C
entral Oregon has a particular manner of evolving: It likes its classics—like, Phil’s Trail and breakfast at McKay Cottage (this year’s winner of Best Breakfast, for the sixth year in a row). But it also accepts newcomers, and quickly embraces and absorbs them. Like, consider that Phil’s Trail is only about a decade old and that McKay Cottage is only nine years old, but now is as much a part of the landscape as Pilot Butte. The results for this year’s Best Of Central Oregon reflect that phenomenon of Central Oregonians quickly welcoming newcomers and making them favorites: Many of the winners this year are familiar, but consider that many of those “classic Central Oregon” choices were not so long ago newcomers. Take Joe Kim, winner for Best Chef, as an example: Only a few years ago, he returned to Central Oregon (he grew up in La Pine) from San Francisco. He took his place as the new head chef for 5 Fusion and quickly introduced a sophisticated but approachable menu, and has since gone on to place Bend on the national stage with repeat nominations for the James Beard Award. Yes, what was
not so long ago novel is now the standard. Likewise, consider that Best Men’s Clothing (Revolvr) and Best Local Band (Corner Gospel Explosion) are both rookie entries. But both are already familiar: Revolvr presents favorite local designers and Corner Gospel Explosion is an offshoot from the popular local band Wilderness (who themselves only just landed in Bend five years ago). Thanks to all of the old-timers and newcomers alike who voted this year for the Source’s Best of Central Oregon. And congratulations to the repeat winners and the rookies alike!

oe Kim, lead chef at 5 Fusion and two-time James Beard nominated chef, is a fusion himself. Much of his childhood was spent between San Francisco—where he was born and his dad lived—and La Pine, where his mother moved when he was 6 years old to raise him and his sisters. Kim’s dad is Korean, but was born in Osaka, Japan, in a bomb shelter during World War II. He came to the United States as an exchange student from Kyoto University, met Kim’s mom and married her. After they divorced, his dad remained in San Francisco to run his Japanese restaurant. Kim spent vacations and summers there, cooking alongside his father’s Oakland restaurant near Lake Merritt. It was a different world from La Pine. In his cooking, Kim has brought those two cultures together—refined sophistication, alongside downhome approachability, with dishes like the popular spicy pork sliders (with kimchi slaw), pork tenderloin “lollipops” (spicy cuts of pork on skewers), and the Steve McQueen sushi roll (tuna with cream cheese, doused with sweet chili sauce and macadamia nuts). cKay Cottage has been open in Bend for nine years, but truly, the restaurant, set in a cozy 1916 bungalow, feels like it has been part of Bend’s lifestyle since time immemorial. Winning Best Breakfast six years in a row in a town that loves its breakfast is no easy feat, and McKay Cottage takes nothing for granted. Owner Pam Morgan explains, “We have to try really hard. We have a great staff and everybody
always works really hard to try to make it better. I hope that we will just keep getting better. There are so many things we would like to do more of and be more creative, and just keep taking care of people.” “It’s amazing,” adds Morgan, “we do have really loyal customers. ackson’s Corner is simultaneously modern, yet revives that classic neighborhood market—a winning combination as dynamic as the mix of ingredients that make up their awardwinning salads. “I am totally in love with the way Jackson’s is using organic produce and various proteins,” says Executive Chef Lindsay Duffy, who started at Jackson’s Corner as a line cook and steadily moved up the ranks. “We are sourcing our produce as locally as possible, so we have these beautiful relationships with local farms.”

his year, the vote for Best Brewer gives particular insight to Bend’s brewing scene because it so accurately reflects the two directions the industry is going right now. The runner-up: Tony Lawrence, brewmaster and co-founder of Boneyard Beer, a man whose IPAs flow in seemingly every bar in Oregon and Washington. And, the winner, by a nose: Paul Arney of The Ale Apothecary, which produced only 150 barrels of beer in all of 2014. “Everything was pretty unexpected,” says Arney, who worked at Deschutes Brewery and Seattle-based Maritime Pacific Brewing before opening the Apothecary in 2012. “I had been trained and worked as a beer brewer for so many years, and I learned a lot of things, but it was mostly about brewing. I didn’t really know how to run a business. I wasn’t really able to write a business plan because I didn’t know what the outcome would be.” With 20 percent of all beer sold in Oregon produced in Oregon (the largest percentage of any state) and 28 breweries operating in Central Oregon (from the mammoth Deschutes to two-guys-in-a-basement nanobreweries like Monkless Belgian Ales), craft beer around Central Oregon and across the state is no longer a rising trend; it is the status quo. It’s a huge industry—big enough for both places like Boneyard, which launched in 2010 and aims to eventually produce 40,000 barrels per year, and boutique operations like the Apothecary, whose wild-fermented, barrel-aged ales boast a small but passionate fan base. “I’m not so sure the beer or breweries are much different here,” Lawrence observes. “It’s just that, with Bend, the breweries and their beer as a whole make the scene simply ridiculous. The Northwest has a long history with craft beer, but Bend just seems to be stealing the show.” Both breweries are responding to the overwhelming demand: A year ago, Boneyard opened up a 40-bbl production facility to keep up with the intense statewide demand for RPM IPA, their flagship, but now, they’re taking a moment to catch their breath. “Our focus currently is in-house,” Lawrence says, “staffing, mechanicals, consistency, and so on. We’ve purposely pulled back on the growth curve to regroup internally, and that’s the best long-term investment we can make.”

Arney, meanwhile, has pulled back distribution in Portland in order to focus on Bend and his long-anticipated tasting room (tentatively named “The Joint”). “Right now we’ve got this tiny brewery,” he explains, “and we have to do everything in that [government-]approved space— barreling, bottling, and brewing. This new taproom space will let us use the brewery just for brewing beer, and that’ll let us eventually double or triple our production without adding any infrastructure.” Arney uses only one hop for nearly all of his beer, and relies on the oak-barrel aging, using exotic yeast like Lactobacillus to produce the tart, woody, and addictive flavors seen in beers like Sahalie, El Cuatro, and The Beer Formerly Known as La Tache. And, Arney believes that there is still room for more beer, and more breweries in Central Oregon—as long as it’s backed by something truly unique. “Talking about breweries like Pfriem or Boneyard,” he said, “I have an affinity for them because I know their story and the people behind their beer. I think what we need are more brewer-owned-and-operated breweries like that. Those are the kind of businesses who can drive the craft forward. If you have a board of investors getting into it because they think beer is profitable, they aren’t going to make as interesting a product.” (KG)

tlas Cider is defining the leading edge for the nascent hard cider industry and showing what expanding potential the beverage has. This summer, Atlas opened a cider tasting room (along with rotating beer taps) on the outskirts of the Old Mill District. Its instant popularity has planted a flag in the ground for cider’s staying power. The tasting room caps off their first three years of operation. Owner Dan McCoy had previously been
a social studies teacher for the Redmond School District, but returned to college to study fermentation after a backpacking trip through Europe introduced him to ciders. “We have world class beer all around us, and my wife and I were like, ‘Where are the ciders?’” McCoy says. Behind their flagship blackberry cider—a tartness that complements the apple’s effervescence—Atlas has kickstarted the next beverage craze in Central Oregon. (PB)

K
ombucha has come a long way from its roots as a funky homemade brew peddled by hippies and New Age types. The fermented tea drink has taken off in the last few years, with a number of breweries popping up in Central Oregon. But Humm Kombucha, originally known as Kombucha Mama, is a local trailblazer. The company, founded by two local mothers, started small and is now available in 20 states. The goal— to get more people to try kombucha and have it as broadly available as sugary sodas—is well on its way to being achieved. In Bend, Humm Kombucha can be found everywhere from local brewery taps and the growler fill at Food4Less to gas station beverage cases and local high schools. It got a boost when, two years ago, the company tofficially became Humm. The results were immediate: The new name and branding has proven more approachable for many people who
may otherwise shrug off kombucha as a hippie drink. While they were selling a steady five to eight cases a week at Whole Foods in Bend as Kombucha Mama, within a month of the new name, those sales skyrocketed to 75 to 80 cases. “It’s all about energy in a bottle,” says Jamie Danek, one of the two original founders of Humm Kombucha. But it’s not just ambition and positive energy that has propelled Humm to the top of the barrel. While earlier versions of kombucha had a vinegary acquired taste, Humm’s brews, in particular, have a way of winning over skeptics. With an emphasis on refreshing, accessible flavors like coconut lime and blueberry mint, and smooth brews that rarely include the murky “mother” from which kombucha develops, it’s no surprise readers chose Humm as their favorite kombucha. “The company stayed the same, but more people are at the party,” explains Danek. evolvr has only been open for a few months in downtown Bend, but winning Best Men’s Clothing so quickly speaks volumes for their reception. With a wide variety of clothing—including local designers—and all sorts of amenities for the modern gentleperson, the store is far from stuffy or snooty. Dayna Corbeille, the manager of our local shop, had a few ideas why Revolvr has caught on so quickly: “Our staff is awesome, I have
a killer team. It’s our vibe, the music we listen to, and the product that we have is different,” she says. “We get a lot of pieces from the brands that we carry that are reserved for boutiques, so we’re able to get things that you won’t see in the box stores. And I think free beer never hurts!” Corbeille adds “We have a really tailored look for men of all ages. Our market is from 16 to 70-year-old men. W
hen Christie Glennon started selling real estate about a decade ago in Central Oregon, the market was hot—second homes were leaving the shelves at a head-spinning pace, and for her first couple years, she worked as a licensed agent for Wyndham Worldwide in vacation property ownership. But when the housing bubble burst, roughly halving the value of homes in Central Oregon, especially vacation homes, in less than two years, that company closed its doors. “I immediately transferred into residential sales,
and my very first real estate transaction estate transaction was a short sale,” says Glennon. “All I knew for the next few years was short sales and REO [bank owned].” Although Glennon was successful managing short sales, she doesn’t miss those days. “There are very few short sales now, which is nice for both buyers and sellers. It means sellers are making money, and buyers can be in their new homes much quicker,” she says. “I’m starting to see repeat clients from the short sale days, as they are now back in the market as buyers, which is exciting.” There are new trends now—a strong market, somewhat tempered by strict lending guidelines—and Glennon is enjoying seeing an influx of first-time homeowners. And, Bend Premier has grown from only seven real estate agents to more than 70. (PB)

sign on the front door of Oregrown declares that “the end of cannabis prohibition has finally arrived!” Long-time best friends and co-owners, Hunter Neubauer and Aviv Hadar, opened their medical dispensary in January, and Hadar is proud to say they “have been open every day since.” Starting as an agricultural business five years ago, Hadar says the business was already well known in Oregon as a singlesource, local-based supplier of cannabis. “We are the soil-to-table story,” he explains. “Everyone was asking us to put our cannabis in their stores, so we decided to open our own shop.” This October, they will be allowed to expand their business even further, as currently licensed medical dispensaries will be permitted to sell certain products to the over-21, general public. The best friends have big plans to meet the growing demand for their products, and recently closed on the purchase of an “80-acre campus with blow-your-mind views of the Sisters.” “This is the Oregon way,” adds Hadar. “Organic products grown locally and responsibly sold in the state.” (KS)

elcoming students to its 90-degree heated power yoga room, a small sign in the waiting area of Namaspa states “come as you are, not as you should be.” “There are no mirrors here,” says coowner and founder Suzie Newcome, who encourages people to let go of any ideas of needing to be good at yoga to try it. “Just come and have fun, be a beginner, ask questions, and explore. With that as your goal, you will be successful from the first class.” A Bend native, Newcome left town to earn a Harvard MBA and a living as a corporate consultant. Nine years ago, she returned to

Bend to contemplate a career change. “I was living by what others thought I should be,” she admits. “When I gave up my concern of what people would think, this became the best move for me.” At that time, Newcome enrolled in a yoga class with Baron Baptiste and earned a massage therapist license. Over the years, her persistence and belief in yoga has prevailed to where she now oversees a studio with 30 teachers and 50 classes. “We have a lot of great studios here and it is really a wonderful community,” she exclaims, adding that she is currently working to extend her reach to Redmond this fall with her second location. e wanted the people who attended to have a good time and meet new friends,” says Humane Society of Central Oregon Community Outreach Manager Lynne Ouchida. “All of the attendees were likeminded in their shared passion for animals because they have all been touched by them. You can’t put into words the humananimal bond.” In June, the Humane Society hosted its annual fundraiser, Tuxes and Tails for the 10th year. It changed up this year’s event, adding fun elements to engage people while at an event specifically geared toward raising money for animals. “With people being so into social media,

we wanted them to feel engaged and wanted them to feel like they could share their experience,” Ouchida says. The “Hooray for Hollywoof” theme lent itself perfectly to social engagement. With a fun photo booth with customized, animal themed accessories, it was a huge hit. The Humane Society even brought in a RollsRoyce for photos, lending that the extra Hollywood-style feel. Held at the Riverhouse Convention Center, this year’s event also featured a walk on the red carpet and music by The High Street Band. “We have a crowd of people who look forward to this event every year,” says Ouchida. he sound is familiar, yet entirely new: For the past three years, Wilderness has been at the forefront of Bend’s local music scene with an alt-country noisepop that wildly merges slamming drumbeats and soaring guitar riffs. But in January, drummer Bradley David Parsons stepped forward, along with Wilderness bass player Nick Graham and his brother Tyler Parsons, to release Corner Gospel Explosion’s first album and started to play shows around town. Although Parsons and Graham continue to play with Wilderness—sometimes with backto-back shows as an opener/closer for the other band—Corner Gospel Explosion is a stand-alone production, with a sound that, as
Source music reviewer Eric Skelton explains, “blends reverb-soaked guitars with heavy bass and splashes of synths to create moody atmospheric rock that would nicely soundtrack the wet and foggy Oregon days that inspire the songs themselves.” Over a self-described “spooky” musical backdrop, Parsons delivers metaphor-heavy lyrics that leverage approachable subjects like grandfather clocks and fish, to weave intricate narratives that grapple with slippery topics including human mortality and love. hether Sunriver is your destination or you’re just passing through, chances are good you’re making a stop at Sunriver Brewing. How do we know? This year, the budding brewery claims the lunch, dinner, and bar categories. Though it only started production in January 2014, the brewery is already expanding, doubling its capacity to 5,000 barrels per year before the two-year mark. It also added a new offering to its beer list—sours. “Sour beer is becoming more popular in the Northwest every day” says Ryan Duley, director of sales and marketing for Sunriver Brewing. Aside from that new endeavor, Sunriver is just keeping
pace with its two popular year-round beers, Vicious Mosquito IPA and Fuzztail Hefeweizen, as well as a selection of seasonal ales. Of course, it’s not all about the beer. The brewpub serves as a hub for the resort town, welcoming locals and visitors alike. The menu spans a range of sophisticated offerings, from IPA-battered Portobello mushroom fries and fried avocado to fresh salads and grilled steelhead, and, did we mention everything is made from scratch? Plus, the remodeled dining area has minimized the cacophony that comes with large crowds and added a play zone for kiddos, so everyone can enjoy their meal in a relaxing way.

nless there’s a particularly hot topic on the agenda (like, oh, vacation rentals), attendance at bimonthly City Council meetings can be pretty sparse. Especially when you subtract the people required to be there—select City staff, people testifying on agenda items, reporters. But sometimes, things get a little spicy. And for that, we can usually thank councilors Barb Campbell and Casey Roats, the two newbies occupying opposite ends of Council’s political spectrum, and side-byside seats. Young conservative Casey Roats interned for Rep. Greg Walden and runs his family business, Roats Water System. Progressive activist and former school
teacher Barb Campbell owns the quirky Japanese toy store Wabi Sabi. Still, they have a few things in common. They both speak their minds. At a recent Council meeting Roats acknowledged his sometimes-colorful quotes, saying, “I apologize in all seriousness for leaving a stupid quote in the paper.” It’s not uncommon for the two to go backand-forth on an issue, neither budging (but both treating each other with an uncommon degree of levity and respect). The result? A real public forum that makes it easy to see why political debates have been a popular source of entertainment since Rome was built. (ER)

Best Change of Heart CROW’S FEET COMMONS

ast year, the Source’s most-read story was our coverage of the City’s decision not to renew Crow’s Feet Commons’ lease on the Mirror Pond Plaza, that City-owned courtyard between the ski/beer/coffee shop and Drake Park. Fans of the popular shop were outraged. Owner David Marchi was upset and confused. But it was about more than losing access to a cool outdoor hangout spot. Marchi and his team at CFC had taken unofficial ownership over managing the plaza by enforcing City rules and keeping ruffians
from making a scene. So when the City re-evaluated Crow’s Feet Commons’ role on the Mirror Pond Plaza, the new deal was a welcome one. Not only did CFC regain its lease on the plaza, the City has now formalized its management of it. “As a business owner, I never thought I’d have to take on the role of managing a [public] space, but I’m proud to be part of the process and change it over time,” Marchi told the Source in June. “My next goal is to try to establish Brooks Street more as a zone for commerce.” (ER)

o be fair, the City tried to “save” the not-quite-an-acre of grass enclosed in chain link across from City Hall. It made an offer on the parcel but Bend-La Pine Schools wanted more. While no one would disclosed what the City offered, it was clearly less than the $1.9 million price tag on the property’s recent sale to a company planning to erect high-end condo hotels.

Now, while Bend-La Pine Schools may have missed an opportunity to bring the Heritage Square concept to life, turning the former community sportsfield into vacation spots for the wealthy is not a forgone conclusion. To move forward with development, the City must remove the land’s public facilities designation and rezone for commercial use. (ER)
A LOCAL POT TAX C’mon, who wouldn’t support the campaign “Pot for Potholes”? Facts are facts: Bend is broke, and Bendites like to smoke. (Even before legalization it wasn’t hard to find a contact high in a town with this many reggae and jam band shows.) We know that any new tax would have to be approved by voters, and that it wasn’t clear if the State legislature would amend the measure to allow local taxes. But it could have been more seriously considered.

f we were to ask Franciscan friar and philosopher William of Ockham for advice (as in “Ockham’s razor”), he’d probably tell us the simplest solution, the one that relies on the fewest assumptions, is best. In this case, that would probably be taking out the failing Newport Dam and letting Pacific Power pay to restore the riverside habitats. But instead of keeping it simple, we’ve gone back and forth and back again, attempting to find a compromise between the Free The River and Save Mirror Pond camps. The problem is, all this public process hasn’t got us much closer to a solution, as it still relies on a plethora of external factors that cannot be predicted with any certainty. (ER)
TRUTH-IN-SITE’S OPPOSITION TO THE NEW OSU-CASCADES CAMPUS. To be fair, this is more a failure of the public to accept a pretty thorough process. Let’s face it, it’s highly unlikely the appeals court—or if they push it, the Oregon Supreme Court—will overturn the previous approvals, yet the university has spent and will spend funds on legal fees that could/should go toward educating future generations.
