Exclusive interview with Martine McCutcheon Martine McCutcheon first found fame as Tiffany Mitchell in Eastenders in the 1990s, before releasing her platinum-selling debut solo album ‘You, Me & Us’ in 1999 containing the No. 1 single ‘Perfect Moment’. West End and TV roles followed and along the way she became the nation’s sweetheart. In 2003, Martine memorably played Natalie opposite Hugh Grant in ‘Love Actually.’ Now 41, happily married, mother of a 2 year old, the time felt right to return to the studio. Martine has co-written most of the songs on the new album ‘Lost and Found’ with her husband, the multi-instrumentalist/vocalist Jack McManus, and she has never sounded better! Martine is back not only musically; she also reprised her role in the Comic Relief reunion of ‘Love Actually’ earlier this year and has just wrapped a film with Alan Davies called ‘The Bromley Boys.’ However it’s music that’s her main focus. First single ‘Say I’m Not Alone’, is a song like nothing Martine has ever recorded before; big, bold, brash, merging clanging guitars, thumping drums and a hard hitting lyric. Other album highlights include the rocky ‘Any Sign Of Life’, the beautiful ‘Stay With Me’ (which is a duet with Jack) and album closer ‘Rebellion’.

The album is a deeply personal record that deals with everything from relationships to Martine's debilitating illness that saw her unable to work. “Life brought this album about very gradually,” explains Martine. “It was a really unconscious thing; I started writing the songs at a time in my life when I’d lost everything.” Terry Sullivan from The Sticks spoke to Martine recently about her career and the new album A lot of people remember you from your days on Eastenders and it was so sad when you left. I know, luckily everyone recovered and we were all alright in the end Then you went on to do “Love Actually”, that must have been an amazing experience? Both were absolutely brilliant because the team and the cast around you are just amazing and you don’t often get to work with your dream team and that was the case with me on both things. I had always been a massive fan of Barbara Windsor and I got to meet and work with her on Eastenders and then I got to work with Hugh Grant, Richard Curtis and that amazing team. I pinched myself. It was the best thing ever.

4

What is Hugh Grant like, is he as nice as he seems? He is lovely but he is a nightmare till he has had his cup of tea, he can be really grumpy in the mornings! We had great fun though, we are so different and from different backgrounds and in a way that made us spark off each other. It was great. On screen we had amazing chemistry; you want to make it believable and tap in to that movie magic. How did you get in to the acting business, were you like me, a bit of a show off at school? Yes, I was always a very confident, bubbly, happy, bouncy little thing. I just had this energy so my mum started sending me to dance lessons locally in Hackney in east London. There was this lady there with skin like leather and she was about 80 years old and she had a beehive and constantly had a cigarette hanging out of her mouth, how things have changed. She would teach me the dances and she said to my mum “you know what, Martine is actually quite good”. My mum had no idea; no one in my family was in the industry at all. She suggested another teacher who trained me for a year and managed to get me to Italia Conti, the stage school in London and I was trained from there. They had an agency, I worked doing shows and adverts. It just seemed mapped out for me, that was the path I was going to go down. Would you like to do Strictly or have you been asked? I have been asked to do Strictly but the thing is I have a thing called M.E and Lymes disease which is something you have to manage as your muscles can fatigue quite easily or you can get run down and tired. It is fine till it flares up; I can go for ages without having any issues at all. I have spoken to Greg Rutherford and some of the other top athletes who have taken part and they have told me the schedule is a killer, an absolute killer. They don’t stop for 17 hours a day and I don’t know if I could cope with that. You do acting, singing, musical theatre and lots more besides, if I pinned you down and said you could only do one thing, what would it be? If I was to do one thing my clever answer would be to do musical theatre because you still get to act and sing and because I was trained at school to do different things, mostly to stay employed, so it is hard to pick one. The first thing I fell in love with was the music because you can tell stories in your own way and use your own words as opposed to someone else’s. I think there is something a bit more honest about that. I like acting as well because I do not feel I am playing a part, I feel I have all the different characters in me and I just sort of tap in to those. I really love what I do.

5

Is there a role you would like to play? There are loads of different things I would love to do I would love to have been in Moulin Rouge, I have never done a musical film, I have done musicals and movies but never done the two things together, so would love to do something like that. You had a big number one single called ‘Perfect Moment’ in 1999. I had grown up loving strong women singers like Barbra Streisand, Stevie Nicks, I like thing with a great melody and a great vocal. I was like a little old lady, at the time when you had all this grunge music; I thought no, I am going to release a ballad. I think it is the number one wedding song. The new album “Lost and Found” has a very different sound to it. It is a sound that evolved over a period of time. I had a lot of growing up to do, I became very well known at 18 and grew up in the public eye and I had my up and downs. I took some time out as I just need to rest and lick my wounds about a few things and also trying to be a mum. There were some really dark times but then I had my aha moment where I decided it was time to get out there and kick butt again. This album was never meant to be for public consumption, it was always meant to be just for me to get me through a difficult time that lasted longer than I wanted it to but by the end of it my husband Jack McManu,s who did it with me, played it to somebody and they said it would be signed by a big label and it is time to get Martine out there again. It was scary to get back on that horse again. But I need not have worried as the response it has had has been amazing. Can you remember the first record you ever brought? Yes, it was Ant Music by Adam and the Ants, I was absolutely in love with him at the time. He was more beautiful than most of the women.

Poor Investigation Results in Pay-out of £20k at Employment Tribunal. A Poundland store manager was unfairly and wrongfully dismissed when she was fired for allegedly stealing a drink, Norwich Employment Tribunal has ruled. Miss Stokes was awarded £20,930.48 plus costs after employment judge Postle found that the discount chain had no reasonable basis for its belief of her supposed misconduct and followed a flawed investigation process. Stokes worked at Poundland from 2009 as an assistant manager and later store manager. She was successful in her role until a new area sales manager joined in 2015. In June 2017, area sales manager, Ian Jones, and the acting store manager entered Stokes’ office without warning to investigate an allegation that she had taken drinks from the damaged stock area. She was told that CCTV footage showed her consuming the drinks, although she was only shown a few seconds of her walking with a drink in her hand. Matthew Pinto-Chilcott from Consensus HR comments “This case, held at the Employment Tribunal (ET) – Norwich - Case Number: 3327953/2017 in April this year, demonstrates how companies still get it wrong when dealing with discipline in the workplace. Too many times management fail to act in a reasonable manner and take the correct / necessary steps. The ACAS Code of Practice clearly details how these should be done professionally, fairly and reasonably and can be obtained easily on the internet. An investigation is a key, vital step that needs to be taken at all times prior to any action being taken and needs to be thorough taking into account the allegation. Managers / Business owners need to make clear what the allegation is and what area of a fair reason this constitutes. Is it Conduct, Capability, Performance, Some Other Substantial Reason, Compulsory Bar, Redundancy and list this in all correspondence. This helps to ensure everybody is aware of the allegation whilst allowing a full / comprehensive investigation to take place.”

YOUR LOCAL SOLICITORS Who do you trust ? If you were suddenly incapacitated – whether physically or mentally, who would you choose to look after your personal and financial affairs ? Because if you haven’t yet set them up formally as your Attorney, you could find someone else takes charge. The Mental Capacity Act 2005 introduced the principles that all adults should be assumed to be able to make decisions for themselves unless it is proved otherwise; and just because someone is making an unwise decision they shouldn’t be treated as being unable to make that decision. There are a number of ways that you can plan for your future now - in case there is a time when you cannot make decisions for yourself. Lasting Powers of Attorney:•

you appoint someone (your Attorney) to make decisions on your behalf in relation to your property and financial matters, and even your health and welfare matters.

your Attorney can be given the power to accept or refuse life-sustaining treatment on your behalf.

you can appoint more than one Attorney, and be very specific about what power(s) you want them to have

they allow you to choose your Attorney now, rather than leaving it to someone else to apply to the Court of Protection to become your Deputy once you have lost capacity.

it does not mean that from the moment you complete the forms your Attorney takes over making decisions for you as they must be registered to be effective

Advance decision to refuse treatment:– •

a legally binding document that allows you to specify particular kinds of treatment that you don’t want (in case you lack the capacity to make this decision for yourself at some point).

Statement of your preferences and wishes:– •

this is not a legally binding document, but it enables the people looking after you to understand what your care preferences are and they would usually be required to take your stated views into account as part of any decisions they make for you.

Once it has been decided you have lost the capacity to make decisions for yourself, to include giving instructions to a solicitor, it is too late to plan for your future – so do it NOW. Remember, it is not just the elderly who lose capacity – it could happen to anyone of any age as a result of a major accident or trauma. Russell Grant’s Monthly Horoscopes July

ARIES (March21st-April20th) CANCER (June22nd-July23rd)

Things are changing on the home front on the 13th, due to a Solar Eclipse. You won't be fond of many of these transformations. It may be necessary to relocate for work. You might have to take a loss on a property sale. It's even possible you will have to downsize to a smaller place, simply as a cost cutting measure. Don't worry too much what others will think of this change. The important thing is to remain positive and look for ways to turn this lemon into a brimming pitcher of lemonade. A group collaboration will come to a rapid conclusion on the 27th. That's when a Lunar Eclipse makes you free to pursue a solo project. As soon as you fulfil your obligations to the team, get started on this personal plan. It will quickly bring you to a higher level of achievement. You're ready for success on your own terms.

Getting a personal project off the ground will be difficult on the 13th. That's when a Solar Eclipse puts strain on your personal life. Your best friend, romantic partner or even a professional contact does not want to change the status quo. You're eager to explore new territory. This will create a tug of war that is emotionally exhausting. It may be necessary to decide what you want more: Your relationship or your dream. Trust your gut; it has never steered you wrong. On the 27th, the Lunar Eclipse concludes a financial struggle. Money from an inheritance, legal settlement or insurance refund will finally land in your account, causing you to breathe a sigh of relief. Use this windfall to pay off some bills. Getting out of debt will liberate you to pursue more rewarding projects. You might be able to leave an oppressive job for one that offers lots more creative fulfilment.

TAURUS (April21st-May21st) The Solar Eclipse on the 13th makes it difficult to operate as part of a team. Although you have good ideas, louder members of the group will discount your suggestions. Trying to be heard will be an exercise in futility. Instead of raising your voice, retreat to a quiet corner. Let everybody else battle things out. Conserve your energy for more rewarding activities, like creative projects and romantic relationships. On the 27th, the Lunar Eclipse marks a career high point. Being promoted to another department will be a huge feather in your cap. Get ready for your close up. If you've been unemployed, that situation will end. You'll be given a job with lots of room for growth. Don't be afraid to put your ambition on display. When your superiors understand that you are eager to move ahead, they'll give you every opportunity to do so. Your calm diligence will be greatly appreciated.

LEO (July 24th-August 23rd) On the 13th, the Solar Eclipse will bring an embarrassing secret to light. A jealous colleague will try making trouble for you. If you've been caught posting a tasteless remark or bending the rules, issue an immediate and sincere apology. Don't just say you are sorry if you offended anyone. Claim responsibility for your actions and vow to change your ways. It will take time for people to trust you again, so be patient. The Lunar Eclipse on the 27th brings an end to a partnership that has run its course. Going solo will be scary but stimulating. Take this opportunity to explore a new lifestyle, hobby or belief system. When you pour your energy into activities and beliefs that resonate with your spirit, you'll feel as if you have been reborn. Friends and family may find certain choices strange, but don't worry. This is your life; stop seeking outside approval.

GEMINI (May22nd-June21st) Your financial security will be undermined on the 13th, due to a jarring Solar Eclipse. It may be necessary to pay a legal fee, make an alimony payment or buy out a business partner. You'll be a little alarmed by your resulting bank balance, but try to stay calm. By being extra resourceful, you'll eventually recoup this loss and move on to bigger and better things. The Lunar Eclipse on the 27th may find you returning from an extended trip. Wrapping up the terms of a legal matter is another possibility. As soon as you conclude this business, you'll be able to explore greener pastures. Burn off your excess energy with a fitness program. The more physically active you are, the easier it will be to face the challenges ahead. Venturing into unknown territory will be refreshing. You're tired of being held hostage by an old, outmoded arrangement.

VIRGO (August 24th-Sept 23rd) You'll feel like a duck out of water on the 13th. That's when a Solar Eclipse will put you in a group that utterly confounds you. Not only will you disagree with virtually all their beliefs, but you'll also find their attitudes offensive. Instead of trying to convert everyone to your point of view, pretend you are a spy. Listening carefully to their logic will help you understand what motivates them. Knowing what to say to get members to do your bidding will be helpful. On the 27th, a Lunar Eclipse will bring an end to a health regime or work assignment. It will feel strange leaving this familiar routine behind. Instead of wading slowly into a new way of life, you'll be forced to adopt these changes immediately. Being forced to think on your feet will be a welcome challenge for you. Instead of overanalysing your options, you'll have to make instinctive choices.

10

someone you work with to follow orders will create deep resentment. Be more attentive. Stop insisting on taking the lead. By playing the part of a helpful assistant, you'll pave the way for a happier, healthier union. If you've been in a committed relationship that no longer works, it may be time to part ways. This breakup will be painful but cathartic. A source of income will come to an end on the 27th, due to a Lunar Eclipse. Once this job finishes, you'll be able to land a bigger and better opportunity. Don't be afraid to apply for a position in the hi-tech industry. Alternatively, you could find work involving air travel, broadcasting or lab research. You'll face some stiff competition for this spot, but don't worry. Your application will stand out from the crowd.

LIBRA (Sept 24th-Oct 23rd) A professional offer on the 13th is not as rosy as it appears. The Solar Eclipse will force you to choose between having a rewarding public and professional life. If you take this job, you'll have little opportunity to spend time with friends and family. All your energy will be channelled into pleasing a boss who is on a power trip. You're better off passing up this opportunity and waiting for one that affords a better work/life balance. The Lunar Eclipse on the 27th marks a turning point in a romantic relationship or creative project. If you're seeing someone special, you could get engaged or married. Are you footloose and fancy free? Favourable publicity about your work will lead to a series of lucrative commissions. July ends on a high note. Remember this if you're feeling discouraged by a stressful work situation. What seems like a loss now could become a victory later in the year.

AQUARIUS (Jan 21st-Feb 19th) A health regime will get off to a rocky start, due to a stressful Solar Eclipse on the 13th. A new medication could make you feel queasy. An exercise programme could result in a sprain or strain. If a doctor's suggestions are wreaking havoc, let them know. They might propose an alternative treatment. Are you unhappy with the level of attention you're receiving? Get a second opinion. It's important to work with a health professional whom you respect. The Lunar Eclipse on the 27th puts you in the spotlight. Breaking off a relationship will put you in line for a much better arrangement. You're no longer willing to compromise with pushy people professionally. Going solo will allow you to turn a good idea into a great one. Take this opportunity to start a business, change your lifestyle or alter your appearance. When one door closes, another will open.

SCORPIO (Oct 24th-Nov 22nd) The Solar Eclipse on the 13th will make you feel like you're out of your depth. If you're asked to do work that is beyond the scope of your knowledge, ask for help. Admitting your ignorance and deferring to those with more experience will earn people's respect. You're in a terrible situation. Nobody blames you for it. The only way you can tarnish your reputation is by pretending to know what you're doing. On the 27th, a Lunar Eclipse brings unexpected closure to a family problem. You'll breathe a sigh of relief when care is found for an elderly relative or a new school is discovered for a struggling child. Once this matter is settled, you'll be able to improve your living situation. Finding a new place to live or making some home improvements will give you forward momentum. It will be a relief to resume your personal life.

PISCES (Feb 20th-March 20th) News of an engagement, marriage or pregnancy will come as a shock on the 13th. That's when a Solar Eclipse turns your world upside down. Your whole life is going to change. This change will make you resentful. In some ways, you'll feel like you've lost your best friend. Instead of letting your hurt feelings simmer, find an outlet for them. Working on a creative project or joining a club will be a welcome distraction in mid-July. The Lunar Eclipse on the 27th brings an end to a period of deception. Once you discover someone's true character, you'll be able to make better decisions. Someone who has been trying to convert you to their belief system should be told to back off. You're very respectful when discussing spiritual matters, but don't like it when you're pressured to change your convictions. If this pest continues with their sales pitch, break off the relationship or file a complaint.

SAGITTARIUS (Nov 23rd-Dec 21st) A powerful physical attraction will create financial strain on the 13th. The Solar Eclipse will make you restless. Resist the temptation to buy someone's affection. It's also important to stay true to your moral code. Trying to impress somebody by assuming a cavalier attitude will cause problems later. You shouldn't have to put on an act to win a person's heart. The Lunar Eclipse on the 27th will cause someone to render their final decision. Once you get the news, you'll be able to move forward with a plan of action. Starting a blog, posting a video or launching a promotional campaign is strongly advised. You have an original way of expressing yourself. This attracts a wide audience. People are looking for a public speaker with a fresh approach. You're not afraid to defy expectations and send shock waves through the audience. Soon, everybody will be buzzing about the zany new social media superstar.

How Is Your Tummy?

A very personal question but a staggering number of people in the UK suffer from IBS symptoms, and while you may not think its connected, a staggering number suffer from anxiety and depression too. 12 million people in the UK suffer with IBS, the most common GI condition in the industrialised world. 86% of British adults have experienced a gastrointestinal episode in the past year, and 6 million of us suffer with anxiety or depression. If you have IBS, you are 60% more likely to suffer from depression and anxiety than someone who does not have IBS and if you suffer anxiety/depression, chances are that you will develop IBS within one year. We now know that the gut and brain are inextricably linked, a landmark study from Cedars-Sinai Medical Centre in the US used gold standard science to show that gut bacteria are key contributors to the cause of IBS. Yet there has not been a solution to the devastating conditions - until now. Shann Jones, founder of Chuckling Goat, who sell goats milk kefir products and is author of a new book The Kefir Solution explains cutting-edge research that reveals the connection between IBS, anxiety and depression, due to the recently discovered brain-gut axis. As a result - if you heal the gut, you heal the brain - and vice versa. Kefir is a "psychobiotic" that puts the good bugs back in your gut. Kefir is a fermented milk drink, well used across Europe and becoming more known in the UK. It tastes a bit like fizzy yoghurt (you get used to it) and only a small amount is needed to help the symptoms, but of course diet and lifestyle play a part too Trying to get it into kids is harder, but I have found that you can blend it with banana or mango and it works well. Shann is keen to point out it isn’t a quick fix, but while it can take many months you will be literally healing from within, which can mean a permanent solution. You can buy kefir in health shops across Hertfordshire and in some supermarkets; if you want the best quality goats milk kefir (usually fine for anyone with lactose intolerance) then Chuckling Goat can deliver. The Kefir Solution by Shann Jones is published by Hay House www.chucklinggoat.co.uk

You have a knack for dispelling fear and putting others at ease. It feels good to move the focus from your professional to your personal life.

AQUARIUS (Jan 21st-February19th) A close relationship will burst into flower on the 11th, thanks to a powerful Solar Eclipse. Two heads are definitely better than one during midAugust. If you are having difficulty reaching your professional goals, think about hiring a manager, agent or talent representative. This will allow you to focus on your craft while your partner finds work for you. Are you looking for love? You will find it at a sporting event, art show or contest. Your pulse will pound when you cross paths with a glamorous person who has a warm smile. On the 26th, the Full Moon will mark a career milestone. Getting an award or bonus for your exceptional performance will be gratifying. After posing for pictures and taking some bows, you'll be ready to adopt a lower key role. Working from behind the scenes will give you a chance to develop some bold ideas. It will be a relief to escape public scrutiny.

SCORPIO (Oct 24th-Nov22nd) An exciting job offer will arrive on or around the 11th, courtesy of a favourable Solar Eclipse. As a general rule, you pour most of your energy into personal relationships. Working hard to make others happy is a natural extension of your caring instincts. When you become drained and dispirited, it's time to move your energy. Take a few days off, enjoy a spa treatment and treat yourself to a gourmet meal. Above all, stay away from toxic people who always need something from you. After getting a temporary break from these emotional vampires, you may decide to permanently end these ties.

SAGITTARIUS (Nov 23rd-Dec 21st) On the 11th, you'll get an opportunity to travel, write or study. Expanding your horizons will make you more optimistic. You're an adventurous person who feels hemmed in by daily responsibilities. By breaking away from an old routine, you'll realise you have more options than you thought. The chance to live overseas or study with a respected master will cause a black cloud to lift. The Full Moon on the 26th will prompt you to relocate or change your home environment in some way. Moving to a relaxing neighbourhood will be a welcome change of pace. You've always been highly sociable, but it's important to have a secure home base where you can recuperate from parties. If you continue to burn the candle at both ends, you'll suffer a health crisis. Feature on Artist and Gallery Owner - Joanne Bowes Following careers in PR and Education, Joanne graduated as a mature student in 2011 with Contemporary Applied Arts BA (Hons) from the University of Hertfordshire. Since then she has shown work locally with Artists’ Network Bedfordshire and Herts Visual Arts in addition to helping to organise and curate exhibitions with the Discover - Original Artists collective. In October 2017 she realised her long-term dream of opening an Art Gallery - The Workhouse in Dunstable. With a not-for-profit ethos Joanne’s aim is to offer exhibition space to local makers, at affordable prices and develop a creative hub where artists and art lovers can mingle in a relaxed environment. She is strongly influenced by the natural environment and combines this with a deep interest in traditional skills especially weaving, stitching and natural dyeing. She admires William Morris’s work and ideals; landscape artists including Monet, Turner and Van Gogh and is inspired by architects from Charles Rennie Mackintosh and Corbusier to Norman Foster At University she studied the Isle of Harris weavers and was fascinated by their tradition of dyeing yarns using local lichens and plants, thus creating a weave which directly reflected their own environment. This led to her specialism in natural dyeing and direct contact printing, using leaves and plant material, which she incorporates into cotton scarves and handmade sketch books. More recently Joanne has developed her own pigments from natural dyes and uses these to create

16

abstracted watercolour paintings of local fields and hills, which in turn reference the original plants from which they were created. She is also excited by projects based on local social history, creating textile-based art in response to her research. She was part of the Herts Textiles Arts’ Ebb & Flow Exhibition at Parndon Mill where her work reflected her weekly walks along the River Lea from Leagrave to Hertford and currently has work at Mill Green Museum as part of the Threads of Time II Exhibition which drew inspiration from the Delme Radcliffe papers in the Hertfordshire Archives and Local Studies Centre Despite her busy day to day running of “The Workhouse Gallery” she is continuing to walk sections of the River Lea, creating hand-dyed books using leaves gathered during her travels. As part of this she will also be producing work to support the restoration of the mediaeval sunken road at Broxbourne.

Finally, Joanne’s Dunstable Heritage Textile Project, based at The Workhouse, is inspiring a group of the town’s residents to produce artwork drawn from different aspects of local history which will be shown in the gallery in the Autumn. Pop in and meet Joanne at “The Workhouse” which is a quirky, friendly and inclusive gallery in the heart of Dunstable. They feature stylish original art and a range of unique gifts, all created by local artists and makers. The Workhouse is a special place where artists and art lovers meet in a relaxed environment. Come along and choose exclusive works for your home, gifts for friends or treats for yourself. Or grow your own artistic skills with a diverse programme of creative workshops running throughout the year. The Workhouse, 5 Ashton Square, Dunstable, LU6 3SN www.theworkhousedunstable.co.uk

Beer and Cheese Pairing Beer and cheese pairing is becoming more and more popular these days, and men especially couldn’t be more thrilled. They’re a natural pairing, and how can you be upset when you’re munching cheese and sipping a great beer? The three aspects to think about when pairing beer with cheese are Comparative, Contrasting, and Regional. Comparative, hit acid with acid. Contrasting, enjoying that big chocolate stout with a fat, creamy cheese. Regional, it goes back to the phrase “If it grows together it goes together,” and that’s quite often true, especially with cheese and beer. The closer a cheesemaker and brewer are, the more their matches seem to work. When you're preparing a cheese plate, your first instinct may be to crack open some bottles of wine, but beer and cheese have been paired together for centuries. Monasteries and farms frequently produced both, and so cheese and beer played a major role in those monks' and farmers' diets. But what should you pour if you're trying to pair beer and cheese at home? Beer's better - and there's a couple of reasons. First is the effervescence. Beer is constantly scrubbing your palate clean with carbonation, whereas with wine your palate becomes more and more dead with every sip. Also, beer and cheese are parallel in terroir, because the animals that produce cheese eat grains, and beer is a grain-based beverage. There's very little connection between grapes and cheese, but there is a very direct connection between grains and cheese. When you taste beer and cheese together, the cheese will draw out the grain qualities in the beer and tie it all together. How do you go about choosing cheese to pair with beer? Is there a step-by-step process or questions you ask yourself? Begin with the beer and start with the lightest, brightest beer, and then work your way up the scale in colour and alcohol from there. Alcohol is hard, hops are hard, so the bigger the flavour of your beer, the more you have to think about a bigger flavour to go with it. On the lighter end, you want something with more acidity, and on the heavier end, you're thinking about weight. Quite often you can serve a light beer like a Belgian table beer or a weisse and pair them with a higher-acid cheese like a fresh

18

Ladysmith cow's milk cheese from Samish Bay that's only a couple days old. It has a bright acidity and a nice lactic tang that works great with light, bright beers. As you go up the scale, you'll want to pair bigger flavours with bigger flavours, without overwhelming either. For example, with an imperial stout, instead of trying to trump the massive flavour in the beer, you'll want to pair it something like a triple creme that helps envelope the beer with fat. Acidity is key. Fruit has an innate brightness, so you have to bring acid with your cheese pairing. A lot of cheeses can be very salty, and fruit beer has a tendency to magnify that saltiness, so we quickly realised that high-acid cheeses were the way to go. We tried some flabbier, less acidic cheeses, but the fruit beer quickly overwhelmed them.

What kinds of cheese just don't work with beer? Sheep's milk cheeses are hard to pair with beer. The sweeter-like lanolin notes you get from sheep's milk cheeses really become prominent alongside the esters in beer. It's funny, because with wine it's not really the case, but with beer, it's the one kind of cheese that's always tough. What kinds of beer just don't work with cheese? Really hoppy beers are the hardest to pair with cheese. If you really want to pair a cheese with a super-hoppy beer, you need to go with a sharp, 10-year aged cheddar or something similar. Something that has a lot of sharp acidity. Rogue Creamery Smokey Blue is another one that has enough guts and a little bit of smoke to handle the hops. It doesn't quite make sense why it works, but it's one that consistently I lean on in those situations.

Salad We are in salad season and should all be enjoying healthy, home grown leaves from the veg patch or window sill. It is really easy to grow and the continual growth varieties mean you can pick off leaves for months. For many a salad is a side dish decoration and nothing more, for others it is the “optional” part of your meal. But a good salad can be a truly amazing thing, especially by adding lots of grated veg, cheese, egg, fish and a simple homemade dressing. Forget limp iceberg lettuce and a few lowly tomatoes, a true salad should be a feast of colour that is fresh and crisp and full of healthy nutrients. If you can’t grow salad, or local ‘fur and feather’ have eaten your crop, our shops are now overflowing with a whole spectrum of salad leaves in all colours, shapes and sizes, coupled with fresh, sweet and juicy British tomatoes, crunchy cucumber and a host of other delights, a salad need not be a dreary affair.

24

There are more than 60 varieties of lettuce and salad leaves grown in the UK and we are growing and consuming more salad than ever before, so if you don’t like one leaf, there’s bound to be another that’s worth trying! More salad facts: 1. Lettuce was first eaten by the ancient kings of Persia 2,500 years ago. The ancient Greeks and Romans thought it helped you to have a good night’s sleep. 2. Christopher Columbus introduced lettuce to the new world and from there lettuce in the United States went into cultivation. 3. The 17th century horticulturist, John Evelyn, introduced the vegetable to England. 4. The first supplies of Iceberg lettuce arrived on British shores in the mid 1970’s from the USA where it was developed, but it was not until 1984 that British growers truly mastered its growing techniques. 5. In Britain we eat less salad per head than the rest of Europe and the USA To make a meal of it, why not throw together a tasty Caesar salad with some succulent free-range chicken on top, or bring a bit of Far Eastern promise to the table by whipping up a spicy Thai salad? Stuck for ideas? https://www.makemoreofsalad.com/news is packed with recipe ideas, hints and buying tips to help inspire your salad days. For the freshest and most unusual selections of locally-produced salad leaves, head to your local grocer or farm shop on the BigBarn map. Here’s a selection of wines to look out for in 2018 Cremant (sparkling wine) The powerhouses of champagne and prosecco had better watch over their shoulders as there is a new kid on the block, and what a star this is. This wine style can be found in the Loire Valley, Alsace and Burgundy, the latter being harder to find, and it helps being able to go direct to smaller producers and vineyards. Cremant uses the Champagne Method often called Traditional Method, but costs half the price, and giving the same quality with a lovely brioche and buttery structure. Negroamaro This red wine grape can be found in the heal of Italy’s far south in Puglia, unlike most areas of Italy which have been well established and recognized by the world, this area and grape has to try so much harder to get noticed, it has an incredible structure for a wine at this lower price point and fantastic long-lasting flavour with savoury tones and black cherry noticeable, making this a crowd-pleasing variety. Picpoul De Pinet At CAVAVIN we have been talking about this grape for some time and at long last it is finally getting the recognition it deserves. If you are looking for an alternative to sauvignon blanc then look no further, this wine has a medium body with good fruity structure, and an expression of pears. Fresh and amazing with seafood or summer salads.

Seasonal wines Spring, Asparagus Asparagus with pearl barley and bacon Fiano, Mandrarossa, Sicily, Italy. This Italian wine attractively golden in the glass with some hints of green around the edges. The palate is inviting, exotic and generous, displaying aromatic tropical fruits and hints of minerals. Medium bodied and dry with balancing acidity keeping the tropical fruits clean and refreshing, finishes dry, textured and crisp. Summer, Apple Pork schnitzel with fried duck egg, pickled apple and apple purĂŠe Chenin Blanc, Juno Cape Fair Trade, Western Cape, South Africa. A youthful fresh wine with pear drop flavours. Medium bodied, real freshness on the palate with crunchy green apple and grapefruit flavours. A fresh and appetisingly tangy finish.

26

Autumn, Venison Venison Wellington with caramelised onions and red wine jus Barolo Casetta, Piedmont, Italy From the Piedmont region of Italy, deep ruby in colour, opens with ripe fruit aromas of prune and strawberry, followed by cherries, slightly sweet. With time in the glass, it becomes more complex, releasing a unique aroma of black liquorice and spearmint

Winter, celeriac Pork tenderloin with sage and celeriac dauphinoise Pinot Noir, Edmond Cornu, Savigny-les-Beaune, France This wonderful wine from Burgundy, France is intense in colour, rich, full and with low tannins. Rapidly develops aromas of fresh fruit comprising of plums and cherries before revealing a lightly spicy character for immediate pleasure.
