Certified! CSAs Go Organic Trustees has received official organic certification from the USDA National Organic Program for its nonprofit Community Supported Agriculture (CSA) vegetable share programs at Appleton Farms in Hamilton & Ipswich, Chestnut Hill Farm in Southborough, and Powisset Farm in Dover. Since cultivation began, Trustees produce farms have generally followed organic standards. However, after careful consideration, the nonprofit made the commitment to take the final step by participating in a rigorous application and inspection process in order to become fully certified. Regenerative and sustainable agriculture is a key component of the Trustees mission of preserving healthy farmland—food on Trustees farms is grown with a focus on biological processes that support production and a healthy local ecosystem where pollinators, birds, and wildlife can thrive in balance alongside crops. Organic certification verifies that the farms meet all of the USDA’s Organic Standards, including growing without the

Advancing Coastal Resilience on Martha’s Vineyard The Trustees has recently contracted with Woods Hole Group (WHG) to assess its 12+ miles of managed barrier beaches, dunes, coastal banks, and habitat on Martha’s Vineyard. The project, which is partially funded through a grant from the MA Office of Coastal Zone Management, will examine physical changes and shifting patterns of use, to help protect coastal properties from the impacts of accelerated sea level rise, frequent coastal storms, and reduced sediment supply. Assessments will take place at Cape Poge Wildlife Refuge, Wasque Reservation, East Beach, Norton Point Beach, and Long Point Wildlife
Refuge starting this winter, with project completion slated for March 2020. WHG will examine historic and projected shoreline change to pinpoint the areas most vulnerable to chronic erosion and storm impacts, develop indicators for monitoring seasonal and coastal storm and climate impacts using metrics that can be tracked by citizen scientists, and propose site-specific actions for the three most vulnerable areas where Trustees projects can intervene. 128th Annual Meeting Held Trustees Board of Directors held its Annual Meeting and Dinner on Thursday, November 7, 2019 at the State Room in Boston—the 128th such gathering of Governance volunteers since the organization’s founding in 1891. More than 250 Governance and senior staff members celebrated the year’s achievements in all aspects of its mission, Employee and Volunteer of the Year honorees, and its highest honor— the Charles Eliot Award for Conservationist of the Year—bestowed
to longtime Board and Governance volunteer Edward H. “Ted” Ladd. Attendees heard reports from the Treasurer and Chair, voted in new Governance members for the coming year, and listened to remarks from President & CEO Barbara Erickson on the organization’s strategic efforts to encourage more members of the next generation to get outdoors and enjoy the many physical, spiritual, and emotional benefits of spending time in nature. Spend a day in our culinary hotspots.
Dear Members: We are grateful for you and your support of The Trustees. With the cooler weather already here and the calendar turning soon, it’s a good time to reflect on what we’ve achieved together and look ahead to a busy season. In the last year, we’ve protected a combined 600 acres in more than a dozen communities, secured over $1 million from the state of Massachusetts and federal government to support our coastal initiatives, worked with renowned landscape architects to create spectacular plans for the gardens and visitor experience at Long Hill and The Stevens-Coolidge Place, and added two new day camps where thousands of kids had fun discovering nature by spending time outside. That’s just a very small part of what was accomplished by the dedicated staff and volunteers who inspire me every day. None of this would have been possible without your commitment and passion for our mission of preserving and sharing iconic places in the Commonwealth for everyone. While winter may seem like a slower time for us, that couldn’t be further from the truth as we steward our properties. We have made great progress on the Chickering Pond Trail reroute at Rocky Woods as well as making roof repairs on the historic stable at Governor Oliver Ames Estate. We are preparing a new space for the community to gather at Chestnut Hill Farm and beginning to restore the fountain at the Crane Estate rose garden.

SEARCH andRESCUE Notchview Junior Ski Patrol teaches kids self-reliance Sitting on the carpet in the cozy front room of the Notchview Reservation ski lodge, Carlea Manley, 10, repeats the question everyone around her is asking. “Can you show me with one finger where it hurts?” With that one tried-and-true inquiry, she begins to evaluate the signs and symptoms shown by her “patient”—her 6-year-old brother, Lukas. The Worthington siblings are among nine kids, ranging from 6 to 15, learning basic first-responder skills in the Junior Ski Patrol program at the popular 3,000-acre venue for Nordic skiing. Each Sunday in January and February, the group 4

gathers for an hour and a half to develop skills including CPR, first aid, and radio communication. Patrol Director Mary Ann Richards, who has been shepherding the program for about 10 years, says there’s another underlying benefit to the kids. When they practice the very things required of an adult first responder, like interviewing, problemsolving, and hands-on treatment, they develop self-reliance. “If you came back in eight weeks, you would see a completely different group of kids,” she says, “because that’s one of the things we really put into them—good leadership skills. And these are lifetime skills.”
In this second week of the course, the group divides up into pairs to practice evaluating their “patients” and to make splints for different kinds of injuries on the spot, just as they might out on the trails. Richardson takes note of Carlea and Lukas having fun while working together, “When do you see this much camaraderie in siblings?” she asks rhetorically. As Lukas takes his turn folding and knotting a cravat into a splint for his big sister, his father, Jeff Manley, says with some amusement: “This will be interesting, he’s still working on shoelaces.” Manley says that Carlea and Lukas are both interested in professions “that help people or animals.” Carlea wants to be a veterinarian, Lukas a police officer or firefighter. Lukas eventually finishes his task with encouragement and a helping hand from volunteer Michael Kaplan, a family physician from Lenox whose calm, deep voice guides Lukas through the steps.

After practicing splints in the warmth of the lodge, all head out toward the Ski Patrol Center where Assistant Director Bob Payne is hitching a snowmobile to a rescue toboggan—basically a sled that will accommodate two people lying down. The group splits up into pairs once again, one playing the injured patient, one playing the rescuer. The rescuer sits down first so that the patient will effectively be cradled and insulated from the hard shell of the sled. Payne binds up the soft vinyl sides around them like a cocoon then drives them toward the treeline in a slow loop. It’s just enough time for the rescuer to interview the patient with a series of questions known by the acronym “SAMPLE.” Richardson tells them that this is just the first of an “alphabet soup” of acronyms they’ll learn to help them remember how to do their jobs as first responders. “S” is for signs and symptoms, “A” is for allergies, “M” for medication, “P” for past pertinent history,
“L” for last oral intake (food or drink), and “E” for the events leading up to the injury. Though the program is nominally geared to 10- to 14-year-olds, Richardson accepts the occasional younger but committed sibling. She asks all of the patrollers at the start: “What do you want to learn?” This year, she has three captains, all 12 and all with at least two prior years with the program. Claire Anderson has been making the trek from her northeastern Connecticut home since she was 1 ½. Vienna Mahar and Nathan Farrington hail from the adjoining towns of Savoy and Cummington, respectively. The trio’s job is to make sure everyone in their group understands the work, can do the tasks, and is having fun. At the most recent session, the three gathered their group inside the Ski Patrol Center to review the do’s and don’ts of radio communication. Just as the winds calm and the snow begins to fall, they lead the group onto a portion of the 9 kilometers of groomed
trails at the reservation, while Richardson stays back to monitor the radio base. As the group stops for the occasional trail intersection or gains a hilltop and rests, the captains encourage each of the younger students to imagine an injured skier and radio in the details to Richardson, always in clear and concise language. After each has taken a turn, the cadre completes the circuit back to the Patrol Center in about 45 minutes. They all discuss what went right and what could be improved from both their perspectives—out in the field and back at base—and conclude that the culprit for some of the garbled transmissions was likely speaking into the microphone too closely. Now that the session is over, the kids put their radios back in their chargers. Beach Safaris & Winter Escapes New this year, the Crane Estate in Ipswich offers a series of oversand tours of Crane Beach, from natural history tours for the whole family to special photography and birding expeditions. Bundle up for these absolutely unique adventures—ride in our open tour trucks to experience the wild and wonderful world of dunes, trails, and sands in winter! The Great House at Castle Hill is now open on weekends and Monday holidays this winter. Stop by for a visit and tour the spectacular estate at this most starkly beautiful time of year. Or come for a March evening theatrical experience like none other: Jane Austen’s acclaimed story of love, romance, and heartbreak, Sense and Sensibility.
Talks on the Farm This winter, Powisset Farm in Dover presents a new series of informative talks on home gardening and sustainability. Learn about such practical and valuable topics as beekeeping, composting, and how to plan for the perfect home food garden. A day in the life of Trustees Teaching Kitchens From fine-tuning your pasta-making skills to learning the basics of Szechuan cuisine, to opening your children’s eyes to the joys of cooking when school isn’t in session, Trustees’ teaching kitchens offer culinary instruction suited to every taste—and any time of day. The cure for cabin fever Housed inside a renovated barn with original wide-plank floors in Dover, Powisset Farm is home to a cutting-edge commercial kitchen and culinary classroom for budding chefs. On Saturday mornings throughout the winter, Powisset offers a series of one-off kids workshops devoted to making (and eating) scones, dumplings, Valentine’s Day cupcakes, even Super Bowl snacks. During February and April vacations, the farm hosts Kiddos in the Kitchen, a morning immersion in learning new cooking techniques followed by students sampling their made-from-scratch dishes fresh from the oven. “I’m always blown away by how creative these children are, and how genuinely interested they are in cooking and understanding where their food comes from,” says D.A. Hayden, who oversees Powisset’s kitchen programs as director of The Trustees’ Charles River Valley properties. But Powisset’s kitchen isn’t just for child’s play. On any given day, the schedule is chockablock with classes for adults, like a series featuring nationally renowned celebrity chefs, an introduction to sous vide cooking, lectures on planting pollinator and food gardens, and a special Valentine’s Day event where couples cook three-course meals using ingredients with reputations as aphrodisiacs. Additionally, private cooking classes can be scheduled by reservation. Drawing on produce grown on its 109 acres, as well as at Fork Factory Brook down the road, means activity 16

at Powisset Farm never abates. “It’s a yearround effort,” Hayden says. “We love seeing our kitchen busy all the time.”
MID-DAY
Culinary community-building As serene as the stone walls and grazing Jersey cows might appear, Appleton Farms is a working landscape—and the work continues inside the historic home’s remodeled farmhouse kitchen. All yearround, a growing cast of chefs and artisans outline practical paths to cooking delicious seasonal foods inspired from the bounty of local farmers and fishermen on the North Shore. “Our cooking classes and artisan workshops source first from Appleton’s vegetable, dairy, and meat program,” says Lieza Dagher, Director of Appleton Farms, “and then from other Trustees farms and local farmers and artisans in the region.” Lately, Appleton Farms has begun welcoming a wide, diverse set of culinary talent to fill out a programming calendar that scarcely takes a pause. This winter, a bread maker from A&J King Artisan Bakers
shares the secrets of baking sourdough from scratch. Privateer Rum will lead a mixology workshop featuring locally-sourced winter spices and flavors. Italian-born cheese-maker Luca Mignogna guides foodies through a pair of classes centered around making fresh mozzarella and hand-made pasta. In addition to its series of Farm-to-Kitchen classes and workshops, Appleton Farms offers a week-long kids’ culinary program for school vacations in February and March, where time is split between our farm kitchen— cooking, tasting, and learning about local agriculture—and explorations around the farm. “We like to think of the farm as a community hub,” says Lieza. “If it feels like there’s something here for everyone, that’s because it’s part of the recipe.”

equipment juxtaposed against exposed beams and vaulted ceilings, views through broad windows that make the farm’s 162 acres—humming with the movements of cows, pigs, and other livestock underneath a wide-open sky—look more like Montana than Martha’s Vineyard. “Lots of white, lots of wood, lots of stainless steel, and a pop of blue,” says Lindsay Brown, engagement manager for The Farm Institute, of the ambiance. The kitchen has been at the heart of a thriving year for The Farm Institute. Last summer, an in-house chef formulated a menu based on just-ripe produce plucked from the garden for a series of Pasture to Plate dinners, visiting culinarians from around the island prepared massively popular Thursday night farm dinners and other special events. Now, with winter approaching, the kitchen is showing its versatility: programming is recalibrating toward skill-based, localfocused classes, like sausage making and a crash course in butchering an entire lamb. Whatever the date on the calendar, The Farm Institute takes an unassuming approach to using what’s available, whether it’s a pasta class that incorporates eggs fresh from the nesting box or a seminar in using off-cuts of grass-fed beef. “When we made beef tongue tacos, it just felt like the perfect intersection of who we are and what we want to do,” Brown says. “If I could do that class every year, I would.”

After-work adventure in Boston Most evenings around 6PM, while trains rumble through the Haymarket MBTA station below, packed with end-of-day commuters, culinary-minded Bostonians don aprons, huddle around metal tables on casters, and get ready to expand their horizons inside The KITCHEN at Boston Public Market. “All our classes utilize the seasonal produce and products of the Boston Public Market farmers and artisans,” says Cleo Bell, education and operations manager at The KITCHEN and a professional cook of more than 10 years. “Attendees learn how to create hyper-local recipes that also support area farmers and small businesses.” The KITCHEN’s bread and butter is a series of three-course, wine-paired Farm-

to-Kitchen cooking classes, led by a rotating cast of master chefs and themed around cuisine from different geographies. Drawing on ingredients from different farmers, like Chestnut Farm, Siena Farm, and Stillman’s Farm, visitors prepare dishes like Jerk Mushroom Sauce with Lamb Meatballs and Szechuanese Pork Wontons with Chili Oil. Along with a broad range of introductions to mixology, pastry making, and other culinary terrain, experts host Master Classes focused on a single ingredient. (Bell, for her part, picked up a few tips while attending a class devoted to New England Seafood.) Ideally, Bell says, everyone will leave a two-hour class with at least one new skill— the difference between searing and sautéing, for instance, or how to peel a carrot or slice

an avocado without reaching for the first aid kit—and an appreciation for the big-picture impacts of cooking with local, sustainable ingredients. “If you can put one local ingredient on your plate, whether it’s chicken or a tomato, you’ve made an impact on your carbon footprint,” Bell says. “It’s also going to automatically taste better. You don’t have to be a professional chef to make something delicious when the original ingredient is the highest quality.” With winter’s chill settling in, Trustees’ teaching kitchens make for inviting retreats.
