You and your wife [makeup artist Arlene Silver, 41] will celebrate one year of marriage next month. How is newlywed life? Unbelievable! It’s one of the smartest moves I ever made. She makes me happy. She’s very mature for her age, and I’m very immature for my age, so it’s just about right!

You’ve performed with a barbershop quartet, the Vantastix, since 2000. What’s that been like? It’s my favorite thing to do. It’s kind of my retirement amusement. ent. t I don’t play golf. I have more fun singing and dancing.

Emeril Throws a

Super Bowl Party (And you’re invited!)

E

meril Lagasse’s long love affair with food and sport began in his hometown of Fall River, Mass., where as a kid he’d follow up a game of baseball in the park with pizza at Marzilli’s Bakery. “They had an old-fashioned coal oven,” recalls the 53-year-old chef, “and their bread and pizza were phenomenal.” During football season, the policy at Lagasse’s home was simple: open door, game on. His mom was head chef and his dad helped with everything from shopping to bartending. “My mom is Portuguese, and food has always been a big part of the household. It was nothing to have 30 to 50 people over watching a game.”

Lagasse’s entertaining impulse runs equally deep, so on Super Bowl Sunday he likes to throw his own special bash. hour ahead of kickoff, “so people are already eating and drinking”—including ladling gumbo stoveside into coffee cups (spoons optional). “I’ll say, ‘Hey, it’s gumbo time—who’s in?’ ” says Lagasse, who traditionally dresses in the black and gold of his beloved Saints, no matter who’s playing. “There will be a show of hands; okay, we need 25 cups.” As a final touch, Lagasse will hoist a glass and call all comers for a huddle. “It’s just a nice way to say, ‘Cheers! ASIAN CHICKEN WINGS SERVES 12

5 lb chicken wings, separated at joints, wing tips reserved for another use 1 Tbsp Emeril’s Original Essence (see cook’s note) 1 tsp salt ½ tsp ground white pepper 2 cups freshly squeezed orange juice 1 cup pineapple juice 1 cup sugar ½ cup soy sauce ½ cup mirin (sweetened rice wine) 2 Tbsp orange zest

2 Tbsp minced garlic 2 Tbsp minced fresh ginger 1 Tbsp sesame oil 2 Tbsp minced green onion ¾ tsp crushed red pepper 2 Tbsp sesame seeds 2 Tbsp chopped fresh cilantro, for garnish 1. Preheat oven to 425°F and line a baking sheet (one with a depth of 1 inch) with aluminum foil.

2. In a large bowl, season wings with Essence, salt,

and pepper, tossing to coat.

Spread wings evenly in a roasting pan. Bake until brown, about 15 minutes.

3. While wings bake, in a large skillet, combine orange juice, pineapple juice, sugar, soy sauce, mirin, orange zest, garlic, ginger, oil, green onion, and red pepper. Bring to a boil over medium-high heat, stirring occasionally, until sugar dissolves and liquid is reduced to a syrup, 7 to 8 minutes. Remove from heat and cover.

4. Remove wings from oven and reduce oven temperature to 350°F. Place wings in a large, heatproof

bowl. Drizzle half the prepared sauce over wings, reserving other half, and toss to coat well. Sprinkle sesame seeds over wings and toss again. Place a wire cooling rack on a large baking sheet lined with aluminum foil and arrange coated wings on top of rack.

Return to oven and bake 20 to 25 minutes more or until cooked through and crispy.

5. Arrange wings on a large serving platter; top with cilantro. Serve

with remaining sauce for dipping.

Cook’s note: If you don’t have Emeril’s Original Essence, try this: Combine 2½ Tbsp paprika; 2 Tbsp salt; 2 Tbsp garlic powder; and 1 Tbsp each black pepper, onion powder, cayenne pepper, dried leaf oregano, and dried thyme.

Store in an airtight container. Makes about ²∕³ cup.

1. Combine wine, brandy, orange liqueur, orange juice, and sugar in a large pitcher. Stir until sugar dissolves. Add fruit and stir well to combine. Cover and refrigerate until well chilled, about 2 hours.

2. Stir in club soda. Serve sangria in large wineglasses, over ice if desired.

1 (6-lb) roasting chicken or 2 (3-lb) chickens 8 cups water 2 medium yellow onions, quartered 2 ribs celery, each cut into 6 pieces 2 bay leaves 1 Tbsp plus 1½ tsp salt 1½ tsp cayenne pepper 1½ cups vegetable oil 1½ cups bleached allpurpose flour 2 cups chopped yellow onion 1 cup chopped green bell pepper 1 cup chopped celery ½ lb andouille or other smoked sausage, finely chopped, plus 1 lb smoked sausage, cut crosswise into ¼-inch-thick slices 2 Tbsp chopped green onion or scallion (green

parts only) 2 Tbsp chopped fresh parsley leaves Cooked rice (optional) 1. In a large, heavy pot, combine chicken, water, onions, celery pieces, bay leaves, 1 Tbsp salt, and 1 tsp cayenne. Bring to a boil over high heat, then reduce to medium and cook, partly covered, until chicken is tender, about 2 hours. Remove chicken.

Strain and reserve broth.

2. In a large, heavy pot or Dutch oven over medium heat, combine oil and flour. Stirring slowly and constantly, cook over medium heat to make a dark brown roux, the color of chocolate, 20 to 25 min-

utes. Add chopped onion, bell pepper, celery, and sausage. Cook, stirring, until vegetables are very soft, 8 to 10 minutes. Add reserved broth and stir until roux mixture and broth are well combined.

Bring to a boil, then reduce heat to mediumlow and cook, uncovered and stirring occasionally, for 1½ hours.

3. Meanwhile, remove skin from chicken and meat from bones, discarding skin and bones. Coarsely chop chicken. Add chicken and sliced sausage to gumbo. Cook for 15 minutes. Remove from heat and let sit for 5 minutes before skimming off fat.

Season with remaining salt and pepper. Stir in green onion and parsley.

Top with rice, if desired.

vinaigrette. On bottom half of each loaf, evenly layer ¼ of the provolone, followed by ¼ of the mortadella, ¼ of the spicy ham, and ¼ of the salami. Top each with 2 tomato slices and 3 onion slices. Divide cherry peppers among sandwiches. Stir vinaigrette and generously drizzle over onion and tomato.

2. In a small bowl, toss torn lettuce with some of remaining vinaigrette.

Divide lettuce among sandwiches, top with other halves of bread, and serve.

Balsamic-Herb Vinaigrette

½ cup extra-virgin olive oil ½ tsp salt ¼ tsp freshly ground black pepper 1. In a small mixing bowl, combine vinegar, basil, oregano, and garlic; whisk well.

2. Continue whisking while drizzling oil in a slow, steady stream. Add salt and pepper and whisk to combine.

3. The vinaigrette may be stored in an airtight container in the refrigerator for up to 1 week.

2 (10-oz) packages fresh spinach, well rinsed, stems trimmed 4 Tbsp unsalted butter 1 cup finely chopped onion 1 Tbsp minced garlic 1 tsp salt ½ tsp freshly ground black pepper ¼ tsp cayenne pepper ¼ cup all-purpose flour 1 cup milk 1 cup heavy cream 2 tsp fresh lemon juice 1 cup (6½ oz) ½-inch cubes Brie cheese, rind removed 1 cup grated Monterey Jack cheese 1 (6½-oz) jar marinated artichoke hearts, drained and chopped 4 strips crisp fried bacon, chopped ¼ cup freshly grated Parmesan + Assorted chips, such as pita, tortilla, and bagel chips, for dipping 1. Preheat oven to 350°F. Lightly grease a 9-inch round ovenproof baking dish and set aside.

2. Bring a medium pot of water to a boil. Add spinach in batches and cook until wilted, 2 to 3 minutes.

Drain and refresh under cold running water. Squeeze to remove excess water. Chop and set aside.

3. Melt butter in a medium pot on medium-high. Add onion and cook, stirring, for 3 minutes. Add garlic, salt, black pepper, and cayenne and cook, stirring, for 1 minute. Add flour and cook, stirring constantly, to make a light roux, about 2 minutes. Add milk and cream in a steady stream and cook, stirring constantly, until thick and creamy, 2 to 3 minutes.

4. Add cooked spinach and lemon juice and stir to incorporate. Add Brie and Monterey Jack, artichoke hearts, and bacon; stir well.

Remove from heat and pour into prepared baking dish. Top with Parmesan and bake until bubbly, about 10 minutes. Remove from oven and serve hot with chips.

A note from a service member sent this author on a journey that taught him one of life’s most important lessons

hortly after 9/11, I got an email from a sailor stationed on a submarine.

He had found one of my novels on the boat and was writing to say thank you for entertaining him.

The note struck me. If a novel could help take a service member’s mind off things, I wanted to send many more books overseas. I called my publisher to see if we could make a donation to the USO.

“Sure,” she replied, and we shipped off 10,000 thrillers. It was so easy, I called another publisher, and another. All in all, the USO delivered 40,000 books to troops.

Fast-forward 11 years: I was on a USO tour with other authors last fall. We planned to visit eight bases in 10 days. About halfway through the trip, we were sharing stories with some soldiers in a briefing room when a dark-haired

When I got home, I decided to track down the sailor from the submarine. I called him and tried to express how his note had touched me, but he seemed quiet, so I asked if he was okay. After a long pause, he told me that he’d lost his mother to breast cancer a few days earlier.

As the blood seeped from my face, I told him that my mother had recently died of breast cancer, too. Right then, I understood the real reason I was talking to him. “I think I’m supposed to give you a message,” I said, my voice cracking. With that, I shared the most helpful piece of advice I’d received in the weeks after my mom passed: Our mothers never leave us. Ever.

I could hear him crying quietly on the other end of the line. More than a decade ago, this man’s note had put me on a path that led me halfway around the world; later, it brought me back to him at the very moment he was in need. Sometimes we feel alone in the universe.

But sometimes it is clear that we are profoundly connected.
