A GUIDE TO MATCHING

WINE & FOOD GUIDE

Autumn and winter bring different foods to our tables. As the weather cools we look for foods that are a little more substantial, a little richer, and a little more comforting.

Over the last 30 years we have witnessed great change within the wine industry, especially in terms of quality, varieties and styles of wines produced. The 80’s saw advances in winemaking techniques, the 90’s saw a huge improvement in viticultural practices. The end result has been New Zealand wines have steadily improved in quality, so that producers can be well proud and which are gaining an international reputation. Alongside the rapid wine industry changes, there has been an equally dramatic change within the food industry, both in dining at restaurants and cafes, and also in what we prepare in our own homes for our families. In recent times there has been a surge of interest in food and wine matching directed at enhancing the overall dining experience. The food is really the most important part of the meal, despite how many winemakers may feel. The wine is there to complement the food and cleanse the palate, ready for the next mouthful. If this interaction between food and wine can be pleasantly enhanced at all, the overall enjoyment of the dining experience must also be magnified. Personal tastes will naturally dominate when we come to putting the food and wine experience together. One food and wine combination may be perceived to be positive and another negative. Neutral experiences are unusual. Because personal tastes are involved, food and wine matching is not an exact science and there are no hard and fast rules. It is important that food and wine matching is not put on a pedestal and be made to appear elitist or complicated, but with a little thought and planning a more successful combination can be achieved. So let’s start looking at what we are trying to achieve. When we sit down to a glass of wine with dinner, we want that glass of wine to complement the food, to lift the flavours, and to make the taste experience pleasurable.

At the same time, we want that plate of food to do exactly the same thing to that glass of wine, elevating the whole experience. So how do we go about it? We have three guidelines to help us along the way. If we complete these guidelines in this order, wine and food matching becomes very easy and effective.

Guideline number one Match the flavour intensity of the wine and the food. If you have a light dish, you really need light wine. If the food is rich and heavy, then a bigger robust wine is called for. In the old days, the rule was white meat with white wine, and red meat with red wine. Whilst this rule is now a little outdated, it is still a good place to start.

Guideline number two Match the sweetness of the wine and the food. If you have dessert you really need a sweet wine. Whilst on the other hand if you have food that has no sweetness in it, you need to match that to a wine that is dry, or without sugar.

Guideline number three Match the flavours in the food with a wine that has similar flavours. If for instance you are serving fish with a herb crust, a nice herbaceous Marlborough Sauvignon Blanc would be a good match. So what are the flavours we find in our wine? These flavours are there due to a few factors. What grape variety was used, where were the grapes grown, how ripe were the grapes when they were harvested, and what influences did the winemaker bring when fermenting and ageing the wine.


WINE AND FOOD Listed below are the most important grape varieties grown in New Zealand and the flavour characteristics often used to describe the wine made from them. These flavours provide a useful bridge between food and wine when matching similar flavours. CABERNET SAUVIGNON Capsicum, blackberry, blackcurrant (cassis), black olive, green capsicum, herbal, liquorice, mint, pepper.

CHARDONNAY Fruit apples, grapefruit, fig, lemon, melon, peach, pineapple, tropical fruit. If oak aged then add burnt toast, coffee, cedar, coconut, oak, smoky, vanilla. GEWĂœRZTRAMINER Apricot, floral, lychee, perfumed, rose, spicy, ginger, tropical fruit. MERLOT Fruitcake, gamey, leathery, mulberry, meaty, plum, smoky. PINOT GRIS Apricot, citrus, honeysuckle, pear, nashi, spice, stone fruit, wild honey. PINOT NOIR Beetroot, cherry, earthy, mushroom, plum, raspberry, strawberry, black pepper. RIESLING Fruit apple, citrus, floral, lemon, limes, green apple, honey, orange blossom, tropical fruit. DESSERT/BOTRYTISED Apricot, beeswax, honey, marmalade and sometimes mushroom. SAUVIGNON BLANC South Island - Asparagus, canned peas, cut grass, gooseberry, green capsicum, pea shell, passion fruit, red capsicum. North Island - Fig, herbal, honeysuckle, melon, nectarine, peach.

BRIGHT. FRUITY. VIBRANT. RABBIT RANCH PINOT NOIR CENTRAL OTAGO

$26.99 The Central Otago High Country of New Zealand is over-run with rabbits. Sheep and rabbits coexisted on the land for some time but the sheep couldn’t keep up with the nocturnal activity of the rabbits. In the end they were hopelessly outnumbered and driven off the land - they were last seen heading north. The owner of the Rabbit Ranch, Mr. MacGregor, tried unsuccessfully to reduce the rabbit population by selling rabbit pies. Eventually he decided to plant some vines and make a decent Pinot Noir to go with all the rabbit pie he was eating.

Tasting Notes A bright-eyed red with hints of briar patch with a whiff of gun smoke. This fine wine is a classic Central Otago Pinot Noir, vibrant and fruity with a soft tail.

Occasions You’d be pushing to think of an occasion where it is not suited!

SUCCULENT. EXPRESSIVE. GIESEN THE BROTHERS PINOT NOIR 2013 MARLBOROUGH

$29.99 Each vintage our viticulture and wine-making teams select the most expressive parcels of fruit to create The Brothers Range. A low yielding vintage, the growing season was characterised by cooler temperatures allowing the fruit to ripen beautifully while retaining flavour and acidity. The hand harvested grapes were received into the winery in excellent condition. A mix of new oak and seasoned fine French oak barrels were used to mature the wine over period of 11 months.

We follow the Italian technique of drying the Cabernet grapes on racks and this makes up twenty per cent of this Jester wine. The vineyards for the Jester Cabernet Sauvignon are located at the southern end of McLaren Vale, close to the seaside town of Aldinga. The combination of cool sea breezes and gully winds provide ideal conditions for growing fruit of intensity and balance. The vines sit on heavy clay, giving the wine powerful fruit flavours. All of our Jester wines are named after Jesters of the 15th and 16th Century. For this wine, we chose a Jester who is much like the wine itself; unique and slightly eccentric. His name is Monarcho and he was known as the most eccentric of all the Jesters in the court of Elizabeth 1.

$29.99 Gemtree Uncut reflects the true character of Gemtree Vineyards biodynamic and certified organic vineyards with minimal intervention from both the vineyard and the winery. Gumtree was established in 1980 by Paul and Jill Buttery and is now run their son Andrew.
