EDITORIAL PAULETTE WOOTEN, EDITOR-IN-CHIEF

Hello. Since our last issue not only has a lot changed in the world, but we’re officially 3 months into 2022! We’ve made a few changes here too as you can see by our cover. We are now officially T + Co Magazine. We are pleased to announce that our readership has increased to nearly 6,000 people and we want to thank you for being an early adopter and sharing with others. After analyzing last year's launch and reaffirming our commitment to providing issues at no cost and ad-free, we've decided to switch to a quarterly release cycle. We have a lot of new ideas and features in store for this year and hope you’ll stick around to enjoy them. With Covid restrictions lifting and some normalcy returning, one of the new additions will be a travel section where we will share our favorite finds as we head out to festivals and markets with our Wooten Hill music and The Treehouse + Co nut-based rubs. We're hoping to run into some of you on the road and will keep you posted as we can on our adventures. We're kicking off this issue in "Music City" Nashville, Tennessee. We have put together an entire 24-hour itinerary that takes you to some of our favorite places to visit, what to eat and drink, and where to stay to make the most of your next Nashville visit. (p.17)

Without a doubt, our recipes will always be a staple on our pages. I'm not sure how we missed the air fryer craze, but we've finally caught up. We've compiled some of our go-to, time-saving, easy and healthy recipes. Plus like our rubs, they’re gluten-free. (p.64) Both Penny Hunter (p.12) and Allison Rogers (p.4) are joining us again with encouraging insights into how to engage with the world inside and outside of ourselves. As always, we are committed to learning how to be a better neighbor, and while Ukraine isn't right next door, they are reminding us how deeply connected we all are. We want to do our part to support and stand with Ukraine and have a few organizations that we are supporting we’d like to share with you. It seems the past year or more, my social feed and texts have been full of posts from people who are afraid. Anxious. I have one friend afraid for her little girl who was told on the school bus that her family would have to go "back where they came from." Another said she had been yelled at using racial epithets. Some friends are victims of sexual violence and recent news has triggered deep memories. Others are afraid they could fall victim in a culture that will not defend them. So, what do you do when you're afraid? When you're uncertain about the future?


Allow yourself to grieve and to know that this is OK. But, also tell yourself the good truths you know as well. List the people who love you. Remind yourself of the systems and processes that are in place that ARE trustworthy.

Who in your life represents safety to you? Who can help give you perspective about real risks versus those that may not be so real but are troubling? Surround yourself during this season with safe people.

Especially be gentle with yourself. Where you can avoid unnecessary stress, do. When you can delay a big decision, do. Take time to rest and take a break from news and social media to give your head space to be mindful. Be gentle with others especially those you believe are struggling.


Give your time to help someone else. Write a note of appreciation to a friend. Volunteer in a refugee resettlement effort, teach ESL in an after-school program, take your neighbor a surprise. Invest yourself in others as a reminder that we are all in this together - we are all in need of hope and assurance.

Meditate on passages that remind you of the truth about yourself, others and God.

This shouldn’t always be your last resort. If you need support, please reach out. If you do not feel anxious or worried right now, be your best self. Extend empathy to others. As my friend Shannon Sedgwick Davis has said “empathy is what makes us human.” May hope find you today and may you pass it on to others.

SLEEPING ON A CHURCH PEW CHANGING LIVES WHILE YOU SLEEP


My parents used to take me every Sunday when I was a kid, so I've had some prior experience sleeping in church, but I never imagined paying to sleep in a church, but here we are at The Russell. A 115-year-old historic church turned boutique hotel in 2019. It's widely regarded as one of Nashville's most distinctive hotels. Many of the original structural features, such as stained glass windows, church pews used as headboards, and old brick walls, were preserved. You won't find anyone at a front desk because there is no on-site concierge service. They do, however, respond right away to cell phone inquiries. Their technologydriven hospitality is second to none and a true sanctuary in the heart of East Nashville. As much as we were impressed by The Russell's attention to every meticulous interior design detail, we fell in love with The Russell because of its mission. Asparagus 1 bunch fresh asparagus, trimmed ½ fresh lemon, juiced ½ teaspoon salt ¼ teaspon red pepper flakes Fresh Parmesan

Preheat the air fryer to 400°F. Toss cauliflower and sauce together in a medium bowl until well coated. Arrange cauliflower in a single layer in the basket, give it a quick spray of oil, and cook for about 20 minutes, or until crispy. Shake halfway through. Great for side dishes, appetizers, tacos, and wraps.



Fiesta Broccoli Serves 2

2 cups broccoli, trimmed and cut into 1-2 tablespoons Fiesta Spice Avocado oil spray

Preheat the air fryer to 400°F. Place broccoli in a single layer in the air fryer basket. Apply a light oil spray to the broccoli and sprinkle spice evenly. Cook for 10 minutes. Shake halfway through. Once the timer goes off, remove and enjoy.



Buffalo Cauliflower Serves 2-4

1 head of cauliflower, trimmed and cut into 1-in ¼ cup of Primal Kitchen buffalo sauce

Preheat the air fryer to 400°F. Place sprouts in a bowl with mustard and coat well. Place in the basket. Give a quick mist of oil. Cook for 20 minutes. Shake halfway through. Remove and add salt and pepper to taste. Enjoy.


Broccoli MUSTARD


Lemon Pepper Shrimp

12 oz. raw medium shrimp, peeled and deveined 1 tablespoon lemon-pepper seasoning Avocado oil spray

Preheat the air fryer to 400°F. Place shrimp on a plate and mist them with oil. Sprinkle with seasoning. Cook for 8 minutes. Shake halfway through. Remove and enjoy. Use a fresh squeeze of lemon juice for extra flavor.



Cajun Spiced Cod 2 - 4-6 ounce cod fillets or white fish (fresh or frozen) 1-2 tablespoons cajun spice (Slap Ya Mama) Avocado Oil Spray

Preheat the air fryer to 400°F. Coat basket with spray oil. Place the fillets in the basket. Lightly spray avocado oil on the fillets and sprinkle with spice. Cook for 5 minutes and flip. Spray again lightly and add a sprinkle of spice. Cook for another 5 minutes, or until flakey. Serve with a salad, green beans, or snap peas.



Peri Peri Salmon 2 - 6 ounce skinless salmon fillets 1-2 tablespoons Spicewalla Peri Peri seasoning Avocado oil spray

Serves 2 12-15 minutes

Preheat the air fryer to 400°F. Coat the air fryer basket with cooking spray. Place the salmon in the basket, skin side down. Sprinkle salmon with seasoning and a quick spray of oil on top. Cook for about 12-15 minutes. Recommended temperature is 130°F.





Spring Radish Gin Serves 1 2 radishes, thinly sliced for muddling + garnish ½ ounce simple syrup 2 ounces gin 1 ounce Mata Vermouth Blanco ¾ grapefruit juice ¼ ounce lemon juice 3 dashes Peychaud’s Bitters

10 minutes

In a cocktail shaker, muddle the 6-8 radish slices with syrup, lemon juice, and bitters. Add the other ingredients and ice. Shake for 20-30 seconds. Strain into a coupe glass and garnish with extra radish slices.
