The chef makes a full-bore version of migas with hash brown potatoes and hunks of sausage. Customize the ingredients as you like. TRY THIS AT HOME: In a heavy skillet, cook ¼ cup chopped onion in 3 Tbsp butter over moderate heat, stirring, until onion softens. Whisk together 6 large eggs and ¼ cup milk. Add 1 cup bite-size pieces of unsalted tortilla chips and pour mixture into skillet with onion. Cook, stirring, until eggs begin to set, about 1 minute. Add ½ cup diced tomatoes and cook, stirring, until eggs are set. Remove from skillet and immediately top with ²∕³ cup grated cheese (preferably Monterey Jack or cheddar). Garnish with 1 to 2 Tbsp finely chopped fresh jalapeño pepper, if desired. Add salt and pepper to taste. Serves 2.

You can doll them up with fresh blueberries, the smaller the better. TRY THIS AT HOME: Whisk together 1¼ cup buttermilk and 1 large egg. Gradually whisk in 2 Tbsp melted butter. In a separate bowl, mix ¼ cup yellow cornmeal, ¾ cup all-purpose flour, ½ tsp baking soda, 1 tsp baking powder, 2 tsp sugar, and ½ tsp salt. Pour buttermilk-egg mixture over dry mix and whisk

Stuffed French Toast From THE COTTAGE in La Jolla, Calif.

There is no sunnier way to start the day than with breakfast akfast on the patio of the Cottage, a side-street bungalow café where meals exude the laidback joie de vivre of a village founded by California’s surfing pioneers. Laura Wolfe, who runs the Cottage with her husband, John, calls stuffed French toast “the dish I most look forward to eating in the morning.” Try it once and you’ll understand why. TRY THIS AT HOME: Mix together 1¼ cup sliced fresh strawberries, ½ cup sugar, 1 tsp brandy, and ¼ cup grated orange peel. Let compote sit 30 minutes to allow strawberries to soften. Lightly beat 4 eggs in a medium bowl. Add 2 cups cream, 1 Tbsp brandy, 1 Tbsp brown sugar, and 1 tsp vanilla and beat well. Soak 12 pieces thickly sliced brioche or egg bread in egg mixture. Melt 2 Tbsp butter on a griddle over medium heat and cook each piece of bread for 4 minutes per side. As toast comes off griddle, immediately spread 1 tsp mascarpone cheese and 2 Tbsp compote in middle and fold in half so cheese melts and strawberries warm. Sprinkle with confectioners’ sugar and drizzle with maple syrup. Serves 6.

In a large bowl, work together 4 cups allpurpose flour, 1 cup sugar, 1 cup brown sugar, and 1 cup shortening to form crumbs. Reserve 1 cup of the mixture. In a separate bowl, mix 1 cup molasses, 2 cups hot water, and 2 tsp baking soda. Combine wet and dry mixtures. Pour into prepared baking pan. Sprinkle reserved crumbs on top. Bake 10 minutes. Reduce heat to 350°F and bake 30 to 40 minutes more or until a sharp knife inserted in center comes out clean. Serves 12.

Corned Beef Hash From MCBOB’S in Milwaukee

Although McBob’s is best known for its fine Friday F id fish h fry, f the corner tavern is also a favorite breakfast spot thanks to its superb corned beef hash. Cooked long and slow, the meat is so tender it starts to fall apart when you slice it. For hash, it’s torn into a merry jumble of slices, shreds, and chunks. This recipe calls for just enough potato to create a starchy balance and includes caramelized onion for a sweet note. TRY THIS AT HOME: In a large heavy skillet over medium heat, sauté ½ cup chopped red onion in 1 Tbsp cooking oil until onion begins to soften. Add ½ lb red potatoes, boiled (but not mushy) and cubed. Fry until edges begin to crisp. Add 1 lb cooked corned beef, thickly sliced against the grain and broken into pieces. Toss hash together over medium heat for 2 minutes. Remove to a plate, sprinkle with paprika, and garnish with ¼ cup chopped parsley. Serves 4.

Cheese Grits From HOMINY GRILL in Charleston, S.C.

he hominy miny grill, a

happy café housed in a former barbershop, is all about Dixie food traditions— grits foremost among them. Often grits are watery and boring, but here the dish is served rich and cheesy. Chefowner Robert Stehling says the key is to start with great grits: He buys stone-ground flint corn grits from Boonville Mill (boonvillemill.com), which taste just like the kind his family ate when he was a kid. “They have a warm flavor, like the summer sun,” he says. TRY THIS AT HOME: In a medium saucepan over high heat, bring 4½ cups water to a boil. Whisk in 1 cup stone-ground grits and 1 tsp salt. Reduce heat to low and cook, stirring occasionally, until grits thicken, 35 to 40 minutes. Remove from heat and add ¾ cup grated sharp cheddar cheese, ¼ cup grated Parmesan cheese, 3 Tbsp butter, ½ tsp freshly ground black pepper, and ½ tsp Tabasco sauce. Serves 6.

Ken says the secret to great latkes is to make them thick enough so they’re crunchy on the outside while packed with plenty of creamy potato shreds on the inside. Remember: Crispness requires the oil to be very hot—just this side of smoking. TRY THIS AT HOME: Peel ž lb baking potatoes (russets) and grate medium-coarse. (Yield should be about 2 cups.) Combine potatoes and Âź cup grated onion in a colander, pressing out as much moisture as possible. Stir potato mixture with 2 large eggs, lightly beaten; 1 tsp salt; 8 tsp freshly ground black pepper; 1 Tbsp all-purpose our; and 8 tsp baking powder. Let stand for 5 minutes. In a heavy skillet, melt Âź cup butter over medium-high and add ½ cup vegetable oil or more—enough to total about a Âź-inch layer of fat. Drop potato mixture into skillet in 2-Tbsp portions, using a wooden spoon to slightly atten each one. Don’t make them too thin, and don’t let them touch. Fry for about 2 minutes or until golden brown. Flip and fry 1 minute more. Use a slotted spatula to remove from oil; drain on paper towels. Serves 4.

The Things I’d Carry Few material items are worth holding on to forever. But these five definitely make my list.

F

irst, i want to thank the local firefighters who stood in my hallway and didn’t say, “Ma’am, no one over the age of 4 thinks a carbon monoxide detector chirps like a chickadee when a family’s life is in danger.” Instead, they showed me where to insert the fresh battery and off they went. Later that day, I started to wonder what I’d save if I had to flee the house. Ever ask yourself this: Assuming all sentient beings are safe, what things would you grab on your way out? Here’s my list, in no order of importance.

The Statue of Liberty

Daughter Cait made this out of papier-mâché when she was in second grade. Lady Liberty is sitting down and slumped to the side like a sack of quinoa. When I asked Cait why, she sighed. “She’s tired, Mommy. America is hard work.” It should be noted that, 18 years later, Lady Liberty’s crepe paper torch still burns brightly.

After my parents died, Charlie came to live with me. He has a new job this year. Several times a week, I lift his hat to toss in a note about something good that has happened in our lives. On New Year’s Eve, we’ll read all the notes of small wonders. In the meantime, I look at Charlie’s smile and think of that long-ago beginning for two kids in love.

I, too, was 36 and anxious about my new life as a single mom with a full-time job. “We do what we have to do,” my mother said. “Just like me, you’ll be fine.” Just like her, I was.
