When you wrote about fiber [Oct. 6, 2013], you described two kinds: non-soluble and water-soluble. You said that water-soluble fiber may dissolve into the canning fluid if the food has been chopped or diced, etc., and that cutting fresh fruits and veggies may cause this fiber to dissolve into the cooking water. veryone knows what happened to the four lads from Liverpool after they appeared on The Ed Sullivan Show on Feb. 9, 1964, in front of a live TV audience of 74 million. But the three days leading up to the historic broadcast were filled with screaming teenagers, cynical American journalists, and genuinely magical moments that changed the Beatles and their fans forever.

Pan Am Flight 101, with the Beatles aboard, touches down, more than 3,000 frantic fans are waiting on the roof of the newly christened John F. Kennedy airport. Michael ­Harris, the longtime CBS press rep for

Filmmakers Albert and David Maysles, commissioned by a British production ­company to shoot a documentary on the band’s visit, are stunned by the bedlam at the airport. “I’d never seen anything like it,” ­Albert says. “Young women were just crazed.” 2:00 p.m. The mop-topped heartthrobs use captivating wit and charm to tame a truly unruly mob—the New York press. Reporter: What about all this talk that you represent some kind of social rebellion? John: It’s a dirty lie. It’s a dirty lie. Reporter: What do you think of Beethoven? Ringo: Great, especially his poems. With their first great performance behind them, the boys and their entourage are whisked in four Cadillac limousines to Manhattan’s swank Plaza hotel. The Maysles brothers tag along. “John was the quietest,” Albert remembers, “but he was thinking all the time.” As the group’s car approaches the hotel, it’s swarmed by girls. hey arrived the winter after Kennedy was killed. A gloomy time it was, and when the four young guys from England showed up on Ed Sullivan, it was the biggest thing in the world. Everyone on our floor at Holy Cross gathered in the RA’s room to watch. Here we were at an all-men’s school watching young girls scream as the Beatles strummed and sang. All the joy and wonder of youth was crowded onto a tiny screen. This was the early Beatles, of course, before they became important. Important especially to those of

us dealing with Vietnam and the draft and a generational struggle that was only fun if you were looking at it from the outside. Fighting with your father—having him angry with you for going to antiwar rallies—is no fun at all. The thing is, millions of us went through this. As the New Frontier morphed into the ’60s, the Beatles led the way. And for seven years, they never stopped. There is simply no other group that has matched what this group did. Consider the sheer number of their songs that live in our heads. When I think of the ’60s, I think of the record shop in

Chapel Hill that blared out “I Am the Walrus” during my grad-school years at the University or North Carolina. I think of “Hey Jude,” the song my Peace Corps outfit in Swaziland made its own. And, of course, there’s “Imagine,” John Lennon’s haunting rebuke to all the reasons people invent for killing each other, for war. Bonding Over the Beatles for my DaD anD me, the beatles always struck the right chorD By CoNNIe SCHulTz

I

n the spring of 1966, my 28-year-old dad spotted a framed photo in Hills Department Store that he knew would make me swoon. Dad was a working-class guy with a wife and four little kids at home. He viewed any purchase not related to food, health, or shelter as a luxury, but he saw in that photo the chance to prove he understood the heart of his 8-year-old girl. That night, he walked into the house and, without a word (of course), handed over my very own dresser-top photo of Paul, Ringo, John, and George. Ringo’s sunglasses reflect a handful of greeters—none of whom, I’m still happy to report, appear to be girls. George looks ready to leap. Into my arms, I tell myself, even now. Today the photo is faded and the frame separating at the corner seams. No matter. It represents the one thing my father and I had in common until the day he died: We loved the Beatles. They brought out the best in both of us. My father was only 20 when I

was born. For years, his music was my music. The first record he gave me was a Beatles 45 and together we’d sing along. I was in first grade when the band debuted on the Sullivan show. Mom said it was too late for me to watch, but she deferred to Dad, who thought there was no other place for his daughter to be. By 28, Dad was beholden to a job in a plant that would claim more than three decades of his life. To him, the Beatles were proof of the joy that comes when you don’t give a hoot what your elders think. To this day, I look at the Beatles photo and see my dad’s version of happiness. When I close my eyes, I can almost hear him sing.

The Love Connection

A relationship columnist says even in our overexposed online dating world, we still count on fate when looking for a mate By Daniel Jones

I

n this era of digital matchmaking, when the laptop replaces just about everything else as the best way to drum up a date, you’d think our belief in romantic notions like fate and destiny would fade. Yet through my job as editor of Modern Love, a New York Times column about 21st-century dating and mating, I’ve discovered the opposite to be true: Many of us place more importance on fate than ever before—and we’ll cling to whatever scraps of magic we can to convince ourselves that the person we’re falling for is part of a master plan written in the stars. Adapted from Daniel Jones’s new book, Love Illuminated: Exploring Life’s Most Mystifying Subject (with the Help of 50,000 Strangers)

Why? It seems dating today has left a lot of us overwhelmed by too much choice and wary from going out with so many strangers. Even if we don’t frown upon online dating as we once did, the idea of it still can leave us feeling scared and distrustful. So relationin trying to forge a new relation ship with yet another stranger, we look for validation from beyond. What’s more, we want our “how we met” story to involve an relyelement of serendipity, and rely algoing on a dating website’s algo rithms to supply grinning photos of “compatible” candidates feels like the opposite of serendipity. No wonder we keep looking for signs to help point the way. My in-box is filled with stories of people seeking such signals. One woman seized upon the fact that a man who emailed her out of the blue shared her rather unusual last name, and before they met or even spoke she had convinced herself their relationship was fate. (It wasn’t; it ended as soon as they realized that, other than their last names, they had nothing in common.) A 30-something gay man fell for a guy during a speed-dating session but was embarrassed about how they found each other, with numbers pinned to their

chests. Eventually, though, he came across an incredible coincidence: Their mothers, who had never lived in the same city, had shared the same best friend at different times. That’s it! he thought. We’re meant to be! (They weren’t. A few months later, they said their goodbyes.) A young woman from a remote town in western Canada called Medicine Hat went all the way to Thailand in search of adventure and self-discovery, but mostly what she discovered there was loneliness. She missed her hometown. Eager to find love, she signed up for a Thai online dating service for expats. A year later, a man contacted her via the site and they started instantmessaging. Where was he from? she asked. A small town in western Canada she’d probably never heard of, he said, called Medicine Hat. She almost choked on her coffee. It had to be fate! (And it was! They married.) My final and favorite story: Once upon a time, a woman from Wisconsin pulled a fortune from a cookie that read, “A bald, bearded man will change your life.” Lo and behold, she did meet a bald man with a beard, and he changed her life by asking her to marry him. They had one son, then another. Not long ago they

celebrated their 50th anniversary. Except he wasn’t bald when they met, and he didn’t have a beard. He was a young man with thick hair and scrubbed cheeks. In truth, she didn’t stumble upon that fortune until decades later, but by then he had become bald and bearded, which is why she found the fortune so charming, despite its chronological inaccuracy. She saw it as yet another sign they were meant to meet way back when. This is what I call retroactive destiny: If we don’t start with magic, we can find ways of manufacturing it later. But in this case, I can vouch for fate’s role in their pairing. The woman who found the fortune is my mom. The bald, unshaven man is my dad. If they hadn’t met, I wouldn’t exist. And if I didn’t exist, neither would this article. You see? The only story that makes sense is the one in which my mom met my dad. As if, you know, it was written in the stars. Take that, laptop.
