Yes, it is good to have routines, like James Bond always ordering the same drink, shaken, not stirred. But, we also think that it is a wide world of beverage choices out there and not worth limiting the horizons completely.

For this edition of the Drink Guide, we have shuffled the order a bit—and beefed up the content. For starters, this guide has a new name: The Drink Guide. Simple as that! It is the same complete listings of Happy Hours around the region, but recognizing the importance—and interest in—the brewery industry here, we have moved the Beer Booklet to the front of this guide. For each listing, we try to provide some insights to that brewery and its sensibility— and to offer our recommendations for our favorite beers. But yes, we recognize you have your own taste palates and that we can lead a horse to the brewpub, but can only make him drink so many IPAs before he’s curious about the stouts and soissons. Along with the Beer Booklet, we also are introducing a listing of growler fill stations. We understand that it is not just what you drink, but how you bring those drinks home. And, finally, yes, our Drink Guide also includes the Cocktail Compass, the same complete listings of Happy Hours and drinking establishments, from those serving well drinks to those offering fancy flutes of fizz. 10 Barrel is a hometown favorite, but upended the Bend beer scene in late 2014 when it sold to Anheuser-Busch InBev. 10 Barrel continues to be popular and a dominant label. The Galveston Avenue brew-pub is often packed cheek-to-jowl around its fire pits, with a good-time, loose feeling, and the popularity of its flagship beers, Apocalypse IPA, and its winter ale, Pray for Snow, only growing. Their summer radler, Swill, is a favorite barbecue drink; light and easy.

Head Brewer Paul Arney is an artist. A former brewer for Deschutes, he stuck out on his own and the results are far from ordinary. “Our beer is influenced by the ancient brews of humanity, breweries like Cantillon and Orval in Belgium, Oregon craft beer and wine, German historical brewing techniques, traditional Scandinavian brewing and French Champagne production methodology,” he explains. This is not a starter brewery, but for the sophisticated and curious, with seasonals like Sahati, which is brewed in a 200 year-old spruce tree, and El Cuatro, brewed with caramel malts and aged for a year in brandy barrels. Last year’s Be Still, a dedication to his mom, was a carbonation-free wildfermented ale aged in pinot noir barrels. Tasting room coming soon.

Named after the owner’s son, Atlas Cider Company ferments its cider with fresh-pressed apples from Northwest farmers, a blend of Cripps pink, McIntosh, honey crisp, and Granny Smith apples. The result is a crisp, refreshing, not overly sweet balance of subtle apple flavor with a gentle fizz; it has the refreshing drinkability of a beer and the complexity of a fine wine. Hard Pomegranate-Cherry Cider is a sweet but tart lightly carbonated sipper. A new tasting room recently opened on Industrial Way.

Although Dean Wise has been home-brewing since the early ’90s, his beer remains somewhat elusive. But it is a welcome sight at farmers’ markets and Newport Avenue Market.

Mere blocks away from the hustle and bustle of the downtown core, with a view of the Deschutes River, Bend Brewing Company is a solid spot for post-work pints and nachos. All the perks of a dive bar, only light, clean, and with wellcrafted pub fare. Salmonberry Sour was a gold-medal winner at the Great American Beer Festival; an approachable beer that proves that BBC is still Bend’s go-to brewpub for sour ales.

With an aesthetic that could just as easily market a ’70s metal band, Boneyard Beer is tried and true, bold and sturdy with its batches. The RPM IPA is certainly the best known, and available on tap throughout the city; bold but balanced, strong but not overpowering with hops. A no-nonsense solid beer. Boneyard’s seasonals step even more boldly forward, with a winter favorite, Suge Knite Imperial Stout, and a great summer entry, Bone Light India Session Ale.

What began as a home operation—literally, brewed in a 400 square foot attachment to his house—is a step closer to the big leagues with a tasting room in north Bend. What used to be limited distributions of the well-received Bull Trout Stout at a few select sights in town (like Wubba’s BBQ) now has some breathing room.

Named after the collective bodies of stunning and cold water in our mountains, Cascade Lakes Brewery is more than 20 years old, and currently brews ten beers—their longtime popular Blond Bombshell, a refreshing Cyclops IPA, and the unique 20” Brown, one of the few local brown ales, with toasted malt and hop flavors. Their labels are classic, with a Marilyn Monroe on the Blond Bombshell and the IRA featuring Bend’s famous Flaming Chicken—or Rising Phoenix—roundabout.

Set on a small hill, and facing the western horizon and mountain range, the Crux brewpub is reason enough for many people to move to Bend. It is as if Encyclopedia Brown grew up, opened a brewery, but kept his clubhouse; the cool kids’ hangout. Happy hour floats with the changes in season, running from 30 minutes before sunset to 30 minutes afterwards. The most lumbersexual of the breweries, with bold, friendly, and varied beers to match; while Off Leash is a refreshing session ale, the Doublecross is a no-nonsense dark Belgian.

The lynchpin. While Deschutes has followed its Black Butte Porter into national prominence—and become the 12thlargest brewery in the country—it has managed to never outgrow its britches. While the downtown brew-pub can be a bit dusky, it is the place to go where everyone knows your name—and even if you’re new in town or visiting, there is a familiar embrace in the air. They offer many of the beers that have made them world-famous, but head brewer Brian Faivre also ventures out with spunky seasonals like Red Chair NWPA. Mirror Pond is a textbook representation of American pale ale, and The Abyss, offered annually since 2006, is an intensely flavorful Russian imperial stout; with blackstrap molasses, brewer’s licorice from Italy, vanilla beans and cherry bark all popping up in the ingredients; it is a deeply engaging drink. Their connection to community remains strong, with an annual artist represented on their popular Winter Jubelale bottles.

With the addition of a third cidery, Bend now has a bundle, if not a bushel. In the building formerly occupied by the now-defunct Nectar of the Gods meadery, Far Afield kicked off operations in 2014 with Valiant, a European-style cider, a tad dryer than the norm for U.S. outfits, and Temptation, a spicier, honey-infused kicker. Both are made with apples from Yakima orchards, and both offer a very elegant, almost wine-like tasting experience.

A fun-spirited and lively brewpub with a beer garden, GoodLife is like the team captain on the varsity squad—good humored and a high-level team player. It also hosts a Winter Beer Festival, encouraging all the regional breweries to contribute their best (like a Puffy Coat Porter) or most-yuletide-spirited blend, like Riverbend’s Winter Mint Stout. More standard is their Dry Hop Pale Ale, and they also are leading the way with canning beer, as a means to prove that sustainability and quality can be in sync.

Oblivion is steadily growing, picking up loyal fans and opening a new taproom on Galveston Avenue. Head Brewer Darin Butschy reportedly tries to “stay true to the Reinheitsgebot purity law,” which translates to sticking to the basic: water, barley and hops. Flavor translation? Clear and pure. Chilling on the patio, under a clear night sky Polar Star Pale is crisp and refreshing. Snowblivion is a robust dark ale, which undertows of roasted barley and pleasing hops. Their flagship beer is Backside IPA, and like many local beers draws its inspiration from local landmarks; that is, explains co-owner Meg Butschy, “straw in color, and named after the backside of Mt. Bachelor, it boasts five different varieties of whole-flower NW hops. It will send you to the summit & down the backside!”

As much a sports bar as a brewery, Riverbend is a great way to double down. Clean and friendly, with modest modern décor (concrete flooring, gas-fire pits on the patio) the beers here are crafted on-site. Their beers all shoot straight and true: a coffee-flavored stout, a crisp, hop-heavy IPA, an easy-drinking blonde, and an approachable red.

With brews available at growler fill stations, this father-son team tenaciously have kept homebrewing and distributing in the region for more than a decade. Cool off in the summertime with Mustang Pale Ale, a moderately hopped, amarillo and cascade hop ale.

The fourth oldest brewery in Bend, this downhome brewpub is the closest to a college town pub, hosting sometime rowdy bands and occasional homebrew competitions. Its beer have been consistently strong and occasionally playful and experimental over its near decade-plus existence.

One of the more recent additions to the Central Oregon brewing scene, this Redmond brewery is a great spot to cool off rope burn with Smith Rock Brewing Porter.

Sunriver Brewing is a shining example of the new generation of brewers who have come of age with studied mentorship and formal training. Head brewer Brett Thomas is a 2010 Falconer Foundation scholarship recipient and a 2011 graduate of the American Brewers Guild with a degree in Intensive Brewing Science and Engineering. He is a very technical brewer, priding himself on making high quality and well balanced award winning beers, like the perky Vicious Mosquito IPA and a solid Shred Head Winter Ale.

Since its founding in 2008, Three Creeks Brewing Company has produced solid beer and pub food from its barnlike building on the outskirts of Sisters, but has struggled to keep up with demand for its Hoodoo Voodoo IPA, Raptor Rye and FivePine Chocolate Porter. With a new 30-barrel production system on-line in early 2015 and head brewer Zach Beckwith, Three Creeks is stepping up its game and also launching the new “Desperado” series of seasonal bottle releases, with blends like Bulletproof Coffee Stout, an 8.0% ABV stout with heavy malt flavor and fairly intense coffee on the nose and palate. And look for a strong ale and imperial IPA coming later in 2015. In the summertime, highly recommended the clean Cone Lick’r Fresh Hop Pale Ale.

Debuting in May 2014, Wild Ride proves Bend doesn’t have a monopoly on great beer and cool atmosphere in Central Oregon, with a spacious open-air drinking spot served by several food carts parked in their lot. Our beer reviewer Kevin Gifford gives high marks to their Hopperhead, calling it a “piney, crushable IPA.” Also notable are their labels, some of the best in the business, with playful but serious graphic art, like a bull riding cowboy on their Mount Up Maple Brown and a Mad Men styled label for their Fly.P.A.

Since opening just a few year ago, Worthy has provided reliable pours like their IPA and a Pale Ale—and their fantastic wood-fire pizzas and gorgeous, hop-vined summertime patio rightfully make this a destination spot. This past year Worthy Brewing has begun to reach its full potential with its brewing capacity and innovations. Our beer reviewer Kevin Gifford picked Worthy’s Smoked Wheat Everyday as one of his favorite new beers of 2014, “a Grodziskie-style ale that mixed wheat flavor with attractive smokiness.” Gifford also remarks that “East Side Pale Ale has the pleasant contradiction of a dry finish, but lingering caramel-malt flavor. This is a crowd pleaser pale ale.”

The McMenamin brothers’ contribution to Oregon cannot be overstated. What started as a simple brewpub has grown to an empire that deliver a lifestyle— and has renovated dozens of iconic buildings throughout the Northwest. Each is immensely familiar with its mosaic pictures, painted murals, and standard Hammerhead and Ruby beers, although each “outpost” also flexes its own personality within those guidelines. In Bend, the Old St Francis School is casual and comfortable, and local brewer Michael “Curly” White is as approachable and friendly as they come—and that personality is reflected in his beers— consistent and fun. “It wouldn’t be a McMenamins without Hammerhead, Ruby, and Terminator,” he says. But adds, “I tend to go malty in the winter. Doppelbocks, brown ales, and anything with a full body.” In summertime, White often switches to “something mellow with a crisp flavor.”
