A detailed analysis of almost 2,400 reviews from safari-goers and African travel experts was carried out to determine the 50 best safari parks on the continent. And while the winner was Serengeti National Park in Tanzania, South Africa had a very strong showing with 14 parks in the top 50 (more than 25% of the top 50 were South African parks).

SafariBookings.com, an online marketplace for African safaris, conducted its annual study to unequivocally determine the 50 best African Safari parks of 2019. Not only did South Africa feature strongly in the top 50, it also had two parks - Mala Mala game Reserve and Sabi Sand Game Reserve - in the top 10.

The reason South Africa has a lot of parks in the top 50 is probably because of the sheer number of protected areas in the country, and the high visitor numbers they receive. The number of parks creates a high level of competition and this means that the wildlife watching experience is generally of a high standard. Currently the country has 2 parks in the top 10 and it will be interesting to see if they can better this result in coming years.

City Looks To Shift Its Events Portfolio Into High Gear Following the wildly successful Red Bull Cape Town Circuit on Sunday 2 June 2019, the City of Cape Town’s Executive Mayor Dan Plato and Mayoral Committee Member for Community Safety JP Smith hosted a media briefing to outline the City’s Events Calendar for the rest of 2019, and announced the City’s intention to add a brand new international motorsport event.

The City of Cape Town has been approached by the Cape Town Formula E Consortium about the possibility of bringing the Formula E to the city. Formula E, sanctioned by the International Automobile Federation (FIA), is a class of motorsport that uses only electric-powered cars and has been operational since 2014. Supported by the City, the consortium will undertake a feasibility study this month in order to test the practicality of hosting this event in Cape Town.

Nearly R5 Billion In Trade Deals For Western Cape In 2018/19

Cape Town and the Western Cape’s International Trade Promotion Unit at Wesgro announced that it has helped secure R4.98 billion in trade declarations during the 2018/19 financial year, on behalf of the City of Cape Town and the Western Cape Government.

This follows over R924 million in trade deals being declared by Wesgro-assisted exporters in quarter four of the financial year. The International Trade team also assisted in landing R381 million in outward foreign direct investment into the rest of Africa by Western Cape companies during 2018/19. Wesgro receives its international trade promotion mandate from the Western Cape Government’s Department of Economic Development and Tourism (DEDAT) and the City of Cape Town, and assists companies through its export advancement programme, outward selling missions and through business agreement facilitation, amongst other services.

In the three years that Formula E has been hosted in Hong Kong, it has contributed approximately R1,4 billion into that economy.

“An economic injection and the accompanying job creation opportunities for our local communities are just some of the benefits of bringing Formula E to Cape Town. Partnerships between the City and a group of talented event organisers led to Cape Town being voted the World’s Leading Festival and Event Destination for 2018 at the World Travel Awards.

The City is officially launching its events e-permit system – an online tool which allows event organisers to submit their permit application without the fuss over paperwork. This forms part of the administration’s efforts to modernise events bookings and to enable the ease of doing business for the event organisers. By the end of March 2019, the Events Office had issued 1 047 event permits. The number is likely to exceed the 1 277 permits issued in the previous financial year.

“Our support of events – whether through financial means or services – is also increasing every year. In this financial year, we have already supported 120 events. If one thinks back to 2012, when we first established the Events Department and adopted the Integrated Events Strategy, we only supported 28 events. The department has a budget of R50 million a year to support these events, but the return on investment is exponential each year. The top eight events in Cape Town generate over R3 billion of economic activity and every new event creates the environment for many new sustainable jobs in our city,” said Alderman Smith.

Collaboration To Promote New York/Newark Cape Town Route As a mark of a collaborative effort between United Airlines and Cape Town Air Access, Cape Town and the Western Cape was the only destination represented at the annual United Airlines Global Sales Conference in Anaheim on 17 June 2019 to help promote the Newark/New York – Cape Town route.

Cape Town Air Access and Wesgro was joined

by South African Tourism in promoting the Cape to over 750 conference delegates in attendance. This collaborative promotion of the direct flight to Cape Town was further extended through meetings with US tour operators over two days following the conference.

On 15 April 2019, Cape Town Air Access welcomed United Airline’s announcement of the upcoming, nonstop New York/Newark – Cape Town route. This direct flight, commencing from 15 December 2019 out of Newark Liberty International Airport, marks a long-awaited return to Africa for United.

This route will provide a significant boost to the Cape economy. Western Cape Minister for Finance and Economic Opportunities, David Maynier said: “The New York/Newark – Cape Town route is a game-changer for the Western Cape. In addition to the increase in tourism revenue, through thousands of additional travellers, it is also estimated that the new route will help increase trade between the Cape and the USA, with cargo capacity on the route contributing R94 million in potential trade.

This means that we will also be growing exports, and attracting investment. This aligns with our key strategic focus of growing the economy and creating jobs across the province.”

Cape Town Air Access is a collaborative, award-winning project, and the focal point for proactive international air route development in Cape Town and the Western Cape with support from the public and private sectors, including: Airports Company South Africa, the City of Cape Town, the Western Cape Government, South African Tourism, Cape Town Tourism and Wesgro.

Since its commencement in July 2015, Air Access has assisted Cape Town International Airport in establishing 15 new routes – including the new Newark – Cape Town route that will be operated by United Airlines – and expanding 19 existing routes. During this period, more than 800,000 inbound seats were added to the network, doubling international seat capacity at the airport and adding an estimated R6 billion in direct tourism spending to the economy.

Karoo National Park - The Karoo National Park is a wildlife reserve in the Great Karoo area, near Beaufort West. Most of the wildlife that once roamed this area has been eradicated, but Karoo National Park is a relatively small area where the habitat is protected, and you can stop to appreciate this subtle environment.

Karoo National Park is primarily a wilderness destination, although it is also home to many animal species. Two of the Big Five have been re-introduced: lion and black rhino, but they are only occasionally seen. Large herbivores to look out for are red hartebeest, black wildebeest, eland, the two zebra species, kudu and springbok.

Animals can be seen year-round at the Karoo National Park. The timing of your trip should, instead, depend on the weather. The heat of the so-called Wet season (October to April) may dissuade you from visiting then, although it’s the best time to see migrating birds.

The 2019 Eat Out Woolworths Sustainability Award Entries Are Now Open “At Eat Out we believe an excellent meal need not – and should not – involve the unnecessary suffering of animals or the irresponsible use of resources. There’s a way to go still, but Eat Out is as much about supporting the restaurant industry and championing the move towards more ethical practices as it is about finding great places to eat,” says Adelle Horler, Editor in chief of New Media’s Owned Titles.

“This is the fourth year we’re honouring chefs and owners who are making the effort, and it’s heartening to see more and more restaurants making environmental and socially responsible practices a priority,” she adds.

Says Feroz Koor, group head of sustainability at Woolworths Holdings: “We launched this award with the goal to raise awareness and acknowledge environmental and socially responsible sourcing in the restaurant industry, a practice that we strive for in our own business.”

Entries for the 2019 Eat Out Woolworths Sustainability Award, South Africa’s most prestigious accolade for restaurants contributing to more socially and environmentally responsible practices, are officially open.

Candidates can find the entry form on the Eat Out website. Entrants will be judged based on a strict set of criteria in three categories: responsible sourcing, community impact and environmental impact. Scores are allocated for the sourcing of meat, seafood and fresh produce; the design of menus; the impact of the restaurant on its surrounding communities; treatment of staff; use of resources like water and electricity; and efforts to recycle, among other measures.

Introduced in 2016, the Eat Out Woolworths Sustainability Award acknowledges the restaurant that brings its customers seasonal, local and ethically sourced produce with minimal impact on the surrounding environment while also making positive social contributions.

All criteria need to have been met for six months or longer in order for a restaurant to qualify for this award. The Werf Restaurant at Boschendal won last year’s award, in recognition of its commitment to implementing environmentally and socially responsible practices.

In the build-up to the awards, Eat Out hosted two workshops in Cape Town and Johannesburg, designed to help interested restaurants on the journey to more sustainable practices.

The winner will be announced at the 2019 Eat Out Mercedes-Benz Restaurant Awards, which will be held in November. Interested parties can download the entry form from the Eat Out website. The closing date for entries is 31 August 2019.

The technology means that customers no longer need to present their passport or boarding pass at the departure gate – only when they check in and go through Security. Instead travellers simply look into a camera prior to boarding, wait for their biometric data to be verified and then walk onto the aircraft.

The commitment to this technology is part of the airline’s £6.5bn investment for customers. British Airways was the first UK airline to use biometric technology to board flights from the US, working in close partnership with the US Customs and Border Protection (CBP) to implement the technology, which has enabled the airline to hugely speed up its boarding process.

At Orlando, British Airways is boarding almost 240 customers in 10 minutes – becoming the first carrier to set up permanent facial recognition gates at the airport.

Heathrow - British Airways was also the first UK airline to use the technology on domestic (UK) flights. More than three million customers have boarded an aircraft this way – with all domestic departures from the airline’s home hub at Heathrow Terminal 5 now boarded biometrically.

For international flights, self-service boarding gates have now been installed at the terminal, allowing customers to scan their own boarding cards to gain access to their flight. It’s the first step towards biometric boarding on international flights from the UK. Investment in technology - Raoul Cooper, British Airways’ Senior Digital Design Manager, said: “We are continuing to pioneer the use of technology and automation to enhance the airport experience and ensure that our customers’ flights depart on time. The airport of the future will be built upon biometric technology, from checkin and baggage drops to security checks and boarding. These days, automation is a part of everyday life, as is biometric technology via our mobile phones. We’re working with our technology partners and the US government to explore how we can use this technology in new and innovative ways to give our customers the stress-free, easy airport experience they tell us they want, while ensuring security is always our top priority.”

In October 2018, Heathrow Airport announced a £50 million project to roll out new end-to-end biometric services from summer 2019.

SPECTACULAR WINTER WONDERLAND IS BACK Disney on Ice is returning to GrandWest from 10 -14 July 2019 with their winter wonderland titled: Disney on Ice presents Magical Ice Festival. In this year’s muchanticipated show, Mickey Mouse and Minnie Mouse will bring the most magical moments from across the Disney kingdom to life on ice.

SPIER LAUNCHES SEAWARD A NEW WINE RANGE INSPIRED BY THE CAPE’S COASTAL TERROIR

Spier has spent the last two years developing a unique duo of wines that pay homage to the benefits of growing grapes along the coast. The aptly titled Seaward range is comprised of a sophisticated, lightly-wooded Chardonnay and a layered, spicy Shiraz.

Seaward wines are truly differentiated by their terroir, both within South Africa and globally. The Cape is one of the few wine growing regions in the world where two different ocean currents converge.

Moreover, our coastal vineyards are distinct from those located inland, because the surrounding mountain ranges act as a natural barrier to those very cooling sea breezes that give ocean-facing grapes their unique character – a character that reflects resolutely in both Seaward wines.

The Spier winemakers, under Cellar Master Frans Smit, make their selections from a narrow band up to 25km from the icy Atlantic seaboard and influenced by the temperate waters of False Bay. “These vines grow in some of the oldest soils in the world, comprising decomposed granite and weathered shale. The water retention is excellent due to their high

clay content, which enables us to farm these dryland (without irrigation), giving them an intensity of flavour,” Smit says.

At the height of summer, the confluence of the cooling ocean breezes and cooler soils allows the vines to thrive in optimal conditions for gradual ripening. The vines grow relatively disease-free, and minimal intervention is needed to produce a crop of outstanding quality flavour intensity, year after year. Because ocean-facing grapes have thicker skins and are generally smaller in size than their inland counterparts, they tend to yield less fruit – these factors make it a considerable commitment on Spier’s part to invest in making wines solely with these grapes.

Yet the benefits are clearly evident in the resulting wines.

“There is a purity of fruit in these wines, with great concentration, balance and finesse,” Smit says. “The common thread is a saline minerality, given the proximity to the ocean.”

Made with grapes sourced from the Tygerberg Hills, this lightly-wooded wine has aromas of ruby grapefruit, mango, citrus with undertones of raw almonds.

The creamy palate offers fresh citrus and nectarine notes with well-integrated vanilla on the finish.

High-quality Shiraz grapes were selected from Darling, Durbanville and the southern side of Stellenbosch for this wine.

Having matured for 14 months in a mixture of first, second and third fill oak barrels, the Shiraz has beautifully layered aromas of mulberry, violets and plum supported by infused allspice. The palate has richness with good length and smooth tannins.

SPIER BLENDS SHINE AT PRESTIGIOUS CONCOURS MONDIAL DE BRUXELLES 2019 Spier has scooped three of the fifteen gold medals awarded to South African wines at the prestigious Concours Mondial de Bruxelles 2019. Judged by an international panel, Spier’s flagship Frans K. Smit Red Blend 2015, as well as the Creative Block 2 2018 and the Creative Block 5 2016 blends, were awarded Gold.

Named after Spier’s Cellar Master, the Frans K. Smit pays tribute to his role in transforming Spier into the internationally accoladed winery it is today. The Bordeaux-style red blend is comprised of Cabernet Sauvignon (50%), Merlot (30%) and Cabernet Franc and Petit Verdot (both 10%) — all sourced from Stellenbosch’s Helderberg region.

“This wine represents the very pinnacle of our commitment to crafting terroir-driven wines of exceptional quality,” Frans Smit says. “We’re delighted that this, along with our Creative Block wines, have received this award.”

The Spier 21 Gables Chenin Blanc 2017 and Spier 21 Gables Cabernet Sauvignon 2015 both received silver medals.

PORK AND FENNEL MEATBALLS A PERFECT ACCOMPANIMENT TO THE SEAWARD SHIRAZ

THIS COMFORTING WINTER DISH IS FRESH UPDATE FROM YOUR REGULAR, POPULAR BEEF MEATBALL RECIPE. SERVE THESE HEARTY NUGGETS WITH PASTA, MASHED POTATO OR WITH CRUSTY BREAD. Serves 6.

Ingredients

FOR THE SAUCE: • 45 ml olive oil • 3 cloves garlic, crushed/grated • 2 cans (800g) whole tomatoes, blitzed to a smooth pulp • 10 ml (2 teaspoons) sugar • salt & pepper, to taste

FOR THE MEATBALLS: • 30ml olive oil • 1 onion, finely chopped • 1 fennel bulb, finely chopped (save some of the fronds for serving) • Rind of a small lemon, finely grated • 10ml smoked paprika • 1kg pork mince • Salt and pepper, to taste Method

PREPARE THE SAUCE: Heat the oil in a medium pot and fry the garlic over medium heat until golden.

Add the smooth tomatoes, sugar, salt & pepper and bring to a boil. Simmer uncovered for about 15 minutes or until reduced by a third. Set aside.

PREPARE THE MEATBALLS: In a wide pan, heat the oil and fry the onions, fennel and lemon rind until it is soft and fragrant. Remove from the heat and transfer to a mixing bowl, adding the smoked paprika, mince salt & pepper.

Mix well. Shape into balls (about 4-5 cm in diameter). Using the same pan as before, add more olive oil and fry the meatballs on all sides over medium heat until just cooked. Serve with the warm tomato sauce, scattered with fennel fronds (and pasta / starch of your choice, optionally). Pairs beautifully with a glass of Spier Seaward Shiraz.

CELEBRATING NEW ARRIVALS SPIER WELCOMES TWO NEW ART INSTALLATIONS

The Spier’s collection of contemporary artworks has grown with the arrival of two new installations.

Emerging Illusionistic Bend

This artwork by Rodan Kane Hart can be found near the Spier Hotel, where it adds visual interest to the landscape through the illusion and interplay of material and shadow, and invite guests onto the riverside walkway.

The public spaces at Spier provide a wonderful opportunity for visitors to engage with our diverse South African culture through art. Continuously searching for works that live well outdoors, the Spier Arts Trust intends to add large-scale works periodically, contributing to the visitor experience while providing artists with a platform for their unique artistic expression.

Created in 2015, the work forms part of a series of metal sculptures by the Joburgborn artist that unpack the shapes and ideologies of contemporary South African cities. Emerging Illusionistic Bend uses a 90 degree angle as the primary rubric.

This shape has been reproduced, inverted, and placed in regular intervals apart to generate complex structural patterns and forms; essentially creating the illusion of bending steel.

Uthomi

A large-scale mosaic fountain conceptualised by Mozambican artist Lizette Chirrime has been installed in a water feature close to Vadas Smokehouse & Bakery. The ambitious, vividly coloured work was produced by the Spier Artisan Studio.

Uthomi, which is Chirrime’s first mosaic project, celebrates and showcases her talent for combining colour and abstract form, offering a vibrant playground for the imagination.

Having grown up on the Maputo coast, the Cape Town-based Chirrime often references water and other elements of nature in her work. Informed by a keen awareness of the negative impact humans can have on the environment, she hopes to inspire and evoke positive change through her art.

SPIER ARTISAN STUDIO

A large mosaic by Marco Cianfelli situated between the Conference Centre and the Spier Hotel. It features nine 4.1m high columns that together create a completed picture based on Michelangelo’s image of a male slave in the ecstatic throes of dying.

Situated between the Wine Collection Point and the Tasting Room, at the entrance to the Werf, the Spier Mosaic Kraal features the works of 16 contemporary South African artists. It is South Africa’s first permanent outdoor exhibition of mosaic.

Artist Jenna Burchell has transformed twelve ancient rocks into interactive sound sculptures, which have been installed along the dam near the Tasting Room.

Visitors to Spier estate can also pop into the satellite Stellenbosch space of the Spier Artisan Studio. The airy, light-filled studio allows guests to see artisans at work as they create pieces in mosaic and beadwork in collaboration with South African fine artists.

SPIER SUPPORTS COMMUNITY KEEPERS HELPING KIDS AT SPARK SCHOOL IN LYNEDOCH REACH THEIR FULL POTENTIAL

Spier’s Growing For Good initiatives invest in learning that empowers our communities to make positive social and environmental change. One of these initiatives is the Community Keeper programme at SPARK Lynedoch, a primary school which is close to our farm in Lynedoch, just outside of Stellenbosch.

This is the sixth school in the SPARK network, which is dedicated to offering high-quality, affordable private education, with many learners coming from disadvantaged backgrounds.

Some of the children who attend SPARK Lynedoch School encounter significant challenges at home and in their communities. These include a lack of access to basic resources, unsafe and, at times, violent home environments as well as the ongoing prevalence of foetal alcohol syndrome.

“Given the socioeconomic challenges they face, we knew that there was a need for socio-emotional support to learners and their families. The partnership with Community Keepers has provided a unique network of specialised expertise to best support the children,” says Jess Schulschenk, the director of the Sustainability Institute, which was instrumental in rolling out this programme.

The Community Keeper office employs Mieke van de Merwe, a qualified social worker who conducts therapy at SPARK throughout the week. An additional therapist visits weekly to counsel learners who need extra support.

Through contributing to the children’s social and emotional wellbeing, the Community Keepers programme aims to motivate students to reach their full potential and to provide assistance in areas of need.

Children often need professional support to face and overcome the dangers and challenges of society. The programme’s activities fall into four areas: The Support Keepers initiative offers oneon-one individual assessments, therapy and counselling.

The Life Keepers initiative offers personal and social development to the kids in a group setting — through classes and workshops.

The Parent Keepers initiative provides parents with workshops and developmental sessions to enhance their parenting skills.

Lastly, the Teacher Keepers initiative provides professional support and development of educators so that they are better equipped to deal with the psycho-social challenges they face in the classroom and among colleagues.

“It’s a privilege serving as the Community Keeper at SPARK in Lynedoch,” Mieke says.

“ALTHOUGH THE CHILDREN’S CIRCUMSTANCES CAN BE DIFFICULT TO DEAL WITH, IT IS REWARDING TO BE PART OF POSITIVE CHANGE IN THEIR LIVES. EVEN THE BIGGEST CHALLENGE SEEMS SMALLER WHEN WE TAKE A STEP CLOSER AND TAKE ACTION.” Mieke finds being able to contribute to the overall wellbeing of the community one of the most fulfilling aspects of the role. “Previous clients who bring their classmates to the Community Keepers office for psychosocial support, vouching for the services we offer, makes it all worth it,” she says.

These include tackling one of South Africa’s most pressing challenges, youth unemployment, through mentorship in hospitality, wine and agriculture.

All Spier wines display the Growing for Good icon – a heart in a vine leaf that represents both community and the environment. This icon reminds consumers that, by choosing Spier, they are contributing to positive social and environmental impact.

A 42kW solar power system installed almost two years ago on the Spier Conference Centre roof has resulted in significant energy savings, offsetting roughly 40% of Centre’s annual power usage. The 156 solar panels are also an important tool in the fight against climate change.

When electricity demand in the Centre is low and generation is high, the excess power is used by other buildings on the estate, ensuring this energy doesn’t go to waste.

CHEF PJ’S FABULOUS FERMENTS FROM SAUERKRAUT TO KOMBUCHA, THERE’S AN ABUNDANCE OF FERMENTED FOODS AND DRINKS AT SPIER Chef PJ Vadas has been satiating the growing appetite for fermented delicacies at both the Spier Farm Kitchen and VADAS Smokehouse & Bakery.

“The demand for fermented foods has surged in recent years, and for good reason,” PJ says. “It’s is a really great and healthy - way of adding interesting flavours and textures to food.”

PJ uses seasonal vegetables picked from the Food Garden such as cucumbers and mushrooms, which he places in brine to achieve lacto-fermentation; the inclusion of vine leaves releases tannins which help to keep the veggies crisp.

After fermentation, the mushrooms, he says, are “super umami - almost like soy sauce”.

Using brine means the fermented veggies are smoother and less tart than products pickled in vinegar.

“It all depends on what style of fermentation you want,” he says. He’s made a vinegar with Spier’s organic red wine that he’ll be using to pickle products in the months to come.

Some fermented items, like his sauerkraut, are used as sides at VADAS, while others are bottled and sold at the Spier Farm Kitchen, making them ideal as pantry-fillers and gifts. His kimchi and kombucha are available at both. The kombucha is a refreshing blend of rooibos, green tea, combined with lemongrass and other herbs. You can also enjoy it in a house cocktail at VADAS,

where it is artfully combined with gin and tequila.

“We’re continuing to experiment and expand our selection of fermented products,” PJ adds. He’s even used locally sourced buffalo milk to make kefir — a thin yoghurt-like fermented milk.

In which countries can young people au pair?

How much does it cost to au pair abroad?

There are certain programme costs involved to au pair abroad, but the au pair programme is probably one of the most affordable “work abroad” programs available. Extra costs include the following: applying for a passport, police clearance and International Driving Permit. Visa costs and programme fees also need to be considered by applicants. These extras will be different for each programme.

Some programmes, such as au pairing in America, will include the flight costs.

Explain the requirements?

Applicants need to be 18 - 29 years of age, have a Grade 12 high school qualification, be willing to commit for at least 12 months, be unmarried and have no children of their own, and have some experience with children. Some countries also require an International Driving Permit.

Get curried away this winter - by Samarie Smith Winter invites warm and hearty aromas and we all like to indulge a little more to conquer the cold.

I find wine and curry combinations both exciting and challenging. Consumers should feel free to explore and experiment, but there are some golden rules when pairing wine with curry. Remember that you can tweak the dish but not the wine, so be mindful of the wine you choose. Secondly, honour the time you spend in developing those intricate flavours of your curry to make sure that both the food and wine give the other a platform to perform at its best.

South Africans have sweet palates, but it is up to you to evolve that by introducing balanced flavours of sweet, sour, bitter, salty and umami. Before you spoon a dollop of chutney onto your plate to add sweetness, let the wine do that for you. That being said, not all wines need to be sweet to go with a curry. Aromatic wines do a great job to create that percieved sweetness and tricking your brain into believing you have mastered the balance. The fifth element when enjoying food and wine will always be the place and and company in which they are consumed so be sure to make an occasion of any food and wine experience, no matter how small.

Guidelines for all you curry and wine lovers Sweetness: Off-dry wines are a go to for a great curry experience. Riesling is a good example and offers both sweetness and lovely aromatics. For more intense curries, more luscious wines like muscadel and bukettraube can be ideal to temper the heat and the spice. Ripeness: Big and bold CheninBlancs are favourites to pair with warm curries as the higher alcohol (and the texture the glycerol provides), can balance the experience without the heat dominating the wine. Intensity: Wines with great intensity that lingers in your mouth like a well made Sauvignon Blanc and Pinot Noir are great curry partners. Just be mindful of rich tomato sauces that can make these wines taste steely. A riper Cabernet Sauvignon could do the trick. But yes, good intensity and concentration allows the wine to have the final say and linger longer than the taste of the curry itself.

Temperature: Wines can be served at a cooler temperature which will also relieve your palate. Aromatics: The wine will always be the more gently partner when it comes to texture, but its intensity and aromas can never be underestimated. Viognier’s alluring perfume of florals, peach and spice adds finesse to your curry experience and elevate it to a different level. Spice: Gewürztraminer can be dry or off dry but its nuances of rose petals and Turkish delight makes it a fond partner for any curry. Light: Believe it or not but light white wines low in alcohol, serve a purpose here. They can serve as a cooler, quench your thirst and certainly beats beer!

The Chocolate Festival is back!

S.Pellegrino Announces Line-up of Young Candidates

One Hundred and thirty-five young chef candidates from 12 regions, representing 50 countries, are now one step closer to reaching the S.Pellegrino Young Chef 2020 Grand Finale. There were over 2,400 applicants from all over the world who wanted to take part in this globally renowned competition to find the world’s best young chef, and of those 135 who successfully reached the semi-finals seven are from South Africa.

Each young chef’s application and signature dish was evaluated by culinary experts at the World’s Leading International Educational and Training Centre for Italian Cuisine, ALMA, who are in charge of the candidate selection.

ALMA’s selection process hinged on three key criteria: technical skills, creativity and a personal belief in the transformative power of gastronomy as a device for positive change in society.

Applications for the 2020 edition of the global competition grew by 20% compared to the past edition, moreover, the percentage of women registered among the candidates increased to more than 10% - a number that needs to grow, but that shows the first results of the commitment taken by S.Pellegrino for gender balance and inclusivity.

Between August and December 2019, the candidates of each region will compete in the regional challenges. Each region will have a jury composed of leading independent chefs – which in the past have included luminaries such as David Higgs and Chantel Dartnall – who will judge the candidates’ signature dishes and select the regional winners of the four awards.

South Africa is well represented in the Regional Finals for the Africa and Middle East region, with seven out of ten places awarded to young chefs from some of South Africa’s top restaurants including 3 young chefs from the Western Cape. The semi-finalists are: Kayla-Ann Osborn (The Chefs Table, Umhlanga), Logan Leisse (Cavalli Estate, Somerset West), Callan Austin (Le Coin Français, Franschhoek), Daniel Payne (View Restaurant at The Four Seasons Hotel, Johannesburg), Marcus Gericke (Qunu at The Saxon Hotel, Johannesburg), Meshen Pillay (Reuben’s at The Capital Moloko, Johannesburg), Paul Thinus Prinsloo (The Restaurant at Waterkloof, Somerset West), Elissa Abou Tasse (Maroun Chedid S.A.L, Beirut, Lebanon), Aytekin Yamaç (Hezarfen Restaurant, Turkey), Martim Moreau Maita (The Park Hyatt, United Arab Emirates).

By the end of December 2019, whichever of these Young Chefs become official finalists, will then move on to the Grand Finale to be held in June 2020. Throughout the months of preparation for the competition, each finalist will be accompanied by their Mentor Chefs, who will provide them with guidance on how to improve their signature dishes and support them in their preparation for the international finals.

Stellenbosch University starts training of Data Engineers Data Engineers must critically analyse complex systems in order to engineer innovative solutions to real-world problems to effect fundamental societal impact.

The Faculty of Engineering at Stellenbosch University will introduce a new BEng degree in Data Engineering from February 2020. This degree is a new specialisation stream in the existing undergraduate degree in Electrical and Electronic Engineering, the BEng (E&E).

“The purpose of this new specialisation in Data Engineering is to prepare our students for the Fourth Industrial Revolution where the world of work has fundamentally changed and there is a deluge of data that needs to be structured, modelled and analysed. The purpose is to enable data-led organisations to discover the underlying knowledge and make well-informed decisions,” says Prof Wikus van Niekerk, Dean of Engineering at SU. Data Engineering encompasses all tasks required to make data available for analytics, knowledge discovery and decision-making processes. Data engineers develop and maintain an organisation’s data pipeline systems, and implement algorithms to transform data into a useful format for analysis. Tasks include the collection of data, storing data, data synchronization, data transformation, data cleansing, data governance, and the development of data models.

Data engineers must have technical skills, including a deep knowledge of database design and multiple programming languages. Furthermore, they need excellent communication skills in order to present their findings in a manner that can be easily understood by an audience.

From the first year of study, the Data Engineering specialisation is built on the solid foundation of Mathematics, Statistics, Computer Science, and Artificial Intelligence. The specialisation also introduces new undergraduate modules in Data Engineering that cover topics such as Big Data Platforms, Probabilistic Graphical Models for Machine Learning and Fundamentals of Deep Learning and Artificial Intelligence.

Students will develop the engineering skills to create mathematical, physical and statistical models of real-world systems, including data systems.

Upon obtaining the qualification, Stellenbosch University’s new Data Engineers will be able to integrate these knowledge areas to critically analyse complex systems in order to engineer innovative solutions to real-world problems to effect fundamental societal impact. This will be demonstrated by students successfully completing a capstone project related to Data Engineering in their final year of study.

The existing BEng programmes and specialisations will have a limited exposure to Data Science, but the new specialisation in Data Engineering will go into depth into the mathematical and statistical fundamentals of Data Science. This initiative supports the soon to be established School for Data Science and Computational Thinking at Stellenbosch University.

SA Entrepreneurial Business Acquired By Global Organisation A small team of Cape Town entrepreneurs who invested R22 000 in 2006 to start up a fledgling business recently saw a phenomenal return on their founding capital when they sold their business to US based organisation Ecolab - a major global provider of technologies and services to the water, food, energy, healthcare, industrial and hospitality markets.

Lobster Ink, which is a pioneering technology platform that provides online training to the desk-less workforce in the hospitality and tourism sector, was acquired by Ecolab for an impressive multiple on their annual $24 million turnover. From small beginnings in South Africa, Lobster Ink has grown rapidly and has trained people digitally in 133 countries across 13 languages for the world’s largest and most luxurious hotel groups - from Africa to the Middle East and the US. Lobster Ink is now based in Geneva, Switzerland. Fasie Malherbe, co-founder and President of Lobster Ink, explains that he and his business partners started Lobster Ink out of a desire to travel more and experience the best in hospitality, while uplifting and developing skilled employees within the industry. Together they came up with the idea of providing personalised and customised training to the hospitality staff in order to maximise the guest experience.

“Whether it was food, wine, housekeeping, guest relations etc., the focus was always performance and development, ensuring that a considerable return on investment was presented after every major initiative. We developed training modules for the relevant staff members and went out and conducted this training ourselves.”

“It was centered around providing hospitality staff with the skills required to deliver on the luxury expectations of some of the world’s most discerning travellers. The hospitality industry is one of the only industries where you can take someone with no experience off the street, or fresh from college, or out of the military and rapidly train them with the necessary skills to enjoy years of career success and growth.”

Malherbe, who was a chef and studied hospitality, says that many of the staff they trained in some of the most expensive tourist destinations in Africa had no previous experience in luxury hospitality. It turned out that there was a huge need for the training provided by Lobster Ink, and things evolved from there.

Lobster Ink went from face-to-face training into video production - developing video-based African focused versions of their training modules. Following this, demand saw their product evolving to become mobile friendly and online based.

“This was our break into the global space,” says Malherbe. “Hard work and careful planning paid off. The first pioneering clients who gave us our big break were Singita and Wilderness Safaris, both of whom made huge investments into the training of their teams. Then came City Lodge and Southern Sun and the like. Clients that followed included Hilton Worldwide, IHG, Four Seasons, Marriott International Hotel Group. Malherbe advises that Lobster Ink being acquired by Ecolab was neither luck nor chance but was a targeted strategy as Ecolab align 100% with the vision that Lobster Ink have, which is to Photo: Fasie Malherbe enable potential in people.” co-founder of Lobster Ink Malherbe adds that it is not just about foundation skills for initial employment but also about up-skilling and remaining relevant in the face of constant changes within that particular industry. “In line with online, on-the-job learning that allows employees to earn while they learn is the re-establishment of apprenticeship programmes in South Africa – such as they have in Europe currently. This allows young South Africans to start working, earning and learning at a young age.”

Malherbe is a serial entrepreneur with a history of business start-up successes. Lobster Ink is the third major business built from scratch before being sold for a solid return - with Malherbe also having founded the well-known Roundhouse Restaurant in Cape Town, as well as innovative beverage distributors Under The Influence.

With his extensive knowledge and experience on entrepreneurial success Malherbe provides some advice for SA entrepreneurs, saying that there is so much money available right now for good ideas, and that the time is now to get in before the large corporations find all the good ideas and come up with the disruptions.

“On the global business stage there is more money available than ever before to invest in wild ideas. Wealthy individuals all across the globe all looking for the next great ‘get rich quick’ idea. But you need to go big or go home,” Malherbe concludes.

Frolic in the Flowers!

a classic musical that still resonates

at Wild flower show

South Pacific is an epic musical romance by Rodgers & Hammerstein about love and conflict during World War II. It originally premiered on Broadway in 1949 and by the time it closed in 1954, it was the second-longest running musical in Broadway history.

The story follows American nurses and sailors stationed on a Pacific island during the war. Ensign Nellie Forbush, a self-ascribed “hick” from Southern USA, is falling in love with Emile de Becque, a French expat living on the island. Nellie is optimistic about their future, but their relationship hits an unexpected bump.

She discovers he has two mixed-race children from his late Polynesian wife and is unable to overcome her deepseated racial prejudices. Meanwhile, Lt. Joseph Cable enters a passionate relationship with Liat, a local Polynesian islander. He too finds it difficult to overcome how their love might be received back home. He describes how racism isn’t born in you - that it happens after you’re born - in the song “You’ve Got To Be Carefully Taught”.

South Pacific is revered for its message of tolerance and humanism, making it still resonate strongly. “The high-energy story carries both humour and sadness, which is the essence of any good musical,” said the director of the show, Kyla Thorburn.

“It delves into questions about love, war, what is worth living for, and culturally embedded bigotry – questions still relevant today.”

South Pacific is running at the ArtsCape Opera House from 20 July - 10 August 2019.

For the first time since the events inception in 2001, South Africa’s largest Women’s Day Celebration, the Totalsports Women’s Race will be hosted on one day (Friday, 9 August 2019 / National Women’s Day) across three major cities (Johannesburg, Cape Town and Durban).

Cape Town City Ballet presents popular - Sleeping Beauty

Cape Town City Ballet presents the popular favourite Sleeping Beauty as part of its 2019 Autumn/Winter Season.

For the production, the company welcomes leading international guest artists Vadim Muntagirov and Sarah Lamb (The Royal Ballet), Precious Adams (English National Ballet), Andile Ndlovu (Washington Ballet) and Siphe November (National Ballet of Canada).

Sleeping Beauty staged by esteemed South African ballet legend Denise Schultze Godfrey. Performed to Tchaikovsky’s delightful music, this timeless story follows Princess Aurora’s 100 year sleep and magical awakening, as well as encounters with fairies and fairytale characters such as Little Red Riding Hood, Puss in Boots and the Bluebird and Princess Florine, that will enchant young and old audience members alike.

“Our 2019 Autumn/ Winter programme is a marriage of work by international icons and South African legends, who are leading lights in the global dance arena.”

Sleeping Beauty will be performed at the Artscape Opera House from 17 - 31 August. Tickets cost from R180 to R 695 with concessions for pensioners, scholars and block bookings of ten or more.

CTCB will be accompanied by the Cape Town Philharmonic Orchestra at selected performances.
