Home of Shuttle Program will display best shuttle experience They say that everything is bigger in Texas and that certainly goes for Space Center Houston's newly-announced space shuttle exhibit. At this year’s State of the Lake address last month, Space Center Houston CEO Richard Allen announced that Space Center Houston will display its full-size space shuttle mock-up atop the historic jumbo jetliner that ferried the real orbiters after their return from space and delivered them to their museum homes. This development softens the blow when the home of the shuttle program missed out on one of the real orbiters. And more importantly, this offers Space Center Houston the opportunity to host the world’s top Shuttle display, as it should. NASA has transferred ownership of the Shuttle Carrier Aircraft, a modified Boeing 747 jet, to Space Center Houston, setting in motion plans to pair the replica shuttle that arrived last June via barge with the airplane in a $12 million outdoor complex, named “The Shuttle and 747 Carrier.” The display is to open to the public in February 2015. “The Shuttle and 747 Carrier will give visitors the world’s first and only all-access pass to an authentic and realistic journey through the inside of the Shuttle Carrier Aircraft as well as an unforgettable experience aboard the full-scale shuttle model,” according to a Space Center Houston release.

SALUTE TO HEROES IX For the ninth consecutive year, the Ray Joseph Hutchinson Foundation will present Salute to Heroes, an annual event with a two-fold purpose: to pay tribute to all military servicemen and women; and to honor Ray Joseph Hutchinson, whose short life ended December 2003 while serving in Iraq. Hutchinson was a graduate of Clear Creek High school and the foundation was established to provide scholarship opportunities for CCISD. A stunning waterfront restaurant located at 1301 Harborwalk Blvd. in Hitchcock, just west of Tiki Island on Galveston’s West Bay. Start with one of Floyd’s dynamite appetizers. I literally mean the Spicy Shrimp Dynamite made up of tempura shrimp tossed with creamy garlic masago aioli and unagi sauce. Or try the equally awesome Jumbo Crispy Crab Cakes served with a southern slaw and Cajun rémoulade sauce. Other appetizers include the Oyster Bar Trash, that really is pure treasure with blackened lump crab meat and gulf shrimp in a lemon butter sauce, oysters on the half shell, Blue Crab stuffed mushrooms grilled or fried and topped with parmesan reggianno cheese, crispy crunchy calamari, grilled en brochette shrimp and/or oysters wrapped in applewood smoked bacon, mixed seafood cerviche, and be sure to give serious consideration to Floyd’s Seafood Fondue with lump blue crab, Gulf shrimp, crawfish tails, and mushrooms in smooth cream sauce.

Opt for the Surf and Turf Medallions of filet mignon and a Maine lobster tail, Black and Blue Ahi Tuna, or the Red Snapper Seafood Courtbouillon, fresh gulf snapper, crab-crusted Mahi-Mahi fish, Bub’s Platter (has fried shrimp, grilled shrimp, shrimp en brochette, and stuffed shrimp). For a more traditional flavor, there is etoufee, a made to order rib eye or filet mignon, stuffed chicken, and pasta.
Floyd’s house salad is a little sweet and a little savory with a seasonal mix of greens, tomato, caramelized pecans, dried cranberries, and your choice of dressing. Their “Famous Seafood Salad” has lump blue crab, Gulf shrimp, seasonal lettuce mix, mushrooms, cucumbers, red onion, and parmesan cheese. Delicious! You could make it a meal with a bowl of gumbo or creamy crab or crawfish bisque.
Don’t forget to add Floyd’s famous Ponchatrain topping to any fresh fish selection.

Just try to resist the molten chocolate cake served with vanilla ice cream and raspberry coulis. Last, but not least on the dessert menu, is the freshly baked Key Lime pie. Which will you choose? Floyd’s on the Water is open Sundays from 11 a.m. to 9 p.m.; Thursdays 4 to 9 p.m.; and Fridays and Saturdays 11 a.m. to 10 p.m. The venue can cater and host any size event or meeting. An On-Going Series Chef John Blythe and Chef Kelsey Thomas Cock and Bull British Pub & Restaurant 3659 Nasa Pkwy in Seabrook British chef John Blythe prepares authentic British cuisine at Seabrook’s Cock and Bull British Pub. Blythe’s character is as big as the mother country he grew up in. American chef Kelsey Thomas who cooks up French inspired dishes joins Blythe in the kitchen and his quiet nature balances out the kitchen's personality quite well. Their beginnings: Blythe studied at the Westminster School of Culinary Arts in London. His first job in the industry was as a Sous Chef at London’s Circus Tavern (like a dinner theatre) over four decades ago. He has served the likes of The Supremes, Princess Margaret, The Judd’s, and Roseanne Cash. Thomas grew up in San Antonio and credits his grandmother for cultivating his palette. He studied at Le Cordon Bleu in Austin about five years ago. His first industry job was at a French fine dining restaurant as a prep server assistant. Thomas says that the position taught him to have patience in the kitchen! In the kitchen: Blythe enjoys preparing traditional
British fare. His signature dishes are the Shepherd’s pie or Steak and Mushroom pie. At home, he says he cooks crawfish for a bit of a change. Thomas’ specialty at Cock and Bull is the Crab-Stuffed Orange Roughy. During his leisure time though, he is partial to creating stir fry dishes. A special cooking tip to share… “Presentation is everything,” said Blythe. “People eat with their eyes. Make whatever you are cooking beautiful!” “This may sound basic, but make sure you have all the ingredients necessary before you start a recipe,” said Thomas. “Otherwise you may make a bad substitution or have to run out and get the ingredient your recipe may be lacking.”

escribed as “a sculptural depiction of the Manned Space Program,” Space Walk Plaza in Nassau Bay features the forged metal designs of artist Eric Ober. The artist explained, “It’s more of a historical time line of space travel from the Gemini Project, the

Space Station and ending with Buzz Aldrin saluting the American flag.” Developers approached Ober after viewing his metal works at other Houston area parks. Five years in the making, the project was revealed to the public during its grand opening in April of this year. Originally, as told by Ober, the plaza pieces were supposed to highlight the Orion Program for crewed missions to the moon, Mars and beyond. But, due to budget cuts in the program, the main theme no longer centered on the Orion Program. Ober said, “Some of my original ideas are still a part of the present walk. It’s not so much about Orion anymore.” The Space Walk entrance helms the largest and seemingly most intricate piece called Earth and Moon to show, as stated on the plaque, “In man’s desire to discover our place in the Universe and explore the unknown, we continue to push the boundaries of our scientific and technical limits, and then push further.”
Ober said he discovered his art talent in high school. Ober studied mechanical engineering while in college, but continued art for fun. After college, Ober worked in the oil and gas industry. When he was switched to a new division at work, Ober became unhappy. He explained he needed to be designing and working with his hands again. “I enjoy designing and producing the designs,” he said. Ober’s wife knew he was miserable and asked him what he would do if he could do anything. “Make art,” he replied. His wife told him to “do it.” Ober continues to use his engineering skills in a field he absolutely loves and has been a full-time metal sculptor for the past 14 years. He stated his degree in mechanical engineering “allows him to create sculptures that appear to defy the bounds of physics.” A mastered talent evidenced at Space Walk Plaza. Ober said he most appreciates seeing the response of people to his work. Ober likes “bringing people pleasure and giving people art as part of their community to enjoy. It’s very rewarding.”
The sculpture path leads to NASA’s second human spaceflight program, Project Gemini and continues to a gravitydefying metal representation of Neil Armstrong descending the Eagle ladder to the lunar surface. Next along the space walk is a Space Shuttle launch complete with billowing smoke painted so

Ober was able to create such large scale and intricate metal designs because of his talent and access to the right equipment. He has been working with metal out of his family’s welding business since he was a kid. “I have access to equipment most artists don’t have the opportunity to work with or afford. It allows me to do big stuff,” said Ober. Large scale commissions have been his main work for the past seven years.
The sculpture garden is located in Nassau Bay’s Town Square at the intersection of NASA Parkway and Upper Bay Road. Ober also forged several metal sculptures in parks around the Houston area. Visit his website for more details and designs at www.oberdesignworks.com.

Play with your (stability) balls Hello, my Meaty Minions! This month I'd like Fitness Columnist Rick Hunter to talk about using a piece of equipment in the gym that most people avoid out of fear or disdain. This apparatus of doom is the stability ball. Most of the serious lifters believe it's “just for girls” and they can't get a decent workout on it. The casual exercisers may venture onto the ball to try some crunches or to sit between sets. The truth is that the ball is a great tool no matter your goal. I've used it with competitive powerlifters, figure competitors, and people who just want to look better naked, so don't let this little doodad scare you off! The stability ball started with use in physical therapy clinics to help retrain vestibular issues (balance) after neurological damage, and to improve overall posture in deconditioned patients. Many of the same techniques translate into fitness use also, especially with added weights. The ball, being round obviously, a requires higher level of core involvement to stay atop it, whether you are laying, sitting or kneeling upon it. Engaging these extra muscles to keep you off the floor increases calories burned per exercise as well as increases the neurological demand of an exercise which improves overall coordination and strength. For those of you who are interested in cosmetic benefits, the ball improves muscular symmetry by forcing the weaker side to work harder to maintain balance while atop the ball. STABILITY BALLS: Continued from Page 27 But Rick, what ball should I use? Great question! Most gyms have a few different sized balls, ranging from 45 cm to 65 cm, with the 55 cm being the most common. If you are 5 feet tall or under, the 45cm is right for you, over six feet? 65 cm is your cup o' tea! These are generalizations, since some exercises you may want a bigger or smaller ball to increase your challenge. Another consideration is how well inflated the ball is. If the ball is rock solid, staying stable on it will be much easier than if its slightly mushy (technical term). The key to getting a good workout on the ball is to slightly challenge yourself a bit more every time you use it. Your perch upon the ball shouldn't look like you are riding the bull for an 8 second run, but you should wobble a bit while doing your exercises. In the beginning, remember to keep your eyes on a steady point and focus there. The visual feedback will allow your balance to develop naturally until you can challenge yourself further. Then advancements can be as
simple as closing an eye, both eyes, tilting your head or scanning the room instead of focusing while you perform a movement. You can find many exercises for the ball online, through YouTube, fitness magazines, or use your imagination. I've created many amazing exercises just by playing around during my workouts. The thing to remember is anything can be an exercise if it challenges you while you do it. You aren't confined to prescribed moves, just get on the ball and have some fun! If you are still having a difficult time finding exercises, you might wish to contact a professional. But most importantly, GET IN THE GYM!

BRAZILIAN JIU JITSU The fastest growing style of Martial Arts in the world Jiu Jitsu is a Japanese Martial Art later refined in Brazil and now is widespread and practiced all over the US. BJJ has developed techniques to defend oneself against larger and stronger opponents. This realistic style of self defense has been proven in the sport of MMA. Fitness is the key component to being successful in BJJ. There are no short cuts or secrets only diligent training leads to progression. Your health and safety are priorities for you and your family. Remember the number one way to defend yourself is being aware and prepared. Take the first step and start training Brazilian Jiu Jitsu. Photo 1: Moving your hips, make space between you and your opponent. Use your knees and feet as barriers from your opponent. Try to control the wrists or arms of your opponent. Photo 2: If your opponent is standing above you, always use your feet and legs as weapons. Place your feet on their hips, grab behind the ankles (pants, shoes, etc.) in one motion push with your feet and pull with your hands. Photo 3: To defend a rear body lock, lower your stance to create a stronger base. Use both hands to attack one of your opponent’s arms pushing his grip below your hips. This is the best way to break your opponent’s grip and possibly submit him with a Kimura.

Baytown’s Pirates Bay Waterpark – Fun for the Family Pirates Bay Water Park, located at the Wayne Gray Sports Complex, 5300 East Road in Baytown, is a Caribbean themed 3-acre water park. Operated by the Baytown Parks and Recreation Department, the familyfriendly resort-styled park opened the summer of 2010. The park also includes a climbing wall, a small rectangular pool for lap swimming and programs such as swim lessons and water volleyball. TEXAS OUTLAW CHALLENGE turns Clear Lake into a top High-Performance Boating, Biking & Car Destination
The 6th Annual TEXAS OUTLAW CHALLENGE: June 20, 21, 22, 23 The sixth annual Texas Outlaw Challenge promises to be bigger, better and feature the most horsepower yet. Paul Robinson, the primary organizer behind this event, already considered the biggest of its kind in Texas, has added a new feature in 2013. The event already includes the two-day Gunslinger Poker Run with a $20,000 first prize, the GPS Outlaw Shootout, the Stampede Street Party, the Miss Outlaw Bikini Contest and last year’s new addition – the Outlaw Corral, a boat buying and selling stockyard that had more than $1 million in deals in 2012. Joining the listing of activities this year is the new Steel Horse Stampede, a custom bike show and contest at Endeavour Marina in Seabrook on Saturday afternoon. “The custom bikes have taken off and half the guys who come to our event have those toys already, so we figured why not make them part of the show,” explained Robinson, adding that the event is way ahead of last year’s registration numbers, which saw a jump from 80 to 125 registered teams last year. “On Saturday, when we’re on the water with the boats, the vendor village is usually unpopulated. So this year we’re encouraging people to show off their motorcycles and compete for the $5,000 prize for the finest “Outlaw HP.” Robinson also confirmed that Friday’s first premier stop at "Kenny’s Casa" – the home of Kenny Armstrong who owns the 48-foot Ma-
rine Technology Inc. catamaran Phantom and sponsors the event through his company DeHumidification Technologies, LP – is on the schedule for the third straight year. “Kenny’s place is our first and only stop on Friday after the GPS Outlaw Shootout top-speed runs where participants are given a GPS and get to run their boats in protected water with a full-on safety crew,” Robinson said. “Each year our 100-mph gets bigger and bigger. I wouldn’t be surprise if someone breaks our 169mph event record set a couple of years ago by Howard Davis.” Based on past participation and the expected turnout this month, the event’s Houston location is proving to be the perfect “East meets West” demographic. In fact, Robinson said Mercury Racing is planning to attend the event with its all-new promotional trailer. “I could never have predicted the growth of this event,” Robinson said. “I have a good job at NASA, so I don’t do this to get rich – I do this for the community. Each year, we add a new charity, so now we have six recipients. We’re expecting to raise even more money this year.”

Meet Extreme Boating Photographer & Kemah Resident Jamie Russell

Not Your Average Gig he scene is the Kemah-area house of extreme boating photographer Jamie Russell. Photos of Humpback Whales in the West Indes, the rain forests of the Caribbean and powerboats racing all over the country fill the walls.

Russell, a former Navy Seal during the Vietnam War, has been into photography for years. Following Vietnam, Russell started by putting his deep diving experience into a career photographing underwater marine life. At the time, high-quality underwater camera gear was just becoming available and Russell found he had an eye for a great image. His work quickly brought him to prominence as a marine photographer, and he eventually landed an assignment with National Geographic Magazine to do a pictorial on whales and sharks. Throughout the two years of shooting, he never used a cage or any sort of protective device to get what is still considered some of the finest works of its kind. Roughly 20 years ago, Russell started working as a rescue diver at American Power Boat Association By John

(APBA) races. He would take a camera along whenever he rode in a chopper and brought back photos that dazzled the teams. He slowly abandoned his SCUBA gear in favor of better and better photo equipment. Since then, Russell’s photos have appeared in every major boating magazine and many others. It is important to remember the dynamics involved with his photography as the boats he shoots are traveling up to and over 150 MPH. There is quite a mix of skill and danger as the helicopter is often only 10 or 20 feet off of the ground (or water’s surface) while the boats launch into the air as high as 40 or 50 feet. In many of Russell's shots, you can actually see under the boat as it is airborne. “Just another day at the office,” Russell explains. Maybe, but definitely not your average gig. In June 2005, the helicopter Russell was in while on assignment crashed into the Lake of the Ozarks. “Pilot error,” Russell declares, admitting that he broke his own rules. “I only go up with pilots who either have combat experience or gray hair,” Russell explained. “This guy had neither.” A long hospital stay and hiatus from photographing extreme boating events followed, but he returned and will be up in the air at this month’s Texas Outlaw Challenge. He also points out his recovery period was shorter than the three years he spent in the hospital following his first helicopter crash as a Seal in Cambodia during the Vietnam War.

Lakewood to host 3rd Hatteras Yacht Rendezvous Thursday, June 27 to Sunday, June 30 Lakewood Yacht Club Fleet Captain Don Mitchell has announced that the club will host the third Hatteras Rendezvous over Thurs., June 27 – Sun., June 30. “We are very pleased to once again host this fun event for all Hatteras owners around the Gulf Coast. One does not need to be a Lakewood member in order to participate,” Mitchell stated. “The Hatteras Rendezvous Committee consisting of Lesley Hurley, Brannon Young, and Asa Lockhart has been diligently working for the last few months on a variety of activities for the weekend.” The evening of June 27 will begin with an informal gathering for early arrivals in the Inner Harbor. On Fri., June 28 there will be a Polynesian buffet and will include the return of the steel drums and dancing by the swimming pool. The next day, Sat., June 29, will feature a full array of informative seminars on topics of interest to Hatteras owners followed by a Hatteras Rendezvous Fashion Show

The overall Leukemia Cup trophy will go to the sailor or virtual sailor who brings in the most donations. All donations will go to the Gulf Coast Chapter of the Leukemia & Lymphoma Society for research and patient services. SAILORS INVITED TO BAY AREA HOUSTON AREA THIS FALL When the sailing season ends in most parts of the country, there is still a full calendar of racing activities during the fall and winter seasons on the Gulf Coast and Galveston Bay. “With our temperate climate, we have year-round racing on Galveston Bay,” related Bay Area Houston Convention & Visitors Bureau President Pam Summers. “Racers don’t have to put their boats in storage for the fall and winter. They should trailer them to our area for a few extra months of racing and enjoying the weekends on the water,” added Lakewood Yacht Club Fleet Captain Don Mitchell. The performance was dedicated in memory of Stephen Arthur, a core member of the group and a bonafide friend to many. With a playlist of 30 songs, the huge appreciative crowd

not only enjoyed classic hits, but also were treated to several obscure yet fundamentally pivotal numbers from this favorite British band. This show is a continuation of similar notable efforts headed up by Dave Blassingame who's vita includes Tommy, Jesus Christ Superstar, several Beatles shows, Pet Sounds, and now this. Charlie Burris and Barry Shatswell did a great job treating our ears to keyboard and synthesizer sounds of authentic fidelity and rare on the regional live music scene; the vocal line

and orchestra pit were inspiring; the guitars and percussion sections delivered with authority; and the flashbacks were surreal and abundant under the downtown Houston skyline all culminating what should easily score, in the voice of my predecessor the late Jim Shortt, "Bravo!" Cock-Eyed Seagull

CHRIS HARDY: Cont. from p. 62 “It will change your life,” he said. “You will build a whole network of like-minded individuals and receive the positive vibes right back into your life. It always pays back.” To be clear, Hardy is not referencing the pocketbook per se… He is speaking about “more along the lines of karma and opportunities.” One memorable moment for Hardy was when he performed for the U.S.O. at the 2013 Houston Livestock Show and Rodeo. And speaking of the rodeo, Hardy’s music has taken a distinct shift in genres. “I am a songwriter first and foremost,” Hardy said. “I can write about whatever I feel like writing in any genre and experiment with all textures and flavors.” Currently, Hardy has found a niche in the country world and performs his version of country music wearing a signature baseball cap, his devilish goatee, and warm Texas smile. Hardy credits local musician Bryan Shayne for giving him a shot in the country world. In fact, he says it was his original song “New Sheriff In Heaven” that changed the course of his career.
So he will be focusing on releasing country songs. Why country songs? That’s easy.

Every Tuesday night, he hosts an open mic night at Union Tavern. Open mic nights are how Hardy got his start and are his passion.”I love hosting open mic nights and finding new talent,” he said. “Bringing others up, brings me up, too. It’s all about supporting the local music scene.” You can catch Hardy performing in venues from Clear Lake to Cypress to Crosby to Austin to Louisiana. When not on stage, he enjoys cold beer, his faithful dog, fishing, and most importantly, playing bingo with his daughter Madison.
Hardy writes timeless songs stemming from real life. He records these words in spiral notebooks and uses the voice memo on his cell phone. There is no one formula for songwriting, but every song does have a process. It starts with the scratch version and gets refined with the syllables, lyrics, and rhyme. “When I can’t make it any better, it’s done,” Hardy said.

Boogie, Blues and Brews, Family Friendly Music Festival Returns for A Second Year The City of League City through Gulf Coast Public Affairs - Major Events (June 4, 2013), is proud to announce the return of League City's own family-friendly music festival. The 2nd annual festival is scheduled to take over Houston's Bay Area September 20, 21 and 22, 2013. For three consecutive days, Boogie Blues and Brews will bring together the best of blues, country, zydeco and rockabillly from all over the region to Walter Hall Park. The inaugural year line-up included event headliners Steph Rideau and the Zydeco Outlaws, along with swamp pop artist Nick Gaitan & The Umbrella Man, "Swamp Boogie Queen" Marcia Ball, legendary Los Lonely Boys, Texas treasured Jimmie Vaughan, along with many others.
Cook-Off, all in true Texan style. Located within the picturesque 86-acre park will be two stages for BBB's anticipated acts and an interactive Kid's Zone featuring rides and exhilarating children's activities to keep their spirits high. Also new to this year's BBB will be a Sunday tailgating event. Festival-goers can cheer the hometown team onto victory in the designated "Man Cave." The Texas ^ Revolution Texas Craft Beer Bills Pass! Late last month, the Texas House passed all five of the craft beer bills (SB 515-518 & 639) and they have since been sent on to Governor Perry to sign, veto, or let them become law without his signature. Since the bills recieved a majority of votes in both chambers, they will go into effect immediately on June 16 even if Governor Perry doesn’t sign them into law before then. Governor Perry could veto the bills, but that seems very unlikely considering the growing momentium and support behind four of the five bills. These bills will open the door for more entrepreneurs and small businesses to launch craft breweries and brew pubs in Texas. Current laws make it very difficult to start new operations unless you have extremely deep pockets and the unshakeable patience to wait years before turning a profit. These bills will also encourage the growth and expansion of existing craft beer operations. The
changes will lead to better distribution in bringing these products to consumers through local retail establishments. Under the laws that Texas has had on the books since the Prohibition Era, Texas breweries were dealing with rules much more restrictive than those in almost every other state and it was extremely unlikely that the craft beer industry in Texas would have ever been able to reach its full growth potential. We happened upon this nifty garage band that includes: Jim Ballard Wrong Medication @ Latitudes (drums), Steve Hicks & Steve Higginbotham (guitars) and George Hernandez (bass). They all carry vocals to boot! In their words, this is a group that "specialize{s} in twisting and turning the old songs you've heard all of your life to {their} specifications." In our words: This is a fun street-party-ready band that's been one well-kept secret down in the village of San Leon. What started out with a blur, but this month points ahead with a clarity and crispness, the likes we've never seen before. We caught Goddesses getting Gritty, searched for this year's Miss Kemah Pageant, took a stroll through the Kemah Lighthouse District, and caught some great live music shows – over-the-top caliber!!! Best of all, we got to see you out there looking better than ever for which we're ready to set sail into summer and patio season. But first, let's run down the list of all that went down in May. OUT AND ABOUT The Lighthouse District (Kemah): We hiked and found everything running full-steam ahead. Dining was at-capacity at T-Bone Tom's and at Crazy Alan's Swamp Shack where we caught for the first time, Trial By Fire and Brian Shane on the two stages. Brian Shane @ Crazy Alan’s

SCOTTY’S PUB:
A Hybrid Pub in Southeast Houston By Rhonda Meredith Scotty's Pub is what you would call a “hybrid” pub. The venue offers a wide selection of domestic and imported beer, a creative liberty on classic cocktails, and a foodie's take on pub cuisine. Located in 10943 Scarsdale Blvd. within the heart of the South Belt area (just South of Beltway 8 in Southeast Houston), Scotty’s Pub is a continual experiment in what it means to be a pub. “The people at Scotty's make the whole concept of what a pub is all about,” said owner Scott Sexton. “They're mixologists, artisans, artists, musicians, foodies, and connoisseurs of local and international brews. They are like family – in all the best ways. Just walk in, and you will sense the creative and energetic spirit…” The creative spirit flows in the drink and food recipes at Scotty’s Pub. The pub has 15 rotating domestic and international draft beers (England, Ireland, Belgium, and Mexico) and serves classic cocktails with a contemporary twist designed by Sexton himself and his team of outstanding bartenders. Scotty’s signature drinks include the Bloody Mary (pepper infused Starlite Vodka, spicy Bloody Mary mix, bacon salt, house-made celery bitters, and spicy pickled green beans), the Maple Bacon Manhattan (dried cherry, vanilla and fig infused Eagle Rare Bourbon, sweet vermouth, maple syrup, cherry bitters, and bacon), and the Maple Rum Sour (Zaya aged rum, lemon juice, maple syrup, and baked apple bitters). “Our classic cocktails are made with care,” said Sexton. “You can taste every nuance and how the balance of flavors hits every part of your taste buds.” The classic cocktail menu changes periodically to take advantage of the freshest seasonal fruits and vegetables. Speaking of vegetables, have you ever had your potatoes tossed in garlic, Parmesan, and truffle oil; then topped with an awesome sauce and a fried egg? If not, order the Disco Fries off the snack menu, and you’ll never look back. Do your taste buds an unexpected favor and opt for the “3 Little Pigs.” The wolf had it right when he was hankering for a taste of scrumptious pork. This creative dish is made up of pulled pork, house-made Tasso ham, bacon, Gruyere and American cheeses, caramelized onions, and pineapple maple mustard on Ciabatta bread served with a side of fries. A sweet, yet savory menu item is the Grown up Grilled Cheese. This indulgence has bacon, American, Gruyere, and Brie cheeses, apple slices, and apricot preserves carefully layered in between buttery Texas toast. Complete your meal with a sinfully delicious Irish Sunday. Take the gooey goodness of a dark chocolate and Guinness brownie topped with Nutella ice cream, Jameson’s Irish whiskey caramel, candied almonds, whipped cream and a cherry. - Continued on Page 46

WHO YOU NEED TO KNOW ABOUT RIGHT NOW By Rhonda Meredith In the summer of 2011, local songwriter and performance artist Chris J. Hardy released his first solo album “Wine Stains.” The music was masterful and intricate with innovative Rhonda Meredith photo
arrangements and narrative melodic lines. Hardy quickly became recognized as one of the Bay Area’s most prolific songwriters. Since that debut, Hardy has amassed enough music for at least three more albums. “The big release is coming this summer,” said Hardy. (While waiting for his new CD, you can check out the new music on Hardy’s ReverbNation site. “Right now all my attention is focused on the ‘Will Play For Food’ benefit number two.” Will Play For Food is a non-profit charity he started in 2012 to bring together musicians, artists, and local businesses to benefit the Houston and Galveston Food Banks.
