Dave eventually married Marge, and Marda Angus Farms was established. “We have one of the original cow families that our family has owned since 1940,” says Cody. “There are no records for that cow family before that year.” Marda Angus Farms has about 300 head of cattle on the place at any one time, and manages 900

It takes more than luck for a family cattle operation to last more than 80 years. The Quam family of Lodi, Wis., can speak to the commitment, hard work, vision and passion that are required to build a lasting legacy in the cattle business—because they have done it.

We just want good size cattle that grow fast, perform, do their job, be problem free and have a good disposition.” Cody notes that they aim for Marda bulls to be big, athletic, easy keeping, fast growing, and sure-footed. All calves born on Marda Angus Farms are genomic tested. DNA samples are taken in the spring when calves are processed for their first round of shots, according to Cody. “All replacement heifers and bulls are genomic tested,” he adds. “We believe in genomic testing, and have found good success with it. TEST, DON’T GUESS SAMPLING AND TESTING HAY F
all is here and the weather reminds us of the changing of the seasons. This is the time of year when many producers are hauling hay home for the winter as well as pricing and purchasing hay. There is a tremendous range in hay quality depending upon level of maturity, fertilization, growing conditions, harvest circumstances and storage methods. Accurately sampling and testing hay is the only way to get a real understanding of the nutritive value of feed. Using values from previous years or a “book value” can be costly since a producer may incorrectly develop a ration using values that aren’t representative.
ed from the same field consisting of similar types of plants, cutting dates, maturity, variety, weed contamination, type of harvest equipment, curing methods and storage conditions. When these conditions differ, feed should be designated and sampled as a separate “lot”.
probes should be kept sharp to cut through hay and prevent selective sampling. Avoid getting hay probes hot when using a drill to drive the probe into the bale, since friction from high speeds can heat the probe to a point where it damages the hay sample.
Hay samples should be taken using a hay probe or a core sampler. The hay probe should penetrate at least 12-18 inches into the bale and have an internal diameter of at least 3/8 of an inch. Using your hand to grab a sample will not consistently provide reliable results. Tips of hay
To get a representative hay sample from a “lot” of hay, select 15-20 bales in the lot. Knowing the total number of bales that are present can help identify a random method that should be used (such as sample every fourth bale) to obtain an accurate sample. Once all of

GUIDELINES FOR SAMPLING
28
When sampling hay, getting a representative sample is a critical first step. Samples must accurately represent the entire lot of hay. When obtaining a sample for analysis, it should be kept separate from other lots of hay. The UNL NebGuide “Sampling Feeds for Analyses” states that a “lot” of hay should be harvest-

Once hay samples have been taken store in a plastic sealed bag in cool dry place until the sample is ready to be submitted. Samples that contain over 15% moisture should be frozen. Make sure to label the bag with your name, address, lot identification and feed type. Most commercial labs provide an information submittal form that allows producers to select a standard feed test for forages. Whenever possible, send samples into the lab early in the week to avoid having the samples sit over a weekend.
ANALYZE FOR MOISTURE, PROTEIN AND ENERGY Cattle feeds should be analyzed for moisture, protein and energy. Producers may also want to have forages tested for key minerals. Feed sample results are usually reported on an as-is and dry-matter basis. When developing a ration for cattle or comparing feeds to one another, always utilize the nutrient analysis on a dry-matter basis. After formulating a ration on a dry-matter basis, the values can then be converted to an as-is basis using the moisture content of the feed to determine the actual amount of feed that should be fed to the cattle on an as-is basis.
ANALYZE FORAGES FOR NITRATES In addition to moisture, protein and energy, annual forages harvested for hay such as foxtail millet, oats, sudan grass and sorghum-sudan hybrids should be analyzed for nitrates. These annual forages can accumulate high levels of nitrates under various growing conditions that can potentially reach toxic levels. The only way to know if high levels of nitrate accumulation have occurred is to test for it. See the UNL NebGuide “Nitrates in Livestock Feeding” for additional information. For additional information on understanding the results from a hay analyses, please see the “Understanding a Feed Analysis” Learning Module on the UNL Beef website.
CONCLUSION Accurately testing hay takes time and money. However, the value of this information is critical in accurately and cost-effectively formulating rations. Don’t let the small investment of time and money discourage you, it may be some of the best time and money you can invest in your operation. Steve Lambert ranches his way in California.
S
October 2021
teve Lambert is not your stereotypical Californian. His surfing skills are rusty, and he doesn’t attend many wine-tastings, but Steve sure can cowboy. He is at the helm of Lambert Ranch, the home of several hundred elite Hereford cows and a 260-acre walnut orchard.
36
Steve’s parents, Stu and Marie, bought a Hereford steer for him to show as a young 4-H member, and Creekside Ranch was born from that purchase. A passion for raising exceptional Polled Hereford cattle bloomed in the family at that point, and the Lamberts quickly became known for the quality of their stock. After Stu passed away, Steve
bought the top end of the cowherd and established Lambert Ranch near Oroville, Calif. It’s fitting that “Oroville” loosely translates to “Gold Town” because the 1,000 acre ranch with rolling pasture and hay ground bordered by the neighboring rice fields is a picturesque setting when it’s also dappled with top quality Hereford females. Lambert Ranch comprises two separate sites: one in the expansive meadows near the Warner Mountains outside Modoc, Calif., known as the Alturas Ranch and the home site outside Oroville in the foothills of the Sierra Nevada mountain range. The cattle spend the summer months in the cooler climate of the Alturas Ranch, but in extremely doughty years, they are moved to the “Table Lands” at an elevation of 5,500 feet to graze native dry feed in the northeast corner of California bordering Oregon and Steve Lambert of Lambert Ranch in Oroville, California

treaty sales scattered throughout the year. Two Angus producers partner on the sales, and some open and bred females are generally offered as well.
Several of the cows are bred via AI for a 45-day calving season in the spring and fall with the remainder of the herd bred to the Lambert’s outstanding herd bulls. Most of the cowherd is Polled Hereford with some Horned Hereford sprinkled into the mix. As polled cattle are preferred, the horned cows are bred to polled bulls, and some of the polled cows are bred to horned bulls to increase overall mass.
The primary focus of Lambert Ranch is raising outstanding bulls for purebred breeders and commercial cattlemen. “Our bulls are raised tough so they can easily adapt to any climate or terrain. Our customers frequently tell us that the bulls come off pasture looking better than they day they were purchased.” Two production sales are held each year offering 50 to 80 bulls at each with private
Steve has enjoyed a lot of success in his business ventures, but he is most proud of being a dad to his three grown children. Nathan and his wife, Danielle, live in San Jose with aspirations of moving closer to the home site. They are expecting the newest Lambert in November. Clay and his wife, Brittany, live on the home site and run the walnut orchard and help with managing the cattle. They have two sons,

Cooper, 2, and Jack Henry, born in August. Meghan is a Kindergarten teacher in Sonoma and still helps as much as she can around sale time. Steve’s significant other, Kerri, is an important part of the management of the operation as well, offering help with the cattle and the walnut orchard. Cows are culled aggressively; if the female doesn’t conceive in 45
days, she is sent to the sale barn. Steve believes fertility is genetic, and if a cow is difficult to breed, she will throw heifers that are predisposed to those issues. If a female is in the cowherd, it is because she has proven herself to be a sound animal with capacity for consistent production. The Lambert family has enjoyed success in the show ring, but since the kids are grown, traveling to

shows has taken a backseat. Cattle are still exhibited at regional shows, but when Cooper, Jack Henry, and their cousins get older, you can bet they’ll learn how to use a showstick. He has also held offices in the Farm Bureau and was President of the American Hereford

Association. In 2020, Steve was named Farm Bureau Man of the Year, and accepted Cattleman of the Year honors in 2019 in Butte County. Steve is quick to point out that awards are great, but his biggest pride lies in the great kids he’s raised. “They’re doing great things – staying active, being productive, and doing unbelievable things. They give back to their communities, and that’s what I’m all about. I’m so blessed.” California presents many chal-
lenges to raising cattle. Frequent lengthy droughts, rampant wild fires, and ever-present animal welfare activists coupled with policy-makers far-removed from animal agriculture are some of the obstacles Steve and his family encounter. As land is extremely valuable, it takes some fortitude to stay the course and continue raising cattle. “You really have to love what you do. You have to love the animals and love improving your stock year after year.”
October 2021
Steve Lambert surveys a pasture of Hereford heifers on his California ranch.
41
Like many areas of the US, California has suffered extreme drought causing ground water resources to run out, and grass to be damaged beyond recovery. “It doesn’t rain grass,” quips Steve. Some of his neighbors have had wells dry up, had to move their entire herds multiple times to avoid wildfires, and sell cattle for lack of feed.
Steve enjoys talking with other cattle producers, catching up with old friends, and viewing cattle at the nation’s larger shows. He has made many friends across the country through his involvement in the American Hereford Association and is grateful for those relationships and the knowledge gained from his fellow cattlemen.
“When I die, I want to be remembered as a great dad first and a good cattleman second.” Steve has a deep-seeded passion for excellence and a great sense of humor. Those who have met him would call him anything but “reserved” and a guy who loves to laugh. His involvement in improving the Hereford breed, not only in his own operation but also nationwide, has been well-received, and his friendship is treasured by many of his fellow cattlemen. learn more lambertranchherefords.com Lambert Ranch Butte Bull Sale will be held Saturday, October 15, 2021 at the ranch near Oroville, Calif.
October 2021
Although the terrain and climate can be difficult, the Lambert family has found a great system and time line that work for their operation. By calving in mid-February and October, bulls can be offered year-
round to accommodate the various breeding schedules of their customers. An offering of 55 Hereford bulls will be sold October 16 at the home site near Oroville. More information about the cattle can be found at on their website.

Seeds in Season
Functional forage and pasture.

FAIR FOOD BUFFET S
ummer fair season has come to an end, and the Fall season is upon us. I like to relish in the Fair memories as long as possible, especially Fair food memories. The Minnesota State Fair is best known as the Food Fair, and second to the livestock shows, it is my highlight. So why am I rambling about Fair food in a forage article? Well, at the Fair, folks are invigorated by the stands with endless options. This diverse buffet of corndogs, cheese curds, deep-fried twinkies, and anything you could imagine on a stick will surpass any palette’s expectations. This diversity of food options is what we try to mimic with pasture and rangeland for our livestock.
When native range isn’t in place for cattle producers, how do we best mimic that? Since most pasture now consists of aggressive cool-season perennials, we need to look at species that grow amongst those. Generally, it is much easier to establish broad leaves and legumes under the canopy of fast-growing grasses that take off in the Spring. learn more millbornseeds.com Millborn Seeds, Brookings, SD The team of folks at Millborn Seeds have roots that run deep in farming, agriculture, and in the overall respect for the landscape. Native range will consist of hundreds of species, including cool and warm-season grasses, forbs, sedges, brushes, and wildflowers. The list of benefits that stem from this ecosystem is long, and the benefit to cattle is at the forefront. The staggering growth patterns and the changing nutritional panel of these plants provide a season-long buffet that fits perfectly with a cow’s diet. Mother nature has created the ideal ecosystem for ruminants to flour-
ish, but it takes stewardship from humans to synch that with cattle production.

CHANGES TO THE IOWA GOLD TAG PROGRAM I
n Iowa, most producers have adopted the Iowa Gold Tag or Green Tag Preconditioning programs in their herd. Not only does it provide guidelines for proper vaccinations and weaning duration, but it is also a key marketing program for anyone who wants to sell calves through an auction market. There have been a couple of recent changes to the Gold Tag Preconditioning program for this coming year. These changes are made from an Iowa Veterinary Medical Association’s bovine committee and input from the Iowa Cattlemen’s Association. Based on feedback from cattle buyers, there were concerns with the length of the weaning period and the use of killed vaccines in the program. The new changes implemented are only to the Gold Tag program for now.
The duration of the weaning period on the Gold Tag program has been 45 days in the past. The new Gold Tag certificate has been increased to a 60-day weaning period prior to the sale of the calves. On the Green Tag program, the weaning period is 30 days and has not changed. This small amount of extra time will bring the program up to what the buyers want without adding too much extra time. Anyone who uses the Gold Tag program in their herd needs to account for this extra time in their marketing plans. The other change in the Gold Tag program is the switch to only modified live vaccine use for the IBR, BVD, BRSV and PI3 viruses. In the past, killed vaccine was allowed for these viruses, but has been a concern for cattle buyers. For now, the Green Tag program
still allows the use of killed viral vaccines but may change to MLV in the future. One of the producers’ concerns is that they want to vaccinate calves while they are still nursing the cow and worry about the vaccine spreading to the cow and causing issues with abortions. If the cow has been vaccinated with a modified live viral pre-breeding vaccine, they should not have to worry about this issue. Also, many producers are on a program where they can use modified live vaccines on the pregnant cow. The cow has to be vaccinated at least one time with a modified live vaccine prior to becoming pregnant to do this program. Currently, very little killed viral vaccine is used in either the Gold or Green Tag programs. Since the Gold Tag program is the premier program, it was changed to require the modified live viral vaccine to be used on both doses.
October 2021
As a review, vaccinations in these programs need to be done on calves that are four months of age or older. For the Gold Tag program, the booster vaccine needs to be given at least two weeks apart from the first round. Also, the booster needs to be given at

I think the reason for this is if banding is done 21 days before the sale, there will still be many calves with dried-up scrotums that have not yet fallen off. If owners want to band calves at birth, this is acceptable as they will be fully healed by the time of sale. While these changes are minor, they will help make a better product for the buyer. It is important to
plan to meet all deadlines before the sale of the calves. Veterinarians administer these programs, so work with your veterinarian to determine what is best for your herd. learn more collisionembryo.com Dr. Vince Collison is co-owner of Collison Embryo | Collison Veterinary Services PAC in Rockwell City, Iowa.

least two weeks prior to selling the calves. For the Green Tag program, the vaccine needs to be given at least 21 days prior to the sale of the calves. For castrations and dehorning, this also needs to be done at least 21 days prior to the sale. When castrating calves, the input I have gotten is that the sale barns prefer to see the bull calves castrated with a knife rather than banded.

Where did you learn to cook?
“
My grandma was an amazing cook and so is my mom; while they taught me a lot growing up, I didn’t enjoy cooking until Clint moved with me to New York. I figured at some point he may want more than frozen pizza and beer! I have a lot of great influences in my cooking life including family, friends and of course, Pioneer Woman!
What is your most requested dish?

It depends on the audience. Our daughter Hadley’s favorite is roast beef, especially for her birthday; our family enjoys Chocolate Bourbon Pecan Pie during the holidays and a Bloody Mary is a great accompaniment while looking at cattle.

What is your least favorite job in the kitchen?
“
While I really enjoy cooking, I do not particularly enjoy baking (other than bourbon pecan pie and Hadley and Wager’s favorite, 20 Minute Cake!).

Clint and I both grew up in the cattle industry (Clint in Iowa and me in Montana). We have an unwavering passion for the industry, the people in it and the lifestyle which led us to purchase our first cows together in 2009. Our goal has always been to build an operation that produces quality females that help enable others to accomplish their goals – in the showring or in production.

We have a daughter Hadley who is six and a son Wager who is two and a half. They have blessed our lives in so many ways and one of the greatest delights is the journey of pursuing a legacy with them, passing on the traditions that Clint and I grew up with. While Clint and I moved a few times for our careers, we now have the opportunity to live near Creston, IA (where he grew up) and are surrounded by amazing family and friends. Although my parents live in Montana, our families are very active in Hadley and Wager’s lives which is such a wonderful gift. Seeing their passion for the industry already in full gear and the family atmosphere created around this lifestyle is such a blessing! ½ cup Crown Royal 1 teaspoon vanilla ¼ teaspoon salt ½ cup semi-sweet chocolate chips 1 cup chopped pecans
1 (9 inch deep) pie shell 1 cup white sugar ½ cup light corn syrup ½ cup maple breakfast syrup ½ cup butter 4 eggs, beaten
Preheat oven to 325 degrees F. In small saucepan, combine sugar, both syrups and butter. Cook over medium heat, stirring constantly until butter melts and sugar dissolves. Cool slightly. In large bowl, combine eggs, Crown Royal, vanilla and salt. Slowly pour sugar mixture into egg mixture, whisking constantly. Stir in chocolate chips & pecans, pour mixture into pie shell. Bake in preheated oven, 50-55 minutes or until set & golden. Sale Barn Study
A review of the current cattle market.
contributed article by Kirk Lynch Lynch Livestock Inc. and Humeston Livestock Exchange, Humeston, Iowa humestonlivestockexchange.com
I LOVE FALL! F
all is my favorite season of the year; I just hate what comes behind it! I love the cooler weather, the brisk fall nights, football season, harvest, the breeding stock and club calf sales, and fall calving, but my favorite is weaning this Spring’s calf crop and seeing all the hard work and stress, and sweat has finally paid off.
October 2021
With that said, we jump right into the feeder calf markets. They have been very strong across the board. Seeing some of the light cattle still bring upwards of $2.00/lb to even backgrounded yearlings bringing in the $1.60-70 range. It may finally be a good year for the cow/calf guys as their calves are going to be worth something this year. To that point, I am having trouble pulling the trigger on some feeders at the current prices because the projections are a long way in the red with current feedstuff prices and fat cattle futures. I am still very bullish
68
on the long-term cattle market and am sure I will join the party eventually and fill some of our feedlots. I think several people are doing the same thing as I am, and the feeder cattle market will be strong for the rest of the year and into next year. The fat cattle market just kind of bumps along, feeling like it should break thru any day now. I have been waiting for a big jump in that market to happen for the last 3-4 weeks, but it just gradually gets better at a slower pace than I anticipated. Seeing cattle bring $1.2025 with some tops of front-end program cattle bringing $1.30 plus. Hopefully, by the time you get the magazine and read the article, we have broken through this mid-tolow 20’s plateau, and it has taken off. The cull cow and bull market has been strong but is paralleling the fat cattle market and bouncing along. Cows bringing $.70-.80, bulls $.95-1.00.
Kirk Lynch, Lynch Livestock Inc., Waucoma, IA Kirk is the Beef Division manager for Lynch Livestock Inc. and oversees all aspects of their backgrounding and cattle feeding operations throughout Iowa and Kansas. He is also deeply involved in the newly re-opened Humeston Livestock Exchange in Humeston, Iowa. In addition, Kirk and his wife Mary own and operate Heartland Simmentals in Northeast Iowa, which is a seed stock operation that consists of 500 registered Simmental and Angus cows. They have four children: Gabrielle (7), Brayden (6), Vivian (4), and Bianca (1).
I still see some good buys on breeding stock considering all the other markets. Don’t get me wrong, there have been those that sold well, but there have also been some buys around. Some of these cows/ heifers could have calves that will pay for themselves next year as the feeder cattle market looks to be stronger even next Fall. Eventually, once people get through harvest, get some feed put up, and sell calves, it will be tough to buy good breeding stock. The seedstock sales have been off to an incredible start, and I look for that to continue throughout the Fall and Winter. I hope everyone has a great Fall and a safe harvest. Once again, if there is anything the guys at the barn or I can do for you, just give us a call.

In the News COMMERCIAL CATTLEMEN’S SYMPOSIUM FUELS COLLABORATION TO ELEVATE THE INDUSTRY Boise, Idaho – The 2021 National Red Angus Convention, hosted in Boise, Idaho, featured the Commercial Cattlemen’s Symposium, which allowed members to collaborate with industry professionals to elevate the future of the beef industry, not just the Red Angus breed.
FEEDER CALF PANEL Emcee Trent Stewart, of Central Oregon Livestock Auction, kicked off the symposium with a feeder calf panel featuring Guthrie Newell of Agri Beef, Brock Hough of Beef Northwest, and Perry Martin of H3 Feeders LLC. These three cattle feeding experts explained how the industry can collaborate to make the “perfect beast” through continuous innovation.
October 2021
The panel members discussed the two major concerns facing the industry – calf health and carcass quality. Calf health is crucial for profitability as calves must perform on both health and genetic levels. Buyers want to purchase vaccinated calves that come from genetic lines with proven health to meet their maximum genetic potential. The demand for USDA Choice beef is higher today than ever before and the industry needs genetics with excellent carcass quality. Quality grade is colorblind and red cattle can meet the U.S. and export demand.
72
“When I flip through video catalogs, I look for animal health and familiar cattle. I want to purchase calves who stay healthy, allowing them to achieve their maximum
genetic potential. Calves out of the right bulls providing the right genetics and vaccinations are crucial. If they haven’t had a modified-live vaccine, turn the page,” said Hough. The demand to purchase cattle is high, if buyers do not know about your cattle, they cannot buy your cattle. Advertise your cattle and tell the buyer everything regarding genetics, vaccinations and anything else you believe will help increase your profits. “You only get one chance a year to sell your calves,” said Newell. “Make it count.” There are several trends in the cattle industry. The Red Angus breed has focused on producing high-performance sires and maternal cows to meet industry demands. Demand for USDA Choice beef will only continue to increase in the United States. American people have more money in their pockets than ever before and cattlemen need to capitalize on this. Data collection is essential in advancing the breed. EID tags allow fast transfer of data to allow producers to make quick, critical decisions efficiently. The lack of capacity in packing plants will continue to impact the industry for years to come. One of the industry’s newest phenomena is beefon-dairy crosses. The trend is huge with highly predictable genetics that allow dairy-crosses to bring a premium due to the advertisement of proven genetics.
FEEDING CHALLENGES Julian Garcia, Beef Northwest CEO, joined the discussion about feedyard uniqueness in the Pacific Northwest. Beef Northwest is a fifth-generation, privately-owned feeding company across Oregon, Washington and California. The operation consists of three feedlots, three grow yards and a pasture facility. Beef Northwest can use potatoes as a unique feedstuff to feed more than 110,000 head annually. When purchasing feeder cattle for Beef Northwest, the essential components are health, proven genetics of any color and the ability to grade USDA Choice or higher. The labor challenge brought forth a reflection for the company to ask, “What more can we do for our employees?” A company must sustain their employees to sustain the supply chain. The company wants to advance the future of agriculture by investing in youth through internships available in many sectors of the operation. Garcia left the group with a positive outlook on the industry. “As disposable incomes continue to increase, the demand of U.S. quality beef will continue to increase.”
CULL COW PANEL The cull cow panel consisting of Trent Stewart, Randy Baxley of Visalia Livestock, and Eric Drees of 7 Rivers Livestock, provoked discussion on the opportunities for producers to add value to their cull cows. Better conditioned, better yielding cows will bring a

In the News
higher dollar at sale time. Maternal breeds, like Red Angus, have greater opportunities for cull cow sales through the sale of rebreeds. The panel encouraged producers to not disregard the value of young cows due to performance in certain environments. The panel concluded with producers who believe in competition and sell their cows at auction to support the big picture of cull cows, which adds value to this portion of their operations. “The cull cow market can account from anywhere between 1220% of a ranch’s bottom line. Cull cows can be an afterthought on the ranch, but they can be an important part of filling that bottom line,” explained Drees.
FEED EFFICIENCY The symposium concluded with Randall Raymond of Simplot, discussing the effects of feed efficiency in commercial
cattle-feeding operations. Simplot calculates the residual feed intake, which is expected dry matter intake independent of growth, that is used to determine if an animal eats more or less than expected. Producers selecting for maternal traits versus terminal traits should weight intake differently in their selections. Genetic progress in feed efficiency requires accurate selection, constant reevaluation and discipline. Feed efficiency drives feedyard profitability, and can be accomplished through industry innovation. “When selecting for economic return, you cannot select for gain alone,” explained Raymond. “If you are going to select for intake, you must pair it with gain or use something like RFI. When we increase RFI, we can measure things that are recognizable in the sustainability conversation.” The annual Red Angus Commercial Cattlemen’s Symposium was an opportunity for cattle
producers to collaborate about new innovations available to them to elevate their operations. By gaining perspective of issues affecting everything from calf health to feedlot efficiency to meeting end consumer demands, commercial cattle producers are better equipped to return to the ranch to make better breeding and management decisions. To learn more about how Red Angus breeders are working hard to meet industry demands, visit RedAngus.org. The Red Angus Association of America serves the beef industry by enhancing and promoting the measurable advantages of Red Angus and Red Angus-influenced cattle. The RAAA provides commercial producers with objectively described cattle by implementing new technologies and utilizing scientifically sound principles that quantify traits of economic importance to beef producers in all segments of the beef industry.
