To say that things are changing quickly in the Central Oregon food scene would be an understatement. While the pandemic certainly made things shift in the way of closures, it also brought something else: more newcomers from larger cities, eager to enjoy our region’s sun and fun times, and to bring us new locations with new flavors. Over the past year, we’ve seen the closure of some Bend mainstays — the closure of Spoken Moto, the Brown Owl and Dogwood, for example, as well as the addition of a slate of new places, largely powered by recent transplants to the area.

Our annual Restaurant Guide aims to encapsulate what’s happening on the dining scene in Central Oregon, first with our Rookie Cart, Rookie Restaurant, Food Cart and Restaurant of the Year awards, but also, with the listings of the restaurants and food carts of Central Oregon. Our listings experts have checked and re-checked the hours and contact info for all of the businesses listed inside — but like the scene itself, things change quickly. When in doubt, it’s always best to call ahead to verify opening hours and such.

CUTTING-EDGE STEAKHOUSE CARVES OLD-SCHOOL VIBE

Rancher Butcher Chef opened its doors in August 2022, and suffice to say it quickly secured its place among the growing excellence of the Bend food scene. With a culinary powerhouse at the helm, and its own “home ranch” that supplies meat for RBC’s butcher counter as well as its dining room, RBC swiftly garnered a reputation for craft and service.

Those familiar with the Portland dining scene will undoubtedly know of John Gorham and his wife Renee, who operated Toro Bravo and Tasty N Alder, among other ventures in the Rose City until 2020. After selling their six restaurants amid the pandemic and personal challenges, the Gorhams began to eye Bend.

“It was time for us to take advantage, like so many people did during covid, and make a big life change, which was the best thing for our family,” Renee Gorham told the Source Weekly. “And the sun was really appealing!”

“I saw it [Bend] being very ripe to be a food city. It reminded me of Portland in 2007 when it just boomed,” John Gorham said.

“We knew we wanted to do something Spanish here — we didn’t want that to be our first project here. We’d always wanted to do a full-fledged steakhouse, and then I met Will Von Schlegell and John Von Schlegell,” the owners of 7-Mile Creek Ranch in Fort Klamath, Oregon. The three hit it off, and Will Von Schlegell became a business partner in RBC, where 7-Mile beef is on the menu.

“We’re big lovers of oldschool steakhouses. We find

them wherever we go — El Gaucho and Ringside [Steakhouse] were our date nights. I love institution restaurants, and there’s something very familiar about a steakhouse,” Renee Gorham said. “We can still do our style of service and the vibe that we create, but creating that RBC brand for this community was very intentional.”

In addition to its wide-ranging steak menu featuring novel cuts as well as old favorites, the small plates and sides at RBC are a delight. Diners today come as much for the Creamed Cabbage or Potatoes Bravas — a nod to the Toro Bravo days — as they do for the main courses. And try not to be impressed with the cocktail menu as well, curated by Garrett Peck, formerly the co-owner and general manager of the vaunted Paley Hospitality in Portland, who’s brought together some of his popular Portland-era cocktail mainstays, but tweaked them for Central Oregon. The region is indeed benefiting from all this culinary relocation; not only is RBC the Source Weekly’s Restaurant of the Year in this year’s Restaurant Guide, but soon, diners downtown will also get to enjoy their new venture in the former Dogwood Cocktail Cabin space, called BAR RBC, which the Gorhams describe as “if RBC and Toro Bravo had a baby,” very soon.

As for RBC, its casual elegance, excellent food, amazing service and Northwest Crossing locale will very likely make it a hot spot for Bend diners for years to come. “I want everyone to feel comfortable,” Renee Gorham said. “It’s familiar enough but exciting enough that you can come in in flip flops or ski pants and feel good.”

I think what’s interesting about us, as a premise and a mission, we want our menu to not stay the same. So it’s always going to be rotating menu options that are changing with seasons...

Brooks Alley got an upgrade when Dear Irene opened its doors last July. Before you can get your hands on any of the establishment’s sumptuous drinks or appetizers, you’ll be presented with a stunning array of colors and textures inside the elaborately revamped space. Owners Jonny and Irene Becklund didn’t forget the importance of interior aesthetic when they built out the space, named after Irene herself. It’s awash in bold colors, unique tile and memorable wallpaper. But if interior accoutrements are a gimmick designed to help diners gloss over poor service or a bad meal at some places, you’ll find none of that here. Dear Irene’s staff is attentive and knowledgeable, and all the while approachable, and the food, which rotates according to seasonable availability, is top notch. The appetizer and main course menus are heavy on seafood, largely because that’s what chef Jonny Becklund likes, he said. And while the menu does change frequently, some items have become staples, such as the Oregon dungeness crab arancini, the scallops and the Taleggio grilled cheese with duck egg and black truffle honey. The drinks menu also changes with the seasons, and Jonny Becklund is proud to say he stocks one of the broadest bourbon selections in town.

“I think what’s interesting about us, as a premise and a mission, we want our menu to not stay the same. So it’s always going to be rotating menu options that are changing with seasons, and I think that is unique,” Irene Becklund said.

“Even if the base ingredient is the same, the entire accompanying experience is going to be a little different.”

Trained in San Francisco as a chef, Jonny Becklund owned a 12-seat tasting menu restaurant in the Mission District, called Mr. Pollo, prior to moving to Bend. That gave him plenty of experience in switching up menus based on what’s locally available.

“I went to the farmers market every morning — we had one every day there, and I based the menu on what I found in the market,” he said.

This summer will be Dear Irene’s first full summer in business, and with the Bend Farmers Market literally right outside its door, the Becklunds look forward to that old practice of browsing the farmers markets for new items to add to the menu.

Summertime is also a choice time for customers to visit Dear Irene, with its cozy patio overlooking Brooks Alley and Mirror Pond, which adds about 25% more seating to the restaurant’s capacity. With warmer weather approaching, it’s going to be fun to see what shapes up this summer at Dear Irene.

If you’ve had a burger from the Americana truck, then you know how it goes:

Eat an $8 OG Burger for lunch, feel incredibly satisfied by the mix of crispy-yet-not-too-dry beef and melted cheese, plus all the fixins, and by dinner, you’re wondering if it’s appropriate to have a two-burger day. OK, well, technically, you’ve already had a two-burger day with Americana, because each order comes with two patties, smashed into the grill and cooked all the way through from one side, but hey, if it sounds better to tell yourself that “two orders” is a “two burger day,” we wouldn’t blame you.

The technique of letting the burger sit on the flattop on only one side keeps the patties juicier, and may be part of Americana’s “secret sauce,” says Joseph Franco, who owns Americana with his wife Olivia. The couple gets a lot of help from teammate Tommy Fraioli, who helps keep this massively popular cart at The Podski in Bend humming.

Franco started Americana when he moved to Bend in 2020, using seed money from his late father’s life insurance policy. After short stints in Redmond and at Bridge 99 Brewing, Americana began to charm the eaters of Bend in a big way when it was set up at Spider City Brewing. It was there that Franco was approached by the owner of The Podski.

“What he said was, I’ve heard this is the best burger in town, and I want to have the best burger in town at my place.” By November 2022, Americana was set up at The Podski in a big orange rig –later replaced by a big green one. Relying mostly on word of mouth — and some notable nods from the public, including winning second as Best Food Cart by the readers of the Source Weekly in our Best of Central Oregon readers’ poll last year — Americana has grown steadily into one of those places that, as described above, you might find yourself bargaining inside your head to go get a second time in a single day. And since they’re priced affordably, it’s an even easier bargain.

“It doesn’t matter your socioeconomic status or where you come from or anything like that – you should be able to have good food and something that you can afford,” Franco told the Source Weelky. “Here, somebody can come in, get a burger and a beer for less than $15 and call it a meal.”

Fans of Americana will be happy to know that they’ll soon be able to enjoy its burgers, fries and grilled cheeses in downtown Bend; on the day of our interview, Franco told us he’d just signed a lease to open a brick-and-mortar in the former Seven Nightclub location on Bond Street – with more details yet to come.

Next time you’re in Brooks Alley in downtown Bend, don’t overlook the Farmer’s Deli, the silver truck with the chips, drinks and other bodega offerings out front. The Source eating team (aka Jared Rasic) raved about the food truck tucked behind Bar Rio back in January, and we’ve been returning for more elevated grilled cheese, amazing Reubens, legendary tomato soup and more ever since.

Owner and chef Justin Halvorsen grew up in Vermont. Along with 24 years of cooking experience, he spent time working with youth and in community gardens while moving around the West. In Bend, he served as executive chef for the Victorian Café and the two Hideaway tavern locations before going to work with the owners of Bar Rio and Shim Shon.

From the Farmer’s Deli, the food truck he launched in June 2023, he gives a nod to his home state by serving up East-Coast inspired specials and menu items. A staple of breakfast is a simple, yet craveable version of a Vermont egg sandwich, called The Local, featuring a locally sourced egg, Tillamook white cheddar and a Sparrow English muffin, with bacon, sausage or ham as an added side.

The Local, Halvorsen said, “is actually a nod towards the little general store where I went to college. It’s just a grandma making egg sandwiches.

“In Vermont, if you want lunch and you’re just driving around, every little town has these little delis. They’re in the

general store, they’re privately owned and you chat with the person while they’re making you lunch.”

Popular lunch items currently on the menu at Farmer’s Deli include various versions of grilled cheese, served up on thick slabs of Sparrow bread; the big seller, the ASMR VTster, features Tillamook white cheddar, Pullman sourdough from Sparrow Bakery, sliced apple and turkey and Vermont maple aioli.

In every dish, Halvorsen aims to highlight local ingredients. Bagels are sourced from local Mimi’s Bagels; breads from Sparrow. The veggies often only require a short walk outside the cart to source them from the local farms set up at the Bend Farmers Market, or from the market in Northwest Crossing, when the markets are in season.

With the Farmer’s Deli concept, Halvorsen said, “I wanted to do full-circle, closedloop systems, and bringing it back to why I started cooking, what made me want to cook. Shit just tastes better when you know the person growing it or when it’s raised locally.”

While the first year in business — or any year in the restaurant business, really — can have its major challenges, the focus on the heart and soul of food is thus far what motivates him.
