PASTRY Ingredients: 2/4
1 peel 1Lemon 100 gr. sugar 450 gr. pastry flour 2 eggs 200 gr. tempered butter 10 gr. chemical yeast Instructions:
Put in the Thermomix bowl, lemon and sugar, set for 10 seconds, speed 8. Add the rest of the ingredients,set for 20 seconds, speed 5. Take out the dough, wrap it in transparent film and take to the refrigerator while preparing the cream. Custard Cream Ingredients:
500 ml. milk 100 gr. sugar 50 gr. flour 2 eggs 1 tablespoon of vanilla flavor Instructions:
Add the ingredients to the thermomix bowl, set for 7 minutes, 90ºC, speed 4. Por the cream in a bowl, and cover with transparent film, pressing well so that the film touches the cream, and so it doesn´t crust Take the dough out of the refrigerator, then divide it into two parts. Cover the base of a mold release with dough, spreading well, fill with the pastry cream, and cover with the other part of the dough, rounding the edges. Bake for 20 minutes at 200ºC, once baked and cold sprinkle sugar glass on top. 3/4
You can add pine nuts, almonds, walnuts, whatever you like, before putting the top layer of the dough, in addition, you can add some liqueur to the pastry cream, like rum. This type of cakes, are better made from one day to another, because the dough and the filling have better consistency, also if you add to the pastry cream a couple of tablespoons of pure cocoa powder, you will have a chocolate grandma´s cake. The two layers of broken dough come together at the edges, hiding the custard filling. Keep in the refrigerator up to 20 minutes before serving
