Eleven adventures for 2011!

I have always boasted to my non Alberta friends that Calgary is one the best cities in the world! It’s clean, safe, vibrant, wealthy and what about those Rocky Mountains! The only thing our beautiful city is missing is a large body of water. If the Shuswap was only an hour away and not six, no city in the world would touch us. In my opinion, there are three major brands that place Calgary on the world map. The first two are probably no surprise. Oil and gas continues to be the economic engine that drives this city, while the Calgary Stampede is and always will be the best ten day party and exhibition on earth. As for the third, it’s the legacy of the 1988 Winter Olympic Games. Canadian athletes may have enjoyed their most successful performance last year in Vancouver, but as former IOC president Juan Antonio Samaranch declared over 22 years ago, Calgary hosted the “best ever” Winter Olympics. It’s amazing to think that our city has more than doubled in size since the 1988 Winter Olympics. So as I share eleven adventures for 2011, I do so with a real Olympic theme. 1) Skate on the fastest ice in the world! The Olympic Oval at the University of Calgary is the largest public skating facility in the country. While you are skating on the 400 metre Oval there is always a chance you will run into World Champions Catriona Le May Doan, Cindy Klassen or Jeremy Wotherspoon. Hayley Wickenheiser may be playing hockey for the U of C Dinos on one of the two International size ice surfaces inside the Oval. In my spare time, I handle the sales and marketing at the Olympic Oval and it always amazes me how many people I run into that tell me they have never been to the number one legacy facility of the 1988 Winter Games. If skating is not your thing, the best speed skater in the world will be in our city in February for the Essent ISU World Allround Championships. 2) Ride the Sky Line at Canada Olympic Park! Experience the thrill of the 90 metre ski tower. It’s the fastest zip line in North America. I tried this myself two years ago and it was way more exciting than bungee jumping. 3) Ski Nakiska! I know this was a controversial site for the Alpine events in 1988 but it’s closer than Sunshine and Lake Louise and it’s more affordable. I took my family skiing at Nakiska last year and we had a great day. 4) Watch the 2011 World Junior Hockey Championships at the Scotiabank Saddledome! Back in the day it was called the Olympic Saddledome as it hosted the hockey and figure skating events in 1988. It’s great to see the best junior players in the world back in this world class facility. 5) Cross Country ski at the Canmore Nordic Centre! I hate to admit it, but this is something I have never done. My friends who have tried it say the trails and always groomed and the views are spectacular. 6) Take the family to the Olympic Hall of Fame at Canada

Olympic Park! With this experience you will truly re-live the 1988 Olympics and the history. You will be impressed with the wall of fame honouring all the amazing volunteers that made our games the best ever. Try out the winter sports in the interactive zone. Don’t forget the Canadian Sports Hall of Fame is coming soon. 7) Watch hockey outdoors at the Heritage Classic! McMahon Stadium hosted the opening and closing ceremonies in February, 1988. This February the Montreal Canadians face off against the Calgary Flames. I realize tickets may be a little pricy or tough to acquire, however tickets to the WHL outdoor game featuring the Calgary Hitmen and Regina Pats will give you the same perspective. 8) Ride the Bobsleigh bullet at Canada Olympic Park! Remember the Jamaican Bobsled team? Don’t worry about flipping your sled like they did in 1988 as you don’t have to pilot or start from the top. The experience is a blast that you will never forget! 9) Learn to snowboard at Canada Olympic Park! Freestyle skiing was a demonstration sport at COP in 1988 but I remember watching the Mogul’s roughly where the terrain park is now. 10) Take in a festival or skate at Olympic Plaza! If you were around in 1988 you know Calgary set the bar with the evening medal ceremonies at the Plaza. 11) Visit the Alberta Sports Hall of Fame and Museum in Red Deer! Many of our great Olympians are honoured in this amazing facility and I’m told it’s very interactive. Yet if you are like me, you are probably guilty of driving by on your way to Edmonton and not stopping. It’s unlikely Calgary will ever have the opportunity to host the Olympics again. However, don’t be surprised if Calgary soon puts a bid together to host the newly formed Youth Olympics. It would be great for the city, great for the country and more importantly, great for our legacy facilities. Have a wonderful 2011!

From the Publishers January is a month of new beginnings – a New Year with all new hopes, dreams, changes and aspirations. Every January we all think about what it is we want to accomplish in the following year, like making changes with your life – lose weight, quit some bad habit, change your hair, maybe a complete life make over. We have been working really hard on the Cook Book the last few months and we will be publishing it sometime in 2011 – we want it to be just perfect, and creating and publishing a book is a TON of work – so that means you still have time to send in your favourite recipe and be a part of our first book publication! We have made it a goal to set up a whole lot of magazine racks all over Chestermere, Strathmore and Langdon so you can pick up a magazine wherever you go and for a complete list of these locations please have a look on page 24. Tickle Me Elmo There is a factory in Northern Minnesota which makes the Tickle Me Elmo toys. The toy laughs when you tickle it under the arms. Well, Lena is hired at The Tickle Me Elmo factory and she reports for her first day promptly at 8:00 am. The next day at 8:45 am there is a knock at the Personnel Manager’s door. The Foreman throws open the door and begins to rant about the new Employee. He complains that she is incredibly slow and the whole line is backing up, putting the entire production line behind schedule. The Personnel Manager decides he should see this for himself, so the 2 men march down to the factory floor. When they get there the line is so backed up that there are Tickle Me Elmo’s all over the factory floor and they’re really beginning to pile up. At the end of the line stands Lena surrounded by mountains of Tickle Me Elmo’s. She has a roll of plush Red fabric and a huge bag of small marbles. The 2 men watch in amazement as she cuts a little piece of fabric, wraps it around two marbles and begins to carefully sew the little package between Elmo’s legs. The Personnel Manager bursts into laughter. After several minutes of hysterics he pulls himself together and approaches Lena. ‘I’m sorry,’ he says to her, barely able to keep a straight face, ‘but I think you misunderstood the instructions I gave you yesterday...’ ‘Your job is to give Elmo two test tickles.’ The Newsy Neighbour

Aquatic Centre News- Red Cross Swim Preschool The Red Cross Swim Preschool Program is an exciting eight-level program designed for children four months to five years of age. Children enter levels based on age and then progress to higher levels based on age and/or ability. In 2011 the Red Cross Swim Preschool Program levels will include: Starfish, Duck, Sea Turtle, Sea Otter NEW, Salamander, Sunfish, Crocodile and Whale. Starfish & Duck are the first two levels. These levels are designed for children four months to thirty months of age. Our facility offers these two levels in a combined class, thirty minutes long, with eight swimming lessons all together. Up to ten participants can register for Starfish & Duck lessons. In these lessons parents will learn important water safety skills, techniques on how to hold your child and create a level of comfort for you and your child when in and around water, and how to properly fit a floatation device on your child. Pool toys, fun games, and songs will also allow you and your child to enjoy your swimming experience while gaining trust and confidence from one another in the pool. On the last day of lessons you will receive a progress booklet and sticker showcasing the skills your child learned in their swimming class. You will also receive a fun pool picture of you and your child that can be kept as a memento. Our next registration day for Red Cross Swimming Lessons will be on Saturday January 15th, 2011 at 9:00am. Doors will open at 8:45am. Our back is the powerhouse for the entire body, supporting our trunks and making all of the movements of our head, arms, and legs possible. The spine has two main functions – it is the protective surrounding for the delicate spinal cord and it forms the supporting backbone of the skeleton. Your backbone is a part of the axial skeleton, which runs lengthwise down the center of the body. It consists of the skull, backbone, and the ribs. Did you know – humans are born with 33 separate vertebrae? By adulthood, most have only 24, due to the fusion of the vertebrae in certain parts of the spine during normal development. We have 7 cervical, 12 Thoracic, 5 Lumbar, 5 Sacral and 4 Coccygeal vertebrae. The lumbar spine consists of 5 vertebrae, called L1 through -L5. Below the lumbar spine, nine vertebrae at the base of the spine grow together. Five form the triangular bone called the sacrum. The two dimples in most everyone’s back (historically known as the “Dimples of Venus”) are where the sacrum joins the hipbones, called the sacroiliac joint. The lowest four vertebrae form the tailbone, or coccyx. All of the elements of the spinal column and vertebrae serve the purpose of protecting the spinal cord, which provides communication to the brain, mobility and sensation in the body through the complex interaction of bones, ligaments and muscle structures of the back and the nerves that surround it. www.thenewsyneighbor.com


When the spine is injured and its function is impaired, the consequences can be painful and even disabling. According to estimates, 80 percent of people will experience low back pain at least once in their lifetime. A small number of patients will develop chronic or degenerative spinal disorders that can be disabling. Men and women are equally affected by lower back pain, and most back pain occurs between the ages of 25 and 60. However, no age is immune. Approximately 12% to 26% of children and adolescents suffer from low back pain. Fortunately, most low back pain is acute, and will resolve itself in three days to six weeks with or without treatment. If pain and symptoms persist for longer than 3 months to a year, the condition is considered chronic. You must always consider your back and spinal columns when you are doing simple everyday things – think before you lift something heavy and keep your back strong by doing some simple exercises at home – just a few sit ups or dumb bell lifts everyday will help to keep your back strong. FAMILY PAGE JANUARY 2011 Remember the good ol' days when dinner around the table was a nightly family event and we played games with nothing more than a bag of marbles or a piece of chalk? I actually do remember those days when we all ate together and afterwards watch Ed Sullivan, Bonanza and Johnny Carson. We would spend hours at the kitchen table doing a jigsaw puzzle or playing cards. Wow... that seems like an eternity ago. Now is a great time to start making new memories! With Boxing Day sales, almost everything is on sale and you can go buy a few really complicated (or easy!) jigsaw puzzles, depending on the age of your children. When was the last time you played checkers?! Oh my, we would spend hours playing checkers or war with playing cards what good, old fashioned fun! Drag your kids away from that computer or T.V. and spend some real quality time together and make some fun food for the occasion! I have included a few different pizza ideas - because what child does not love creating their very own pizza creation?!

Quick Mexican Pizza

Q. How do you fix a broken pizza? A. With tomato paste.

½ pound lean ground beef Q: What do you call a person that can 1 ½ tsp. Chilli powder drink soda and sing at the same time? ½ tsp. Cumin A: A pop singer! 1 Cup salsa Q: What do you have when you eat 4 Tortillas pieces of cake and 6 pieces of pizza, all in 2 Cups shredded cheese one meal? Green Pepper A: A tummy ache! Onion Mushrooms In a skillet, cook meat on medium high until browned, drain off excess liquid and stir in chilli powder and cumin. Spread salsa and meat mixture on each tortilla and top with cheese, peppers, onions and mushrooms as desired. Bake 8 – 10 minutes at 400 degrees, until crisp and lightly browned. I’ve always been afraid to make my own pizza dough – but I think this recipe could change all that. This recipe makes enough for two 12-inch pizzas or eight small ones.


Family Night Pizza To double the recipe, remember that the ratio is three parts flour to one part liquid. • 1 pkg. Active dry yeast • 1 Cup lukewarm water • 1 Tbsp. sugar • 1 tsp. Salt 3 Cups flour, sifted • Cornmeal for rolling dough Dissolve the yeast in water in your processor or mixing bowl and let stand for 5 minutes. Stir in the sugar and salt. Mix in 1 1/2 cups of flour. Add the rest of the flour, processing or stirring until the dough forms a ball. Turn out the dough onto a board dusted with flour or cornmeal, and knead for about 5 minutes until the dough is smooth. Divide it into equal round portions, and roll and gently stretch out. Press onto pans, cover with a dry towel, and let rise in a warm, draft-free place for 15 minutes. The crusts are then ready for toppings, or you can freeze them for up to one month. You are going to love this cheese-filled crust of this veggie pie. The bulked-up edge allows you to pile the filling high, deep-dish style.

FOR THE DOUGH:

• 1 1/3 cups lukewarm water •1 (1/4-ounce) package active dry yeast •1 teaspoon sugar •1/4 cup rolled oats (quick or old-fashioned) •1 1/2 tablespoons olive oil, plus more for coating the dough •1 1/2 teaspoons salt •3 1/2 cups flour, plus more for kneading FOR THE TOPPING: •3 tablespoons olive oil, plus more for the cookie sheet and crust •1 large onion, halved and thinly sliced •1 medium-size green bell pepper, halved, seeded, and thinly sliced •2 garlic cloves, minced •1 1/2 cups sliced mushrooms Just remember in this New Year family is •4 cups broccoli florets the most important thing in your life. •Yellow cornmeal •4 cups (about a pound) grated mozzarella When was the last time you read your •1 (15-ounce) can tomato sauce children a Book? •1 medium-size tomato, halved, seeded, and diced 1. First, make the dough. Pour the water into a large mixing bowl and sprinkle in the yeast. Stir in the sugar and oats, and then set the mixture aside for 5 minutes. Stir in the oil and salt. Add 2 cups of the flour and beat the mixture with a wooden spoon for 100 strokes. Set the mixture aside for 5 minutes more. 2. Add the remaining flour, L cup at a time, and beat well after each addition. When the dough is firm and pliable, place it on a floured surface and knead it until it's smooth and somewhat springy, about 8 minutes. If the dough becomes sticky, add more flour as you knead. 3. Place the dough in a large, lightly oiled bowl and turn the dough to coat it with the oil. Cover the bowl with plastic wrap and set it aside in a warm spot until the dough has doubled in bulk, about 1 hour. 4. While the dough rises, prepare the topping. In a large skillet over medium heat, warm 2 tablespoons of the olive oil. Add the onion and bell pepper and sauté them, stirring often, until they are soft, about 4 minutes. Stir in the garlic and sauté for 1 minute more. Transfer the mixture to a plate. 5. In the same skillet over medium heat, warm the remaining olive oil. Add the mushrooms and broccoli and lightly sauté the vegetables for 4 minutes (they should still be crunchy). Transfer them to the plate with the other vegetables. 6. Heat the oven to 425º. Oil a large cookie sheet; dust it with the cornmeal, then set it aside. Punch down the dough and turn it out onto a lightly floured surface. Knead it briefly, and then let it rest for 5 minutes. 7. Roll out the dough so that it's 1/4-inch thick and the size of the cookie sheet. Place it on the sheet. Sprinkle half of the mozzarella along the perimeter of the dough, about 1 inch in from the edges. Moisten the edges, fold them over the cheese, and press to seal them in place. 8. Spread the tomato sauce over the pie. Add the cooked vegetables and diced tomato. Lightly salt and pepper the vegetables and sprinkle on the rest of the cheese. Bake the pie on the center rack until the crust is golden brown, about 25 minutes. 9. Remove the pie from the oven and brush the crust with more olive oil. Slide the pie onto a cooling rack and allow it to cool briefly before serving. Makes 8 slices.

Mother in Law We were dressed and ready to go out for the New Years Eve Party. We turned on a night light, turned the answering machine on, covered our pet parakeet and put the cat in the backyard. We phoned the local cab company and requested a taxi. The taxi arrived and we opened the front door to leave the house. As we walked out the door, the cat we had put out in the yard, scoots back into the house. We didn’t want the cat shut in the house because she always tries to eat the bird. My wife goes on out to the taxi, while I went back inside to get the cat. The cat runs upstairs, with me in hot pursuit. Waiting in the cab, my wife doesn’t want the driver to know that the house will be empty for the night. So, she explains to the taxi driver that I will be out soon, ‘He’s just going upstairs to say goodbye to my mother.’ A few minutes later, I get into the cab. ‘Sorry I took so long,’ I said, as we drove away. ‘That thing was hiding under the bed. I had to poke her with a coat hanger to get her to come out! She tried to take off, so I grabbed her and had to wrap her in a blanket to keep her from scratching me. But it worked! How to Protect Your Dog in the Cold Winter Months When it comes to sweaters or coats, most people automatically think that this clothing should be saved for small dogs and only for really cold days. Yet surprisingly, it doesn’t just depend on the size of the dog but on the amount of fur they have; as even some larger breed dogs need the protection of coats and sweaters on all but the most balmy winter day. Others will stay warm until the coldest of days with their built-in fur coat. But even these latter dogs will need some type of protection when temperatures take a dramatic plunge into the negative teens or lower with wind chill. Or at the very least you will need to limit your dog’s time outdoors, in some cases - just long enough to relieve themselves. It is possible to walk with your dogs or let them play outside even on extremely cold days. How? By making sure they are dressed appropriately for their breed, because just like people, prolonged exposure to cold can seriously affect their outer limbs and in some cases be life-threatening. Coats and sweaters should be used on tiny toy breeds, puppies, elderly dogs, dogs that are ill or recovering from an illness, and dogs of any size with very short hair. For those dogs that wear a sweater on a regular basis, when the temperature plunges you will need to put an extra layer under your dog’s coat or jacket for extra warmth. If you are going for walks – don’t forget to use boots. Frostbite is body tissue that has actually been frozen. It may look pale and feel cold and unless measures are quickly taken to warm a frost bitten area, that tissue will die. Apply moist, comfortably warm towels and handle with care. Be sure not to massage the affected area or let the dog scratch or chew around it. After it thaws, the skin will be red, swollen, and possibly blistered. If your dog has frostbitten areas or possible hypothermia contact your veterinarian immediately. Just like humans, cold weather can also affect your dog’s joints especially in elderly pets. Glucosamine has been proven to help dogs, young and old, with all types of aches and pains. I AM An EGG Hello my name is Ethel Egg and I am an egg. Did you know that I am a symbol of fertility, creation and new life? The ancient Persian’s celebrated the spring equinox with a gift of red-dyed eggs, which were shared at a meal, and afterwards the shells were carefully crushed, a ritual to drive away winter. In the 9th century there was a ban on eating eggs during the 46 days of Lent, when we were collected and saved. Once the fasting was over, a huge Easter omelette was made for everyone to enjoy. In the 16th century in the courts of France, they decided to start decorating us to give to their loved ones as gifts and that is how the Easter egg tradition got started. Eggs laid on Good Friday and eaten on Easter Sunday are said to protect against fever the whole year round! Buried in the garden or on the edge of a field, we guard against lightening and hail, and we even protect beehives! We are pretty cool eggs. O.K., which came first: the chicken or the egg? It seems that the first recorded egg layers were ducks in China more than 6,000 years ago. The laying hen did not appear until 2,000 years later in India, and was only introduced to the western world in the 5th century. Legend has it, though, that the egg came first and was laid by‌ the Easter bunny! We are unique as we contain nearly every nutrient known to be essential to humans. The reason for this is that nature designed us as a total life support system for a developing chick. The structure of humans and animals is built on protein and we rely on animal and vegetable protein for our supply of amino acids, and then our bodies rearrange the nitrogen to create the pattern of amino acids we require. Most people are choline-deficient and we have lots of that – in the egg yolk. Your body can produce some choline, but cannot make enough for an inadequate supply in our diets, and choline deficiency can also cause deficiency of vitamin B, which is critically important for health. We are really important for brain function and the nervous system because of our choline and a great source of vitamin B12, which converts homocysteine into safe molecules. We are high in cholesterol, but nutrition experts have determined on a low-fat diet you can eat one or two eggs a day without having to worry about blood cholesterol levels. And, you may not believe this, but eating me may help lower risk of a heart attack sor stroke by helping to prevent blood clots! Holy smokes! EGGS FLORENTINE 2/3 lb. Frozen spinach 1 Cup whipping Cream 1 tsp. Instant vegetable broth mix diluted in 2 tsp water 8 eggs Preheat oven to 400 degrees. Cook spinach according to directions on package. Drain well and place in bowl. In another bowl mix cream and broth and fold 2/3 cup into cooked spinach – mix well. Divide spinach into 4 individual baking dishes – break two eggs over each pour remaining cream mixture over eggs and bake for 15 – 20 minutes – and really enjoy the incredible creation you have created. Oh Ya! AMAZING BROCCOLI PIE ½ cup chopped green onions 1 clove garlic, finely chopped 1-½ cups cooked chopped broccoli ½ cup cottage cheese 6 eggs ½ cup milk ½ cup baking mix – such as Bisquick salt and pepper to taste 1 Tbsp Parmesan Cheese Spray a 9” pie plate with cooking spray. Set aside. Spray a non-stick skillet with cooking spray and heat over medium heat, add green onions and garlic and cook for 5 minutes then stir in broccoli – cook for about 2 minutes more. Layer broccoli mixture and cottage cheese in pie plate. Set aside. Whisk eggs with milk and baking mix, season with salt and pepper. Pour over cottage cheese in pie plate. Sprinkle with Parmesan cheese and bake in a 350 degree oven for 25 minutes or until a knife in the centre comes out clean.

What could be better than an apple and cheese omelette? APPLE AND CHEESE OMELETTE ½ apple peeled, cored and thinly sliced 2 tsp sugar 2 eggs 1 tsp water 2 Tbsp Swiss cheese Cinnamon to taste 2 Tbsp butter In an 8-inch non-stick skillet melt butter over medium heat. Add apples and cook for 2 minutes – sprinkle with sugar and cinnamon cook for 3 – 5 minutes. In a small bowl combine eggs, 1 tsp sugar and water. Beat until blended and pour over apples in skillet. Mix gently until egg mixture is in the bottom of the pan. Sprinkle with cheese and fold omelette over once cooked. Sprinkle with cinnamon and sugar and serve immediately. Yummy in my tummy! The word Quiche has always scared me – will it turn out the way I would like it too – or will it be a big flop. Well this recipe is spectacular and you will love it! SPECTACULAR QUICHE 1 9 inch deep dish unbaked pie shell 1 ½ cups light cream or evaporated milk ½ tsp salt ¼ tsp pepper 1-½ cups – cooked bacon, peppers, onion, mushrooms or whatever else – use your imagination. Preheat your oven to 400 degrees. Partially bake pie shell on lowest rack for 8 minutes. Remove from oven and reduce heat to 350 degrees. Lightly beat eggs, add cream, salt, pepper and other creative ingredients. Pour into shell and bake for 35-40 minutes. Let stand for 5 – 10 minutes before serving.

LASAGNE WITH EGGS, ARTICHOKES AND MUSHROOMS 9 lasagna noodles 2 tbsp olive oil 3 cups sliced white mushrooms ¼ cup chopped fresh parsley 4 canned artichoke hearts, sliced Salt and pepper, to taste 2 ¾ cups tomato sauce 675 mL 8 ard-cooked eggs, peeled and thinly sliced 2 ¾ cups shredded mozzarella cheese ¼ cup grated Parmesan cheese Cook lasagna noodles according to package directions. Heat oil in large skillet. Add mushrooms and cook, stirring, until golden brown. Add parsley and cook for 1 minute. Add artichoke hearts; season with salt and pepper. Set aside. Preheat oven to 350°F (180°C). Spread 1 cup (250 mL) tomato sauce in bottom of 13 x 9 x 2 inch (33 x 23 x 5 cm) baking pan. Arrange 3 lasagna noodles, side by side, over tomato sauce. Top with half of the artichoke and mushroom mixture. Layer half of the egg slices over the top. Sprinkle with 1 cup (250 mL) mozzarella cheese and one-third of the Parmesan cheese. Repeat layers beginning with tomato sauce and finishing with Parmesan cheese. Top with three remaining noodles. Spread with remaining tomato sauce and sprinkle with remaining mozzarella and Parmesan cheese. Bake until cheese is melted and bubbly, about 30 minutes. Let stand for 10 minutes before serving.

For crepes, combine flour, cocoa, sugar substitute and salt in food processor; process to blend. Add milk, egg substitute, margarine and vanilla; process until smooth. Let stand at room temperature 30 minutes. Spray 7-inch non-stick skillet with cooking spray; heat over medium-high heat. Pour 2 tablespoons batter into hot pan. Immediately rotate pan back and forth to swirl batter over entire surface of pan. Cook 1 to 2 minutes or until brown around edge and top is dry. Carefully turn with spatula; cook 30 seconds more. Transfer to waxed paper. Repeat with remaining batter. Separate crepes with sheets of waxed paper. Public Library Foundation: Highlights of 2010

2010 has been a busy year for the Chestermere Public Library Foundation! Here are a few of the highlights from the year past: • With the help of a funding grant from the Community Initiatives Program, we were able to fund a huge increase in the library’s resources! Thousands of new titles have been added to the library’s collection to ensure the library has something for everyone in Chestermere. • Our quilt raffle, featuring a beautiful Bookshelf Quilt stitched by the ladies of the Lakeside Quilter’s Guild, raised $1,000 and was won by Jim Ribchester. •The library provided a cozy warm-up spot during the Olympic Torch event, where those who stopped in enjoyed a steaming mug of hot chocolate and a reading by a local author. •The Lakeside Greens Golf Course rocked with the sounds of the Roaring 20s for our successful Library Foundation Gala. Thanks to all who contributed their time, auction items and funds. The evening was a big success and a wonderful time was had by all! •Our own resident authors, the students of Prairie Waters School, can now see their published books in the library’s collection. The Foundation purchased a number of these wonderful hard-cover books so the entire community can enjoy the creativity and imagination of our children. •On September 18, Chestermere residents laced up their running shoes for the Loop Around the Lake, the annual run/walk in support of the library. •The Foundation supported the library’s reusable bag campaign. These attractive bags, sporting the library’s logo, will not only carry armloads of books to and from the library, they will also keep plastic bags out of the landfill and the streets of Chestermere. Have you gotten yours yet? • On December 18, the Foundation sponsored a gingerbread building competition. Community groups constructed an amazing assortment of gingerbread creations for a draw to the public in support of the Winter Reading Program. Safety at our crosswalks Hey fellow readers! I am a local student at Strathmore high school with a very important message. Every morning I walk to school with my brothers and friends; along with many other students from other schools. We take the crosswalk from Hillview Estate to our AG Grounds, and it has come to my attention that the crosswalks aren’t always as safe as they claim to be. Everyday going or coming from school myself and others will press the button and there will always be a driver to continues through…it is unsafe for all the local students who use this and any other crosswalks in town. Whenever I go to cross the road I always wonder what kind of hurry these drivers are in to have to keep going through and risk hitting someone’s daughter, son, sister, brother, maybe even a better half, or someone’s best

Barry is a founder and life member of the AWA (Alberta Wilderness Association). Brilliant Green Solutions New Trees & Established Trees Need Care Winter to Spring Do not prune any live branches off a newly planted leaf tree until the tree has been growing for at least three years. Newly planted leaf trees need every leaf and branch to absorb energy to establish roots and to expand the round size of the trunk. The longer you leave the lower branches on, the thicker the diameter of the trunk. When you are happy with the size of the trunk remove the smaller branches to showcase the trunk. To prevent “Winter Spring - Sun Scald” on leafy deciduous tree trunks, wrap the trunks with corrugated cardboard from an old paper box. Leave on only over the winter and spring. This is to prevent the intense spring sunshine from directly hitting the trunk and adding the reflection from the sun light off the snow. This double whammy of the reflected and direct sunlight will heat up the unprotected trunk causing the trunk to expand and split vertically on the south side. Red and dark bark tree trunks are most susceptible to “Sun Scald”!

Clean up established trees over winter to spring. Remove small dead limbs that hit you in the face when you walk by or under your trees. Leave larger branches for pruning in March. The freeze and thaw of winter will damage and fray the larger open cuts preventing proper healing. Smaller dead branches can be used as starter fuel in the fire place. Now is the time to start a “Pruning Plan” to design a perfect shape for your trees toward the best cutting time in March, rather than last minute damage to your tree’s shape. Start by using bright red surveyor’s ribbon. Tie the ribbon at the bottom of the unwanted limb for a future cut. With this approach, if needed, you can move the ribbon to another location with out really damaging the trees structure. Shaping a tree by pruning is best done in March for all trees except Birch/Maple. The Sap flow in spring will force the remaining limbs to grow aggressively. To slow down growth of fully grown trees, prune in mid to the near end of August, this removes and slows down aggressive growth by reducing sap in the tree. Prune week(s) before leaves start to change. Brush all tree cuts with “Copper Spray” mixed in “Linseed Oil“. Plan a head of time for the best results. Be aware, you can’t glue on a removed limb and be careful not to cut yourself! Take coarse @UofC.

One of my children called the other day to ask me how long to cook a hard-boiled egg and for us older cooks the answer is easy – but for these new young cooks the question is justified. Here are a few simple tips to cooking Eggs and a couple of easy great Egg recipes.

Basic Recipe for Hard Boiled Eggs

Place the eggs in a pot and cover with cold water – place on high heat until the eggs reach a rolling boil. Reduce to medium-low boil for 10 minutes. Remove from heat, set in the sink and run cold water into the pan for a couple of minutes. The cold water makes them easier to peel.

Basic Recipe for Poached Eggs (Without the shell)

Drop eggs into boiling water and let boil 2 to 3 1/2 minutes for soft boiled, 3 1/2 to 4 1/2 minutes for medium soft, and 10 to 12 minutes for hard boiled.

Hard Boiled Eggs with Ham, Cheese and White Sauce

8 Hard-boilded Eggs, 4 Slices cooked ham, sliced, 1 Cup Swiss Cheese, Grated 1 Tbsp. Butter, Salt and Pepper, 3 Cups White Sauce. White Sauce - 1 Pint Milk, 3 Tbsp. Butter, ½ Tsp. Salt, 4 Tbsp. Flour Scald milk. Melt 3 Tbsp. butter in saucepan and add salt and flour, stirring constantly. Slowly add the milk until thickened. Add hard boiled eggs, quartered, ham and seasoning. Place in a baking dish and sprinkle with cheese and melted butter. Bake at 350 degrees for about 10 minutes.

Hard Boiled Eggs with Creamed Onions

8 Eggs, Hard Boiled, 6 Onions, peeled, sliced, Salt and Pepper, 2 Cups white sauce ( As Above) Boil the sliced onions in salted water for about 20 minutes. Shell and quarter the eggs. There is an alternative to get rid of the smell and get the goodness of egg with an Egg Shampoo. Turn your regular shampoo into an egg shampoo by just adding an egg to it. Take a little shampoo in a bowl and add a whole egg and mix well. Apply to your hair and wait 10 – 15 minutes then wash off as usual. Separate your egg. Separating the yolk from the white of an egg is actually quite easy. Gently crack your egg in half over a bowl, keeping the egg in its shell. Move the yolk back and forth between the two halves of shell while letting the white fall into your bowl. Place the yolk into another bowl and save for later. Gently whip your egg white until slightly blended, not frothy. Apply to your face and leave on for 20-30 minutes. Rinse with cool water. Your skin will feel fantastic! Page 32

I also lean toward local authors, when possible, as I think we have a wealth of artistic talent here in Alberta. Outliers: The Story of Success Malcolm Gladwell Little, Brown and Company November, 2008 ISBN: 9780316017923

In keeping with the theme of new beginnings, I thought I’d start 2011 off with a different sort of review. I’m going to look at a work of non-fiction. I have been meaning to cover a non-fiction book for a while and the January issue provides the perfect timing for it. Not only does this review rank as a first because of the genre—and, therefore, proof that I do read things other than fantasy and science-fiction—but also because of the fact that the subject matter involves a new way of looking at a familiar concept. Everyone has an idea of what success looks like; the notions range from the large paycheque and influential career to something that’s personally fulfilling and brings a positive return to the local, regional, or even international, community. Whatever the definition you associate with success, there is often much less debate on what leads a person to be that outstanding icon. Malcolm Gladwell’s Outliers: The Story of Success is a remarkable book that asks us to reconsider some commonly-held beliefs about how an individual ascends to the ranks of the exceptional, suggesting that, “... [T]here is something profoundly wrong with the way we make sense of success.” Gladwell delves into the personal and professional lives of numerous, extraordinary ‘outliers,’ from Bill Gates to the members of The Beatles, and from Robert Oppenheimer to John D. Rockefeller. What he’s uncovered, surprisingly, is that the individual characteristics we normally attribute to successful people don’t necessarily explain the remarkable accomplishments they achieve. Gladwell argues that the typical story of the successful individual’s rise from humble beginnings, utilizing personal abilities and natural talents to fight his or her way to the top, cannot account fully for such extraordinary results. In Gladwell’s words, “It’s not enough to ask what successful people are like …. It is only by asking where they are from that we can unravel the logic behind who succeeds and who doesn’t.” By asking where someone comes from, however, Gladwell is not simply wondering about physical geography. He is referring to the cultural, environmental, social and generational placement of an individual and the tremendous impact these factors can exert on an individual’s success, or lack thereof. Now, Gladwell is not saying that individual characteristics are not important, just that they are not the sole determining factors of a person’s career path, as most conventional wisdom would have us believe. He has covered the topic from a great variety of angles and avenues, providing the reader with a solidly-researched and infinitely enjoyable book, one that’s an easy and relaxing read, as well. Are you wondering how in the world you will ever manage to meet your New Year’s resolutions this time around? While this book may not show you the way, it offers some insights as to why our tendencies have developed. Dancer of the Year ExtraordinairE When asked what two words she should use to describe Kate Van Kryussen, Heather Thomas (the Artistic director of Expressions the Dance Gallery (EDG) here in Strathmore) stated “Dedication and Determination.” On June 18th, 2010, at the Southern Alberta Jubilee Auditorium Expressions the Dance Gallery performed their 27th year end showcase. “It was an honor to present EDG’s top award to Kate in front of her family, friends and fellow dancers,” says Heather. Kate had already won dancer of the month for March 2010, and was also recognized for all of her hard work, as dancer of the year! Kate is presently a grade student 12 at Strathmore High School, and trains between 10 – 12 hours a week at EDG, while maintaining honor roll status in her academic studies. With aspirations of becoming a dentist, Kate’s success stems from setting her sites high with clear goals in mind. “I find that dancers who put in many hours a week of training, are the students who do well with multi tasking and time management. They know how to prioritize and get the job done,” says Heather. “Kate is very talented! Her strong technique and stylization have lead to a kind of performance that is awe inspiring,” says Angela Murdoch senior instructor at EDG. “Kate defiantly has what it takes to make it in the professional dance world.” Showing her true colors this past July, Kate competed at the Great Canadian Dance Challenge’s National Finals. She was awarded a Gold Standing in two out of the three routines that she performed. One of which being her Modern Solo Choreographed by Angela Murdoch. “Modern is definitely one of Kate’s strong suits,” says Angela Murdoch. “You can really feel her love for the art when she immerses herself in the work, which then makes her an inspiration to dancers of all ages.” “Here at EDG we have seen many of our students go onto professional careers. Some moving into professional theatre, music videos, and even dancers who have made it to the top of So You Think You Can Dance Canada! I really feel that Kate has this level of talent and could pursue a career in dance if she so chooses,” says Heather Thomas. Kate sets a great example to younger students and her peers. She has assisted senior teachers in classes and has recently been asked to teach her own classes at EDG. She is always willing to help in any way possible and share her skills with others. “Whatever Kate chooses to do with her future we wish her the best, and know that she will be successful in all of her endeavors,” says a beaming Heather Thomas. Dear Lifelines: I don’t know what direction to take in the New Year. I’ve got a lot of possible job opportunities and just don’t know how to narrow down my choices! I’m feeling overwhelmed. Help! Signed, Indecisive Dear Indecisive, It takes a lot of bravery to step outside your area of comfort and consider a variety of other employment options. Good for you! Many find it easier to stay in the same job and face the same challenges and deal with the same irritations and lack of fulfilment day in and day out rather than take a risk and see what other opportunities might be waiting for them. In order to narrow down your options, you might want to create a bit of a chart with the pros and cons listed for each employment option. You’ll want to consider all aspects of the potential jobs such as the time and distance for the commute, gas money involved, the amount of take-home work – do you need to carry a pager and be accessible at all times? How about the type of co-workers you will be dealing with on a daily basis, future opportunities for advancement, and vacation time or lieu time? You may want to drive to the various job sites and see how long it takes during rush hour - even a seemingly short drive can quickly become daunting when you are navigating a route that thousands of impatient commuters are also travelling through. This can quickly tack on extra hours to your workday. Understanding and acknowledging your boundaries is another important consideration. Are you good working with others? Will you be in a private office space or will you be working in cubicles with others? Do you find it difficult to work with certain types of personalities that you know you will be dealing with? Nothing is worse than going in to work every day to be with co-workers who seem to want to drain the life out of you. Another consideration is pay. Do your research and find out what others are being paid for in the same position. Have a minimum amount of salary in mind before going for any interview. Also fully investigate how bonuses and raises are paid and how often. Don’t be afraid to let them know that you cannot work for a salary that you know is far below the average paid for the position. You’ll want to come prepared to the interviews with a list of questions so that you stay on track. Don’t be afraid to reword the question a few times if you feel they are not answering it completely. Your future job will be a real investment of time and effort, so you want to be thorough and you don’t want your questions glossed over. If they tell you they don’t know, you could ask them if they would be willing to get back to you later with a more complete answer in order to help you with your decision. To practice the interview process you can enlist a knowledgeable friend to help you create a mock interview scenario or you can sit and imagine the different questions that might be asked. Picture yourself in the way you would like to be behaving, appearing and responding to the questions in order to help reinforce these positive qualities into your subconscious. Focus on everything you want to happen. There are many factors to consider, but ultimately the task is to be able to narrow the choices down to the jobs that you know will be a better fit for you. You need to be honest about your strengths and limitations and in understanding what brings you joy and fulfillment. Baja Bean Soup - from “Bravo! Best of Bridge Cookbook” 2009

2 slices bacon, chopped 1 chorizo sausage, sliced 1 onion, chopped 1 carrot, chopped 1 stalk celery, chopped 1 red or green bell pepper, chopped 2 cloves garlic, minced 1 tsp ground cumin 1 can (28 oz) whole or diced tomatoes with juice 3 cups chicken broth or water 1 cup frozen corn kernels 1 can (14 to 19 oz) black beans, drained and rinsed 2 tbsp chopped fresh cilantro 1 tsp hot pepper sauce salt and freshly ground pepper In a large saucepan or dutch oven, over medium-high heat, sauté bacon and sausage for 6 to 8 minutes or until browned. Using a slotted spoon, transfer to a plate lined with paper towels to drain fat. Drain off all but 1 tbsp of the fat from the pan. Sauté onion, carrot, celery and red pepper for 5 to 7 minutes or until softened. Add garlic and cumin; sauté until fragrant, about 15 seconds. Stir in tomatoes, breaking them up (if using whole) with a spoon and scraping up brown bits from bottom of pan. Add chicken broth, corn, beans and reserved bacon and sausage; bring to a boil. Reduce heat and simmer for 20 minutes or until vegetables are tender. Stir in cilantro and hot pepper sauce. Season to taste with salt and pepper. Serve dolloped with sour cream. MAKE AHEAD: Let soup cool, transfer to an airtight container and refrigerate for up to 1 day or freeze for up to 1 month. Thaw and reheat to serve TIP: Chorizo is a spicy and very flavourful sausage that is widely available in supermarkets, either fresh or cured like a salami. for this recipe, we suggest using fresh. If you can’t find Chorizo, substitute hot Italian sausage (I used hot Italian from Superstore) Serves 6 Page 44

BABY BRAIN GAMES

Why play games with you baby?

Playing games is always enjoyable - for babies and their parents and allows opportunities for shared experiences, bonding, and trust building.

Repeat a rhyme or lullaby to your baby several times. Once your baby is familiar with the rhyme, change one of the words to something nonsensical. Your baby will notice and possibly respond to the change. Older babies may thing your “mistake” is funny! Research has shown that the more time you spend playing with your baby, the more you stimulate her brain and help it forge valuable connections she’ll need to do will in life.

The Say then do game. Good for babies 3 months and older. Tell him what you are going to do before you do it. As he gets older these cues will prepare him for transitions.

The Grocery store is an exciting place full of delightful sights, smells and sounds. Talk to you baby about what you’re doing as you fill the cart.

Use simple gestures to illustrate what you’re saying. An obvious example is waving goodbye while saying “Bye-bye.” When it’s time to eat put your fingers to your mouth as if feeding yourself.

Don’t forget that your baby is just a baby and doesn’t have the stamina of an adult. Too many experiences crammed together can over stimulate him and make him unhappy and fussy. Give him time to process a new experience. The Naming Game - One of the most basic games you should play with your baby is naming and pointing to things in the baby’s environment, specifically people, toys and other objects. 6 months is a good age to start your baby with this game. By 12 months most babies can point to dozens of things when you name them.

Babies learn through repetition. They need to hear a word many times before they are able to reproduce it. When you talk to your baby do not be afraid to say the same thing more than once and in more than one way!

Babies are extremely self-centered creatures, so they will pay attention to a story starring them. Your baby likes nothing more than hearing a story about them. Telling stories to your baby about themselves is a great way to engage them.

THE MONTH OF JANUARY January is the month of new beginnings and plans. I love the girl in Forrest Gump at New Years when she says, “everybody needs a second chance to start over”. January is traditionally the coldest month of the year in the northern half of the world. If you were born before January 19th you are a Capricorn and after the 19th you are an Aquarius. The birthstone for the month is garnet and the snowdrop is the flower, which often blooms in the snow – a hope of spring in the middle of winter. New Year’s is January 1st, and there are lots of other unique holidays in January, such as National Bath Safety Month, National Blood Donor Month, National Braille Literacy Month, National Hobby Month, Hot Tea Month, National Oatmeal Month and National Soup Month. January 13th is Make your Dream Come True Day, the 14th is Dress Up Your Pet Day, and the 18th is Winnie the Pooh Day (The Birthday of Winnie’s author A.A. Milne)! And don’t forget the 21st is National Hugging Day. Hugs are very important, you know. They say you need four hugs a day for survival, eight for maintenance, and twelve for growth. Hugging is good medicine. It transfers energy, and gives the person hugged an emotional boost. The nicest thing about a hug is that you can’t give one without getting one. Did you know on January 27th Wolfgang Amadeus Mozart (1756-1791) was born in Salzburg, Austria? From the age of five, through his untimely death at age 35, this mu sical genius created over 600 compositions including 16 operas, 41 symphonies, 27 piano and five violin concerti, 25 string quartets, 19 masses, and many other works. On January 19th, 1989 Heather Erxleben became the first female combat soldier in Canada, after completing her training at the Canadian Forces Base in Wainwright, Alberta. And, on January 28th 1916, Manitoba granted women the right to vote, becoming the first province in Canada to do so. Now we know January can be cold – but can you imag ine that Alberta’s coldest day was recorded at -78 F (-61 C)?! This temperature was recorded in Fort Vermillion, Alberta on January 11th, 1911. The coldest day in Canada was recorded as -81 F (-62.8 C) on February 3, 1947 in the Yukon Territory. Did you know the G.S.T. was introduced on January 1, 1991, by Prime Minister Brian Mulroney and his finance minister Michael Wilson? The GST replaced a hidden 13.5% Manufacturers’ Sales Tax (MST); Mulroney claimed the GST was implemented because the MST was hindering the manufacturing sector’s ability to export competitively. The introduction of the GST was very controversial. As of June 15, 2010, the GST rate is 5%. So, I would say: stay at home this cold January month and plan your 2011 year to be your best year ever!! RYLEY AND HAIRY SPIDER’S SNOW DAY

“WOW! Look outside, it snowed all night. Let’s get out our sleigh! We’ll go and call for all our friends, And stay outside to play. Up and down the hills we’ll go, over the bumps, Look out below! We’ll build ourselves a snow fort to hide us out of sight, Then we’ll break up into teams and have a snow ball fight. Let’s play hockey, we’ll put on our skates and our N.H.L. shirts. I bet all the famous players started out just like us, as Squirts. At the end of the day when we’ve had enough fun, We’ll all shout good bye and speed home on the run. We’ll be chilly and cold and hungry and wet, And Nana will feed us and make us hot chocolate. Into our PJs and off to bed we’ll go, I can’t wait until we wake up in the morning, To go back out and play in the snow. HELPING YOUTH WITH A LITTLE HORSEPOWER There is a new method of healing here in Strathmore! The Spiritual Equine Connection, an equine assisted learning program designed to bring out the best in its participants through horse and teamwork interaction, has set up shop in our town! The Spiritual Equine Connection wants to help participants to feel better about themselves, increase their self confidence and leadership skills and provide them with the inspiration and tools necessary to reach their full potential. Equine Assisted Learning takes place “out of the saddle” and on the ground. Kari Fulmek is a Strathmore local who has started up this exciting new venture, “Equine-Assisted Learning BUILDING BLOCK programs are a powerful journey of learning and understanding.” Says Fulmek, “Horses are used as teaching tools as they immediately respond to what the participant is doing. Facilitators are trained to look for those “teachable moments” that the horses identify through their reactions. Quite simply, the horse does the teaching, facilitators are there to offer the explanation and provide guidance to find a solution.” There are a variety of participants currently enlisted in the program. From the youths at the Siksika Medicine Lodge—a youth centre Page 54

helping teens with solvent abuse issues, to participants from URSA, a rehabilitative program located in Calgary and the elementary schools in Strathmore. The Team Leaders from the Siksika Medicine Lodge have noticed a change in the participants early on in the program. When the youth are “actively engaged with the horses, they become their true self” one leader explained. Discovering one’s self is the true mission of the program. For the corporations who are searching for innovative solutions to enhance your teams effectiveness, we have one day workshop designed to work together and move in the same direction for extraordinary teamwork. Spiritual Equine Connection seeks to assist youth and adults alike with learning about life through horsepower. “Horses are silent communicators; seeking direction on where to go—much like the youth they are helping. Participants get the chance to step up and be a leader, often for the first time in their lives.” said Fulmek. The owner and senior facilitator of Spiritual Equine Connection believes that the program “is a journey that can be so rewarding for these kids. This is an alternative method of learning that thinks outside the class-

room and teaches everyday life skills that are essential in the healing and growth process for participants.” Spiritual Equine Connection is located3 minutes West of Strathmore and has a heated classroom and arena.
