Toss 3 thinly sliced onions with 1 Tbsp olive oil and ½ tsp kosher salt in a roasting pan. In a small bowl, combine 3 Tbsp ground coffee, 3 Tbsp packed dark brown sugar, 1 Tbsp kosher salt, 1½ tsp smoked paprika, ½ tsp garlic powder, ½ tsp cayenne, and a generous pinch of black pepper.

VIETNAMESE COFFEE PUDDING

Place a sieve over a large bowl. Pour 2 tsp sweetened condensed milk into each of five small bowls and set aside.

Combine 2/3 cup sugar, ¼ cup cornstarch, ¼ tsp salt, and 1/3 cup plus 1 Tbsp instant espresso powder in a saucepan (off heat).

Slowly whisk in 2 cups milk and ½ cup heavy cream, then 4 beaten egg yolks. Turn heat to medium and cook, stirring constantly, until mixture just starts to bubble on the edges.

Turn heat to low; cook 30 seconds longer. Pour mixture through sieve, discarding lumps. Whisk in 3 Tbsp unsalted butter, 1 tsp vanilla, and 1 tsp coffee extract until butter melts. Pour pudding into bowls; press plastic wrap onto surface. Refrigerate until set, at least 3 hours. Before serving, top each with 2 tsp sweetened condensed milk. Serves 5.

SALTED CARAMEL IRISH COFFEE

Stir together ½ cup sugar, 2 Tbsp corn syrup, and 2 Tbsp water in a medium saucepan.

Turn heat to medium and cook, stirring, until the mixture bubbles. Stop stirring and let boil until deep amber, 10 to 15 minutes. (Watch carefully.)

Immediately remove from heat; stir in 1 cup hot heavy cream.

(Caramel will bubble up.) Stir briskly until smooth. Stir in 2 Tbsp unsalted butter, 1 tsp vanilla, and ¾ tsp kosher salt.

(Refrigerate up to 3 days.) When ready to serve, brew strong coffee. Place 2 Tbsp caramel sauce into each of 6 mugs. Stir 1½ ounces Irish whiskey into each mug. Pour in coffee, stir to combine, then dollop with whipped cream. Serves 6.

SAUSAGE WITH RED-EYE GRAVY AND BISCUITS

Warm 2 Tbsp olive oil in a large skillet over high heat. Add 1 lb bulk pork breakfast sausage and cook, breaking up chunks, until no longer pink. Transfer to a plate using a slotted spoon.

Reduce heat to medium and add 1 Tbsp olive oil. Sprinkle 2 Tbsp all-purpose flour over oil and cook, stirring constantly, 3 to 5 minutes. Add 1 cup coffee and bring to a simmer over mediumhigh heat. Season with salt and pepper. Reduce heat to low and stir in 2 tsp packed light brown sugar and 1 Tbsp cream. Add sausage to skillet; stir. Serve with biscuits. Serves 4.

ive years ago, Mark Britton’s 79-year-old mother fell, cracking a rib and hitting her head at her vacation house on the Delaware coast —a three-hour drive from his home outside Manhattan. Britton’s then 80-year-old father managed to get her to the hospital, but Britton, who only found out about the fall much later, turned his constant worry of living far from his folks into an idea: a “smart home” for the elderly.

A designer of media rooms, estate lighting, and other home technology systems, Britton, 52, started researching the senior home care field, finding products ranging from GPS-enabled watches and pendants to track the location of loved ones to a device that automatically turns off the stove. There were even electronic pillboxes capable of sending emails or text messages when Mom or Dad forget to take their meds.

In 2011, at age 50, Britton launched TellaBoomer TeleCare Services, a company that assesses the needs of residents and their remote caregivers, then designs and installs a home security system for seniors.

“My goal,” he says, “is to help more seniors age in place by transitioning their home-sweet-homes into home-smart-homes.”

Business has been steady but not spectacular—Britton has been searching for funding—and this entrepreneur admits his age has been somewhat of a hindrance. “Angel investors are used to pumping money into 20-somethings in Silicon Valley and other high-tech sectors. But here I am on the East Coast in Mt. Kisco dealing with 80-somethings. But they’ll eventually come around. There are just too many 50-plus entrepreneurs to ignore.”

W

hile watching his granddaughters’ soccer scrimmage, Jeffrey Nash, 60, spotted a mom helping her baby learn to walk. The father of three and grandfather of five had done this many times himself, but never noticed how awkward it was: the mom bending over and the child stumbling along.

Hence the inspiration for the Juppy Baby Walker, an infant harness with straps that can be held by Mom and Dad. “I had never done anything like this before,” he says. “But this was 2009, during the height of the recession. Companies were either laying off workers or hiring younger, lessexpensive replacements, so I knew I had to do something.”

So far, Nash estimates he’s sold 35,000 Juppys worldwide through his website and wholesaler network. He’s approaching $1 million in total revenue. “To work for a corporation is to be at its mercy,” he says. “When viewed that way, it’s really not a huge risk to start a business.”

t Rock Barbers, guys get more than just a haircut. There’s a green for putting, a guitar for picking, flat-screen TVs for watching the game, and, of course, free beer.

“When guys walk in here, they’re home,” says Anthony Full, 55, who opened the barbershop in 2010.

After graduating from the Academy of Professional Barber-Stylists and the Vermont College of Cosmetology, Full spent 30 years working for and managing various salons. But at midlife, his ambition changed. “I read a quote from Oliver Wendell Holmes that said, ‘Many people die with their music still in them.’ As I got older, I started thinking about what I wanted my legacy to be.”

Full decided to open a classic American barbershop, the kind that was disappearing from towns across the country.

Here’s a quick and easy way to make sure you’re getting the right amount of nutrients in the best portions for optimal blood glucose control: Draw a vertical line down the center of a dinner plate. Squeeze in 15 minutes of aerobics in the morning, then take a 15-minute walk on your lunch break. Or you can lift weights, do lunges, or walk in place during TV commercials.

This represents the largest gain of any age group, including 20- to 34-year-olds, whose share actually shrank from 35 to 26 percent. What’s more, these older Americans, especially those with low debt and a large social network, are 50 percent more likely to start successful businesses than their younger counterparts, even in high-tech industries.

“They have what I call double-E SP,” says William Zinke, 86, president of the Center for Productive Longevity in Boulder, Colo. “They’re miles ahead of younger people when it comes to Experience, Expertise, Seasoned Judgment and Proven Performance.”

“An Entrepreneur Should Never Be a Daredevil” The secret to following your dream is the opposite of what you might think

between taking risk and removing it. And these days, everybody needs to be willing to try. ­Whether you work at a Fortune 500 company, a nonprofit, or a mom-andpop, everybody needs to think and act like an entrepreneur. We all need to be nimble, adaptive, daring—and maybe a little crazy—or risk being left behind.

But how do you take risks without risking it all? In my experience, there are two key steps.

First, you have to give yourself permission to be a contrarian.

Time and again, I’ve seen people who are considering a bold move get stuck at this stage. They keep waiting for someone else to give them permission. That someone doesn’t exist.

The only person who can give you permission to take risk is you.

As one working mom who launched a big idea in a riskaverse company said, “In every company, no matter how traditional, there are entrepreneurial idea people. But ideas are fragile.

They require knowing something is right in your gut.”

Even worse, if you agitate for change, you’re going to get pushback. People are bound to call you crazy, as they did Henry Ford, Estée Lauder, and Sam Walton.

So, embrace it. Become your own best booster. Say, “Crazy is a compliment!”

The second step is more surprising. Once you accept a certain measure of risk, your primary task

is to minimize it. The founder of Liquid Paper, Bette Graham, hatched her crazy idea while watching painters decorate Christmas windows at the bank where she was a secretary. But she worked five more years while selling her potion from her home. When Sara Blakely first started selling her derriere-flattering panty hose, Spanx, she didn’t quit her day job for two years. She later became the youngest self-made woman ever on the Forbes billionaire list.

So what do smart risks look like? Eighty percent of entrepreneurs I’ve mentored said they had saved enough money to support their families for a year. Two-thirds of founders on the 2013 Inc. 500 wagered less than $10,000 on their ideas. Crowdfunding (Kickstarter, etc.) has made this process even easier. IBM launched a platform where employees could pitch projects to one another (instead of their bosses).

Today taking risk is no longer a luxury. If you think your job is safe, think again. The most ­important step is to manage your emotions. To paraphrase golf ­legend Bobby Jones, entrepreneurship is a game played on a five-inch field—the distance ­between your ears.

odrigo Jordan is one of the biggest adventure junkies I know. The ­Chilean-born entrepreneur loves extreme sports, and in 1992 became the first South American to scale Everest.

Like many, Rodrigo dreamed of starting his own firm, in his case an outdoor leadership training company. But the man who takes risks in his personal life was unwilling to risk his future. So he found allies, ran a test program, and kept his teaching job until money came in.

“The common wisdom is all wrong,” Rodrigo told me. “Entrepreneurs don’t like to take risks.

I’m always trying to avoid and minimize them. An entrepreneur should never be a daredevil.”

Maybe the trickiest question for those dreaming of starting something new is, how far to go?

Convention says: Go all in. Mortgage the house. Bet the farm.

McDonald’s founder Ray Kroc shared this sentiment: “If you’re not a risk taker, you should get the hell out of business.” This myth, like much business lore, appeals to a kind of macho bravado. The phrase “bet the farm” comes from poker tables in the Wild West.

Boys will be boys, but entrepreneurs will be savvy. I’ve spent the past 20 years helping dreamers make their dreams come true. Did you ever think about calling the album anything else? It had to be called “1989.” It’s my birth year. I’m in a sense being reborn in a new genre, starting over.

Fame makes it easy to reach millions of fans. But what effect does it have on your close personal relationships?

I never want to complain about the way my life is, because it has exceeded my wildest dreams. But it makes it nearly impossible to have any kind of romantic relationship.

It’s not something I even attempt to do anymore, to be honest. At 24, I’m really happy living my life on only my terms.

Before you were famous, did anyone give you words of encouragement that stayed with you? My parents made me feel like I was special. They always told me I was smart. It wasn’t “You look so pretty today.” It was “Oh, that was such an intelligent thing to say.”

We know you can bake.

What’s something you can’t do? I can’t do a cartwheel and I can’t do a handstand, but I don’t sit around being sad about it. All the things I really want to do, I’ve worked hard to get good at them.
