classical ballet portraying the tragic tale of a young girl who loses her mind when jilted by her fickle lover. The Cape Town Philharmonic Orchestra accompanies at all but one performance. CTCB continues to build on its collaboration, fostered over several decades, with companies in the UK, Europe and the USA, with the appearance of one of Europe’s top ballerinas, Ksenia Ovsyanick, from the Berlin State Ballet, at two performances. She is partnered by the CTCB’s own Senior Principal Dancer, Daniel Szybkowski. Other cast members that take up the leading roles are Laura Bosenberg also with Daniel Szybkowski, Kirstel Paterson with Conrad Nusser, and Mariette Opperman with Xola Putye. The ballet tells the story of a peasant girl named Giselle, whose ghost, after her premature death, protects her lover from the vengeance of a group of evil spirits called Wilis, female spirits who, jilted before their wedding day, rise from their graves at night and seek revenge upon men by dancing them to death. “Cape Town City Ballet’s Giselle combines and executes all that is required for a ballet performance: romance, tragedy, superb technique and visual stimulation that is both authentic and enchanting.” Photo: Laura Bosenberg as Giselle - Photo Credit: Pat Bromilow-Downing

Lovane Boutique Wine Estate launched easy drinking wine It is reported that the current drought in the Western Cape decreased the year-onyear harvest totals in the Winelands in 2018 by 29%. However, Lovane was blessed with a full harvest. They had to be creative, to process everything through the small cellar. As result, Hennie added to his port production, and tried his hand, with great guidance from friends, at Blanc De Noir. He made the ultimate romantic gesture by naming this pink cabernet sauvignon after his wife, “Theresa”. On Wednesday, 20 June 2018 Lovane launched this easy drinking wine. It has an elegant oyster-shell colour due to the juice having had minimal skin contact on pressing. It is the perfect wine for lovers of white wine, who dabble in drinking smooth red wines.
In 2014 life brought the Vissers from Northcliff, Johannesburg to the Lovane Boutique Wine Estate and Guesthouse. It was a well-established boutique winery, planted with 2.5 hectares of Hennie’s favourite red wine varieties, and a 4 star country-styled guesthouse. Packing up a life in Johannesburg, with ten year old twins, one career as a pharmaceutical executive/owner, the other as a management consultant was a major adventure. Hennie, a chartered accountant, had to quickly learn the skills around the science, and the mystery around the art of winemaking. Several of Stellenbosch’s winemakers and viticulturalists embraced the Vissers in their new world by providing coaching and mentoring.

Rent sharing – great idea, but what about the insurance? Young professionals on their starter salaries tend to share the cost of living expenses by splitting rent and other monthly expenses with their peers. Sharing the cost of rent is a cost-effective exercise; however, this thrifty arrangement can complicate matters when taking out or lodging an insurance claim.
If you’re sharing a home or apartment, be sure to first check whether your insurer will offer home contents cover for commune living. Nagtegaal says this type of insurance is taken out by the tenant. But, if there are items in the house that belong to the owner – such as a fridge or washing machine – the responsibility for their maintenance and insurance should ideally be covered in the rental agreement. Homeowners insurance - Homeowners’ insurance, building or property insurance covers the structure of the home and any permanent fixtures and fittings that form part of the building. “The homeowner is usually responsible for taking out this kind of insurance, and the tenant should ensure that such cover is in place when taking out a lease,” explains Nagtegaal. “A word of caution, though. If the tenant damages the permanent fittings and fixtures through causes not stipulated in the policy, they could be held liable for the damages,” says Nagtegaal. For this reason, Nagtegaal recommends that tenants ask to see the policy when they sign the lease so that they know what their areas of risk are.
“Rental agreements and insurance can be overwhelming, perhaps even more so to a graduate living away from home for the first time,” says Vera Nagtegaal, the Executive Head of Hippo.co.za. She suggests that the first step is to understand the different types of insurance cover for your home and its contents, as these determine where the responsibilities lie. Home contents cover - Home contents cover or household insurance usually offers cover for items such as electric appliances and furniture kept and utilised inside the property.
So, what happens in the case of a shared rental? “Firstly, a tenant must ensure that the rental agreement allows for subletting before bringing a new person into the home,” says Nagtegaal. If there are two tenants, or one tenant and a subletter, they should take out separate policies, or share a single policy with full disclosure about the ownership split of the contents.“Disclose everything so that if a dispute arises, you have proof that you were honest from the get-go.” Nagtegaal adds that failure to honestly disclose all the details of a rental arrangement could result in a claim being rejected and could end up in a fraud charge if the insurer was intentionally misled. “Insurance is an extremely useful financial tool that protects you from some of the risks associated with modern living arrangements, but it must be used honestly and appropriately,” concludes Nagtegaal.
