COVER STORY
OPA! Greek Cuisine Conquers Kemah! By Betsey Ennis Bacchus, the Greek god of wine, was the inspiration for Kemah's newest dining establishment. Bakkhus Taverna Greek Restaurant & Bar located at 605 Sixth Street, is the brainchild of Demetrios Kouloumoundras and is nothing short of a full family collaboration – quite literally from floor to ceiling. Demetrios' father Nikolaos, a native of the Greek island of Chios, is his business partner. "My family owns and operates two customremodeling companies (Nick's Carpentry and Painting and Space City Remodeling), so naturally, we built basically everything in the place from floor up," Demetrios explained. "It was a fudge shop previously, so it was a huge job, Demetrios and brother John Kouloumoundras but we were show off traditional Greek entertainment. up for the challenge. It's been a total family effort. Without the whole family involved, Bakkhus wouldn't have turned out the quaint cozy place that it is." Hailing from a small-town in Mississippi, Elisabeth (Demitrios’ mother) converted to Greek Orthodox when she married Nikolaos, and enjoyed mastering the art of Greek cooking using

recipes passed down from her husband's family. "Growing up my friends would always crash dinner because they loved her food so much," Demetrios boasted. The restaurants' recipes were a team effort. Elisabeth and close family friend Maria Zagorianos put their heads together and shared family recipes. "With their know-how and Chef Jose Figueroa's extensive skills, we were able to take the Greek family-cooked meal to a commercial level," Demetrios said. "Figueroa cooks from the heart and has been passionate about learning how to cook the traditional Greek recipes that were passed down through my family to my mother." The goal at Bakkhus is to offer a menu diverse in traditional and modern greek cuisine. "We're not afraid of trying new things, and I think that's very important," Demetrios said. "Nothing is set in stone when it comes to cooking, and we're all about putting new twists on items that we have on our menu." One surprisingly huge hit, Demetrios said, is the Bakkhus Burger. "I came up with that one at about 3 a.m. after a long night of revelry. It's made with sauteed onions and mushrooms in red wine. Then we melt feta cheese on top and dust it with oregano. It's awesome!"

Post Ike Pub Crawl
Early last month The SCENE partnered up with the Krewe du Lac to throw a little pub crawl in Kemah celebrating the fact that four favorite Kemah hangouts (Heads-N-Tails, Monkey Bar, Bakkhus Taverna and Palapa’s) were up and running following the storm. This crawl was supported by the City of Kemah, and in addition to having a great time, we were able to collect a car-load of toys and supplies for the Kemah Kid’s Halloween Party. Check out more photos at www.myspace.com/thescenemag.Thanks to all who came out.

The bar at Bakkhus consists of more than 5,000 wine corks set under an epoxy resin. “I saved Another Bakkhus original is the Gyro them for around 5 years when I Burrito (which is your traditional Gyro worked at the Flying Dutchman slices sauteed with onion, tomato, and and everyone always asked, ‘Why jalapeños then smothered with their fire feta dip). Demetrios insisted, "It's a show- are you saving those?’ and I always told them I was going to use them stopper for sure!" The new Bakkhus expanded menu will feature more seafood in my bar one day,” explained Demetrios. “The funny thing is that dishes such as calamari, grilled octopus, Snapper Santorini and Shrimp Kardamyla. I fell three feet short and sent out an S.O.S. to surrounding bars and Demetrios explained that most of the was saved by Jacque Roberts (barBakkhus menu items are made in-house tender at La Dolce Vino) who also (homemade) and that they use only the saves corks.” best spices and freshest produce. "People want homemade, not store bought frozen garbage. Our Pastitsio, Moussaka, Souvlaki, Meatballs, Tzatziki, Hummus, Baklava, Galaktaboureko and more are handmade from scratch right here in our kitchen. The food here is what I was raised on and we want to give our guests the experience that they are eating the same Greek cuisine we eat at my family's home. Demetrios got his first taste of the restaurant industry when he started bussing tables at the Flying Dutchman when he was 16 years old – and has stayed in the business ever since. " I love it!" he said. "It's really hard work, but really exciting and fast-paced. I knew right away I would probably never be a 9-to-5 guy." Demetrios said he loves being a host and meeting new people. "I like that people can come here after they maybe had a bad day or it's been a long week at work, and they come to relax and have some home-cooking and a good stiff drink or glass of wine that puts a smile on their face. By Peggy “Domino” Taylor With the festive season of fall here, the Bay Area events are on the rise again. A variety of fun and educational events are around the corner for all ages and interests. If photography is your interest, the new exhibit, “Along the River Grande, A New Becoming” is a display of unique and colorful photos of life along the border. The artists that capture these slices of life are Leslie Plaza Johnson and Van Edwards. The celebratory but simple ways and hard times are reflected in the subjects and stills in these realism art photos. The event starts November 3rd and runs until January 5th, 2009 at the University of Houston - Clear Lake. The Art Gallery hours are Monday thru Thursday from 9:00 am to 6:00 pm and Friday 9:00 am to noon in the Atrium 1, First Level, Bayou Building, 2700 Bay Area Blvd.

FALL 08/SPRING 09 This season's Fashion at the Park by Cadillac, held at Dallas Northpark Center, turned out to be a stellar week of starstudded events: Runway shows, trunk shows, art exhibits, auctions and after-parties. The collections included the best of Fall 2008 and Spring 2009 creations. Northpark was home to more than 22 runway shows chock-full with appearances by major designers and non-stop excitement. Northpark Center offers the public an exclusive experience usually reserved for buyers, celebrities and fashion editors. This extravaganza is a unique opportunity to see the latest fashions FIRST.

“Seeing a collection in a runway show is very different from viewing it in a boutique,” said fashion icon and internationally celebrated designer Oscar de la Renta. “This event is a great opportunity to show the complete collection as it was featured on the runway to an audience who may not have been able to see it in New York and gives the guest a chance to purchase the collection right off the runway from our NorthPark Boutique.”

Moet & Chandon, Belevedere Vodka and 10 Cane Rum were amongst many sponsors underneath a 20,000-square-foot luxury tent. Drinks flowed like honey as Dallas elite dressed to impress. And what is fashion week without a couture cocktail? The specialty drink for the week was the Belevedere Runway Martini, created with fresh sage and pineapple juice with a touch of lemon juice. The tent featured club-style seating, a Bobbi Brown Beauty Bar, and a raised DJ Booth with guru Lucy Wrubel spinning on the tables. Runway events featured designers such as Roberto Cavalli, Oscar De La Renta, Valentino, Ted Baker, Carolina Herrera, Miss Sixty, Ed Hardy, Diesel, Rodarte (by Barney’s), Marc Bouwer (by Neiman’s), Pinto Ranch, BeBe, Bobbi Brown Make Up, as well as shows by Macy’s, Dillards and Nordstrom. Special personal appearances included Roberto Cavalli himself to kick off the event, followed by Kate and Laura Mulleavy of Rodarte, Peter Som, Thakoon Panichgul, Marc Bouwer, and Georgina Chapman and Keren Craig of Marchesa. Adam Saaks of Ed Hardy was on board to feature his custom-cut couture t-shirts and Lady GaGa performed three songs at the end of the Miss Sixty show. Closing events included a Nieman Marcus Fashion Show and an amazing after party celebrating the grand opening of restauranteur Alberto Limbardi’s newest digs, Ristorante Cibus. Dining and dancing under the stars lasted into the evening. Nonparallelled were the dresses from the Valentino collection. No one represents as much class and elegance as this line. Gowns were flowing, touched with rosettes and girlie. Hot colors for the season were Olive/Avocado and Poppy (a bright mix of red and orange). Carolina Herrera incorporated these colors best in her collection of swimsuits, pant suits and evening gowns. Marc Bouwer divinely ruled the runway with his amazing gowns. Bright bold colors graced the strip along with the most enviable beaded gowns I have ever seen. Beads of every color sat atop a gold base…just stunning. - Cont. on Page 29

SEEN BY THE SCENE: FASHION WEEK
FASHION WEEK Continued From Page 28 A new favorite on the fashion scene is Rodarte, started by two sisters out of Pasadena, California. Kate and Laura Mulleavy have an aesthetic reminiscent of Balenciaga, but combined with goth-goddess strokes and colors. The two knit and weave like a spider spins his web. The designers use knits, wools and textured fabrics to paint dresses fit for modern day gladiators. Rodarte dresses have a tattered, threaded feel which is at once striking as well as interesting and fashion forward. The icing on the cake were the killer black patent leather high heels. This fall’s fashion event was so exciting and inspirational. I love to see where fashion is heading as well as being visually entertained. Our culture decides our fashion and the movement of society. Don’t be left behind in your boring duds! Get involved! And be sure stay tuned for next month's feature on Ed Hardy.

Sean D. Tucker—Still Passionately Living His Dreams
Charging Around the Z-Axis with Eric W.D. Tucker
By Jill Michaels
By Jill Michaels
Harrison Ford introduced me to aerobatics pilot Sean D. Tucker.
Eight years ago, when I met Sean D. Tucker, I had no clue I would fly aerobatics alongside him someday. The double irony? Sean’s son, Eric W.D. Tucker, was the one charging me around.
Granted, the actor-pilot did it indirectly, via a magazine article he wrote 10 years ago. But the aviator fraternity will overlook this technicality.
The world’s only full-time father-son formation aerobatics airshow team had arrived for Wings Over Houston. I traveled to Ellington Field that Thursday morning with the secret mindset I would fly with Eric.
I met Sean in Phoenix on April 5, 2000, per the notes of my taped interview with him and fellow airshow pilot Jimmy Franklin. I had just written an article for a Tucson media guide, the first published in my fledgling freelance career. - Cont. on Next Page

NOVEMBER 2008
Sean W.D. Tucker • Continued Still, I was pleased when Sean and Eric invited me to fly in Eric’s Extra 300L. I didn’t tell either pilot why I was willing to fly basic aerobatics: to overcome a scary experience at age nine—flinging upside down and backward on an amusement ride at a county fair. Eric, 27, displayed the typical Tucker passion for flying. He took his first airplane ride the day before his birth, in the front seat of his father’s Pitts Special biplane. From ages 9 to 16, Eric spent summer vacations narrating Sean’s airshow routine. How did he land that job? “At age nine, I was full of opinions,” Eric grinned. “We had just finished one of the smaller airshows and were on our way home. I was mad. I told my dad: ‘Your flying was good, but that announcer stunk. He was horrible! You know what? Even I can do better than that!’ My dad said: ‘Oh? There you go!’ ” At 14, Eric soloed a glider and, at 16, a Pitts S-2B. “I had this opportunity to draw on the elite group of aviators surrounding me. I learned to fly from glider pilots, instructor pilots, airshow pilots and formation pilots.” After securing a flight instructor rating, Eric earned his aerospace engineering degree from California Polytechnic State University (making the dean’s list). The son even got the distinction of teaching the father how to fly formation aerobatics. “That was an interesting switch,” laughed Eric. “Here he has all this flying experience, and here I was, his formation instructor.” In the hangar at Ellington Field, Sean named off to Eric the maneuvers they would perform during “my” flight. In the air Eric always gave me heads-up about the next move. Still, I was caught off-guard when we broke the first rule of General Aviation: ‘The blue side stays up.’ During two inside loops, each about 1,000 feet wide, we hit about 4 positive g’s at the maximum and about 0.8 negative g at the minimum. Afterward, father called over to son regarding passenger status— Sean: “How’s she doing?” Eric: “She’s laughing.” After Sean departed, Eric offered to teach me how to fly a loop. When I hesitated (too much, too soon) he immediately

suggested a different maneuver. Within five minutes I had flown a barrel roll. Eric announced cheerfully over my shoulder: “You did that all on your own. My hands were up in the air.” He then gave me a choice: more aerobatics or sightseeing. I requested a flight over Clear Lake. After we passed by NASA’s Astronaut Office, I affirmed Eric’s enthusiastic question: “Do you want to hang upside down in the harness?” After we landed, I made an early booking with Eric for our next flight: same time…same place…next year. The Z-axis experience was exhilarating but exhausting. Eric concurred. “A while ago, I took a break from flying. I hadn’t done aerobatics for a month. When I came back, I flew a 12-minute routine. Forty-five minutes later, I crashed on the couch in the hangar. I slept for three hours!” Understood. I’ll hone my stamina—and the mindset I apparently still need before learning to fly my own loop. (After my nap.) ------------------------------Sean D. Tucker • Continued Sean and Jimmy were kind to the rookie writer bursting with enthusiasm. When I discovered that Sean would perform at Wings Over Houston this year, I wondered if he would remember me. I shot him an e-mail to find out. Sean replied promptly. “I always remember people with a passion for life.” “Passion” is Sean’s favorite word—a trademark on par with his Tom Cruise smile. Once afraid of flying, he conquered his fear, in typical Tucker full-throttle fashion, by learning aerobatics. Fifteen years later he won the U.S. National Advanced Aerobatics Championship title. Of all the moves now performed by this 56-year-old Skydancer, over half are original. During his 13-minute airshow routine, and in each of his three daily practices, Sean experiences forces ranging from 10 positive to 7.5 negative g’s. His signature maneuver? The Triple Ribbon Cut. Sean’s natural exuberance was manifest when Betsey Ennis and I tagged up with him at Ellington Field two days before the airshow. I reacquainted myself with Brian Norris, Sean’s operations manager and air-
33
show announcer. Recognizable by the family grin was Eric W.D. Tucker, an emerging stunt pilot in his own right. Then we got down (or rather, up) to business in the overhead Team Oracle office. Sean jumped into his custom-built biplane. Eric and I climbed into his Extra-300 aircraft. Brian and Betsey strapped into the Seneca chase plane. Our flight plan included a three-ship photo run, a father-son formation aerobatics practice run, and one aerobatics flight lesson for me courtesy of Eric. Back in the hangar, Sean sculpted aprèsfly gourmet sandwiches (spicy Thai chicken for himself, lemon-and-pepper tuna fish for Eric and me). Sean and I chatted about Houston. “I’ve flown Wings Over Houston 8 or 10 times,” he revealed. “I think my first show was in 1992. I do it because they’re passionate about the art form and the magic of flight and inspiring others to fly. What’s so cool about this airshow is that it’s affordable. It’s about joy. I keep flying it because they’re doing it for the right reasons.” I reminded Sean that, due to Ike, this year is different for many. He was empathetic but still positive. “The airshow takes their mind off the other stuff. We’re celebrating flight. Unlike other shows, Wings Over Houston is not competitive. It has a patriotic agenda and celebrates aviation history. It’s about passion. That’s my fuel.” During my interview in 2000, Sean called Jimmy Franklin his hero. Is that still the case? A rare cloud crossed Sean’s face. “Yes. He was an innovator, an entertainer, and a top-notch pilot. But he paid the ultimate price, and that breaks my heart.” Jimmy was killed in an airshow crash in Canada in July 2005. Sean himself lost his biplane during a practice flight in Louisiana in April 2006. It took 20 flights before Sean could make the decision he still possessed the nerve to fly. “I’m a 21st-century barnstormer. I’ve been very fortunate. I’ve been able to make a living while living my dream as a Skydancer.” Sean flashed that famous megawatt grin. “So I want others to live their passion!”

Action at Scout Bar. Despite losing everything at his Crystal Beach home, T-Roy and the TailDraggers descended with their army of fans upon the Cock-Eyed Seagull. These guys are one of my favorites -- The TailDraggers have earned quite a name for themselves with their unique mix of music and performance. With their wildly charismatic frontman, the harpist T-Roy Long, the TailDraggers are a fourman sensation from the Texas Gulf Coast whose interpretations of the blues, rock, swing and country have made the fans and critics into true believers. With their unique style and their ever-changing array of esoteric stage humbuggery, it is no wonder that this band continues to fill the seats and dance floor every time they perform. NEW CLUB & PUB REPORT
Baja Party Bar Every night’s a party at Baja Party Bar, the Bay Area’s newest venue with happy hour specials, contests, live music and a new dance floor. Located in the heart of Clear Lake City at 1055 Bay Area Blvd. between Saturn and El Camino Real, Baja Party Bar will have it’s official Grand Opening and kick off on Wednesday, November 26. Baja Party Bar (formerly All Stars Sports Bar and Grill) has been undergoing many changes since its new ownership took over both in appearance and format. Veteran bar owners and brothers Curtis and Chris McWilliams said patrons will barely recognize the inside with its new floors, sound system, stages, bars and decor. Still true to area sports fans, Baja boasts several big-screen TVs and a giant display screen with all the games and UFC events. With the kick-off at the grand opening event, Baja Party Bar will be rocking into the night with a huge dance floor, an indoor and outdoor stage hosting some of the area’s most popular bands; 94.5 THE BUZZ will do live remote broadcasts on Saturday nights; and Friday evenings, expect happy hour parties and trip giveaways. “If you’re looking for fun and want to find the party, we want you to know that you can always count on one at Baja Party Bar,” said club owner Chris McWilliams. “If it’s your first
stop of the night, it is our goal to make sure it is your only stop of the night.” With competitive drink specials, a 4 to 9 pm happy hour, $1 Power Hour every Friday and Saturday and never a cover charge, you can’t pass up checking this place out. With their impressive history of successful nightclub ownership, Curtis and Chris are enjoying taking Baja Party Bar in a new direction from their previous ventures. “The way I look at it is if I am not having fun, then how can my customers be having fun?” explained Curtis. “This place is going to be just as comfortable for the after-work happy hour sports and hangout crowd as it is fun for the late-night party crowd.” - Continued on Page 37

I was not familiar with Hoegaarden until a visit to The Gingerman in Rice Village this past summer while doing research for a series of articles titled Summer of Beer. On that day at the Gingerman I struck up a conversation with a fellow who turned out to be the new regional rep for Anheuser Bush just days after it was acquired by Belgium-based InBev's (for $52 billion). This fellow turned me on to Hoegaarden for which I’m most thankful. Hoegaarden is referred to as a witbier, or white beer, because of it’s cloudy appearance. Historically, witbiers are a staple of Belgian brewing tradition. This beer is cloudy indeed, and much sweeter than your standard lager or even ale. Hoegaarden is best enjoyed poured into a wide-mouth glass — the bottle even has directions for proper pouring technique, including a gentle swirling of the drink to spread it’s ingredients. Like other unfiltered beers, Hoegaarden can settle in the bottle and to drink it without disturbing the contents throws the taste out of line. Give one a try. - John Ennis, Publisher
