and take your place among powerful women. The burning flames of fire bring with them a tremendous sense of strength and power. In ancient Greece and Rome, the gods Hephaestus and Vulcan captured the essence of the flame. But in Egypt, no man could truly wield the power of fire; that right was reserved for a woman.

Embodying the image of a mighty lioness, one of the land’s fiercest hunters and majestic creatures, Sehkmet encapsulated the es-sence of the flame. Born to Ra, god of the sun, her breath was said to have created the vast desert, the land she protected along with its pharaoh. Her name itself carries authority. Derived from the ancient Egyptian word “sekhem,” meaning “power,” the goddess’ name suits her role, as it translates to “the one who is powerful.” Her people bestowed on her several titles, among them “the One Before Whom Evil Trembles.” Alongside the other women of Egypt’s sacred sorority, including the powerful ruler Isis, Sekhmet brought a sense of fire and authority to the land. Today’s modern woman has a lot to learn from these ancient women, who stood atop their societies and ruled over the people. There’s a goddess in you; are you ready to unleash the fire?

Why egypt at all? One reason we chose the name ISIS is because of the Southern Illinois connection to all things Egyptian. Hundreds of years ago, when northern Illinois suffered poor grain harvests, they traveled here to buy what they needed, just like the ancients traveled to Egypt for sustenance.

Doing this cover shoot provided one of those work moments we long for: creative, collaborative and so much fun. Lacey Thompson was the shoot stylist, providing apparel and accessories from Eccentrics in Carterville; she even brought some of her own fabulous jewelry, just in case. Helping Lacey out in a big way was Leah Weil, Isis graphic designer. Cara Recine put her theater background to work and directed the shoot. Julie Rushing — stylist, makeup artist and owner of Clique Hair Design in Marion — and Lauren Bumann, a Clique stylist, transformed Jillian for three very different looks (see left). We were depending on photographer Leigh Bedokis to deliver so many possible cover shots that our jobs would be made more difficult, and she did, in the best way. Her assistant, Jamie Schonaman, was the picture of efficiency, always in the right place at the right time, doing the right thing. Isis would be proud of how these creative women worked together.

High-Waists You’ve seen them on Mad Men, American Apparel ads and celebs like Beyoncé, but you might be wondering if the high-waist trend is a “do” for you. Trust us, it totally can be! lmost every culture has worn multiple bracelets. In India, the amount or kind of bracelet you wear denotes your status; in Africa and Egypt, bracelets are worn as a protective measure, something Isis herself would know a little about. But there’s still a trick to taking the look to a higher fashion level. “Get rid of friendship bracelets altogether,” says Lucky magazine accessories director Julia Kalachnikoff. “No strings, no rubber. It ends up looking junky.”

Meredith Ashe, owner of M boutique in Marion, stocks one-of-a-kind bangles and bracelets that are perfect for executing this trend. “All my purses, jewelry, scarves and hats, I sell one once,” Meredith said. “This guarantees people originality without looking like everyone else.” Her products change weekly because of purchasing small amounts. “So, there is always something new to see.” Kelly Thornburg said the buzz around her shop, Tickled Pink in Murdale Shopping Center in Carbondale, is turning to hinged bracelets rather than those just slipped onto your arm. “They aren’t technically bangles,” Kelly said, “but they’re a convenient alternative and usually pass for traditional bangles.” Top to bottom: M Boutique, $14; Eccentrics, $15

Want to sizzle? No matter which kind you choose, here are some tips for keeping the look sizzling. They come from fashion blog, TayBer’s Tales of the Misguided Shopper: When you wear too many bracelets, it can result in the “I’m kind of high maintenance” look. Limit it to five on a wrist and absolutely no more than two bangles at a time. Wear them in odd numbers. (And, yes, watches and wrap bracelets count as one.)

Here’s how to wear them

Your total bracelet count on both hands should add up to an odd number. It just looks better. If you’re stacking bracelets make sure they’re all a little different, but that they’re coordinated. Rose gold is not gold, and purple and green will still make you look like Barney. If you’re going to any place of mild importance, make sure you’re bracelets aren’t clinking, because it’s distracting and annoying to others.

Fashion Fires Every fashionista’s address book should contain the name of a great tailor and a reliable cobbler. After all, some alterations and repairs are best left to the pros. But there are loads of inexpensive, easy-to-use and invaluable tools that can be kept on hand for minor wardrobe emergencies, touch-ups and maintenance.

AT-HOME HELPERS Sweater shavers Even high-quality sweaters will start to pill eventually. A $10 sweater shaver is faster, more effective and less likely

to cause snags. The best versions of these little devices look like men’s electric shavers, with a perforated metal head that guards fibers from the whirring internal blades.

Leather sponges For scuffed or faded shoes, these sponges are injected with mild protective oils that restore suppleness and shine to most porous

If you’re short on either, consider a handheld steamer instead. For $30 or less, you’ll get a portable device that works wonders on wrinkled garments. Stubborn wrinkles in wovens and

twill may require an iron, but knits, jersey, wool and cashmere will respond beautifully. BOOT SOLUTION Boot shapers Tall boots are a fall and winter staple, but keeping them in shape can be challenging. Instead of purchasing expensive boot shapers, try rolling up old magazines and sliding them into boot shafts. This will keep all but the most slouchy of boots upright and crease-free. Wine bottles work equally well, but can prove hazardous if boots are stored on high shelves. ON THE GO Most wardrobe malfunctions happen while you’re on the go, and they are guaranteed

to leave your day in ashes. Asemble an emergency kit to keep in your purse. Fill a small zippered bag with blister block, doublesided fashion tape, safety pins, a stain removal stick, a mini bottle of clear nail polish, bobby pins and nail clippers. If you can squeeze them in, add ponytail holders, blotting papers and tweezers, but remember that the ideal emergency kit can be tucked into a handbag. Don’t let it get too bulky.

Not your mama’ s Hula Hoop! Yoga. Pilates. Kickboxing. You’ve tried them all. Hooping? There, did we catch your attention?

H

ooping is back, and we’re not talking about a casual little game with a toy. It’s real fitness, a combination of freestyle or choreographed dancing with practiced hoop balancing moves. The idea isn’t new. We can thank the early Greek civilization for inventing the hula hoop for use in their fitness regimen. And, who knows, maybe Isis herself rocked a hoop, back when they were made of willow, grapevines or stiff grasses. Today’s hoops are plastic; “weighted” hoops are heavier. Molly Gable of Carbondale began hooping about three years ago. Her love of dance and performance art led her to hoop dancing, where, she says, “I could release my emotions more freely through my body.” So, not only will you reap physical benefits, it seems to be good for the soul, too. “Hooping is so much fun and is great exercise,” Molly said. “But, mostly, I hoop to express myself through flowing movement.”

Why it’s good for you: According to The Mayo Clinic, hooping isn’t a trendy gimmick. Adding only ten minutes of hooping exercise to your workout plan will improve muscle tone and coordination, as well as burn calories. The more you hoop ,the more benefits you’ll see. WANNA BE RICH? Put away a small amount now to reap huge benefits later; here’s how to do it. If you want plenty of money when you finally are able to say, “I’m outta here, I don’t need to work anymore,” listen up. Some awfully smart people are showing you how to do it — and the sooner you get started, the more money you’ll have. Take genius and physicist Albert Einstein, for instance. When asked to name the greatest invention in human history, he replied, “Compound interest.” Keep in mind: This is the guy who changed the way the whole world thinks, and he pointed out something you don’t have to be a genius to understand. Just what is compound interest? Essentially, the gains (or interest) you make from an initial investment can generate their own gains year after year. In other words, the interest you earn earns you more interest. “Perhaps, most importantly, is to start saving early,” said Joel Sambursky, president and founder of Liberty Wealth Management in Carbondale. “That way, you really gain the benefit of

compounding interest. Plus, compound interest is most effective over long periods of time, which young people have.” Now, that’s a goal, and Sambursky knows something about achieving goals. The financial adviser and executive was the starting quarterback for the SIU Salukis from 2002 to 2005; he graduated with a bachelor’s in finance, then went on to earn his MBA. He founded his company last year.

BEFORE YOU START CONSIDER THE FUNCTION, look and feel of your pallet project. Is it going to be indoors or outside? Do you want to paint it, or not? Are you going for shabby chic, rustic or something more contemporary? Make these decisions before you gather materials.

ISISLIVING EXAMINE YOUR PALLET and hammer in any nails that are sticking out. USE SANDPAPER over the entire pallet. This will remove excess dirt and grime, and it will also smooth away any roughness. IF YOU ARE PAINTING OR STAINING THE PALLET, use wood filler to fill any holes, cracks or unsightly spots. (If you are staining, there are stainable wood fillers. You don’t have to prime before staining unless the directions of your stain say otherwise.) Wearing your mask, cover every square inch with a heavy coat of primer. It will take a while to dry, but wood soaks up liquids, so you will want to prime thickly in order to get the best possible finished product. Make sure the primer is 100 percent dry before

moving on to paint. It might be hard to be patient, but a few days in dry weather is best. As for the paint, we recommend convenient spray paint for indoor and outdoor projects. Be sure to choose paint that’s right for your project. Don’t use outdoorsonly spray paint on an indoor shelf or vice versa! Read labels carefully and follow all safety instructions. You won’t be saving money if your entire project gets ruined (or makes you sick) because of a silly mistake! IF YOU AREN’T PAINTING THE PALLET: Clear coating your pallet is recommended but not required. This will extend the life of your shelf, and nowadays you can find clear coating in a variety of glosses and mattes.

MAKING IT WORK: After your final coat is totally dry (try to wait at least 24 hours), it is time to apply the hardware and hang your shelf. For hanging, you can use the hook-and-wire method. We recommend using bailing wire and not normal picture hanging wire; it’s much too thin and fragile for this project! You can get bailing wire (or farmer’s wire some people call it) at hardware stores. Make absolutely sure it’s strong enough to keep that pallet on the wall after you fill the shelves with your possessions. Eyehooks can be used, if you’re using the shelf for storing dishes; a cool look would be to screw the eyehooks into the underside of a shelf and hang cups from them!


Going to Great Lengths! Dressy or casual, curtain lengths add to the mood of any room. But how long should curtains or draperies be? Generally, the longer the curtain or drapery, the more dignified, dressy and formal the look. Shorter lengths always imply a casual, relaxed, and informal mood. The decision is up to you. In formal or dressy rooms, curtains should just touch the floor.

A romantic room deserves elegant, extra-long curtains that pool or puddle on the floor.

Curtains to the sill, or to the bottom of the window trim (called the apron) look great and are practical in a kitchen.

Never hang curtains of any length near a stove!

Dens or family rooms gain dignity from draw draperies or curtains that reach to the floor.

Curtains that stop short of the floor, ending at the top of floor moldings, look awkward.

Simply moving a curio cabinet or bookshelf from one corner to another may also make a difference. ADD LIGHTING Placing lighting at different levels creates a vibrant impact. You’ve got to do more than place a couple of table lamps and think that will be adequate. Use different kinds of lighting to create different moods at different times. USE PLANTS Plants are inexpensive ways to add instant color and visual appeal to a room. Plus, having live plants can help improve indoor air by filtering out contaminants.

Cannas

ne of the most basic, diverse and dramatic garden plants is the canna. Cannas are easy to grow, offer a vast array of foliage and flower colors. They range in height from 18 inches to over six feet. They’re easy to overwinter and can be used just about anywhere a tropical accent might be needed. They prefer full sun for best performance and can tolerate moist to wet areas, such as around water features. These fiery tropical plant are pretty tender. They can’t survive our colder Southern Illinois winters, so it’s best to plant in a large container. That way, you can bring it inside

until spring rolls around again. Place containers by entrances, patios or decks. The flowers of the plant, which is in the hosta family, can be red, pink, orange, yellow or white; and boast immense, oftenveined, paddle-shaped leaves and sheathing leafstalks in shades of green or bronze.they bloom through summer and early fall. But don’t despair if yours doesn’t bloom; with their great reedy canes and palmy foliage, cannas would be magnificent even if they never showed flower one. Most likely, though, they will show their flowers from early summer to first frost.

Caring for your canna • Cannas do best with a good supply of water, so water the plants during the summer if the rainfall is less than 1 inch per week. Water freely in a dry spell. • Keep a thin layer of mulch around cannas to help retain moisture, as well. • Stake tall varieties if needed. • As flowers fade, deadhead to promote continued flowering. • Bring your canna in before the region’s first frost. • Store cannas over the winter in a dry place at 45 to 50 degrees Fahrenheit. Don't let them dry out; sprinkle the sand or soil around them, if necessary.

Tread carefully when bringing up the topic of past romances BY ANNETTE VAILLANCOURT When you meet someone new and there’s a spark or a sizzle, there’s no quicker way to extinguish it than to over share about your ex. Of course, it’s natural to be curious and want to exchange personal relationship history at some point in getting acquainted, but to give too much information or too many sordid details too soon — before rapport, interest and trust is established — is social suicide.

If you think you are being “honest” by sharing like this, think again. Over sharing is off-putting. It can be a sign of poor boundaries, lack of social skills or worse — continued attachment to your ex. The last thing you want to create in your date’s mind is a sense of competition, jealousy or worry about what you might tell the next person about them if you break up. If you want your new flame to be comfortable and secure in your interest, extinguish the old flame completely. You are there to get to know that new person, not rehash old wounds. That way, when it comes time

to get a history for the purpose of determining sexual health and availability, you will be able to answer with only the pertinent facts. Your answers will be matter of fact, not choked with tears of pain or regret. On the flip side, if your date digs for details about your ex, it might be a sign of insecurity or latent jealousy. By the way, early jealousy is not a sign of love and caring for you. It is a red flag that you have a man who will need constant reassurance or who will attempt to control your behavior so as to quell his insecurities. Don’t be flattered. Be forewarned and be cautious.

A “Little Black Book” is not an ideal item to curate. Remember why they are an ex in the first place.

Early jealousy is not a sign of love and caring for you. It is a red flag that you have a man who will need constant reassurance or who will attempt to control your behavior so as to quell his insecurities. Don’t be flattered. Be forewarned and be cautious.

When you share about exes, it’s best to frame it in a positive light. Talk about what you appreciated about that experience. Talk about what you learned about yourself. Talk about how it made you a better, more mature, more desirable and fun date. If you focus on the negative stuff, the only people who will find that attractive are those who will do the same thing to you. Basically, what you are telling them is that you are a walking target, and that you will accept bad behavior from them, too. If you or your new love has children with an ex, then continued contact with them is expected for the welfare of the children. When you are dating or in a new relationship, make clear to your partner the extent and intention of that involvement. If you are developing a significant new relationship, introduce them to your ex right about the same time you introduce them to your children. This signals to everybody that this is an important relationship and you are invested in moving forward. This also allows everyone

a chance to adjust at the same time. There are no secrets. Everybody knows about everybody. The important thing to remember is that you are building a new life with someone else. That means the role of your ex will likely change to focus mainly on the welfare of shared children. They are not the person you call to come hang pictures in your home. They would not be the person you hang out with when your new love is out of town on business — that is, if having the trust of that person is important to you. There are many dating men and women who remain “close friends” with some or all of their exes. As a psychologist, I question this. Why create or perpetuate a triangle? It limits intimacy with both your new and old loves. It’s just too tempting in times of distress to complain to your ex about your new partner. That is simply a slippery slope to trouble. If your new love or you wish to remain friends with exes, the safest guideline is to

share what will make each of you comfortable and able to be supportive of that relationship. The goal is to protect the primary relationship and support the secondary ones. It might help to share with each other the role you see that person playing in your life. Perhaps, they share an interest that you aren’t in the least bit interested in exploring. Maybe, they go to the same church and have led Bible study together for years. Clarity is calming. Remember, you can’t be everything for another person and no one person will satisfy all your friendship needs. Don’t demand that of each other. Other friends are needed to support and augment your primary relationship. If one of those friends is an ex, set guidelines, get to know them, include your partner on some visits, and keep communication honest, open and above board. It might also help to remember that everyone, including you, has history. Think about how you would like to have your new love treat your old friends and exes. Behave in that manner toward theirs. Having a double standard is a no-win situation –– a set up for a fight. Avoid them. SPF, baby! Fight sunburn, wrinkles and dullness by applying sunscreen regularly. You probably can’t overdo it, and more is definitely better. A new study out of Australia (Queensland Institute of Medical Research) shows that using sunscreen daily slows the signs of aging skin, even into middle age. Sun is the major cause of skin deterioration. And they proved it, too: Out of 903 Australians 55 and younger, those who used sunscreen daily were 24 percent less likely to show signs of increased aging.

Simply comb your eyebrows into place using the brush, then switch to the other end and apply small strokes of color in the direction of hair growth. What makes this pencil great can also be problematic if you have highlighted hair or if you dye your hair often. Someone who wants to experiment with her eyebrow makeup should choose a different product.

Sexy or Scorched? What you do (or don’t do) to your hair makes all the difference. Women and their hair. We crimp it, flat-iron it, cut it, grow it, twist it, color it. One thing we have to do a little more of in the summer is protect it. It makes sense. It’s hot, it’s humid, and some days it feels like the wind has blown across the Sahara Desert just to lay claim to your locks. And, if you’re a water baby, pool chemicals aren’t doing you any good. But don’t despair. A few simple things can help preserve your crowning glory. “The most important thing you can do is to moisturize your hair,”

said Sarah Clover, a stylist at Lush Aveda Salon and Spa in Carbondale. “Pool chemicals dry it out, and high humidity is going to suck out every bit of moisture.” Extra moisturizing is also the biggest piece of advice from Sabrina Ryals Hintz, a stylist at Studio Day Spa in Carbondale. “Apply a good quality conditioner in the shower, at least once or twice a week,” Sabrina said. Sarah and Sabrina suggest looking into products that protect your hair from almost anything that comes along and restore natural

moisture after. “We carry a line of hair care products that are specifically created for use in summer; they really help,” Sarah said. The same is true for Studio Day Spa. “We also have a treatment that many salons have: a salon-only ‘Malibu’ treatment, which strips chlorine and mineral buildup and doesn’t damage the hair,” she said. Here are some things to avoid and the solutions from our local experts and from dummies.com: Jumping in too soon Pool chemicals aren’t your friends. Chlorine literally

Don’t rinse it out entirely; leave a little on the hair. “This keeps pool chemicals from penetrating as much,” Sarah said. “Blonde hair, especially, is susceptible to damage, including turning hair green,” Sabrina advised. “Often blonde hair is finer, so you have to be very careful.” If you don’t have access to conditioner before swimming, just wet your hair before getting in the water,” Sabrina said. The water will dilute the chemicals a little before they reach your hair. Both ladies had one last piece of advice: Immediately after swimming, wash and condition the hair. If it’s going to be a bit before you can get to a shower, at the very least, rinse hair really well. Frolicking under UV rays If you’re outside, no matter what you’re doing, UV rays fade color and cause damage. The solution: All sun goddesses should wear a hat — find a sexy one! — and use hair products containing antioxidant or sunscreen ingredients. Again, use deep conditioners. Sabrina recommends you look for protective products containing an SPF. “I’ve even put regular sunblock on my hair when I couldn’t

do anything else,” she says. “It doesn’t look so great, but it works and your hair is protected.” And, if you’re using a tanning bed, wrapping a towel around your head will offer extra protection. Taking too many shortcuts Busy girls do what they have to do, but often it’s our hair that pays the price. Blasting hair with the hottest air to dry quickly, roughly combing through the hair while it’s tangled and not conditioning to save a little time isn’t worth it. The solution: Let your hair dry naturally. But sometimes a girl’s gotta run. Speed up the process by wrapping your head in a towel while applying makeup, shaving, brushing teeth. It can remove 50 percent of water before going near a blow-dryer. “If you are going to dry your hair from completely wet, dry it only about 70 percent, then let it air dry before styling,” Sarah said. “The more you can go without drying or using heated instruments, the better.”

The solution: Refrain from dramatically changing hair colors every month; going from red to blonde, for instance, requires extra stripping of the hair. Never overlap hair chemicals when doing touch-ups (treating the new growth at the roots). Letting the hair grow out at least half an inch before retouching the hair color makes it easier to avoid overlapping applications. This same advice applies to chemical relaxers. Lush Aveda and a few other local salons offer hair color options that are plant derived with little chemical. Ask your stylist about those. You’re all tied up Wearing hair ties or clips with metal can actually break the hair. And, if you wear them all the time, even more hair will be damaged or broken. The solution: “If you’re going to wear your hair in a tie or clip, make sure there’s not metal in them,” Sarah said. “Keep them much looser, too.” We’ve all felt that tenderness when our hair has been up too long and tied too tight. “You can actually bend the hair too much away from its natural way, and it will start to fall out.”

And, now, a study done by researchers at the University of California’s Berkeley School of Public Health has identified even more metals than we already knew about in lipsticks commonly found in drugstores and department stores. In addition to lead and chromium, they detected cadmium, aluminum and five other metals. “We definitely need more research to see

what’s in these lipsticks and at what levels,” said Sharima Rasanayagam, director of science for the Breast Cancer Fund and a member of the Campaign for Safe Cosmetics. An industry representative said lipsticks are safe and noted that the detected metals occur naturally in air, soil and water. “These are very low levels,” said Linda Loretz, chief toxicologist for the Personal Care Products Council. The researchers concluded that people who use an average amount of lipstick, perhaps applying it twice a day and ingesting up to 24 milligrams, could be exposed to hexavalent

chromium at levels that exceed safety guidelines. It is a carcinogen linked to stomach tumors, but researchers said their tests could not distinguish between it and the metal’s less toxic forms. Those who use large amounts of lipstick maybe reapplying 14 times a day and ingesting 87 milligrams of the cosmetic could have excessive exposure to aluminum, cadmium and manganese, the study found. Exposure to high concentrations of manganese over time has been linked to toxicity in the nervous system, the researchers noted. The study detected lead in 24 lip products, but concluded those levels were within safety guidelines.

We all know what we have to do to lose weight: Eat less and exercise. But a local clinical psychologist says exploring the reasons we eat and focusing on changing our negative habits may make it easier to shed those unwanted pounds We’ve all tried diets, many of them a little wack. Has your grandma told you about the cabbage diet? Here’s a tip: They don’t work, at least, for long. But have you ever thought about what thinking has to do with your unsuccessful attempts at shedding a few pounds and keeping them off? A new program at Herrin Behavioral Health gets you doing just that. To help people get their thoughts in order, Clinical Psychologist Jacki Muniz offers group and individual sessions in a program called Thinking Thin.

“Clients learn about themselves and their habits,” Muniz said. “We focus on thinking about and changing negative habits that sabotage weight loss efforts.” Topics include emotional eating and being aware of why we eat. “It is common that people may not be fully aware of their poor eating habits,” Muniz said. “People often fall in the trap of using food to solve problems. It’s often the first thing they think of when they have a problem.” That stress or emotional eating can be a problem.

“Food doesn’t make your boss less demanding or your child behave better,” Muniz said. “We need to take concrete steps and make a list of other things you can do when you are feeling stressed and want to over-eat.” Muniz suggests instead taking up a hobby, taking a walk, calling a friend or playing with your pet. The key is to understand what you are feeling and to have a concrete plan. These small changes in behavior can make a big difference. “Research has shown that making a couple of small changes can lead to results,” she said. “Eating more mindfully, drinking more water and just making eating a singular event, by not eating in the car or in front

Seduce your man by firing up the grill and feeding him a meal with local, fresh ingredients from the farmer’s market. What man wouldn’t love a woman that grills? Throw on a pair of sexy, high-waist shorts (see pages 6-8 for inspiration) and be ready to see the fire in his eyes.

Strip Steak

1 pound Lick Creek Beef Sirloin Strip Steak ($12) 1 teaspoons salt 2 teaspoons fresh ground pepper 2 tablespoons olive oil In a baking dish, combine the oil, salt and pepper. Add steaks and turn to coat both sides. Cover and refrigerate for at least two hours. Pre-heat grill to medium-high heat. Cook steak to desired degree of doneness, about 5 minutes on each side. Let them rest for 10 minutes.

Sliced Tomatoes

1 large beef steak tomato, cut into 1-inch slices (1 pound for $2.25) 1 tablespoon olive oil ½ tablespoon fresh ground pepper 1 teaspoon salt Sprinkle sliced tomato with olive oil and top with salt and pepper.

Grilled New Potatoes Packet ½ pound red new potatoes (2 pounds for $3) 2 tablespoons water 2 teaspoon oil 2 teaspoon fresh ground pepper 1 teaspoon salt 1 sprig fresh rosemary (1 plant $2)

Pre-heat grill to medium heat. Place potatoes in center of 18” long piece of heavy-duty foil. Sprinkle oil and water on potatoes and top with rosemary twig, salt and pepper. Bring up foil sides and seal the edges; leave a little room for the heat to circulate inside the foil. Grill for 20 minutes or until potatoes are tender. Use caution when opening the foil.

othing cools you off like a juicy, fuzzy peach. These sweet treats are abundant in Southern Illinois orchards throughout the hottest months of the year. You might need a whole bushel after reading our why’s and how’s of fresh, local peaches. And, don’t forget to visit local growers, who sell their produce fresh from the orchard, and they’re always the best you can get. Do a quick online search for “Southern Illinois Orchards” for the one closest to you. 52

Pick a winner 1. White-fleshed peaches are sweeter than yellow-fleshed peaches, which tend to be sour and more acidic. Most grocery stores carry only Freestone varieties, whose fruits easily detach from their pits. Although “Clingstone” varieties require more effort, (some of the flesh “clings” to the pit), they are considered by some to be all-around better tasting. 2. A ripe fruit will be evenly soft to the touch, not rock-hard and certainly not mushy.

Why you should eat more peaches A large peach has only 70 calories, making them a sweet, guilt-free snack or dessert for conscious eaters. Keeping the skins on will retain more fiber and nutrition, including a whopping 10 percent of your daily required Vitamin A, which is something your skin needs more of in the summertime to heal from all that extra sunshine. Peaches are also good sources of the antioxidant Vitamin C and blood pressure regulating Potassium.

EASY RECIPES Peache Flambé Cut peaches in half, then then slice in 4 or 5 slices. Melt butter over medium heat. Add brown sugar; stir. Add peaches. Cook until fairly warm and starting to soften, about 1 minute. Flip and cook 30 seconds more. Add rum to taste and swirl in pan a bit. Light a very long match and pass over pan. Allow flame to die down and sauce to thicken slightly, remove from heat and serve over ice cream.

3. Avoid any fruit with green near the stem (picked too early) or with any shriveling on the skin (too old). 4. Store peaches that need to ripen at room temperature. Once they are ready to eat, place peaches in your refrigerator’s crisper for no longer than four or five days. 5. If your peaches are ripe but you need more time before you use them, slice clean, whole peaches into sixths and lay them on a baking sheet lined with parchment paper. Once the individual slices are frozen, store them in a freezer bag. Don’t forget to label your frozen produce! Frozen peaches shouldn’t be stored longer than six months.

Vertically — and as thinly as possible — slice one fresh peach and a quarter of a fresh tomato.

To grill peaches, rinse fresh pitted fruits and cut them into 8 medium-thick slices. Rather than wedges, try to cut them the way you cut bread. These flat slices will grill much more evenly. Place the slices on a well-oiled grill and allow only a few minutes on each side. Throw these on top of burgers, salad, or anything else that needs a smoky sweet addition.

Spread 1 tablespoon of peanut butter or cream cheese into two pita halves and fill each with peach and tomato slices. Pack these up for a quick lunch or make a dozen for your next picnic.

resh and fruity cocktails are a great way to beat the heat of summer days and nights. Ask just about any bartender, and they’ll tell you it’s so.

“People do tend to order fruity drinks in the summer,” said Jessie Tanner, bartender at Boondocks Seafood Co. in Carbondale. “They are usually lighter and more refreshing.” Citrus drinks are especially “cool,” and, if you’re watching, can be fewer calories and carbs. Two of the bar and grill’s most popular drinks start with flavored vodkas, which are quickly rising to the top of summer’s hot list of mixers and are a lower-calorie choice. Two Jessie uses at Boondocks are pomegranate and acai berry flavored vodka from Pomacai and UV Citrus vodka. We’ve included two recipes from Boondocks, plus a third from UV Vodka’s website. They’re all easy to mix, and, because they don’t contain sugary fruit juices, they’re refreshing, and, well, if not good for you, then, better for your figure. The Pomacai and Lemonade cocktail as well as the Summer Escape are from Jessie at Boondocks; the Citrus Spritzer is from UV Citrus vodka company. So, raise your glass to hot days and (hopefully) cooler nights with one of these suggested cocktails.
