A Peru couple is recovering in a Fort Wayne hospital after being rescued from a house fire Wednesday, March 30. According to reports, Peru Fire Department Chief Erick Hawk stated the fire broke out around 5:30 a.m. When the two fire crews arrived at 325 West Main Street, Peru, the two-story home was fully engulfed. Two occupants were discovered in the front bedroom of the second story home by a fire crew that had laddered the structure and entered a window. The other fire crew went to the front door of the residence where they began to fight the fire. The occupants, Vicki Draper, and Steve Ogden were rescued from the fire and taken to Dukes Memorial Hospital. The two were then transferred to a Fort Wayne hospital in serious condition. While this incident is most certainly the most difficult Draper and Ogden have experienced, this isn’t the first hardship the pair has endured recently. Draper took a fall months ago and spent several weeks recovering from a serious neck injury. Draper underwent multiple surgeries as a result of the fall. Draper’s initial diagnosis was grim, but she recovered. Ogden

had his own share of challenges after having reconstructive surgery on a leg and ankle. Draper, well-known in the community for her volunteer work and being involved with several organizations has met and become friends with many people over the years. Police reports Miami County Sheriff ’s Department March 23 Officers responded to a traffic stop at S 550 E and E Mississinewa Dam Road, Peru, conducted by a DNR officer in which the driver was agitated and verbally combative. Traffic stop was concluded with the issuance of a citation as officers were arriving on scene. Subject was trespassed from Mississinewa State property by the DNR officer for one year. Born July 13, 1944, in Greensburg, Indiana, she was the daughter of George E., Sr., and Mary June Hendrickson Masters. On July 22, 1972, in Mexico, Indiana, she was married to Gene E. Huddleston, and he preceded her in death Dec. 22, 2000. She graduated from Bunker Hill High School in 1963 and retired from Grissom Air Force Base. She was an active member of the Mexico Church of the Brethren where she had served as church treasurer. Survivors include her

Kenneth Milton Butt, 98 Kenneth Milton Butt, 98, Peru, passed away at 5:25 a.m. Monday, March 28, 2022, at Blair Ridge Health Campus, Peru. Born April 9, 1923, in Peru, Indiana, he was the son of Walker Marvin and Marjorie Elizabeth (Bishop) Butt. On Feb. 22, 1953, in Erie, Indiana, he was married to Dorothy June Pearce Butt, and she preceded him in death Jan. 2, 2016. He was a 1941 graduate of Jefferson Township High School in Mexico, Indiana, and a longtime active member of Erie United Methodist Church. He was a farmer in Erie Township and retired from the Maintenance Department at Peru Community Schools. Following WWII, he served in the United States Army in Japan and Korea. He was known for his dry sense of humor which many enjoyed, and he

Sneaky Squash! By Laura Kurella Thanks to my husband growing an abundance of spaghetti squash last season, we’ve spent the fall, and the on-going winter learning how quickly one can become bored with eating the same squash! Since necessity is often the mother of invention, I thought it wise to take a deeper look at spaghetti squash, and in the process discovered that it offers many benefits that make it well worth sinking your fork into! A winter squash that is often used as a substitute for pasta, once cooked, spaghetti squash does naturally separate into strings that do indeed resemble angel hair pasta, which explains this squash’s unique name. Designed by God to be a delightful gluten-free sub for pasta freaks, spaghetti squash offers up a mild, slightly-sweet flavor that pairs perfectly with just about any dish where pasta would be. However, because it offers a completely different nutrition profile than grain-based pastas, this squash can lower your carb load as well as your glucose intake, too! In fact, one full cup of cooked spaghetti squash has just 10 grams of carbohydrates, a little over 2 grams of fiber, and about 4 grams of natural sugars. Spaghetti squash is also virtually fatfree, less than 1/4 gram per serving, and offers a good source of carotenoids, which the body converts to vitamin A, vitamin C, B vitamins, and manganese, along with natural polyphenols with antioxidant properties. Considered a nu-

Clever Coconut Custard Spaghetti Squash Pie Serves 8. 2 cups milk, or sub 6 tablespoons allpurpose flour 2 teaspoons baking powder 1/4 teaspoon unrefined mineral salt 4 large eggs 1 teaspoon pure vanilla extract

Photographer: Laura Kurella 1/4 cup sweetened shredded coconut 1/2 teaspoon coconut extract 1 cup cooked spaghetti squash, shredded Garnish: A little extra coconut to sprinkle on top Preheat the oven to 350 degrees. In the bowl of a mixer or processor, combine milk, flour, baking powder, salt, eggs, vanilla, shredded coconut, and coconut extract. Blend or process for three minutes until smooth. Stir in squash then pour into a deep, 9- or 10inch pie plate. Sprinkle a little coconut on top (optional), then bake for 40-45 minutes, or until a knife inserted in the center comes out clean. When serving, top with whipped cream, if desired. Spiced-up Spaghetti Squash Cake Serves 12 CAKE 2 cups cooked, drained, shredded spaghetti squash 1 cup all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground star anise 1/4 teaspoon ground fennel seed 1/4 teaspoon black pepper 1/8 teaspoon ground clove

1/2 teaspoon unrefined mineral salt 2 eggs 1 cup brown sugar 1/3 cup plain Greek yogurt 1/4 cup cooking oil FROSTING 4 ounces cream cheese, room temperature 1/4 cup unsalted butter, room temperature 1/4 cup powdered sugar Splash of milk, as needed Preheat the oven to 350 degrees. Grease an 8-inch round cake pan and line with parchment paper. In a bowl, whisk together flour, baking soda, all the spices and salt. In a separate bowl, mix eggs, sugar, yogurt, and oil. Stir together flour and egg mixture. Fold in squash. Pour batter into the prepared pan. Place in the oven and bake until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes then transfer to a wire rack to cool completely. To prepare frosting: In a medium bowl, beat together cream cheese, butter, sugar, and milk until smooth. Spread over cooled cake.

Sports Sports shorts North Miami Opens season vs Bremen Lions in Rainy Pitchers Dual Kolton Floor was on the hill for North Miami Warriors. The Righty allowed two hits and three runs over four innings, striking out seven. Blake Miller threw one and onethird innings in relief out of the bullpen. Bremen got on the board first scoring 1 run in the 3rd. North Miami would take the lead back in the top of the 4th on a 2 RBI single by Brayden Binnion, scoring Trevor Simons and Kolton Floor. North Miami would add another run in the top of the 5th with Ryan McGuire scoring on a passed ball to give North Miami a 3-1 lead. Bremen would come back in the bottom Of the 5th inning to tie the game on a 2 run double. Bremen would score 1 run in the bottom of the 6th inning on fly ball to center which was followed by two errors giving the Bremen Lions the lead. Peru Tiger Baseball Coach Chuck Brimbury wanted to personally thank North Vermillion Athletic Director, Marty Brown, for allowing the Tigers to use the gym as they prepared for a doubleheader at Covington. Although the game was cancelled, the Tigers played a mean wiffle ball game against North Vermillion. North Miami is off for spring break and returns on Wednesday 4/13 at Carroll HS. The Peru Tiger baseball program opened their season with a scrimmage at Fountain Central. Although the weather conditions were very cold and windy, the Tigers looked very sharp on the mound, defensively, and at the plate. Next, the young Peru Tiger Baseball Program battled one of the states top programs in West Vigo to the wire at the beautiful Rose Hulman Baseball facility. The Tigers lost 41. Leif Astrup threw a fantastic game allowing only 1 earned run and giving 4 hits. Sophomore Ian Potts, Freshman Gavin Eldridge, Junior Logan Gatliff, and Senior Leif Astrup all had hits for the Tigers. A very close 2-1 game broke open late.
