O
ne of life’s best pleasures is discovering a new or favorite restaurant to share an evening of good times and delicious food.
Luckily, the culinary destinations in the high desert are incredibly alluring and inspire one to appreciate all that life has to offer. With this spirit of adventure, the Source’s annual Restaurant Guide presents its top honor this year to Spork, winner of the 2016 Restaurant of the Year award. Spork is co-owned by Erica Reilly, chef-owner Jeff Hunt and Chris Lohrey. The restaurant that once lived in a ’62 Airstream surfing the events of Central Oregon, skillfully combines dishes from Asia, Africa and South America, prepared with fresh and local ingredients in unique interpretations. Next, we feature Chi Restaurant and Sushi Bar, created and run by owner-chef Di Long. Chi, which opened last May, wins the Rookie of the Year Award. This best new restaurant brings the culinary creativity of Long and her husband, chef David Cho, to a spacious and beautiful new restaurant with a view. With

decades of the Long family’s experience behind it, Chi will be a restaurant to enjoy for years to come. The 2016 Readers’ Choice Award goes to Barrio, which like Spork, began on wheels, as the successful food cart of owner-chef Steven Draheim. The amount of passion people express when discussing Barrio is really what makes this Bend favorite one to put on the bucket list of downtown dining experiences. Drawing from Mexican, Spanish and South American cuisine, with food that is excellent, affordable and fun, Barrio rounds out our globally-inspired winners list this year.

C
ongratulations to Spork! An eatery that was once on wheels has been in its permanent home on Newport Avenue, since June 2013. With new renovations finished in November, 675 square feet were added to the dining room. Spork is now pleased to be able to feed so much of Bend and is even a must-stop spot for tourists popping in from all over the world. Having been such an amazing addition to Bend, it’s no wonder that this year Spork is receiving Restaurant of the Year 2016. Co-owner Erica Reilly, along with Jeff Hunt, and Chris Lohrey are three souls on the journey that led Spork to become such an amazing experience. “We are incredibly honored and we find great joy in feeding our community,” says Reilly. Feed their community, they do indeed. Spork has an interesting advantage be-
ing close enough, but away from downtown, and they want it that way. “We like being in a neighborhood,” says Reilly, who adds that the downtown area was becoming very much a scene and they wanted Spork to be its own destination. The added benefit of being in a residential area is having multiple regulars who come in to eat up to three times a week. It’s not just regulars who come in often, however. Reilly says it never ceases to amaze her how often travelers come in every day during their stay in Bend. Spork’s menu and flair for everything Asian hooks people for good. Spork has its own counter-style theme where ordering up front is not only encouraged, but also actually required. Reilly equates this style to hosting guests at home. “It’s kind of what we are about, community,” she says, and
the service reflects that as well. Respect for the community is also shown through the food and where it comes from, something that is easily forgotten in today’s fast-paced world; Spork gives extra care and attention to finding local sources. This care comes across in wonderful ways, from delicious food to mutual respect between Spork and its many loyal customers. Though Spork has won many awards, the team remains humble and willing to always do better not only for themselves, but also for the community as a whole.

For Chinese New Year, Chi welcomed a group of people who Long says with a laugh “knows their Chinese food.” On that day, Chi served fish from head to tail, though usually, the chefs take a more modern approach. In the future, Long would like to add one day per month to do dim sum, traditionally served on small plates and in steamer baskets, carted from table to table. She is also considering a quarterly special seasonal dinner for important occasions, such as the Moon Festival or Cherry Blossom Festival. On a recent spring day, Long sat down for a moment with a serene smile and a twinkle in her eye, knowing in the morning, she would surprise her 9-yearold daughter with a trip to Paris. They would be exploring the restaurants and bakeries of the famous French city for one week while her husband stayed home to take care of the business. Bend can look forward to many years of Chi in the future. “I think we will be here for quite a while,” Long says.

arrio is the People’s Choice champion for a good reason. The consistency and deliciousness of its food has always seemed a bit effortless. Not that the staff aren’t working their tails off, but they never let you see them sweat. Chef/owner Steven Draheim and crew have taken Barrio from a food cart, to a small brick and mortar on Minnesota Avenue in downtown Bend, to adding a food truck for catering, finally moving to a new, much larger space on Wall Street They made it look easy. Taking over the spot previously occupied by Sweet Saigon was a perfect choice, as it was rare to go to the previously smaller location without expecting at least a little
wait for a table. Though the Wall Street location is instantly bustling, it is a much more realistically-sized space for the number of patrons excited for Barrio’s mouth watering tacos or incredibly delicious paella, or its unbelievably delectable new Sonoran Hot Dog.
Draheim’s love of Latin cuisine began with his cooking experiences in Tucson. Following culinary school in Portland, Draheim says he moved down to Arizona and started working with Southwest ingredients: the chilis and the cactus paddles, the citrus, the plantains. “You name it,” he says. “It’s the flavor profile I was drawn to. Who knows what it would be if my first serious cooking job was in an Italian restaurant?!”
breadth of Barrio’s menu is fantastic, making each virgin patron a new regular right away. Draheim has a theory about why Bend has latched onto Barrio so quickly: “It’s a combination of things. I think it starts with the name being Spanish for neighborhood. Our identity wraps around that idea of a neighborhood and through our price point, our service style and our philosophy of all being welcome and not excluding anybody,” he says. The real question is what to expect from Barrio in the future as it grows exponentially. “We’ve done a lot of growing with the food truck and the new space,” says Draheim. “I’m ready to settle down. I’m not going to try to gobble up another restaurant or take on any big projects. This is home for awhile. I’m glad it’s downtown. This is where we’re meant to be.” Couldn’t agree more.

According to the National Restaurant Association, 80 percent of people want dining dollars to support causes they believe in, such as fair labor practices and environmentally-conscious restaurants. There’s a notion today to consider more than the traditional bottom line when measuring success. The 3 Ps, people, planet and prosperity, bring personal values and quality of life to the restaurant business. Spork, for example, the 2016 Restaurant of the Year, supports the High Desert Food
and Farm Alliance, a nonprofit with a mission to build a sustainable food system in Central Oregon. It’s clearly a pathway to a better future. Good luck is found at the intersection of preparation and opportunity, and some new possibilities are just now being explored, such as reducing food waste, increasing donations of safe and nutritious food to those in need, and training and making accessible work places for people with disabilities. With 90 percent of restaurant owners given their first break in an entry level position in the field, one thing that is always on the menu is hope.

I
n Bend, many restaurants, coffee shops, food carts and breweries voluntarily compost food waste to share with local farms or companies that make fertilizer. Compost turns organic material into a soil conditioner that improves soil fertility, aeration and the soil’s water-holding capacity. Composting helps each restaurant significantly reduce the garbage it produces each day. The Environmental Protection Agency calculates 35 million tons of food go to municipal landfills annually, representing 21 percent of landfill contents. The U.S. Dept. of Agriculture estimates 31 percent of the U.S. food supply is wasted (a value of $162 billion). The USDA and EPA joined forces in 2013 to create the Food Waste Challenge to share information about how to reduce, recover and recycle food loss and waste. Restaurants in the Old Mill District are ahead of the curve. They began a collaborative
composting program six years ago. As food is prepped, for example, the scraps and peels go directly into a compost bucket that gets emptied into a larger outside bin, collected by a local community supported agriculture farm (CSA). In Deschutes County, the Rethink Waste program provides a composting how-to flyer online with information for individuals and commercial restaurants. Bend Garbage & Recycling offers food waste collection service to commercial customers in Bend, helping restaurants reduce their waste, and keeping organic waste out of the landfill. Outside of downtown Bend, Cascade Disposal and High Country Disposal (serving towns such as Redmond, Sisters and Terrebone), are other local businesses that pick up compost.

Thankfully, the tradition continues and Bend is a community of givers with business owners here in town doing what they can to make a difference, in many different ways. Flatbread Neapolitan Pizzeria is not only known for its yummy offerings, but also for its generosity in giving out gift cards, wine, even gift baskets to help those looking to raise funds for charitable events. General manager Suzy Landan talks about schools being the usual reciprocates, but also that the company is an avid supporter of the Humane Society. Come April 19 the restaurant will help the local group to make sure every dog (or cat!) gets its day. To apply for a gift card or to inquire about obtaining special
products for an upcoming event, Landan suggests visiting the restaurant online. Laughing Planet Cafe is a Portland-based company that opened its doors in Bend almost two years ago. Many traditions have been carried on from sister stores, one of which is a fundraising program, where 15 percent of a specified day’s profits go to a local school. Education is important to all people in the community. It affects not only students, parents and teachers, but society as a whole. Shift lead Destry Cloud opens up about the reasoning behind the program and why it should be a mutual effort. “We rely on our community to stay in business, and in return [our fundraising program] is the best thing we can do to acknowledge that,” he says. The 5 Fusion and Sushi Bar Charity Dinner series has raised more than $200,000 since 2009 with its collaborative dinners, helping many organizations, including the Education Fund for BendLa Pine Schools. In the past, 5 Fusion’s co-owner and executive chef Joe Kim, and Barrio’s Steven Draheim, (the Source’s 2016 Readers’ Choice winner), collaborated on a charity dinner benefitting Big Brothers Big Sisters.
