John and Katina Hansen have been open for seven years and are a full service bakery. They make custom cakes for any occasion, and serve coffee, pastries and cookies that they make fresh everyday. At lunch they have salads and sandwiches that are made to order or are pre-prepared if you are in a hurry. Katina’s family is Greek, so naturally you can find fresh spanikopita, baklava and Greek cookies, and when asked to cater an event Katina likes to cook currys, Indian food and any sort of middle eastern cuisine. They host cooking classes every Tuesday night that range from simple bread and cookie baking classes to rustic Italian and basic Thai. They might teach you how to make pasta

from scratch, or make a traditional Bolognese sauce. Everything John and Katina do is seasonal, and this fall they will again be making and serving soups. For fall desserts you’ll be able to find Hendersonville apple pie and fresh baked pumpkin pies. Some of their more popular items are their fudge brownies with marshmallow frosting. They usually run out every day. Katina is very creative with her decorating and loves it when customers bring in pictures they want on a cake or have an unusual idea. For the 150th anniversary of Transylvania county she made an 800 pound cake. While it was challenging, she had a lot of fun doing it. Bracken Mountain Bakery 42 S. Serving us for eighteen and a half years, Bill and Debbie Tellman bake fresh European style pastries and breads daily. Seasonal favorites like a peach danish might be on display through the glass next to their daily Orange Cardamom cinnamon roll. In the winter time, they serve a German Stolin Christmas bread, a traditional bread with fruits and nuts that Bill picked up while studying in Germany. Their daily breads include the

Sunflower Oat, German seeded rye and Harvest Wheat, to name a few. They can slice whole loaves up for you while you watch, or sell it to you uncut. Debbie likes to serve Pumpkin Latte’s and Caramel Apple Cider in the fall, and fresh brewed Brown Bean coffee is kept hot all day. Many restaurant’s in town use Bracken Mountain bread, including Falls Landing, Dugan’s Pub, Quotations, Mayberry’s and Rocky’s.

Saturday mornings can usually be hectic in the small restaurant across from Brevard College, but it’s loud and packed atmosphere is part of its charm. Locals can be found drinking coffee on the porch with their dogs and the staff are more than happy to fill up water bowls. College students wander in and out all day and you’re sure to know someone up there. Owner Marissa Gariglio has owned the Sunrise Cafe for 15 years, and has 40 years of experience in the restaurant business.

The walls in Sunrise are covered in local artists’ work and pet pictures, and it is brightly painted. Their menu is perhaps the most varied in town, from everyday specials on their board to waffles and bean burgers and smoothies. The line to order moves kind of slow because people often stare at the chalk board menu and are a bit overwhelmed. People often order things that can’t be found on the menu and Gariglio is happy to accommodate most combinations or substitutions. They have a variety of fresh bagels and even more cream cheeses to choose from, and serve a variety of organic coffees and teas. Gariglio is in the kitchen leading her crew of cooks everyday through lunch. For the fall Gariglio will be frothing up pumpkin spice lattes and baking fresh ginger bread and pumpkin pecan breads.

You might know her from the stand at the Farmers Market that prepares the amazing burritos. 2012 was the first year that she was steadily busy throughout the whole year and she

has hired a dietician as her right hand woman to help in the commercial kitchen she rents off McLean Rd. Forty to fifty hours a week you will find her preparing meals for local events like the Mountain Song Festival, or the Pisgah Stage Race, and local parties and weddings. Somich also cooks for a private client in Lake Toxaway, and has cooking classes like her Mole class where everyone makes about a gallon and

She has hosted wellness classes for the city’s employees and Gaia herbs has hired her to do “wellness lunches” for their employees incorporating the food grown on site and helping them learn what to do with some of the different foods grown there. A self-taught chef, her knowledge is an accumulation of twenty years in the restaurant business. She decided on a catering business because it’s simply less monotonous than a restaurant. She is always thinking seasonally, and trying to get people to try new things. Somich tries to use as many local ingredients as possible, with bread from Bracken Mountain Bakery, meats from Busy Bee and Sunburst farms, and eggs from Calee’s Coops. She has plans for a food truck down the road, and you can usually find her at the Farmers Market on Saturday mornings.

Ritz Carlton in Newport Beach, Calif. Hargis is now a private chef, and among other things, hosts cooking classes in private homes doing the shopping, cooking and cleaning while educating and entertaining his audience. He pairs wines with courses of the meal and gives tips and instruction while walking people through the do’s and dont’s in the kitchen. He regularly cooks for a rotating dinner club where he prepares a five course meal for the hosts. Hargis will cater weddings and parties of any size, and will craft menu’s that range from BBQ to sushi. He likes to cook Mediterranean foods, and points out that there are 19 countries on its edges, which makes for quite a menu. Egyptian, French, Italian: he loves them all. He tries to keep trans fats and cholesterol out of the meals he prepares and likes to use meats and produce from Transylvania county as much as he can.

Their popular reservation-only Trout and Prime Rib Friday Night Dinners have a dedicated following. The Cardinal Drive In is a classic drive in style diner complete with malt milkshakes and hamburgers. Ordering from your car, or inside from the phone at your booth, the menu hasn’t changed much. Debbie Smith and Theresa Wynn should know; they have worked there 35 years, since the day it opened. Its new owner, Becky Shelton, has worked there for 25 years, but bought it three years ago. She has no plans on changing anything about her restaurant, with the exception of new milkshake flavors for the fall like Egg Nog, Pumpkin, Mint and Cappuccino. Accentuating the flare of the restaurant, the Carolina Classics car club meets there on Saturdays in the summer, and has for 25 years. Her most popular menus items are her hand breaded onion rings, and of course her milkshakes.

He has been in the hotel and restaurant business for 30 years and lived all across North Carolina. He settled in Brevard because he loved it and wanted to raise a family here. Duval wanted to know the parents of his son’s friends and loves that everywhere he goes he’ll bump into someone he knows. As a franchise owner, he stays consistent across his menu so that people will know what to expect when they are visiting Brevard from elsewhere. He has monthly specials, and serves breakfast, lunch and dinner.

There are 20 beers on tap, including many local craft beers, as well as the largest single malt Scotch selection in western North Carolina. Starting October 1, Dugan’s will tap Brevard Brewing’s Oktoberfest beer. Dugan’s Pub, owned by Ron and Sharon Gurtler since 2011, has special events all year long, highlighted by a St. Patrick’s Day blowout, Halloween party and their very own Halfway to St. Patrick’s Day in September. Additionally there are daily food and drink specials, trivia every Tuesday night, themed dinner nights monthly, a fixed menu dinner club and a Single Malt Scotch Appreciation Club. Dugan’s Pub has an array of logo merchandise available at the Pub and online, including shirts, glasses and gift baskets.

Mike Young worked hard in his early years to establish himself as fixture in the community, and made his mark by having the first restaurant with an alcohol permit on Main Street. Chef Ben Larsen has been at Falls Landing for eight years and isn’t a big foodie but just likes to cook good food. Some of Larsen’s favorite foods to eat are what his mother cooks, He’s created a menu that isn’t fancy but just good home cooking. Larsen got his start at The Rusty Anchor, a low country seafood restaurant in South Carolina, and tries to find inspiration in each days work and build from there. He has been in the restaurant business for 15 years and leads a four man kitchen crew. Some top sellers for them are their clam chowder in the winter time, and seafood from the Gulf and the Atlantic.

Strauss is from Baltimore, Md., a town well known for it’s seafood and his passion for it is evident in their new fall menu. Offering all you can eat mussels on Thursdays and dollar oysters fried, raw and Rockefeller on Fridays, Chef Strauss is trying to tone down the pricing on some of their entrees but will still be buying everything local. His fish is brought in fresh off the boat from Charleston, S.C. and he can be found every Saturday at the farmers market stocking up on produce and searching for new sellers. Strauss studied at the Western Culinary Institute, but started in the restaurant business at 15 and has worked his way from dishwasher to

Marc Dambax began his career as a chef unexpectedly. Living in Charleston, S.C. in 1991, he had bought a sailboat, planning to sail back to his home country of France. He realized what an expense this was going to be and went to work in French restaurants in Charleston, where he quickly moved up from dish washer to chef. During his tenure in Charleston, he became the owner of Market East Bistro, which was a top ten restaurant in Charleston for some time. After selling that restaurant, his wife Shellie’s classmate at the time owned the Hobnob, and lost her chef unexpectedly, and asked Dambax if he would work for her that summer. He did, and wound up buying the restaurant from her. Dambax and his wife ran the Hobnob for eight years, selling it in the end to the Hobnob’s current owners. Dambax and his family then

moved to France for one year to be close to his family. They wanted to move back to Brevard, and upon their arrival could not find work. The restaurant Maple was for sale, which they bought and transformed into Marco Trattoria. His wife Shellie has done the painting and art work in the restaurant, and Dambax is the head chef. Dambax loves braised food, from chicken to lamb. Some of his favorite dishes are Osso Bucco and sushi. In his kitchen are fresh pesto made daily and always homemade marinara. He caters parties and more, and will also cook for private clients.

They had often poked fun at how early everything closes in Brevard, but then, that’s sort of the appeal for many of us. They felt a small diner serving simple comfort food was lacking in town, and decided to open a place that wasn’t fancy, but just served good food. Their menu is a collaborative effort between Jonathan, with a German culinary background, and Kelli, who grew up in Brevard. One of their cooks has experience with Italian

fare, so their menu is varied but has a lot of Southern influence. Mayberry’s has been open for three and half years. They are proud to roast all their meats and slice all their cheeses in house. In fact, everything they serve is made right there or in the commercial kitchen that they rent out for catering events. Some of their more popular menu items like their Ginger sauce are now available in bottles. They like to have fun and experiment in the kitchen and often wind up serving whatever they feel like eating as specials. They serve breakfast Friday, Saturday and Sunday. September was Southern Soul food month, with specials like Fried Catfish, grits and okra. October is German month, November will feature holiday classics and December will be seafood month.

Their menu reflects chef Reynolds Lassiter’s New Orleans roots, and their stage in the Lounge area of the restaurant is known as the town’s spot for jazz, with their own house quartet. Owners Katurra Orr and Carolyn Bane felt a dedicated space for musicians was equally important as their farm to table menu, to really create the atmosphere that they felt was missing from Brevard. Chef Lassiter serves meat from Hickory Nut Gap, East Fork, Morgan Mill and Busy Bee farms and tries to buy as much of his food as close to home as he can. Nearly all of their product is bought in Western North Carolina, specifically Transylvania County, but he would rather serve a wild fish than a poorly raised local one. Lassiter

studied at the Western Culinary Institute in Portland, Ore., and spent time on ranches in Montana and Idaho honing his idea of the farmto-table experience. He loves to cook seafood and will often have a cajun dish on special. Some of the items on his new fall menu are a Hickory Nut Gap raised rabbit, served with braised vegetables and a quail with pickled beets dish from East Fork Farm. He is also serving Boudin Balls, which are a southern crawfish and jasmine rice mixture, Panko breaded and fried. His tips for those in their own kitchen is to always buy as close to home as possible. If he could invite only one chef to dinner it would have to be Auguste Escoffier, because he is the French master who started it all. Lassiter features a wide variety of menu items, so he doesn’t keep much in the way of staples in his kitchen, but always has the freshest ingedients. The Phoenix is becoming increasingly well known for their drinks, and are featuring house infused specials like their Pineapple Habanero tequila.

They opened in the fall of 2011 and sell a wide variety of wines, craft beers and cigars. Not all the wines in her shop are expensive brands, but she does try and stock wines from smaller wineries that know what they are doing. She sells a lot of Spanish reds and Malbec’s from Argentina. Many people come in and ask her what kind of wine will compliment a dinner, and she knows but she tells them bottom line – “drink what you love.” Some come in to buy a gift, and to aid this, Connie keeps a record of everything everyone buys in her shop, so that if asked she can look up who they are buying for and tell them exactly what they like the most. A helpful trick if you don’t know exactly what you’re looking for.

To help her customers make selections, she has installed a chilled wine dispensary. You can purchase wine by the ounce, and it is kept fresh using argon gas. She usually has six different wines for sampling, and has a wine debit card with declining balance that you slide into the dispensary and it deducts each time you sample. Connie enjoys trying to find a particular brand or year for customers, but mostly likes to stock good, affordable wine. She does offer discounts by the case. This fall she will begin stocking many different Oktoberfest beers, and likes to keep Trappist brews for her aficionados. She offers free wine tastings on Saturday’s from 2-5 p.m. every week, sampling three to four wines and offering them at a discount if you really like what you’ve tried. She hosts evening classes a couple times a month and often has a guest speaker. Her next class “Best wines you’ve never heard of,” is Oct. 10, and then Oct. 28 she will host guest speaker Chris Baker from Shannon Ridge Winery in California. You can sign up for her newsletter and classes via her website. Connie is partial to an Andrew Murray Syrah from California.

At any gathering, no matter how fancy the living room, people always wind up hanging out in the kitchen. Their shops reflects that: they sell not only the latest culinary gadgets (from cold coffee presses to inventive ways to store your leftovers), but also artisan cheeses that you can’t find anywhere else in town and a wide selection of Wustoff and Global chef knives. Their original location opened 19 years ago where the Hob Nob now is, and they have customers who have been coming to them ever since for their kitchen needs. Educating customers is their greatest joy in their business, and frequently they offer wine and beer tastings. Beth and Larry have been collecting wine for thirty years and they seek out small vineyards and showcase them, and have made lifelong friends in that industry. One of their most popular kitchen items is “The Lily Pad,” an environ-

mentally conscious silicone lily pad shaped lid that can be used in place of Cling wrap, creating an air tight seal it keeps foods fresher, longer. The Canady’s also stock Rothchild dips and condiments, their favorite for years.

Patricia is in charge in the kitchen, and Victor handles the front of the house. He and wife are from Guadalajara, Mexico and have been in Brevard for twelve years. They came to visit friends years ago and fell in love with the area and it’s natural beauty. They have been in the restaurant business for about fifteen years. Everything is made from scratch in their restaurant. Their menu has about twenty five menu items and each has its own unique flavor. From the popular Arrachera steak, marinated in spices everyday to the sauteed cactus dish, Nopales, everything is an authentic family recipe. They have traditional Mexican drinks from their full bar, and they do not use mixers in their margaritas, only fresh ingredients. Their kids menu has something for the pickiest eaters. Gomez and his family serve lunch for the Brevard Academy everyday and offer full catering services. His special events room can hold thirty to forty people.

Also, we make sure if we don’t have a room available for a visitor that we find them one.” Roberts said that she works to promote both our area and other local businesses, including other lodging options because she believes the best sum is the total of its parts and that Transylvania County has many good parts to share with tourists. As with any lodging establishment, Lori said she and her staff are constantly being asked to recommend restaurants. “We are very proud to have so many good dining options to send them to. People who have never been to Brevard before are surprised when they learn we have such a great variety!”
