Hoof Trimming Show Stock

Skeletal structure is the new catch phrase in the show ring today. Not a class is discussed without the judge mentioning the degree of structural soundness of most of the placing cattle in the class and sometimes the non-placers as well. Many of the issues observed today can have their start in the hoof or be an end result of a bad hoof.

Preparation The first question to answer is: How often do hooves need to be trimmed? There is no correct answer, as hoof growth depends on many factors – genetics, nutrition and its quality, the amount of exercise the calf gets and the type of environment it is in. In normal structurally correct cattle, trimming every 3 to 4 months should be sufficient to maintain good hoof wall and sole structure. Those cattle that are structurally incorrect may require more frequent trimming; in order to aid in some correction of the deficiencies.

fer to use a motorized grinder with a wheel comprised of carbide blades as opposed to the more common grit or particulate discs. The reason for using the special bladed wheel is there is much less heat produced, because the wheel is actually cutting hoof – not grinding by friction. Too much heat can at times induce laminitic insult and a very painful response. Also, we have 2 types of bladed wheel; one that is beveled, allowing us to create a natural bevel on the axial (inside) portion of the foot and the other being flat for better reduction and removal of excessive growth.

Rarely can defects be corrected totally; but, with proper attention, great benefit may be given to the animal. It is important to initially examine the individuals before trimming to assess any structured defects that may be apparent, such as extremely post legged, weak pasterns, popping fetlocks etc. All of these issues will need to be approached differently as opposed to the routine trim.

Severely overgrown hooves are best reduced using a hoof nipper first unless the trimmer has access to a multi-bladed cutting wheel. Once the excess sole and wall is removed, the hoof sole and wall are “finished” with a coarse gritted sanding disc. It is always important to examine the animal standing and walking after the trim to insure proper alignment and balance has been achieved.

First of all, proper restraint is a must. A lateral recumbent position is preferred in our practice as we feel it gives better access to the hooves and allows us a better chance at evaluation of all four hooves at one time. There are stanchions available that allow trimming of feet in the standing animal, but seemingly a little more effort is required to sustain desired restraint. Once the subject has been positioned, the hooves are cleaned as best they can be to allow assessment of the sole and walls for any defects that maybe present. Once it is determined that there are no obvious abnormalities, trimming may begin. We pre

Things That Bug Me NUMBER 1: What generation is it?

I am so tired of authors, so-called experts, and opinion influencers defining the American public into categories according to when they were born and then predicting what they will like to buy and how they like to buy it. First, there are only two groups of people anyone can agree on as to who they are, i.e. the greatest generation (those who fought/ died in WWII) and baby boomers (born from 1947 to 1964). As for the rest of the people, which group they fall into is anyone’s guess. There are the Millennials (born 1997 - 2004); then there is Generation Z (born 1997 - present) or are they Generation Y (born from the mid 1970s to the mid2000s); of course they could be Generation X (born 1965 to 1984). And then livestock producers and retailers are told we need to market our food to the fit the desires of a specific generation and each generation has a different desire – really! Which generation is it? I break us down into three generations that work forever. They are: Older, Old and Young. If you are older, you know who you are. If you are an adult, you are old. If you are not an adult, you are young.

NUMBER 2: Misuse, incorrect use and just plain use of the word natural to describe food.

When it comes to food, no one really knows what natural is. Everyone in the general public has an idea of what natural food is, until they must write it down in words. Suddenly, natural has a lot of definitions.

The USDA/FDA have been reluctant to provide an official definition for natural. In meat science classes, we teach that natural meat is meat without additives, i.e. a steak, an arm roast. Sausage is not natural; it has spices, etc. added to it. Ground pork is natural – no additives. Marinated steaks are not natural and neither is cured ham. The meat science discipline has placed a very narrow definition on natural. Perhaps now is the time for the FDA/USDA to officially define “natural,” especially as it relates to meat and non-meat protein. Meat from animals is natural meat.

NUMBER 3: Fake meat.

I absolutely despise this word. This word is going to be overused to the point it will have little meaning. However, fake meat does have a place in our vocabulary. Plantbased protein foods that mimic ground beef or ground lamb or ground pork, and are described as a burger are fake meat. They may be rightfully called soy-burgers or vegetarian burgers but they are not – and should not be allowed to be called alternative meat. Laboratory burgers produced from animal cells grown with animal serum is meat and rightfully can be referred to as laboratory meat. Natural meat is beef, pork and lamb that comes from a live animal. Natural meat is the real deal.

NUMBER 4: Clean meat.

This phrase has been coined by the alternative protein folks to make plant based protein seem more appealing. Buying into the phrase, clean meat implies that something is not wholesome about real meat. This phrase may be the most detrimental advertising nomenclature that can adversely affect real meat or natural meat. Encourag-

ing FDA/USDA to define the word meat and the word natural should be a high priority for the livestock industry.

NUMBER 5: People who don’t show, wanting to make rules for people who do show.

I just got home from an ISF Advisory Board meeting. The older I get, the more I realize that bureaucrats need help in making fewer rules. More rules, beget more rules. Livestock and farm organizations need to become proactive and more involved with agencies who make livestock show rules. Rules need to be practical – enough said.

NUMBER 6: Entrepreneurs calling vegetable oil, milk.

Soy milk, almond milk, rice milk, etc., these foods are not milk. Milk comes from an animal; if it does not originate from an animal, it is not milk and FDA/USDA should define milk as such. Soy milk, for example is made by soaking and grinding soybeans, followed by boiling and filtering out particles, then heating the liquid for a prolonged period of time to prevent oligosaccharides from causing flatulence when drank. Soy milk (soy liquid) is a stable emulsion of oil, water and protein. It is not milk and should not be referred to as milk.

NUMBER 7: Employers not realizing this is the computer age.

Large offices full of people, spending a majority of their time on a computer, is often a waste of bricks and mortar, time and

productivity. Employees should be allowed to spend a portion of their working time at home or elsewhere, outside of the normal working day of 8 to 4 or 9 to 5. Of course, this model only works if productivity is high, employees are highly motivated and managers know how to stay involved and maintain control.

NUMBER 8: People who want authority without assuming responsibility. Have you ever heard the phrase: “Too many chiefs and not enough Indians?” Of course, you have. Managers cannot expect

employees to be productive (have all the responsibility of getting the job done) if the employees are not given some of the authority to make decisions. As a professor for 33 years, I saw this phenomena quite often in farming operations, i.e. dads wanting to maintain control of the farm, expecting sons/daughters to do most of the work with little/no decision making authority. Such a situation never works out for very long. Usually the son/daughter gets discouraged and leaves the operation or develops a don’t care attitude. Most of the time, I have observed the majority of the problem was due to the father’s inability to let go. Dads – know when to let go!

NUMBER 9: Writers like me making judgements about others. Enough said. Now I feel better.

Further expansion of the U.S. beef cow herd remains a possibility this year, but seems less likely than when the year began. More than usual, plenty depends on weather and demand. “Consumer demand for meat was stronger than average in 2017. It is rare for meat supplies to grow as they did last year without output prices suffering more severe declines,” say analysts with the Food and Agricultural Policy Research Institute (FAPRI) at the University of Missouri. “While economic projections point to U.S. meat demand remaining solid, prices are projected to retreat for most products in 2018 due to continued supply pressure and a return to more historical levels of consumer demand.”

“The All-Fresh beef retail price for March was $5.598/lb., up from $5.530/lb. in February and up 0.9% from one year ago,” explains Derrell Peel, Extension livestock marketing specialist at Oklahoma State University, in his mid-April market comments. “Choice boxed beef cutout declined from a February high of $224.46/cwt. to $213.34/cwt. in mid-April but remained 1.6% higher year over year.”

FAPRI sees the beef cow inventory peaking at 32.00 million in 2019 and 2020 and then gradually declining to 30 million head in 2027. USDA estimates the period peak for beef cows at 32.2 million head next year and then declining to 31.1 million by 2026.

“Though meat exports will continue to increase in 2018, even larger production increases will result in more meat for U.S. consumers,” FAPRI analysts explain. “Per capita availability in 2018 will be nearly 20 lbs. (10%) above 2014, returning to levels last experienced in 2004-2007. Production growth will begin to slow in 2019, and domestic supplies should peak around 2020. Any unexpected challenges to domestic or international meat demand could severely deflate livestock prices.” In the meantime, the growing domestic economy promises to support consumer food prices in the U.S. “Food inflation recorded less than 1% growth in 2016 and 2017,” say FAPRI analysts. “It was the first time that consecutive years had grown by less than 1% since 1955-56. The food at home price index declined in both 2016 and 2017, as commodity prices fell and energy prices remained low. Food prices have begun to increase in recent months, and will post more typical rates of growth moving forward. Food away from home inflation is driven by a strong economy and more restaurant food consumption.”

and experienced him pointing them in the direction of the stock or entertaining till I can get there.

1. How long have you been in the business and how did you get in this particular part of the cattle industry? Honestly, I have never really looked back and pinpointed when we would call the start! Growing up, our family raised Holstein feeder cattle and milk-fed veal calves. Once my older sister joined 4-H, we bought the first show steers. I always was extremely interested in the show calves, so around 2002 when I started in 4-H, we got our first group of stock cows to play around with. Through my show career, we started showing market heifers and keeping them back for cows, and eventually my junior year of high school started showing a few breeding heifers. From then on, and for the remainder of my brother Ben’s show career, we focused only on breeding heifers. I learned how to AI and would pick out bulls to breed to. Slowly, through trial and error, we started to raise some cattle that we thought were worth showing ourselves or selling at local consignment sales. When I was in high school, I started getting a few steers to “trade” and built a small customer base. I used the money made from trading to buy heifers that we would show and ultimately be the foundation of our cow herd. Every year, I would try to sell a few more and get a couple new customers. Over time, it snowballed into what we call Weis Cattle today. 2. Who does what around Weis Cattle? Weis Cattle is really a business operated by committee. Both my wife Nikki and I have day jobs, so my dad Rob plays a huge part in the day to day roles of heat detecting, calving and feeding. Besides working at our jobs during the day, we are constantly on the road during the weekends traveling to shows or out looking at cattle; so without him there to hold down the fort, we wouldn’t be able to continue like we do. Anyone who has been to the farm has likely met my dad

Nikki is the utility player, as she not only helps at the farm but co-pilots on trips to shows or calf hunting. At the shows, she is my extra set of eyes – she watches/coaches showmanship, and those that know her know that she is as good of a fitter as you can find. She is also an accountant by trade, so it goes without saying that she manages the book work and had has the hardest task of keeping me on track and organized. We also have a few seasonal employees when we need some extra hands: Bernie Ausmus, Kassi Rice and Baxter Knapp all help out at the farm when needed on weekends or breaks from school . They are the only way that we can get sale cattle looking presentable. Last but not least, we have large group of people that we call on to come to shows and help us fit, and I truly believe that they are the very best there is, not only with glue and clippers but at representing our business the way we want. They serve as ambassadors and spokesman for Weis Cattle and we can never thank them enough. 3. What is the makeup of your herd and where are you headed with it in the future? Do you ever order the appetizer sampler when you go out to eat? Honestly, that is what our cow herd looks like. I’m a bargain bin shopper, so if I think a heifer is special, it doesn’t matter what breed she is I’ll try to bring her back to Meyer. Over the years, we have dealt with a lot of different breeds, but currently have a cow herd built of Angus, Maines, Chianinas, Simmentals, Charolais, a couple Shorthorns and a Optimizer cow! I am extremely critical on structure, so as a whole, no matter what breed or pedigree they are, their skeleton is most likely the common denominator. I do a lot of thinking about whether we will ever try to focus on one particular breed in the future, and at this time I doubt we ever will. Each breed has qualities that I appreciate and pieces that are better than other breeds. My hope is that by staying involved in multiple breeds that it will help us keep an open and progressive mindset and hopefully keep me from getting “barn blind.” No

matter what breed, we will continue to strive to raise functional cattle that not only push trends but challenge the saying that show heifers don’t make cows. Our goal will always be not only for customers to be successful in the show ring, they choose but also to have an animal that will complete the basics and lay down and generate dollars for the customer so their project can be used as a gateway and funding for their future – the same way it did for us. 4. When somebody visits your place, are there particular animals you always show them? I love showing people the cow herd, but while on the tour I always have to point out a few of my favorites. One of them would be “Rudy,” which is the cow we consider my convertible. She is a Broker heifer that we purchased from the Lashmett family that my brother showed one of his last years. She is just getting going but raised the heifer Tucker Bayer is showing this year which has been very successful so far. The other cow I like to show people is Lola – if she happens to be home and not at Westwood Embryo. Lola is the cow that I give a lot of credit to for taking our program to the next level. She is actually the heifer I showed my senior year and has been a constant producer for us. 5. What’s the hardest part of what you do? The hardest thing is trying to be different and separate what we do from other operations. In my opinion, there are way more show cattle raised than there are kids to exhibit them. And, to some extent, all show cattle operations are selling the same product, just in different variations of quantity and quality. So, what can we do that separates ourselves from other breeders across the country? What can we do to make it worth it for someone to drive across the country to do business with us? I also think it’s hard to accept that some variables are out of our control. Conception rate, health, weather, and current economy are all things that can have a big impact on our operation from year to year and none of them can be fully controlled.

6. What’s the most enjoyable part of what you do? There are many enjoyable things! My favorite part is working with exhibitors and their families and watching them grow and evolve while showing cattle. I always talk about exhibitors experiencing “life changing” moments while showing. Whether it is getting through their class in showmanship, meeting new friends at a Junior Nationals, or accomplishing a lofty a goal that they set, watching them meet those milestones and seeing how it impacts their life is what keeps us going. 7. If you won a million-dollar lottery, but had to spend it on your operation, what would you spend most of the money on? This one is tough! The scary part is that a million dollars doesn’t go that far anymore! First off, I would buy some more land to turn to pasture, because there is hardly any pasture around here with all acres possible being used for row crops. After that, I would spend the rest of the money on concrete, with the miserable weather we have had this spring we could definitely use more! Oh, and I would save a little money back to build a small farrowing house and a chip barn because I’m becoming moderately addicted to show pigs! 8. What is the biggest change you have seen the club calf/show cattle industry? The biggest change I have seen is how people are marketing their cattle. I remember when sales were either phone bid offs or live auctions. Now, almost all sales are in some type of online format and many people purchase cattle without ever

physically seeing the calf in real life. The ease that online sales bring to selling cattle has not only changed how people shop for calves but also has greatly increased how many people are holding sales. I remember when 2 to 5 breeders would team up and have a sale together, and now almost all breeders have their own sale with quite a few having multiple sales a year. 9. How do you think the business will look in 10 years, 15 years? (ie. More young breeders or less, type of cattle preferred, diversity of genetics, etc.) I try to think a lot about how it will look in 10 years, and it’s a tough thing to do in an industry that can change so fast. I think like farming as a whole, there will be less young breeders in 10 years than there is now. And, the young breeders there are will most likely have off-the-farm income to help subsidize their cattle operation. I think the trend of cattle and breeds will change frequently, but my hope is that it will mirror the needs and genetics of the production side of the beef business. I also think that there will start to become more no-fit shows to lessen the cost of showing cattle. My fear is that if we don’t make some changes to how we show cattle that the large investment required to show cattle competitively will push families to show other species to achieve the showstock experience without as much financial burden. Even though there will be many changes, I am confident that this industry will continue to be an avenue for youth to learn lifelong qualities and lessons and be a strong network for their future after their show career is done.

Judge Livestock, Not People

T

o most AJCA members, owning, breeding and exhibiting cattle are their primary livestock experience. Many of those youth choose to take their knowledge to a higher level by participating in livestock evaluation or livestock judging. Youth who judge livestock have an additional opportunity to compete at the local, regional, state, and even national level. Livestock judging is a unique educational experience that allows individuals to combine the use of logic and the phenotypical evaluation of livestock. It also develops the skill of defending decisions through oral reasons. Mark Johnson, associate professor, Department of Animal Science and former livestock judging coach at Oklahoma State University says, “The most valuable experience you will encounter in livestock judging is the presentation of oral reasons. No
