Must-See Sporting Events for 2012!
2012 is going to be a very exciting year on the local, national and international sporting scene. Here are the top five events that I plan to attend this year. World Sprint Speed Skating Championships – Olympic Gold Medalist Christine Nesbitt has the opportunity to become the first Canadian female skater to win back to back sprint championships. Catriona Le May Doan has won the title twice, but her titles came four years apart in 1998 and 2002. Sylvia Burka was the first Canadian to win the title in 1977. Jeremy Wotherspoon did win back to back sprint titles twice in his amazing career. The World Championships will be held on the fastest ice in the world at the Olympic Oval in Calgary on January 28th and 29th, 2012. Tickets are only $20.00, children (6 to 15) are $5.00, and kids under 6 are free. Tickets will be available at the Olympic Oval but the event did sell out in 2003. For more information, go to Organizing Committee Calgary website www.speedsk8.ca. You will not be disappointed! Olympic and Paralympic Track and Field Trials (Canadian Track and Field Championships) – The Foothills Athletic Complex, beside McMahon Stadium will be rocking the weekend of June 27th to the 30th, 2012. The Calgary Track Council is hosting this major national competition for Athletics Canada. Over 600 of Canada’s best track and field athletes will compete in 134 officially sanctioned events. This will be the final qualifier and tune up for the 2012 Summer Olympics in London. Canada’s best chance for a medal in London will most likely be shot putter Dylan Armstrong of Kamloops, BC. As their slogan says “We do it faster. We work it harder. It makes us stronger.” For more information, go to their new website www.2012trials.ca. Calgary Stampede – The Calgary Stampede is already the greatest outdoor show on earth but this year it should be over the top as the Stampede celebrates their 100th anniversary. The 2012 Centennial will be a community-wide, province-wide and worldwide celebration. I know some Calgarians like to book holidays during the 10 days of madness in July, but I know I will Page 14

stick around July 6-15, 2012. The official entertainment line-up hasn’t been unveiled yet but you know it’s going to be amazing. If you have friends or family coming into town this summer make sure you book your tickets soon for the rodeo or the rangeland derby. www.cs.calgarystampede.com/tickets London 2012 – Fortunately, I have family living in London as our flights are booked for the 2012 Summer Olympics July 26 to August 13. I have been lucky enough to attend three Winter Olympic Games, but this will be my first ever experience at a Summer Olympics. Tickets are not easy to come by but I did secure four tickets to kayaking through the lottery. My daughter is a competitive diver and my son is into fencing so I am hoping my connections will come through to attend these events. If not, just to be in England for the experience will be a fabulous family getaway. 100th Grey Cup – Personally, I am not a big fan of Toronto and their support of CFL football. However, the league will go out of its way to ensure the Centennial game is a huge success. It doesn’t matter who plays in the game (although it would be a lot more fun if the Calgary Stampeders joined the party), the 100th Grey Cup on November 25th at Skydome will be a marquee event in 2012. I understand plans are already underway to re-create the famous cross country train ride for Stampeder fans. You can bet the horse will make a stop at the Royal York. Bathroom remodeling hints: Small price tag, big impact
Unless you just completed a stunning bathroom renovation with a five-figure price tag, there’s probably at least one thing in your bathroom you’d like to change. Whether you’re dealing with a constantly leaky faucet or the whole room just looks drab and out of date, you can find many ways to make your bathroom beautiful again without breaking the bank or investing a huge amount of time. Here are a few tips to get you started: Replace your tired old toilet. Upgrading to a sleek, easy-to-clean one-piece toilet is a surprisingly simple way to update your bathroom, and it doesn’t have to cost a lot, either. Toilet installations are often viewed as a job for a professional, but some new toilets are being designed with the do-it-yourself homeowner in mind. Clean up your caulk. If the caulk in your bathroom is grimy, prone to mildew, or cracked, replacing it is a great way to freshen up the look of your bathroom. Use a caulk softener, available at any hardware store, to soften the existing caulk and make it easier to remove. Then, a good scraping with a plastic putty knife will do the trick. After the caulk is removed, clean in between the tiles with a bleach and water solution, and allow to dry completely. Then you are ready to apply the new caulk. Apply the caulk in between the tiles with a smooth, steady motion, and then smooth the surface with a moistened finger for a more even appearance. Fancy up your faucets. Swapping out an out-of-date faucet is less expensive and time-consuming than replacing an entire pedestal sink or vanity, but can still have a big visual impact. Whether your style is clean and modern or romantic and ornate, updating your faucets can be easy and stress-free now that many manufacturers are offering easy-to-install bathroom faucets. Paint your way to a beautiful bath. Freshening up the color on the walls in your bathroom can be an easy afternoon project depending on the size and structure of your bathroom. Understand that things happen for a reason The brand new pastor and his wife, newly assigned to their first ministry, to re-open a church in suburban Brooklyn, arrived in early October excited about their opportunities. When they saw their church, it was very run down and needed much work. They set a goal to have everything done in time to have their first service on Christmas Eve. They worked hard, repairing pews, plastering walls, painting, etc., and on December 18th, they were ahead of schedule and just about finished. On December 19th, a terrible rainstorm hit the area and lasted for two days. On the 21st, the pastor went over to the church. His heart sank when he saw that the roof had leaked, causing a large area of plaster about 20 feet by 8 feet to fall off the front wall of the sanctuary just behind the pulpit, beginning about head high. The pastor cleaned up the mess on the floor, and not knowing what else to do but postpone the Christmas Eve service, headed home. On the way he noticed that a local business was having a flea market type sale for charity, so he stopped in. One of the items was a beautiful, handmade, ivory coloured, crocheted tablecloth with exquisite work, fine colours and a cross embroidered right in the center. It was just the right size to cover the hole in the front wall. He bought it and headed back to the church. By this time, it had started to snow. An older woman running from the opposite direction was trying to catch the bus. She missed it, so the pastor invited her to wait in the warm church for the next bus, not due for another 45 minutes. She sat in a pew and paid no attention to the pastor while he got a ladder to put up the tablecloth as a wall tapestry. The pastor could hardly believe how beautiful it looked and it covered up the entire problem area. Then he noticed the woman walking down the center aisle. Her face white like a sheet. “Pastor,” she asked. “Where did you get that tablecloth?” The pastor explained, and the woman asked him to check the lower right corner to see if the initials, EBG were crocheted into it there. They were. These were the initials of the woman, and she hadmade this tablecloth 35 years before, in Austria. The woman could hardly believe it. She then explained that before the war, she and her husband were well-to-do people in Austria . When the Nazis came, she was forced to leave. Her husband was going to follow her the next week. He was captured, sent to prison and she never saw her husband or her home again. The pastor wanted to give her the tablecloth, but she made the pastor keep it for the church. The pastor insisted on driving her home, as she lived on the other side of Staten Island and she was only in Brooklyn for the day for a housecleaning job. What a wonderful service they had on Christmas Eve. The church was almost full. The music was wonderful, as was the spirit that filled the room. At the end of the service, the pastor and his wife greeted everyone at the door and many said that they would return. One older man, whom the pastor recognized from the neighborhood, continued to sit in one of the pews and stare, and the pastor wondered why he wasn’t leaving. The man asked him where he got the tablecloth on the front wall because it was identical to one that his wife had made years ago when they lived in Austria before the war. “How could there be two tablecloths so much alike?” He told the pastor how the Nazis came, how he forced his wife to flee for her safety and he was supposed to follow her, but he was arrested and put in a prison. He never saw his wife or his home again all the 35 years between. The pastor asked him if he would allow him to take him for a little ride. They drove to Staten Island and to the same house where the pastor had taken the woman three days earlier. He helped the man climb the three flights of stairs to the woman’s apartment, knocked on the door and he saw the greatest Christmas reunion he could ever imagine. More often than not, we are prone to make a grand gesture of change such as: "tomorrow I'll give up all biting my nails, and exercise for 90 minutes every day," without the awareness that those two major changes would take many months, or years, for even a highly disciplined person to accomplish. I’m talking about good, fun, easy change – things you and your family can do together or individually. Whatever works for YOU! Here are a few really great ideas and once you start making change you will find it has a domino effect on everything in your life.
Keep A Journal
Write down your feelings, your ideas, your goals, and your activities. Journaling is by far one of the most useful things to change your life for the best. It works in such a silent, yet effective way. All you need is a pen and a notebook. You could spend some quality time with your children, sitting around the table after supper and all doing your journal together.
Create a Morning Phrase
Whatever you say to yourself in the morning will most likely come true during the day. Why not taking advantage of it? Create a simple morning phrase and say it to yourself all day. “Today I will be pleasantly surprised!” Or, “something wonderful will happen today!”
Smile At Least 10 Times a Day

The Things Kids Say... 1) NUDITY. I was driving with my three young children one warm summer evening when a woman in the convertible ahead of us stood up and waved. She was stark naked! As I was reeling from the shock, I heard my 5-yearold shout from the back seat, “Mom, that lady isn’t wearing a seat belt!” 2) OPINIONS. On the first day of school, a first-grader handed his teacher a note from his mother. The note read, “The opinions expressed by this child are not necessarily those of his parents.” 3) KETCHUP. A mother was trying hard to get the ketchup out of the jar. During her struggle the phone rang, so she asked her 4-year-old daughter to answer the phone. “Mommy can’t come to the phone to talk to you right now. She’s hitting the bottle.” 4) MORE NUDITY. A little boy got lost at the YMCA and found himself in the women’s locker room. When he was spotted, the room burst into shrieks, with ladies grabbing towels and running for cover. The little boy watched in amazement and then asked, “What’s the matter, haven’t you ever seen a little boy before?” 5) POLICE # 1. While taking a routine vandalism report at an elementary school, I was interrupted by a little girl about 6 years old. Looking up and down at my uniform, she asked, ‘Are you a cop?’ ‘Yes,’ I answered and continued writing the report. ‘My mother said if I ever needed help I should ask the police. Is that right?’ ‘Yes, that’s right,’ I told her. ‘Well, then,’ she said as she extended her foot toward me, ‘would you please tie my shoe?’ 6) POLICE # 2. It was the end of the day when I parked my police van in front of the station. As I gathered my equipment, my K-9 partner, Jake, was barking, and I saw a little boy staring in at me. ‘Is that a dog you got back there?’ he asked. ‘It sure is,’ I replied. Puzzled, the boy looked at me and then towards the back of the van. Finally he said, ‘What’d he do?’

The Things Kids Say...continued 7) ELDERLY. While working for an organization that delivers lunches to elderly shut-ins, I used to take my 4-yearold daughter on my afternoon rounds. She was unfailingly intrigued by the various appliances of old age, particularly the canes, walkers & wheelchairs. One day I found her staring at a pair of false teeth soaking in a glass. As I braced myself for the inevitable barrage of questions, she merely turned and whispered, ‘The tooth fairy will never believe this!’ 8) DRESS-UP. A little girl was watching her parents dress for a party. When she saw her dad donning his tuxedo, she warned, ‘Daddy, you shouldn’t wear that suit.’ ‘And why not, darling?’ ‘You know that it always gives you a headache the next morning.’ 9) DEATH. While walking along the sidewalk in front of his church, our minister heard the intoning of a prayer that nearly made his collar wilt. Apparently, his 5-year-old son and his playmates had found a dead robin. Feeling that proper burial should be performed, they had secured a small box and cotton batting, then dug a hole and made ready for the disposal of the deceased. The minister’s son was chosen to say the appropriate prayers, and with sonorous dignity, intoned his version of what he thought his father always said: ‘Glory be unto the Faaather, and unto the Sonnn, and into the hole he goooes.’ (I want this line used at my funeral!) 10) SCHOOL. A little girl had just finished her first week of school. ‘I’m just wasting my time,’ she said to her mother.. ‘I can’t read, I can’t write, and they won’t let me talk!’ 11) BIBLE. A little boy opened the big family Bible. He was fascinated as he fingered through the old pages. Suddenly, something fell out of the Bible. He picked up the object and looked at it. What he saw was an old leaf that had been pressed in between the pages. ‘Mama, look what I found,’ the boy called out. ‘What have you got there, dear?’ With astonishment in the young boy’s voice, he answered, ‘I think it’s Adam’s underwear!’ Page 22

Our daughter had adopted a stray cat. To my distress, he began to use the back of our new sofa as a scratching post. “Don’t worry,” my husband reassured me. “I’ll have him trained in no time.” I watched for several days as my husband patiently “trained” our new pet. Strange Young Couple A Strathmore peace officer was patrolling late at night off the main highway and sees a couple in a car, with the interior light brightly glowing. He carefully approaches the car to get a closer look and he sees a young man behind the wheel, reading a computer magazine. He also notices a young woman in the rear seat, filing her fingernails. Puzzled by this surprising situation, he walks to the car and gently raps on the driver’s side window. The young man lowers his window and mutters, “Uh, yes, Officer?” The trooper asks, “What are you doing?” The young man replies, “Well, sir, I’m reading a magazine.” Pointing towards the young woman in the back seat, the trooper asks, “And her in the back, what is she doing?” The young man shrugs, “Sir, I believe she’s filing her fingernails.” Now the trooper is totally confused. The prostate is part of a man’s reproductive system. The prostate gland is the size of a walnut. It is found in front of the rectum and just below the bladder, which stores urine. Prostate cancer is the most common cancer and the second most common cause of cancer death in men. It will afflict 1 in 7 and will be diagnosed in about 25,500 men this year, not including cases that go undiagnosed due to men’s unwillingness to go for annual check-ups. Often without symptoms in its earliest, most curable stage, making annual testing ever more important, men can be screened for prostate cancer with a blood test called a prostate-specific antigen (PSA) test or a digital rectal exam, in which the doctor inserts a gloved finger into the rectum to feel the prostate for hard or lumpy areas. New, preliminary research suggests pharmaceuticals may help prevent prostate cancer in men at high risk of the disease. Symptoms may include slow or painful urination, blood or puss in the urine, painful ejaculation, and pain in the lower back or abdomen, pelvis or upper thighs. If experiencing any of these symptoms, please consult a doctor immediately. There’s no sure way to prevent prostate cancer. Study results often conflict with each other, and no clear ways to prevent prostate cancer have emerged. In general, doctors recommend that men with an average risk of prostate cancer make choices that benefit their overall health if they’re interested in prostate cancer prevention. Choose a healthy diet. There is some evidence that choosing a healthy diet that’s low in fat and full of fruits and vegetables may reduce your risk of prostate cancer, though study results haven’t always agreed. Choose a low-fat diet. Foods that contain fats include meats, nuts, oils and dairy products, such as milk and cheese. In studies, men who ate the highest amount of fat each day had an increased risk of prostate cancer. While this association doesn’t prove that excess fat causes prostate cancer, reducing the amount of fat you eat each day has other proven benefits, such as helping you control your weight and helping your heart. Eat more fat from plants than from animals. In studies that looked at fat and prostate cancer risk, fats from animals were most likely to be associated with an increased risk of prostate cancer. Animal products that contain fats include meat, lard and butter. When possible, use plant-based fats in place of animal fats. For instance, cook with olive oil rather than butter. Sprinkle nuts or seeds on your salad rather than cheese. Increase the amount of fruits and vegetables you eat each day. Fruits and vegetables are full of vitamins and nutrients that are thought to reduce the risk of prostate cancer, though rewww.thenewsyneighbour.com
search hasn’t proved that any particular nutrient is guaranteed to reduce your risk. Eating more fruits and vegetables also tends to make you have less room for other foods, such as high-fat foods. Increase the amount of fruits and vegetables you eat each day by adding an additional serving of a fruit or vegetable to each meal. Eat fruits and vegetables for snacks. Eat fish. Fatty fish, such as salmon, sardines, tuna and trout, contain a fatty acid called omega-3 that has been linked to a reduced risk of prostate cancer. If you don’t currently eat fish, try adding it to your diet. Reduce the amount of dairy products you eat each day. In studies, men who ate the most dairy products, such as milk, cheese and yogurt, each day had the highest risk of prostate cancer. But study results have been mixed, and the risk associated with dairy products is thought to be small. Drink green tea. Studies of men who drink green tea or take green tea extract as a supplement have found a reduced risk of prostate cancer. If you like to drink tea, consider choosing green tea. Try adding soy to your diet. Diets that include tofu, a product made from soy beans, have been linked to a reduced risk of prostate cancer. It’s thought that the benefit of soy comes from a specific nutrient called isoflavones. Other sources of isoflavones include kidney beans, chickpeas, lentils and peanuts. Drink alcohol in moderation, if at all. If you choose to drink alcohol, limit yourself to no more than a drink or two each day. There’s no clear evidence that drinking alcohol can affect your risk of prostate cancer, but one study found men who drank several drinks each day over many years had an increased risk. Maintain a healthy weight. Men with a body mass index (BMI) of 30 or higher are considered obese. Being obese increases your risk of prostate cancer. If you are overweight or obese, work to lose weight. Exercise most days of the week. Studies of exercise and prostate cancer risk have mostly shown that men who exercise may have a reduced risk of prostate cancer. But not all studies have agreed. Exercise has many other health benefits and may reduce your risk of heart disease and other cancers. Exercise can help you maintain your weight, or it can help you lose weight. Talk to your doctor about your risk. Some men have an increased risk of prostate cancer. For those with a very high risk of prostate cancer, there may be other options for risk reduction, such as medications. I am a Strawberry Hello! Sherry Strawberry here, and everybody knows who I am! Did you know that, in scientific terms, I’m not a berry at all? Technically, I am considered an "accessory fruit" which means my delicious substance is not directly produced from the ovary – whatever! I don’t care what they say! I consider myself one of the best berries ever! Now, my ancestors have been grown all over the world for hundreds of years but it was not until the 18th century that people started cultivating us. In 1714, a French engineer sent to Chile and Peru to monitor Spanish activities in these countries "discovered" us – we were native to this region and we were much larger than those grown in Europe. He brought my grandparents back to France, and planted them. They didn’t do very well until a natural crossbreeding occurred between our North American cousins planted nearby in the field. The result was a hybrid cousin that was large, juicy and sweet, and we quickly grew in popularity in Europe. We really were a luxury item, only enjoyed by the wealthy until the mid-19th century. Once railways were built and more rapid means of transportation established, we were shipped longer distances and were able to be enjoyed by more people. Today, we have become the most popular berry fruit in the world. Just a little tip: you will want to eat us when our amazing pinkish-red color is most vibrant and rich in lustre because that is when our amazing combination of phytonutrients, including anthocyanins, ellagitannins, flavonols, terpenoids, and phenolic acids, is the best. Our fragrantly sweet juiciness and deep red colour can brighten up both the taste and aesthetics of any meal. Given our unique combination of antioxidant and anti-inflammatory nutrients, it's not surprising to see lots of research has been done about our health benefits in three major areas: (1) cardiovascular support and prevention of cardiovascular diseases, (2) improved regulation of blood sugar, with decreased risk of type 2 diabetes, and (3) prevention of certain cancer types including breast, cervical, colon, and esophageal cancer. It's also hard to imagine any other research result, since your heart and blood vessels need everyday protection from oxidative and inflammatory damage, and the antioxidant and anti-inflammatory nutrient content we have is simply outstanding. Several research studies have shown that our diverse phytonutrients actually work together in synergistic fashion to provide their cardiovascular benefits. Decreased oxidation of fats (lipid peroxidation) in the cell membranes of cells that line your blood vessels, decreased levels of circulating fats, including total cholesterol and LDL cholesterol, and decreased activity of angiotensin I-converting enzyme (ACE), an enzyme whose overactivity increases your risk of high blood pressure are results that have all been documented following daily intake of us over 1-3 months period of time. But you need to eat at least one cup of us a day. Other studies about me have found if you eat me regularly, I will help decrease the risk of type 2 diabetes. Since chronic, excessive inflammation and chronic, excessive oxidative stress (lack of antioxidant nutrients and unsupported oxygen metabolism) are often primary factors in the development of cancer, we would definitely be expected to have cancer risk-lowering properties given our outstanding antioxidant and anti-inflammatory nutrient content. Anti-cancer benefits from us are best documented in the case of breast, cervical, colon, and esophageal cancer. I know I’m bragging now, but we help with improvement of inflammatory bowel problems including ulcerative colitis and Crohn's disease. To help you out with enjoying my maximum amount of nutrients and my maximum taste, you really should eat me fresh and not prepared in a cooked recipe. That is because my nutrientsincluding vitamins, antioxidants, and enzymes—are unable to withstand the temperature (350°F/175°C) used in baking. So instead, add me to mixed green salads, or slice me up and add my good friend the blueberry with plain yogurt in a wine glass to make a parfait dessert. You could try blending me with a little bit of orange juice and make a refreshing coulis sauce. Add me to breakfast shakes to get a vibrant taste and texture. Strawberries with Chocolate Crème 3 Tbsp. low-fat vanilla or soy yogurt 3 Tbsp. organic cocoa 3 Tbsp. maple syrup 1 pint strawberries
Whisk yogurt, cocoa, and maple syrup in a small bowl. If your cocoa has lumps, sift it through a strainer before mixing with the other ingredients. Place mixture in 2 small sauce cups on a plate and arrange the strawberries around the cups. Dip strawberries into the chocolate crème and enjoy!.
The strawberry mousse is one of my favourite recipes. It tastes light, fruity and sweet at the same time. And especially in the evening it's a wonderful "before-bed snack".
Strawberry Mousse 1 Cup strawberries 1 Cup farmers cheese or cream cheese (20% fat) 1 lemon 2 eggs 1/4 Cup sugar 5 leaves gelatine
Squeeze the lemon and keep lemon juice. Separate egg white from the yolk. Soak the leaf gelatine at least 5 minutes in cold water. Squeeze out excess water and place in saucepan. Place two thirds of the strawberries in a blender. Blend until smooth. add farmer’s cheese, lemon juice and sugar and process for 15 more seconds. Melt the gelatine slowly over gentle heat. Once it has melted, add the gelatine carefully to the strawberry mixture. Put in fridge and wait until the mousse starts to gelatinize. Beat white of egg and gently mix into strawberry mousse. Put the mousse 2-3 hours into fridge. Then spoon the strawberry mousse into dessert dishes. Top each dessert with 2 whole strawberries.
Strawberry Crepes with Orange Ragout Filling: powdered sugar 1 Cup orange juice 1/2 vanilla (piece) ginger 2-3 small pieces cinnamon small piece orange zest 1/2 Cup butter 2 Cups strawberries 1 Cup sliced oranges Dough: 1 Cup flour ½ tsp. salt 3 eggs 2 Cups milk 1/3 Cup butter
Blend flour, salt, eggs, milk and melted butter in a blender until smooth. Rest for 30 minutes. Then bake 4 crepes in a buttered pan. Keep warm in the oven. Meanwhile prepare the filling. Caramelize the powdered sugar in a pot until light brown. Pour in the orange juice, vanilla, ginger, cinnamon and orange zest and keep simmering about 10 minutes. Take out the spices; melt in a small piece of cold butter. Afterwards put in quartered strawberries and the orange slices to warm up. Take the crepes from the oven and serve them with the filling on warm plates.
Fresh Strawberry Soup 1 1/2 pounds fresh or frozen strawberries 1/4 Cup vanilla yogurt 1 pint cream 1/2 tsp. vanilla Blend strawberries in blender until smooth. Slowly add vanilla yogurt and keep blending. Pour strawberry mixture into large bowl. Add cream and vanilla and stir until blended. Chill in fridge for at least 1 hour. Before serving garnish with a fresh strawberry or a mint leave. Serve in soup bowls. Enjoy!
Strawberry Carrot Cake 2 1/2 cup all purpose flour 1 1/4 cup brown sugar 1 c Carrots; finely shredded 1/2 cup vegetable oil 1/2 cup plain yogurt 1/3 cup Water 1/2 cup chopped pecans 2 tsp baking powder 1 tsp cinnamon 1 tsp nutmeg 1/2 tsp baking soda 1/2 tsp salt 2 eggs 1 cup chopped Strawberries
Heat the oven to 350 degrees. Grease and flour 12 cup cake pan. Beat all ingredients except strawberries in a large bowl on low speed for 45 seconds, scraping bowl, constantly. Beat on medium speed for 2 minutes, scraping occasionally. Fold in strawberries; pour into prepared pan. Bake 45 to 55 minutes. Cool 5 minutes; remove from pan. Cool completely on a wire rack. Serve.
Strawberries need to be eaten as soon as possible. You should not wash your strawberries until you are ready to consume them. If you must store strawberries, place them on a paper towel in a tightly-covered container in the refrigerator for 2 to 3 days max. They may also be frozen whole or in pieces. The average strawberry has, 200 seeds Strawberries are the only fruit with seeds on the outside. Strawberries are the first fruit to ripen in the spring.

I find January to be the dreariest month of winter. It’s only the first month of the New Year and we should all be really excited to experience what 2012 will bring – but it’s January and it’s cold and dark and feels like winter will stay for another six months. So to change all that, let’s make some pies! January 22nd is National Pie Day, so what a better month than January to fill your home with the warm and comforting smell of a fresh baked pie – the best smell in the world?! Did you know that pies can be traced all the way back to the time of the Egyptians? During that time, pies were made from goat cheese and honey. I don’t have a recipe for that, but look at these melt-in-yourmouth, slice-of-heaven pie recipes and try to enjoy January. Trust me, I know the thought of making your own pie crust is a bit frightening, but don’t be afraid! I have included a no-fail recipe. Give it a try, and you will be so proud of yourself when you pull a perfect decadent pie out of your oven!
Perfect Pie Crust The following pie crust recipe makes enough for two double crust pies and can be used with all three of the pie recipes to follow: 5 cups flour 1-pound lard or shortening* 1 tsp salt 1/4-cup ice-cold water (measurement is approximate) Method: Add salt to flour. Cut lard or shortening into flour to the size of pea-meal. Sprinkle flour mixture with half the water and stir lightly with a fork to mix. Add more of the cold water, just enough to bind the flour mixture into a loose ball. If necessary, add more cold water, a teaspoon at a time, until the mixture will hold its shape. Divide into four balls, and roll out on floured board as needed.
Shoofly Pie Filling: ½ Cup dark corn syrup ¼ Cup light brown sugar 1 large egg, beaten ½ tsp baking soda ½ Cup hot water Crumb Topping: 3 Tbsp shortening 2/3 Cup brown sugar, packed pinch of salt pinch of allspice (or cinnamon) Preheat oven to 350°F. Roll out enough pastry for a bottom crust, and fit it in a pie pan. Combine corn syrup, brown sugar, and egg. Dissolve baking soda in hot water, and stir into syrup mixture. Pour into crust. Mix topping in a medium bowl using a pastry blender or your fingers. Sprinkle crumb topping over corn syrup mixture. Bake for 50 - 60 minutes. www.thenewsyneighbour.com

Shaker Lemon Pie
2 large lemons 2 Cups sugar 5 large eggs, beaten Pie dough for top and bottom crust In a medium china or non-reactive bowl, mix lemons with sugar, and let stand overnight in the refrigerator. Remove from fridge and let warm to room temperature before making pie. Preheat oven to 350°F. Fit bottom crust into 9” pie pan. Stir eggs into lemon-sugar mix and pour into pie pan. Top with remaining crust. Trim edges, crimp and seal pastry, sprinkle with sugar. Bake for 45 minutes. Cool on a wire rack, and serve with whipped, heavy cream.
Hoosier Sugar Cream Pie 2 Cups heavy cream ½ Cup all-purpose flour ½ Cup brown sugar ½ Cup whole milk ½ Cup granulated sugar + 3 Tbsp for sprinkling 1 tsp vanilla Pie crust dough for bottom crust 1 Tbsp unsalted butter 1 tsp ground allspice or cinnamon Preheat oven to 350°F, and roll out pie dough. Fit into pie pan and trim. In medium bowl, whisk together heavy cream, flour, brown sugar, 1/2 cup white sugar, milk, and vanilla Pour filling into crust. Combine remaining white sugar with allspice or cinnamon and sprinkle on top. Bake until center is firm, about 1 hour. Kathryn Hartwell

T’was the month after Christmas, and all through the house, nothing would fit me, not even a blouse; The cookies I’d nibbled, the eggnog I had to taste at the holiday parties had gone to my waist! When I got on the scales there arose such a number! When I walked to the store (less a walk than a lumber), I’d remember the marvellous meals I’d prepared, The gravies and sauces and beef nicely rared, The wine and the rum balls, the bread and the cheese, and the way I’d never said, “No thank you, please.” As I dressed myself in my husband’s old shirt, and prepared once again to do battle with dirt, I said to myself, as only I can, “You can’t spend a winter disguised as a man!” So, away with the last of the sour cream dip. Get rid of the fruit cake, every cracker and chip! Every last bit of food that I like must be banished, ‘til all the additional ounces have vanished. I won’t have a cookie – not even a lick. I’ll want only to chew on a long celery stick. I won’t have hot biscuits, or corn bread, or pie. I’ll munch on a carrot and quietly cry. MEDITATION I don’t know if you have noticed lately, but if you watch Dr. Oz, The Doctors or Oprah’s Life Lessons, everyone seems to be talking about ‘Meditation’. I have taken a couple stabs at it over the years and can never stay committed; but I’m thinking I may give it another try. Meditation is the art of silencing the mind. When the mind is silent, concentration is increased and we experience inner peace in the midst of every day stress. This elusive inner peace is what attracts so many people to meditation and is something everyone can benefit from. These are some of the benefits of meditation: Improved concentration. A clear mind makes you more productive, especially in creative disciplines like writing. Less bothered by little things. Do you sometimes allow yourself to get upset by little things? It is the nature of the mind to magnify small things into serious problems. Meditation helps us detach. We learn to live in the here and now, rather than worrying about the past or future. Better Health. There have been numerous studies pointing to the health benefits of meditation. The reason is that meditation reduces stress levels and alleviates anxiety. belief is not important. Meditation is about consciousness. The beliefs of the mind become trivial. We dive deep into the heart of the matter to gain access to our soul – our inner reality. Therefore, mediation can (and is) practiced by people of different religions or no religion. Many people like the idea of meditation, but feel they don’t have enough time. When you really want to do something, you can find time. Get up earlier or watch 30 minutes less TV. Meditation requires an investment of time, but clearing the mind makes the rest of the day more productive. Nothing is better than the feeling of inner peace. What is the point in being tremendously busy but unable to enjoy it? Meditation is not about retreating from the world; it gives us inspiration. Whatever you do, if you have peace of mind, your work will be more enjoyable and productive. Like anything worthwhile, meditation requires practice. To get the most from meditation, you need to do it every day. This requires a place and time where you will not be disturbed. Sit with a straight back. Don’t try to meditate lying down because you are likely to fall asleep. Meditation brings relaxation and peace but at the same time this is a dynamic peace. Meditation is quite different than the relaxation of sleep. When we really meditate, we are fully alert and conscious. Our sense of awareness is heightened. Afterwards you’ll have a positive feeling for the world and a renewed sense of dynamism. Don’t eat before meditating. After a heavy meal your body will be lethargic with digestion. It is not necessary to mediate in the lotus posture. It is fine to meditate in a chair, as long as the back is straight. Burning incense and having a candle are not necessary, but they can add a little extra inspiration. However you learn to meditate, you must learn to concentrate on one thing at a time. Usually, the mind tries to hold several different thoughts and ideas at once. When you sit down to meditate for the first time, you realize how cluttered the mind is. Mediation teachers have described the mind as a “mad monkey”. However, the mind can be tamed and forced to concentrate on a single thought. One helpful technique is concentrating on a candle flame. Narrow your gaze to the small tip and block out all other thoughts. When you get distracted, go back to focusing on the candle flame. The important thing is that you concentrate only on one thing at a time. Another way to learn concentration is through the use of mantra. A mantra is the repetition of a sacred word. For example, you might repeat the mantra ‘AUM’ a certain number of times. Repeating a mantra forces the mind to focus on a single thought. After you’ve practiced concentration and learned to focus on one thing at a time, you can proceed to the next stage: no thought at all. Achieving a silent mind is difficult, but when you attain it, the experience is powerful. Try to view your thoughts as separate from yourself. When a thought appears, make a conscious decision to throw it out of your mind. Over time you realize that you are capable of allowing or rejecting thoughts. Your real “I” is not a collection of thoughts, but something far deeper. This is the most significant realization of meditation – that you do not have to be a slave to your thoughts. Through meditation, you attain the power to control your thoughts, and on occasion stop them completely. Don’t be discouraged if you can’t attain a silent mind straightaway. It takes time and practice. There is nothing really else to it; meditation is a simple and spontaneous action. Unfortunately, our mind is used to complication and it takes time to unlearn bad habits. I do think New Year’s resolutions can’t technically be expected to begin on New Year’s Day, don’t you? Since, because it’s an extension of New Year’s Eve, smokers are already on a smoking roll and cannot be expected to stop abruptly on the stroke of midnight with so much nicotine in the system. Also dieting on New Year’s Day isn’t a good idea as you can’t eat rationally but really need to be free to consume whatever is necessary, moment by moment, in order to ease your hangover. Today’s global challenges require the North Pole to continue to look for better, more competitive steps. Effective immediately, the following economy measures are to take place in the “Twelve Days of Christmas” subsidiary: 1) The partridge will be retained, but the pear tree never turned out to be the cash crop forecasted. It will be replaced by a plastic hanging plant, providing considerable savings in maintenance. 2) The two turtle doves represent a redundancy that is simply not cost effective. In addition, their romance during working hours could not be condoned. The positions are therefore eliminated. 3) The three French hens will remain intact. After all, everyone loves the French. 4) The four calling birds were replaced by an automated voice mail system, with a call waiting option. An analysis is underway to determine who the birds have been calling, how often and how long they talked. 5) The five golden rings have been put on hold by the Board of Directors. Maintaining a portfolio based on one commodity could have negative implications for institutional investors. Diversification into other precious metals as well as a mix of T-Bills and high technology stocks appear to be in order. 6) The six geese-a-laying constitutes a luxury which can no longer be afforded. It has long been felt that the production rate of one egg per goose per day is an example of the decline in productivity. Three geese will be let go, and an upgrading in the selection procedure by personnel will assure management that from now on every goose it gets will be a good one. 7) The seven swansa-swimming is obviously a number chosen in better times. Their function is primarily decorative. Mechanical swans are on order. The current swans will be retrained to learn some new strokes and therefore enhance their outplacement. 8) As you know, the eight maids-a-milking concept has been under heavy scrutiny by the EEOC. A male/female balance in the workforce is being sought. The more militant maids consider this a dead-end job with no upward mobility. Automation of the process may permit the maids to try a-mending, a-mentoring or a-mulching. 9) Nine ladies dancing has always been an odd number. This function will be phased out as these individuals grow older and can no longer do the steps. 10) Ten Lords-a-leaping is overkill. The high cost of Lords plus the expense of international air travel prompted the Compensation Committee to suggest replacing this group with ten out-of-work congressmen. While leaping ability may be somewhat sacrificed, the savings are significant because we expect an oversupply of unemployed congressmen this year. 11) Eleven pipers piping and, 12) Twelve drummers drumming is a simple case of the band getting too big. A substitution with a string quartet, a cut back on new music and no uniforms will produce savings which will drop right down to the bottom line. We can expect a substantial reduction in assorted people, fowl, animals and other expenses. Though incomplete, studies indicate that stretching deliveries over twelve days is inefficient. If we can drop ship in one day, service levels will be improved. Regarding the lawsuit filed by the attorney’s association seeking expansion to include the legal profession (“thirteen lawyers-a-suing”), action is pending. Lastly, it is not beyond consideration that deeper cuts may be necessary in the future to stay competitive. Should that happen, the Board will request management to scrutinize the Snow White Division to see if seven dwarfs is the right number. www.thenewsyneighbour.com

The Parrot A lady is walking down the street to work and sees a parrot in a pet store window. She stops to admire the bird. The parrot says to her, “Hey lady, you’re strange looking.” Well, the lady is furious! She storms past the store and goes straight to her work office. On the way home, she sees the same parrot in the window and the parrot, upon seeing her, says, “Hey lady, you’re strange looking.” Well, she is incredibly ticked now! The next day on the way to work she sees the same parrot and once again it says, “Hey lady, you are really ugly.” The lady was so furious that she storms into the store and threatens to sue the store and have the bird put down. The store manager apologizes profusely and promises the bird won’t say it again. Maureen is the plant lady and has learned a lot about them over the six years of cleaning, repotting, maintaining and caring for plants of all kinds and sizes. She also sells centerpieces and plant arrangements for gift giving and corporate functions using unique hand decorated pots and all the sprays used to care for them - all natural and chemical free. If you have a plant question Maureen is your girl. She will be sharing her expertise with us every month and expanding our awareness of the world of plants.
I chose three plants to start the year off. Amaryllis is wonderful because it gives us a hint of spring. Usually there are four flowers, each facing in a different direction. No matter where you are in the room, it has a flower for you to look at. Dieffenbachia is great because these plants are easy to grow and can get quite tall; that makes them perfect for growing in the reception area at work. They will fill the space quickly and they add a certain amount of comfort and beauty to the area. Last, but not least, I chose the Prayer Plant. These plants are great for offices, as they will tolerate low light. Three new plants are a great way to start the New Year! Amaryllis These are wonderful plants. They require six hours of sunlight. Keep the soil moderately moist. The flowers will appear approximately six weeks after you start to see growth. As the flowers fade, cut them off below the swelling. You don’t want the plant wasting energy forming seeds. Let the stems die down naturally. They will put the energy into the bulbs. These plants like to be pot bound. The pot should be no more than an inch or two larger than the diameter of the bulb. Use well-drained potting soil, in a container with a drainage hole. Plant the bulb so the top two-thirds are above the soil. Water when the soil is dry to the touch. If the soil is too wet, the bulb will rot. Amaryllis like cool temperatures. They need a sunny location so the stalks and flowers grow straight. Dieffenbachia This plant is popular for its foliage. The sap is poisonous to cats and is also an irritant to humans so please, be careful! They like moderate indirect light. Keep the soil lightly moist and do not water log. They don’t like to stand in water. Dieffenbachia is also known as Dumb Cane. Fertilize in spring and summer, with high nitrogen plant food every two weeks. This is a good plant for home or office. It will grow tall with nice big leaves. If this plant grows too tall, cut it with a sharp knife. Replant the cut-off part into a pot with good potting soil; it will take root fairly quickly. Prayer Plant This plant has the ability to fold its leaves up, (prayer like) at night. Prayer plants rest in the winter, and then produce a flurry of new leaves in the spring. Wipe the leaves with a soft, warm damp cloth to keep the leaves clean. They like moderate light from a north or east window. Keep soil lightly moist at all times. Raise humidity by misting plant every few days. Don’t let the plant sit in water. Fertilize every two weeks in spring and summer. Prayer plants like well aerated soil. This is a good plant for the office, as it will grow fine with fluorescent light. www.thenewsyneighbour.com

The Drunk
An extremely modest man was in the hospital for a series of tests, the last of which had left his bodily systems extremely upset. Upon making several false alarm trips to the bathroom, he decided the latest episode was another and stayed put. He suddenly filled his bed with diarrhea and was embarrassed beyond his ability to remain rational. In a complete loss of composure he jumped out of bed, gathered up the bed sheets, and threw them out the hospital window. A drunk was walking by the hospital when the sheets landed on him. Dear Lifelines, Every January I make major resolutions and I am good with the change for a couple of weeks but then something happens and it seems I can’t stick with them! I don’t know what I’m doing wrong. Help, please! New Year Fear Dear Ms. Fear It’s hard to undergo major changes in short periods of time without considerable adjustment to your life and habits. You might find it easier to set a large goal months or even years down the road and then establish smaller goals leading and building up to the large goal. Habits take time to change. Additionally, determination, persistence and stamina will serve you well in this area. It takes many days to establish a habit, so you have to put forth some solid and consistent effort initially as you are working towards your goals. If you go forward with the frame of mind that it will be a considerable challenge, you won’t be setting yourself up for disappointment. Always do things methodically and intentionally while attempting to establish that habit. It takes more effort at first, but you will appreciate it that much more so that you consciously support your journey and not subconsciously sabotage it. Being mindful means that you think first rather than just acting impulsively. You consider the options and come to a decision based on knowing all the possible consequences. You become deliberate and conscious in your actions instead of moving along without much thought. You can intentionally schedule in rewards for your goal attainment trying to make sure the reward is supporting your goal. For instance, if your goal is to attain a healthy weight, schedule a meal out that you can feel good about eating. You can eat healthy food that takes you towards your goal… not a major feast that will leave you feeling badly and drained of energy. It might help to have some visual markers on your calendar or create a separate goal chart that you can look at every day and feel good about the effort you are making. search elsewhere. Groups, churches, clubs and even online chat groups might be able to help support you as you advance towards your goal. Check in with them frequently. It’s really important to focus on the outcome and continually challenge your thoughts. Your thoughts might attempt to put you back into your comfortable old habits that got you in the problem state in the first place. Is the taste of the cake really going to be greater than sticking to your efforts to get healthy? Is taking a drag on the cigarette really more important that being there for the birth of your grandchild? Your mind will play games telling you it won’t hurt ‘just this once’ or that you’re worth the ‘cheat’ - but don’t be fooled! Focus on the final goal of fitting into those pants or having that wonderful feeling of being healthy and having the energy you’re working towards. Monthly Book Review by Derek Donais My review column is in its second year with the Newsy Neighbour. Please continue to join me each month as I explore a new read. I’ve had the opportunity to review worthwhile books by many local or regional Canadian authors, as well as some great international works. As always, my passions are fantasy and sciencefiction, but I am always on the lookout for more non-fiction, especially from local writers. I hope to build on the many bright spots and successes of 2011. MetalMagic: Talisman, the revised Canadian edition, was released in November, 2011 and I’m happy to announce that the sequel, MetalMagic: Revelation, should be available sometime in February, 2012. Thanks to all those who’ve supported the Newsy Neighbour and read my reviews over the last little while—and here’s to another year filled with promise! Yours in Truth, Derek Donais —I wanted to rip apart the speakers that played the bugle sounds, especially during the early morning hours. Waking up became the hardest part of my day. I thought a good, solid story about new beginnings and overcoming adversity was the right fit for this month’s review, being as the New Year has just begun. Happily enough, I recently finished just such a story: Hanging on to My Dreams: Bouncing Back from All Rejections, by Arnold Henry. The book covers Henry’s experiences from his early school years to the celebration of his lifelong dream in the United States of America. That dream was to win a college basketball championship; Henry walked a very long, sometimes desperate and often lonely path to come within reach of his goal. Fittingly organized into four sections—like the quarters of a basketball game— the book relates Henry’s introduction to basketball in primary school, moves to the building of his reputation as a St. Lucian athlete and his first experiences in America, follows his initial successes while becoming St. Lucia’s first NCAA Division 1 freshman basketball player and then ends off with his final attempt to secure the elusive, championship dream. The story chronicles Henry’s struggles to develop the motivation and skills that he believed would lead him to a brighter future. From early on, his focus was mainly on sports and academics as Henry realized that excelling in both of these areas would be important to provide him with the best possible chance at achieving the success he sought. But this is not just a book about various levels of basketball and school. It is much more than that. Drawing on the journal entries that he began writing at a young age, we see many different topics reflected in this novel. First, we are introduced to the home and culture of a typical youngster growing up on the island of St. Lucia. Through the author’s use of colloquial language and his descriptions of local lifestyles and customs, we are given a very vivid picture of what his everyday life was like. By Canadian standards, his upbringing lacked many advantages and material comforts that we enjoy and, even more troubling, he and his mother were subjected to domestic abuse in a time and society where such things were not addressed. Furthermore, it is a very compelling story of adjusting to change. In this case, the change was beginning a life in a new country. Not only did Henry have to adjust to a completely new environment and culture, but he also had to overcome instances of racism, cultural intolerance, institutional barriers and the misunderstanding or self-interest of authorities, to name just a few. I highly recommend Henry’s book not only as a very interesting and rewarding read in itself, but also to be promoted as an example of resilience and self-sacrifice that any Canadian—young or old—should use as motivation to improve themselves. Especially if you are a student or student-athlete, this story is a virtual necessity. Be advised: amendments to, or the total rethinking of your New Year’s resolutions may result.

Do place items like the phone in easy reach • At home: a. Holding the baby on one hip b. Standing at a counter for long periods of time cooking, cleaning, folding laundry. c. Falling asleep on the arm of the couch •While asleep: a. Avoid sleeping on your stomach b. Do use a pillow between your legs (side sleeping) or under your knees (back sleeping) •Using your cellphone: a. Don’t cradle the phone with your shoulder, use a headset b. Do limit texting to under 15 min at a time 3) Take breaks every 45 min to change positions and stretch 4) Invest in a good mattress and pillow 5) Have your posture checked by a professional. More Canadians are carrying debt when they enter retirement, according to a recent Ipsos Reid survey conducted for a large national bank. Working on the road A fellow stopped at a rural gas station and, after filling his tank, he paid the bill and bought a soft drink. He stood by his car to drink his cola and he watched a couple of men working along the roadside. One man would dig a hole two or three feet deep and then move on. The other man came along behind and filled in the hole. While one was digging a new hole,
the other was about 25 feet behind filling in the old. The men worked right past the fellow with the soft drink and went on down the road. “I can’t stand this,” said the man, tossing the can in a trash container and heading down the road toward the men. “Hold it, hold it,” he said to the men. “Can you tell me what’s going on here with this digging?” “Well, we work for the county government, “ one of the men said. “But one of you is digging a hole and the other is filling it up. You’re not accomplishing anything. Aren’t you wasting the county’s money?”
