North Miami Lady Warriors win Sectional Title
By Eric Christiansen
The Northfield Lady Norse scored the first five points of the championship game of the Northfield Class 1A Sectional 54, but it was the Lady Warriors of North Miami who emerged champion, using an early 14-3 scoring run to take control of the game and finish with a 59-44 win Saturday, Feb. 5. “This is totally awesome,” North Miami head coach Lori Working said. “I can’t say enough about the girls tonight. They were clicking.” Northfield started the game hot on their home floor as Ainsley Dale started things off with a 3pointer, followed by Hannah Holmes scoring on a rebound and put-back two minutes later for a 50 lead. North Miami regrouped and tied things up with a basket from Ellie Musselman and a 3-pointer from Logan Mouser. Dale hit her second 3-pointer of the quarter to give the lead back to the Lady Norse but the lead would be short-lived, and the last Northfield would enjoy. Jerzi Trigg and Musselman hit back-to-back baskets for the Lady Warriors, followed by a 3-pointer from Allison Bowman to take a 128 lead into the second quarter. North Miami extended the lead

Warriors to 18-10 but Northfield’s Eden Hoover did her best to keep her team close, scoring on three consecutive possessions, however, the Lady Warriors answered each basket with a bucket of their own and led 22-14 with 3:27 left in the half. North Miami led 29-21 early in the second half and maintained a 9-point lead going into the final quarter at 41-32. The Lady Norse had chances in the fourth quarter to close the gap but on two different occasions allowed North
Miami to score offensive rebounds off of missed free throws, and the Lady Warriors defense closed out the win for the program’s first sectional title since 2008. “I told them rebounding and defense were going to win this game (for us) and they finally played like a team,” Working said. “They have good shooters. We had to put a lot of pressure on them out front, and we did.” Kaiden Hanley led North Miami with 18 points and seven rebounds, while Mus-
selman had 14 points and three rebounds, and Logan Mouser had 14 points, five assists, and three rebounds. Allison Bowman added six points, four rebounds, and three assists, followed by Emily
Smith with three points, five assists, and three rebounds, Allison Smith with two points, and Trigg with two points. North Miami (14-8) will face the winner of Cowan (6-15) and Tri-Central (11-13)
who played their sectional championship game Tuesday night, Feb. 8 in the second game of the Wes-Del Regional Saturday, Feb. 12 at noon. The first game will
be the winner of North Vermillion (18-8) and Lafayette Central Catholic (204) and the winner of Blue River (23-2) and Tri (18-5), with both of those sectional
championship games also being played Tuesday, Feb. 8. The regional championship game is scheduled for 8 p.m. Saturday night.

Born June 3, 1930, in Logansport, Indiana, she was the daughter of Viron Jay and Hallie Ruth (Walker) Zellers. Sports Sports of how well they swam given the situation! They truly showed up and gave their best efforts! Mac Boys Basketball defeats Tippecanoe Valley 53-50 By Tim Maiben -It’s been a strange week with the winter storm causing us to have three e-learning days and forcing us to not practice. continued from Page 5 come, although we also add, it’s our home opener on a new court with a 5 p.m. start time while only practicing one time on the new floor (there was no junior varsity due to Tippy Valley girls sectional game). Tippecanoe Valley only had one conference loss coming into our game (vs. Peru & they didn’t have their center that does a great job of protecting the rim). I mention all of this because our boys keep finding ways to be success-
ful. They have overcome tough circumstances time after time this season. Saturday was no different as Tipp Valley jumped out to a 10-0 lead to start the game. We countered with a 14-2 run to hold a 14-12 first quarter lead. The game had a strange feel to it, and we could tell things were “off ” even in our pregame walkthrough. Josiah Ball stepped up first for us hitting two 3pointers for us in the first quarter. Bren-
nan Bailey kept things going in the second quarter also hitting two threepointers. After the first quarter, this game was back and forth with nine lead changes. We were able to earn a couple key baskets down the stretch to give us a two-possession lead, and we held on for a key conference victory. Hayden Maiben led us in scoring with 16 pts, Josiah Ball 14 pts, Brayden Betzner 9 pts, Brennan Bailey eight pts, Bauer Maple 4 pts,

By Laura Kurella With studies* showing that smiling can lift our spirits and boost our immune system, we all need to find ways to add smiles to our day, especially with covid still hanging around. Since smiles are so important for health’s sake, I turned to a cheery resource -cupcake connoisseur, Stefani Pollack! Based in Saint Louis, Missouri, Pollack has baked her way into a career as a dessert blogger and social influencer. “I've loved to bake since I was a little girl,” she revealed in an online interview, “but I didn't get serious about baking until my 30s.” Sparked by a dinner conversation that occurred in early 2006, Pollack soon found herself stirring up something new. “Some good friends were trying to decide where to buy cupcakes for their wedding. I surprised myself, and others at the table, by offering to bake for them (I had never baked a cupcake before – ever!) and my friends surprised me by accepting!” With a wedding date of December 31, 2007, Pollack had nine months to learn to bake weddingworthy cupcakes. “I baked a new cupcake for them every week,” she said, “then let them choose their three favorites for their big day.” This foray into the world of cupcakes pushed Pollack to put what she was baking on the world’s stage. “It is because of them that I started my blog, and I am forever grateful that they let me bake their cupcakes!” Loving homey desserts with seasonal flavors - crumb cakes, cobblers, upside-down cakes, and crispy butter cookies are some of her favorites- Pollack soon found success with

her little cupcakes that could! “My recipes have been featured in Huffington Post and Buzzfeed, Parade Magazine, Paula Deen, Chowhound, Cooking and AllRecipes, and my Instagram account (@cupcakeproject) has nearly a million followers!” Teaching baking classes, speaking at PR, and blogging conferences, and cofounding Build Digital Marketing, a company that helps brands grow, through it all Pollack has remained true to what drove her to bake in the first place. “I love bringing joy to friends and family by sharing my baked goods with them. It makes me so happy when I hear about people trying my recipes and sharing them with their loved ones.” Spreading smiles with her little cupcakes that could, along with other baked goods she’s added along the way, here now is a special sampling from Pollack to help to spread more smiles around your house this Valentine’s Day. Smooth, creamy, and – unlike most other varieties – it’s also SO easy to make! Prep Time10 mins; Cook Time: 1 hr. 5 mins; Total Time: 1 hr. 15 mins. Servings: 12 24 ounces cream cheese room temperature 1 cup granulated sugar 1/2 teaspoon salt 1/4 cup all-purpose flour 1 teaspoon vanilla extract 5 large eggs room temperature 1 1/2 cups heavy whipping cream room temperature Preheat the oven to 400 degrees. Mix cream cheese, sugar, salt, and flour together in a large mixing bowl until smooth. There should be no lumps in the batter. Mix in
vanilla. Mix in eggs, one at a time, until fully combined. Mix in heavy whipping cream until fully combined. Line a 9" cake pan or springform pan with parchment paper, completely covering the bottom and sides of the pan. Use butter on the paper and pan to help it stick to the pan. Smooth out any creases as best you can. (There will always be some creases remaining and that adds to the rustic look of the cake.) Pour batter into a lined pan. air bubbles up to the surface. Bake for 50 minutes then increase oven temperature to 425 degrees and bake for another 15 minutes, or until the top of the cake looks almost burnt. Cool to room temperature and then chill in the refrigerator overnight. When ready to serve, remove cake from pan and peel off or cut back parchment so it isn't visible. Notes: Cheesecake lasts up to one week in the refrigerator or for several months in an airtight container in the freezer. Chocolate Mug Cake This mug cake tastes like the best molten chocolate cake, but you can make it in the microwave! The recipe uses both melted chocolate and cocoa powder so it's extra
Place chocolate, butter, and milk in a microwave-safe mug. Microwave on high for 40 seconds and stir to fully combine. If there are still pieces of butter or un-melted chocolate remaining, microwave for another 20 seconds. Let the mixture cool for two minutes. Add flour, cocoa powder, baking powder, sugar, salt, and vanilla to the mug and stir to combine. Place chocolate chips on top. Microwave on high for 70 seconds or until the top of the cake is set and the chips melt. Eat immediately! Notes: Microwaves can vary greatly, so cook times may be different in yours. Strawberry Pavlova Strawberry pavlova may seem like a super fancy
dessert, but it’s actually very easy to make. This strawberry pavlova recipe is crispy on the outside and marshmallowy soft on the inside. Prep Time:15 mins., Cook Time: 1 hr. 30 mins.; Total Time:1 hr. 45 mins. Servings: 6 servings 4 large egg whites 1 cup granulated sugar 1/2 teaspoon cornstarch 1 teaspoon white distilled vinegar Macerated Strawberries 1/4 cup sugar 2 cups hulled and quartered strawberries whipped cream, to taste To make Pavlova: Combine egg whites and sugar in a stand mixer fitted with a whisk attachment. Whip on high until stiff peaks form. In a small bowl, mix cornstarch and white distilled vinegar together to make a slurry. With the mixer on low, drizzle the slurry into the whipped egg whites. Mix on high to return whites to stiff peaks. Transfer onto a parchment-lined cookie sheet and shape into an 8" diameter circle with a slight depression in the middle. (You can trace an 8" circle onto one side of your parchment paper with a pencil and a cake pan or bowl, then flip it over to use the circle as a guide.) Bake at 200 degrees until the outside and the bottom have a solid shell. If you notice any browning, rotate the pavlova, and keep a close eye on it. Let cool, remove from parchment, and place on the desired serving tray. To make Macerated Strawberries: In a bowl, combine the sugar and strawberries. Cover and keep in the refrigerator for at least 1 hour. Strain liquid from the berries and set aside. To assemble pavlova: Dollop or pipe whipped cream onto pavlova. Top with berries. Drizzle a little of the straw-
berry liquid down the sides of the pavlova. Notes: Make sure that the egg whites reach stiff peaks. If they aren't holding their shape, keep on whisking. If needed, pavlova can be baked a day in advance, and decorated the next day. Serve immediately after decorating. Honey Buns These honey buns are perfectly fluffy with a cinnamon sugar interior and a sticky, sweet topping. They are irresistible served warm right out of the oven! Prep Time: 30 mins.; Cook Time: 35 mins.; Rise Time: 2 hrs.; Total Time: 3 hrs., 5 mins. Servings: 12 3 3/4 cups all-purpose flour 1/2 teaspoon salt 2 1/4 teaspoons instant yeast one 1/4ounce package 1 cup whole milk slightly warmed (110115 degrees) 1/4 cup unsalted butter melted 2 large eggs 1/4 cup honey 1 teaspoon vanilla extract Topping 1/2 cup honey 1/4 cup light brown sugar 1/4 cup unsalted butter 1 cup chopped pecans Filling 1/4 cup light brown sugar 1/2 cup granulated sugar 1 tablespoon ground cinnamon 1 1/2 teaspoons ground nutmeg 6 tablespoons unsalted butter melted To make dough: In the bowl of a stand mixer fitted with the dough hook, mix flour, salt, and yeast. Add the remaining ingredients and mix for about four minutes on high speed until the dough starts to slap the side of the bowl as it moves around. It will be a little wet and sticky. Remove the dough from the bowl and place it on a lightly floured surface. Knead by hand until it comes together into a smooth

ball. Add a tablespoon more flour at a time only if needed to make the dough come together. Grease a large bowl (I clean the mixer bowl that I just used). Place the dough ball into the greased bowl, cover it, and set it in a warm place to rise until doubled in size - about one hour. To make Topping: While the dough is rising, place the honey, brown sugar, and butter into a small saucepan on medium-high heat. Stir until the butter and sugar melts and dissolves into the honey. Pour the topping into the bottom of a greased 9x13" baking dish. Sprinkle chopped pecans evenly over the topping. To make Filling: Mix sugars, cinnamon, and nutmeg together in a small bowl. To make Rolls: Punch risen dough down and roll out on a lightly-floured surface or large silicone mat to a rectangle about 12x18". Brush rolled out dough with melted butter, leaving a small border around the edges of the dough. Sprinkle the spiced sugar mixture evenly over the butter. Roll dough from the long side to make a log. Cut off the ends of the log if they aren't even. Then, cut the log into twelve even slices. Place the slices cut side down on the topping in the baking pan, evenly spacing them. There will be space between the buns at this point since they haven't risen yet. Cover the pan and make sure to let the buns rise in a warm place until doubled in size, about one hour. Preheat the oven to 350 degrees. Bake for 35 minutes or until the buns are golden brown. Let the pan sit on a cooling rack for five minutes and then immediately invert onto a serving plate. Serve warm. Notes: I use a Rapid Rise/Instant yeast. Regular yeast takes longer to rise.
