Peach season is here and there is noth ing more satisfying than a delicious, luscious peach cobbler with vanilla ice cream on a summer evening. Almond extract and a dash of cinnamon add a subtle and unique avors to my cobbler recipe. It’s a great dish to bring to a gathering.

Peach Cobbler
From the kitchen of: Priya Hutner
1 C fl our 1¼ C sugar (you can substitute maple syrup) ½ t baking powder ¼ t salt 1 t cinnamon 2 t lemon juice 1 C milk ½ C butter melted 1 t almond extract (vanilla extract can be substituted) 3 C peaches, peeled & sliced
Preheat oven to 350° F. Grease a 9-inch-by-13-inch pan. I use cooking spray.
In a large bowl, gently mix peaches with ¼ cup sugar, cinnamon, lemon juice and almond extract. Set aside.
In a separate bowl add our, 1 cup sugar, baking powder, salt and milk. Mix well. Add melted butter and mix until batter is smooth.
Layer the peach mixture on the bottom of pan and pour batter evenly over top. Bake for 40 to 45 minutes until golden brown. Serve warm with vanilla ice cream or whipped cream or powdered sugar.
