1. Coat a large sauté pan with oil, and preheat the pan over medium-high heat. Add onion and bell pepper and sauté for 5 minutes. 2. Add garlic (or garlic powder) and red pepper flakes and sauté for 1 minute, stirring constantly. 3. Season chicken breasts with salt and pepper. Add chicken breasts to the pan and cook for 4 minutes on each side. 4. Add vinegar and tomatoes, and bring liquids to a boil. Reduce the heat to medium-low, and simmer uncovered for 25 minutes, stirring occasionally. Serve with quinoa and sautéed greens.

BALSAMIC BASICS

The Rolls-Royce of balsamic vinegar, Aceto Balsamico Tradizionale, is aged a minimum of 12 years and is too thick and pricey for everyday use. Instead look for balsamic made from red wine vinegar and grape must or Mosto d’Uva. Avoid bottles that include sugar and caramel coloring.

THE SUPER 8

Chicken breast: low-fat protein Tomatoes: cancer-fighting lycopene Peppers: fiber, vitamin C Onions, garlic: antioxidants Vinegar: blood sugar regulator Greens: vitamin C, iron and folic acid Quinoa: protein, heart-healthy magnesium

the new Touch3. Hurry, sale ends 1/11/15.

Introducing the easy and affordable way to call, text and email.

Jean Chatzky, Todayy’s Financial Editor, shares three ways to hike your ďŹ nancial savvy—and security—this year.

Simple meets smart with the GreatCallŽ Touch3, the new smartphone from the creators of the original, easy-to-use Jitterbug.Ž And now during our 25% Off Sale at Rite Aid and Sears, there’s never been a better time to buy a Touch3.

1. Become a Secret Saver

Have 2 percent of your paycheck— the amount studies show that people can cut spending without noticing—automatically transferred into a savings account. Then, ask the bank to unlink your savings account from your debit card so you can’t see your savings balance when you use an ATM. Instead, go online once a month to ďŹ nd out how much cash you’ve accumulated.

EASY Now you can talk, text, email, download apps and browse the Internet with ease. Unlike other smartphones that are complicated with tiny icons and multiple screens, the Touch3 is easy to use right from the moment you turn it on. Everything you want to do, from texting to taking photos, is organized in a single list on one screen with large, legible letters. This SIMPLIl ED APPROACH TAKES ALL THE GUESSWORK OUT OF USING A SMARTPHONE AND PUTS EVERYTHING RIGHT AT YOUR l NGERTIPS SMART Built by Samsung, the Touch3 has an ultra-modern look and has been specially designed with GreatCall’s signature simplicity. The 4-inch display and full-size on-screen keyboard make typing effortless, while the built-in camera lets you capture and share photos anywhere. The Touch3 comes preloaded with GreatCall’s award-winning medical alert apps, including 5StarŽ and Urgent Care, so you can get the help you need wherever, whenever you need it.

2. Check Your Spending

Use sites such as Mint.com m to help you categorize spending. “Once you know where your money is going, then you can start to make changes,â€? Chatzky says. For example, people are typically surprised to see how much they spend on eating at restaurants or on takeout. Make small spending cuts ďŹ rst, she suggests, and examine payments that are automatically deducted from your checking account, such as cell phone services, health clubs, car payments and subscriptions.“See if by making a series of small changes you can actually bring yourself in line and free yourself up to save more money. Make no mistake: The goal of a budget is to enable yourself to save more money.â€?

3. ReďŹ nance

Since interest rates are so low, consider reďŹ nancing home, car and student loans and transferring credit-card debt to a zero-interest credit card. “A lot of lenders are willing to reďŹ nance private student loans,â€? she says.

AFFORDABLE Other smartphones require excessive plans that make you pay for data you don’t need. Starting at just $249 per month, GreatCall provides a variety of data plans so you’re able to add the one that works best for you. Compared to other cell phone companies, you could save over $300 per year, making the Touch3 phone plans the most affordable on the market.

ALROKER Weatherman

Whether it’s running a marathon, losing weight, reporting from the eye of a hurricane or setting a world record in November for the longest uninterrupted weather report (34 hours), popular weatherman Al Roker, 60, is known for tackling new challenges with enthusiasm.

DO: Feed Your Passions “The importance is to find things that feed off of your passions and the things you really love and enjoy,” says the father of three. “Then it isn’t really a challenge as much as it is an extension of what you love to do. I am not a big believer in reinventing the wheel.”

DON’T: Sweat the Small Stuff No matter the challenge, Roker advises people to go easy on themselves, because temporary setbacks will likely come. “Give yourself the permission to be human,” he says. “Things are going to happen. You aren’t going to achieve it all at once. Take things one day at a time. If something happens, you know what? Stuff happens. Don’t beat yourself up. Don’t give up. Get back on it.”

Slim Strategies

Al Roker has been very public about his battle with his weight, which reached 340 lbs. before he underwent gastric bypass surgery in 2002 and lost 150 lbs. His advice for those trying to lose weight? » Don’t go to extremes. » Look ahead. Gastric bypass is the means to get the weight off—not the end. “Once you lose it, you have to put the work in,” he says. » Remove temptation. “When you go out to dinner, have them bring out half of what you would eat. Put the other half in a doggy bag and give it to a companion or someone on the street who needs it.” » Think small. “At home, we got smaller plates so we can’t put as much food on the plate.” #startTODAY Join TODAY’s diet, fitness, lifestyle and finance experts as they share tips all month long for helping you start your new year off on the right foot. EASY WAYS TO EAT HEALTHIER IN 2015 Nutritionist Joy Bauer, founder of Nourish Snacks (nourish.com), wants healthier eating to be a cinch. Her shortcuts:

1. COOK AHEAD When hectic schedules make preparing home-cooked meals seem daunting, Bauer doubles or quadruples the recipes on the nights she cooks so she can portion out the leftovers and freeze them. “If you start to do this, you will have a stockpile of delicious homemade family-friendly dinners in the freezer,” she says.

2. DEVELOP 5 HEALTHY GO-TO MEALS Come up with five nobrainer recipes that you can make in 15-20 minutes, like her Balsamic Chicken recipe (see pg. 22). Pizza with wholegrain crust, frittatas with vegetables and burgers made with lean ground turkey meat are other good choices.

3. SNACK SMARTER “We have a big problem with snacking right now. We eat way too many snacks with empty calories,” she says. An easy way to control snacking is to buy individual portions of snacks pre-packaged with calorie counts (preferably less than 200 calories per serving).

NATALIEMORALES Co-host and News Anchor

Although her day begins earlier than most, Morales, 42, says her jam-packed schedule is no different than those of the millions of working moms who are just trying to manage every day.

DO: Take Time for Yourself “In order to be the best parent, the best wife, the best person I can be, I know I need time for myself,” says the mother of two. “I need at least 30-45 minutes of some kind of exercise a day. It just gives me peace of mind. I schedule it in.” On the days that don’t allow for trips to the gym, she tries to take a walk, even if it is to and from the car, or a stroll with the dog at night. “I always make a point of doing it because I know for me it is more therapy than anything else. Being able to get out and go for a run or take a long walk,” says Morales, who completed the Boston Marathon in 2014, “I need that.”

DON’T: Be So Hard on Yourself “I would encourage people to cut themselves some slack,” she says. “Especially women who are moms, whether you work or stay at home, we tend to overtask ourselves, and then there is this guilt of feeling that we have to be able to do it all. Accept the fact right now that you can’t do it all or have it all. You just have to be happy living each day to your best.”

ROKER INSET BY JEFF SCHEAR/GETTY

//// RESOLUTIONS 2015 /////////////

Jenna Wolfe Fitness Correspondent, is the first to admit that New Year’s health resolutions can be overwhelming. “Start slow, embrace the journey and enjoy the tiny milestones,” she says. Try these little changes to make a big difference in your well-being:

Start the Day with H2O

Drink 20 sips of roomtemperature water before getting out of bed each morning. “That wakes up your body and starts working your metabolism,” Wolfe says.

Set a Move Alarm

If you sit a lot during the day, set an alarm to go off every half hour. “Get up and walk somewhere,” Wolfe says. “Get water, say hi to someone. Drop 20 paperclips on the floor and squat down 20 times to pick them up. By the end of the day, you will have burned so

Set a Step Go

Establish a goal of how many steps you’d like to take daily, and buy a cheap pedometer to make sure you accomplish it, she says. “Try to walk 5,000 steps a day. If you work out, 10,000 is a good number, and if you work out a ton, 15,000. At the end of the day, if you are 2,000 short, tell yourself you have to walk those steps.”

See our pull-and-save special section for Wolfe’s simple strength-building workout routine.

SAVANNAH MATTLAUER

GUTHRIE

Co-host

Guthrie, 43, is known for her sunny disposition, so it’s no surprise that she’s thankful for the year she just had—including her marriage to communications strategist Michael Feldman and the birth of their first child, Vale. Here are her resolutions for a bright new year.

DO: Practice Gratitude “The real challenge is when you are disappointed or heartbroken or things haven’t turned out the way you wished they would,” Guthrie says. “That is the time to practice gratitude, too. So no matter what the circumstances, on a daily basis I try to take a deep breath and be thankful for all that I have. All of us who are blessed to live in this country have an abundance of blessings. Making a concerted effort to count your blessings every day is the absolute key to happiness.”

DON’T: Lose Sight of What’s Important Guthrie admits that it’s easy to get caught up in a stressful moment and lose perspective. “We need the will to look up, look out and look around for all we have to be thankful for and share what we have.”

YOUR SECRET WEAPON FOR A CALMER 2015 Want to find more calm in your life—and walk out the door feeling great? Today Style Editor Bobbie Thomas says it’s as simple as organizing your closet. “It’s cathartic,” she says. “Organizing your closet will ultimately help you take control over the way you look and feel.” Try her no-fail three-step plan: 1. Do the Yes-NoMaybe Tackle one closet or drawer at a time, and decide in six seconds if each piece is a yes (keep it), no (bag it up to give away) or maybe (gives you pause). Now, as for those maybes...

2. Be Prepared to “Break Up” When you have time, take out your maybe pile. “You may revisit that old flame and wonder why you wanted to break up,” Thomas says. Or, you may be ready to move on.

3. Weekend Fitting Do a one-hour fitting for yourself on Saturday or Sunday morning. Compile five outfits, one for each day of the week—to help make your workday mornings less stressful.

Co-host

With Matt Lauer’s schedule, is it any wonder that many of his 2015 resolutions are around quality time with family?

DO: Enjoy Today “I have three kids, and sometimes you find yourself looking toward events that are coming up a month or three months down the road instead of stopping and enjoying today,” Lauer says. “So, over the last few years, I’ve tried to say, ‘I’m going to take more time, I’m going to take a deep breath, I’m going to do nothing at points during the day or just sit down with the kids and play a game.’ There have been so many more nice moments because I try not to get ahead of myself anymore.” Lauer will also try to be more present at work: “On the Today show, we get to do so many incredible things. It goes by in such a blur. So sometimes now I’ll force myself to stop and kind of pivot around and take it all in. It helps me remember what’s going on in my life.”

DON’T: Postpone Adventure “I love traveling and taking my kids to new places, challenging them and opening their eyes to a different location or culture,” Lauer says. “I want to take my kids to Machu Picchu and Easter Island, two places I went to on the ‘Where in the World is Matt Lauer’ trips. I want the kids to remember adventurous vacations.”

TOO MANY EMAILS? TRY THIS Many of us spend our mornings reacting to other people or outside demands, much of it sent by email. “By the time you stop to focus on yourself, you get five minutes out of every hour to do what you want to do,” Thomas says. Here’s her email-management solution: Don’t respond to emails for the first 45 minutes of your workday. “I make sure in that 45 minutes that I am focused on the things that are most important to me,” she says. Then divide email into categories, labeling those that are both time-sensitive and urgent, those that are just timesensitive, and those that are urgent. “That way I make sure my priorities are in the right order.”

CONCENTRATED MOUNTAIN CLIMBERS

Begin in traditional push-up position with hands on floor and legs extended, feet on floor. Bring your right knee in toward your chest without resting your foot on the floor; then return it to the starting position. Repeat with your left foot. Continue alternating the feet as fast as you safely can. (To make this more challenging, rest your hands on a medicine ball while doing it.) Aim for 20 on each side.

PLANK QUITTING SMOKING

Lie on the floor on your stomach, legs straight out. Come up and rest your weight on your forearms, elbows bent at 90 degrees. Keep your spine straight—do not let your back sag or your rear pop up in the air—to engage your core. Try holding the pose for 20 seconds at first, and work your way up to one minute.

Treadmill Tips Jenna Wolfe’s advice for ramping up your workout on the machine we love to hate: 1. Warm up. “Start walking for five minutes with no incline,” she says. “It should be a brisk walk, and you should be able to carry on a conversation.” 2. Climb. “Every minute, increase the incline by one degree, until you can’t get through a whole minute. Then go back down, one degree every minute,” Wolfe suggests. “Now you’ve worked all three parts of your legs.” 3. Improvise. To beat boredom, try walking backward for one minute, then forward for two minutes, then backward for one (put the treadmill on “pause” while you switch directions).

ON YOUR HEALTH IN THE NEW YEAR

Walgreens is here to help, whether you’re setting new wellness goals or just trying to get back into a healthier routine.

ASSISTED PUSH-UP Start on your hands and knees with your arms slightly wider than shoulder width. Slowly lower your chest a few inches (as low as you are comfortable), then extend your arms to return to starting position, keeping your body in a straight line from your neck to your knees (don’t allow hips to sag). That’s one rep. Aim for 5-10 and increase that amount as you get stronger.

new fitness moves they want to try and healthier suppers they plan to make, to a life that’s less reactive and more filled with gratitude. “I like the beginning of a new year because I like a new beginning,” says Today coanchor Savannah Guthrie. “I

like the chance to reset and ask myself those big-picture questions: How am I spending my time? Am I seeing my family enough? Am I being a good enough friend?” Weatherman Al Roker agrees, “I am a big believer in trying to get better from

What does the color of the yolk indicate about the nutrition in the egg? —K.S., Akron, Ohio

Nothing at all. The color of the yolk comes from substances called carotenoids, and they depend on the diet of the hen. Brighter yolks have no more nutrients (nor indicate more nutrition in the egg whites) than paler yolks. But consumers love colorful yolks, so egg farmers make sure to give their hens plenty of yelloworange pigmented plants, such as marigold petals, and add supplemental carotenoids to their feed. (A colorless diet of, say, white cornmeal, produces a lighter yolk.) And, by the way, brown eggs are no more nutritious than white eggs. intellectual and entertainment value. Listening to an audiobook doesn’t benefit your brainpower, but it does provide entertainment, which can’t be discounted. This is no different from many movies and TV shows, whether they’re based on novels, original dramas, sitcoms, etc. For nonfiction, reading the book has intellectual and educational value. Listening to an audiobook has only the latter, but it may be more interesting. Consider reading a lecture versus listening to it. Yes, you can re-read for better comprehension, but you’d probably rather listen to the professor. Send questions to marilyn@ parade.com ®

PARADE: What’s your perfect Sunday? Sunday is the family day in our lives. Sometimes I’ll get the kids who’ve decided to get up early and we’ll go for breakfast down at this great little diner in our area. But there are two things that never change: We always gather around the kitchen table for family lunch and we always have family dinner. Our kids love pasta Bolognese. It’s our time to be solely together. There’s no TV on in the background, nothing like that. We really dive into family. It’s our way of putting an exclamation point on the weekend and setting up the week. It’s wonderful.

What other family activities do you do on the weekend? A regular gathering in our household is family movie night. We have three kids ranging in age from 8-13, so the hardest thing is finding a movie they’re all interested in. We struggle a little bit because the 8-year-old has more juvenile taste and the 13-year-old has more adult taste (within reason!) but we do it. Last week we watched The Boxtrolls. You talk for a living. When the weekend comes, do you tend not to want to talk? I do unplug a little bit. I’m not one of these people who keeps a cell phone in my hand constantly. I check it periodically but I know that if something big happens they will find me! I don’t really do social media on the weekend and I try not to spend much time logged into the computer. I don’t want my kids to remember me as the guy who always had his nose buried in the computer or had a cell phone in his hand.

Are you able to sleep late on Sunday mornings? No, I wish. It’s been so long that I’ve been waking up at 4:10 a.m. that even on the weekends my eyes open by 5 a.m. I often get less sleep on the weekends than

I do on the weekdays because if I go out to dinner with [wife] Annette or we stay up doing things with the kids, I go to bed a little later. Do you think that will ever change? I hope so! What was your most memorable recent interview? My extensive interview in December with Janay and Ray Rice (the NFL player charged with assaulting his then-fiancée in an Atlantic City elevator in early 2014), which was obviously a very difficult subject. A lot of people question whether the assault was an isolated incident or something that had happened before. My job was to ask the right questions and let people decide for themselves. How do you prepare for an interview that you know will be

challenging or uncomfortable? I don’t think you prepare any differently. You do the basic research, then the most important thing is to listen. You don’t have a predetermined direction that you think the interview is going to go. You ask questions, listen and let the interview kind of travel organically. I ask follow-up questions based on my own curiosity. Is there an interview you’re hoping to get this year? It’s always whoever is in the headlines. The minute you’re done with today you’re always looking ahead to the next one. Monday morning comes around early and often, especially for you. Does that make Sundays kind of bittersweet? That’s why the events of Sunday are so important. —M.B. Roberts

oing into his 18th year as co-anchor of the Today show, a job he describes as “the best gig in broadcasting,” Matt Lauer, 57, has interviewed nearly every president, movie star and key newsmaker you can name. Along with his daily responsibilities with the long-running morning news show, Lauer also pulls double duty hosting high-profile events from the Olympics to the Macy’s Thanksgiving Day Parade. With all of that on his plate, we were curious what Lauer does when Sunday rolls around.

HARVARD SCIENTISTS DISCOVER HOW TO “Switch On” LONGEVITY GENE!

America’s #1 Integrative Cardiologist® Recommends

“Take Two and Call Me When You’re 100!” Doctor’s “Little Red Pill” naturally improves blood pressure, cholesterol, energy and brain health; users report results in just weeks!

Are you suddenly “feeling your age” and struggling to maintain healthy blood pressure, cholesterol levels, and relief from aches and pains? Do you experience a lack of energy throughout the day and have a hard time focusing? If you said yes to one or all of these, then there’s good news. Dr. Stephen Sinatra says it may finally be possible to enjoy healthy aging, even up to age 100 by taking 2 small pills a day. Read on... Dr. Sinatra, a cardiologist for more than 30 years, and best selling health author, was famous for his heart-healthy vitamin cocktail called Omega Q Plus—the “little red pill”. It kept his patients healthy for decades. Then he added Resveratrol to his tried-and-true formula...why? “By adding this nutrient to Omega Q Plus, I believe we have created the single greatest anti-aging vitamin ever,” he claims. Switch “On” Your Longevity Gene Harvard scientists have tested thousands of nutrients to try and activate the antiaging process. It wasn’t until they tested resveratrol (found in red grapes) that they saw the longevity gene light up like a Christmas tree. “I spent 12 months reviewing all the research studies. This nutrient not only stimulates the longevity gene but it also works inside your arteries, prevents cholesterol oxidation, improves insulin sensi-

tivity, helps keep brain cells younger, and boosts blood flow. How could I NOT add it to my formula?” The result is Omega Q Plus Resveratrol. Doctor’s 5-in-1 Formula One of the key benefits of Omega Q Plus Resveratrol is that it combines the purest omega-3, CoQ10, and resveratrol along with L-Carnitine and a full complex of B vitamins. These five nutrients are at the top of the list for most anti-aging doctors recommending natural nutrition for a healthy heart and body. Better Blood Flow, Cholesterol & Sugar Levels Numerous studies confirm resveratrol is a potent antioxidant that inhibits “sticky platelets” inside the arteries while preventing bad cholesterol from oxidizing (rusting) in the bloodstream. Additionally, it helps improve insulin sensitivity to help keep blood sugar levels steady. “I take it myself because it is 8 times better for healthy blood pressure,” says Dr. Sinatra. German Study Confirms Improvement In Total Body Circulation Nitric oxide is the gas naturally produced by the body that keeps arteries wide and flexible for maximum blood flow to the whole body. According to a study from Johannes Guttenburg University in Germany, a sample of cells that line the arteries—known as endothelial cells—started producing more nitric oxide in as little as

24 hours when exposed to resveratrol. That means better circulation throughout your entire body in as little as 24 hours! Dr. Sinatra’s formula has a professional level dose of resveratrol to enhance blood vessel health, blood pressure, and blood flow. And it’s in the trans resveratrol form believed to be superbioavailable. Noticeable Results in Just Weeks One satisfied customer reports, “My husband’s blood tests came back perfect. Within 2 weeks I noticed improvements. I’m walking better and feeling more healthy.”* “I was taking all of these ingredients separately...then I found them all together in Omega Q Plus Resveratrol! I love the ease. My blood pressure is good, joint movement easy and free, and I feel great,” confirms Mr. Sliz*. Say Goodbye to Dozens of Pills The “Little Red Pill” saves you hundreds of dollars a year by combining these nutrients into one formula and comes with a 90-day guarantee so you can experience noticeable results worry free. Thousands call monthly to order more. Florence agrees, “I have more energy and stamina. I walk further. I take 2 capsules and notice a big difference.”* More Energy Equals Better Health Omega Q Plus Resveratrol is a heart health formula but you may notice the rapid increase in energy first. This is because the Hydro Q-Sorb® form of CoQ10 passes through the cellular membranes and feeds your mitrochondria— the fundamental energy furnace of life. Within days, this CoQ10 could double or even triple your energy levels! “It’s Like Pouring Lighter Fluid on a Campfire” Dr. Sinatra compares the effects of CoQ10 on cells by saying, “your mitochondria instantly ignite and your energy levels soar.” “By far the best supplement I have ever taken—helps everything—circulation, physical energy, mental energy and brain activity...” Mr. Billet*

Dr. Sinatra weighs in, “With Omega Q Plus Resveratrol you are getting every nutrient you need to immediately fix your energy levels and make sure that your next blood test is the best you’ve had in years—guaranteed or it’s free!” Nourishes Healthy, Flexible Joints As part of his anti-aging formula, Dr. Sinatra made sure to include a significant amount of omega-3, high in DHA and EPA for better heart, brain and joint health.

lesterol levels, she also reported a surge of energy “right away—2 or 3 days after taking it...I absolutely love it!”

Dr. Sinatra’s unique formula replaces traditional fish oil with a rare form of omega-3 from calamari (squid) that eliminates the odor and toxins of regular fish oil. This allows you to get the inflammation-reducing effects and joint soothing benefits of omega-3 without the unpleasant “fish burps” of other formulas.

“The results are so profound customers don’t want to run out,” continues Bill Gottlieb.

Georgia resident Rachel W. discovered a happy surprise after trying Omega Q Plus, “I started taking it to help my knees. I was able to move easier... I had more energy and then I noticed better cholesterol...I would recommend this product to anyone.”* “Our minds are much clearer...there’s no burping fish taste...it’s very pure,” says Wil W., OR.* “Dr. Sinatra has created the decade’s most effective anti-aging cocktail,” says clinical nutritionist, Bill Gottlieb.* When asked what improvements she noticed since taking Omega Q Plus, Linda T. said not only had she seen a healthy decrease in her blood pressure and cho-
