Lesvos is a mosaic of cultural attractions with amazing archaeological treasures, due to its long history. The options are numerous. Castles, such as the ones in Mytilene, Molyvos and Sigri. Monuments of antiquity, such as the ancient theatre of Mytilene, the temple of Klopedi in Agia Paraskevi, the Messa sanctuary, the Roman Aqueduct of Moria, the ancient city of Pyrra in Achladeri and the world heritage monument of the Petrified Forest in Sigri.

Mithymna or Molyvos. The birthplace of Arion, the first guitar player in written history, and favourite spot for poets, painters and intellectuals all around the world. Molyvos inspires with its unique charm, its imposing fortress, the picturesque harbour with the fishing boats, the famous pebbled alleyways with the wisteria dominating the traditional market, the mansions, the old fountains.

The village of Lepetymnos with the church of Panagia, where every August the traditional feast of the Assumption takes place. Sykaminia with its Folklore Museum and Skala Sykaminia with the beautiful small church of Panagia Gorgona (Mermaid) on the rock and its famous fish taverns.

Visit the Byzantine Castle, the excavations that highlight Ancient Mithymna, the Ottoman baths, the Conference Hall, the Public Library with its rich material, the Municipal Art Gallery with works of great Greek artists, the Kralli Mansion, housing a Dept of the School of Fine Arts of Athens, a beautiful old mansion with frescoes dating back to the 18th century. Επισκεφτείτε το Βυζαντινό Κάστρο, τις ανασκαφές που αναδεικνύουν την Αρχαία Μήθυμνα, τα Οθωμανικά λουτρά (χαμάμ), το Συνεδριακό Κέντρο, την Ιστορική Δημόσια Βιβλιοθήκη με πολύ πλούσιο υλικό, τη Δημοτική Πινακοθήκη με έργα σπουδαίων Ελλήνων καλλιτεχνών, το Μέγαρο Κράλλη που στεγάζει παράρτημα της Σχολής Καλών Τεχνών με τοιχογραφίες του 18ου αιώνα. Τα μονοπάτια γύρω από τον Μόλυβο οδηγούν σε παραδοσιακά χωριά, όπως ο Βαφειός, γνωστός για την γαστριμαργική του υπεροχή και τα περιπατητικά μονοπάτια γύρω από το βουνό Λεπέτυμνος. Η Άργεννος, με το Μουσείο Βαλέτα. Το χωριό Λεπέτυμνος με την Παναγιά και το πανηγύρι του Δεκαπενταύγουστου. Virgin Mary, Petra

Η Πέτρα είναι παραδοσιακός οικισμός στη ΒΔ Λέσβο, ανάμεσα στον καταπράσινο κάμπο και την απέραντη ακρογιαλιά. Ένα πανέμορφο τουριστικό θέρετρο, με πλήρως οργανωμένη παραλία, ξενοδοχεία και δωμάτια, εστιατόρια και μπαρ για στιγμές χαλάρωσης. Ο οικισμός είναι γεμάτος από νεοκλασικά του 19ου και 20ού αιώνα, με περίτεχνες πόρτες και όμορφα ρόπτρα, όπως το αρχοντικό της Βαρελτζίδαινας, με στοιχεία Βυζαντινά και Μπαρόκ. Το μεγαλύτερο αξιοθέατο είναι ο μεγάλος βράχος ύψους 40 μ. που βρίσκεται στο κέντρο του οικισμού. Ο ναός της Παναγίας Γλυκοφιλούσας χτίστηκε το 1742 και δεσπόζει στην κορυφή του βράχου (από όπου και πήρε το χωριό το όνομά του). 114 λαξεμένα σκαλιά οδηγούν τον επισκέπτη στην κορυφή της εκκλησίας με την εκπληκτική θέα. Για τους λάτρεις της φύσης προτείνεται ένας περίπατος ανάμεσα στους παραδοσιακούς νερόμυλους στις Λιγώνες. Εξίσου γραφικά και με αρκετά αξιοθέατα ξεπροβάλλουν το Πετρί, η Στύψη, το Υψηλομέτωπο, ο Σκουτάρος, ο Άγιος Αλέξανδρος. Δυτικά της Πέτρας θα συναντήσετε το Αυλάκι, έναν πανέμορφο κολπίσκο, και την Άναξο, με μια από τις πιο όμορφες παραλίες της περιοχής, με γραφικές ταβέρνες και μπαράκια.

Petra is a beautiful traditional village in the NW part of Lesvos, with a long sandy beach. There are hotels, restaurants and bars, most of which are right next to the fully organized beach, where you can do water sports and scuba diving. Walking through the settlement you will come across many remarkable neoclassical buildings from the 19th and 20th Century. The Vareltzidena Mansion with tapestries from the 1800’s is a site you shouldn’t miss. The biggest attraction is the imposing rock of 40 metres height located in the centre of the settlement. The church of Virgin Mary dominates the cliff top. Built in 1724, it has 114 carved steps that will lead you to the top. Petra’s new Schengen Gate operating from April till September will attract cruise ships and sailing boats from all over Greece and Turkey and will make it easy to take a day trip to Turkey. For nature lovers, the area around Petra offers great walking and biking trails, like Ligona with the 18 old watermills, an unparalleled monument of nature. Petri, Skoutaros, Agios Alexandros, Stipsi, Ipsilometopo are only a few places you must visit. Avlaki is a beautiful bay only 2 mins from Petra and a bit further down lies Anaxos, both with tavernas and café bars on the wonderful sandy beaches. RELIGIOUS HERITAGE ΘΡΗΣΚΕΥΤΙΚΗ ΠΑΡΑΔΟΣΗ

Lesvos is a distinguished religious destination in Greece, with many renowned monasteries and unique churches, amongst of which are: the monastery of Agios Raphael in Thermi, the monastery of Taxiarchis in Mantamados, the church of Panagia (Virgin Mary) in Agiassos with the miraculous image of the Virgin and Child (crafted by Luke the Evangelist, 803 A.D.), the churches of Virgin Mary and Agios Nikolaos in Petra; the Ypsilou monastery on top of Mount Ordymnos, Limonos and Mirsiniotissa monasteries in Kalloni, the Perivolis monastery (Antissa) and the Pithariou monastery (Eressos); the imposing church of Agios Therapon and the church of Ag. Theodori in Mytilene; the Catholic Church in Mytilene, hosting the relics of St. Valentine. In Northern Lesvos, visit the churches of Agios Pandeleimon, Agia Kyriaki and Taxiarchis, all built on the ruins of Byzantine churches, plus the chapels of Agia Theoktisti, Agia Lemoni and Agios Nikolaos. In Vafios, visit the church of Agia Paraskevi and the chapel of Agios Yiannis and the Church of Assumption in Stipsi, built in 1805. Don't miss out the religious festivities of the Virgin Mary in Lafionas, the church of Agia Fotini in Sykaminia and Agios Pandeleimon in Tsichrada.

Η Λέσβος είναι ένας σημαντικός θρησκευτικός προορισμός, με μοναδικές εκκλησίες και πασίγνωστα σε όλη τη χώρα μοναστήρια. Ανάμεσά τους ξεχωρίζουν: Το γυναικείο μοναστήρι του Αγ. Ραφαήλ (Θερμή), το μοναστήρι του Ταξιάρχη (Μανταμάδος), η Παναγία Αγιάσου με τη θαυματουργή εικόνα της Βρεφοκρατούσας (έργο του Ευαγγελιστή Λουκά, 803 μ.Χ.). Η Μονή Υψηλού στο όρος Όρδυμνος, η Μονή Λειμώνος και η Μονή της Παναγίας Μυρσινιώτισσας στην Καλλονή, στην Άντισσα η Μονή Περιβολής και στην Ερεσό η Μονή Πιθαρίου. Στη Μυτιλήνη, ο επιβλητικός ναός του Αγ. Θεράποντος και η εκκλησία των Αγ. Θεοδώρων. Αλλά και η Καθολική Εκκλησία της Μυτιλήνης, που φιλοξενεί τμήμα των λειψάνων του Αγ. Βαλεντίνου. Στην βόρεια Λέσβο, αξιόλογες εκκλησίες είναι: ο ναός του Αγ. Νικολάου και η Παναγία Γλυκοφιλούσα στην Πέτρα, η Αγ. Θεοκτίστη η «Μηθυμναία», η Αγ. Λεμονή και οι εκκλησίες του Αγ. Παντελεήμονα, της Αγ. Κυριακής και του Ταξιάρχη, χτισμένες σε ερείπια βυζαντινών ναών. Στον Βαφειό αξίζει να επισκεφτείτε την Αγ. Παρασκευή και το εξωκλήσι του Αγ. Ιωάννη με το ομώνυμο πανηγύρι. Άλλα γνωστά τοπικά πανηγύρια γίνονται στο Ναό Κοιμήσεως Θεοτόκου στη Στύψη (χτισμένος το 1805), στο παρεκκλήσι της Αγ. Παρασκευής στον Λαφιώνα, στον Άγ. Παντελεήμονα στην Τσιχράντα και στην Αγ. Φωτεινή στη Συκαμινιά.

LESBIAN HAVEN ΛΕΣΒΙΑΚΟΣ ΠΡΟΟΡΙΣΜΟΣ

The reputation of Lesvos is inextricably linked with Sappho, the greatest lyric poet of all time, who was born in Eressos and lived in Mytilene during the 6th century B.C. Skala Eressos, with its stunning, sandy beach and its relaxed atmosphere, has succeeded over the course of time to embrace women from all over the world, who return, time and time again, every summer to the place where they feel safe, free and accepted. The largest turnout of women occurs in September, during which the International Women's Festival takes place, starting the first weekend of the month. For two weeks, women can participate in artistic and cultural events and seminars, during which they can express their creative side, or simply enjoy the sea, sports and the "sweet life" in Skala. In the evenings, the bars, hosting a range of well-known DJ's, continue with the “baton” of fun. As part of the festivities, excursions to various parts of the island are organized, thus providing everyone the opportunity to get to know the undiscovered beauties of the island.

Η μεγαλύτερη προσέλευση γυναικών γίνεται τον Σεπτέμβρη, κατά τη διάρκεια του Διεθνούς Φεστιβάλ Γυναικών, που ξεκινάει το πρώτο Σαββατοκύριακο του μήνα. Για δύο εβδομάδες, οι γυναίκες μπορούν να συμμετέχουν σε καλλιτεχνικές, πολιτιστικές εκδηλώσεις και σεμινάρια, όπου εκφράζεται η δημιουργική τους πλευρά ή απλά να απολαμβάνουν τη θάλασσα, τα σπορ και τη «γλυκιά ζωή» στη Σκάλα. Lesvos has the greater number of wetlands among all the islands of the Aegean Sea (except Crete!). Almost double the number of wetlands than Evia, that comes in second place and is much larger than Lesvos. Those wetlands, 85 in total, are of various different types (torrent mouths, marshes, lagoons, e.t.c.). Most of them (63) are natural and located mainly around the coast of the Kalloni Gulf, but also the Gera Gulf. The three largest in size are the Kalloni Salt Pans (3rd largest salt pan in Greece), Messa wetland and Dipi-Larssos marsh. Wetlands are amongst the richest natural systems in the world, supporting natural functions that are beneficial for humanity in countless ways. The wetlands of the Aegean Sea islands are even more priceless, for they are small, scattered, often seasonal, and severely threatened by human activities (dumping, loss of surface e.t.c.) and also by climate change. For me, and above all, they are sites of beauty and life.

The existence of a great number of species of plants and animals is literally supported by wetlands. Suggestively, more than 50 species of Dragonflies, 5 species of amphibians, 2 of terrapins and 2 of water dwelling snakes have been recorded on the island. Undoubtably, the protagonists of wetlands are birds, since more than 90 bird species of waterfowl and waders have been recorded there, 20 of which are breeders.

Μικροπουλάδα | Little crake (Porzana parva)

Η Λέσβος έχει τον μεγαλύτερο αριθμό υγρότοπων από κάθε άλλο νησί του Αιγαίου (πλην της Κρήτης)! Σχεδόν διπλάσιο από το δεύτερο σε θέση νησί, που είναι η μεγαλύτερη σε έκταση Εύβοια. Οι υγρότοποι αυτοί, διαφορετικών τύπων (χείμαρροι και εκβολές τους, έλη, λιμνοθάλασσες κ.ά.) είναι 85. Οι 63 από αυτούς είναι φυσικοί και εντοπίζονται, κυρίως, στα παράλια του Κόλπου Καλλονής αλλά και του Κόλπου Γέρας. Η Αλυκή Καλλονής (η 3η μεγαλύτερη αλυκή της χώρας), ο υγρότοπος των Μέσσων, και το έλος Ντίπι-Λάρσος είναι οι τρεις μεγαλύτεροι σε έκταση. Οι υγρότοποι είναι από τα πιο πλούσια συστήματα στη Γη και σε αυτούς επιτελούνται ανυπολόγιστα ευεργετικές για τον άνθρωπο φυσικές διεργασίες. Οι υγρότοποι των νησιών του Αιγαίου, όμως, είναι ακόμη πιο πολύτιμοι καθώς είναι μικροί, διάσπαρτοι και πιεστικά απειλούμενοι από τις δράσεις του ανθρώπου (μπαζώματα, καταπατήσεις, κ.ά.) αλλά και την κλιματική αλλαγή. Για μένα, πάνω από όλα, είναι οι πιο όμορφες και γεμάτες ζωή περιοχές του νησιού. Η εμφάνιση πολλών ειδών ζώων και φυτών στη Λέσβο, κυριολεκτικά εξαρτάται από τους υγρότοπους. Ενδεικτικά έχουν καταγραφεί περίπου 50 διαφορετικά είδη από λιβελούλες, 5 είδη αμφιβίων, 2 είδη νεροχελώνας και 2 νερόφιδου. Οι πρωταγωνιστές θα έλεγα είναι τα πάνω από 90 είδη υδρόβιων και παρυδάτιων πουλιών που έχουν παρατηρηθεί, περίπου 20 από τα οποία αναπαράγονται εδώ.

On Lesvos you’ll find wetlands, pine forests, olive groves, natural springs and waterfalls, medieval castles, roman aqueducts and thousand year old monasteries, picturesque walking paths and cobbled trails laid by monks hundreds of years ago, archaeological monuments and a petrified forest unique to the world. One way to really discover Lesvos is to walk or cycle along its paths. There are many well-marked and groomed walking and cycling trails all around Lesvos and each path promises a unique experience. ROCKS, PEBBLES, or SAND? ΘΑΛΑΣΣΑ για κάθε γούστο... Lesvos’s spectacular indented coastline is approximately 370 km long. So it should come as no surprise that there are quite a few beaches here. Some small and secluded, some long, wide and … secluded. Well, to tell you the truth, there are some beaches on the island that can get a bit crowded, mostly organized but only for 3—4 weeks in late July and early August. However, even at its busiest, 370 km means there’s always a spot available that will suit your mood: rocks, pebbles, or sand; narrow or wide; a tiny cove or a long stretch (Vatera, the longest beach on the island is actually 8 km long!). So many choices: organized with tavernas and beach bars, umbrellas and lounge chairs, exciting activities and sports, or primal, completely untouched beaches, tranquil and relaxing with not a soul in sight. Regardless, two things are certain. The sun and the crystal clear, cool and inviting waters of the Aegean. In the western volcanic side of Lesvos, since antiquity, wine has been the accompaniment of a great variety of local recipes. Here you definitely must ask for wines from local producers. The main stars in all the local menu compositions are played by the “giouzlemedes”12, the “sfougato”13 , the “sougania”14 , the kolokythokorfades15 and all kinds of “keftedes” (patties). After your pilgrimage to Taxiarchis in Mantamados or to Panagia Agiasos, visit the traditional coffee shops (kafeneio) and accompany your coffee or “kainar”16 with “gemata”17, “Blatzeda”18, “loukoumades” bathing in “Vrasma”19 (fig molasses) or a huge variety of spoon sweets. GLOSSARY OF FLAVOURS 1) Skalas: The seaside homes of the villages of the island. 2) Papalina: The sardine of Kalloni, a trademark of the bay, but also of the whole island. A Spongefish, smaller in size than the classic sardine of the sea, but much more delicious. Served fresh, grilled, fried and in many other variations. 3) Lakerda: It is fished in November and December. Served salted, which you will find all year round or grilled. 4) Smarida / Marida: The well-known fish, which is not only served grilled or fried on the island, but also salted. The season that it is most delicious is the spring and the summer. 5) Hapsi: Enjoy it either salted, marinated or fried. You will find the Hapsi (anchovy) in its salted form any time of year, and in summer months you can find it marinated or fried. 6) Ktavelia: Species of small galeous. It is usually served fried accompanied by a special garlic dip (skordalia) and you will find it all year round. 7) Trigona: A type of ray fish. Its taste resembles a very good quality galeous. Served fried with garlic dip (skordalia) or “plaki”, baked in the oven with vegetables. 8) S’lines: Shellfish (tubes) are fished from sandy seabeds. Fishing for S’lines has been banned from time to time but around February you are allowed to fish for S’lines for a short while and if you are lucky you will find them served at a taverna steamed. 9) “Thrapsala”: Wild squid, served fried. 10) Beans: White beans prepared boiled. 11) “Lepidi”: Little Pork steaks, very delicately cut, light and juicy, the ideal mezes to accompany red wine! 12) “Giouzlemedes”: Local fried cheese pies made with feta, eggs and fresh mint. They perfectly accompany meat and seafood. 13) “Sfougato”: A traditional pie of the island made with zucchini, eggs and cheese. 14) “Sougania”: “Dolmades” rolled in onion scales. You will find them in many taverns all over the island. 15) ”Kolokythokorfades”/ “Kolokytholoulouda”: The flowers of the zucchini. Usually fried as little patties filled with cheese or cooked in a put, stuffed with rice and herbs. 16) “Kainar”': A hot beverage with an exotic fragrance of cinnamon, pimento, ginger, mountain tea, sage, cloves and peels of orange. Served in cafes of Agiasos. 17) “Gemata”: The traditional “amygdalota” (almond marzipans) of Lesvos, the sweets of marriages because they are sent "peskesi" (as a gift) from the bride to the mother-in-law. You will find them in some traditional cafes and women's cooperatives all over the island. 18) “Blatzeda”: A syrupy dessert served at weddings, its dough made with olive oil and then sprinkled with walnuts and cinnamon. 19) “Vrasma”: The syrup gathered from the scalding of dried figs along with various herbs. It is used instead of classic syrup and sprinkled over “Loukoumades”-donuts. 20) “Kiskek”: Festive food made out of grounded chick peas, wheat and meat (usually nanny goat or ewe). You will find it at ... festivals of course! 21) “Morelia”: A beloved expression used by the locals of the island and a trademark of the local dialect. It is addressed towards both males and females of all ages-good to know to avoid any misunderstandings!

ΕΝΑ ΠΟΛΥΧΡΩΜΟ ΜΩΣΑΪΚΟ ΓΕΥΣΕΩΝ Ένα πολύχρωμο μωσαϊκό γεύσεων που βάζει στο επίκεντρο το μεζέ, το ουζάκι, μα πάνω απ’ όλα την παρέα. Η Λέσβος χάρη στη γεωγραφική της θέση αποτελεί διαχρονικά ένα σταυροδρόμι γαστρονομικών πολιτισμών που έχουν αφήσει τα ίχνη τους στις γεύσεις, τις μυρωδιές και τις συνταγές του τόπου. Εκεί που η Δύση ανταμώνει αρμονικά με την Ανατολή πρώτο λόγο έχουν τα ποιοτικά υλικά του πρωτογενή τομέα στην εποχή τους και το πάθος των οικοτεχνιών που αναδεικνύουν τα πρότυπα της υγιεινής Μεσογειακής διατροφής. Βαδίζοντας ανάμεσα στα έντεκα εκατομμύρια ελαιόδεντρα σταματάμε στις «Σκάλες»1 του νησιού για ψάρι σε όλες του τις παραλλαγές, τηγανιτό, ψητό, μαρινάτο, πλακί, παστό και λιαστό. Ανάλογα με την εποχή ζητήστε παστή παπαλίνα2, λακέρδα3 , σμαρίδα4 , χαψί5 , κταβέλια6, τρυγόνα7, συνοδέψτε με το ούζο σας χτένια, καλόγνωμες, κυδώνια, αχνιστούς σ’λήνες8, θράψαλα9 και λαχταριστές αχινοσαλάτες. Μην ξεχάσετε να ρωτήσετε για τα παντός είδους θαλασσινά που λιάζονται στις ψαροταβέρνες. Απαραίτητα συνοδευτικά για την εξισορρόπηση της αλμύρας η φάβα, τα κουκιά, οι φασούλες10, τα ρεβίθια Λισβορίου και τα βραστά χόρτα με μπόλικο λεμόνι. www.theotheraegean.com

ΓΛΩΣΣΑΡΙ ΓΕΥΣΕΩΝ 1) Σκάλες: Τα παραθαλάσσια σημεία των χωριών του νησιού. 2) Παπαλίνα: Η σαρδέλα της Καλλονής, σήμα κατατεθέν του κόλπου, αλλά και ολόκληρου του νησιού. Αφρόψαρο, μικρότερη σε μέγεθος από την κλασσική σαρδέλα του πελάγους, αλλά πολύ πιο νόστιμη. Σερβίρεται παστή, ψητή, τηγανιτή και σε πολλές άλλες παραλλαγές. 3) Λακέρδα: Ψαρεύεται Νοέμβριο και Δεκέμβριο. Σερβίρεται παστή που θα τη βρείτε όλο το χρόνο και ψητή. 4) Σμαρίδα / Μαρίδα: Το γνωστό ψαράκι που όμως στο νησί, εκτός από ψητή και τηγανιτή, σερβίρεται και παστή, η εποχή που είναι νοστιμότερη είναι η άνοιξη και το καλοκαίρι.

Στα ορεινά ο μεζές παίρνει άλλη μορφή και ο ουρανίσκος ζητάει κάρβουνο. Εκεί έρχεται στο προσκήνιο το παϊδάκι από αρνάκι ή κατσικάκι γάλακτος, το λεπίδι11, η προβατίνα, η βραστή γίδα, με το λαδοτύρι να αποκτάει ηγετικό ρόλο στο τραπέζι παρέα με τις διάφορες σπιτικές χορτόπιτες και φυσικά τη σαλάτα να συνοδεύει για «δίαιτα». Στη δυτική ηφαιστειογενή Λέσβο, από την αρχαιότητα, το κρασί συνοδεύει άριστα μια μεγάλη ποικιλία από τοπικές συνταγές. Εκεί ρωτήστε για κρασιά ντόπιων παραγωγών. Πρωταγωνιστικό ρόλο σε όλες τις τοπικές συνθέσεις μενού παίζουν οι γκιουζ-

λεμέδες12, το σφουγγάτο13 , τα σουγάνια14 , οι κολοκυθοκορφάδες15 και παντός είδους κεφτεδάκια.

5) Χαψί: Ο παστός, μαρινάτος και τηγανιτός γαύρος. Παστό θα τον βρείτε όλο το χρόνο, στη μαρινάτη και τηγανιτή έκδοση τους καλοκαιρινούς μήνες. 6) Κταβέλια: Είδος μικρού γαλέου. Συνήθως σερβίρεται τηγανητός με σκορδαλιά, θα τον βρείτε όλο το χρόνο.

Μετά το προσκύνημα στον Ταξιάρχη Μανταμάδου και στην Παναγία Αγιάσου, όσοι πιστοί προσέλθετε στους παραδοσιακούς καφενέδες και συνοδέψτε το καφεδάκι σας ή το καϊνάρ 16 με γεμάτα 17, μπλατζέντα 18 , λουκουμάδες λουσμένους με βράσμα 19 και με μία τεράστια ποικιλία γλυκών του κουταλιού. Στα δε θρησκευτικά πανηγύρια επιβάλλεται να δοκιμάσετε κισκέκ 20.

7) Τρυγόνα: Είδος σαλαχιού. Η γεύση του μοιάζει με πολύ καλής ποιότητας γαλέο. Σερβίρεται τηγανιτή με σκορδαλιά αλλά και πλακί.

Καλή όρεξη μωρέλια 21!

12) Γκιουζλεμέδες: Τοπικά τηγανιτά τυροπιτάκια που φτιάχνονται με φέτα, αυγά και δυόσμο. Συνοδεύουν τέλεια τα κρεατικά αλλά και τα θαλασσινά.

8) Σ’λήνες: Οστρακοειδές (σωλήνες), ψαρεύονται σε αμμώδεις βυθούς. Η αλιεία τους έχει απαγορευτεί κάποιες περιόδους γύρω στο Φεβρουάριο επιτρέπεται για λίγο και αν είστε τυχεροί θα τους βρείτε αχνιστούς. 9) Θράψαλα: Άγρια καλαμάρια του πελάγους, σερβίρονται τηγανιτά. 10) Φασούλες: Άσπρα φασόλια βραστά. 11) Λεπίδι: Μπριζολάκια χοιρινά, πολύ λεπτά κομμένα, αφράτα και ζουμερά, ιδανικός μεζές για να συνοδεύσει κόκκινο κρασάκι!

13) Σφουγγάτο: Παραδοσιακή πίτα του νησιού με από κολοκύθια, αυγά και τυρί. 14) Σουγάνια: Ντολμάδες τυλιγμένοι με κρεμμύδι. Θα τους βρείτε σε πολλά ταβερνάκια σε όλα τα πλάτη και τα μήκη του νησιού. 15) Κολοκυθοκορφάδες / Κολοκυθολούλουδα: Οι ανθοί των κολοκυθιών. Συνήθως μαγειρεύονται τηγανιτοί γεμισμένοι με τυρί ή στην κατσαρόλα γεμισμένοι με ρύζι και μυρωδικά. 16) Καϊνάρ’: Ενα ζεστό ρόφημα με εξωτική, ευωδιά από κανέλα, μπαχάρι, τζίντζερ, τσάι του βουνού, φασκόμηλο, γαρύφαλλο και φλούδες πορτοκαλιού. Σερβίρεται σε καφενεία της Αγιάσου. 17) Γεμάτα: Τα παραδοσιακά αμυγδαλωτά της Λέσβου, τα γλυκά των «παντρολογημάτων» γιατί στέλνονται «πεσκέσι» από τη νύφη στην πεθερά. Θα τα βρείτε σε κάποια παραδοσιακά καφενεία και στους συνεταιρισμούς γυναικών σε όλο το νησί. 18) Μπλατζέντα: Σιροπιαστό γλυκό που προσφέρεται σε γάμους από ζύμη πλασμένη με ελαιόλαδο, πασπαλισμένη με καρύδια και κανέλα. 19) Βράσμα: Το σιρόπι που μένει από το ζεμάτισμα ξερών σύκων μαζί με διάφορα μυρωδικά. Χρησιμοποιείται αντί για κλασσικό σιρόπι στους λουκουμάδες. 20) Κισκέκ’: Πανηγυριώτικο φαγητό από αλεσμένο ρεβίθι, σιτάρι και κρέας (συνήθως γίδας ή προβατίνας). Θα το βρείτε στα …πανηγύρια! 21) Μωρέλια / Μωρέλ’: Αγαπημένη έκφραση των κατοίκων του νησιού και σήμα κατατεθέν της τοπικής διαλέκτου. Χρησιμοποιείται προς ανθρώπους και των δύο φύλων και όλων των ηλικιών. Καλό είναι να το γνωρίζετε προς αποφυγή παρεξηγήσεων!
