Exclusive Interview with Glenn Tilbrook of Squeeze Have guitar, will travel. That’s been Glenn Tilbrook’s unwavering mantra in a musical career stretching back to the 1970s, and which shows no signs of dimming as he sets out on the road again for a string of solo shows throughout Autumn 2018 and Spring 2019. Fresh from releasing The Knowledge with Squeeze to critical acclaim, it’s the acoustic concerts that are the focus of his attention, relishing the opportunity to get up close and personal with his legion of fans. Performing has always been his first love and doing so away from the dynamic of his famous, much cherished – nay, adored – group keeps him fresh and engaged. You are currently touring the UK and the tour has the mantra ‘have guitar will travel’. Yes, I am doing solo dates and I love playing by myself, it is a very free sort of show, I can do what I like, improvise - do what I like and make the set up as I go along dipping from both Squeeze and my solo catalogues. It’s been a while since I’ve done solo gigs, and it will be great to have a lot of material to choose from, and to see how audiences react. I hate to use the cliché of it being a ‘journey’, but if the audience are with you for the ride it can be a lot of fun. They’ll hear some new stuff, some things they’ve loved from times gone by, a bit of everything. As long as I can mix it up and keep things fresh for myself I’m hoping it will be fresh for everyone else too. For me, I think I would go mad if I was just doing Squeeze all the time. Going out on my own is a chance to look around and experiment more, and then bring some of that experimentation back to the band. I’d like to think I’ve always done that; my last solo album (2014’s Happy Ending) infused so much of what Squeeze did subsequently. I think one of the dangers of being in a band like Squeeze is that you think you know what you are, and you stick to it. I absolutely love and respect where Squeeze came from, but we can’t stay there. It just wouldn’t work. That’s why it was important for us to incorporate as many new songs into the Squeeze live set as we can. There may be a couple where you’re thinking you’re chancing arm and you hope the old favourites will help carry them through, but on our last tour songs like ‘A&E’ and ‘Rough Ride’ (from 2017’s The Knowledge) were carrying themselves. This time we are raising money for The Trussell Trust, who coordinate foodbanks around the country and I am doing an exclusive 4 track EP, the entire proceeds of which go to the local Trussell trusts where I am playing and also the merchandise proceeds are going to them and we are asking people to bring non-perishable foods and donate. It is just a big drive to get involved there and I wanted to do that because I am a musician and I can do that sort of thing. It is a small-scale thing and it is not about me but it is about how I can help. Why The Trussell Trust and how long have you been supporting them? It is shameful that in 2018 there are people that can’t afford to put food on the table. Anyone, from any walk of life, can fall upon dire times, you lose your job, your

marriage goes, whatever could happen to anyone of us could be unlucky enough and often it is just bad luck, plain bad luck, that people end up in those circumstances so I thought I wanted to do something to help them out as they are such brilliant people and this is the first thing I have done with them. I contacted them after I saw a documentary on BBC Scotland about what they did, and it broke my heart. Often statistics don’t tell stories and stories are what bring it alive to people and it certainly did to me. If you were in charge of the country for the day what would be the first thing you would do? I would certainly stop the Universal Credit from coming in. I would give people who don’t have enough money a decent living wage. I would probably tighten up on off shore banking, I think that those that people that have enough money should not be fighting to pay the least amount of tax, I think that is obscene really. That would get me started anyway. Talking about getting started, how did you get started in the music business? I was obsessed with music from any time I can remember, and I started playing the guitar when I was 7. It was what I always wanted to do, I met Jools (Holland) when I was 13 and Chris Difford when I was 15 and we all started playing together, Chris and I started writing together and there was no plan B, that’s all we wanted to do so that’s what we did. That was a few years ago now? Yes, I met Jools in 1972 and Chris in 1973 and there has been a band called Squeeze ever since. When you were growing up in Woolwich, London, who did you listen to, to inspired you? I feel very privileged to have grown up in the days of pirate radio, so I was not force fed, I had a diet of pop music from a particular fine time for writing, it was an odd time because it was on the cusp of something - there was all this youthful music coming out and people like Kathy Kirby and Ked Dodd who seemed like from another time but brilliant singers, balladeers and all this stuff went in to the mix and it went to this little man’s brain and never went away. I think that period of time musically was the bedrock of what I do. When you are writing a new song how does the process work for you? I always try and do something different so when I am writing I will use my IPad or phone, I don’t use paper anymore. I write lots of different thing and squirrel them away in different places on my tablet or whatever and likewise with music - I record on to there and have lots of rough bits and pieces and collate it at the end. I don’t know if I have 10, 20 or 30 bits of music but I try to pull it all together and then work on those ideas. Squeeze have had an amazing period of time the last 5 or so years, we have sold more tickets than we ever have, the reactions from the audiences have been the 5

best we have ever had in our lives and we have started headlining festivals. Iit is just like everything has gone right for us and I am very, very grateful. Is there anything you would like to do in the future that you have not done? I would love to go to Nashville and record a country album, we sort of did it with “Labelled with Love it was like British country. What would be your idea of a perfect weekend? To be gathered with my family and a few friends on a beach in Whitstable, Kent

Away from the music business what do you do to relax? What I like doing is cooking If I was coming around for dinner what would you cook me? I am not a fancy cook but what I am doing at the moment is falling in love with my homemade pesto, so it would be something including that.

Glenn Tilbrook’s solo tour dates will be promoting awareness and donations for The Trussell Trust, the charity that supports a network of foodbanks around the UK. At most venues there will be food drop points and collection boxes, and Glenn will also be donating all profits from his merchandise, including an exclusive 4 track EP, to the organisation. Food donated at the venues will be collected and distributed to the nearest Trussell Trust foodbank. The Trussell Trust: The Trussell Trust is an anti-poverty charity that supports a network of over 420 foodbanks across the UK. In 2017-2018, 1,332,952 three-day emergency food supplies were provided to people referred to foodbanks in The Trussell Trust’s network, a 13% increase on the previous year. Over a third of supplies (484,026) went to children. It takes more than food to end hunger. The Trussell Trust therefore does three things: supports its network to provide emergency food to people referred; helps foodbanks to provide on-site additional help or signpost people to relevant local charities to resolve the cause of foodbank referral; and brings together the experiences of hundreds of communities on the frontline to challenge the structural issues that lock people in poverty and campaign for longterm change so we can see a future without the need for foodbanks. Guidance on Mental Health in the Workplace: World Mental Health day took place on the 10 October and Acas (Arbitration, Conciliation, Advisory, Service) have produced guidance around helping to manage mental health in the workplace and have developed a new user friendly, fully understandable framework for positive mental health at work, for employers, employees and line managers. The advice can be accessed here.

"Mental health in the workplace has always been an issue but employees have always kept it secret due to believing it will bring them embarrassment and shame. Thankfully this is now being brought out into the open more with businesses taking action and the publicity and help Princes William and Harry and their wives, together with Mind and other charitable institutions are providing. “We all need to ensure that it is managed correctly, and the right advice / support requested” comments Matthew from Consensus HR. Almost 50% of workers on zero-hours contracts want more regular work, a study has revealed. The report, written by three labour market economists, found 44% of workers in a survey of 20,000 people on zero-hours contracts would like more hours and greater levels of job security. Less than one-third of those surveyed said they enjoyed the flexibility in the ‘gig economy’, challenging claims by the likes of Deliveroo that workers benefited from not having to work fixed hours. "This subject is one that has been going on for a number of years now and must admit initially I was not in favour of Zero Hour Contracts although I have now seen why some employees prefer them in some sectors such as catering and the flexibility it provides on both sides. However, I find that many times they are used as a get out clause for business who lack management / organisational skills in labour planning and gives the impression to the employee that the business does not value their input. Companies need to seriously consider the possible repercussions and benefits to the business prior to introducing them to their business" comments Matthew of Consensus HR. ………………………………………………………………………………………………..

YOUR LOCAL SOLICITORS Do you have the AMBITION to ensure your business survives you? If you own a small business or are a sole trader, have you considered whether you have made adequate provision for when you are gone? This doesn’t just mean unexpected death, but simply being out of action temporarily – for example due to illness or being stranded abroad. Business Continuity is important for everyone – but especially so for small businesses when a lot of the most important information is kept in a safe place – your head! At Curwens we believe that helping small businesses succeed is vital for our local economy and community. That is why we are again sponsoring the annual Hertfordshire AMBITION event held at the Spotlight Theatre in Hoddesdon. You get top tips and advice from experienced keynote speakers, plus the chance to network with your local business colleagues. So to ensure the future of your business, book your AMBITION 2018 ticket for Wednesday 14th November 2018 at www.ambition.events knowing you are helping your business, your family, plus others – as all ticket sales go to local charities. Then sit back and consider these important points: • • •

Is your business capable of continuing to deliver its products or services at an acceptable level following a disruptive incident? How would the business continue to run if you (or a key person) suddenly died, or had an accident that put them out of action? What happens if there is a practical problem such as fire or flood, IT systems crash, or even something extreme like a terrorist attack?

Even a short interruption can have a disproportionate effect on a small business – totally halting output and letting customers down. Plus, it is more difficult to absorb the financial impact of any business interruption. A high percentage of small businesses affected by a major incident either never re-open or close within 18 months. It is therefore essential that you have a Business Continuity Plan in place together with appropriate insurances, a will, and ideally Lasting Powers of Attorney. Finally - make sure your employees or family members know where all these important documents are kept! The first steps to creating Your Business Continuity Plan: Step 1: Define your disasters and assess your risks Step 2: What would need to be done in the event of a disaster Step 3: Test the plan At Curwens, we can help with all areas of protecting your business from commercial property and company advice, to dealing with employees, to assisting with the more personal matters – such as preparing a Will or Lasting Power of Attorney. We are always happy to have an initial chat with you on the telephone to run through exactly what you need. So if you have any questions just give us a ring on 01992 463727 or take a look at our website www.curwens.co.uk. We will also have a stand at the Ambition 2018 event. Curwens LLP are your local solicitors based in Royston, Hoddesdon, and Enfield.

Russell Grant's Monthly Horoscopes November CANCER (June22nd-July23rd) If you're recovering from a bad breakup, it's time to return to the dating game. The New Moon on the 7th will put you in the path of an attentive admirer who makes you excited to be alive. You share many of the same interests and values; a powerful physical chemistry is the cherry on this luscious cake. Are you already in a serious relationship? Your partner will give you a beautiful token of their appreciation. Don't brush off this tribute; instead, show your profound thanks for it. The more gracious you are about accepting tributes, the more often they will be given. The Full Moon on the 23rd urges you to let go of an old grudge. Dwelling on a betrayal will stop you taking advantage of new opportunities. A terrific job offer is on the horizon; be on the alert for it. Attend a party instead of staying home sulking.

ARIES (March21st-April20th) Things are getting serious on the romantic front in early November. A supportive New Moon on the 7th makes it a great time to let down your defences with someone who has demonstrated their loyalty. You might decide to move in together or even get engaged or married. Are you single? Keep your eyes open for someone special at a religious, cultural or artistic gathering. You could make a love connection. If you already have a serious partner, they could get a raise or lucrative job that greatly improves your own financial standing. Take this opportunity to book a romantic holiday together. On the 23rd, the Full Moon brings troubling news about a legal matter. It may be better to settle out of court or drop this fight altogether. If a decision is rendered against you, take some time to process your disappointment. Then pull yourself together and make a fresh start.

LEO (July24th-August23rd) A domestic matter will command your attention on or around the 7th, courtesy of the New Moon. If you've been looking for a place to live, you'll find a lovely, secluded property close to a body of water. This will be a terrific investment. If you're not able to afford a deposit, don't worry. A generous relative will give you the funds to finance this deal. Are you happy with your current abode? This would be a great time to make room for a baby, roommate or elderly relative. Any addition to your household will give it a cosy, happy atmosphere. On the 23rd, you will be inspired to break ranks with a troubled organisation. You don't want your reputation tarnished by some underhanded activities. Don't bother to explain your defection to angry members. These guilt trips are just sheer manipulations. Block phone calls and emails if you feel harassed.

TAURUS (April21st-May21st) An exciting opportunity to team up with a highly creative person will arrive on or around the 7th. That's when an intensifying New Moon prompts you to take on a partner. Whether you're looking for love or want to form a business partnership, it's time to make your move. An engagement or marriage will pave the way for a lifetime of happiness. Working with a fellow artist will help you realise a cherished dream. The Full Moon on the 23rd could bring a challenge to your financial position. A contractor could deduct money for expenses or delays, making you very upset. Launching a legal case will fall flat. You're better off cutting your losses and moving on to bigger and better assignments. Treat this unfortunate setback as a learning opportunity. Don't begin work on a project until you have the terms set down in black and white. Ask a lawyer to review all contracts before signing them.

VIRGO (August24th-September23rd) Launching a blog or podcast on the 7th will attract fame and acclaim. That's when the New Moon will showcase your communication abilities. Being able to share your ideas with an adoring public will be a good use of this talent. If you've been thinking of taking up writing, this would be an ideal time to begin. Ideas will flow like a mighty river. Taking charge of a study group could also be rewarding. Acquiring valuable skills will improve your professional prospects. The Full Moon on the 23rd brings pressure on the career front. You'll be asked to assume some unpleasant responsibilities. This work assignment will involve working hard while someone else takes all the credit. It's better to look for employment elsewhere. It will take time to land a position worthy of your abilities, so be patient. Whenever you feel discouraged, lean on your family for support. They'll give you the strength to continue.

GEMINI (May22nd-June21st) The New Moon on the 7th is ideal for landing a job or hiring help. If you're looking for work, you'll find a job that involves working on a commission basis. At first, you won't be thrilled about such an arrangement. After making a few impressive sales, you'll realise this way of working is actually more profitable than taking a flat salary. If you run a business and require help, hold interviews. You'll find the perfect candidates. Look for staff who are able to work independently. This will give you time to focus on the big picture. On the 23rd, the Full Moon tempts you to overhaul your look. Any changes you make should be temporary, as there is a good chance you won't like the results. If you shop for clothes, make sure you understand the return policy before buying anything. Keep the receipts in a safe place, as you'll probably need them.

10

LIBRA (September24th-October23rd)

CAPRICORN (Dec 22nd-Jan20th)

The New Moon on the 7th is perfect for asking for a raise or landing a lucrative job. Instead of increasing your standard of living, put your excess income into a savings account, where it will protect you from financial uncertainty. If your company isn't in the position to increase your salary, they might be able to give you added perks. More annual leave, a travel allowance and a merit based commission are among the possibilities. On the 23rd, a Full Moon will create legal difficulties. It may be impossible to move forward with a business plan until you get official permission. If your company sends you on an overseas trip, make sure your passport is up to date. Bureaucratic nightmares can cause delays and even cancelations. Instead of pressing the issue, give in gracefully and form an alternative plan. You may have to wait for other people to make decisions at the end of November.

The New Moon on the 7th is great for joining a sports team, political organisation or humanitarian group. Donating your time and energy to a meaningful cause will lift your spirits. You're tired of going from home to work and back again. Having some interests outside of your family and career is healthy. The people you meet during the first half of November will be kind and considerate. Prepare to make some lifelong friends. On the 23rd, the Full Moon will bring a health concern to your attention. Talk to a doctor about a nagging ache or pain. It will be necessary to alter some routines to get better. Be willing to cut certain foods from your diet. Taking gentle exercise will also improve your energy level. Resist the temptation to stay up all hours. By reducing your social schedule, the final days of the month will restore your equilibrium.

SCORPIO (Oct 24th-Nov 22nd)

AQUARIUS (January21st-February19th)

The New Moon on the 7th invites you to undergo a makeover. Updating your hairstyle, getting a cosmetic procedure or revamping your wardrobe will lift your spirits. Don't be surprised when you become a hot commodity on the romance market. Your new look will attract admirers like bees to a flower. This is also a good time to change industries or adopt a different role. Any move designed to change your image will be successful. On the 23rd, a bonus or royalty payment will be less than you expected. Trying to recoup more money will be an exercise in futility. It's better to channel your energy into finding new sources of regular income. Finding freelance work or landing a steady job will release you from debt. It will also help you enjoy occasional luxuries. When one door closes, another opens, but you must be on the lookout for this opportunity.

An exciting career opportunity will arrive on the 7th, courtesy of the passionate New Moon. Being able to make money by doing work you love will be empowering. You're not the type who can be happy in a dead-end job. Opportunities related to environmental protection, antique restoration or research will give you a chance to move up the ladder to success. Not only that, but such work will give life a sense of purpose and meaning. Getting out of bed each day will be invigorating instead of dispiriting. The Full Moon on the 23rd warns you against taking risks. Confessing a crush or making an investment will result in a big disappointment. Maintain the status quo during the second half of November, even if it bores you to do so. Sometimes it's better to lead a predictable life than stir the pot. There will be plenty of chances for excitement during the Christmas season.

SAGITTARIUS (Nov 23rd-Dec21st)

PISCES (February20th-March20th)

Spend the first half of November resting and relaxing. On the 7th, the New Moon will prompt you to withdraw from the party scene. Enjoying the peace and quiet of home will be therapeutic. Take this opportunity to read for pleasure, listen to music and spend time with your pets. Low key activities will prepare you for a busy Christmas season next month. The Full Moon on the 23rd puts strain on a close relationship. It will be difficult to discuss your feelings with a loved one who seems intent on twisting your words. Instead of forcing the issue, make a strategic retreat. You're better off surrounding yourself with supportive people who are sympathetic to your situation. The second half of November will make you decide whether it's worth maintaining this relationship or not. You can't compromise your own well-being for the sake of somebody else. Protect your interests at all costs.

The New Moon on the 7th invites you to expand your horizons. Take this opportunity to earn an advanced degree, travel abroad or publish some work of your own. Venturing into unfamiliar territory will attract fame and acclaim. People will be charmed by your creativity and compassion. They'll welcome you into an environment that makes you feel supported. Life is about to take an exciting turn; say 'yes' to every opportunity to advance your knowledge and experience different cultures. On the 23rd, family matters will weigh on your heart. Arguing about religion and politics with a relative creates stress. It may be best to put this relationship on hold, at least until tempers subside. If you can no longer maintain ties with a narrowminded family member, break things off as civilly is possible. Forcing this relationship will just create misery on both sides. When in doubt, follow your moral code. It will never let you down.

How Food Affects your Mood By Janey Lee Grace

It was mental health awareness day recently and, amongst the many tips and strategies for boosting our wellbeing and reducing stress levels, I was interested to read some comments by nutritional therapist Louise Mercieca on how food affects our mood. Louise is the founder of The Health Kick and author of How Food Shapes Your Child, but it’s definitely not just children who get ‘sugar highs and lows’ and feel out of sorts when they have had one too many doughnuts or cans of fizzy drink. Louise says ‘The food we eat has a profound effect on our mood, food can literally make us happy, sad, alert, calm, and irritable or confused. Blood sugar levels are important, if they drop you might feel tired, anxious, nervous irritable and depressed. Continuing low levels can lead to; sleepiness, confusion and sweating. Fluctuating blood sugar levels also tend to create a cycle of eating the wrong foods, which results in varying moods and an increased risk of metabolic disorders. Eating high fibre and ‘complex’ carbs (whole foods) over any refined carbs (white and processed foods) will help’ To feel happy and stabilise mood, eat foods that help the body to produce Dopamine such as eggs, dairy, lean meats, seeds, wholegrains, fish, cottage cheese, seaweed (spirulina), soy protein. Tryptophan, which aids the production of serotonin, is found in cottage cheese, milk, red meat (lean), fish, chicken, chickpeas, bananas, almonds, sunflower seeds, spirulina, peanuts. It goes without saying we should avoid too much sugar and processed foods but that doesn’t mean we can’t have some wonderful guilt free treats. Louise specialises in offering us suggestions for 'Healthy Swaps' –She has a collection of recipes showing easy to make healthy alternatives to everyday favourites such as baked beans, ketchup, fish fingers, take-away alternatives and cakes. She came up with some great healthy Halloween snacks, and will have some lined up for the festive season

So there’s no excuse, you can have your cake (well your choccy mousse) and eat it, I challenge you to be honest, if we hadn’t told you, once tasted would you know this contained avocado?

Avocado chocolate mousse

1 banana 1 avocado 1 tbsp raw cacao powder Squeeze of Maple Syrup 1.Simply combine all ingredients in a processor, transfer to individual dishes and pop in the fridge. 2.Chill for at least 2 hours before serving. 3.Use more banana to sweeten rather than more Maple Syrup. Art Column - Sound & Weave/ Rhythm of the Weave Woven Tapestry is not what most people associate with sound but an unusual exhibition is about to open in Richmond which is all about “Sound and Weave” and alongside it “Rhythm of the Weave”. Both show the works of members of the British Tapestry Group including the local artist weaver, Stephanie Edwards, from Hertford. Stephanie has been weaving tapestries for over 20 years and has exhibited in various Hertfordshire galleries alongside other textile artists. Stephanie was one of 11 weavers selected from all over Britain to exhibit at the Stables Gallery, Orleans House, in Richmond opening on 22nd November 2018 through to 24th February 2019. Her tapestry, entitled “Shh – The Sound of Silence” is intriguing as it is a visual interpretation of the experience of beginning to lose sound, to realise she is going deaf. This is just one of the exhibits that demonstrate a highly experimental approach that takes tapestry away from the traditional wall hung weavings. Her work, alongside the others, emphasizes a deep interest in sound and humanity and the internal processes of the mind and body on sound, rather than examining music and manufactured sound. At this time of renewed interest in woven tapestry the BTG Sound and Weave exhibition explores and expands the boundaries and language of traditional tapestry weaving, creating the opportunity for the artists to move their work on from traditional methods towards new ways of making and expressing their ideas. Taking one of tapestry’s key strengths as a visual medium – the interplay between colour, light and texture – the artists bring in non-visual elements to create new works that stimulate and delight multiple senses. Rhythm of the Weave, shown in conjunction with Sound and Weave, offers a different perspective. The exhibition explores each weaver’s interpretation of the theme. The nature of tapestry weaving is built on the rhythm developed as they are weaving away; “Our fingers work on one section while our minds work at the challenge of the next part”. Each piece conforms to a specific size limit to enable the creation of a cohesive flow within the installation. A theme or a thread which runs through and links each piece. Admission is free to see the exhibitions and well worth the trip to Richmond. More information can be found via the website: https://www.orleanshousegallery.org/

Seafood From the fishermen who catch the fish, fish mongers who sell their produce, to the chefs who create excellent creations for you, seafood is a fantastic healthy alternative to the midweek food drag. Eating just two portions of seafood per week helps support the British seafood industry and is a healthy and fast meal option for you and your family. Fish is a very good source of nutrients, being rich in omega 3 which helps contribute to a healthy heart, brain, the skin and the joints. Protein is found in all fish but Halibut, Swordfish and Tuna are very high in protein, essential for building and the maintenance of muscle. Shellfish such as Mussels contain Vitamin A, which is crucial for the function of the eyes. Iodine can be found in Seaweed and Cod which helps the thyroid function, which is essential for growth and metabolism. Selenium can be found in Tuna and is essential for enzyme function, Zinc is found in Clams, Crab and Lobster and helps wound healing as well as cell growth. Potassium is found in all cells and Vitamin D helps the absorption of calcium which is crucial for bone and teeth growth, Salmon is a great source of these nutrients. 11 facts about seafood: 1. Fish should always be cooked at a low to medium temperature. When you do this, you are going to ensure that all of the moisture that the fish has is preserved and still there upon consumption. Never cook fish at a temperature more than 350 degrees. At the kind of heat, you’re risking losing a ton of flavour. 2. You can tell if a piece of fish is fresh by doing your own little test. Get a pot of cold water and put the piece of fish in the water. If the fish floats, it means that it has been caught pretty recently. If the fish sinks, it may not be as fresh as you would like for it to be. 3. The best way to thaw fish is by using milk. Take frozen fish and place it in milk to allow it to give it a great colour and give you a great flavour. 4. Having trouble getting oysters out of their shell? Try to get some club soda and let the oysters soak in it for a few minutes. It can help with the process of getting them out of their shells. 5. Fish are full of Omega-3 fatty acids. Salmon, tuna, trout and herring are all fish with high levels of Omega-3. This is considered the good fat and can actually be very healthy to your heart.

22

6. Pregnant women should not eat fish of any type more than twice in any given week. The reason for this is that fish can be contaminated with different types of bacteria as well as mercury that can be harmful to the unborn child. 7. Comparing the protein content of sardines against a steak is pretty impressive. Eating 100 grams of sardines is going to give you more protein than eating a steak of the same weight. 8. Fish can counter your sodium intake. When you consume a lot of fish, you can actually reduce some of the negative impact that your body is going to get from consuming a great deal of sodium. 9. Halibut and tuna are the safest fish to eat in terms of bacteria. Sole is also typically seen as a very safe fish to eat. 10. Shellfish have the ability to filter through roughly 15 to 20 gallons of water every single day. Shellfish survive by filtering this water out. 11. Really fresh fish is best eaten raw like Sushi but needs to be fish that are predators and live near the surface like tuna, sea bass, swordfish, mackerel, trout, salmon, octopus and not deep sea fish like cod. English Sparkling wine It is amazing how English sparkling wine has improved over the past decade, what was once a hobby has become a thriving business, and it’s not just good; it’s very good indeed with many a blind tasting beating the powerhouse that is Champagne. The soil in southern England is similar to the terroir in Champagne. And in little old Hertfordshire we have a few gems dating back to the 1970’s to our latest vineyard releasing it first vintage this year. Three Squirrels Vineyard

The grapes planted at Hazel End are all white and, until 2001, the wines made from these were all still wines. The first sparkling wine, made from the 2001 vintage, was available in 2003. The still wines have always been sold under the "Hazel End" label but "Three Squirrels" was chosen for the sparkling, inspired by the sign that has hung outside Gosling's Bank (now Barclays) at 19 Fleet Street since the 17th century where Samuel Pepys once enjoyed "a pint of wine". Hazel End has been Gosling territory for over two centuries. The structure in this wine is incredible due to the aging process, its aged for 3 years on the lees which is are more than the minimum requirement to be labelled as English Sparkling (one year) and then off course

24

further bottle aging which brings out the deep biscuit and brioche tones on top of the fresh apples and with the price tag of £20 it’s amazing value for money considering the work gone into it. There are also a few still wines available, but the Bacchus, at £10.50, really stands out for us due to the fresh clean style with low acidity making this a perfect aperitif wine. Four Acres Estate The Four Acres Estate is a small family run single vineyard set on a hillside above the Ash Valley in Little Hadham, Hertfordshire. Wine maker and owner Platon Loizou decided he wanted to get back to his Cypriot roots and fulfil a long-term dream of making wine. Since 2010 he has been out in all weathers, getting closer to nature tending his precious vines, nurturing them from saplings to maturity, bolstering his knowledge by consulting at every step with some of the best vintners in the country. The simple fact is that making hand crafted English Sparkling Wine cannot be rushed, especially as Platon elected to go for the best quality by aging on the lees (a beneficial process pioneered in France known as sur lie), the bottles are laid for 18 months rather than the normal 12 and then hand 'riddled' (turned) twice a day for two weeks prior to disgorging. In summer 2018 both the Blanc de Blancs (£25.00) and Rosé (£27.50) were released. The rose is fresh and bright with a light red berry expression and stone fruits ... whilst the Blanc de Blanc has more depth giving hints of fresh toast, green apples and zesty tones; both again are amazing value for money.
