Hereford Breeders Raise Money for Fire Victims A California-based group of Hereford breeders raised $40,800 to donate to cattlemen affected by the California Camp Fire, Dec. 1, 2018, at the Western States National Hereford Sale in Reno, Nev. The money was raised through the sale of Hereford heifer DF 0245 EMMA 907 741 ET. The Camp Fire in Northern California has been the deadliest and most destructive wildfire in California history. The California Department of Forestry and Fire Protection reported the fire was contained within 153,336 acres, and nearly 19,000 buildings and homes were destroyed. At least 85 individuals lost their lives, making this the nation’s deadliest blaze in a century. As a result of the destruction from the Camp Fire, the G5 Syndicate, made up of Dewar Farms, Bakersfield, Calif.; Lambert Ranch, Irvine, Calif.; Macfarlane Livestock, Cottonwood, Calif.; Schneider – Brown Ranch, Sloughhouse, Calif.; and Wunschel Ranch, Plymouth, Calif., offered the heifer, raised by Dewar Farms, for sale in the annual Western States National Hereford Sale, with all proceeds going directly to those affected by the fire.

The G5 Syndicate was formed in 2016 at the Hereford Youth Foundation of America’s (HYFA) The Harvest event in Sonoma, Calif., and raises funds to provide scholarships, education and leadership for Hereford youth. After the syndicate purchased embryos at The Harvest’s live auction, they remained in contact with one another and began pooling funds to donate to various causes. Emma sold as the first lot in the 2018 Western States National Hereford Sale for just over $11,000. She was donated back and sold two more times. More than $40,800 was raised when the gavel finally fell silent, with GKB Cattle, Waxahachie, Texas, placing the final bid and giving half interest on the heifer to Dewar Farms so the Dewar’s could retain interest on and continue to show the heifer throughout the year. “It was very heartwarming to see all those Hereford breeders give whatever they could,” says Andrea Dewar of Dewar Farms. “We never expected to raise that much money, it’s amazing how an ag community can come together.” The Dewar family agreed to donate the heifer if the G5 Syndicate could help raise

NCBA: New Water Rule a “Fresh Start” for Cattle Producers “After years of uncertainty stemming from the 2015 WOTUS (Waters of the U.S.) rule, the Trump Administration’s new water rule represents a fresh start for America’s cattle producers,” according to Kevin Kester, president of the National Cattleman’s Beef Association. “NCBA advocated for a new water rule that is easy to understand and implement.
• Provide safeguards for America’s waters; • Observe the appropriate role of the federal government in regulating waterways; • Restore state and local authority to protect waters; • Respect Congress’s intent in limiting jurisdiction to “navigable waters” in the Clean Water Act.
The Administration listened. The proposed water rule provides safeguards to keep our waters clean and clear rules for landowners to follow. We look forward to engaging with the Environmental Protection Agency and Army Corps of Engineers to finalize the rule.”
As a next step, the proposed rule will be posted in the Federal Register and become open for public comment. NCBA plans to submit comments on the rule and encourages members to do the same.

The 2015 WOTUS rule is currently in effect in 22 states. The EPA and Army Corps of Engineers are currently in the process of repealing the 2015 WOTUS rule.
Meat trade buffers record U.S. meat production According to the Dec. 10 issue of Cow/Calf Corner, a publication of the Oklahoma Cooperative Extension Service, the latest meat trade data shows that meat exports continued to help offset record meat production in 2018.
“Each of the major meats - beef, pork and poultry - are projected to reach record levels in 2018 and will combine to push total U.S meat production to a record level of 102.3 billion pounds, up 2.6% year over year,” wrote Derrell S. Peel, Extension livestock marketing specialist. “However, 2018 per capita meat consumption in the U.S. is projected at 218.7 pounds, up 1% year over year. The smaller increase in meat consumption compared to production is largely due to the net movement of meat offshore through meat exports. Thus far in 2018 (January – October), total meat exports of 13.3 billion pounds consist of broiler (44.0 percent); pork (36.3 percent); and beef (19.7 percent). Beef exports continued strong for 2018 with October up 4.6% year over year and total exports up 12.3% thus far in 2018. Japan accounts for 28.4% of beef exports thus far in 2018
and were up 10.8% in October, adding to a 6.7% year to date increase. Beef exports to South Korea were up 17.1% year over year in October and are up 39.9% for the year to date. South Korea accounts for 20.4% of total beef exports thus far in 2018. Beef exports to No. 3 Mexico were up 3% year over year in October and are up 8.1% for the year to date. Mexico accounts for 14.2% of beef exports thus far in 2018. Canada and Hong Kong are the fourth and fifth largest beef export markets, each accounting for just under 10% of total beef exports. Beef exports to both Canada and Hong Kong were down in October and are down for the year to date. Total beef imports were down 4.8% in October and are down fractionally so far this year. Meat exports are forecast to increase in 2019 while total meat imports are forecast to decrease. Continued improvements in the net trade balance will be critical to partially offset total 2019 meat production forecast at 103.7 billion pounds, up 1.4% year over year and another record level. Domestic per capita total meat consumption is forecast to hold steady in 2019.
Three State Beef Conference Jan. 15-17, 2019 Area beef producers should make plans to attend the fifth annual Three-State Beef Conference Jan. 15, 16 and 17, 2019, with locations in Iowa, Missouri and Nebraska. The conference provides a forum of specialists from three of the United States’ leading beef cattle landgrant universities to discuss where one can reduce winter cow feed costs and improve management of those resources. The theme for this year’s conference is “Reducing Cow Feed Costs Using Cropland.” Participants will be able to en-
gage in learning about opportunities to help lower the need for hay, the most common feed resource in winter cattle rations through alternative feed sources off cropland. “Hay resources are in high demand and short supply this year, so discovering how to reduce winter feed costs highlights the need matched by this conference,” said Nebraska Extension Educator Kristen Ulmer. Ulmer will lead a conference session titled “Opportunities and management of corn residue for beef cattle.” Additional topics and speakers for the conference include: “Using An-
nual Forages to meet late fall and early spring forage needs,” Mary Drewnoski, beef systems specialist, Nebraska Extension; and “Silage as the primary winter feed for cows” Eric Bailey, beef nutrition specialist, University of Missouri Extension. The same program will be delivered at each of the following locations: • JAN. 15: Warren Cultural Center in Greenfield, Iowa • JAN. 16: Andrew County Youth Building in Savannah, Missouri • JAN. 17: Otoe County Fair Center in Syracuse, Neb.

Least favorite show-day or show-barn activity: Washing and rinsing lambs multiple times on showday. What do you like to do outside of the barn/show ring: Bake, paint, hang out with friends. Favorite movie: Talladega Nights
What is your favorite show memory and why: 2018 PA Farm Show Grand Champion Market Lamb, it was a big goal of mine, and I was able to accomplish it!
Favorite food: Steak
Tell us about your all-time favorite show animal: My favorite animal would be “Riff Raff,” my 2018 Farm Show lamb. He had a personality unlike any other animal I have had. He was special from the start, and he was one that made you want to be in the barn all the time with him. I also have a awesome Simmental Heifer “Lola.” She is still a barn favorite!
Do you have a quote or motto you like to follow? If so, what is it? “A Champion is defined not by their wins but by how they can recover when they fall.” “Don’t tell me I can’t, cause I will.”
Do you have anything you keep in your show box for good luck or any good luck rituals on show day? Before I go in the ring I kinda zone everyone out and stay focused on what I need to do, check out the ring and make sure I know where I need to be.
What are your college or career goals: Work in the livestock industry in some way
Who is someone you’d like to thank for helping you succeed in the showring: My parents because they do whatever it takes to help me achieve my crazy goals and dreams. Greg and Jamie Beatty and Jarrod Styer for always supporting me and believing in me even though I know I am difficult at times, they always have my back.

FEEDING BEEF COWS IN THE WINTER OF 2019 (THE CASE FOR LIMIT FEEDING SHELLED CORN) As I write this article, it is late November and hay at the local sale barn is already high priced. I am one of the lucky ones, as I was able to harvest ample hay last summer to fulfill my cow herd requirements. I was even able to purchase some large round bales of grass back in October at the local sale barn for $40:bale when everyone was in the field harvesting grain. I did not need the hay, but those extra bales will provide a nice safety net and at 9.9¢: lb. of TDN, I could not pass up the opportunity. This week, large round bales were bringing $90 (20¢: lb. of TDN) and small square bales of alfalfa were selling for $6-6.50: bale (21.4¢: lb. of TDN). That same hay this coming January will bring $8-$10: small square bale and $140-$160: big round bale.
TDN and consuming a ration containing at least 15% of the TDN as grass hay would be fed 4.4 of lb. hay and 14.1 lb. of SC at a cost of $1.25: day, compared to a diet of grass hay priced at $90: ton costing $2.63 day (29.0 lb. grass hay @ $90:1000lb bale).
So, my question to you is; as you read my articles in 2017 and 2018, did you take any of my advice? Did you fence any corn stalks for fall and early winter grazing? Did you plant any cover crops into standing soy beans or corn for fall and winter grazing? Did you sow any cereal rye for use as early spring grazing or for chopping/ bagging in early spring? Have you been watching the soy bean hull (SH) and/or wet distillers’ grains (DGS) markets to purchase SH or DGS at market lows for bagging as an energy supplement feed? If you have not, I hope you have harvested enough hay or corn silage to meet your herds needs, as hay, SH and DGS will get more expensive as the winter of 2019 progresses. Currently SH are $70: ton (4.3¢: lb. of equivalent TDN) and shelled corn on the Board of Trade is $3.60: bu (8.0¢: lb. of TDN). Depending on your local elevator basis difference (20-30¢ on average) (currently the basis at my local elevator is 22¢), shelled corn may be even more economical than the BOT price. With a 22¢ basis, shelled corn has a TDN value of 7.5¢: lb.
This may very well be one of those years when limiting feed SC to beef cows is the most economical diet. As grass hay increases in price relative to SC, SC becomes more and more attractive as the primary dietary feedstuff. However, once cows calve, the TDN requirement increases 50% and the crude protein requirement doubles. The TDN requirement for a 1,400 lb. cow goes from 13.2 lb.: day in the last trimester to 17.2 lb. in early lactation. Shelled corn can easily meet the TDN increase but not the crude protein increase. A supplemental protein source is needed postpartum if the grass hay has a crude protein content below 12.0%. Sources of crude protein include soybean meal, corn gluten feed (CGF), distillers’ grains (DGS) and other oil meals (cotton seed, linseed, etc.). This year soybean meal, even at these low soybean prices is still too expensive to include in beef cow diets compared to corn co-products (CGF and DGS).
I recently read an article tilted “Limit Feeding Shelled Corn to Beef Cows.” This title was a misnomer as the researchers were only feeding the cows 2-4 lb.: day of shelled corn. In reality, these cows were being supplemented with shelled corn (SC) not limit-fed SC. When limit feeding SC, SC makes up 50% to 90% of the dietary energy of the cow’s diet. Therefore, a 1,400 lb. cow in the last trimester requiring 13.2 lb. of

In this scenario, SC provides 76% of the cows TDN requirement. The limit-fed SC diet costs one half the grass hay diet. The down side to feeding a limit-fed SC diet is that the cows may not reach rumen fill and even though the cows energy needs are fulfilled, the cows may still act hungry. Providing straw, soybean stubble or corn stalk bales for filler may be necessary to keep the cows content.
This is certainly another year to think outside the box and consider alternative diets to just feeding hay. When considering alternative feedstuffs, contract with a feed consultant who has some practical experience so innovative diets meet all of the cows nutrient requirements. Good luck. HAPPY NEW YEAR By Logan Sigmon
Happy New Year! I’m Logan Sigmon and will be serving as your 2018-19 AJCA President. I’m 17 years old and a senior at Berryville High School. My family and I run roughly 150 Simmental-influenced cattle on a 300-acre cattle farm between Berryville and Green Forest, Ark. About 25 of our herd is registered in my name. I show purebred and percentage Simmental heifers and bulls. I enjoy showing and exhibiting our cattle across the state and the U.S. to help promote and sell breeding animals from our herd. I have been a member of the AJCA since 2009, and held board positions of area vice president, youth treasurer and president-elect. Growing up in this organization, I have looked up to previous board members
such as Katy Tunstill, Cody Salmon, Coby Wilson, Sarah Caldwell, Will Clark and my older sister Kylee Sigmon. It is from their leadership that I have admired how our organization has been run, and hope that I am able to continue to guide the AJCA into the future! I am looking forward to an exciting year for our youth and organization.

In November, we held our annual AJCA Thanksgiving Classic and Bill Dorough Memorial Show. This year’s classic was held at the Foothills Arena in Clarksville, Ark., and was the largest in the history of the show. We had approximately 230 head entered for the show and 118 exhibitors present. What a way to start out our first show of the season! During the show, I worked the ring by lining up the classes. I was enjoyed getting to see some of the current members as well as a host of new faces and members to the AJCA! We had several different exhibitors from other surrounding states as well. There were also some new breeds that were shown, such as Scottish Highlander and Pinzgauer in the AOB division. The new faces and breeds get me excited to see what the new year holds for AJCA.
I am going to close with a poem that we have hanging in the dining room of our house. This poem is rings true to how thankful I am for my parents and the time that they have put into getting my sister and I to shows across the state and US for the past 10 years. Tradition is strong in our family. I encourage each of you to be sure to give your parents, family members or friends that help get you to and from your shows a big hug and Thank You! They are the ones that help make it possible for you to enjoy doing what you do in and out of the show ring.
This New Year not only brings a fresh start for everyone across the state, it also brings a new start for our organization! We just elected new officers and area vice presidents during our meeting in November. We also welcome the new leadership from our State Director, Cleve Clark. January will be our first official meeting with the new board, and we will have a big year to plan. During this meeting, we will also have the opportunity to review and approve the sanctioned show list for the 2019 season. That list should be posted to the AJCA website by end of January. The finalized list should enable you to find a show across the state, happening almost every weekend from mid-February to the end of May.
The Tradition Some folks just don’t get it. They think owning cattle makes no sense. It takes too much time, too much equipment, not to mention the expense. But the fondest memories of my life -they might think sound funnywere made possible by Mom and Dad, ‘cause they spent the time and spent the money. You see, the most important lessons helping values grow so strong, come from loving cattle and passing that tradition on.

Market for Fake Meat is Real but Small

Stomach-churning as it is to meat lovers and those who favor authenticity, fake meat products are catching the buying attention of at least a few consumers. In fact, according to a study released by Research and Markets (R&M) this summer, the global meat substitute market size was valued at $4,175 million in 2017, and is expected to reach $7,549 million by 2025. That would make for a compound annual growth rate (CAGR) of 7.7% from 2018 to 2025. “The alternative protein category is sure to grow over the next decade as global protein demand expands, allowing pathways for more diversified protein products,” according to a report from CoBank earlier this year (Lab-Grown Cul-
tured Meat-A Long Road to Market Acceptance). “Euromonitor International projects sales of meat substitutes to rise steadily to $863 million in 2021, representing roughly 17% growth compared to 2017 estimates. These figures are dwarfed in comparison to the current retail market size of $49 billion in sales for the entire meat and poultry category in the U.S.” Although fake meat products cultured from animal cells dominate recent headlines, fake meat products built with plant protein dominate the market currently. “The meat substitute market by product type comprises products prepared from tofu, tempeh, textured vegetable protein, seitan, quorn, and other plant-
based sources,” according to the R&M report. “Textured vegetable protein (TVP)-based meat substitutes occupied the largest market share of 35.8% in 2017 as it is the basic ingredient in most of the soy-based meat substitute products. In terms of growth, seitan-based meat substitutes are projected to exhibit an impressive CAGR of 9.4%, owing to increase in adoption in the food service industry.” Lots of that was Greek to me, too. For the record: tofu—also known as bean curd—is made from coagulated soymilk; tempeh is made from fermented soybeans; sietan is wheat gluten; quorn is a mycoprotein fermented from fungus. Best as I can tell, rather than an umbrella encompassing those other products,
TVP—also known as soymeat—is a product unto itself, made from defatted soy flour. How’s your appetite now? Meat by any other name Whether built from plant protein or cultured from animal cells, using the term ‘meat’ is misleading, of course. Just like using the term ‘milk’ when describing liquid alternatives derived from soybeans, almonds and all of the rest. Adding to confusion is the fact that these terms have been attached to other things previously, without ridicule. For instance, I don’t remember ever hearing
anyone raise a fuss about coconut milk or digging the meat out of a walnut. Of course, no one was portraying coconut juice as a replacement for milk. No one in their right mind would confuse nuts with actual meat. So, plenty of labeling battles will be fought along the way. And, that’s before considering products cultured from animal cells, which remain unavailable commercially. “A number of U.S. cell-cultured meat companies are developing products that some believe could be sold within three years in certain markets and widely available in 10 years,” according to a Congressional Research Service report
(Regulation of Cell-cultured Meat) published in October. That same report notes that cell-cultured meat is also known as lab-grown meat, clean meat, in vitro meat, imitation meat, synthetic meat, and fake meat. In the meantime, the battle over governmental regulation of cell-cultured meat is just getting started. In November, agreement was reached for the U.S. Food and Drug Administration (FDA) and U.S. Department of Agriculture (USDA) to share the responsibility of regulatory oversight. “FDA oversees cell collection, cell banks,
and cell growth and differentiation. A transition from FDA to USDA oversight will occur during the cell harvest stage, according to a USDA statement. “USDA will then oversee the production and labeling of food products derived from the cells of livestock and poultry.” Leading up to the decision, Jennifer Houston, president-elect of the National Cattlemen’s Beef Association (NCBA) explained, “Ensuring lab-grown fake meat products are subject to strong, daily inspection by USDA’s trained professionals is essential.” Houston and Mark Dopp, senior vice president of Regulatory and Scientific Affairs for the North American Meat Institute (NAMI) made comments about oversight during a two-day meeting this this fall, hosted by the USDA and FDA. The meeting—Use of Animal Cell Culture Technology to Develop Products Derived from Livestock and Poultry—included discussions about the safety and marketing of cell-based fake meat, as well as which agency will ultimately have regulatory control. “That the inspection system administered by the Food Safety Inspection Service (USDA-FSIS) is more rigorous than the one administered by FDA is undeniable. Administration officials have said as much,” Dopp explained “I am baffled why those who advocate that FDA should have primary jurisdiction over cell-based meat products want to deny those companies the benefits of FSIS inspection.” FSIS oversight includes the USDA mark of inspection, providing consumer confidence that a product has been deemed wholesome by the agency. Dopp also detailed the importance and benefits of USDA’s label approval process, which protects companies from frivolous lawsuits and gives consumers
confidence that products are accurately labeled and not represented to be something they are not.

“USDA can be trusted to enforce truthful, transparent labeling of the products under its jurisdiction,” explained Kevin Kester, NCBA president. “Beef producers welcome competition, but product labels and marketing must be based on sound science, not the misleading claims of anti-animal agriculture activists.”
Other highlights from the CoBank report:
Fake meat timeline “It’s clear by the growth in plant-based protein case shipments to foodservice and restaurant operators that this category has mainstreamed beyond those who choose a meatless diet,” explained David Portalatin, industry advisor for NPD’s Food Sector, earlier this year. According to NPD research, 14% of U.S. consumers, which translates to over 43 million consumers, regularly use plantbased alternatives such as almond milk, tofu, and veggie burgers, and 86% of these consumers do not consider themselves vegan or vegetarian. Beef alternatives make up 44% of the plant-based categories being shipped to independent and micro-chain restaurant operators (U.S.) and are the primary contributor to the total category’s growth, according to NPD. Burgers are the largest beef alternative category but ball products, like meatless meatballs, used as ingredients have outpaced burgers and all other plant-based protein formats in terms of growth. Also, keep in mind some of the household names that are already producing alternative meat products and/or have investments in other companies that are producing or intend to produce these products. They include Cargill (Memphis

Initial consumer surveys also reflect the acceptance hurdles that must be cleared. • Cultured meat could appear in restaurants and specialty stores in three to five years, and in grocery stores in five to eight years.
Other highlights from the R&M study: • The quorn-based segment is expected to grow at a CAGR of 8.5% during the forecast period. • Europe is expected to dominate the market, registering a CAGR of 7.3% in terms of value. • Exponential demand growth is projected for the Asia-Pacific through 2025, growing at the highest CAGR 9.4%, in terms of value. • The soy-based segment is anticipated to dominate the global meat substitute market registering CAGR of 7.2%.
