Tina Montana Benefit: The SCENE and Bay Area community lost a good friend last month. Killed as a passenger in a tragic auto accident, Tina Montana left behind four children (ages 11 to 19). A massive groundswell of area friends, networks and businesses pulled together an incredible fundraiser in one short week and raised more than $35,000. A FAST GROWING COMPANY DOING MANY THINGS WELL And a famous chef to cater your next event By Sue Mayfield-Geiger Step into the building at 5950 FM 517 and you may think you are in a hunting lodge or a rustic Texas boutique hotel. The lobby is just a mini version of the bigger room down the hall which sports high ceilings, suede sofas, ceramic tile, limestone pillars and a fireplace where a massive granite bar is the focal point. Although the flavor feels like the Lone Star state, the owners are from St. Louis, whose love for both Texas and Missouri – as well as their love of baseball – prompted them to name their company Cardinal. And doesn’t every company have a commercial kitchen where a culinary chef (who also happens to be the owner) grills steaks for employees? No Jack-in-the-Box for this crew, as they are dining on rib-eyes, cheesy-stuffed potatoes and asparagus. (I know, you want to work here already.) Well, since they are one of the fastest growing, privately-owned companies around, you might get lucky. That is, if you know something about the food business, oil and gas industry, and event planning. Mike Robinson (CEO) along with brother Patrick (Business Develop-

ment) saw a need for a niche market, scraped up 25K in 2005 and started the Cardinal empire which began with the Culinary Division and grew to three more: Chandlering, Customized and Special Occasions.

It was at this time that he got the idea for Cardinal. “It was totally by chance and somewhat by design,” says Robinson who saw firsthand the need for immediate provisions during the aftermath of Hurricane Katrina in New Orleans. “Tent cities sprung up that were totally self-contained, and Glazier Foods was asked to provide some chefs and provisions to run the camps,” recalls Robinson who did that for a while, but eventually got involved supplying sub-sea construction vessels and rigs that were being rebuilt in the Gulf. “It was then that we formed Cardinal Culinary, and we started to grow,” says Robinson who was operating on three vessels within a year and a half. - Continued on Next Page

Chef Louis Cressy Chef Cressy started cooking at a very early age in New Orleans, La. with his grandmother, where he learned the importance of using quality ingredients. He has worked at some of the finest restaurants in New Orleans including Henri at Le Meridien Hotel, the Sazerac at the Fairmont Hotel, Mr. B’s Bistro, and Risorante Bacco with Ralph and Cindy Brennan. Chef Cressy has also worked at Michelin Three Star Auberge d’Ill in France with Marc Haberlin. After moving to Houston in the early ’90s, Chef Cressy introduced regional Gulf Coast cooking at the Lancaster Hotel featuring fun twists on foods found around the Gulf of Mexico from Louisiana to Mexico. During his 25-year career, he has had the honor of cooking for Presidents George Bush Sr. and Barack Obama, Heads of State Henry Kissinger, James Baker, Nancy Pelosi, prominent local and national leaders, as well as Hollywood actors like Kevin Costner, Steven Segal, Meg Ryan, Arnold Schwarzenegger, and others.

Cover Story | Continued Cardinal: Continued from Page 14 They began to focus a bit differently than their competitors in that they hired chefs with culinary degrees (or at least five years of chef experience) and placed them on vessels. “We basically took offshore cooking to another level,” says Robinson who spent a lot of time selecting recipes and coordinating menus. It wasn’t long before other companies began to hear about them. “When these guys are away from their homes and families for 14 to 30 days at a time, they deserve good food,” says Robinson who maintains that quality meals keep the morale up. With 2,200 recipes that include high-end choices like filet mignon, crab and shrimp pasta, morale is certain to be high. “Our food is good, home-cooked meals,” says Robinson who stresses that everything is made from scratch with topof-the-line ingredients to please the appetites of the diverse crews who hail from Louisiana to Norway. Cardinal has supplied vessels not only in the Gulf of Mexico, but the North Sea and South America.

More people were hired and Cardinal started to grow. “You cannot do anything well unless you surround yourself with good people,” says Robinson. Here is a breakdown on the four divisions:

Cardinal Culinary Services Offshore catering, corporate and contract catering is this division’s main purpose. They have earned the position of 2669 on the “2010 Inc. 5000,” Inc. magazine's annual ranking of the fastestgrowing private companies in America (number 60 in Houston and they experienced an 87% growth). Cardinal Culinary primarily provides catering to off-site locations in the oil and gas arena.

Cardinal Chandlering Services This division offers an extensive line of supplies to ocean going vessels, drilling platforms, offshore islands, remote camps, construction sites, scientific outposts and humanitarian relief organizations.

From 2005 to 2008, everything was going well in the Gulf with hurricane restoration projects, and new drilling. In 2008, the economy, another hurricane and a major oil spill had the Robinson brothers thinking about diversifying. Thus the Chandlering Division was born. Ship

This division offers highly-trained, experienced and fully trained personnel to handle every aspect of the preparation, execution and completion of a plant turn around. Patrick Robinson, who used to work for a professional staffing agency, runs this division.

Cardinal Special Occasions A full-service catering company founded and run by formally trained chefs, like Louis Cressy, who has worked at the Lancaster Hotel in Houston and Brennan’s in New Orleans. The division specializes in working with you to create a customized, spectacular event tailored to your needs.

Cardinal Growth With 200 plus employees, Cardinal is growing, but will remain privately owned. “This is a family business and it will stay that way,” says Robinson who definitely has a different work culture going at Cardinal compared to other companies. Other than the 200 employees, they also contract another 60 to 75 workers. Impressive record for five short years.

EDUARDO’S Mexican Kitchen 911 Nasa Parkway, Webster, TX 77058 (281) 480-4775 “Quality ingredients, tequila and outstanding customer service are very important to our success,” says Eduardo Mendieta, the owner of Eduardo’s Mexican Kitchen. “And a killer salsa?” I ask. “Yes,” he smiles, “That too!” Eduardo is easy going and friendly as he greets each customer – even some by name. But he is very serious when he speaks about the restaurant. “Only the finest meats and freshest vegetables find their way into our kitchen. The trucks deliver three or four times a week to bring fresh ingredients. Nothing is frozen.” The prepared dishes are made with pride and are almost too beautiful to eat! It’s tough to choose just one entree. On the menu are 17 different enchilada dishes, six snapper plates, vegetarian items, baby back ribs, fish, shrimp, pastor, chicken and over eight different ways to order queso! Eduardo’s has a wide variety of margaritas on their menu and over 300 types of tequila stocked in the bar. I know! That got my attention, too! The bar area is well equipped and decorated with painted tequila bottles among other unique items. The inside of Eduardo’s is bright and airy with a wall of windows that looks out onto the patio seating. The walls are painted festive colors and a bright blue tiled water wall fountain adds to the ambience. It’s the little touches like the cobalt blue glass stemware for your cold water that make you realize SUMMER just how much thought went RITAL! Tucked away on the island of Clear Lake Shores, this hidden gem has quickly become a local favorite for a romantic evening on the water or a casual family outing. The neutral colors with dark accents, mood lighting, soft jazz in the background, and views of the water, both inside the restaurant and out on the patio, create a downtown vibe without the travel. The service is genuinely friendly and never rushed; and the extensive selection of mouthwatering food and wine will serve any appetite. The food at Opus is cooked in the classic French style – with some Italian, German, Asian and classic Gulf Coast seafood influences. All food is scratch made with the freshest ingredients, and includes a selection of fine appetizers and salads to start; choice cut beef, veal and chicken and freshly farmed seafood as entrees; and delectable desserts to top everything off. Meeting with Chris and Charlie, I was fortunate enough to partake in an off-the-menu helping of New Zealand lamb chops – marinated in fresh thyme, rosemary and garlic; and served with a rich sauce au poivre, this delightful dish had me gnawing at the bone. Regulars love everything on the menu; but with four or five off-the-menu daily specials, including seasonal fish and roast duck, each dining experience is unique. Sitting next to me at the bar were two jolly gentlemen who appeared to have been boating all day. They ordered an off-the-menu Portobello mushroom appetizer – topped with shredded tenderloin mixed with a hoisin and candied jalapeño sauce and a side of Asian slaw. Hesitant to share, I took their “Mmm’s” as evidence of its tastiness. Everyday menu options are just as delicious and desirable. Although the entire menu could be considered “signature,” two entree choices particularly stand out: the Filet Au Poivre – a center cut tenderloin topped with sauteed black peppercorns in creme – and the Gulf Red Snapper, pan seared or broiled and topped with Gulf shrimp and lump crabmeat in a béarnaise sauce. Chris’ wife Tracy – who you’ll often find behind the bar – recommends the Gulf Red Snapper Charlie Brown, lightly breaded and topped with sauteed mushrooms, artichokes and

crab meat, finished with a brown butter sauce. Veal lovers will melt when they try the Veal New Orleans, sauteed in a light breading, topped with béarnaise sauce and lobster tail meat. While most of the seafood is farmed right out of the Gulf, Opus also serves exotic imports to ensure the greatest taste and quality. Likewise, only the choicest meats and freshest ingredients are selected. Side dishes are chef’s choice and rotate weekly, in order to maintain a dynamic palette. Fine dining often requires a fine wine to go along with it; and Opus delivers. A range of wines by the bottle are always available and house wine by the glass starts at $5. And, if you’re looking for an aperitif or just meeting a friend for a drink, the horseshoe bar at Opus is a relaxing way to wind down. Martinis are a popular treat – I was impressed with both the Lemon Drop and Cosmo – mixed drinks start at $4.75. Please note that the well liquors at Opus are generally a “call” at most establishments – a brief glance at the well and I spied Crown, Jack Daniel’s and Skyy Vodka. Speaking of, next time you’re in, take a gander at the beautiful composite bar top – made with mirror and Skyy Vodka bottle pieces. Opus Bistro is open for dinner weeknights from 5 to 10 p.m. and until 11 p.m. on weekends – the bar stays open approximately an hour after the kitchen closes. Private gatherings, banquets and receptions for up to 80 people are available onsite in the restaurant’s cozy, upstairs seating area; and catering is available for your offsite event. Always a safe bet, the whole de-boned Flounder, stuffed with crabmeat and roasted red bell pepper topped with a crawfish cream sauce, is a creamy seafood delicacy. Try the Pecan Crusted Snapper, dusted in crushed pecan flour mix and topped with lemon butter cream sauce; or my favorite, the Drunken Redfish – grilled Redfish filet topped with Ponchartrain sauce. Other fish under “Favorites” on the menu include pepper-seared Tuna, grilled Mahi Mahi, blackened Catfish Etouffee, along with several shrimp, scallops and crab options. Traditional fried shrimp, oysters, catfish and other seafood platters are great for sharing after a long day on the water; and for a quick bite, try the oyster, catfish or shrimp po-boys or a mouthwatering burger. I suggest starting off with the seafood gumbo or lobster bisque; or, for a spicy start, try the Torpedos – fried jalapeños with crabmeat stuffing and cheese – or the Sinkers – bacon wrapped shrimp and oysters with Jack cheese and jalapeño. Popular choices also include Topwater’s oysters on the half shell. Grilled options include traditional oysters “Rockefeller” – topped with spinach, bacon and cream cheese; oysters Diablo – topped with roasted garlic, jalapeño and blackened shrimp; oysters topped with crab au gratin; and oysters grilled in garlic scampi butter. Topwater’s also famous for its fish and shrimp tacos. The icing on the cake, however, is Topwater’s setting. Then it embraces them with gusto to make interesting new flavors.” These flavors make for a satisfying buffet where you can try a little bit of everything for a lively lunch or a special dinner. Seabrook’s Newest & Brightest Star ARTS Evelyn Meador Branch Library Opens By Peggy ‘Domino’ Taylor The chapter of rebuilding the Bay Area post-Ike continued last month with the grand opening of the newly rebuilt Evelyn Meador Branch Library of Harris County Public Library, 2400 N. Meyer in Seabrook. A long time coming, this library was destroyed during Hurricane Ike. After attending both groundbreakings – one before the hurricane (when it was scheduled for the new building under the direction of former County Commissioner Precinct 2 Sylvia Garcia) – and one after the hurricane (when plans were made to go forward on this multi-million dollar state-of-the-art facility). It was a real treat for me that last week in June to be in the presence of so many supporters, friends and neighbors as we gazed upon this magnificent structure. As a regular bookworm who frequents the library, it was good to see again the familiar faces of the dedicated staff and long-time volunteers who we have missed since the hurricane. The grand opening was a true example of real dedication and love by so many. Elected officials from Seabrook and Harris County attended the event and gave a cheerful thumbs-up. Hosting the grand opening was Harris County Precinct 2 Commissioner Jack Morman. The Friends of Library volunteer organization, under the helm of Marianne Kolar, put on many activities for attendees of all ages to enjoy. After the initial welcome program, the day’s agenda included a reception, story time, clowns, face painting, petting zoo, teen gaming, balloon battle and ending the evening with a bluegrass concert provided by the Bay Area Bluegrass Association. Branch Librarian Greg Burns was on hand to meet and greet, as was my favorite storyteller, Shelly Pearson. The coastal theme is obvious: from the landscaping to the blue seagull art gracing the outside to the mariner-themed signs beside each door and the artwork on the windows and walls to the color scheme throughout. - Continued on Page 29

Library Cont. from Page 26 This building was designed to be efficient and functional and “green.” New “green” standards were in place with the utilization of large north and south facing windows that allows for a significant portion of the stack areas to be naturally lit and to provide a continuous connection to the outdoors with views to the adjacent park. To keep with the changing trends of library design and function, an access flooring system was utilized in the stack areas to allow for maximum flexibility for future anticipated computer needs. Water-saving fixtures were installed to help reduce consumption by 50 percent. Drainage was accomplished with the use of Bio-swales that help absorb and filter storm water run off before being stored in the underground retention tank found beneath the parking lot. Porous pavers for sidewalk run off and reflective cool roofing and paving were also installed to reduce heat and energy efficient systems were utilized to minimize the operating cost, approximately 1 million a year, and to ultimately reduce the building’s carbon footprint. Find out more information about how the building came to be LEED certified, including 86 percent construction waste was diverted from landfill; and they used 14 percent recycled content. Will Houston remain the Space City?

State of the Lake â&#x20AC;˘ Part 1

First in a series of columns by John Ennis

That is my story, I’m sticking to it and will explain why in this space.

Yes!

As most reading this are already well aware, the upcoming liftoff of the space shuttle Atlantis from Launch Pad 39A on Florida’s “Space Coast” will signal the start of the shuttle program’s final adventure (STS-135). And, as most reading this are also aware, the touchdown of the Atlantis roughly 12 days later will bring an end to the shuttle program and result in additional layoffs as more of the most skilled and brightest in our community will lose their jobs.

I first stumbled upon the Morpheus project at last year’s Wings Over Houston Airshow. The vehicle (at left) was kinda of hidden among the static displays. But I instantly recognized the Armadillo Aerospace logo from my 2004 Bay Runner series (above) on the X-prize and commercial space flight.

This isn’t the first time our local aerospace community has experienced uncertainty over the direction of the U.S. space program, and I optimistically predict it isn’t the last. Is ending the shuttle program right now and leaving the nation without an American-built means of transportation to space a good idea? I don’t believe so. The obvious argument is that America shouldn’t need to rely on other countries, let alone Russia, to carry our Astronauts into space. But that decision has been made, put into action and for the near future, NASA will be paying Russia for seats on their Soyuz spacecraft if any Astronauts are to reach the ISS. And the price recently increased. I won’t down play the recent Johnson Space Center-related layoffs by NASA contractors to date and those coming this month at United Space Alliance and in August at Boeing Space Operations. The SCENE’s own Andy Eng is no longer a member of the Aerospace community for the first time in 26 years after

his job with Lockheed Martin was cut late last year. And later this month, after the final shuttle landing, the smartest man I’ve ever met (my father) will leave United Space Alliance at age 71. But I also won’t allow any clouds of doom and gloom to form over JSC and our area, as there are too many positives to report, opportunities that lie ahead and – more importantly -- work to be done in Austin to make sure Houston remains the Space City.

Meet (Project) Morpheus Prepare to be excited. Over shadowed and under funded, a small group of determined JSC engineers have been busy building, designing and now testing a cutting-edge space craft, the first

produced by NASA in years. And this is all happening at JSC. Manufactured and assembled at JCS in partnership with Mesquite, Texas-based Armadillo Aerospace, Morpheus is a full spacecraft will all the associated subsystems: avionics; software; guidance, navigation and control; power; power distribution; structures; propulsion; and instrumentation. Ultimately, it could be used as the lunar lander for America’s return to the moon. But possibly more exciting in the short term are the new technologies it demonstrates. Specifically an autonomous landing and hazardous avoidance system which -- using on-board sensors -- can detect hazards in the environment and adjust its trajectory for landing in a safe spot. - Continued on Next Page

How Houston became known around the World as the ‘Space City’ International Space Station (ISS) -- a U.S.-led collaborative effort of 16 nations, and the largest, most powerful, complex human facility to ever operate in space.

The Lyndon B. Johnson Space Center (JSC) was established in 1961, and from the early Gemini, Apollo and Skylab projects to today's Space Shuttle, International and Space Station programs, JSC (in Houston) has lead NASA's efforts in human space exploration. JSC is home to the NASA astronaut corps and is responsible for training space explorers from the United States and its space station partner nations. Although possibly news to the current administration and politicians in New York (yes you, Charles Schumer), the Mission Control Center at Johnson Space Center has directed all space shuttle missions, including

Liquid methane is attractive because it can be made from water on the moon (or ice on Mars) so fuel doesn’t need to be carried to the surface as it can be made there. Morpheus is an example of how JSC engineers, putting in sweat equity and working on their own initiative to find funding in other research and development projects, were able to partner with an aerospace start-up and develop cutting edge technology utilizing “lean development” engineering practices. In its current state, Morpheus is large enough to carry 1,100 pounds of cargo on the last

stage of a lunar descent -- liftoff and touchdown on the moon. That cargo could be an astronaut, a humanoid robot, a small rover, or a small laboratory to convert moon dust into oxygen. But the primary focus of Morpheus is to “demonstrate an integrated propulsion and guidance, navigation and control system that can fly a lunar descent using Autonomous Landing and Hazard Avoidance Technology (ALHAT) safe landing sensors and closed-loop flight control.” Morpheus is being tested at the Vertical Test Bed Flight Complex at JSC with the next engine firing schedule for July 6. To date there have been four tethered tests

and the improvements between each test are significant and demonstrate that the Project Morpheus team’s design approach of “test often, learn and test again” is working. So while some programs, such as shuttle and even station are winding down, there are other programs and exciting projects at JSC moving forward with positive-, if not exciting, results. I’m not suggesting Morpheus or Robonaut 2 (below) will fill the job voids left following the end of the shuttle, but both projects are proof of the talent still at JSC and that that talent will play a role in the future of US Space Exploration.

Introducing the First Humanoid into Orbit: Robonaut 2 Built at NASA’s Johnson Space Center

Almost 200 people from 15 countries have visited the International Space Station, but the orbiting complex has so far only ever had human crew members – until now.

Robonaut 2 (R2) was developed and built by engineers and scientists from NASA-JSC, Oceaneering Space Systems and General Motors at JSC. It was launched to the space station aboard space shuttle Discovery, making it the first humanoid robot in space. The challenge facing the JSC-based team is to build machines that can help humans work and explore in space. Working side by side with humans, or going where the risks are too great for people, Robonauts can expand the ability for construction and discovery. Key to that effort is to build machines with dexterity that exceeds that of a suited astronaut. Recently unpacked, R2 will be initially operated inside the Destiny laboratory of the ISS for operational testing, but over time, both its territory and its applications could expand. There are no plans to return R2 to Earth.

It is time to Embrace NewSpace! Like it or not, we are entering a new era of US space flight. The Apollo era is long over and the Shuttle era ends this month. What role will Houston and Texas play in the next era? The NewSpace era? Having previously written about commercial space flight, space tourism, the X-prize competition and many of the private space startups that are now making news, I know NewSpace when I see it but the lines are starting to blur. The term NewSpace is defined as covering "approaches to space development that differ significantly from that taken by NASA and the mainstream aerospace industry." NewSpace replaced “alt.space” which was first used in the 1980s to describe “companies that were making serious efforts to reach outer space without cooperation with NASA, other governmental agencies, or their contractors.”

Immunity Act was put into place in 2007 and a Zero G Zero Tax Act was put into place in 2008. And Virginia is just one of many states offering incentive deals and/or building building spaceports to attract NewSpace and jobs. According to a report by the Federal Aviation Administration (FAA) on Commercial Space Transportation, Alabama, Alaska, California, Colorado, Florida, Hawaii, Maine, Maryland, Montana, New Mexico, Ohio, Oklahoma, Washington, Wisconsin and Wyoming join Virginia with state incentive deals in place to attract and promote NewSpace. Notice Texas was missing? Well, we recently got into the race, kinda, by passing Senate Bill 115 which limits liabilities for commercial providers of space flight in the state.

A positive development, and hopefully just the start.

Some of the criteria for what makes a company NewSpace remains the same, such as low cost approaches and drive towards innovation.

Texas Space Alliance is an organization formed to promote the Texas space industry, was involved in lobbying for the bill.

But now that NASA has turned to the private sector with funding to develop future commercial spacecraft to launch cargo and astronauts to low-Earth orbit, the ISS and beyond, the lines between NewSpace and “OldSpace” are harder to see. Especially now that traditional aerospace giants like Boeing and Lockheed Martin are getting into the commercial aerospace game and competing with the likes of SpaceX, Sierra Nevada Corp. and Blue Origin for NASA funding.

“This is the beginning of a new effort on our part to ‘awaken the sleeping giant’ of Texas when it comes to the emerging commercial space industry,” said space alliance president Rick Tumlinson. “But we have to move quickly. Other states such as Florida, Virginia and New Mexico are far ahead of us in courting and supporting this potentially multi-billion dollar industry, and if we want a part of it, dramatic and determined action will be necessary – as the deals are being cut right now that will determine its future for decades.”

And states all over the country are positioning themselves to attract NewSpace to their state. Virginia Governor Robert F. McDonnell recently signed into law a new tax measure that would redirect tax revenue generated by human space flights to help build launch infrastructure and support human space flights from the Virginia-based commercial Mid-Atlantic Regional Spaceport. According to Gov. McDonnell, his space flight measure “will go far to encourage job creators to choose Virginia and invest in this state. And this was just one example of regulatory incentives Virginia has put into place to embrace and attract NewSpace. The Virginia Space Liability and

(SpaceX) became the first private enterprise to launch a space capsule (called Dragon) into orbit and recover it after splashdown. It is run by PayPal co-founder Elon Musk and already has $3 billion in contracts for 35 space flights, including at least 12 to ferry cargo to the International Space Station for a postshuttle NASA as part of the Commercial Crew Development (CCDev) Program. It is based out of Southern California, but employs a growing number of engineers, technicians and other staff at a former U.S. Navy weapons site in McGregor, Texas near Waco. SpaceX recently announced plans to build the Falcon Heavy, billed as the world's most powerful rocket with nearly twice the payload capacity of the shuttle.

WEDNESDAY NIGHT SAILBOAT RACES: One of the real treats to living near Clear Lake is the ability to enjoy a mid-week escape and take in the sites and sounds of sailing from a relatively close distance. W #6: PELICANS (REAL & FIBERGLASS) PELICAN PATH PROJECT: Seabrook borders Clear Lake and Galveston Bay and is the proud home to three species of pelicans. The brown pelican is a year round resident and seen frequently on the Bay. The white pelican is a migratory bird that visits annually from October through April. And the 40+ varieties of the 6-to-8-foot tall fiberglass pelicans that first started hatching in 2001. Ten years later, the flock continues to grow with new pelicans recently going out on display at the new Evelyn Meador Branch Library and at the Texas Hippie Connection. The project was started by Seabrook residents Cheri Smith and Marcy Fryday and the rest is history. Some of the originally flock are gone. Hurricane Ike took a few. One night Scuba Pete was kidnapped from his perch on NASA Road 1 in front of the Turtle Club only to be later found at the bottom of a local hotel pool. Luckily, he was wearing scuba gear.

E July and August are prime months for taking a vacation. Kids are out of school, teachers are off, cruise ships and vacation resorts are filled to capacity. Most cruises and resorts state that dress code is “resort wear,” but what is resort wear? And how does it compare to casual wear or dinner formal wear? What is defined as resort wear, which was once a genre reserved for only the most affluent, is now expanding and becoming a more cross-cultural style that spans the entire year. More recently resort wear is being marketed as “year round” since there are so many climates that remain warm through most of the year. Resort wear is a style of clothing that has gained popularity of the masses because of its comfort and ease for one, but for those who desire a style other than the cargo shorts and baseball caps that are typically worn in summer months and on vacation. Resort wear allows you to keep your sense of style and taste in fashion all while serving the purpose of keeping you cool and comfortable in very warm temperatures. It’s range and function is wide and can be worn differently for breakfast, lunch and dinners on vacation- as well as meals or meetings on business trips in warm climates. Resort wear influences come from places like Hawaii, with its bright colors, flowers and beach scenes; South America- in shades of light blue, yellow and minty green as well as the pure white from The Mediterranean and French Riviera. Nautical themes remain navy blue, white with gold accents and lots of stripes and knotted bits. The fabrics consist of cotton and silk, microfiber, brushed denim and linen- all prints that are easy to care for, and are breathable. Many major fashion houses have been expanding their collections to meet the needs of the vacationer that wants to celebrate life, to be glamorous and sexy while being understated, casual while being luxurious and flirty. It represents the spirit and elegance that is no longer reserved only for the Jet Setters! During the day the styles to look for are walking shorts, beaded kaftans, embroidered tunics, glitzy metallic bikinis, tropical prints in serene shades of ocean life and/or floral prints. Wedges are in fashion now, and can be worn night and day. They even look great with a swimsuit and elongate the legs without giving the appearance of “clubbing.” Nude or beige sandals can be paired with anything as well. I always like to

buy a sarong with the local prints when I travel. They are souvenirs, handy for going to lunch and cultural pieces as well. Wide brimmed or canvas hats are in order paired with bright colorful sunglasses that might not work on the daily subway commute, but will definitely brighten all of your vacation days. Evening wear includes linen pants, chinos, button down polo shirts and light dinner jackets for men and bold, sassy dresses for women. This is my favorite part of the day! I love to couple these great prints with gallant bracelets or earrings that I might not get away with at a business meeting but that really speak up on vacation! Men may wear dressy sandals and for women jewel encrusted sandals dress up anything. Wedges also work with evening attire so long as they aren’t tweed or linen. Don’t forget your jewelry! Today’s pieces are big and chunky and can really complement any outfit. Don’t forget a glamorous pashmina for those cool breezy nights. Use your vacation attire to play out your dreams and duplicate the outrageous styles you see in the magazines!

So drag out those suitcases and get ready for that next trip. Resort wear clothing is now fun and easily accessible. Try designers like Tommy Bahama, Lilly Pulitzer, Chanel, Michael Kors, Anna Sui and my favorite- Blanc du Nil. We are fortunate in Houston to get to wear most of these things year round anyway. Tookie’s: Anticipated late-July opening, Keeping original spirit alive Old fashioned burger fans are celebrating all over the Clear Lake Area due to the highly anticipated reopening of historical Seabrook staple, Tookie’s Hamburgers. Originally founded by Jim Spears back in 1975, Tookie’s was flooded during Hurricane Ike. T-Bone Tom’s owner, Barry Terrell, recently purchased the iconic concept and plans to start serving by the end of July. “Tookie’s will be restored as it used to be,” assured Terrell, “along with the land, we purchased the name, the recipes and the building.” Terrell, along with general manager Ali Velasco, will maintain the integrity and groovy vibe by resurrecting the entire, original menu (plus a few extras) and salvaging as much of the original decor as possible. Items destroyed in the hurricane are to be replaced over time – including the antique Victrola, Singer Sewing Machine, and Love Machine.

We heard a lot about the Wine & Food Week held up in the Woodlands (we call it South Dallas) every year. The promoters, Food & Vine Time Production, came across our radar in a big way last year when they hosted the successful/sold-out Brewmaster’s Beer Festival at Galveston’s Moody Gardens, which we were happy to help promote. So when the special invitation to head north and check out Wine & Food Week to see what all the buzz is about came, we happily accepted. And it looks promising that sometime soon, we might be able to enjoy a Wine & Food Week without leaving the land of lakes and bay. Stay tuned for details. And enjoy my photos below. Introducing the area’s newest attraction, Clear Creek Winery GRAND OPENING CELEBRATION JULY 9 & 10 Anyone familiar with the cost of large stainless steel tanks will tell you David Skinner means business. They also would be impressed with what Skinner, owner of the newly re-branded Clear Creek Winery, is up to. Skinner recently completed construction on a three-story, 6,000-square-foot addition that will increase his wine production a whopping 2500%. No extra zero there, a 2500% increase. And the increased production is just part of the plan as Skinner, a management professor at Rice University, has been working on distribution agreements so some day in the not-too-distant future his wine fermented and bottled in Kemah will be available in far off places including China.

The SCENE has been able to track the progress of this impressive project from the Ground Breaking, the construction and the much anticipated delivery of Skinner’s new fermentation vessels and a state-of-the-art bottling line came from oversees. To celebrate the completion of the construction and Grand Opening of Clear Creek Winery (formerly D’Vine Wine), Skinner and his staff have a major celebration for the entire family planned for the weekend of July 9 and 10. Children’s activities include snow cones, balloons and other surprises. Activities for both Saturday and Sunday include wine tastings, tours of the facility, wine jelly tastings by Brazos River Provisions Company and Texas style barbeque available for purchase. There will be live music by Pasheen and other nationally known artists. An endless variety of wine will be for sale by the glass or bottle.

INTERNATIONAL BEER FEST at Moody Gardens September 2 to 5 at Moody Gardens, Galveston Island Pour a cold one and hoist your mug Labor Day weekend September 2 to 5 when Moody Gardens hosts the second annual BrewMasters International Beer Festival, presented by Spec’s Wines, Spirits and Finer Foods! This beer-lovers’ paradise features 400 craft and specialty brews, and hard to source brews not readily available to the Texas consumer. Doubling the size of last year’s inaugural event, more than 14,000 are expected to attend this holiday weekend foam-fest honoring true Americana. The four-day celebration will showcase three signature events: the BrewTopia Beer Garden, the Brew HaHa Grand Tastings, and BrewLicious in the Ballroom. Activities showcased include a new kids zone, live music, beer and food pairing seminars and dinners featuring renowned chefs, educational events, and award-winning brewmasters including those from Samuel Adams and Boulevard Brewing, just to name a few. “This year’s BrewMasters is bigger and better,” said Clifton McDerby, event producer and principal of Food & Vine Time Productions. “We started as the largest beer festival in the state and we plan to give Texans even more. We are doubling our event space, have increased our beer selections from 300 to 400, and are finalizing details to bring in some of the nation’s top brewmasters,” he said. Festivities begin Friday, September 2 with the 4 p.m. opening of the BrewTopia Beer Garden. The family-friendly area under the sun in-

cludes a new Krazy Kids Fun Zone, live music, food and of course, beer! Vendors from all over Texas and beyond will help transform Moody Gardens’ Oleander Bowl into a genuine old-country beer garden. Entry to the BrewTopia Beer Garden is free, although the donation of canned goods or spare change is encouraged with contributions going to benefit the Galveston County Food Bank. BrewTopia will be open from 4 p.m. to 10 p.m. Friday, September 2 and noon to 10 p.m. Saturday and Sunday, September 3 and 4. Also on tap Friday, September 2 is BrewLicious in the Ballroom. Located at the Moody Gardens Hotel’s Francis Anne Moody Ballroom, this spectacular evening for suds sippers is for the serious beer and culinary enthusiast. BrewLicious in the Ballroom will feature renowned chefs showcasing unique food and beer pairing samples. BrewLicious in the Ballroom will run from 6 p.m. to 10 p.m. and tickets to the event are $75, with a VIP Premium Room upgrade ticket for $100. Saturday and Sunday afternoons, September 3 and 4, sample some of the best of brews at the Brew HaHa Grand Tasting held in the Moody Gardens Expo Arena, featuring over 400 craft and specialty brews and more than 30 wines. Leaving behind four children, a massive groundswell of area friends, networks and businesses pulled together an incredible effort of arrangements in one short week which included her memorial service and a Celebration of Life Memorial Fundraiser at the Endeavor Marina. We heard music from former Blood Sweat and Tears member, Bill Tilman; solo acoustic performer Tim Thomas, and members of KAOS together with Al Stephenson and Andy Upchurch sharing the stage. Magician, Tommy Blaze, entertained the kids young and old alike while Al "Sky" Saylor was the event's live auctioneer. This event was simply too big for this column to properly mention all of the volunteers, supporters and organizers -- To say the event was massive

would be an understatement. We were privileged to have been touched by Tina's presence in her short while. If you missed the event, it's not too late to support the cause (www. tinamontana.com). We will miss our friend. Peace...

TUBE AMPS, St. ARNOLD'S WEEDWACKER, IRISH ANTHEMS & LOVE SONGS: The last time we hung out at Union Tavern, we scored a quality, out-of-norm music experience with Come See My Dead Person, and so, in keeping our eclectic selections intact, this month we replaced the Guinness and Harp with St. Arnold Weedwacker and caught Blaggards on stage. This is an authentic Houston stout Irish rock band complete with tube amps,

OVER-THE-TOP, MUSIC: There were no bands listed on the lineup for Bert Will's Benefit at Katie's. Simply a signup sheet for anybody in music land who shared a stage or studio with Bert wanting to play. Likewise, there were no playlists prepared beforehand. Yet throughout the afternoon, torrents of sizzling old fashion blues & Cadillac country music poured forth, easily recognizable as being played by inspired musicians in support of an inspiring musician. You don't often get to hear music of this caliber which to these ears, ranked along side with performances heard at memorials for Mean Gene Kelton, Butch Dempsey and Jim Shortt. Get the idea? My favorite was Texas Hall of Famer, Tommie Lee Bradley, spinning the sizzle knobs two twirls past "Bright & Tight, Heavy on the Mojo". In the crowd were friends & family of Bert, lovers of the Blues, and even people from other countries. Kudos to the Katie staff, all the donors, cooks, musicians and supporters. The standing room only crowd and generous auctions were supremely organized by Ed (aka KPFT's Blue's Hound) & Cindy Nagle along with DJ Ron Swan (emcee at the Mean Gene Kelton Celebration). Bacliff's Master Minstrel, Benny Brasket donated the hottest auction item, a Bert Wills' dobro. Cheers! - Continued on Page 60

VENUS & MARS ARE ALRIGHT TONIGHT: Heads up! A new band alert! Remember the Seabrook Beach Club? Remember all the fun? One of the house bands included Pro Combo & Danny Kristensen. The Beach Club paradise has since been flattened and not totally a parking lot yet the music plays on. Thank goodness! Kristensen's been continuing his solo gig in the region and recently organized a new band, Endless Summer. Sounds familiar? We caught a couple sets of Endless Summer at Crazy Alan’s Swampshack (which is still packing in a full dinner crowd, BTW) taking in a predominantly Beatles & Elton John portion of their playlist along with the Friday night fireworks going off. Summer's here, Folks! May it be endless... ON THE FLIP SIDE of The SCENE is the Cultural Arts Calendar. We checked it out with the Bay Area Bluegrass Association's shindig happening at the Johnny Arolfo Center. You folks know it’s more than a shindig. Along with the feature show, there are side room jam sessions galore that are a hoot! Apparently, I've been spotted there enough that I was invited to sit in and play a bit next time. Who knows? Many of players and singers likely include your neighbors down the street. Before League City was an aerospace bedroom community, the region was a country Bay Area Bluegrass Association

village and bluegrass Mundo Nuevo was the rage and @ TAACCL like Beethoven, bluegrass will stand the test of time. Check them out! Also this month on the flip side, we mixed in with the patrons at the Texas Art Alliance Clear Lake center for an evening of jazz, South American style. The night featured Mundo Nuevo– A local group lead by six-time Latin Grammy nominee and space software guru, Juan Manuel (guitar) along with Don Kelly (woodwinds, keys and percussion), Nathan Mays (bass), and Galveston music instructor Carl Napoli (drums). Put this group on your watch list, okay? Their music will take you places and the TAACCL setting is Clear Lake's perfect place to make the trip. So what's new? SOMETHING NEW: Mexas, Doyle & Thomas have concocted an interesting new event happening once-a-month at Scout Bar's Acoustic night. Believe it, it's real... Loose Notes by Andy Eng One thing we can always count on here are hot Texas summers. Looking at the map the other day, it dawned on me what every grade school kid already knows, that desert countries of such as Egypt, Libya and the like are further north of the equator than Houston. Then why are we so audacious? Well, we've got the live music SCENE here, of course, and we’ve got the fun!!! Let's venture forth... SEVEN NIGHTS A WEEK of live music is what we have on the SCENE at Sherlock’s Pub, Jackie’s Brickhouse and Blaggards @ Katie’s. Pretty cool, eh? Readers know Union Tavern these places pack a punch on the weekends, so we thought we'd check the Monday through Wednesday stretch and found you folks already there. Figures... :-) We really like Sherlock’s cozy setup to kick back, chat and decompress with friends and company. We caught Jack Trippers (Danny Lopez/percussion & Justin Roelant/vocals & guitar) for a few sets of acoustic music with a splash of alternative country for kicks. Down at our Bacliff headquarters, Katie's has perhaps the area's longest running open mic series running with the Amigos on Sunday night and the Guacamole Gawds on Mondays. Readers know our fondness for Second Wind at the open mic event, where musicians Jackie’s Brickhouse hang out in their free time testing out new Open Mic @ arrangements and collaborations. The GuaKatie’s camole Gawds (Cisco & Raggio) have clearly whittled at it playing one of the more interesting acoustic cover arrangements happening. Catch the Gawds at Katie’s on Mondays and during dinner at Jackie’s on Tuesdays. On Wednesday nights, 2nd Wind will be holding the spot at Jackie’s this summer. It’s been almost two years since we last had this group on the SCENE. “Hollywood” Steve Rangel , Starr Jernigan and “Big” Ed Martinson (bass/vocals, lead/vocals & drums) play it well with a mix of blues, classic rock, oldies and R & B agreeing well with Jackie’s dinner crowd. Berryhill South Shore increases entertainment options to complement its well-known food Just over a year ago, the SCENE documented the grand opening of South Shore’s Berryhill Baja Grill & Cantina – an enormous space, with brightly colored walls adorned with festive decorations, patio seating, killer drinks and the best Baja fish tacos around. Going all out, owner Philip Wattel wanted something unique for the South Shore location – an area he frequents regularly as he’s an avid boater and resident of South Shore Harbour. Continuing that tradition, Wattel is expanding the capability of the restaurant by installing more bars and games, extending the hours and hosting live music on the weekends. Typically a popular spot for lunch and happy hour, Wattel’s vision will catapult his South Shore location into the late evening, catering to those who enjoy live entertainment. Two bars have been added – one downstairs, intermingled with the main dining area and another upstairs, in the semi-private lounge area. With more flat screens being installed and twenty-eight beers on tap, Berryhill will become a bona fide sports bar. Taking great pains to match the bright charm of the interior, the two new bar tops are an impressive sight, coinciding the south-of-theborder spirit with a Gulf Coast twist.

Along with installing the bar upstairs, tables and flat screens are welcomed additions to the popular semi-private lounge (along with existing black leather couches), making it much more welcoming for private parties and events.

The loft-style area already has fantastic views of the restaurant below and the panoramic window overlooks Marina Bay Drive, creating an upscale feel. Reserve the space at no charge for up to 40 people. Live entertainment lovers will be happy to know that Berryhill plans to host live music Thursday through Saturday. To accommodate the late night crowd, Berryhill will also extend its hours to 2 a.m. on these days and midnight the rest of the week. Other entertainment additions include a pool table, Golden Tee, Silver Strike Bowling, a casino style slot machine, and a touch screen jukebox. The large, semi-covered patio, filled with bright red umbrellas, is still a welcomed sight from the street and attracts the happy hour crowd as they’re driving home from work. One of the more dynamic happy hour selections in the area, Berryhill offers daily specials as well on food and drinks. Happy hour is Monday through Friday from 3 to 7 p.m. and all day Saturday with $4 appetizers, $4 frozen Margaritas, $3.75 import and $2.75 domestic draft and bottled beer, $4 well drinks and $1 off everything else. Daily specials include $1.99 fish tacos – the “Best Fish Taco Ever” according to Zagat – on Mondays, $.99 tamales on Tuesdays and Thursdays, $17.99 fajitas for two on Wednesdays, $10 bottomless Mimosas on the weekends with purchase of an entree, $6.99 weekday lunch specials, and if that weren’t enough, kids eat free on Tuesdays and Saturdays. Berryhill’s Baja-style menu provides a unique twist on Tex-Mex, offering fresh tasting food, packed with quality ingredients. The award-winning Original Fish Taco packs a punch as one of the only true, Baja fish tacos around – tempura fried fish with red cabbage, special sauce and cilantro. Also available are chipotle grilled fish tacos, original shrimp fish tacos sauteed in white wine, tempura fried crispy shrimp tacos, grilled beef and chicken fajita and pork tacos. - Continued on Page 53

All types of rock music are performed loud and clear from the main stage any given night the venue is open for business. And then there is that one night a month where it’s all acoustic.

On acoustic night, local musicians gather for a raw type of fellowship, and it’s pretty cool to watch. While there is not one particular night that exemplifies a typical Scout Bar acoustic night, I can tell you what June’s was like… Starting the night with some awesome renditions of popular alternative rock songs were Thomas Sustaita and Cody Stephens (vocals and guitar respectively) from Elysian. They were joined by Krystal Harper. Her presence brought an Evanescence feel to the trio, and I would love to hear them perform “Broken.” Hopefully next time?

Next up were three of I.D.R.’s members: Brett Cardiff (bass,) Roy Hockenberry (vocals,) and Mark Davis (guitar.) It was a fun performance and these guys made it all look EASY as they performed their band’s original songs. Cardiff didn’t have to leave the stage when I.D.R.’s set was over since he is also a member of South. South is a “hard kicking Southern rock band” fully loaded with seasoned musicians who are also a part of area bands like The Hunger and Southern Reign for example. Cardiff, Scott Easterwood (vocals,) the “infamous” Alex Slay (drums,) and Jeffrey Smith (guitar) really rocked Scout Bar. South performed original songs and covered Skynyrd’s “Simple Man” and Garth Brooks’ “Friends In Low Places.”
