Christmas There is, as Dorothy so eloquently put it, no place like home. Especially at Christmas, and especially for the five hardworking members of Britain’s most popular boy band. After a year in which they toured the U.K. and Ireland, Australia and New Zealand, and 21 cities in North America; landed a spot at the Olympics closing ceremony; and recorded a new album, the lads of One Direction are looking forward to some downtime with family and friends. “I’ll probably go home to Ireland and do the same thing as every year: drink, eat, and sleep a lot,” says Niall Horan, 19. “Just chill out, become fat. We always go to the pub on Christmas Eve.” “It’s the Christmas dinner,” says Harry Styles, 18, who tackles it with a Jaggeresque swagger. “You go in hard. Then about 7 o’clock, watching a film, you make a turkey sandwich.” Since forming in 2010 for season seven of Britain’s The X Factor (they finished third), One Direction have become a phenomenon worth an estimated $42 million, a figure that may double next year. Their first album, Up All Night, debuted at No. 1 in the U.S., a feat no other Brits—not even the Beatles or the Rolling Stones— ever managed. At September’s MTV Video Music Awards, they won three Moonmen, including Best Pop Video for “What Makes You Beautiful.” “That and doing the Olympics was when I thought, ‘This is bigger than I ever expected it to

be,’ ” says Liam Payne, 19. The band’s second album, Take Me Home, has just been released. Despite their success, the band members retain a refreshing mix of innocence, charm, and cocksureness, ribbing each other as they don winter wear for their PARADE shoot. All have sensibly plowed their newfound wealth into property—for themselves and, in the case of 19-year-old Zayn Malik, for Mum and Dad. “Now that we have a bit of money, it is nice to get gifts for people,” says Zayn, who bought his parents a house in Bradford, England, where he grew up. “Before I was getting and not really giving.” Intense media and fan scrutiny ensures that every new hairstyle or offbeat occurrence (“I lost a shoe in Paris,” says Liam, “and that made world news”) gets maximum exposure, making a trip to the shops difficult. Still, the boys like to splash their cash in person. “It’s nice to go and pick out stuff rather than doing it online,” says Harry. Adds Louis Tomlinson, 20, “I do a bit of both. I prefer to go out, but it’s finding the time and the motivation, because [when] we’ve got time off it’s nice to do nothing.” If it comes to it, there’s always One Direction merchandise to hand out. “My little cousin might get a few dolls,” Zayn says with a laugh. “But I don’t think my mum would be too happy with a doll of me for Christmas.” And what will they get their bandmates? “I don’t think we’ve ever bought each other a Christmas present,” muses Liam. “If it’s somebody’s birthday, I have to arrange the present—always late because I’m a bit lazy. To counter the trend of showrooming, in which consumers browse for gifts in stores only to buy them later from websites, some big-box chains are matching the prices of online rivals. Target, for instance, will meet Amazon.com and others on select prices through Dec. 16; Best Buy will match prices on electronics hardware and appliances from 20 sites between Nov. 27 and Dec. 24. But don’t expect the scene from Miracle on 34th Street: You need to prove (with a printout or smartphone) that there’s a better deal online, and even then, a price reduction is at your salesperson’s discretion. Pie It Forward

At a citywide bake sale this week in Boston, gratitude can be found by the slice By Emily Listfield

J

oanne Chang plans on baking pecan pie for Thanksgiving—actually, make that 75 pecan pies. (And you thought you had holiday stress!) She is one of 150 Boston-area chefs taking part in Pie in the Sky, one of the biggest charity bake sales in the country. How big? Last year, nearly 16,000 pies were sold, raising $550,000 to support Community Servings, a local nonprofit that delivers meals to the critically ill and homebound. “As chefs, we’d love to feed everyone possible,” says Chang (right). “This is a way for us to help those who don’t have as much.” For the past month, more than 600 “sellers,” from schoolkids to

The finished pies will be boxed at the Boston Convention Center on Monday, then trucked to 100 pickup locations

throughout the city. “It’s an incredible way to add meaning to Thanksgiving besides pigging out and watching football,” says Ashmont Grill chef Chris Douglass, who has baked for the sale since it began 20 years ago. Pie in the Sky was the brainchild of David Waters, an early volunteer with Community Servings and now its CEO. “At first the sale involved a ragtag group of people I knew in the business,” says Waters, who worked as a restaurant manager back in the early ’90s. The first year, they sold 1,000 pies. But as chefs around town heard about the effort, more and more wanted to pitch in.

“Everybody needs two things at Thanksgiving,” says Waters. “We need a pie, and we need to express our thanks and pay it forward. The price of one of our pies is $25, which is enough to feed someone in our program for an entire week.”

Over the past 22 years, Community Servings has evolved from a neighborhood program that provided a hot dinner to 30 people with HIV/AIDS into a regional organization delivering medically tailored meals to 1,300 patients in eastern Massachusetts. Many are too sick to cook for themselves, and 95 percent live at or below the poverty line. “A typical client might be a single mom going through breast cancer treatments,” Waters says. “We bring her meals that are customized for her regimen, as well as kid-friendly meals for her family.” Ametha Hollins was introduced to Community Servings when her husband, Freddie, went on dialysis. Volunteers from the organization showed Hollins how to prepare food that met Freddie’s dietary needs. “I got so much from them that I knew I had to give back,” she says. Last Thanksgiving, Hollins joined scores of others as they sorted pies for delivery. “I’d never seen so many pies in my life. When you see a thousand pies at one time, it’s amazing.” This year, she’ll help out again and then go home to celebrate the holiday with her family, giving thanks for all that they have and all that they’ve received (including a no-sugaradded apple pie for Freddie).

Recruit sellers and bakers and choose a local food program or other charity to benefit from the proceeds of the sale.

Have volunteers start taking orders two or three weeks before the holiday, to allow time to buy ingredients.

Tally the orders and assign bakers to each pie type. They should plan to bake the weekend before Thanksgiving.

Designate a convenient pickup location where buyers can come to collect their delicious pies that Monday.

CRUNCH TIME

CARAMEL PEARS In a saucepan, combine 8 cups water, 2 cups sugar, juice of 4 oranges and 1 lemon, and strip of orange zest. Bring to a boil. Peel pears, leaving stems intact.

Simmer in liquid for 20 minutes or until tender. Cool. Drizzle with caramel sauce and sprinkle with chopped almonds.

PEAR UPSIDEDOWN CAKE Pour ½ cup melted butter into a 9-by13-inch cake pan.

Stir in 1 cup brown sugar, then ½ tsp cinnamon. Arrange 2 or 3 pears (cored, peeled, and cut lengthwise into ¼-inch-thick slices) on butter mixture. Prepare 1 (15.25- or 18.25-oz) box yellow cake mix. Pour batter on top of pears.

Bake at 350°F for 35 to 45 minutes or until cake is done. Cool for 10 minutes; invert onto a decorative plate.

PEAR AND ALMOND TART Shape 1 (8-oz) can almond paste into a disk and flatten into

an 8-inch circle. Place in bottom of a 9-inch unbaked pie crust. In a bowl, toss 5 cups peeled, sliced pears, ¼ cup sugar, 2 Tbsp flour, 1 tsp cinnamon, ½ tsp nutmeg, and 2 Tbsp lemon juice. Spoon into crust. Top with a second

crust; brush with beaten egg and sprinkle with 3 Tbsp sliced almonds and 1 Tbsp sugar. Bake at 375°F for 55 minutes or until pears are soft and crust is golden.

Got dessert covered? Then make a sweet fall salad of mixed greens, arugula, or romaine, topped with diced pears, candied walnuts, dried cranberries, and a balsamic vinaigrette.

he first great bookstore in my life wasn’t really a bookstore. Alvord and Smith was located on North Main Street in Gloversville, N.Y., and if memory serves, they referred to themselves as stationers. I don’t recall the place being air-conditioned, but it was always dark and cool inside, even on a sweltering summer day. In addition to a small selection of books, the store sold stationery, diaries, journals, and high-end fountain and ballpointpen sets, as well as drafting and art supplies. The shelves went up and up the walls, and I remember wondering what was in the cardboard boxes beyond my reach. The same things on the shelves below? Other, undreamed-of wonders? stores, but writers? We lose our heads over them. We tell stories about them. We form lifelong attachments to our favorites. We do not hate e-books—well, okay, some of us do—but we owe our careers, at least my generation of writers do, to the great independents, so many of them long gone now. Those that remain gamely continue to fight the good fight, even as customers increasingly treat their stores as showrooms, then go home and surrender to the online retailer’s chilly embrace. They point and click and, without meaning to, undermine the next generation of writers and the one after that. Because it’s independent booksellers who always get the word out (as they did for me). I’m an old fart, of course, more at home with paper and print than touch screens, and yes, I agree with those who argue that in the end it’s more about the message than the medium. But to me bookstores remain places of wonder. Like libraries, they’re the physical manifestation of the world’s longest, most thrilling conversation. The people who work in them will tell you who’s saying what. If you ask, they’ll tell you what Richard Russo’s up to in his new one, but more important, they’ll put in your hand something you just have to read, by someone you’ve never heard of, someone just entering the conversation, who wants to talk to you about things that matter. Smokey reflects on becoming a “modern” bear, why he’ll never need a yacht, and how a little jar of honey can go a long way.

A day fishing in the outdoors, followed by a nap under a shady, towering oak tree, hat over my eyes, no wildfires to worry about. I just got a publicist, and he tells me to make sure that my message doesn’t get lost in today’s climate of media oversaturation. And I really don’t like bees.

Funny story – there’s talk of a “Smokey” movie, so I was in Cannes, taking some meetings during the film festival – 60-foot yachts, parties everywhere, fame and fortune beckoning, and all I could think about was getting back to the outdoors. So there you have it.

I come off as this cuddly, sweet, fuzzy bear – but I have sharp teeth, and big claws – not that I would use them, but if people thought about ending up on the wrong side of them, maybe they’d be less careless in the outdoors. Other than that, I guess I could probably use a new pair of jeans.

Those who really embrace the cause of preventing wildfires – you’ll find them clutching a “Golden Smokey Award.”

Callous disregard for our forests and wildlands. There’s no one I would rather be. But Jack Nicholson comes close. That guy can tell some stories.

A friend of mine gave me this amazing jar of honey from Paris – I only open it once a year on my birthday.

I’d be nothing without my hat.

Spending time in any forest or wildland, anytime, anywhere. Give me some grass beneath my feet, trees above my head and I’m in heaven.

I’m doing that even as we speak. Most people think of me as old school – but I’m catching up with the times. Two years ago, I would have thought the Internet was a way to catch salmon–now I’m working on a MySpace page and a daily blog.

The only lying I do involves hibernation. Despise is a strong word – but when it comes to anyone who is careless with fire, let’s just say you don’t want to see me angry – I’m a Black Bear, not a teddy bear, remember? The amazing wilderness that I am so lucky to call home, followed closely by a “special” lady bear in the Yellowstone area. 60+ years of preventing wildfires, but I’m just getting started.

I always say it’s my fur – but then again, how many bears have a motto? Honesty. Integrity. And a willingness to share food. The men and women who put their lives on the line to prevent the spread of wildfires.

I know it’s ironic – but I love Goldilocks.

Wildfires! Boy, these questions are too easy.
