Welcome to the Upper Hunter Region where you will enjoy a true country experience. We have an enticing selection of boutique epicurean food producers, wineries, cafes and restaurants. There is an annual calendar of festivals and events and many diverse horse activities to experience and enjoy. The region is world famous as the horse capital of Australia and is home to many world renowned horse studs, and the Australian Stockhorse Society headquarters. The Upper Hunter is also the gateway to the wilderness of the Barrington Tops National Park where you can “get lost” from the outside world and embrace the rivers, forests and mountainous countryside or visit the Devil Ark Tassie Devil breeding program. Lake Glenbawn also provides for fishing, water skiing and boating, with some gorgeous picnic spots to indulge in sampling the region’s food and wines. The region is one of the most diverse environments in Australia, from western grassland to Alpine forests and subtropical zones. There is a wide variety of national parks ranging from comfortable family picnic grounds to wilderness areas in the Barrington Tops and Goulburn River National Park. So whether walking, riding or four wheel driving, there’s a place for you. FOREWORD BY AN UPPER HUNTER LIVING TREASURE, PHILLIP ADAMS AO The Upper Hunter, where we’ve lived for the past thirty years, wears a Scottish heart on its tartan sleeve. Little wonder it hosts a Scottish festival, resounding to bag-pipes and heavy-lifting of the caber, where the district borrowed the names of Scone and Aberdeen, where Angus cattle are the dominant local breed, and every other working dog shows traces of the Border Collie. The Hunter is named, of course, for Sir John Hunter, the second governor of New South Wales - and the famed John Hunter Hospital for his namesake, Scotland’s most famous surgeon, and a giant in medical history. As well Scots Presbyterian, having pushed aside both Aboriginals and Catholics, seem to have built most of the historic homesteads – including ours.

This may account for our daughter’s determination to go to a Scottish university. No sooner had she graduated from the excellent Scone High than she was off to Edinburgh, that jewel-box of a city. When Patrice and I made our first visit to daughter and city the three of us were exploring the cobbled streets of that historical city, we came upon an ancient shop full of antique books and prints. And the first thing we saw? A portrait of the Naval hero, Hunter, in so many English battles, from the Capture of Quebec to the Relief of Gibraltar. We brought him home in triumph. He gazes down on me as I write these words. Others can enthuse about the Upper Hunter’s wines, its polo

fields and racing studs. Although they’re all in close proximity to Elmswood, our farm at little Gundy, they did not influence our decision to move here. We were drawn by the beauty of the place, by its ancient indigenous and more recent white histories. And also by its literary history – for many a great writer lived and worked here. Australia’s Nobel Laureate, Patrick White, spent much of his childhood in the neighbouring property of Belltrees. Judith Wright, one of our finest poets, lived at Murrurundi, as did Barbara Baynton, Australia’s first world-famous women’s writer. Donald Horne – author of The Lucky Country – was raised in Muswellbrook. And Havelock Ellis, the first person to dare to explore the nature of human sexuality (and whose work influenced Sigmund Freud) taught in a local school. Scone even once had a visit from the great Mark Twain whilst impoverished and raising some funds on a writing tour of Australia! At last this literary aspect of Upper Hunter history is celebrated in a Scone writers’ festival. Drive through the moonscape of Hunter Valley mines and head up the Pages River, past the smouldering Burning Mountain (with its marvellous antique shop nearby) and you come to Murrurundi, that loveable, ramshackle town full of artists and sundry eccentrics – with some fine galleries and restaurants. Or turn right to Timor, home to some little known caves well worth exploring. On behalf of Sir John and the locals I invite you to be a Hunter-gatherer in the Upper Hunter, so alive with history and full of surprises. You’ll soon see why we chose to live here.

Murrurundi: A delightful artistic town in the northwest of the Upper Hunter Region on the edge of the Liverpool Range and Pages River, with breathtaking scenery. Wingen: A small village on the New England Highway between Scone and Murrurundi, known for its “Burning Mountain”, a burning underground coal seam which has been burning for approximately 6000 years. Wingen also features the nearby Wingen Maid (a rock formation) as well as a number of historic homesteads.

Scone: A thriving town two hours north of Newcastle known as the Horse Capital of Australia. Scone is the central town in the northern part of the Upper Hunter Country region. The rural town is surrounded by prestigious thoroughbred horse studs and is rich in agricultural and industry enterprises. Scone is the second biggest horse-breeding centre in the world after Kentucky, USA, and celebrates its equine heritage with a range of horse festivals and events throughout the year. Scone is surrounded by lush bushland, as well as the nearby state and national parks. Gundy: A scenic 15 minute drive from Scone through some of the Hunter’s most picturesque countryside, passing a number of Australia’s leading horse studs. The town is also home to the popular historic Linga Longa Inn. Belltrees: Home of the White family since 1831 and one of Australia’s most famous rural properties. Moonan Flat: A small village in the east of the Upper Hunter Shire

area nestled in the wilderness of the Barrington Tops region. Aberdeen: Located on the New England Highway between Scone and Muswellbrook, Aberdeen is the first main township that the Hunter River flows through. Locals often enjoy swimming and fishing in the crystal clear waters that run down from the Barrington Tops. With more than 175 years history, the small town is steeped in Scottish heritage. The annual Aberdeen Highland Games in July should not be missed. Muswellbrook: The Upper Hunter’s largest town situated one and a half hours north of Newcastle. The area is predominantly known for coal mining and horse breeding, but has also developed a reputation for gourmet food and wine production, including a number of wineries that offer cellar-door tastings. Take a stroll down memory lane on the Muswellbrook Heritage Walk and see fine buildings dating back to the mid-1800s. The Muswellbrook Regional Arts Centre is also well worth a visit. Denman: A small town located on the Golden Highway in the south western area of Upper Hunter Country, approximately one and a half hours from Newcastle. Surrounded by luscious vineyards, it is the Hunter’s point for wine tasting and dining. Denman has some fantastic events including the Upper Hunter Wine and Food Affair in May and the local favourite, Denman Pig Races. Sandy Hollow: The dramatic sandstone hills of the Giant’s Leap overshadow this quiet township which borders the Wollemi National Park between Denman and Merriwa.

Located at the junction of the Golden Highway and the Bylong Valley Way, it is a great place to stop over and enjoy the natural landscape and conveniences of country living. Merriwa: A small town set on the Golden Highway halfway between Dubbo and Newcastle. Settled in 1839, Merriwa flourishes as an agricultural centre. The Merriwa Festival of the Fleeces celebrates this rich agricultural history, and is held on the June long weekend each year. Merriwa has many fine examples of colonial architecture, from homesteads, courthouses and police stations, to hotels and churches. Cassilis: A small heritage-listed village west of Merriwa. Read up! The Scone Literary Long Weekend will be held on the first weekend in November, starting Friday 4 and running through to Sunday 6 at the Scone Arts and Crafts Hall. Coined by local broadcaster and writer Phillip Adams, “Maintain the Page” is the motto for this rural writers and readers get together, emphasising the value and importance of books or reading in general. Despite the emergence of new technologies, such as ebooks and ebook readers, the printed word remains treasured, whether it is a children’s picture book, a coffee table non-fiction book, a novel or a collection of poetry. Author Graeme Simsion featured at the Literary

SCONE LITERARY LONG WEEKEND Long Weekend last year discussing his latest work Rosie Project. The movie of the book is coming out next year. A host of other writers, talkers, wits and raconteurs kept the discussion flowing. A superb collection of authors will again be on hand this year to discuss their latest works so keep an eye out on www. sconewritersfestival.com.au where the names of all the talent will be released throughout the year, or follow #sconewriters1 on Twitter. The weekend is a celebration of the printed word, brought about by the support of sponsors and the hard work of volunteers. There will be a children’s workshop

on the Friday, stories recounted by local and visiting advocates and authors, orations and insights, panel discussions, long lunches and evening soirees. Local book shop Hunt a Book places all the books from the authors in the window the week of the festival. Only in its infancy, the Scone Literary Long Weekend has already established itself as a sophisticated date on the Aussie literary calendar well worth a chapter in any book lover’s diary. The Scone and Upper Hunter Horse Festival, which will run from the 5th to the 15th of May 2016, showcases the versatility of the horse and is sure to provide everyone with an opportunity to experience something completely different. This year’s festival is themed ‘Horses go to Rio’ in celebration of the 2016 Olympic Games being held in Rio de Janeiro. With Scone known as the ‘Horse Capital of Australia’, the festival pays homage to all breeds of horses including thoroughbreds, stock horses and draught horses as well as the men and women who breed and work with them. One of the most striking demonstrations of the kindred of horse and

SCONE AND UPPER HUNTER HORSE FESTIVAL man is the horse parade which is conducted on the opening Saturday of the festival. Headed by veteran horsemen, straight backed visions of nobility on horseback, the parade is a showcase for the Upper Hunter horse world: a great family spectacle that packs the main street of Scone. Other events throughout the festival include the festival ball, charity rodeo, sheep-dog trials, yarns night, polo, farrier’s competition, tent pegging, horse sports for schools, stud tours, yearling sales and much more. The festival concludes with the iconic Scone Cup races, a two-day race carnival at the prestigious Scone Race Club. A multimillion dollar event that

attracts over 16,000 people, The Scone Cup carnival has grown into one of the biggest country provincial race meets on the Racing NSW calendar. To celebrate the end of the 10-day long festival a picnic and fireworks display is held at nearby Lake Glenbawn. This event includes games, rides and stalls that the whole family will enjoy.

Novelty events such as the Tug O War, kilted dash, three-legged race, bestdressed laddie, lassie, bairn and pet competition ensure all the family get involved. A Tartan Golf Day hosted by the Aberdeen Ladies Golf on the Friday sets the tone each year. Tartan dress and eating haggis are optional but highly recommended to enter into the spirit of the weekend which also features a traditional Ceilidh (a dance) at the Multi-purpose Centre, St Joseph’s High School, and The Kirkin’ of the Tartan at St Mark’s Church. The event is a tourism boost for the Upper Hunter, with accommodation available in Aberdeen, Muswellbrook and Scone, while motorhome facilities and campsite are located near the town. If a taste of tartan tickles your Celtic fancy head up ‘the glen’ on the first weekend of July for the Aberdeen Highland Games, just north of Muswellbrook on the New England Highway. Conceived by Aberdeen local Charles Cooke to lift community morale after the closure of the abattoir in 1999, the first Highland Games took place in 2000, and have since grown to a two-day and one-night event staged on the first weekend in July each year. The games are also the final event of Scottish Australia Heritage Council’s Heritage Week. Pipe bands, fiddlers, Scottish dancers and clan society members from around the state converge each year, along with great turnouts of spectators keen to join in the Celtic capers. Local community groups hold stalls providing food and there are Celtic cultural displays and games. Be amazed by the Tartan Warriors’ feats of strength, lifting the “Stones of Destiny” weighing between 120 and 160 kilograms, and tossing the caber.

! p u k n i r d d n Eat a It is touted as the Hunter’s best street party. So, on the first Saturday in May, tempt your taste buds at the Upper Hunter Wine and Food Affair in Denman. Fantastic gourmet stalls from local producers and restaurants line Ogilvie Street, while the regions wineries offer tastings and great deals. With a vast variety of dishes from around the globe and some of the finest cheese, jams, chutneys, salami, jerky, vinegar and oils from internationally renowned local producers to name just a few, there is something to please even the fussiest of foodies. But it’s not all about the wine and food. Top class entertainment is a high priority on the day with the lineup including some of the country’s leading artists. Street theatre, air show,

bands, woodchopping and dancers add to the overall festival atmosphere on the day. There is also an enormous kids park which includes rides, face painting and clowns. Buses are available from Maitland, Singleton, Scone, Aberdeen,

A key event on the Upper Hunter Calendar, the premier Stockman’s Challenge in NSW is held annually in Murrurundi and from 2016 will take place during the last weekend of February (25-28 February). King of the Ranges Stockman’s Challenge Inc is a non-profit organisation and the award-winning event, strongly supported by local businesses and residents, is presented by a small group of dedicated volunteers always grateful for the wonderful assistance of many others in the community. Inspired by tales of local 1930’s stockman Archie “Bung” McInnes (known as the “King of the Ranges”) the Challenge, first presented in 2004, is a

These finalists have their courage and skill further tested on the third day when they must first catch and lead a wild horse and then ride a bucking horse, to find who is to be crowned the “King of the Ranges”. Upper Hunter Country is surrounded by magnificent national parks, nature reserves, wilderness areas and state forests and each features something unique. The rainforests of Barrington Tops National Park are of international significance; forming part of the Gondwana rainforests of Australia’s World Heritage Area. Carved out of ancient volcanic flows, the park rises from near sea level to over 1500m and protects one of the largest temperate rainforests in mainland Australia, along with a host of diverse habitats and wide range of birds and animals. Towarri is a diverse landscape of various vegetation types. Pockets of

rainforest, stands of large grass trees and sections of snow gum coexist within the park. There’s also a wide range of birds, including the endangered speckled warbler. Sandstone outcrops offer sweeping scenic views of the Upper Hunter and a lack of defined tracks in the park’s mountainous terrain allow hikers the freedom to independently explore. After a vigorous walk you can always cool off in the Washpools water hole - a natural swimming spot. Look out for the Caligula skink, which is only found here in the Liverpool Ranges and in the Barringtons.

The park stretches along 90km of the river, and its wide, sandy banks and forest landscape offer easy walking and good swimming – particularly in summer – as well as some amazing birdwatching. Visitors who have a soft spot for small endangered cuddly animals can embark on a sight-seeing adventure into the wilderness at Tomalla and witness nature first hand at Devil Ark. The Tasmanian devil conservation park is home to many devils, including a host of cute babies that are bred on site in the hills of the Barrington Tops. Devil Ark was established by the Australian Reptile Park director John Weigel and other conservationists as a safe site to continue breeding the Tasmanian devil and prevent its extinction from the disastrous devil facial tumour disease. The first of its kind of insurance breeding project, it has already seen a boom in the cute little creatures with

almost 200 healthy devils breeding. 2015 saw the first group of devils relocated from Tomalla to Tasmania.. Fully escorted two and a half hour tours are available running from September to May each year and includes a rare chance to witness wild devils in their natural habitat of the free range enclosures. CYCLING THE UPPER HUNTER The very best way to explore the Upper Hunter region is by bike. You’ll ride past horse studs, dairy farms, wineries, beautiful scenery and some great rock formations. There are flat areas to explore close to town and challenging hills not too far away. There are several loops to suit road cyclists from beginners through to seasoned professionals. The roads are quiet and well maintained, with a number of coffee shops for post-ride refreshments. For those who prefer to ride closer to home there is a 3km shared bike path heading west out of Scone, with an easy diversion to the Bill Rose Sports Complex. The loop around the complex is an easy 2km with outdoor gym equipment at the entrance for anyone wanting an additional workout.

Mountain biking is also catered for with Scone Mountain National Park an easy ride from the centre of town, as well as the travelling stock route off Noblet Road. Both rides provide some challenging hills but the views are spectacular. James Estate Wines on the Bylong Valley Way has developed an extensive mountain biking trail network for you to enjoy the amazing scenery surrounding the vineyard. News Flash! The Upper Hunter Shire Council bike hire project has recently launched and you can now hire bikes of all sizes great and small at the Scone Visitor Information Centre now. UPPER HUNTER WALKS Explore the historical and natural secrets of Upper Hunter Country by foot and take in the magnificent scenery and historic sites. The rich history and stunning countryside throughout the region is a major part of what makes the Upper Hunter a truly unique place to visit. For instance, between 1857 and 1949 some government departments spelt the name “Musclebrook”, whilst others spelt it “Muswellbrook” and did you know, The Scone Civic Theatre is of State significance as the last remaining intact art deco theatre designed by prominent theatre architects, Crick and Furse in New South Wales? all Visitor Information Centres in the Upper Hunter. While you are in the Upper Hunter, exploring the natural surroundings is an absolute must! The various National Parks and Reserves allow you to appreciate the great outdoors that the Upper Hunter has to offer, with abundant native wildlife, flora and fauna and glorious views of the land that is Upper Hunter Country. Take a day trip to immerse yourself in the World Heritage-listed rainforests of Barrington Tops National Park. you will see Cressfield Stud on your left. At this point the “Wingen Maid” becomes visible - a plateau which when viewed at a certain angle (a little further north along the highway), the southern end resembles the profile of a sitting maiden. At the village of Wingen (17km) there is the Durham Hotel/Burning Mountain Antiques and at the outskirts, when leaving, you will pass (on the right) the Cobb & Co Coach House “Abbotsford”. Next is the Burning Mountain Reserve, located on the right, at 23km. A walk of 4.6km return will take you to the surface of one of only three naturally burning, underground coal seams in the world (allow a couple of hours to walk this). At approximately 30km turn right into Haydon’s Lane. You will cross the Pages River where Bloomfield Homestead and Haydon Horse Stud are on your right. Continue to the T-intersection. Option: Turn right and travel for 5km passing Ballymore Thoroughbred Stud, Lincoln Farm, Trevannah and Goodwood Farm. If you continue along this road you will reach the locality of Timor. Turn left at the T-intersection to continue your journey to Murrurundi. Passing the Crescent Paint Horse Ranch on your right you will reach the New England Highway (on the top side of Blandford) where you turn right. You will pass through Emirates Park Stud on both sides of the highway as you approach Murrurundi.

The return trip to Scone along highway will take approximately 25 minutes.

NORTH WEST TO MIDDLEBROOK (ORANGE ROUTE ON MAP)

Length: 35km round trip Time: Allow 45 mins Directions: Follow the New England Highway to the north. At approximately 11kms turn left into Cressfield Road. Travelling along this road there are good views of Cressfield Stud and the Wingen Maid, a plateau which when viewed at a certain angle (a little further north along the highway), the southern end resembles the profile of a sitting maiden. At 4.5km along Cressfield Rd you will pass Willow Park Stud where the road becomes unsealed for 2.5km. At 7km you will traverse a creek crossing and reach Middlebrook Rd. Option: At this T-intersection turn right and travel 4km to arrive at the Washpools in Towarri National Park - a lovely picnic area by a crystal clear creek in a bushland setting. To continue your journey back to Scone turn left at this intersection. You will pass Middlebrook Valley Lodge, Middlebrook Station and Sutton Farm. On the right you will also get a good view of the Scone Racecourse which is accessed via Bunnan Rd. When you come to the roundabout turn left into Liverpool St to return to Scone township. Option: Turn right at

DRIVES IN THE UPPER HUNTER the roundabout into Liverpool Street and right at the next roundabout into Bunnan Rd (the road to Merriwa) to visit the Equine Research Centre and the Scone Racecourse. Travel approximately 2km through Satur, along Bunnan Rd passing the Scone Airport, then turn right into Flemington Drive. Take a drive around the picturesque moat surrounding the Equine Research Centre.

Located at this corner is the Cook Fountain which was originally situated at the intersection where the traffic lights are now and became known as the “Waterless Fountain”. Along Gundy Rd you will pass Arrowfield Stud at 7.5km and Holbrook Thoroughbreds at 12km. The village of Gundy is 18km and here you will find the Linga Longa Inn which is open for lunch FridaySunday 12noon-2pm and for dinner Thursday-Saturday 6.30pm-8.30pm. Fuel is available at the Gundy General Store. Approximately 4km after Gundy turn left into Waverley Rd crossing the Isis River and travel 1km to view the Scone Polo Fields.

Giddy up! Racing in the Upper Hunter has never been as strong as it is at the moment. In 2016 prizemoney increases will ensure that country racing will flourish and that is good news for Scone, Muswellbrook and Merriwa race clubs which are in the Upper Hunter region. Racing NSW understands the importance of country racing and with almost 120 country tracks in NSW, these increases ensure further strengthening of the industry and the many people who are employed in it. Scone Race Club have 16 TAB meetings a year culminating in the two-day metropolitan Scone Cup Carnival in May which has nearly $2million in prizemoney and attracts top horses from many states.

RACING On February 21, 2016 Scone will host the $100,000 Country Championships Heat for the Hunter & North West region. This will determine the representatives for the final of the $400,000 Country Championships at Randwick on April 2, 2016. Muswellbrook Race Club have 19 TAB meetings a year, which includes the $50,000 Country Championships Wild Card which gives all runners in the Country Championships heats a chance to contest the final at Randwick. Muswellbrook is a very strong race club, and it certainly shows the depth of racing in the Upper Hunter to have two of the top clubs in NSW in such close proximity. Merriwa Race Club have their annual Cup day in

April and it is a tremendous community event attracting large crowds. It is a great day of racing and an important social occasion for Merriwa featuring such events as fashions on the field.

If it’s just a stone bruise we’ll give him a hose down, As he nuzzles with his muzzle that’s gone grey and was once brown, Memories come flooding back where I rode him droving way outback, The count-out just on daybreak from the P.P. Board reserve, The longest dry, that cloudless sky, the worry and concern, The knowledge that the cattle always had the right of way, And always some dumb motorist that couldn’t swerve away.

The rich farmland and rolling hills of the Upper Hunter provide the ideal breeding ground for worldclass premium viticulture, with the region producing wines of international acclaim. World renowned chardonnays, classic Hunter semillons and fresh vibrant verdelhos are among the white varieties the Upper Hunter has become famous for, while long-time favourites shiraz and cabernet sauvignon dominate the red plantings in the area. The history of the Upper Hunter as a wine region goes back to the 1850s when William Ogilvie planted vines at his historic Merton property near Denman. These were pioneering times and the vines he planted at Merton were among the first to be planted in the Hunter Valley. By 1860, a young German settler named Carl Brecht planted vines at the junction of Wybong Creek and the Goulburn River. Brecht went on to make wines that won gold medals at international wine shows during the 1870s, and this early success was an indicator of the area’s potential as a wine region. Nearly 100 years on, the area saw a surge of development in the late 1960s which began with Penfolds moving their entire Hunter operation from Dalwood in the Lower Hunter up to Wybong, near Denman.

Rock up! TWO RIVERS SANDSTONE SCULPTURES

The ‘Custodians of the Landscape’ sandstone sculpture collection was carved onsite at the Two Rivers vineyard in the winter of 2015 by renowned English artist Ben Dearnley. Ben has earned an international reputation for creating stunning sculptures in stone, bronze, slate and stained glass. He has completed many large-scale public and private works and they can be found across the globe. The ‘Custodians of the Landscape’ project saw Ben work with sandstone for the first time and these carvings directly reference the ancient art form of stone masonry whilst reflecting the dramatic landscape at Two Rivers. So how did an Englishman who lives on the west coast of Wales end up spending 12 weeks on a vineyard in the Upper Hunter Valley? It all started back in 2007 when Ben was in Australia to catch up with his mother

Bridget who retired to Denman many years ago. During this visit they spent an afternoon at the Two Rivers Cellar Door. After enjoying a glass of wine and a cheese platter, Ben took a stroll through the vineyard to the top of the hill where he discovered a collection of sandstone boulders that had been unearthed during the construction of the vineyard many years ago. Ben’s creative mind went into overdrive and he formulated a plan where he could return to Australia to embark on a major sculpture project while at the same time spend some quality time with Bridget. He contacted Brett & Linda Keeping from Two Rivers and they agreed it was a perfect synergy to create something spectacular for their Cellar Door and the project was born. All the sandstone was sourced from the Two

Rivers property with more than 28 tonnes being used to create this unique and compelling project. Whilst crafting these pieces, Ben immersed himself in the workings of the vineyard and the local community, sharing his skills and knowledge with visitors, school groups and other fellow artists. Ben says that the flowing and dynamic nature of the sculptures reflects the ever-changing moods and seasons of the vineyard where growing the vines is a labour of love in tune with nature itself. The collection of nine pieces of individual handcrafted sandstone all tie into the collections theme of ‘looking after the landscape’. Brett and Linda Keeping established the Two Rivers vineyard in 1988. Twenty-seven years on, Two Rivers has become one of the premier vineyards of the Hunter Valley and

is known for producing distinctive regional wines that over deliver on quality and value. Brett and Linda are strong believers in the philosophy that great wines are made in the vineyard and are truly passionate about their vines and their place in the Hunter Valley. Sustainable viticultural practices are at the heart of Two Rivers and the years of hard work are certainly paying off in the wine show circuit. Two Rivers have amassed eight trophies and numerous gold medals in recent years with their signature Stones Throw Semillon leading the way. “Having an artist of Ben’s calibre here at Two Rivers has been an absolute privilege," Brett Keeping said. "Ben immediately understood our connection to the land here and this is beautifully reflected in his work.”

THE COTTAGE, SCONE

A beautifully restored cottage built in the 1860s and nestled in the main street of Scone is home to the Upper Hunter’s newest restaurant – The Cottage. New Zealand-born chef Colin Selwood serves up his signature dry aged, hormone-free, grass-fed beef. The meat is hung for a minimum of six weeks before being served in the restaurant and can be viewed from the courtyard through the window of the purposebuilt, humidity-controlled dry-ageing room. The menu reflects Colin’s classic French training with influences of Asian and Mediterranean flavours. There are daily specials and a tapas-style

menu if you are after a more informal style of dining. When possible The Cottage sources from local producers and supports other businesses in the region and is currently working with local livestock

farmers to deliver the quantity and quality the restaurant demands. Having grown up amongst farmland on the south island of New Zealand, Colin is a country boy at heart despite living in the centre of Sydney for many years.

In 2010 Colin and his family moved to Willow Tree and established Graze at the Willow Tree Inn before moving to Melbourne in 2013. SIX STEPS TO A PERFECT STEAK

Choose a cut of meat you like and can afford. Bring steak to room temperature. Season both sides with salt, pepper and olive oil. Sear on hot, clean barbecue or griddle pan. Thick piece of meat takes longer to heat in centre than thin, so may need to turn barbecue down slightly after searing to prevent burning. • Turn three to five times depending on the thickness. If using a meat thermometer, internal core temperatures should be: Rare 36-41 degrees, Medium Rare 41-46 degrees, Medium 48-55 degrees • After cooking, allow steak to rest off heat half time of cooking. Heat for 30 seconds each side if necessary to warm before serving. Serve with favourite potatoes, vegetable or salad.

noun: tataki (in Japanese cookery) a dish consisting of meat or fish steak, served either raw or lightly seared. Ask your local butcher for the mid-section of an eye fillet. We use locally sourced Wagyu at The Cottage, but good quality regular beef will also work well. Get him to tie it for you.

To prepare the meat Ingredients salt and freshly ground black pepper 2 tbsp extra virgin olive oil 1tsp sesame oil 20gm butter chives, chopped Roll the fillet around and season it all over with sea salt and freshly ground black pepper.

CHEF COLIN SELWOOD’S TATAKI RECIPE Get a heavy pan nice and hot, in the pan place 2tbsp x extra virgin olive oil, 1tsp x sesame oil and 20gms x butter. Lay the meat in the pan and don’t move it until you see nice caramelisation happening. Turn and caramelise consistently all over. Cool on a plate with kitchen paper under the meat to absorb juices. Once cool, place the meat in the freezer for about 3045 mins or just enough to let it firm up to make it easier to slice thin. This gives you time to prepare the dressing. Once firm remove from the freezer and slice the beef as thinly as possible and lay neatly on the plate it will be served on, drizzle with dressing, sprinkle with chopped chives and serve.

Dressing Ingredients 200ml peanut oil 30ml x sherry vinegar 30ml x honey 10ml x soy sauce 2tsp x rosemary 20gm wasabi salt and freshly ground white pepper

Method Combine all ingredients for the dressing in a blender and blend until smooth.

Eat up! HUNTER BELLE CHEESE Since its inception in 2004, Hunter Belle Cheese has grown considerably, now producing around 15 tonnes of cheese each year. Their unique handcrafted cheese are part of a select group of cheese factories referred to as “Artisan”, which means that the cheese is handmade with milk from one single herd of cows. The emphasis at Hunter Belle Cheese is based on old-fashioned values, and

handmade natural dairy products. The milk used to make Hunter Belle Cheese is sourced from Brown Swiss Cows found grazing the pastures of the Upper Hunter at Singleton. 2) Beetroot infusion Roast beetroot at 200 deg until soft, once cooked peel & dice. Toss beetroot in the white truffle oil, add chopped chives and toss again. Add precooked and warmed Israeli cous cous and beetroot into a pan stir frequently over gentle heat until cooked and heated through (approx 4 mins). Set aside 3) Saffron beurre blanc sauce Add vinegar, white wine, diced onion & saffron in saucepan. Reduce until onion is transparent (cooked). TAKE A HISTORICAL WALK THROUGH ABERDEEN Historic Aberdeen was one of the first settlements in the picturesque Upper Hunter Valley. The town was named after the Earl of Aberdeen, a friend of early settler and British MP, Thomas Macqueen. By 1840, Aberdeen had a mill and an inn located near the banks of the Hunter River. Both still exist. By 1851, there were 27 people living in Aberdeen, and by 1866, the town had a post office, a school, three inns, some shops a mill, and two churches. Today you can still see much of the earlier Aberdeen in a walk around the town. Plaques set in the footpaths and on buildings identify their historic places from Aberdeen’s past. The historical Aberdeen Walk begins from the corner

of Hall Street and the New England Highway, which is also known locally as Macqueen Street. Visitors can follow a map which navigates you through Aberdeen’s ‘path of plaques’ that identify the town’s past. After the walk, take some time to visit the other historical locations and attractions in and near Aberdeen. AIRLIE HOUSE MOTOR INN, SCONE

Airlie House is a landmark building in Scone. The two-storey building, which now houses the Tudor Inn’s restaurant, bar and three guest rooms was built by William Bakewell of St Aubins, Scone, in 1895. The Bakewell’s operated a brickworks in Macdonald Town, Sydney. It became the home of Dr Henry James Herbert Scott, who had been Scone’s doctor for six years prior. Dr Scott was highly esteemed and served the

town in many capacities, including mayor. Dr Scott, also known as ‘Tup’, was a member of the celebrated Australian Cricket Team in 1884, scoring a century against England. He then captained the 1886 tour to England. He and his wife Mary first lived at ‘Grosvenor’ opposite St Lukes Church before moving to the house they named ‘Airlie’ with its tall chimneys, large stables and paved courtyard of Bakewell bricks. Dr Scott was one of the first in the district to
