SCOUT BAR: AT THE CENTER OF THE TEXAS MUSIC SCENE SCOUT BAR ENTERS 2009 WITH THREE LOCATIONS & A MUST STOP FOR BANDS TOURING TEXAS BY JOHN ENNIS Billy Gibbons makes an unexpected appearance to jam with Billy Bob and the Boxmasters at Scout Bar.

The SCENE is the original Scout Bar. Although the venue is located in Webster, it has served as Ground Zero of live Rock performances in Houston since opening in 2004. On this night, Oscar-winner Billy Bob Thornton and his band The Boxmasters are well into their second, encore set when Texas rock legend Billy Gibbons of ZZ Top fame takes the stage, guitar in hand, to jam with the band making an already-memorable Scout show historic to those in attendance. Scout Bar has gained a reputation nationally as one of the hottest rock venues for both up-and-coming bands and established acts looking for a change of pace from playing huge concert halls and arenas. Locally, Scout has developed a reputation for spoiling area music lovers by bringing acts one would not expect to Actress Jada Pinkett Smith and her band Wicked Wisdom at Scout Bar.

At a time when the group was selling out football stadiums, they selected Scout Bar as one of only a few “smaller” clubs from across the country to play to promote their latest release, “The Paramour Sessions.” They had such a great experience playing Scout they returned the following year to play a free concert as part of a promotion Scout did with 94.5 FM (The Buzz). “This has exceeded my expectations,” explained Scout owner and operator Thomas Wilson. “I’m getting calls from bands I never thought would play our club.”

Similar to with the original flagship, the new Scout Bars provide a mix of established national, regional and local bands. Wilson knows the importance of supporting local music and hosts showcases at the new venues similar to The Texas Buzz Shows in cooperation with 94.5 FM every Sunday here in Clear Lake. Starting January 8, the “Home Grown Local Show” featuring three bands from Texas with a live remote on Big Dog 106 FM will move to Thursday nights at Scout Bar Beaumont. In San Antonio the “Texxas Traxx” shows are hosted by Randy Bonillas of 99.5 KISS FM every Sunday night. Check out www.scoutbar.com for a complete line-up for all three venues.

2008 Texas Buzz Music Awards @ Scout Bar A powerfully raw and energetic evening of Alternative/Industrial Rock played out as Scout Bar hosted the 2008 Texas Buzz Music Awards. The Buzzâ&#x20AC;&#x2122;s Zakk United emceed the event. Performances by IH5 (Corpus Christi), NeverSet (Dallas), and Trust Co. (Austin) did not let down the packed house paying tribute to this year's winners. Loose Notes by Andy Eng The Bodacious Tatas return! With Bodacious Tatas the band recovered from their bout with Hurricane Ike and lead guitarist/vocalist Chris Elliott back to his typical roaring form, the Tatas gave the Cockeyed Seagull holiday crowd a treat worth waiting for. Sal with his usual grooving bass had full reign of the venue while and the percussion duo of Bryan & Holly are the best at playing off each other that I've seen. All together, the Bodacious Tatas are among my favorite bands bringing their unique touch to favorite covers and originals. -------------------------We caught Eleventh Hour for the first time in 2008 at Club Classic. They have the fun and talent to keep a full house very well entertained and will catch them again in 2009. -------------------------The Green Parrot is back on the map and running following the mess left by Ike. This month saw the return of local favorites including Mama Cass, Slide Effect, Zach Tate, Abraham's Tree and Outlaw X (pictured). Check out the Green Parrot's entertainment schedule for their upcoming January line-up.

IKE FEST II benefitting Bay Area Musicians

Fresh from a successful IkeFest I in November, IkeFest II was last month in the San Leon/Bacliff area. The event was packed with the area residents, several in transit or homeless situations still. Proceeds to date began making its way replacing musicians' gear wasted from the waters. An entire platoon of United States Marines were needed to handle the mountains of gifts to Toys for Tots. Hosting IkeFest II were Bob and Katie Emmons and the gracious staff at Katie's Bar along with the many volunteers. Internationally acclaimed Thrill Hill and the Real Deal closed out the evening on the outdoor patio while Billy Bourbon played the indoor stage. Also performing were Dave Nevling & the Blues Kats, Benny Brasket, Andy & the Dreamsicles, Terry Rogers, Abrahams Tree, Slide Effect, Cymblem, End Game, Snake Charmers, Tom Rogers, and KILT’s John Prince as MC. SCENE editor Betsey Ennis mentioned that one of the late Jim Shortt's favorite places was The Tree House and suggested we drop in for a visit. We did and found out why -(1) People will always remember how much Jim loved arranging benefits for local worthy causes and earlier that day, the folks at the Treehouse had just wrapped up a successful event. (2) We obviously knew Jim loved the music and this evening Billy Parrish was playing. Parrish is amongst the best in his class of guitar playing modern day minstrel entertainment in the area. Billy passed along several great Jim Shortt stories throughout the evening and friendly conversation with the people there gets us to the third point (3) The area has many great places for live music and entertainment but not many neighborhood bars. The Treehouse, in our mind, is a neighborhood bar. No wonder why Jim liked the place.

The Urban Rumble Championships (URC) is returning to the Pasadena Convention Center this month for the third promotion of the young fight league’s Jonathan Ivey history. The URC may be young, but the league appears to be heading in an upward direction which can’t be said of most MMA leagues that have appeared on the scene on both the national and regional levels as of late. Despite the popularity of the Ultimate Fighting Championships (UFC), which is unquestionably the flagship fighting organization in MMA, the life span of most young organizations is only a fight card or two. Ask the Bay Area based International Extreme Fight Association (IXFA) which put on some great shows in Louisiana in 2007. Or Elite Xtreme Combat (Elite XC) which made history on May 31, 2008, with the first MMA event aired live in prime time on a major

Chris Reed is ready to fight! The League City city administrator has become an exciting MMA fighter known on the Internet and in fighting circles as the “Celtic Tiger.” Reed originally kept his fighting on the “down low” because of his job as League City’s top employee. But the word is out and last year the former paratrooper and assistant police chief was awarded the Katana Cage Fighting Light Heavyweight Title Belt at the Equi-Knocks” event in Corpus Christi. Much to Reed’s disappointment, he won the belt by default because former professional hockey player Geoff “The Enforcer” Bumstead backed out of the title fight. Reed was then to fight in the Urban Rumble Championships III before it was postponed following Hurricane Ike. But the wait is over as Reed will fight Pasadena policeman Chad Cook at the URC III this month. See URC III preview on this page.

Urban Rumble III • Continued From Page 37 Although past Urban Rumbles have included some very spirited boxing matches, including John Rarden’s victory over Marcus Brashears at URC II, Landry believes the shows lost a little momentum with the transition from MMA fight to boxing match and back to MMA fight. And Landry, who also runs the MMA Syndicate which has gained a solid reputation for producing shows for other fight organizations in the region, is all about putting on a great show and giving the fans what they want. So gone is boxing and the ring. Entering is a spectacular fight card with a main event that will have knowledgeable MMA fans from

all over the country coming to town to see Sam “Alaskan Assassin” Hoger take on Jonathan “Big” Ivey.

URC II

Hoger is known nationally because of his appearance on the inaugural season of The Ultimate Fighter (TUF) reality show which is widely credited with helping Mixed Martial Arts reach the mainstream level of popularity it now enjoys. While Hoger’s most memorable moment on the show was the “Swag-Gate” scandal when he was accused of stealing shirts, beanies and other UFC gear from his cast mates on the show, there is no doubting his skills in the cage. He is a black belt in Karate and Tae Kwon Do and enrolled in his first Brazilian Jiu-Jitsu (BJJ) class at 14 years old. Hoger got eliminated on the TUF show by the eventual winner and former UFC Light Heavyweight Champion Forrest Griffin. But he surprised everyone by defeating former Strikeforce Light Heavyweight Champion and Pride veteran Bobby Southworth on the show’s live finale.

Ivey has 63 official fights on his record including matches all over the world and against MMA legends and UFC veterans such as Dan Severn, Jeremy Horn, Ricco Rodriguez, Travis Wiuff, Jake O’brien, Ben Rothwell, Justin Eilers and Travis Fulton. According to Landry, Ivey holds the MMA record for the most victories via heel hook. Although verifying that kind of statistic proved difficult, 22 of his 27 victories (81.48%) have come via submission and his last nine submission victories have included a keylock, an armbar, a guillotine, a kneebar, two chokes and three heel hooks. According to Ivey, he trained only two days before his first professional fight. “I met a guy on a Wednesday who taught me a guillotine choke and a key lock,” explained Ivey. “That weekend I won the fight by guillotine choke in 44 seconds.” It was a fight against MMA legend Jeremy Horn back in 1999 when Ivey realized he needed to step up his training some to compete at the top level. “I was training to fight him (Horn) for the Hook N Shoot Title,” Ivey said. “He was training with Matt Hughes and Pat Miletich, and I’m training with Joe Schmoe the redneck who watches UFC. RENEW YOU As the year winds down, I hope all of you are relaxing a little, recovering from a crazy year and spending time with your friends and families. This is a great time of year to reflect, enjoy the people around you and the things you have accomplished. It’s also a great time of year to think about starting anew, and to think about who you are and where you want to be. What will you do next year to bring you closer to that goal? What did you discover was important to you?

Plan to enjoy the next year and to submerse yourself in culture. This year looks to be one for the history books. Will you remember where you were or what you were wearing? Even in these times of change, fashion still reminds us of where we have been, and where we are heading. I see many lines returning to the timeless beauty of belted pants, tailored jackets and golden high heels. Right now is not the time to dive into ultra high tech, futuristic styles. This is not the time of high-decadence, but instead, softness, pared-down and precise. Luxury is understated but still flourishes among the wealthy, although one of any penny can add ladylike extras and high polish.

Gone are the trampy short skirts, low-waisted pants with thongs hanging out. In come old-school glamour, pencil skirts, gloves and floaty flirty fabrics and dresses. I picture Valentino meets Versace. Accessories of the season include clutch bags and tiny handbags of bright colors. Large hand bags should be of the black or white variety. Snakeskin is IN! Christian Louboutin carries the most enviable of python heels ever! Don’t be afraid to wear snake skin on a coat or on a handbag. Or don a hat, a knit beret, or even a trapper-style hat! These hats skirted down the runway of Dolce Gabbana this season. Micheal Kors has sent his best collection in years down the runway with all camel-hair balmacaans, pencil thin silk floral sheaths and cashmere twinsets. Even Versace who is still designed by the eccentric Donatella Versace had an unembellished, pared-down simplicity. The biggest nod to luxury comes in the form of a trio of furs decorating a shaggy black swing coat worn over a cocktail dress of sequins. Chanel displayed some multi-faceted precis that emcompasses Empire gowns, flamenco skirts topped of with pink Chanel carrier bags. This upcoming season proves to be one where we take stock of the year and dress accordingly.

Mardi Gras! Galveston continues the revelry born on the island in 1867. Galveston’s annual celebration offers a diverse entertainment schedule designed to feature the best of what the Island offers year ‘round adding a festive flair for pre-Lenten revelry. Following a sabbatical imposed in 1941 by war and hard times, Mardi Gras! Galveston was revived in 1984 and is bigger and better than ever. The largest celebration of its kind in this part of the United States, the event has grown in cultural creativity and imagination, showcasing lavish parades, galas worthy of royalty, original artwork, children’s activities, and Gulf Coast cuisine. Still led by prominent Galvestonians and their perspective krewes, the grandeur is evident in the dueling parades that range from whimsical daytime processionals to elaborate night parades lit for dramatic flair. The streets come to life with parade viewers screaming for beads, marching bands shaking the ground beneath them with the steady pound of drums and wail of horns, and the infectious frivolity that dominates this tiny island for two full weeks. Mardi Gras! Galveston, an annual

event hosted by the City of Galveston and coordinated by the Park Board of Trustees, is choreographed to entertain children of all ages. And entertain it does. More than thirteen parades and 50 galas, parties, pageants and events to choose from offer something for every budget and interest. Costume contests, pageants, and great entertainment abound. For families there is a beachfront carnival offering rides for all ages from carousel, ferris wheel and turning teacups, and more than 30 parades ranging from the lavish Momus Grand Night, Krewe of Gambrinus and Krewe of Aquarius; Krewe de Vroom (motorcycles), Fire truck Parade (area firefighters), Krewe of Barkus (children and their pets, sponsored by the Galveston Island Humane Society), Munchkin Parade (kid size floats with small fry bead throwers), and, NEW Bicycle Parade, and Truck Parade. Bay Area Blvd. • 281-332-2921 What’s your Background/Experience: I am a graduate of the Art Institute of Houston Culinary arts program. I have been working in the industry now for about six years. My love of food comes from being part of a big family. The oldest out of six children, we had a lot of different food experiences. I grew up with a Hispanic cultural influence from my grandfather and a Southern influence from my grandmothers side. My personal touch comes from the love of all Asian foods. So I like to make fusions of all the cultures I love combined. The Houston Chronicle recently gave us a very positive write up about our dishes in the dining section. Your Specialty: Because of my cultural influences, it would be hard to pin a name to my specialty. I personally like to mix the great food of the South, with Creole, Asian and Hispanic spices. I love to use fresh ingredients to make my own Gulf Coast cuisine.

Signature Dishes: My personal signature dish is called General Devo’s Lettuce Wraps. The name comes from my nickname, Devo, and the sauce that is kind of like a General Tso's sauce. Take chicken thigh meat chunks, toss in cornstarch, and deep fry ’til crunchy. Clean lettuce leaves (either romaine or iceberg) and keep on ice until ready. Toss the meat with sauteed peppers, onions and the chicken and place in the lettuce leaf. This dish is great because it is sweet, spicy, and cleansing all at the same time. Have you ever prepared a meal for anyone famous or infamous? I cook for great people every day. Their fame, or lack thereof, means nothing. They are great because they love good food, and that is what makes me the most happy. Please share 1 special cooking tip or technique for our readers: The best

cooking technique of all time, in my personal opinion, is braising. To do this, take a piece of tough meet, and season it. Heat a pan over high heat, add a little oil, and then sear the meat on both sides. Deglaze the pan with wine or stock, and fill up to 2/3 of the way up the sides of the meat. After that, cover and bake in the oven at mid-high temp. Cook for a couple of hours, or until meat is tender. By using this method, you can make any tough meat as tender as pudding, and full of flavor!

CLIFTONâ&#x20AC;&#x2122;S SEASIDE DINER & OYSTER BAR New ownership brings tasty changes to waterfront landmark By Betsey Ennis

It was just before Christmas when new owner Corinn Scott and long-time local chef Jordan Tubig sat down with us to describe some of the changes they are most excited about at Clifton's.

The restaurant offers many new fresh fish selections along with new toppings such as Ponchartrain, Rockefeller, Hollandaise and Jumbo Lump Crab with lemon butter.

First of all, the name, though similar, is different. Now known as Clifton's Seaside Diner and Oyster Bar, this Bacliff landmark is going back to basics. After sifting through the former menu, they chose what to keep and then decided to add "homemade food, down to your roots." "We kept the best 'core' items and expanded from there," Corinn explained. "We wanted to serve affordable, home-cooked food that fills your belly."

Faithful Clifton diners will be thrilled to still find the Signature Whole Flounder and the hand-cut (on the premises) Steaks, Filets and Rib-eyes on the menu.

Although fresh seafood is still their specialty, 50 percent of the menu is new. Chicken and dumplings, home-style meat loaf, chicken fried steak and fried pork chops are a just a few of their $8 weekday lunch specials.

"Corinn is very involved in the kitchen creativity," Chef Jordan said and pointed out that his new boss is a pastry chef.

They have an enclosed patio room, perfect for private indoor parties. The patio seating is the largest in this area, and the view is arguably the most beautiful. Most days of the year you'll find families and friends enjoying the bay breeze. During the consistently warmer months, the outdoor cabana bar and live music on the waterfront stage are where the most action is found.
