In preparation for each school year, we set aside time in the summer months for our Summer Seminar for our Directors of Food and Nutrition (DFNs), and in the following weeks, Professional Development Days for hourly staff. This year we focused on synergy and working together better as a whole. The day’s events included a “Food Truck Frenzy” activity where teams were faced with a timed challenge to create and design a food truck and menu. The activity reflected what we’ve witnessed over the past few years – how remarkable the DFNs and hourly staff are at coming together to achieve a common goal, and especially how they go above and beyond to prepare and serve nutritious meals for students every day.

Nutrition 101 During the weeks following Seminar, training sessions, along with some team building fun, were held locally for hourly staff. The sessions are facilitated by our DFNs and management team and address a variety of topics to satisfy Professional Development Standards. Nutrition 101 is our “boot camp” for all new DFNs. In-depth training over consecutive days concentrates on food quality, costs, increasing participation, food safety, customer service, specialized services, marketing, merchandising and communication.
