Let’s eat! Dubai is a city that is constantly changing and evolving, but this growth goes much deeper than just new buildings and hotels. In the last few years Dubai has really come into its own when it comes to serving up dynamic and diverse restaurants. As a reflection of its multicultural population and identity, the city’s menu doesn’t stay still either, almost every type of food and cooking style is evident amongst the eateries here and diners from around the globe will find somewhere that serves up their favourite dishes and drinks from home. From Yorkshire puddings to bubble tea, Dubai’s chefs have an endless source of new tastes to try. And it’s never been easier to find them! hef Marcello took the helm in the Amwaj kitchen recently with a fresh new menu and a straightforward approach to cooking. Marcello began his working life in his native Sardinia working with famous chefs such as Luca Casadio and Sergio Mei. Marcello then worked in London, Monaco and France before spending the past eight years in Tokyo, Japan. He worked in Michelin starred Bice with Andrea Brambilla; Salvatore Ferragamo’s restaurant Il Borro; and later at G, owned by Yukio Yokoyama. Chef Marcello most recently worked at Altomond, the upscale Italian eatery in downtown Tokyo as Executive Chef.

Marcello’s signature dishes include red snapper sautéed with zucchini cream steamed vegetables and lime espuma; Roasted eel flavor of rosemary green peas sauce and fresh tomato sauce; and squid stuffed with vegetables and almond, with cuttlefish ink sauce and shallot cream.

uma consistently rates as one of Dubai’s favourite restaurants with its modern Japanese menu and huge range of delicious cocktails. The two level restaurant is split between a modern lounge style bar, which is extremely popular at weekends and it has its own resident DJ. The light and airy main restaurant below has a sushi bar as well as a range of tables, suitable for intimate meals or large groups. Zuma’s cuisine is split between sushi, sashimi, robata such as asparagus with wafu sauce and sesame and then specialty dishes, which includes the city wide favourite miso marinated black cod wrapped in a banana leaf. The restaurant also has a set lunch menu, popular with the local area and business people.

The restaurant’s brunch on a Friday is always busy and includes a range of sushi, sashimi and one main dish per person. For a delicious meal with a buzzing and lively atmosphere, Zuma is pretty hard to beat.
