DENT COUNTY LIFE
Life is different now, and will we one day regret it?
My childhood memories of the harvest are not unlike many others. In 1967 there were potatoes dug before first frost and stored on pine and chicken wire racks in the cool dryness of the crawl space beneath our home. Canned goods from the garden and orchard were placed in a pantry farthest from the King heater burning away in the living room. Field corn was picked by hand and shucked, shelled and kept in the barn for horses. An old GE chest freezer, with six inch sides and that dominated one wall of our kitchen, held frozen squirrels, a few fish and during more productive seasons both deer and turkey. There were also bags of blackberries, fox grapes and persimmons. A white picket fence had parallel lines of firewood mirroring its perimeter on two sides. I still remember when I was deemed old enough to run a Homelite X12 chainsaw, as the wood was previously the result of felling a tree with an axe and cutting it up with a bucksaw. Somehow driving the ’53 GMC was never an issue; once my feet reached the pedals it was at my disposal. An empty fifty-five gallon drum in our well house was filled to the brim with pine knots gathered on hunting expeditions, mostly form the ridge just to the east of Burnthouse Hollow. An infusion of hickory and
white oak into the very old stand of shortleaf pine made it an ideal circuit for gathering a “knot” or two as well as fill Rick Mansfield a green Reflections twig with from the Road a bunch of “bushy tails.” I had a small bank book. Green cover with yellow ledger pages. In it were tallied the results of hauling hay and cordwood, a bit of revenue from walnut gathering and a couple of checks from a weekend neighbor for cleaning and painting the school busses that served as their getaway retreat. The amount in that little book meant a lot, for it was with those funds that I bought Diamond Dog Food for my tree hound. Per an agreement similar to years past, when that book was empty the dog was sold. It’s only hope for winter replenishment was the selling of hides, both possum and raccoon. The dog was usually gone sometime not too many days after Christmas, always long before summer. Those were good days. I ran with neighborhood boys that were more brothers than friends; if one had a dollar we all had a share in it. We had similar interests
as well as like work ethics. Of course, back then we didn’t know lazy was a choice. I was welcome at their table; subjective to their discipline. More than once did I receive “instruction” from a neighbor’s strong hand. And loving heart. I view today’s children and their disconnect with our earth. As wonderful as are our technological marvels, playing farm on facebook is not the same as chopping winter ice for livestock or spreading hay on a layer of snow and listening for the characteristic sound of the bell of your own milk cow. I fear for the future that is theirs. We are promised “we will reap what we sow.” Albert Schweitzer reminds us that “It is not always granted to the sower to live to see the harvest. All work that is worth anything is done in faith.” Stevenson encouraged that we should not “judge each day by the harvest you reap, but by the seeds you plant.” I am thankful for the seeds planted by Ozark Heritage Project. Wax paper Lay out your pretzels on the wax paper in “starburst” arrangements of 6 or 8 pretzels. It’s good to put them on a cookie sheet for transport stability. After melting your white chocolate/bark coating, place in a baggie and cut the corner off (or use a pastry bag). TURKEY & SWISS CALZONES 4 cups all-purpose flour 4-1/2 teaspoons quick-rise yeast 2 teaspoons brown sugar 1/4 teaspoon salt 1-1/2 cups water NAME:Shirley 3 tablespoons olive oil 3-1/2 cups cubed cooked Layton FAMILY: Lenn turkey Layton, Husband; 1-1/2 cups (6 ounces) shredAndrew and Kevin ded Swiss cheese Layton, sons. 3 tablespoons Dijon mustard OCCUPATION: 1 Eggland's Best Egg, beaten Graphic Designer at Directions The Salem News In a large bowl, combine 3 cups FAVORITE flour, yeast, brown sugar and salt. In COOKBOOK: a small saucepan, heat water and oil. Better Homes and Add to dry ingredients; beat until Gardens Cookbook smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 4 minutes. Cover and let rest in a warm place for 15 minutes. Meanwhile, in a large bowl, combine the turkey, cheese and mustard. Divide dough into eight pieces. On a floured surface, roll each piece into a 7-in. circle. Place filling on half of each circle. Fold dough over filling; pinch seams to seal. Place on greased baking sheets. Brush with egg. Bake at 375 degrees for 25-30 minutes or until golden brown. Yield: 8 servings. a web. Then, place two raisins in the middle for the body of the spider. Melt your regular chocolate and pipe over the raisins. The spiders turn out better when you pipe the legs first and then the body. Place in the fridge for a few minutes until the chocolate is hard. Then gently peel back the wax paper and serve. Monster Fudge 1 c. minus 1 T milk 2 c. white sugar 1/8 tsp. salt 2 oz. unsweetened chocolate, grated 2 T butter 1 tsp. vanilla Topping: Icing Food Color Google eyes Bring milk to a boil in a large pot. Remove from heat and add sugar, salt and chocolate. Stir until the sugar dissolves. Bring back to a boil and cook for 5 minutes, then reduce heat to about medium and let bubble gently without stirring it. The candy thermometer should read approximately 234 degrees F, which is the soft ball stage. This takes about 20 minutes. Remove from heat and let stand to cool. The thermometer should read about 110 degrees F. This should take about 15 minutes. Add the butter and vanilla, then beat the fudge until it starts to thicken up and loses its sheen or gloss. Pour into a parchment-lined pan. Allow to cool. Cut into squares. For the topping, take premade icing and mix in food colors. Pipe a little swirl on top of each piece of fudge. Place google eyes onto the icing. Let dry and serve. Bubbling Swamp Slime 1 container lime sherbet 1 bottle pineapple juice 1 bottle lemonade 1 bottle lemon-lime soda Scoop out lime sherbet into a punch bowl (the witch’s cauldron). Using half the container serves about 10 people. Pour approximately equal parts lemonade, juice and soda over top of the sherbet. The soda is needed to create the bubbling effect of the cauldron.
