Paper Cuts Glue

Sometimes it is part of my job to stare out the window and think. I rarely succeed. It is necessary for me to stay on task, think on the move – and keep moving – as it were. Distractions are my downfall so I had to devise methods that help me concentrate. Focus doesn’t come easily to everyone. Understanding the need for selfdiscipline indicates how well I have come to know myself. It’s also how I adopted the motto, “Whatever it takes.” Do whatever it takes and do it as well as possible. Still, it’s a challenge. If you are a fan of Grey’s Anatomy, you heard Dr. Meredith Grey sum up the lesson learned from a difficult experience this way: “To really be efficient you have to figure out what doesn’t work. You have to decide what’s important, and hold on to what matters most.” I didn’t have the privilege of meeting Margot Brown. She passed away last month. For 33 years, she was the Secretary of the Bobcaygeon Agricultural Society Fair. In the 2012 Fall Fair President’s

Message, Sandy Cowan wrote, “A big thanks goes to Margot, the glue of the Fair…” Glue. What a magnificent compliment – is there a better word to describe a person who gave so much, did so much, and was so appreciated by countless people in her world? An avid, long-time member of the Women’s Institute, Margot also became the first female councillor in Verulam Township. She was respected for her “passion for horses and fairs,” and most of all, for the unmistakable pride and joy she was known to express for her grandchildren and great grandchildren. My understanding is, in the fulfillment of service to family and work, Margot excelled at the art of focus. Evidence shows she was a master. A master of focus on the tasks and commitments at hand, and on the people she loved. She had to – there would be no other way to achieve all of the things she did so well. Next autumn, the Bobcaygeon Fall Fair will be a grand success. The excitement, the enthusiasm, the tradition will carry forward and radiate. The spirit and stick-to-itiveness that set the example for the past 33 years will surely go on, too. Whatever it takes. Thank you, Margot. editor@thepromoter.ca

KINETTES AND EASTER EGGS

As always, our March meeting was our Cystic Fibrosis meeting. Here are a few points to refresh everyone’s memory. • CF is the most common, fatal genetic disease affecting Canadian children and young adults. There is no cure. • CF affects breathing and the digestive system. Ultimately, most CF deaths are due to lung disease. • One in every 25 Canadians carries, a defective

version of the gene responsible for Cystic Fibrosis. • The partnership with CF Canada and Kin Canada began in 1964. Our support has helped children and young adults with CF live longer, healthier lives by funding high-quality research and care. The need for a cure is urgent. The burden on the parents of a Cystic Fibrosis child is tremendous including constant care, medications, hospital visits and other expenses and worries. In 1964 the life expectancy of a child was 4 or 5. Now many are living into their 40s, but still half of the children in Canada with CF may never get to school. We presented our annual cheque to the Zone CF Service Kinette, who happens to be a member of our club, at this meeting. CF is the priority project for Kin and we try to raise as much money as possible each year. We know our donations make it possible to fund much more needed research. Our motto is “Serving the Community’s Greatest Need” and we are selling Easter eggs; the money raised goes to the Community. Easter is practically here and we thank the many businesses that offer our eggs for sale and to remind everyone that there are only a few days left to purchase them. Happy Easter, Kinette June

BOBCAYGEON CURLING CLUB Shows Kids It IS Cool to Curl

Sydney Britton, Mercedes Ingram, Ethan Britton, Nolan Scarlett

To increase the awareness and availability of curling for children, the Bobcaygeon Curling Club again offered the Bobcaygeon Public School free curling instruction for students in grades 5 to 8. Last year, 24 students were trained and in 2013, there were 22 participants. The students registered to

curl twice a week – Monday and Thursday – for the months of January and February. Teacher, Liana Oliver originally coordinated the program; this year Vice Principal, Aaron Jermyn supervised it. Many parents came to watch the instructional sessions and games the students eventually played. The instructors, Laura Ferguson and Al Ingram had the help of an additional 14 volunteers from the Curling Club. The two-month schedule wound up on March 4 with a Bonspiel and prize presentation. One sponsor, Godfathers Pizza supplied free pizza, plus the students enjoyed cake, beverages and other treats. The program was developed and supported by the public school to provide students with other options for sports and recreation. Who knows – there may be another Glenn Howard or Jennifer Jones in the making?

Eve Tomlinson, Brooke Sisson, Emma Tomlinson & Samantha Schultz. Eight medals were earned and the youngest skaters received certificates and report cards on how elements were executed. The annual Toni Carr Memorial Interclub was hosted by the Millbrook Skating Club. Team Bobcaygeon consisted of those who went to Beaverton and Prescott, plus Alyssa Lowry, Emma Nicholson, Braydon Evely, Brooklyn Kearns-Harding, Sydney Bruneau & Natalie Lerm. The two-day event of team events resulted in 13 medals, including a gold and bronze in the “Theatre on Ice” events.

Four of our skaters attended the Eastern Ontario Starskate Invitational Championships (EOSIC) in Whitby, ON; Raelynn Dobbs, Katie Vandeloo, Cody Mann and Nyah Kelly. Cody received the silver medal in the Men’s Senior Bronze category and will represent the Eastern Ontario section at the Ontario Trillium Championships in March. After placing first in her initial flight and first in her semi-final flight, Nyah went on to win the bronze medal in the final flight of the Pre-Preliminary category, out of 126 skaters. For a chance to see these skaters in action, don’t miss the club’s annual Carnival, “Lights, Camera, Action”, featuring music from the movies on Friday, March 22, at 7 pm at the Bobcaygeon Arena. Admission is $5; children 5 & under free. The Bobcaygeon Skating Club thanks the Bobcaygeon Legacy C.H.E.S.T. Fund for their generous support of this event. Submitted by Shana Kelly

TRANSIENT TRADERS

I am sure we have all seen the flyers in our mailboxes for liquidation sales at the Fairgrounds or a local hotel claiming incredibly low prices on everything from large kitchen appliances to clothing, jewellery and whatever else they have. Here we go again. I remember this from about a year ago. At that time they raised the fee for Transient Traders licences to $300. Now they want $500. The bigger question facing Council is should they be allowed at all? Stephen Podolsky, chair of the Lindsay Downtown BIA doesn’t think so. Instead of figuring out how to regulate transient traders, he noted, “We would rather this council focus its efforts on promoting the local businesses…” that make up the city’s economy. Jim Garbutt, who owns The Buy and Sell Shop in Lindsay agrees and said he could not compete against transient liquidation sales advertising they were moving $2 million in stock. On the opposite side of the discussion was Peter Zadikian, who owns property and has been in the area since 1983, was offended at being called transient. He said he offers cheap, attractive merchandise and his Kirkfield sales draw people from the area and beyond. He said he, “refuses to be included” with transient traders and objected to a fee increase. Technically he is not transient but the way he operates he pays no business tax. Council asked Staff to look into altering or deleting the reference to Transient and Liquidation from the by-law. The Mayor has long advocated buying locally but even here the City has been known to purchase goods or services outside the city usually due to price. The Transient Trader by-law is to come forward without provision for transient auctions and

liquidation sales and staff are to report back on this. Also, a Task Force was set up to review the matter. To my mind, this goes to the root of freedom of competition and free market enterprise. Does one regulate an individual who chooses to shop outside the City of Kawartha Lakes or for that matter buys a product on-line? This is one issue that no matter what Council finally decides, not everyone will be satisfied.

SCHOOL TAX RELIEF The school board recently told the City it had to collect $338,693 less in 2013. The City’s budget advisory committee met recently and a majority recommended that the money go into the capital projects reserve. However, Ward 7 Councillor Brian Junkin opined that it was government giving with one hand and taking it back with the other. You may remember Council had already decided to take the funds collected for the Ross Memorial Levy and change it to fund infrastructure. Council voted to pass the savings on to the taxpayer. This will mean a reduction of approximately $8 per $100,000 of residential tax assessment effective on your 2013 final tax bill.

In response Ward 7 Councillor Junkin reminded Council that farms create jobs. More to the point is that over 3,000 other applicants in Ontario have been waiting for over 2 years to have their approved Solar Panels installed on their property. Could our City Council be prophetic?

THE TOURIST ADVISORY BOARD Laurie Bell advised Council that the Tourist Advisory Board was dissolved and members were thanked for their service and encouraged to join the Kawartha Lakes Tourism Association.

SOLAR FARMS The Federation of Agriculture has recommended that there should be no Solar Powered farms built Class 4 or 5 farmlands. Council must have been listening because in a surprise move the CKL Council declined a proposal to allow a request from Greg Rossetti of Bondfield Construction and Jeff Allan of First Ontario Energy to erect two 10-megawatt (MW), ground mount solar generating facilities, one in the former Verulam Township and one in the former Emily Township. They were to be built on Class 4 and 5 lands. During the debate that followed Ward 9 Councillor Luff was advocating acceptance of the requests as the City needs to help people get jobs. through those changes. Mr Harper and his austere form of government have seen us through some very difficult economic times but he is not the man to take us into a new and brighter future. Charisma is not a word we tend to associate with our Stephen! It seems likely that we will have to wait until October of 2015 to oust the Harper regime but that gives us time to prepare the way for a new charismatic leader to take the reins. You may have noticed that the Liberals have carefully planned to re-invigorate their faded party with the son of a charismatic leader from the past. Justin Trudeau, now suitably coiffed to become the party leader is the hope of many and perhaps he is the one who can bring about the changes that Canadians are looking for as the world around us emerges from the dismal days of the past few years. But we should not underestimate the man from the NDP, Thomas Mulcair who has developed a strong following and filled the shoes of his greatly admired and respected predecessor. Mulcair is seventeen years older than the young Trudeau, which could either be considered an advantage or the exact opposite. In any case, I believe that the battle for a new charismatic leader will be between those two. It may seem strange that the two contenders would be from Quebec but, when you think about it, that’s not unusual in recent times. My bet is that the young Trudeau, carefully groomed for the part, will become the next Prime Minister of Canada. Can he live up to his father’s image? I am far from sure about that, but only time will tell. The great thing about making predictions a long time in advance is that most people will have forgotten your prognostication when it fails to come about. On the other hand, if it does happen you can gleefully remind everyone. Here’s an idea: Justin Trudeau could get Leonard Cohen to write a Canadian version of “The Times They Are A-Changin’” and use it for his campaign song. Okay, I will quit while things are changing.

ROOTS & RAMBLINGS

The calendar says that Spring has arrived. If you have lived in the Kawarthas for any length of time you will know that is merely a teasing thought. However, for some gardeners, it is time to start planting seeds under indoor lights to get a head start for slower varieties. As always, it is a tempting to try some of the new varieties found in the seed catalogues. One, from which I ordered seeds

in January, featured a NEW variety on every single page. Most are a variation on an old theme, but some really stretch the limits. You can now get a Cherry Tomato that stays green, a white Eggplant, and Coneflowers that come in thirteen colours other than the traditional purple. Many catalogues now designate specific plants for speciality gardens. The Moon Garden contains all white blooms. Shade Gardens are for those who have limited sunshine. If you wish to attract butterflies or birds,

there are plants that are designed primarily for that purpose. Last summer was certainly a good time to be growing a xeriscape or Dry Garden. There is even a Deer Resistant Garden, which will be a relief for those who have no luck discouraging Bambi and its mother. Rock Gardens have been popular for ages. Linda McLeod from Cedar Lane Gardens, speaker at the Horticultural Society’s meeting on Thursday, March 21 at 7 pm at Knox Presbyterian Church, Bobcaygeon, is an expert on rock gardens. In 2005, she and her husband Craig built one on their Cedar Tree Road property. They have provided the correct growing conditions for their special rock garden plants. Wisely, they have also incorporated walkways among the three tiers making access easier and observation closer. She reassures us that, with the proper knowledge, all types of gardens are within our reach and not just confined to the glossy pages of magazines. March 22 to April 3, 2013

Aries (March 21 to April 20) There’s a full moon on March 27, Aries, during your zodiac phase. Its various names include Lenten Moon, Worm Moon and Sugar Moon. As the maple sap begins to run, it symbolizes balance and healing, and we encourage you, during this time, to balance your life, Aries, and find peace within. Taurus (April 21 to May 21) Taurus, you must have faith in yourself – faith that you can figure out the problem and the solution, and faith that you can take on whatever needs to be done. Fill your life with results! Gemini (May 22 to June 22) It is said that perfection is a moving target – so why try? Is utopia unattainable? Of course it is – we’re human after all. But it doesn’t mean we can’t strive for utopia. Those struggles are what make us better, not necessarily perfect. Remember this in all aspects of your life, dear Gemini. Cancer (June 23 to July 23) Back to basics, Cancer! Think about your past successes and what you have accomplished, and then build on these attributes. Regard every step as a ‘stepping-stone’ leading to higher ground! Leo (July 24 to Aug. 23) You are so dedicated, and filled-to-the-brim with integrity, Leo! Hold on to your ideals! No one can squash your commitment and resolution, so don’t even consider it! You are appreciated, more than you know! Virgo (Aug. 24 to Sept. 23) You have been working hard, Virgo, and there’s no shame in taking a needed time-out from your stress and worries. Find a little sanctuary all your own and rest!

Aquarius (Jan. 21 to Feb. 19) “A genuine leader is not a searcher for consensus, but a molder of consensus,” said Martin Luther King, Jr. This is your job during this phase, Aquarius. Learn to mould those around you to bring out the best, at work or at home. Pisces (Feb. 20 to March 20) It is a steady time for you financially, Pisces. Don’t spoil this by being over-indulgent during this phase. Avoid temptations and stick to what you really need and what is most important at the moment.

Don’t let this go to waste. Use it to your advantage. Scorpio (Oct. 24 to Nov. 22) There are times when other people may know what is best for us, yet we resist their input into our lives. We need to see for ourselves – then it becomes our own decision, not theirs. There’s nothing wrong with this, Scorpio, because we all need to feel in control of our future!

Home Improvement OUT ON A LIMB

Many people take trees for granted. They produce maple sap for our syrup, keep us shaded in the summer time and provide a home for our feathered friends. But the trees around our property can sometimes be neglected. We think they’re pretty and we just assume that Mother Nature will take care of them. But Mom’s busy sometimes so it’s time to call in the experts. Rich Welwood of Welwood Tree Service in Bobcaygeon answered a few of our questions about tree care. Q: Why is pruning beneficial to my trees?

A: P runing is like preventive maintenance. Proper pruning results in healthier tree growth, ensuring longer life and stronger structure of the tree.

Q: When is the best time to have my trees pruned? A: There are several different times of the year to prune trees, depending on tree species, age and location. Q: I think my tree has a disease or insect problem. What should I do? A: As soon as you notice anything abnormal about your tree’s appearance, you should examine more thoroughly. Diseases and insects can adversely

affect the trees health. The faster the problem is diagnosed, the better the chance for preventive treatment. Q: What is a hazardous tree? A: T rees are very nice to have on our properties, but they can become hazardous if they have the potential to fall and injure people or damage property. Proper maintenance will help prevent and identify when a tree becomes dangerous.

As you inspect your home and yard after a long winter, be sure to look up. Your roof could have aged without you noticing. An aging roof can turn bad within six months to a year after you first notice curling or flaking. Look for problems such as shrinking shingles, lifting or flaking, or walls cracking. It could mean moisture is being held in the roofing system or walls due to some source of leak. A roof can leak for a long time before any signs are evident inside the home. These problems can also occur from aluminum television towers that drip water. Ventilation is another problem – the more ventilation, the better. Your roof is your primary protection against

weather and the life of your entire home; do not put off replacing it when necessary. Home owners can install their own roofs but it isn’t recommended. There are numerous safety precautions, along with the expert knowledge needed to cover the lifetime warranty of a new system. One example is that shingles are created from fibreglass now. So there are certain procedures to ensure full factory warranty. The bottom line is to do your homework. Know the reputation of the professional you choose, be wary of numbered companies, and be sure your contractor is fully insured with a valid HST number and written workmanship warranty. It’s your roof. Make sure you contract an experienced roofer for this important project. Submitted by 705.738.7847.

large down payment “to pay for materials.” This could leave you vulnerable to contractors who cash in a deposit and never complete – or even begin – the job they were hired to do. Keep down-payments to a minimum (we recommend about 10 per cent) and never pay the full amount of the contract before the work is completed. This also protects you from financial loss if the company declares bankruptcy before completing the work. Remember, legitimate home renovation companies have enough credit to buy the materials they need.

The Paper-Free Deal

How To Avoid

Scams and Rip-Offs We hear a lot of complaints about home renovations and repairs. Being aware of these common consumer complaints will help you protect your renovation dollars:

The Door-to-Door Game

A common sales ploy in the home repair business is the offer of a “good deal” by a door-to-door seller because “we just happen to be in the neighbourhood with all our material and equipment.” The contract usually must be signed right away to get the special price. Don’t fall for this high-pressure sales tactic. There are other door-to-door tricks to watch for. A salesperson may offer to “inspect” your furnace, chimney or roof, free of charge. Afterwards, you are told that immediate and expensive repair work must be done. Of course, the individual offers to do the work and has a contract ready for you to sign. If you suspect repairs are necessary, choose your own company. Don’t be tempted to sign just because someone is already at your house.

The Disappearing Contractor

Never let a contractor talk you into making a

Not having the right paperwork – estimates, contracts, professional licences, building permits – can be a warning sign that a contractor is not reputable. A contract is your best protection as a consumer. It’s also a good idea to avoid cash deals. Although they can be appealing, if anything goes wrong with your project, you won’t have proof of payment without a receipt. Remember, reputable companies comply with the law. A professional licence shows that a contractor is qualified to do the work you’re hiring him or her to do – like plumbing or electrical. Building permits allow your municipality to make sure that any work you have planned meets the Building Code standards and bylaws. Source: Ontario Ministry of Consumer Services, www.sse. gov.on.ca

DID YOU KNOW That Legally…

Not everything in your tenant lease may be legal? Does your new lease have a clause stating that you need to pay the first $100.00 towards any repair bill, or, that your last month’s rent is really a damage deposit? How about the one where you need to submit 12 months of post – dated cheques? Yes, all illegal! And pets...unless you are in a condominium where the declaration says no pets, any tenant is permitted to bring a (legal) pet into the unit. The only way to evict a tenant for having a pet is if the landlord can prove that the pet is bothering other tenants or damaging the unit. INSURANCE TALK

Insurance usually gets pushed to the bottom of the priority list. Your insurance should be in the same category, and have the same priority, as filing taxes. Why? Because your insurance is what financially protects your material assets as well as your legal liability actions in the event of a loss/claim. You need to visit your insurance policy annually. Everyone will have different expiry dates (unlike filing your taxes), but you need to consider your insurance as important as the relationship with your accountant. My advice is to develop that same relationship with your insurance representative, if you haven’t already. How do you make sure you have the proper policy? There’s an obligation for your insurance representative to explain coverages and review a policy with the consumer, but there is also an obligation for

Let u$ maximize your return. Maximum Refund Guarantee*

the consumer to review their own policy and make sure information is current, correct, and there have not been any changes since the original policy was put inforce. (Example: HOME; have you installed or removed a woodstove, performed any renovations or additions, installed an alarm system paid off a mortgage. AUTO; have you changed jobs, commute a shorter/longer distance to work, retired, added or removed a driver, or sent a child off to university). I leave you with this fact. Most home policies have a Guaranteed Replacement Cost (GRC) endorsement that protects you with a total guaranteed rebuild of your dwelling, should you have a total loss (fire or other). What most consumers don’t know is, if you have made any changes to your home with renovations, additions or other alterations, which increases the value by more than $5,000 in most cases, GRC may not apply. This could be as simple as adding a deck to your house. Living in the Kawarthas, more and more homeowners are, or have already, converted cottages into all season dwellings, or have performed renovations to make their home a more comfortable living space. Have you notified your insurance representative?

Health & Wellness Community Cares

by Mike Puffer

Springtime, with its renewal of nature and generally sunnier conditions both literally and figuratively, is an important time for many local organizations who observe National Volunteer Week. This year’s “official” week to show appreciation to volunteers is April 21 - 27, but agencies such as Community Care try to emphasize the importance of volunteer contributions on a year-round basis. However, some special efforts are being planned so that Community Care officials can say a special thank-you to the more-than 900 valuable volunteers who assist in so many ways each year. This year’s Community Care Volunteer Appreciation celebration will be Sunday, April 21 at the new Fenelon Falls Community Centre. Invitations to the event have been sent and officials are hoping for a good turnout of Community Care volunteers who are considered to be “exceptional people” with “extraordinary hearts.” Exceptional People, Extraordinary Hearts is the theme of this year’s event, and Community Care feels it perfectly sums up the value of agency volunteers. Volunteers with the organization contribute their time and expertise in every way imaginable They give unselfishly and freely of their time in order to help others in the community. Last year, Community Care volunteers gave almost 80,000 hours of time to help. The statistics from other local agencies are likely just as impressive. There is no doubt that volunteers in this country make a tremendous, invaluable contribution to communities. Their passion and actions, and the impact that they have on lives, truly make them exceptional – and extraordinary.

stimulate your body’s natural pain defenses. Following up the heat therapy with an additional ten minutes of cold therapy such as with a cold pack applied to the painful area will further numb arthritic pain and help reduce inflammation. Hot-cold therapy isn’t for everyone, or in some cases should be undertaken only with the advice and sometimes under the supervision of your chiropodist or physician. People with diabetes or other conditions that can impair nerve sensation should exercise extreme caution. Hot pads and sometimes cold packs should be avoided since people with these conditions are often unable to feel pain in their surface tissues, which may result in potentially serious damage from excessive heat or cold. Baths or footbaths should never exceed 110 degrees F / 43 degrees C. Your chiropodist can help further with in-office treatments to address arthritic pain and inflammation including a more intensively penetrating form of heat therapy, modalities such as ultrasound or infrared light therapy, and mobilization of the joints through various

What Is Physiotherapy?

Physiotherapy comprises various therapies such as exercise, applications of heat or cold (hydrotherapy), and infrared light therapy. It may also take the form of vibrational therapy, ultrasound, diathermy and low volt currents such as pulsation, tetanize or surge currents to stimulate, promote healing and reduce pain and inflammation. Regular treatment improves joint mobility as well as reducing pain and inflammation. In acute conditions or trauma such as a fall or car accident, these therapies can speed the healing and help manage pain. In chronic conditions such as arthritis, inflammation causes intense pain, which can be helped with the correct physiotherapy treatments. Since physiotherapy treats the soft tissue of the body, it is evident that together with chiropractic care and supplementation, the immune system is strengthened and pain is reduced. When pain is reduced healing can begin. Together and in correct combination, these modalities can accomplish much to strengthen the surrounding muscles without placing undo stress on the joints. Supplementation can be very helpful in managing pain in a natural way and strengthening the immune system. Pain, whether acute or chronic, can tax the immune system making us more susceptible to viruses and bacteria. Therefore strengthening and balancing the complex structures of the body with physiotherapy and chiropractic care will bring us closer to being pain free and enjoying optimal health. HOSPICE OFFERS INFO SESSIONS

For local residents interested in learning more about how to ease the journey for others who face serious illness, end of life or grief and bereavement, an upcoming information session will provide answers to how they can help. Community Care’s Hospice services division is presenting two upcoming information sessions. “The sessions will let people learn about the agency’s 30-hour core training for volunteers interested in helping others as they deal with illness and grief,” says Jill Sadler, Director of Hospice Services with Community Care City of Kawartha Lakes. “Hospice has many wonderful, caring people who provide support for our clients, but we are always in need of increasing the volunteer base in order to

meet the demand for our programs,” Ms Sadler says. “The purpose of the information sessions is to answer questions that people have about what is required to get involved, and to let them know how much we would value their participation.” For details, see AD on page 8

Kawartha Cooks

Featuring Christopher Tuberdyke

Cacio e pepe

Dinner doesn’t have to be complicated. You don’t need a laundry list of ingredients or hours in the kitchen to create something delicious. Cacio e pepe, essentially ‘cheese and pepper ’ is a lush and silky Roman pasta dish that comes together in about 15 minutes. The key here is freshness and timing. Grate the cheese yourself right before you plan to make this and don’t substitute ground pepper for freshly cracked. While the lemon isn’t super traditional, it adds a really lovely brightness to the dish.

Cacio e pepe

1lb dry spaghetti or capellini 3 tablespoons unsalted butter 1-1/2 cup freshly grated Pecorino Romano or Grana Padano, divided 1 tablespoon coarsely ground black pepper 1 large lemon, zested

1

I n a large pot of salted water cook pasta until very al dente - about a minute or so less than the package directions call for. Reserve 3 cups of pasta water. Using a pair of tongs, transfer cooked pasta to a large skillet over medium-high heat. Add butter and 2 cups of the cooking liquid. Bring to a simmer. Drop the heat down to low, add freshly cracked pepper and 1 cup grated pecorino. Using tongs toss pasta until well coated. Allow sauce to thicken, about a minute. Remove from heat. Zest lemon over pasta. (Be careful to only get the bright yellow zest of the lemon, not the bitter white pith underneath.) Add remaining cheese and toss until well combined. If your sauce is too thick add a bit more of the starchy pasta water to thin it out. Garnish with a bit more cracked pepper and serve immediately.
