The better part of the year was mired in the midst of a pandemic, the likes of what most of us would have only read about in history books. It affected every aspect of our lives. And promises to persist for a while yet. But what remained unwavering was our commitment, at The Organic World, to continue to give you that better choice. We did our best to ensure our home deliveries were on point during the lockdown. That our supply chain continued to function robustly. We put into place all the necessary sanitization measures in our stores, across deliveries. Our staff braved the odds to be at the stores and the warehouses, to ensure you were never inconvenienced. Because when we say we are the better choice, we want to ensure we do everything to affirm it. And before I sign off, I want to take this opportunity to thank you. The end of winter is a time of celebration, to usher in new beginnings with the onset of spring. And this holds even more significance in a country that depends so much on agriculture, such as India.

Other traditions include the lighting of a fire in which old clothes are burnt. This is usually followed by an oil bath and wearing of new clothes. People also visit their relatives and friends often bearing gifts.

The first harvest of the year, usually in January is celebrated with much gusto and festivity throughout the country – as Lohri in Punjab, Bihu in Assam, Sankranthi in states like Karnataka and Rajasthan and Pongal in Tamil Nadu. Prayers are offered to the Sun God, there are ritualistic dips, feasting and more! Perhaps the most well-known of these harvest festivals is Pongal – celebrated grandly across four days, especially among the farming community.

And if there is festivity, can food be far behind? Here are some of the most popular dishes eaten during Pongal, with rice of course, being the highlight ingredient!

Pongal is the beginning of the Uttarayan, marking the date when the sun begins its northward journey. An ancient festival, its mentions can be traced back to the Sangam Age! There are several traditions that are followed during the four days of festivities. New clothes are a must! Homes are cleaned and kollam, beautiful rangolis made of rice flour paste are drawn outside homes. Freshly harvested sugarcane is usually arranged in the shape of a tripod, rice and dal is cooked with milk and jaggery and offered to the Sun God. Farmers adorn their sickles and ploughs with sandalwood paste. Cattle are bathed and garlanded and worshipped. You are likely to see their horns polished bright with vibrant colours!

SAKKRA PONGAL This is easily the star of the show! Traditionally cooked in a pot over a fire, this sweet rice dish is made with green gram, rice and jaggery, milk and ghee. It is rich, delectable and a must-have – first offered to the gods and then straight to your plates! PAYASAM No festive celebration is complete without payasam. The southern counterpart of the North Indian kheer, payasam is made with milk, jaggery and sugar, along with moong dal, or semolina, rice or even millets, along with dry fruits. It goes without saying – “Immunity” and everything it takes to build it has been the focus, mantra, intention, goal for every single one of us all across the globe. It was also one of the most googled words this year. While immunity is the basic foundation of human health, it took a pandemic of this scale to realise how important it is to invest in this gift that we all have been given. In the coming year, with the kind of increase in the number of lifestyle diseases, the mantra is actually going to keep inflammation low. This is because inflammation is the root of all diseases known today. Take any disease, ranging from cancer, weight gain, pancreatitis, to diabetes, kidney diseases, brain degenerative condition and even autoimmunity, it all comes down to Inflammation and thus they are also termed as inflammatory diseases by the medical world. Inflammation is necessary and isn't a bad thing. It is a part of the biological response of our immune system towards a pathogen, bacteria, foreign substance, etc, including injuries from physical activity but the key is that inflammation should be turned on and off at the right time. Inflammation that is chronic and persistent is a bad thing and can pave the way for many diseases. Additionally, sometimes certain agents can also trick our immune system and turn it on, thus leading to autoimmune conditions. Chronic inflammation and its effects on our body is necessary to understand if we want to overcome chronic illnesses and diseases,

because no one addresses the root cause which is inflammation. In most cases and with the right approach we can turn off this chronic inflammation (except genetic). Uncontrolled inflammation can also turn on faulty gene expression which can in turn lead to many deadly diseases. An inflamed and acidic environment is ideal for cancer cells to thrive too, because this kind of an environment is oxygen deprived. So, diseases just do not make its way into the body overnight. There has to be a favourable environment for the diseases, and inflammation is one of the reasons for that. Inflammation affects every single organ and cell of our body, right from head to toe. In fact, doctors today are seeing a phenomenon called as “cytokine storm” as a result of virus infection, which is a case of aggressive inflammation again, in the body due to the infection and it can affect blood vessels, organs and can sometimes be fatal too.

This is the gap in healthcare and most symptomatic approaches and hence we are stuck in chronic illness for the longest time. No number of pills and medications will take away a disease until the root cause of uncontrolled inflammation is addressed, which largely revolves around lifestyle and is fortunately under our control and our choices.

Health On Plants is the brainchild of two ultramarathoners whose passion lies in running and nutrition. With clean nutrition and sustainability as their foundation, their focus was simple: to make the best tofu India had seen.

TOW: What are the sort of products you retail? HOP: We have launched 12 products till date. While tofu (5 varieties) remains our main-stay, we also make 3 varieties of soy-milk, 3 kinds of cheeses. We will soon add vegan mayo to our portfolio.

TOW: What was the idea behind setting up Health On Plants? HOP: Health on Plants was a kitchen experiment that took on a life of its own. The idea was to pick the best of oriental wisdom and create product categories that are authentic and chemical/preservative free. We are on a mission to create nutrient-dense, plant-based aordable health foods.

TOW: Can you tell us a bit about the processes/standards that you follow to ensure your brand philosophy is followed? HOP: We operate out of a 100% dedicated vegan facility that we have built with great care. There is absolutely no chance of cross-contamination with products of animal origin. Since we wanted total quality control we do everything ourselves - from procuring raw materials, storage, manufacturing, packing, QA to delivery. All our products are 100% natural, organic, free of chemicals, colourants, preservatives and any sort of additives. We feel there is no need to overtly process food to increase shelf life and taste. We have stayed true to this philosophy in everything we have done so far and will continue to do so.

TOW: Why did you focus on tofu? HOP: Most tofu produced in India is aimed at departmental stores. It is often found languishing in a store shelf for weeks before it reaches you. Needless to say, it feels like a tasteless lump. We drew inspiration from countries like Vietnam and Malaysia where tofu is made fresh every morning and it is insanely delicious. We wanted to bring the same culture to India where handcrafted tofu is dispatched every day. Our zero inventory model ensures that whatever we make for the day reaches our direct-to-consumers and retail customers the next day. Once people taste fresh handcrafted tofu, they ďŹ nd it impossible to go back to ordinary tofu. www.theorg anic w o r ld . c o m

TOW: What is the message that you want to communicate with your products? HOP: We feel food has the power to nourish us as well as kill us. When you buy from us, rest assured, you get nutrient dense, 100% natural food that is good for you, good for the animals and the planet. It's a win-win-win. We exist because we strongly believe the future is plant based.

Offering our customers better choices is a constant endeavour at The Organic World. There is a story behind every product you see on our shelves, a journey involved in bringing it to you. Our Category Manager, Sriram Jayakumar talks about how he set about on this journey, what he and his team do to ensure these better choices. What made you embark on this journey? I had started my own dairy company after realising how much adulteration there was in the dairy industry. I wanted to make a change in the way I could. It is difficult to find people who take a stand when the tide is against you, but I found that The Organic World as an organisation was bold enough to take the stand - making the effort to find out what is healthy and stand by it. I joined here in the hope of making a bigger impact. The current problem is that too many products have too many additives that are taken for granted. Me and my team want to give a product we would be okay with our families consuming. We take a lot of effort to ensure these better choices. When a customer picks it from among the existing products, even when there might be a cheaper one available and it has a positive impact in their life is why we do this job. What are the efforts you put in every day to ensure these better choices? Ensuring better choices involves more than just doing my day to day tasks. Over the last couple of years I have had to read a lot, speak to industry expats, visit factories and farmers to understand what is used in the production of fruits and vegetables or packaged goods. It involved equipping me and my team understanding what is a better choice and then taking a call on the stand we would take saying we would not put these ingredients on our shelves.

The next step is in finding people who have similar values and beliefs in what they want to offer customers. This involves interacting with startups and companies who have taken such a stance, understanding their stories and products. It involves working with entrepreneurs who are willing to make a difference, to help them reach the right customers. What have been some of the standout moments on this journey thus far? This is the question everyone has: are customers and vendors seeing value in what we do? My team has received validation multiple times. Any time a customer wants to talk about a product, our number is handed to them! Some customers in our JP Nagar store tried one of the new personal care products - they were extremely appreciative that we had launched a small brand. Smaller brands too have appreciated that we give them equal focus and space along with larger brands, something a big retailer may not do. We received a beautiful letter from one of our brands, True Farm, where it was detailed how much they valued our relationship. Despite being across many big retailers now, their young director took time out to let us know how he valued the way our team had helped him launch. It takes a much more substantial effort to find a product that is a better choice. In rare cases does a team actually get aligned in serving that purpose. At The Organic World we have crafted and brought out something that is very unique. And this substantial effort is something that the customer will see when they compare the product and its virtues with what is available in the market. The more they do that, the more they will find value in what and why we are doing.

Rice is an integral part of everyday Indian meals. Whether it’s mixed with sambar or rasam, used in a pulao or biryani, part of desserts or even snacks (think rice cutlets!), no meal is complete without these beautiful and fragrant grains. Little wonder then that India is among the top rice consuming nations in the world! BASMATI BROWN/UNPOLISHED RICE Source: Rajasthan Organically grown, this rice has a flavourful taste and rich aroma. The unremoved bran layer gives it the brown colour and makes it nutritionally richer as compared to polished grains. It is packed with vitamins, minerals, antioxidants and fibre, making it incredibly healthy. These long, slender rice grains are used in biryanis, kheers and even risottos. SONAMASURI WHITE RICE Source: Karnataka This white, medium-grain rice is easily among the most popular varieties of rice. A bowl of organic Sonamasuri white rice contains a high quantity of dietary fibres and important nutrients such as calcium and iron and is rich in carbohydrates and protein. Its calorie content is lower than long grain rice.

RAJAMUDI RED RICE Source: Karnataka (Mysore) A type of red rice, it was earlier grown exclusively for the Wadiyar dynasty or the Maharajas of Mysore. Unpolished, it has a natural red and brown pattern. The red colour is due to the presence of a flavonoid called anthocyanin. It is a rich source of dietary fiber, antioxidants and iron and has a low-glycemic index. HAND POUNDED RICE Source: Karnataka Did you know? Hand pounded rice is one of the healthiest varieties of rice. Pounded in a mortar and pestle, the bran remains largely intact and the grain still retains its healthy nutrients and serves as a good source of energy. This variety of rice is much healthier as compared to machine-processed rice BLACK RICE Source: Rajasthan An uncommon variant, Black rice, also known as the ‘Forbidden Rice’, delights with its mild, nutty flavor and a chewy texture. Rich in phytonutrients, antioxidants, iron and copper, it is also one of the best sources of dietary fiber. It gets its signature black-purple color from a pigment called anthocyanin, which is present in a higher quantity in black rice as compared to any other coloured grains.

RED RICE Source: Karnataka Red Rice is a partially hulled rice that has a nutty flavour. It has a unique blend of phytochemicals, phenolics, flavonoids (anthocyanin, which gives the red colour), along with a higher antioxidant activity. This makes it extremely beneficial for women, especially adolescent girls and lactating mothers. The rice finds a mention in many ancient Indian Ayurvedic texts. SINDHI TA H I R I SNEHA VACC H A N E Y


A product manager “in a past life” as she laughingly says, Sneha Vacchaney is a home chef who specialises in desserts and regional cuisines. She is passionate about her Sindhi Punjabi roots and the cuisine. She works with brands and restaurants and helps curate interesting menus. The Sindhi Tahiri is a traditional dish that's made on special occasions, particularly on Chetichand (Sindhi New Year) but for us, it's not just that. We make it for lunch on the weekends and it's especially great during winters. The aroma of saffron and roasted nuts is beautiful and with the Sindhi sai bhaji, it's an explosion of flavours. It's super simple and quick to prepare and makes for a great meal. INGREDIENTS Rice

300 gm

Sugar

METHOD Soak saffron strands in a tbsp of milk so that it gets a nice colour. Soak rice for 30-45 mins before starting to cook. Drain the water and boil the rice with cardamom in an open pan. Don’t boil fully. Boil only till the grains are soft and they are little more than half cooked. If there’s any excess water left, drain it. Let the rice be in the same pan. Heat ghee in a pan and add coconut slices and black raisins and fennel seeds. Turn off the gas now and add sugar to this pan. Pour this mixture over the rice. Mix it once very gently. Add the saffron milk. Cover the pan, put some weight on the top and cook the rice on the lowest flame. Wait for the sugar to caramelise. Open the lid after 5-7 mins to check if the sugar has dissolved and the rice is a nice yellow in colour. Serve hot as it is. Traditionally, it is eaten with Sindhi sai bhaji or boiled kabuli chana with some salt and red chilli powder.


WELLNESS GOALS FOR 2021 ANISH MENON Head Coach, The OutFit Gym - HSR Layout 2020 was an eye-opener for most of us, in some way or the other. One of the biggest takeaways was the importance of health and fitness in one's life and how that has generally been taken for granted and fallen down the priority list. My top recommendations for 2021 to everyone would be the following: Exercise: Walk, run, swim, climb, lift weights - whatever helps you to move around and challenges you to push yourself to be a better you. Eat Well: Good food works like magic on the body and can help turn around so many lifestyle induced diseases like obesity, diabetes etc. Sleep Well: Sleep is one of the most under-rated weapons out there in the road to fitness and is the best way to reset and recover your body from all the mental and physical stress it is put through during the day. Consistency: Last, but most importantly, be consistent with whatever you do. Start small, build good habits and aim to build a healthy and uncomplicated lifestyle rather than following the latest fad and quick fixes, which more often than not, results in one falling back to the start line so often that they give up. REETH ABRAHAM Athlete and Arjuna Awardee My goal is to stay fit as I have been and more importantly to work on it all the time. Now more than ever, we should not ignore fitness there is no excuse for not doing so! We have all made excuses at one time or the other, but now we need to stop. It is important to eat properly - by that I mean eat healthy - and keep fit. It is also important to work on your mental fitness and stay mentally strong and positive. I am going to focus on being positive this year and also meditate regularly. NIRMALA BALAKRISHNAN Food, fashion and fitness influencer If there was one thing 2020 taught us, it was the importance of prioritizing one's health, something that we can often neglect due to our busy lifestyles. Fitness and food have always been key parts of my life and I will continue to prioritise that for myself and my family in 2021. If you haven't thus far - start small. Even if it's five minutes a day, take that out to exercise or meditate. Go for a walk, or just work out at home. I grow a lot of my fruits and veggies at home on my terrace garden - my priority is clean and wholesome meals! Make sure your meals are balanced, read the labels of the products you buy and opt for organic and natural products whenever you can. Look after your body. It's the best wellness mantra for 2021! AMRUTHA RAMAN Full-time PR Director and amateur runner My mantra is simple: eat clean, try and spend time outdoors and focus on my mental well-being. Eating clean and local has numerous health benefits and is key to all-round wellness. Given the amount of time we have spent indoors in 2020, Vitamin D deficiency is definitely a problem! It is important for us to breathe in fresh air, be out in the sun to lift our spirits and mood and this is something I will try to do more of. Whether it’s going to the park, a day-trek or a run, green therapy is a must! Our mental health would have taken a huge beating in 2020, so it is important to mindfully work on this. Whether this means seeking external help or meditating or introspecting during some quiet time it is important to prioritise mental health. SARAH NICOLE EDWARDS Founder of Copper + Cloves and a certified health and wellbeing coach This year I will be focusing on gratitude because I think it is really important for one’s physical and mental wellbeing. And this means following a gratitude practice, whether in the mornings or at night. When I have done this in the past, it has worked really beautifully for me. I believe an attitude of self compassion and being kind to yourself is a must. If you want a change, it should come from a place of kindness - not as a result judging yourself or pulling yourself down. It is only when you are kind to yourself that change will be constructive. Be thankful, kind and compassionate to yourself - it’s your best wellness gift.

TOW: When you draw up your monthly shopping list, what are a few things you keep in mind? AS: It's very straightforward - when I am drawing up my shopping list, the products that I will include depend on their affordability, if the price I am paying is matched by what I am getting from the product in return, i.e. value for money and, of course, immediate need.
